C

hiropractic is defined as “a form of alternative medicine that emphasizes diagnosis, treatment and prevention of mechanical disorders of the musculoskeletal system, especially the spine, under the belief that these disorders affect general health via the nervous system.”

It is estimated that doctors of chiropractic treat more than 30 million people annually. Today, doctors of chiropractic comprise the third largest group of doctorate-level primary-care providers in the nation, next to medical doctors and dentists. Chiropractic care has grown exponentially in the United States, but with

that growth, we have seen an increase in chiropractors who have lost focus on truly healing and promoting health and wellness in the community. Many doctors focus on pain relief and do not spend time providing patients with the knowledge of being well. Traditional chiropractic care strives to remove pain and limited range of motion through manipulations and modalities like electric muscle stimulation and ultrasound. Patients are treated until the pain is eliminated and then they are released from care. The problem with this traditional treatment plan is that the underlying cause of the pain is not eliminated and the pain eventually returns.

CORRECTIVE CARE LEAVES LASTING RESULTS

We see patients in our office daily that say that they have treated with another chiropractor for the same condition in the past. Typically, we find that they received a few adjustments and stopped with care as soon as they “felt” better. The problem with that is that only 10% of the nervous system is programmed to identify pain. So just because you do not feel the pain does not mean that there is not an interference. I

t doesn’t have to be that way. Everywhere I look – the internet, celebrity magazines, television, even local restaurants – I see perfectly lovely ladies with terrible facial filler jobs - chipmunk cheeks, fish lips, puffy eyes, chimp mouth. You have all seen it, too. I am here to tell you that well-trained, careful physicians can delicately and artistically restore lost facial volume without anyone being able to tell that anything was done. As we age, we lose volume in the face. The collagen over the cheek bones begins to dissolve; the front of the cheeks flattens; the lines under the nose deepen. Hollows develop under the eyes and the lips become thin and turn downward. We can address all of these issues with facial fillers. Cheeks are probably the most common volume-loss issue I see. As we lose volume, the front flattens causing the lower cheek to droop over the naso-labial fold – the line that runs between the corners of the nose

and the mouth. As this fold deepens, the nose looks more prominent and the whole face appears to sag. There are wonderful fillers for this area - fillers that lift the cheeks, fill out flattened areas and soften the lines under the nose. With filler, the padding over the cheek bones becomes fuller, rounder and softer. Extending the filler up a little higher frames and emphasizes the eyes and diverts attention away from the nose. Radiesse by Merz and Voluma by Allergan work exceedingly well in this area and can last a year or more. A little anesthetic mixed in with the filler makes the injections nearly painless. Lips are a common problem too. Aging causes the lips to become thinner and longer. Depressions appear at the corners of the mouth and the upper lip turns downward producing a persistent frown. Vertical lines cross the upper lip border causing lipstick to bleed into them. The trick here is a subtle and artistic accent with a filler like Juvéderm Ultra by Allergan. A delicate bead of filler along the border stops the lipstick from bleeding and emphasizes the lip color. Supporting the corners of the lips softens the shadows, erases the frown and allows more color to show in the upper lip. A tiny bit of volume under Cupid’s bow and in the lower lip returns the look of youthful fullness. Although a bit more sensitive than other areas of the face, a combination of anesthetic and ice makes the lip injections quite bearable. Lips, more than any other area, require an injector with a combination of patience, artistic sense, superb training and vast experience. You should not trust your lips to someone who spends the bulk of his time performing operative procedures instead of injecting filler. It is perfectly fine to ask about board certification, training and experience so insist on the best injector you can find. There are too many poorly-done puffy lip jobs out there for you to trust just anyone. The hollows under the eyes have been a particularly difficult area to address until about two years ago when Belotero was introduced by Merz. Initially developed for fine etched lines along the cheeks and lips,

this filler is so soft and smooth that it can fill the tear troughs and hollows under the eyes without leaving lumps. When mixed with anesthetic, the injections are surprisingly painless and the results are beautiful and long-lasting. This area requires delicacy and patience on the part of the injector, so choose carefully. Now, a word of caution: Almost every week I see email deals from internet coupon companies offering Botox, Dysport and facial fillers to the public at about half price. You may be tempted to purchase one of these coupons but I urge you to resist. The spas and aesthetic practices making these offers pay the coupon company a significant percentage and still make a profit only because they illegally import the fillers from Canada or Europe. These imported products are not inspected or packaged under FDA guidelines. Some are even total fakes from China or Russia. Worse yet, the manufacturers, Allergan and Merz, will not support any illegally imported product and malpractice insurance companies will not cover damages from these products. If you have a problem with discount imported filler, you are totally on your own. The practices that cut corners like this commonly have inexpensive, minimally trained, non-physicians to perform the injections. I can’t count how many times I have had to fix poorly-done discount injections. Don’t fall for this. Your face is too important. Your eyes and your lips are the keys to your beauty. The artistic and subtle use of volumizing fillers can enhance and frame your eyes, emphasize your lips and restore lost volume giving you a rested and more youthful appearance. DRUG COSTS MAY CAUSE OUR HEALTH CARE SYSTEM TO IMPLODE BY DAVID LIPSCHITZ

