A
sking which facial filler is right for you is a trick question individual needs or goals differ, and frequently, different areas of the face will respond better to different fillers. Consulting with an experienced injector with an artistic, comprehensive outlook, will give you the best options. That having been said, however, there are inherent differences between fillers that may influence your decision making. How do they work? Some facial fillers simply take up space. Once they are gone, it is essentially like they were never there. The hyaluronic acid fillers like Restylane, Perlane, Juvederm, Belotero, and some others, fall into this category. Other fillers cause some of their effect by stimulating collagen growth. Once the filler is gone, there may be a little more collagen in the area than if the filler was never injected. Fillers that stimulate collagen include Radiesse, Artefill, Sculptra, and silicone. The first two have a temporary background gel that is replaced with collagen later, so the volume remains fairly constant, whereas the last two have little volume of their own initially and the volume appears later as the collagen growth occurs.

person and on where the product is placed. Typically, Restylane will last approximately 6 months, Juvederm, 12 months, Radiesse, up to 18 months, Sculptra, at least two years, and Artefill is essentially permanent. Each dermal filler has its place, depending on a myriad of factors. How much filler do I get? Restylane and Belotero are 1ml per syringe; Juvederm and Artefill are 0.8ml per syringe. Radiesse’s syringes are the largest, containing 1.5ml of product; a 0.8ml size is available for touch-ups. Sculptra differs in that it is manufactured as a vial of powder and it remains up to the injector to reconstitute the product with variable amounts of sterile water for use. Make sure you are purchasing Sculptra by the VIAL, rather than, by the syringe. How much does it cost? Prices can vary considerably from one establishment to another, but in general, the more filler you get and the longer it lasts, the more expensive it will be. Frequently, the cost will be higher depending on the injector’s experience. However, exercise caution in bargain hunting where your face is concerned.
What is the consistency? The thicker the filler, the better it will be at lifting deeper lines and hollows. At the same time, thicker fillers are harder to blend smoothly into surrounding tissues, so they are better for more defined deeper folds, and tend to be used deeper in the tissues. Perlane and Radiesse are good examples of thicker fillers. Sculptra, on the other hand, goes in with the consistency of water so it can be used in areas where soft contour changes are needed without defined edges.
What are the side effects? There are certain expected side effects from the injection process itself; swelling and bruising are always possible and some areas of the face are more prone to bruising than others. Radiesse is known to initially cause more swelling than the other products, but if indicated, is worth the downtime. Just make sure you don’t have a hot date or important speaking engagement later the same night. The same rule applies for injections in or near the lips. Plan for some downtime as this area tends to bruise and swell.
How long does it last? This can vary to some degree from person to

by the skillful combination of different products at different layers and for different purposes. The face ages globally, so it must be addressed with a comprehensive approach. The eyes tend to focus on the wrinkles and overlook the more subtle volume and contour changes associated with aging. Addressing only one aspect of the aging face, wrinkles, will lead to an unbalanced result. Find an injector who is knowledgeable and experienced, understanding, and artistic. You should feel comfortable with your injector and develop a long-standing relationship. You should be able to openly communicate your concerns and feel that your wishes are being heard, but also be open to the advice of the experienced professional who can take a step back and consider the whole picture. n

