The South Bank has been a go-to place for Londoner’s for years and its pull has just kept getting stronger. Of course, you’re near to Waterloo Station, the views are spectacular and the entertainment and dining options are plentiful but the area has so many hidden gems too. Gone are the days of enjoying a leisurely meal without a care in the world; there are now more important things to think about like devouring obscene amounts of chilli when all your friends 1. ‘Triple Chilli Challenge’ (Meat Liquor Restaurants) This challenge has been going for some time now but evidently hasn’t lost any of its appeal, not least because it appears that people love eating chilli. INTERVIEW WITH S T E FA N O M O T TA HEAD CHEF AT KITCHEN AT HOLMES IN MARYLEBONE What can we expect from the menu and dining experience at Kitchen at Holmes? The menu is very much a reflection of who I am. Working on the initial stages of the menu we always found ourselves coming back to the same fundamentals. We wanted to create the perfect blend between some of the best seasonal produce as well as delivering dishes using international influences and techniques. Coming from Italy, I was fortunate to have the chance to visit markets every day and learn what the best ingredients for the season were and how to pick the finest ones.
How did you find yourself working as Head Chef at Kitchen at Holmes and getting into the restaurant industry? I was born and raised in Biella, a small town in the North of Italy and I have always been very close to my grandmother who loved to cook. Every Sunday the whole family would get together at her house and I would go to the kitchen to see if there was anything I could help with – from peeling potatoes to setting the table. I loved to see my grandma working away in the kitchen from the early hours of the morning. Looking back, I think the love that my ‘nonna’ had for making a Sunday feast for the whole family was what drove me to look to the kitchen for a career. Now, many years later, I am the one in the kitchen following in her footsteps.
What do you think will make Kitchen at Holmes special and make people return? Kitchen at Holmes is coming at the right time to an area that is growing in the London culinary scene. Marylebone has always been a very affluent neighbourhood however, we felt that the area was missing a place where people could grab a relaxed and hearty breakfast, lunch or dinner any day of the week. 24

What would you choose for the perfect meal from Kitchen at Holmes? I would start with the Aubergine Tempura with Dukkah and Yogurt, for main our stand-out Courgette Spaghetti and finish with the Coconut Passion Fruit Fiesta. Tell us a bit about the Marylebone area around Kitchen at Holmes. Marylebone is quite an interesting part of London and, like the rest of the city, it is constantly evolving due to the exposure to so many different and wonderful cultures. I know the area quite well, funnily enough, I used to work in Marylebone about ten years ago before moving to New York, so for me coming back is almost completing a cycle.
to me. In a kitchen your time is very limited to actually catch up, so I try to take my chefs out for dinner and make sure they know how much I appreciate their efforts in the kitchen every day. I want them to know that I am there for them if they wish to talk, being that of a professional or a personal nature. What do you like to cook for yourself at home? Being Italian I am always cooking recipes from back home, from melanzane parmigiana to any type of pasta, including lasagne or tagliatelle with mushrooms.
Stefano’s Courgette Spaghetti Recipe
What do you enjoy most about your job? I really enjoy working and mentoring my younger chefs. Watching them grow professionally is something that I wouldn’t change for anything. Usually, when they leave culinary school they come very well prepared, but struggle with adapting to the fast-paced reality of working in a fully functioning kitchen. I try to be as open as possible to any questions that they might have and try to guide them. It can be anything from how they set up a work area to how to walk around the kitchen. I only ask them that they to show respect for their colleagues and their food, this is key if you want to work in a kitchen as a team.
Includes dairy and nuts Serves: 2 Prep: 10 mins Cook: 15 mins A quick and easy pasta recipe that showcases delicious courgette notes, accentuated by the profile flavour of pistachio and smoked ricotta Ingredients ⁄ 100g courgette spaghetti ⁄ 2 tbsp. extra virgin olive oil ⁄ 20g smoked ricotta ⁄ Handful of basil to garnish
For pistachio pesto ⁄ 100g basil blanched ⁄ 50g toasted pistachio ⁄ 50g grated Parmesan ⁄ ¼ garlic clove blanched ⁄ Salt and pepper
Method Start by blanching 100g of basil and ¼ garlic clove for the pistachio pesto. To make the pistachio pesto, combine the blanched basil and garlic clove, 30g toasted pistachio and 20g grated Parmesan in a bowl and season with salt and pepper. Heat the olive oil in a large wok and stir fry the courgette spaghetti until it softens (to a similar consistency of al dente). Turn up the heat and add the remaini ng grated parmesan and pistachio pesto. Season to taste with salt and pepper. Plate your dish and garnish with smo ked ricotta, crumbled pistachios and basil leaves.
Is there anything about your job that you think people would be surprised to hear about? I try to take as much time as possible to get to know my team. If there is someone working in my kitchen, I like them to think of the whole kitchen team as their family and me personally, I want to get to know them, so when they have any sort of problem they know they can turn 25