W

ith the advent of drug plans, fewer patients are refusing to take common medications because of cost. The problem has also declined, as more and more blockbuster drugs are now generic. But as more of these common drugs become generic, fewer companies are producing them. This has led to an abrupt rise in the cost of generics that could cause significant health care inflation in the future. In the past few months, the cost of digoxin (a drug that has been used for over 50 years) increased from $4 to $54 for a months supply. Similarly, costs of levothyroxine, prednisone, codeine and doxycycline have dramatically increased. The impact of rising prices for generic drugs could be enormous based on the huge number of prescriptions written each year. The problem is compounded by

the explosive costs of brand name drugs, particularly for those with no major alternatives. To me, the most frustrating is the medication Abilify. For many patients with major depression, the addition of Abilify to therapy with an antidepressant often leads to truly dramatic improvements, particularly if the patient is willing to participate in psychotherapy as well. But the cost is overwhelming. One month’s supply of the commonly prescribed dose is $717. Virtually none of my Medicare patients can afford the cost and yet, thanks to commercial insurance and those who can pay, Abilify sales rank first of all brand name drugs in the USA raking in $2.7 billion in the fourth quarter of 2013. If they cut costs by 80 percent, profits may well be the same, as so many patients could afford the drug. Another example of the way in which pharmaceutical companies try to derive more profit from blockbuster drugs is to make changes within a year of a drug going generic. A good example was Forest Laboratories that produced the antidepressant Celexa. About a year before Celexa went generic, they released Lexapro, which was said to be more effective with fewer side effects. Thanks to a great marketing campaign and because, at that time, the drugs were essentially the same price, the vast majority switched to Lexapro. The differences between these two drugs are inconsequential, but Forest Labs has

collected billions as physicians continued to prescribe the brand name Lexapro. And then there is the fiasco with Alzheimer’s drugs. The most commonly used is Donepezil (Aricept), which is now generic. The dose is 10 mg daily. Soon before Donepezil went generic, a study indicated that 23 mg of Aricept protected against memory to a greater degree than 10 mg. Of course, they did not use 20 mg, as it was too easy to give two 10 mg tablets. The evidence that 23 mg is much better than 10 mg is highly questionable. The Attorney General of New York State is suing Actavis, the pharmaceutical company that owns Forest Labs, for discontinuing the production of Memantine (Namenda), as it is about to go generic. Instead, they have told physicians to switch their patients to a once a day Namenda XR for which they will hold a patent for many years. The attorney general Eric Schneiderman stated “A drug company manipulating vulnerable patients and forcing physicians to alter treatment plans unnecessarily, simply to protect corporate profits, is unethical and illegal,” The costs of drugs and the ability of companies to charge as much as the market will bear creates an enormous economic burden that affects the viability of our health care system. The more serious and life-threatening an illness and the more vulnerable the patient, the more we are willing to pay for life-prolonging treatment. The drugs prescribed to help cure cancer often cost hundreds of thousand of dollars, as are the new biologicals that dramatically improve patients with illnesses such as severe rheumatoid arthritis, Crohns disease and ulcerative colitis. In many countries, drug prices are rigidly regulated. This is often given as a reason why we Americans must pay more in order to provide the research and development funds to discover new breakthroughs. But we remain hostage to an avaricious medical industrial complex that makes our health care system the most expensive in the world. This, in turn, leads to many who go without the best available care, explaining, in part, why the health of Americans ranks last of any developed nation.

POTASSIUM TO THE RESCUE BY CHARLYN FARGO

R

esearchers have found that older women whose diets involve potassium-rich foods may be at a reduced risk of stroke and have a greater life expectancy than women consuming less potassium-rich foods. The study, published in the American Heart Association’s journal, Stroke, also suggests that postmenopausal women derive greater benefit from potassium-rich foods if they do not have high blood pressure. “Previous studies have shown that potassium consumption may lower blood pressure. But whether potassium intake could prevent stroke or death wasn’t clear,” explains Sylvia WassertheilSmoller, Ph.D., senior author of the study from Albert Einstein College of Medicine, Bronx, New York. The study found that many older American women are not getting the recommended amount of potassium in their diets -- at least 4,700 mg of potassium daily, according to the U.S. Department of Agriculture. “Only 2.8 percent of women in our study met or exceeded this level,” says Wassertheil-Smoller. The researchers followed a total of 90,137 postmenopausal women, ages 50 to 79, for an average of 11 years. During this period, they monitored how much potassium the participants consumed as well as the incidence of different stroke types