ave you looked at your bathroom counter lately or worse looked in the cabinet below. Amongst the hair and grooming products there’s probably an array of dental products too. From the variety of toothpaste, toothbrushes, rinses and whitening products – how many and which ones do you really need? I’d like to help you “spring Clean” your bathroom counter and educate you on the confusing world of dental products. With the dizzying array of dental product choices in a typical drugstore aisle, it can be daunting to try and find one that’s right for you. One almost needs a PHD to weather the dental aisle of confusion. Let me try to give you some education to help you make informed choices when caring for your mouth. • TOOTHPASTE – When choosing a toothpaste, make sure it is safe and will do what it claims. Toothpastes containing fluoride are regulated by the FDA since they make disease-fighting claims. They will display a drug facts listing on the package along with active ingredients & warnings. Those without fluoride are considered cosmetics and are not FDA regulated. In either case ingredients should be listed . Also look for the ADA seal of approval which means the product has participated in a testing program by the ADA. A key ingredient in toothpaste, fluoride benefits all of us – not just kids. It heals and remineralizes the teeth, hardens the tooth surface and slows down the action of acid-producing bacteria. Our
patients love the prescription strength paste that we provide in our office. Take caution, very often whitening toothpaste will cause tooth sensitivity. No matter what your oral health needs are, there’s a toothpaste for you. From sensitive teeth, excessive tartar buildup or bad breath there’s a product for you. • ORAL RINSES Anti-plaque, anti-gingivitis, alcohol-free- your pharmacy’s oral health section has dozens of mouth rinse products to choose from. The major types of rinse products are: ones that contain fluoride, anti plaque rinses and cosmetic ones. Fluoride rinses as stated before helps prevent tooth decay. In addition people who suffer with dry mouth may also benefit from a fluoride rinse. Anti plaque/gingivitis rinses help by killing bacteria that can cause gum disease. We provide a stronger, prescription strength mouth rinse for our patients with advanced plaque and gum disease. Cosmetic rinses reduce mouth odors and kill bacteria for a short time ,but there is usually no lasting health impact. Whitening rinses are really a waste of your money. Mouth rinses do serve a purpose, however, they are not a substitute for regular and effective brushing and flossing. And when choosing a rinse pick one that has the ADA seal of approval. • TOOTHBRUSHES – Although some ancient civilizations used twigs to clean their teeth, these days toothbrushes come in a variety of manual and powered forms. Choose a good quality brush that has the ADA seal, whose bristles are not too hard and one that fits comfortably in your hand. For those individuals that wear braces or have difficulty brushing manually, electric toothbrushes are an affordable must. These toothbrushes have been shown to be very effective in reducing plaque. A toothbrush alone can’t do everything to maintain your oral health. They can’t get between your teeth. So don’t forget to purchase
good quality floss that can do that. Our patients love their ”goody” bags filled with a good quality brush, floss and rinse. • TEETH WHITENING – Everyone wants a whiter, brighter smile these days. There are various options to consider. Is one option better than the other? The option you choose will depend on your budget and the severity of your teeth discoloration. Of the various drugstore teeth whitening choices the strips are less likely to cause you to swallow the bleach or damage your gums. However, these strips generally whiten the front teeth and may be too mild to get dramatic results. More lasting alternatives to this would be in office laser whitening and custom made whitening trays. The laser whitening can be done in one office visit and provides instant gratification. You leave with a beautiful whiter smile. Custom home whitening trays usually takes about 2-6 weeks to obtain similar results. I wish you a healthy, safe journey down the aisle of dental products.

At each of our locations, we meet hundreds of new faces every single week. These people come from different walks of life and each have unique motivations for their weight loss goals, however, they all have one thing in common; they are “springing into action” to create their life of optimal health. Unlike the bumble bee, which innately follows the cues of nature, we often times need a bit more of a “nudge” to move in the right direction. Sometimes that nudge is a physical one and at other times it is less tangible. hy do we love to shop for a new handbag? Let me count the ways. You don’t have to try them on under fluorescent lights. You don’t have to even be the “right” size. You can instantly feel fashion forward with the latest chic clutch or trendy tote. And if you’re not sure what style or color you want to buy, well, you can always come back for more. But there are a few guidelines to finding a handbag that will flatter your body type, says fashion expert Amy Goodman, author of “Wear This, Toss That” (Simon and Schuster, $27). “Among those who have ‘the bag bug,” I’m surprised by the number of people who wear them all wrong,” she says. But although she cautions that your bag and body shape shouldn’t match, there are a few tips she has for finding the handbag that will complement your own body style whether you’re tall, petite or curvy.
HERE ARE A FEW OF GOODMAN’S HANDY TIPS: -If you’re tall and thin, Goodman recommends considering an unstructured, slouchy bag. Your bag should hit anywhere from the waist to slightly below the hip. And since you have “the luxury of vertical space” to work with, choose 14

a medium to larger unstructured bag. She cautions tall women to avoid a bag that fits in the crook of the armpit that just emphasizes their height and “makes your legs look like beanpoles.” Instead, “if you are tall, you can pull off bags with long straps, as long as the purse isn’t tiny -- that just makes you appear lanky.” Taller women should also avoid top handle bags with a structured frame and rigid edges which “produces a stark overall look and creates too many angles when juxtaposed against a tall frame.” Instead, she suggests choosing a rounded or trapezoid satchel with soft curves for better balance. --Petite women should consider handbags that elongate their bodies but not overwhelm them, according to Goodman. “Think proportionally smaller, and don’t venture bigger than a medium-size handbag. With your body type, bag shape is less of an issue, so you can embrace a round or slouchy bag.” The bag should hit anywhere from under your arm to the hollow of your waist. Goodman also suggests choosing thinner, more delicate straps. Steer clear of overly long body bags with chunky straps. “They will make it look like the bag is taking you for a walk, as opposed to the other way around,” she says.

