Our Inspirational Females INTERNATIONAL WOMEN’S DAY FRIDAY 8TH MARCH
2019’s International Women’s Day theme will be “Think equal, build smart, innovate for change”. To celebrate the day, we spoke to a few of our inspirational women from across Park Plaza Hotels & Resorts in London to find out how they built their careers, some of their best advice and their greatest life achievements.
Michelle Wells General Manager at Park Plaza Victoria London How did you get started in your career? In high school, I had an amazing Home Economics teacher who showed me her passion for cooking and catering. It was a natural progression into hospitality and I studied a Hotel Management diploma at college where I decided that I loved working at the Reception, and that became my career path. What have been your biggest achievements in life (work or personal)? By far it has been meeting my amazing and supportive husband and of course, having my two fantastic children. I 8

met him when he was a Revenue Manager of a hotel and I was his boss! As per my career, that has grown from strength to strength. I have now been at Park Plaza for 12 years having managed Park Plaza Sherlock Holmes London, then moving to Park Plaza County Hall London and I’m currently at Park Plaza Victoria London. This is a hugely successful property. We’ve just won the Park Plaza Award for Hotel of the Year. I am extremely proud of the achievements I have had here in two years. My team is the key and our employee engagement score in 2018 was the highest across 35 hotels in the company as well as excelling in customer service. Over the last year, we have managed a successful refurbishment whilst ensuring minimal disruptions to our guests. A personal achievement was also being made a Master Innholder, having attended Cornell University on a scholarship through the Master Innholder programme. I was given the accolade of the freedom of the City of London.
Tegan Farrell Food & Beverage Director at Park Plaza Westminster Bridge London How did you get started in your career? My career path started in cooking school as I wanted to be a chef. I went for three years and was only one of three girls in my class of 20. The Chef told me I’d most likely never be a chef because I was female. That’s when I decided I absolutely was going to become a chef. I apprenticed in a restaurant where again, the Chef wouldn’t move me up the ladder because I was the only female he hired on the kitchen line and I had to fight hard to get recognised. With the support of the General Manager, I progressed. Eventually, I moved to Front of House and did every position until I was finally restaurant General Manager and then Senior General Manager in a chain of seven restaurants, and again I was the only female! I then moved to work for hotels and have been the happiest ever since.
What advice do you have for women starting out in the industry or trying to climb their career ladder? Be yourself, be engaging and bring others with you. Believe in yourself and have fun at work every single day, if you don’t, you are probably not in the right industry. Be honest and authentic and believe you can have it all. Ensure you have a mentor that can really support and advise you. Learn from mistakes and put things into perspective. Relationships are key and never fall out with anyone in the industry because it is such a small one, especially in London.
What have been your biggest achievements in life (work or personal)? My biggest achievements include getting my Red Seal Chef certificate from the Chef who > told me I’d never be able to do it. And, as 9

mentioned before, getting promoted to Senior General Manager of a chain of seven restaurants as the only female with seven male General Managers. Over the years I have mentored many of my managers and I still stay in touch with most of them. I’m also proud of moving to London with my husband, starting my career afresh and building a reputation for myself again from scratch. What advice do you have for women starting out in the industry or trying to climb their career ladder? That is easy… stay strong, deal with challenges head on and never give up. Take every opportunity to try something new, learn, and take risks because another door could open for you and take your career journey down a new and exciting path.