and death. All of the women were strokefree when the study began. Their average dietary potassium intake was 2,611 mg per day, and the researchers based the results of the study on potassium intake from foods rather than supplements. The researchers found that the women who consumed the most potassium (more than 3193.6 mg a day) were 16 percent less likely to have an ischemic stroke and 12 percent less likely to have a stroke in general than the women who ate the least (less than 1925.5 mg of potassium a day). The women who ate the most potassium were also less likely to die during the follow-up period than those who had the lowest potassium consumption. Researchers suggest that a diet featuring a higher consumption of potassium could be more beneficial before hypertension develops. Foods high in potassium include bananas, cantaloupe, grapefruit, oranges and potatoes. A: You may be referring to the fact that most plant foods have incomplete protein, meaning they are low in one or more of the essential amino acids that we need to form muscle and other body tissues, enzymes, hormones and more. Amino acids are the building blocks that make up protein. For example, rice and beans each supply amino acids that are low in the other. In the past, it was thought that these needed to be eaten at the same meal for the body to use the amino acids. Now studies show

that the body can get needed amino acids from protein eaten throughout the same day. Different types of plant foods vary in amino acid content. That’s why it is important, especially if you are eating primarily vegetarian meals, to get a variety of protein sources. For example, grains, nuts and vegetables might not be able to meet needs for the amino acid called lysine without the help of legumes (dried beans and peas). If you eat a variety of whole grains, legumes (dried beans and peas), seeds, nuts and vegetables throughout the day, and in amounts that meet your calorie needs, you should meet protein and amino acid needs without focusing on creating specific combinations in each meal. HEALTHY HOMEMADE PUMPKIN BREAD • 2 1/2 cups all-purpose flour • 2 cups whole-wheat flour, preferably white whole-wheat • 1 tablespoon baking powder • 2 teaspoons baking soda • 2 teaspoons salt • 2 large eggs • 2 large egg whites • 2 cups packed light brown sugar • 3 cups canned unseasoned pumpkin puree • 1/2 cup canola oil Preheat oven to 350F. Coat two 9-by-5inch loaf pans with cooking spray. Stir allpurpose flour, whole-wheat flour, baking powder, baking soda and salt in a large bowl. Whisk eggs, egg whites, brown sugar, pumpkin and oil in another large bowl. Add the pumpkin mixture to the dry ingredients and mix until just combined. Scrape the batter into the prepared pans and smooth the tops. Bake the loaves until the tops are golden brown and a cake tester inserted in the center comes out clean, 50 to 60 minutes. Cool in the pans for 10 minutes. Turn the loaves out onto a wire rack to cool completely. Makes 2 loaves, 12 slices per loaf. Per serving: 210 calories; 4 g protein, 38 g carbohydrate, 5 g fat, 16 mg cholesterol, 2 g fiber, 377 mg sodium.

ou can get them roasted and salted. Soon you may want them irradiated, too. Food scientists at the University of Florida report that exposing peanuts to pulses of ultraviolet light removes roughly 80 percent of allergens. They say that this reduction makes the legumes safe to eat for 95 percent of people with current peanut allergies. The process appears to inactivate allergenic proteins in peanuts. Completely eradicating the proteins is problematic, however, because it would affect texture, color, flavor and nutrition. An estimated 1.9 million Americans are allergic to peanuts, with reactions ranging from skin rashes to anaphylaxis, which can be fatal. But don’t look for a bag of the UV peanuts any time soon. Scientists must still conduct clinical trials on animals and humans. Body of Knowledge After age 30, the brain begins to lose

neurons at a rate of about 50,000 per day, shrinking 0.25 percent in mass each year. Get Me That, Stat! Praise the lard! Best Medicine A professional bagpipe player was asked by a funeral director to perform at a grave-

side service for a man who had no family or friends but who reportedly had been a huge aficionado of Scottish music. Unfortunately, on the day of the funeral, the bagpiper got lost and arrived late. He saw no one at the cemetery but a group of workers around a hole in the ground. They were eating lunch. The bagpiper peered into the ground and saw the metal top of the burial vault. He felt great remorse for missing the service and for his failure to honor the deceased. Pulling out his pipes, he began to play, better than he had ever played before. Soon the workers gathered around him. They wept. The bagpiper wept. It was a beautiful moment, and the bagpiper felt both joy and redemption as he packed away his instrument and headed back to his car. “I’ve never seen anything like that before,” said one worker, “and I’ve been putting in septic tanks for 20 years.” Medical History This week in 1947, the Los Angeles County Board of Supervisors established the first U.S. air pollution control program by creating the Los Angeles County Air Pollution Control District. On July 26, 1943, the city had experienced a blanket of smog so thick that visibility was reduced to less than three blocks. A study was ordered to identify the causes, which proved to be multiple: locomotive smoke, diesel truck fumes and backyard rubbish burning, plus mountain topography, stagnant winds and atmospheric temperature inversions. The district was created to begin the challenge of reducing these problems and clearing the air. Curtain Calls In A.D. 258, Lawrence of Rome, one of seven deacons in the ancient city under Pope Sixtus II, was roasted alive on a giant grill during the persecution instituted by emperor Valerian. A century or so later, the Roman poet Prudentius wrote that Lawrence, who was later sainted, had joked with his tormentors: “Turn me over. I’m done on this side.” Lawrence is now considered the patron saint of cooks and firefighters.