--Curvy women should stick to handbags whose length hits the smallest point of their curves, below the bust and above the hips, says the fashion expert. “A bag with handles that barely clears the arm will get lost in the armpit. A shoulder bag with long straps is no better because the bag’s body will hit at the hip and make you look wider.” Instead look for medium to larger bags with structure, form and stiffer fabrics, such as leather, canvas, nylon or woven straw. And you’re in luck this spring, because the structured bags are topping the trend lists. Goodman advises curvy women to avoid slouchy bags that “look like cushioned pillows, round and duffle-shaped bags, structure-less satchels, oval handles and super thin chain straps. n

Q: We kinda ran out of funds after we bought our new-to-us house last fall, and we are having to ditch our grand plans for new furniture, too. The trouble is, we gave away most of our old stuff before we moved. Any ideas on how to fill in the blanks will be appreciated. A: Actually, you may have done yourselves a favor: our recyclingsavvy century is rich with secondhand furniture that was made in the middle of the last -- and made to last, much of it from native American woods. Prowl through resale shops and charity catch-alls, such as Good Will and the Salvation Army. Chances are good you’ll find everything you need to furnish and furbish your house, from beds to chairs, tables, bookcases and storage pieces. The trick is to shop with foresight: don’t focus on the furniture’s current condition. Envision how it will look refinished, repainted, repaired and reupholstered to look and wear like new. Rebuilt and reupholstered, the “old” furniture is enjoying a smart second life in her second home. Ditto the coffee table. The designers simply replaced its old top with a new one made of glass. They also added the coffered ceiling -“the room was long and needed more architectural interest” -- and added stone to give the fireplace more gravitas. Thought for 2013: Recycling is not only kind to budget and landfills, it’s the next wave in the professional design industry. Many design professionals are refinishing, repainting, repairing and reupholstering “previously owned’ pieces into newly prized posses-

I really don’t like looking at all my stuff all the time. Short of hiring a carpenter to make doors, is there any kind of cover-up I could use? A: Consider roller shades. Have them cut to fit the width and height of the cabinets, and install them on top of each cabinet, reverse-roll for a neater finish. Roller shades come in colors and interesting designs and fabrics. Even better: look into custom-mades, where you could use your choice of patterns. Maybe even match your wallpaper or dishes or dishtowels. Are bangs in or out? I’ve been hearing both sides on this topic. I haven’t had bangs in a long time and I’m considering it, but a little apprehensive especially if they are not “in style.” And, how do I know if full bangs or side swept bangs are right for me? Thanks, Nancy in Tampa Dear Nancy, Some sort of bang or fringe is always in style. Deciding on bangs is an individual decision and fortunately, they typically look good at any age. If you are going for a more youthful look, bangs can shape up your current style and further define the face. A few things to consider as you choose a style of bangs: Hair
type is important as correctly cutting a bang on fine hair can actually give the illusion of thickness. Hair texture also comes into play as straighter hair or that with a soft bend is easier to cut bangs on versus that of naturally curly hair. (As many of you may know!) Finally, bangs should be cut to enhance your face shape. For example, if you would like to enhance your eyes, bangs should be cut just to the brow line. Cutting bangs too thick and long can actually enhance your nose, so you’ll want to keep that in mind if its not a feature in which you want to draw attention. Oval face shapes tend to be able to wear any type of bang while round faces for instance, look best with a soft layered bang that gently sits on the cheek area. This method can enhance cheek bones and take away from the roundness of the face shape. For those with a square face shape, a longer side-swept bang that forms in toward the jaw to soften the squareness of the face and jawline is ideal. A bang is a great way to change up your current look without any drastic