the rights to host Malaysia’s first ever F1 fashion festival. On returning to London, an achievement I am very proud of is working with a fantastic team at the London Hilton on Park Lane to successfully host the International Olympic Committee during the 2012 Olympics. We were the IOC HQ hotel! Personally, my biggest achievement is my nine-year-old son, who makes me laugh every day with his hilarious observations of school life and the world in general!
How did you get started in your career? After studying Hotel Management and realising that you didn't actually have to be a chef, I finished my HND in Communications and then completed a one year Post Graduate course in Hotel and Catering Management at Queens College, Glasgow. I then started a graduate training programme at what was the Swallow Hotel in Edinburgh (now the Marriott Edinburgh). I was lucky enough to have a fantastic General Manager who kept me on and promoted me to Front Office Manager and then, after a few more years, to Deputy Manager. From there I went sideways into Regional Sales in Bristol and then to a commercial role in London and overseas before becoming a General Manager back in London in 2013.
What advice do you have for women starting out in the industry or trying to climb their career ladder? When you’re young, take the leap to get overseas experience, learning how to work with different nationalities and cultures. Go for an iconic hotel, whether it’s one of the largest hotels or a five-star. Get in at entry level and work hard - it will be so valuable on your CV. I would also say that in general women are not as confident to progress up the ladder as men, we tend to want to gain a lot of experience in every area before we feel good enough to move to the next level. My advice would be to have more confidence in your own abilities.
What have been your biggest achievements in life (work or personal)? One of my biggest achievements was working for Hilton in Kuala Lumpur and winning the contract for the Formula 1 Gala Ball and also 10

NUTRITIONALLY INDULGENT FOOD
Indulgent food doesn’t always have to be bad for you. We spoke to Werner Seebach, Executive Group Chef at Chino Latino about nutritionally indulgent food. So instead of calorific chocolate, tuck into some healthy cuisine Chino Latino style this Easter. What is your focus when creating new dishes for Chino Latino? After deciding which dish is to be replaced we will develop a list of new ingredients that we might want to use, making sure that it compliments the other dishes on the menu and creates good variety. We choose the protein that we want to use and then select the ingredients to go with this protein. The next step would be to visualise the dish and design a sketch of how it should look and which plates to use for the dish. After this, we can prepare the ingredients, cook and plate the dish and do internal taste testing with the kitchen team to bounce ideas off each other until we are all happy with the results. Why is Japanese food thought to be so healthy? Although the first Japanese restaurant in London, Ginko Sushi, opened back in 1884, it’s only in the last 20 years that Japanese food has seen massive popularity outside of Japan, mainly because of the health benefits. We use tuna, salmon, seabass and yellowtail in our sashimi platters. All of these ingredients are high in omega-3 fatty acids, which are known for their heart-health and even brain-boosting benefits. Pickled ginger is served with our sushi and sashimi platters and is high in potassium, magnesium and vitamin B to name just a few. Soy products have little or no fat and are a great protein alternative that help to keep cholesterol down. Healthy teas like Japanese green tea are said to help with fighting cancer. 15

Former heavyweight and cruiserweight champion of the world, David Haye talks to London Revealed about his love of the capital and life after boxing.
What was it like growing up on the South Bank, can you share some memories? I didn’t know any different! The South Bank was my playground. Me and my friends would go off on our BMX bikes and explore. It’s only now I’m older that I have a greater appreciation of what was on my doorstep - London sights which people travel across the globe to witness in person. Big Ben was simply the clock that told me it was time to head back for dinner. There was always something going on, no matter the time of the day, I loved that. People out and about on their own little missions, including me! Do you see London differently now? How do you like to experience it? It’s insane how much the South Bank has changed over the years. I remember when the Financial Times office was THE big building of the area, now it’s dwarfed by the new builds around it. The skyline is unrecognisable. I love to experience the area on foot. In the summer months I make the most of the sunshine, or in the winter I will wrap up warm and just walk, often without a destination in mind. I will walk along the river for miles either putting the world to rights with friends or even heading out by myself, having time to enjoy the environment and be with my own thoughts. What does London mean to you? London is home, it offers so much (although admittedly not as much sunshine as I would like). It’s home to people from all walks of life, many with such incredible stories as to how they have found themselves calling London ‘home’.

Despite living here all my life there are still so many restaurants I am yet to try and West End shows I am yet to see. It’s a city you can’t get bored of, it’s constantly evolving, much like the skyline! How do you split your time? Are you in London at the moment, do you still live here? London will always be home for me, although I do like to break up the cold winter months by heading to sunnier climates. I was fortunate enough to spend Christmas in Jamaica with my family. London is fast paced which I love, but I need a balance, a chance to step away, get off the treadmill. In the winter months, Jamaica is my go to, its home from home. In the summer

there isn’t the need to travel so far, Europe has so much to offer. I’d like to explore Croatia I hear it’s beautiful, I love Mykonos and it’s laid back vibe, I’ve had some great nights in Bonbonniere! Where would you spend a day chilling in London and catching up with friends? Tough one, which friends and what time of the year! I love the parks to hang out in on a summers day. We’d probably hit the tennis courts in Battersea Park, head to Chino Latino for dinner before hitting the track go-karting or having a bit of a poker night. I’m currently learning to play, some friends are really good (or so they claim!) so are trying to show me the ropes.