GERMS IN THE DENTAL OFFICE

T

oday more than ever infection control and the spread of infectious disease is on everyone’s mind. From the front page of the newspaper, to the TV news and the internet – the germ invasion is everywhere. As always, I choose to educate and arm you with information about the truths of this important topic and what you should look for in your dental office. Cross infection in the dental office, the transfer of infection from one patient to another in a health care environment, is a serious subject that should be handled seriously and carefully in a dental office. There are many protocols in place to prevent this from happening and protect you as a patient. The following checklist can be used to help you determine if your dental office is properly protected: 1. Those annoying latex gloves – Does your dentist, hygienist and dental assistant wear gloves? When do they put them on? They should come out of a glove dispenser. What do they

touch with the gloves? They should only touch the sterile instruments or your mouth. Do they change gloves for every patient? Of course. Is there a soap dispenser in the room and is it used regularly? This should be done in addition to changing gloves. 2. How clean is the office – A clean office can be an indication of how serious the office is about sterilization. Are there special containers for disposal needles and sharp items? Devices have to either be sterilized or thrown away. If you can’t see them it’s ok to ask where they are kept. Are the dental rooms cleaned between patients? In our office we use disposable plastic covers over chairs and other objects in the room. Each room is cleaned with a special disinfectant between each patient. 3. How are the instruments cleaned – There should be a separate area used for the disinfection of instruments. All instruments used large or small require proper sterilization. Our office

has an area where “dirty” instruments are placed and then moved to the “clean” area through the sterilization process ending with the Autoclave (sterilization machine). Instruments should be unwrapped from a sealed bag in front of you. A sealed bag indicates that the instruments have been sterilized (autoclaved). All dental offices are regulated by the rules set up by OSHA (Occupational Safety and Health Administration). Cross infection is exceedingly rare because, like our office, we follow strict state and federal guidelines and protocols that monitors all of the above practices. Today the risk of your health being affected by not seeing the dentist is far greater than the risk of cross infection. eeing a patient monthly, for an average of 2 years gives the Orthodontist a unique opportunity to get to know their patient. Going over treatment time is not however the way to broaden these friendships. “I want My braces OFF NOW! You said only 2 years and it’s been longer!”. Every Orthodontist has heard this familiar statement. Most times it has nothing to do with the Orthodontist. The biggest Reason for “going over treatment time” is PATIENT COMPLIANCE. When I ask a patient to wear their rubber bands for a prescribed period of time, keep their teeth clean and to show up for their appointments it is done with the end result and

timing in mind. By far elastic wear is the most difficult item for patients to comprehend. When asked to wear them all of the time (20-22hrs/day), many patients state that they do. Upon further questioning it is found out that “full time” to them is 8-10 hours/ day on a somewhat irregular schedule. It would be nice if that would work, but it doesn’t, due to how the body moves teeth. The full time schedule is a must! I have seen patients go over treatment by a full year only to start to cooperate and be done in 2-3 months. So a word to the wise PLEASE follow your Orthodontist s’ requests and you will probably finish on time and both enjoy your appointments.

HYPNOTHERAPY: Facts, Fiction, and Applications in CIinical Practice DR. CESAR LARA

W

hat do you think of when you hear the word hypnosis? Magicians, pocket watches, and people clucking like chickens? Hypnosis has played a part in the entertainment world for years. What many people do not know, however is that hypnosis also has an important role in the medical community. Hypnosis has been accepted by the American Medical Association as a low risk therapeutic procedure since 1958, and has helped people with habits such as smoking, anxiety, chronic pain, and overeating. Far from hocus pocus, what hypnosis does is put an individual into a relaxed or meditative state, where he or she is open to the power of suggestion. Although people are more susceptible to new ideas under hypnosis, they cannot be forced to do anything they do not want to do. In this state, the hypnotist can retrain patients’ thoughts and behaviors toward meeting their goals. Is it possible to retrain our behaviors without hypnosis? Absolutely, but this kind of modification is not always accessible for some patients. In the area of weight management, patients may know what steps they need to take in order to become healthier, but they find actually following through with these steps extremely difficult. They have historical patterns of engaging in behaviors that are directly counterproductive to what it is