o your walls speak to your décor? Do they reinforce the style and mood you are trying to achieve? Most important, does the wall color create the sense of space or warmth you are after?
the evolution of so many materials such as glass and metallics, along with stones, porcelains, and ceramics, tile represents one of the greatest opportunities for creating accent areas on our walls!
There are so many possibilities when considering how best to cover your wall surfaces. If you are paintingcolor, texture, finish, faux effects, patterns and accent treatments are decisions that have to be made.
Fabrics, also rarely used, can be backed for wall application in the same manner as wallpaper. Some of my favorites are denim, suede and leather.
If wallpapering, do you use more than one, do you cover all of the walls or use the paper as an accent, and do you go for texture, pattern or a mural effect?
Beyond the usual paint and paper, there are a myriad of other applications. Mirrors, painted or etched glass, split bamboo or wood, paneling such as bead board, brick, stone, tile, and fabric are just some of the options. Mirrors, glass and Plexiglas can be used to add light, space, and reflection. In addition they can provide a surface for pattern and/or color. Split bamboo is available in a range of colors, textures, and applications. Accented with wood beams, it can be a very thematic and unexpected accent for a wall. Wood and wood paneling can provide the perfect backdrop for any style - Contemporary, Shabby Chic, Cottage, Rustic or Traditional- depending on the presentation. Highly textured surfaces such as brick and rock can also find their place among various design styles. Painted brick is perfect for cottage, a rock wall can be the warmth factor in a sleek, modern décor, and antique brick is perfect for a modern industrial look. Tile is under utilized in design, usually relegated to the kitchen and bath areas of our homes. But with 24

Regardless of the medium you select for your walls, remember that the overall tone can solve problems in your space. Color can cause walls to recede or brighten a dark area and texture can add interest and warmth. And accent walls or moldings are often the answer to unify spaces and create color flow. While tackling all of these decisions, keep in mind the anticipated activities in your space, plus the ambiance you wish to achieve then cover your walls accordingly. I will share with you some quick tips that may remove most stone stains. NEVER try to wipe out a stain that you know is already in the stone. Wiping it may just push this unwanted visitor deeper into your stone. We need a poultice which is a thick powder mix. Let’s try to figure out the cause. Is the stain near a coffee maker or near the stove? Were you putting on makeup while making breakfast for the kids? Get some talc powder, or even ground your kids chalk into a powder. For an oil based stain, mix the powder with baking soda and water, apply to stain and wait until it dries for 24 hours. What we’re doing is absorbing the stain. If the stain is organic like coffee or wine, mix in peroxide. For ink, use bleach for lighter stones, and Acetone for darker stones in the powder mix. Is it ok to put Hot pots on granite? Let’s define OK. This statement is how many fabricators are able to close the Deal. If your fabricator says you can, will they warranty a stain underneath the hot pot area? Here are some points to think about. Our Florida homes are cool; our tops tend to match the room temperature. We then lay a pot of boiling water on the top, imagine one drop of soy sauce under that pot, you just created a hot stain machine. The pot’s diameter is now a concentrated heat circle, breaking down the last strands of the sealers integrity. Ok, now that we literally burned off the sealer in that area, what about milk and oil spills in that area? You may even prepare meats there; do you wonder where all those liquids and chicken juices are going? Maybe just maybe they are going into your top? Remember wiping an unsealed top only compounds the stains. Moisture in that exposed area with another hot pot also may boil the moisture in the stone forcing to expand the grains of the granite, which can result in cracks. Ask questions and remember health before beauty. We all deserve Healthy Countertops in Tampa Bay.

If your fabricator tells you to seal your tops every six months or year, have some fun and test the fabricator. Say you only visit this home once a year. Do you really have to schedule a granite sealer every year you visit Florida? At this point, the fabricator will now start back peddling words realizing that it is a lame statement. Just demand a premium penetrating sealer, tested for 10-15 years. The sealer actually ‘Penetrates” the open cracks and grains in the granite. You may also want to ask if this sealer protects from all stains or just certain types of stains. Stains may happen, let’s talk about stains.