Any favourite spots you’d recommend in London for healthy grub? There are constantly new places popping up in London, we are spoilt for choice. These days most restaurants offer healthy options, so you have to just make sensible decisions. Chino Latino is a favourite and so is Levant in Marylebone - it’s a hidden gem, off the beaten track. Our very own Chino Latino restaurant - what do you like about it? Top class food, amazing views, faultless staff and a live band who create a nice little vibe.

They’ve really created something very special, I’m never disappointed. Is it easy for you to keep in shape after retirement? How do you stay motivated? Honest answer, no. As a professional sportsman, your day is scheduled around you being at your physical peak. It’s your job to train twice, sometimes three times a day, six days a week. Now life can easily get in the way. I have to be very disciplined. I’ve learnt if I don’t train first thing, it doesn’t happen. When I stay at Park Plaza London Riverbank, the gym has everything you need so there are no excuses! I'll do a blast in the morning and, if my diary allows, a 20-minute swim or sauna in the evening is the perfect way to unwind after a busy day. What was your mantra for your success as a boxer that you’ll now take into your business and other ventures?
Focus and discipline. As a boxer I knew exactly what I was setting out to achieve, every decision I made every day was with that goal in mind. It’s a great sport for countless reasons, be it simply a way to get fit, meet new people or a way to relieve stress. Starting out in boxing doesn’t mean stepping straight into a ring and getting punched in the face! In fact, you can enjoy the sport and never take a punch! As a kid it gave me discipline and focus, this became ingrained in me in a way a traditional classroom never could. For someone else, it may give them the confidence to stand in front of their peers to deliver a presentation.

Keen to brag to friends, over half of the 2,000 Brits that took part in the study admitted they carefully edit their pictures to make the view look better, with 62% applying filters to alter the sky colour before posting them online. More than a quarter admit they have even gone to the effort of searching for the ideal backdrop in order to make the perfect photo. Getting the perfect shot is a time-consuming business though, as Brits spend an average of seven minutes finding the perfect backdrop before spending a further five minutes editing each image. With an average of four shots posted per day, over five and a half hours of precious holiday time is spent perfecting pictures during a one-week break!

FIVE MINUTES WITH... AIDAN MARTIN What has been your best gig to date? My best gig to date was probably Wembley Arena when I performed with Tom Jones. It was pretty crazy being stood next to such a star, singing songs he originally sang with Stevie Wonder. How would you describe your music? Pop and soul is my sound really. There’s not the shame in pop music like there was years ago. Pop songs are some of the hardest things to write and get right. Who inspires you and why? I am heavily influenced by the jazz world Rachelle Ferrell is my idol and I love everything about her. Her 6-octave range and whistle register is almost superhuman and the technique she has to deliver this is amazing.
What is your favourite song in your set? My favourite song in my set is probably ‘Put Your Records On” by Corrine Bailey Rae. Such a happy song and it takes my mind to a place of complete liberation. It’s beautiful.
What’s your favourite cocktail? My favourite cocktail is an Old Fashioned. Such a classic and it warms your heart.
Who have you had the pleasure to work with? I have been very lucky to write songs with and for many big artists, including Joss Stone, Will Young and many more. Working with Sir Tom Jones was most certainly a memorable one.
What’s been the craziest moment in your career so far? I would say the craziest moment in my career so far has been signing my publishing deal at 24. This changed my life and allowed me to write songs for major artists as a job. Something I never knew even existed until that point.
What have you got coming up? You can find me on Spotify under ‘Aidan Martin’ where you can listen to my two releases to date. My next single is out on later in the month and it’s a really exciting one for me.
