What’s Growing at The Farm
Winter Harvest January and February at The Farm are a peaceful time for growth and rebuilding. Lettuces, spinach, herbs, radishes, and broccoli will grow through the months before harvest season in early February. By mid-February, site preparations will begin for spring planting including replacing the plastic rows and soil sample collections. Farmer Shane will also build fourteen permanent raised beds in front of the chicken coop. The raised beds will house a variety of herbs including sweet basil, oregano, parsley, cilantro, thyme, rosemary, and lemongrass. Mixed in are two rows of onions, shallots, garlic, and sage. “Each year the chefs want different things, and so each year I learn more about what they want and can use,” explained Shane. Shane prioritizes produce such as lettuces, spinach, and herbs because they can be continuously picked.
“Each year the chefs want different things and so each year I learn more about what they want and can use.” — Shane Rahn Farm Manager

What’s Growing at The Farm Sugarcane 101 with Farmer Shane In late December, Farmer Shane hosted Sugarcane 101, an event teaching Members how to collect and harvest sugarcane. Sugarcane is first planted by placing stalks in the ground, where they will grow new shoots. The timeline from planting to harvest takes about one year, however each planted stalk lasts about three years before needing to be replanted. Once the stalks are ready for harvest, typically in the winter months, Farmer Shane cuts each stalk, leaving just enough for a new stalk to grow for the next year. The stalks are then stripped and through a mill to extract the juice. Sugarcane juice is very sweet and is said to cure small ailments like a headache or upset stomach. The juice is placed in a large pot over a fire. Pine wood is used to control the temperature and keep consistency. For the first hour, Shane uses a skimmer to remove the top layer of mud and bacteria. As the juice boils, the bubbles in the syrup will then change from brown to white, to copper. When the bubbles turn copper, the next filtering process begins. A ring is put in the pot in which the syrup will boil over the ring and be filtered through burlap for the next hour. The juice will become a thick, syrup-like molasses. A copper mug is put down in the pot with a hydrometer inside. The higher the hydrometer lifts out of the pot, the thicker the syrup. During the last thirty minutes of the five-hour process, Shane checks the hydrometer every two to three minutes to ensure it does not burn. When the syrup reaches the right thickness, it is removed from the pot and put in jars to enjoy. Once the syrup is canned, drizzle it on biscuits or pancakes, mix it into a cocktail, or substitute it for corn syrup in your recipes.