Datz’s Sister Bakery Will Rise This Spring
As hammers swing and tiles are laid in the front of the house at Dough, yeasty, sweet aromas fill the air behind the scenes. The staff is obsessing over details that will make the bakery on South MacDill Avenue a new Tampa classic when it opens in April. Located in the old Kalupa’s, and owned by the team behind Datz, Suzanne and Roger Perry, Dough began as an irresistible, yet unexpected, opportunity. Late in 2012 the Perrys learned that longtime neighbor Kalupa’s would be closing, and jumped at the chance to take over the space. Acquiring the business meant there would be a way to offer the freshest breads and pastries at Datz and engage Tampa with a whole new restaurant concept. By New Year’s Eve the deal was inked. In less than 2 weeks, the Datz staff was testing recipes in the Kalupa’s kitchen. From there,
Suzanne Perry says it has been a daily flood of decisions. An exceptional pastry chef was hired. Interior details were selected. Recipes began to crop up and then multiply. The result will be a culinary destination unlike anything in Tampa. Their vision: an eclectic, whimsical bakery where rustic breads and oversized doughnuts rub shoulders with elegant pastry and European-style grab-and-go sandwiches. In the morning you will stop in for a premium roast and a bite for breakfast. At night you will bring in your date for a sweet finish after dinner, maybe a naughty spiked milkshake or a dainty dish of housemade gelato and a dessert beer. You will know that Dough is a Datz sister company because the food will be unique and the atmosphere will be fun, but that is where the similarities stop. Dough is her own entity.
glaze with the exotic spice of curry. His natural inclination toward inventiveness fits seamlessly with the Datz approach to food, Suzanne Perry says. “We don’t do boring. We aren’t interested in that and our customers know to expect more,” she said. Flannery is a natural when it comes to developing flavor profiles, but he learned a lot about technique and approach while working in some impressive kitchens. He’s worked in Chicago, New York, Philadelphia and beyond. Bern’s and Le Bernardin are on the list, as is Park City, Utah’s Stein Eriksen Lodge. At Dough, he will serve up classics and brand new confections. It’s all part of Suzanne Perry’s plan to create a true destination. There will be favorites that you return for again and again, she says, but the novelty of “what will they do next” will also tempt customers to return. With the opening just weeks away and countless details to finalize, she returns to the vision for Dough when she needs grounding. She knows that when the dust settles, Dough will have its chance to become the special, sweet place Tampa has been missing.
At the heart of this venture is Executive Pastry Chef Alex Flannery. Most recently on staff at the acclaimed Seminole Heights restaurant The Refinery, Flannery brings with him a bold, playful approach to baking. Panache: Why did you choose this business or line of work? César: For me, it wasn’t necessarily a choice. I always knew, from the time I was small, that I wanted to be a doctor. Panache: What is your primary role or duty in your company? César: I am very actively involved in all aspects of my company. I stay current with industry trends and research, train doctors, see patients, and monitor all aspects of the business. Panache: What sets you apart from your competition? César: Our program is individually designed and totally health oriented. We work on a healthy mind as well as a healthy body for success that will last. And our staff really knows their patients and become “personal coaches” to motivate patients to keep going until they reach their goal. Many of our staff have been our patients, so they understand the day to day struggle of patients changing their lifestyle. Panache: What would you be doing now if it weren’t for your business, taking money out of the equation? César: I can’t imagine doing anything different. I love being a doctor. It’s what I always wanted to do. I have always wanted to make a difference in people’s lives.

Panache: What do you do for fun? César: Spend time with my family. We enjoy traveling together, skiing, boating, and just being together. Panache: Who or what is most important to you, personally or professionally? César: My family is God’s gift to me, and they are most important. I enjoy being with them – I am blessed with a beautiful wife and three wonderful children. In addition I still have my mom, dad and sisters that I remain close to.
Panache: A little secret about you that would shock those who don’t know you! César: That I live the life I teach! I eat what I tell my patients to eat, and exercise regularly. I run marathons and have even done a “Tough Mudder” event. But probably the most surprising secret is that I would love to do some amateur race car driving. Panache: What are your personal and professional mottos? César: Visualize and realize! I visualize what I want, and continue that visualization until it happens. I work with my patients to help them discover their wants, then visualize the result and make that their mantra. Panache: When you were five, what was your dream to be when you grew up? César: I always knew I wanted to be a doctor. It was a calling for me – bigger than even a dream. Panache: Have you achieved all or most of your dreams thus far? César: My dreams are being actualized every day.
As a young boy in Guatemala, I had always dreamed of becoming a doctor. It would take me years of growing and developing to realize that the reason I wanted to become a doctor was to change peoples lives. This is what I love about what I do today. Immigrating to Chicago at the age of 12 with my parents and 4 sisters created a life that was not always easy. Learning the language and going through school with as English as my second language was challenging. My parents both worked and as the eldest, I had to help take care of my sisters. Through it all I knew that the reason for their immigration and hard work was that education for us was at the forefront of all their endeavors. I proceeded to graduate college and attend the University of Iowa Medical School where I decided to specialize in family practice to give me a broad spectrum of medicine to practice and I could treat the whole family. Soon after residency, I decided to venture out of the cold with my wife, Penelope and our baby son Julian to be the first settlers from both of our families to move to sunny Clearwater. This turned out to be a good move for us and we have since raised two sons and a daughter and have truly enjoyed being a part of this wonderful Tampa Bay community.