they really want. There are other factors at work here besides a lack of knowledge or willpower. Hypnosis can help retrain patients’ brainwaves so that they are able to readily take action in a way that will help them achieve their goals, rather than work against them. One of the methods hypnosis uses is aversion therapy. Suppose a patient is trying to follow a weight loss program but finds that chocolate cake is her downfall, sabotaging and undoing her healthier habits. The patient also hates onions. While under hypnosis, it is suggested to the patient that chocolate cake tastes and smells like onions. An actual onion is presented to the patient under hypnosis while she is thinking about chocolate cake, so that she smells the onion and associates it with the chocolate cake. Once the session has ended, the patient is no longer interested in chocolate cake, because she associates it with onions, which she doesn’t like at all. Hypnosis is also a great supportive technique in help patients stick to their nutrition plans. Often patients are given appetite suppressants when they begin a weight management program. Many patients find combining hypnosis with the appetite suppressants makes following their new regime much easier. Some patients elect to use hypnosis in place of the appetite suppressants altogether. Whether hypnosis is a complement to the suppressants or a replacement for them, our patients find that moderating their hunger stop them from feeling deprived, and thereby reduces resistance to making behavioral changes. One of the most exciting applications of hypnosis we have used is the virtual gastric bypass. While under hypnosis, it is suggested to a patient that he has had a gastric bypass surgery. The hypnotherapist my present rubbing alcohol and cotton to

heighten the association with a surgical procedure. Out of hypnosis, the patient believes his stomach has shrunk, and he is put on the same nutrition plan that a patient who had gastric bypass surgery would follow. Although the patient never actually undergoes the surgery, the belief that he did is strong enough that he will follow the nutrition plan and lose weight. We have one individual who lost 170 lbs using this completely surgery-free method. Hypnosis is cost-effective, safe, and efficient: 80% of our patients find that just one visit with Debbie Lane, our hypnotherapist, is enough to help them create new behavioral patterns. Named International Hypnotist of the Year in 2007 and 2008 by the International Association of Therapists and Counselors, Debbie has also appeared on TLC. ince acquiring the contemporary art collection from the former Gulf Coast Museum of Art, LRMA has presented an annual exhibition that explores themes and concepts relevant to artists today. This fall, Uncertain Landscape: Victoria Block and Alain Salesse and Disappearing Landscape: Janos Enyedi each share a message of subjective landscapes based on real or imaginary observations. Block and Salesse explore personal landscapes in a variety of media. For Block, large impressionistic paintings, accompanied by drawings, ceramic installations and mixed media pieces create a visual interplay that conjures up associations and memory. For Salesse, sculpture and technology synthesize in large ceramic egg forms that explore tactile realities. These fabricated, self-contained worlds convey an inner vision that require interaction to activate the imagination.

Janos Enyedi (1947-2011) was a nationally known sculptor whose meticulous recreations of factories and buildings in America’s rust belt bring a sense of dignity to these decaying structures. Enyedi, who lived and worked in the Washington, DC, area for over two decades, moved to St. Petersburg’s rapidly expanding Warehouse Arts District in 2010. He left a large body of work before his untimely death in 2011, including metal sculpture, large-format digital photography and industrial vignettes (referred to as threedimensional paintings).

WHEN TO FLOAT THE FURNITURE BY ROSE BENNETT GILBERT

Q

: I can’t figure how to arrange the furniture in our living room. One wall is all glass, leading out to the deck. I can’t put anything against the glass -- I don’t want to be out on the deck looking at the back of the sofa, do I? A: Your best answer is to float the seating arrangement in the center of your living room, well away from the glass wall. Here’s a good example: This arrangement even accommodates two sofas, one on each side. A pair of alert-looking chairs, plus that large central ottoman -which also serves as a cocktail table -- allows ample seating for a crowd. Two things to remember when you float seating pieces this way: 1. Always provide a surface within easy reach where people can put down

drinks, glasses, whatever. Small tables between chairs and narrow tables snug up behind a sofa are good solutions. In this room, a large tray on the ottoman would do the trick, too. 2. Be sure to provide good “task” light for reading from table lamps and/or floor lamps standing behind the seating pieces. Ambient -- or general -- lighting comes from overhead fixtures or wall sconces. Here, the overhead light is also a work of art: a sculptured fixture by designer Kenneth Cobonpue (kennethcobonpueshop. com) that’s well worth looking up to. Q: I hate the knotty pine paneling in the den of the house we just bought. Our contractor says if we try to paint over it the dark knots will eventually show through. We don’t want the expense of removing the paneling. Do we have any other alternatives? A. Consider pickling the paneling, that is, using diluted white paint to dull and soften the finish and subdue the dark knots. It’s an easy process to do yourself: Just

add water to the paint, brush it on the wall and wait a little while before wiping most of the color off. Final step: Spray on two coats of clear varnish. Q: The guest bedroom is in the back of the house and kind of dark. Any suggestions on how to brighten it up? We’re not interested in any major remodeling. A: If you don’t consider this “major remodeling,” change out the door to the guest room. A glass-paneled French door -- curtained in sheer fabric for privacy -will not only let in more actual light, it will open things up psychologically, as well. Then rely on the capability of color and light to push back the gloom. Paint the walls white or a bright pastel; ditto the ceiling. And do use a torchere -- a floor lamp that aims its light up and over the ceiling-- to illuminate the entire room (you will still need reading lamps on either side of the bed). Finally, laying a light-colored rug will help bounce the light back up and around the room to brighten things up for your guests.

