Palmetto Bluff Members,
In my short time here, I have been very impressed with the team of associates and their approach to exceeding Member expectations. Everyone I have interacted with has been very positive, and there is a genuine willingness to help each other, whether it be for large functions such as Rock the Bluff, preparing for Hurricane Idalia, or volunteering to work in other departments when a need arises.
As I familiarize myself with the many locations on the property, I have also had the opportunity to meet numerous Members. Everyone has been very welcoming. I look forward to meeting more Members as the Fall calendar of events picks up and some return to Palmetto Bluff from cooler summer climates.
It is an exciting time at Palmetto Bluff. The calendar of events has a wide array of offerings for everyone to enjoy. At the same time, improvements are continually
being made throughout the community. For example, the recently renovated tennis courts improved playability and reduced closure due to maintenance, and the roof was replaced at the May River Clubhouse. We are also looking forward to the progress of the ninehole golf course and the development of the trail riding program at Longfield Stables.
In this issue of Palmetto Bluff Club Living, you will see many activities to enjoy with family and friends, in addition to the usual golf and tennis events, October highlights include Oyster Wednesdays at Cole’s, a full fitness calendar, and Halloween trick or treating. November signature events include an oyster roast, Thanksgiving Supper, and Italian Feast.

This show will feature a Hunter Derby, Mini Prix and Leadline and Veterans Ceremony with the singing of the national anthem. How are the photos judged?
Conservancy Educator, Aaron, will review each submission to ensure the photos meet all requirements. Approved entries will be sent to the Conservancy team to be judged in a blind judging.
Prizes
Each month, the 1st place winner will receive a prize from the Conservancy. Our top three participants will also receive raffle tickets (3 tickets for first place, 2 tickets for second place, and 1 ticket for third place) that will go into a pot for the chance to win a pair of Burn Fest tickets. The drawing will occur following the last Brown Bag Lunch of October 2023.
Rules:
1. Submitting a photo to the Palmetto Bluff Conservancy photo contest gives the Palmetto Bluff Conservancy permission to use the photo for posts, publications, products, and advertising.
2. Each participant may submit one photo per month related to that month’s theme. The photo does not need to be taken within that month.
3. All images must be taken in the South Carolina Lowcountry.
4. All photos must have complete information attached, including subjects, dates, and locations.
5. Animal and plant photographs must be wild; no captive animals or planted specimens.
6. The animal must be alive, and the photo be taken under natural conditions and in an ethical manner that places the welfare of the subject above the photographer’s desire to obtain an image.

What’s Growing at The Farm
Fall Crops
As Fall arrives at the Bluff, The Farm still extends an ode to summer with lavish green fields and new plant growth. In preparation for the Fall Farmers Market, Farmer Shane and Farmer Wyatt planted cucumbers, tomatoes, corn, carrots, sugarcane, pumpkins, and various herbs. Farmer Shane and Farmer Wyatt also covered the plants in plastic to protect the plants from wind and insulate the soil, thus producing a higher quality crop.
Farmer Shane used this season to experiment with planting dates to learn which crops grow best at different times during the year. The Lowcountry climate allows for planting year-round; however, some plants grow better during a specific season. The hope is to develop an efficient planting schedule to make the most of each planting season. This will keep restaurants with a better supply of fresh produce for Members to enjoy!
Farmer Shane also took over 20 soil samples for analysis and sent them to the University of Georgia where he will then receive a soil report. This report includes various elements per acre and the pH of the soil. Soil samples help choose which plants will thrive in the different areas of The Farm and know where to add fertilizers.
What’s Growing at The Farm
Chickens at The Farm
The Farm welcomed four White Crested Black Polish chicks at the end of July. The chicks have already grown out of their first small crate and doubled in size. Their new bigger crate will serve as their home until they join the rest of the coop in mid-October. In the meantime, Members can stop by to see the chicks through different growth stages.
Another exciting arrival also came to The Farm, eggs! The chickens in the coop started laying eggs in August and will continue producing for five to ten years. Each breed lays a different number of eggs ranging between 100-250 eggs per year. Palmetto Bluff restaurants will enjoy a steady egg supply for the coming years, as the chickens begin to produce a larger quantity during the peak egg laying period in their first two years of life. Information on Member use of eggs will be available soon.