For about 16 years, I practiced as a board certified family practice doctor and treated a wide range of illnesses including diabetes, heart disease and high cholesterol, to name a few. Although I knew I was helping these patients and making a difference, I soon realized that all of these problems could potentially be resolved if the patients lost weight. I then began to visualize and research the idea of weight loss as the main focus for my patients. Initially, I began with a willing patient…my mother, who was struggling with diabetes. On the Trail of

A
delaide, Australia’s fifthlargest city, enjoys a history of gentility and tolerance since it was never a penal colony as so many other cities in this country were. It is known for its elegant Victorian buildings on streets laid out in a grid with lots of greenery, its festivals, and its cuisine and wine. Named for Queen Adelaide, wife of England’s William IV, this capital of South Australia was founded in 1836. Col. William Light designed the city around the River Torrens rather than the seacoast and surrounded it with parkland. During my December stay the “summer” weather was warm, and the nighttime street scene was in full bloom with outside dining at nearly every venue in town. Sixty percent of Australia’s great wines can be found in the highlands and valleys within a 50 mile radius of the city, and my first priority was to explore them. My guide to the city and the wine country was expatriate Ralf Hadzic, who had grown up in Ohio and Texas and had a distinct Dallas accent. He was also involved in the music business in the United States and Australia, hosting TV and radio

shows, producing concerts and recordings, and being a confidant and guide to many performers touring the country. Hadzic’s company, “Life Is a Cabernet Tours,” has a number of vehicles that shuttle visitors through the wine country, which allows them to sample wines while the drivers maneuver their vans on the left side of the road through the beautiful valleys surrounding Adelaide. This custom is evidence of the area’s English heritage, and quite a few old English automobiles have survived well in the moderate climate. Hadzic seemed to know everyone in town, which is about 1.2 million people, and he certainly knew the restaurants and wineries. One of our first stops was in the outskirts of the city, where Penfold’s Magill Estate offers a Heritage Tour of the original brick, stone and wood winery established in 1844. Penfold’s is famous for producing Grange, a limited-edition blend, every year since 1951. It’s astronomically expensive but amazing for anyone lucky enough or wealthy enough to taste it. I was one of the lucky ones, and I had a taste of the 1984, which had spectacular complexity and deep fruit
flavors -- and a price tag of $650 a bottle. Next it was off to the Adelaide Hills, about a 20-minute drive from the city, for views of true wine country. The landscape is similar to the California wine regions, with golden undulating hills doted by large oaks and eucalyptus trees. The only difference was the families of kangaroos, emus, white cockatoos in flight, a wallaby and the manic call of the kookaburra. Some of the vineyards we visited included Shaw and Smith and The Lane Winery, which has a lovely restaurant in the middle of the vineyard. Hadzic and I ate some delicious Coffin Bay oysters, and I had their lovely sauvignon blanc with lunch. Then it was off to perhaps the most famous wine area in Australia, the Barossa, renowned for its shiraz (Australian for syrah) and riesling, among many others. Located about 40 miles northeast of Adelaide, it was first settled by German immigrants in the 1840s, and the German influence continues in the small tourist towns in the valley. In Angaston we visited the Barossa Valley Cheese Co. for some samples