DOES YOUR FURNITURE MAKE YOU YAWN? BY GENE MCDONALD

I

f it does make you yawn, have I got a tip for you! We recently did a couple of projects that some customers wanted “something different” for their furniture. I hear those two words as often as I make very unique counter-tops in which they already know. I gave my usual suggestions of the exotic woods and eco materials I work with and to my dismay, it didn’t satisfy their itch. I was feeling challenged as I always try to custom build what the customer wants. I offer unique wood materials like Bamboo, Kirei board, sunflower seeds panel, and coconut palm. I suggested these material options and all three customers said they want even more different than that, My creative juices were flowing. They have already seen these products in my showroom. Yes they love them but it still wasn’t satisfying the “Something Different” factor. The words salvaged, reclaimed, and scraps began to pop up. I began my research into the reclaimed wood industry and visiting salvage yards. I realized producing new furniture with old re-

claimed wood is a challenge, because you are limited to what is actually available. I started thinking of running a business on materials that have to be found rather than ordered would be quite challenging. How do I even price this as you would have to factor in search time. I came up with much simpler ideas to meet this demand for our new furniture line. Pallets taken apart and leaving the nail holes in the planks that I cut into sharp angles made customer #1 happy for his end tables. All my scrap Eco woods were cut in various squares and applied to the reception desk made Customer # 2 happy and smile. The thin strips of scrap wood from a local wood shop they left outside for a while that Mother Nature gave her artistic touches too made Customer # 3 happy, excited and dancing. I wanted to share this with you guys because this may take the “REFACING” cabinet industry to whole other level. Formica refacing may make you yawn too much. This also may be great for Do-itYourselfers. Perhaps that old garage you

tear down or old dining table you want to get rid of can actually be cut into strips or squares. Then attach these pieces to furniture, cabinets, and even the wall as a decorative rustic look. Make sure you have fun doing this; it will bring out so many smiles in you and the people you show these items to. There is also a great lesson in having the kids help. They may learn to conserve wood and witness how the transformation of something no longer wanted can become a stunning masterpiece. trip to the pumpkin patch is a fall tradition for many of us, followed by a fun-filled afternoon of carving jack-o’-lanterns. But pumpkins are more than just a fall decoration -- they are packed with nutrition. The pumpkin is a member of the gourd family, which also includes watermelon and squash. Its orange flesh has a mild, sweet flavor and the seeds, when roasted, have a nutty flavor. Fresh pumpkins are available now. While some weigh more than 100 pounds, the smaller pumpkins are actually better for cooking. Pumpkins are a good source of potassium and vitamin C as well as a top source of vitamin A. Here are some ways to include pumpkin in your diet: • 1. Blend a pumpkin smoothie -- use pumpkin, fat-free milk, frozen vanilla yogurt, a dash of pumpkin pie spice or cinnamon. • 2. Add fresh cooked or canned pumpkin to pancake batter. • 3. Use 1/4 cup of canned pumpkin in place of an egg in baked breads and muffins. • 4. Cook mashed pumpkin with fat-free and low-sodium chicken broth, evaporated frat-free milk, nutmeg, onion and other spices for a pumpkin soup. • 5. Make homemade ravioli with a stuffing of canned pumpkin and fresh grated Parmesan cheese. • 6. To toast pumpkin seeds: Rinse seeds to remove pulp and strings. Spread seeds on a medium baking sheet that has been coated with non-stick cooking spray. Sprinkle lightly with salt or seasoned salt. Bake at 325 degrees for about 30 minutes or until lightly toasted. Stir occasionally during cooking. Q and A Q: I think that my portions have gotten too large, but I’m having trouble getting

back to “normal” portions. What do you suggest? A: If you are the cook and find that there is always more food than you need, try cutting back on the amount you fix. You’ll save money and face less temptation to overeat. However, if you want extra to take for lunch or freeze for a future meal, dish out what you intend for future use into storage containers at the same time you are serving onto plates. If you currently put serving bowls on the table, consider keeping food off the table, so you have to get up to get a second portion. Simply not having a bowl of food right in front of you is often enough to help you avoid overeating. Alternatively, some people put only a serving bowl of vegetables or salad on the table to encourage eating more of these foods. If your portion of meat or poultry is larger than a deck of cards, or your portion of a grain (pasta, rice) or potato is larger than your fist, try serving yourself about three-quarters of your usual amount. Studies suggest that we are often satisfied with less than we think we need. Some people find that if they fill half their plates with vegetables or salad first, it’s easier to take smaller portions of everything else. Using smaller plates can also help, because your plate will be as full as usual with smaller amounts. Allow for the possibility of going back for seconds if you are hungry, but wait just a few minutes, and you may be surprised at how often that perceived need for more passes quickly away. If your overeating occurs as you linger at the table, plan ahead for some fruit or a cup of coffee or tea to enjoy at meal’s end. Or if