Fitness & Wellness OWN YOUR IMPACT: THE ACCOUNTABILITY ADVANTAGE We don’t realize it, we don’t regularly think about it, we often forget, that every day is a chance to make an impact. In a physical sense, impact is the forceful contact between two objects, often resulting in a change in motion or deformation. An example might be a car accident. In an emotional sense, impact is the influence our actions have on another person’s emotions and feelings. When we show someone in our life appreciation, it creates an impact. In social context, it signifies changes in social behaviors and most notably the overall well-being of a group of people. Like banning smoking in restaurants. We don’t realize it, we don’t regularly think about it, and we often forget, that every day is a chance to make an impact. The impact can be positive, negative, or neutral. As we settle into this new calendar year, it is a pivotal time to reflect on whether we are making a positive impact on our health. In life, it’s a lot easier to abuse alcohol, give up sleep, eat poorly, and not exercise. Why? Because it requires little to no effort, it’s easy to eat in excess and stay up late, it’s easy to have an extra drink or two, and it’s easy to skip our fitness class or blow off the gym. We don’t realize it, we don’t regularly think about it, and we often forget, that every day is a chance to make an impact. Last year, we began conducting comprehensive wellness screenings at the Moreland Studio on Mondays. We have now completed one-hundred and forty-eight screenings and it’s still not slowing down. I mention this because it proves that collectively our community wants to live a healthy life. When we get the data, it gives us a baseline, it can be a wake-up call and provides us something to measure against even if we don’t like what we see, but how do we create lasting habits that lead to a positive impact? How do we ensure we stick to a plan and practice it? The secret weapon is accountability. This year, one of our members who turned seventy years old put on three and a half pounds of muscle mass. How did he do it? Accountability. He consistently attended strength training classes, five days per week and changed up his nutrition. Positive impact. Teary-eyed, another member mentioned to us that they wouldn’t be where they are today if it weren’t for the wellness team. How did they do it? Accountability. Regular personal training, Pilates reformer sessions, and every aqua fitness class under the sun. Positive impact. And finally, let me tell you a story about a recent lunch we had lunch with a member and his family who told us a story about a boy who grew up and would every evening lay out his clothes for the next day. In High School, it was his uniform. In College, it was his shirt, pants, and clip-on tie. And as a Business Executive, he realized he had to learn to wear a real tie, so he laid out ties, suits, and slacks. He’d always lay out his clothes until a terrible health incident negatively impacted his ability to do this one thing that many of us take for granted. When this man was ready to return, he went to the Moreland Studio and didn’t know what to expect. He started taking classes and feared that people would make fun of him. No one said why can’t you do x-y-z. No one singled him out. No one did anything but welcome him and take care of him. No one did anything but bring him positive energy, hope, and support. He got accountability. It had a positive impact.
22 Palmetto Bluff Club Living | JANUARY/FEBRUARY 2024
Fitness & Wellness Change rarely fails because it’s too early. It almost always fails because it’s too late, but that’s not the case when it comes to improving our health. What I want you to take away is that it’s perfectly okay to ask for help and seek support, why wouldn’t you? It’s a proven secret weapon. Remember, every decision, and every effort we make, no matter how small, has the potential to generate a ripple effect in our lives. The impact can be positive, negative, or neutral. Reflect on whether or whether you are making a positive impact on your health. We don’t realize it, we don’t regularly think about it, and we often forget, that every day is a chance to make an impact.
- Jeff Ford, Director of Fitness & Wellness

Creating Community: Pickleball at the Bluff Community is the heart of Palmetto Bluff. Whether it be running into an old friend at dinner, or meeting new friends at events and programs, there are endless opportunities to get involved. One activity in particular has taken over Palmetto Bluff. Pickleball is one of the fastest-growing sports in the United States with players of all ages getting involved. Pickleball is a combination of tennis, table tennis, and badminton. One of the reasons pickleball is so popular is due to the limited skill needed to begin playing. Grab a friend, a paddle, and a pickleball, and you are ready to begin. Here at Palmetto Bluff, there are numerous ways to get involved whether it be through a private pickleball lesson, court dropins for both men and women, and even a Lowcountry Pickleball League with teams from Bluffton, Hilton Head, and Beaufort. Unlike other sports, Pickleball beginners can schedule a private lesson and play with a group the next day. “It organically creates community because now everyone gets together to play and build teams,” says Racquet Sports Director Martin Aviles. One Member shared with us that she first tried Pickleball at a Women of Palmetto Bluff Social and was instantly hooked. She then registered for clinics and began playing with groups. Now, three years later, she is the captain of a team and has built many new relationships by meeting other Members.

“It organically creates community because now everyone gets together to play and build teams.” — Martin Aviles Racquet Sports Director
This year, Wilson Lawn & Racquet introduced the first annual Palmetto Bluff Cup for both Tennis and Pickleball. Four coed teams comprised of sixteen Members competed for to determine the final champions. In January, Members can register to be a part of the Member-Associate Pickle Open in which Members are paired with a Palmetto Bluff employee. This is a great way for Members to meet the staff who help make Palmetto Bluff a special place to live. Following last year’s tournament, many participants continue to be friends today. Wilson Lawn & Racquet has supported Pickleball growth at the Bluff by adding more programming for all ages. Recently, Wilson Lawn & Racquet partnered with PBGO’s After School Program to teach kids the fundamentals of Pickleball. Oppositely, the Pickleball Professionals noted that they see many older Members increasing their fitness levels and mobility through Pickleball. “It’s a fun and quick workout,” says Pickleball Professional Tony Gottlieb. “Wilson Lawn & Racquet is there to support and provide Members with a pathway that is unique to them.”