WINE of local goat- and cows’-milk cheeses handcrafted in the back of the shop. Next door is the Italian Kitchen for homemade pastries, bread and pasta to go. For a change of pace, we stopped at the beer garden at Barossa Valley Brewing in Tanunda. Owner Denham D’Silva studied at the University of Michigan and makes the best beer I tasted in Australia. For commercial beer my favorite was the hoppy James Boag’s. The other great wine valley is McLaren Vale, about a 40-minute drive southeast of Adelaide. Known for its red wines, it also produces chardonnay and chenin blanc among other white wines. Primo Estate Wines specializes in Italian varietals. Coriole Vineyards has beautiful views down the hills to the sea, and the tasting room also has a gift shop that sells olives from the property (packed and cured), olive oil and wine vinegar. D’Arenberg Winery also rests on the top of a hill and has long views from the vineyard restaurant. Winemaker and owner Chester Osborn makes 35 different wines with labels by local artists. I had lunch at the Vale/Inn Taphouse and Kitchen and tried the full flight of

beers, including cider, with my lunch. As they say in wine country, it takes a lot of beer to make good wine.

Ralf Hadzic was an able and helpful guide who even helped upgrade my 13-hour Qantas flight from Sydney to Los Angeles. I recommend his services highly: www.lifeisacabarnet.com.au. In Adelaide I stayed at the Majestic Roof Garden Hotel, which is centrally located just off Rundle Street, the main road for young Adelaide with access to a number of shops, cafes, restaurants, pubs and clubs that are open well into the early morning: www.majestichotels.com.au. I had a delightful country-house experience at Kingsford Homestead, which was known as Drover’s Run in the TV series “McLeod’s Daughters.” Built in 1856, the two-story sandstone Georgian structure is on a 225-acre property and offers seven luxury guest rooms. Managers Pat and Sally Kent are wonderful hosts. Pat opened up his wine cellar and served me the best wine I tasted on my tour, the Barons of the Barossa 2008 shiraz. If you stay there, beg him for a glass.

They also have an extraordinary young chef from England, Dannielle Stone, who prepared my best meal in Australia. Famous wineries such as Peter Lehmann, Yalumba, Rockford, Hentley Farm and Greenock Creek are a 10-minute drive from the property in the Barossa. The wineries of Clare Valley are about 30 minutes north: www.kingsfordhomestead.com.au. The largest non-British Isles population in Adelaide is Italian, accounting for a number of Italian restaurants. I dined at the friendly and homey Amalfi Pizzeria Restaurant. Also popular is the Mesa Lunga (long table), a lively tapas restaurant with a preserved period interior and communal seating on the veranda at long tables. Ingredients: Brioche Dough:
Instructions: Mix together the flour, salt and sugar. Stir yeast into room temperature milk and let yeast bloom for a few minutes. Combine Eggs, Yeast mixture, and dry ingredients into a mixing bowl and mix on low for 1 min. Turn to medium speed and mix for five minutes until a firm dough has formed. Slowly incorporate the softened butter a couple of tablespoons at a time until it is fully incorporated. Continue mixing until the dough pulls away from the sides of the bowl. Transfer to a bowl, cover and refrigerate the dough for a few hours or until ready for use. To Assemble: Remove Brioche dough from the fridge, and roll into a rectangle on a lightly floured surface, until a ¼ inch thick. Brush the dough with melted butter, leaving an inch across the top of the rectangle. Sprinkle generously the cinnamon sugar mixture over the buttered surface. Beat one egg with a tablespoon of water and brush lightly on the one inch surface at the top of the dough. Starting at one end, and working towards the other, tightly roll the dough toward the top. Continue rolling, and secure the roll attaching the sticky egg surface to the rest. Coat the bottom of a baking dish with the smear until a ¼ inch thick. Cut into 1 ½ inch rounds, and place next to each other in a baking dish with the smear. Cover with a Towel and leave at room temperature until more than doubled in size. Bake in an oven at 350 for 35 – 40 minutes or until golden brown. Let for 15 minutes to cool slightly, and enjoy! 34

Shoppers May Have to Weigh Surcharge in Choosing
CASH VS. CREDIT CARD
H
ow much is it worth to you to pay for your purchases using a credit card? That’s a question that shoppers for everything from groceries to clothing to airline tickets may soon have to start asking themselves. As part of the settlement in an epic battle between retailers and card issuers, merchants are now allowed to charge additional fees to consumers who pay with a credit card. Of course, you could always pay in cash (or check or debit) -- and avoid fees for credit card usage. And you could avoid merchants who choose to tack on these fees, which could be as much as 3 percent of the purchase price. It’s a tough question for consumers -- especially if the idea of charging an extra fee for the use of a credit card catches on. And it will be a tough call for merchants, who risk alienating their customers if they add the fee. In the past few weeks, seven states, including Illinois, have introduced legislation to ban the use of surcharges on credit purchases in the name of consumer protection. You might be wondering how this idea of credit-card surcharges came up in the first place -- an idea that incents us to go back to a cash or paper checkwriting economy, or to use debit cards in place of credit. The opportunity for credit-card surcharges came about as part of the settlement of a $7.25 billion class-action suit charging that card issuers had a monopoly that included setting fees. That lawsuit was settled in July 2012, after a seven-year negotiation. Part of the deal required banks to relax their strict rules