PUMPKIN-CRANBERRY MUFFINS • 1 1/2 cups all-purpose flour (about 6 3/4 ounces) • 1 teaspoon baking soda • 3/4 teaspoon ground ginger • 1/2 teaspoon baking powder • 1/2 teaspoon ground cinnamon • 1/4 teaspoon salt • 1/8 teaspoon ground cloves • 1 cup granulated sugar • 1 cup canned pumpkin • 1/2 cup low-fat buttermilk • 1/4 cup packed light brown sugar • 2 tablespoons canola oil • 1 large egg • 2/3 cup sweetened dried cranberries, chopped (such as Craisins) Cooking spray Preheat oven to 375F. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking soda, and next 5 ingredients (though cloves); stir well with a whisk. Combine granulated sugar and next 5 ingredients (through egg) in a large bowl; beat with a mixer at medium speed until well blended (about 3 minutes). Add flour mixture to sugar mixture; beat at low speed just until combined. Fold in cranberries. Place 12 paper muffin cup liners in muffin cups; coat liners with cooking spray. Spoon batter into prepared cups. Bake at 375F for 25 minutes or until muffins spring back when touched lightly in center. Remove muffins from pan immediately; place on a wire rack. Per serving: 199 calories, 2.8 g protein, 41.1 g carbohydrate, 3.2 g fat, 18 mg cholesterol, 1.5 g fiber, 195 mg sodium.

he holidays will soon be here. It’s not too soon to put together a strategy to keep the extra holiday pounds at bay, especially if you are diabetic. Cooking Light and Health magazine put together some tips for healthy snacking and to lower the carbs. It starts with portion control. Here are some other tips: 1. Choose fresh raw veggies as dippers over crackers. An ounce of wheat crackers has the same amount of carbohydrates found in about 2 1/2 cups of fresh veggies. And you save on fat and sodium, too. 2. Choose pumpkin pie over pecan and save 10 grams of carbohydrates. Eat is slowly to savor the flavors. 3. Choose shortbread over a frosted sugar cookie. A buttery shortbread square has only 9 grams of carbohydrates -- 75 percent less than a frosted sugar cookie. 4. Choose salsa over creamy spinach dip. 5. Choose dark chocolate over brownies. Just 1 satisfying ounce of dark chocolate has half the carbohydrates of a brownie. 6. Choose bean-based spreads over cream cheese spreads. Opt for fiberpacked bean spreads like black bean dip or hummus. Fiber helps control blood sugar and will help you feel full longer. 7. Choose mixed nuts over snack mix. Go for plain mixed nuts instead of a snack mix with cereal, dried fruit and candy, which can have more than 24 grams of

carbohydrates per half cup. 8. Choose boiled shrimp over fried. 9. Choose oil and vinegar over bottled creamy dressing. 10. Choose a lemon sparkler over a soda. Mix 4 ounces fresh lemonade with 8 ounces sparkling water for a drink that cuts carbs and sugar by two-thirds compared to a 12 ounce can of soda. Q and A Q: Are mushrooms a good vegetarian alternative to meat? A: Mushrooms are not a substitute for meat nutritionally because they are not equivalent in protein amount or quality, and they do not provide comparable amounts of iron, zinc or vitamin B-12. On the other hand, mushrooms do provide a variety of nutrients with just 15 calories in a whole cup of raw chopped or sliced mushrooms. For example, they are a good source of the mineral selenium, an antioxidant that may play a role in reducing risk of chronic diseases. Mushrooms do have a “meaty” texture and add a flavor known as “umami” that tends to be very satisfying, which makes them ideal to include in pasta sauce, stews, casseroles, chili and other mixed dishes to maintain a rich flavor and texture while reducing or eliminating the meat they contain. In dishes that contain large amounts of meat, replace a quarter to a half of the meat with mushrooms to make the dish lower in calories and still delicious. You can also create a vegetarian dish by substituting mushrooms for all the meat or poultry in a recipe. However, in this case, make sure the meal also includes a good source of protein, for example, at least a half-cup of dried beans or quarter-cup of nuts. This strategy can

WALNUT CHICKEN WITH BASIL • 1/2 cup walnut pieces • 3 tablespoons low-sodium soy sauce • 2 tablespoons fresh lime juice • 2 tablespoons honey • 3 teaspoons peanut oil • 1 red bell pepper, seeded and thinly sliced • 2 large shallots, thinly sliced • 3 boneless, skinless chicken breast halves, thinly sliced • 1/2 cup packed fresh basil leaves, torn into pieces Preheat oven to 350 degrees. Spread walnuts on a baking sheet and toast until lightly browned and fragrant about 10 minutes, immediately pour onto a plate to cool. Set aside. In a small bowl, whisk together soy sauce, lime juice and honey. Set aside. Heat 1 1/2 teaspoons of oil in a wok over high heat. Add bell pepper and cook just until wilted, 1-2 minutes. Transfer bell pepper to a plate and add remaining 1 1/2 teaspoons oil to pan. Add shallots and cook, stirring constantly, until just beginning to brown, 30 seconds to 1 minute. Add chicken to pan with shallots and cook, stirring often, until opaque throughout 3 to 4 minutes. Return bell pepper to pan and stir in soy-sauce mixture, basil and walnuts. Toss and stir just until basil is wilted, about 1 minute longer. Serve right away. Serves 4. Per serving: 310 calories, 26 g protein, 17 g carbohydrate, 16 g fat, 70 mg cholesterol, 2 g fiber, 530 mg sodium.