THE SECRET LIFE OF... THE BEEKEEPER
LESLEY HIPPLE We interviewed beekeeper Lesley Hipple to find out about life looking after the capital’s hives (including some on our hotel roofs). Park Plaza London Waterloo will be using their honey in a variety of different ways including honey infused massages at Mandara Spa, a honey menu in Florentine and in guest breakfast dishes.
What’s your background? Have you always been a beekeeper? I have a very varied background working in bars, gardening and spending many happy years on the high seas as a sailor. How long have you been working as a beekeeper? I began beekeeping three years ago when I met Dr Luke Dixon from Urban & Community Beekeeping on the roof of City University. He was teaching beekeeping to a group of students on the roof of City University. I immediately became hooked and have never looked back. What made you want to be a beekeeper? A lifelong interest in the natural world, the importance of bees and other pollinators, and a fascination with the complexities of the honey bee world led me to that rooftop. What does your usual day at work entail? It can be very varied. There is a lot of clambering over rooftops where many of the city’s beehives are based. There are regular hive inspections checking on the health of the bees. There is also the very messy business of harvesting the honey at the end of the summer. 30

What’s been your career highlight so far? It’s difficult to pick one out as there have been so many but opening a hive for the first time and seeing the amazing world inside has still not been bettered. I love seeing London from the tops of some iconic buildings and teaching children about bees is really satisfying.
How do you become a beekeeper? Find someone to take you under their wing or come along to our bee club at Coram’s Fields and learn the basics.
Is there anything surprising that people wouldn’t know about beekeeping? Or anything you wished they knew? People have no idea how many hives there are in London and how many bees. A lot of people also don’t realise how green the city is.
What are the best and worst parts of the job? The freedom and independence is really great. I love being in touch with the weather and the seasons. The changing world of nature is always exhilarating. I would say the worst part of the job would have to be getting stung. How often do you get stung? Too often.
How easy is it to spot the queen bee? You learn to pick her out after a while. She’s bigger and a different shape to the other bees and she scuttles around in a particular way. Many of our queens are marked with a little blob of paint to make her stand out from the crowd.
Is beekeeping a solo job or are you part of a team? It’s a bit of both. Often I am out on my own, but I also work very closely with Luke and other beekeepers, so it can be quite sociable.
What do you do in your spare time? What spare time? During the season the bees keep me busy 24/7. When things calm down in the winter I get back to catching up with friends, learning about permaculture and campaigning for a better world. I also love spending time with my ferret called Rolly. 31

FIVE MINUTES WITH... LORN A WA N T What has been your best gig to date? This is a bit of a tricky one to decide but my career has mainly been in musical theatre and I’ve had the opportunity to be in lots of musicals. But ‘Beautiful The Carole King Musical’ would have to be my best one to date. I started in it in 2015 and was with them for two and a half years. It was an amazing role with an amazing company and I had the opportunity to sing with Carole King in Hyde Park.
What has been the craziest moment in your career so far? During ‘Beautiful’, I was nominated for an Olivier Award and I won! I still can’t quite believe it happened. I got to go to the awards ceremony and when they called my name it was such a shock but such an honour. What are some of your favourite songs in your set? In a gig environment, I like to do acoustic versions of some of the songs and one of my favourites is ‘Defying Gravity’. It makes them a bit different. ‘Someone To Watch Over Me’ is a really nice jazz number too.
How would you describe your music? As my career has predominantly been in musical theatre my gig will be focused on this but I’m inspired by lots of different artists and genres, especially folk and jazz. I love musical theatre songs though because you can really emote through the lyrics - it’s a character telling a story and you can really put feeling through the song.
Who have you had the pleasure of working with? So many people but I loved working with Katie Brayben who played Carole King and she won the Best Actress Olivier Award. I played Cynthia Weil - the lyricist and won Best Supporting Actress. To have that experience together - playing strong female roles and also both taking away those awards as women - was incredible.
Who inspires you and why? To be honest, at the moment it’s actually my daughter. She’s two years old and a bundle of energy. If I’m having a bad day she inspires me to keep cracking on. I want her to be proud of me in my career and doing gigs and I can’t wait for when she’s old enough to come and watch me perform.
What have you got coming up? I’m just writing a cabaret with two other mummy friends of mine who also did ‘Beautiful’. We all have children about the same age and the show is called ‘Mums the Word’. It’s a comedy and a fun night of truthful songs about juggling being a mum and an actress at the same time. The first show has sold out so we’ve added a second show on Monday 15th July at Crazy Coqs, Live at Zedel in Soho.
What is your favourite cocktail? It’s a caipirinha. My husband and I were on holiday in Puglia, Italy when we discovered them and it’s where he proposed to me. We sat drinking them on the beach and it’s always our go-to cocktail although we don’t get to drink them that often now we have a two-year-old! 52