requiring merchants to absorb the cost of processing payments. Consumers would not have been aware of how the credit industry was splitting or absorbing the fees and costs of extending credit -- until this recent move by retailers to charge extra for use of a credit card -- a charge made possible by the lawsuit settlement. And that brings us to the argument over whether adding a fee for creditcard usage is “fair” to consumers, and whether it helps or hurts the economy. As you can imagine, there are arguments on both sides. Will surcharges help consumers avoid credit-card debt, making them think twice before they say, “Charge it”? Or will those surcharges only add to the debt burden being faced by consumers who are forced to use credit for essentials because they don’t have money in the bank to use a debit card? And will encouraging the use of checks or cash make our economy less efficient and more costly, merely adding more fees and pushing prices higher? Will it make banks less profitable -causing them to raise fees elsewhere? This “small” fee of up to 3 percent has huge implications in our multitrilliondollar consumer economy. One thing to consider in this debate: The price of credit is already being paid by everyone. The merchant’s overhead cost of processing credit is already part of the price of everything you buy, whether you use credit or not. The cost is built into the prices they set. So unless they first lower all their prices across the board for everyone, and only then charge a checkout fee to a customer paying with a credit card, this plan to
add a checkout fee seems to be “double dipping.” Credit customers would be paying twice for the cost of credit. Perhaps merchants should offer lower prices for those who do not use credit -- as opposed to a surcharge for those who do. We might go back to those days of the “underground economy,” in which the common phrase was: “I’ll do it for less if you pay cash.” That tended to apply to services such as electrical or plumbing, where cash was king. But some people still figure they can walk into a family owned business and expect to get a discount if they offer cash. Charging for credit inevitably causes a two-tier pricing system. You will still have choices when you shop. If you don’t want to pay extra for credit-card purchases, you can use your debit card. That presumes you have cash in your account to immediately pay for your purchase and are using your card for convenience and for the protection that use of a debit-card offers against fraud. Or you could go back to writing checks. Remember the delays in the checkout line at supermarkets and drugstores as you waited behind a customer seeking approval of a check? How inefficient. And it unfairly discriminates against those who need to use credit to pay for the unexpected car repair, or broken refrigerator, or doctor bill. The real question is whether anyone believes that charging a surcharge for credit will contribute to lower prices for those who use cash or debit, thus helping consumers in these tough times. 8th Annual WEDU Be More Awards

EDU, west central Florida’s leading PBS television station, recognized m o r e than 100 non-profit organizations and individuals in the area who applied for honors and recognition in the eighth annual WEDU Be More Awards, held Thursday, February 21, 2013 at the A La Carte Event Pavilion in Tampa. Great stories, unscripted moments, inspirational messages and nail-biting anticipation were at the heart of the celebration. Created by WEDU, the WEDU Be More Awards luncheon is one of the station’s premier events that annually pays tribute to outstanding achievements made by dedicated and generous individuals, as well as nonprofit organizations. Co-hosting the ceremony were Lissette Campos, Director of Community Affairs for ABC Action News and host of the Positively Tampa Bay segment seen weekdays on ABC in the Tampa area and Jack Harris, legendary media personality and co-host on WFLA’s morning radio show. Together, Ms. Campos and Mr. Harris led the event for more than 480 guests through an afternoon filled with heartfelt stories and encouraging messages. Sonya Little from the City of Tampa also joined the celebration and presented the Mayor’s proclamation recognizing February 21st as annual Be More Awards Day proclamation made by the City. Created by WEDU, the WEDU Be More Awards™ has become a nationallyrecognized, award-winning program and special initiative of PBS stations throughout the country who can best tell local success stories of their unsung heroes generate awareness for nonprofit organizations and celebrate the spirit of goodwill throughout their own communities.