DANCE WITH THE WOLVES IN REMOTE QUEBEC BY STUART WASSERMAN

T

he howling begins in the distance, a slight, singular disturbance in the forest. Then the sound rolls and reverberates until it takes over everything. Inside the larger noise it’s possible to hear the individual animals, the immature or the shrill. Sometimes it sounds like a baby crying, but no, it’s all part of the howling as the wolf pack communicates to the world or to another wolf pack, which picks up the call and adds a second confluence of howling. The first howling woke me at 4:30 in the morning. I listened, then rolled over and tried to go back to sleep, safe

in the embrace of the yurt that was my accommodation for the night -- I wished. But when you wake up at 4:30 in the morning, nature calls. So rubbing my eyes, I walked into the forest. I knew the wolves were out there staring at me because my yurt was positioned outside the wolves’ communal area. The only thing separating me from the pack was a chain-link fence. I thought I was OK out there in the pitch blackness, but then I started hearing the night noises and thought, what if another wolf has come down from the wilds to visit the local pack? After all, I’m beyond the tiny burg of Girardville, the last town heading north into the vast, mostly uninhabited lands of northern Quebec. I quickly did what I had to do and ducked back into the yurt. The howling began again soon after 6 a.m. There are a couple of ways to get absurdly close to nature in the Saguenay/ Lac-Saint-Jean region of Quebec. The most unusual is a private game park called Aventuraid/Parc Mahikan, which is focused solely on wolves. It was the

brainchild of Gilles Granal, who felt that wolves were misunderstood and began saving them. Now it’s a large enterprise with 32 wolves living in three enclosures, the largest of which is five acres -- for those wolves that are still “wild.” Accommodations, such as the yurt, are on the property as well as a communal shower-bathroom and a small interpretive center. There are two interesting species at Aventuraid, the wolves and Gilles Granal, a modern-day wolf whisperer. Granal looks every bit a French fur-trapper from 1750 -- he’s tall, muscular and has dark features. His hairline is receding, but he still keeps a long ponytail. When you ask Granal about his passion for wolves, he drifts off to the metaphysical, with comments like, “I don’t know why I like wolves. Why do people like to go to the sea?” He wants you to like wolves, which you do, but this is how it happens. First you approach the enclosures, letting the wolves come to you. To my surprise they were like big puppies. They

licked my hands, and I was half expecting the lupine to chomp off some of my fingers. When they moved their bodies close to the fence, I scratched their furry flanks as I would Fido sitting alongside me as I watch football games on TV. But Granal wants you to know his wolves intimately, so the next step is to go into the enclosure to be among a pack of wolves as if you were walking among chickens at the farm, only in this case you suspect if things go wrong, you will be chicken dinner for the pack. Since the wolves will jump up on you and maybe claw at your clothing, you really shouldn’t wear anything you want to keep. I placed my backpack and the fleece I was wearing on the ground outside the enclosure and prepared to enter. First Granal went into the enclosure to make sure the wolves were in a hospitable mood. It was like watching a circus act close-up as he coddled them. They licked his face and he talked to them in French and wrestled with one or two. Apparently the wolves were in a good mood, so it was my turn to enter their den.

The first thing I did was lean back against the fence so I could see the wolves come at me and not be caught by surprise from behind. The wolves were now at my legs, and one stood up on its hind legs, which put him eyeball to eyeball with me. Was he going to eat me? No, I just got a lick the same way my Golden Retriever used to do. Eventually you have to stroll about the enclosure as if it was a walk in the park. Or kneel down to let the wolves commune with you, which also, by the way, makes for a good photo op. The wolves are smart. While I thought one was entertaining me, it was actually distracting me as a wolf buddy went back to the fence, reached a paw underneath and was able to put a claw into my fleece and pull it back into the enclosure. Granal rescued my beloved piece of apparel, but by then it was too late. Between the sharp claws and chopping canines, my fleece was shredded. It was kind of a big joke until another wolf sneaked up behind Granal and stole his bandana, running away with the prize. Granal had to

wrestle that wolf down to get his prized bandana back before it looked like my fleece. I guess these wolves never watched Liam Neeson’s movie “The Grey,” where a ravenous wolf pack hunts a group of plane-crash survivors in Alaska, picking them off one by one. Fortunately the wolves in the enclosure got so bored with me they just left me there twiddling my thumbs, which, thankfully, were still intact. I overnighted in Montreal at the downtown Omni Hotel and then the next day caught an Air Canada flight to Bagotville. After a couple of days of sightseeing, kayaking, hiking, camping and canoeing in the region I finally arrived at Aventuraid, ready to howl.