IT ALL STARTS UP TOP
Have you ever lost your motivation due to a life-changing or stressful event like a death, loss of a relationship, moving, or leaving a difficult situation? When it is our well-being, we forget that loss of motivation is a tell-tale sign that our heads may need help. The problem is that we don’t always have a plan for our mental health like our physical health; it gets neglected and sadly stigmatized. There can be lots of internalized shame.
When you experience life transitions, as we all do and will, you must keep an eye on your motivation. Pay attention to your mood, behavior, and, most importantly, your thoughts. How are you showing up in your relationships? Do you feel like yourself? What’s different? Our thoughts will create a cascade, positive or negative impact on our mental health.
Before we go further, it is important to remember stress is universal. We all experience stress and anxiety at one time or another. The difference is that stress is a response to a threat in a situation. Anxiety is a stress reaction. To bounce back, we must better understand our reactions to things in our lives and not let anxiety about our decisions or life events rule our world in the present. Don’t get me wrong, it’s okay to be anxious, but not at the sacrifice of feeling unmotivated, lost, or alone.
So, what can you do to reset your thoughts and decrease anxiety?
Journal Your Thoughts
Be aware of them so that you can dig deeper. Motivation is based on our individual needs and perceptions. By journaling, you will become more self-aware and be able to discern if your individual needs are not being met or your perception is off.
Talk to Someone
Processing how you are feeling can help tremendously. Bottling it up and keeping it to yourself won’t do you any good. A friend or mental health counselor can offer perspective so that you can start to move forward.
Focus on What Drives You
In the book Drive, Daniel Pink explains that motivation involves three things: autonomy, the urge to direct your own life; mastery, the desire to get better at something that matters to you; and purpose, the impulse towards something greater than yourself. When someone has a lot of things going on in their life that involve autonomy, mastery, and purpose, everything flows in the right direction.

1. Preheat oven to 350 degrees. Line 12 cup muffin tin with cupcake liners and generously spray inside of liners with nonstick cooking spray.
2. Squeeze shredded zucchini of excess water with a paper towel.
3. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
4. In the bowl of an electric mixer, add coconut oil, honey, vanilla, and the egg; mix on medium-low until smooth and well combined. Add in zucchini, banana and almond milk; mix again. Slowly add in dry ingredients and mix until combined. Gently fold in chocolate chips.
5. Evenly divide batter into prepared liners. Bake 22-25 minutes or until toothpick inserted into middle comes out clean. After 5 minutes, remove muffins and transfer to wire rack to finish cooling.

The Culinary Corner: Chef Competition
The culinary talent at Palmetto Bluff continues to evolve, emphasizing skill development. With Chefs from around the world coming together to share their unique and diverse backgrounds, there is much opportunity to learn and grow from one another. Kevin Yeung, Chef de Cuisine at Cole’s, shared an exciting new way that the culinary team is helping in the growth of each cook’s skills.
During the slow season, Cole’s Chefs brainstormed holding a Culinary Competition. The Chefs first set the parameters around one ingredient or dish type. Each cook could then challenge themselves with a new recipe, perfect an old recipe, or hone a particular skill.
For the first competition, the requirement was to use bechamel in the final presented dish. Each cook then got to work, creating their own dish to be judged by peers and management. The scoring categories were taste, creativity, and appearance. After tallying the final scores, the winners received prizes from management. “The competition helps to motivate everyone and teach cooks to think outside the box. Each competition helps the cooks solidify a necessary skill,” says Kevin Yeung. The Chefs then held a second competition comprised of different soups. Kevin shared that Cole’s would continue to hold the competition and that it has become a source of fun and excitement for everyone.

The competition also inspired Chefs in other restaurants around the property. Chef de Cuisine at May River Grill, Alejandra Jimenez Betanzos, challenged her team to create something from their home country. Each cook made a dish they were truly passionate about to share with their peers. Cook Luz created her own version of a traditional Mexican dish called Chile en Nogada. The dish features a stuffed poblano pepper, ground beef, ground pork, tree nut cream sauce, and pomegranate. Luz’s winning dish was added to the May River Grill lunch menu and can be tasted by Members today. We look forward to seeing what else our talented culinary team creates during future competitions.

Susan Mayfield is an award-winning artist known for her use of bold color and luminous light in her pastel and oil landscapes. A native South Carolinian and life-long resident of the Lowcountry, she moved to Colorado 15 years ago, splitting her time between life on the Carolina coast and her home in the high mountain desert of Colorado. Currently, she paints and teaches from her studio in the small mountain town of Salida.
