INTERVIEW WITH MAIK KUIJPERS CONCEPT CHEF AT CARSTENS AMSTERDAM Carstens Amsterdam is set to open in early 2019 in the Hasselaerssteeg, very close to Amsterdam’s Central Station. The concept for the brasserie was conceived by Maik Kuijpers, former head chef of De Librije***, with the main focus being on quality local produce. Dishes with a Dutch twist made without fuss with flavours of the Veluwe region as well as the catch of the day from the North Sea.

loved the location of the restaurant. The team and I created the entire concept from the dishes to the furniture and I am really proud of the end result. What can we expect from the menu and dining experience at Carstens? It’s an experience where you can sit with your loved ones, family, children and simply enjoy eating good food made with excellent ingredients. The menu is built around Dutch produce and the food is based on traditional dishes but with a twist.

How did you find yourself working as Concept Chef at Carstens? My path crossed with Carstens and I

What do you think will make Carstens special and make people return? We created a cosy Brasserie where locals and businesses love to come and enjoy great, tasty food. The ambition is that Carstens will also become a household name in Amsterdam with a homely atmosphere, and I hope, of course, great food and a good glass of wine. What would you choose for the perfect meal from Carstens? I think my favourites are the Dutch versions of the Caesar Salad and the Steak Tartare. You can wake me up for these dishes. Tell us a bit about the area in Amsterdam around Carstens. It’s situated across from the Central Station so one of the busiest places in the city. It’s also slightly hidden, the entrance is tucked in a small lane behind the Park Plaza Victoria Amsterdam.

Is there anything about your job that you think people would be surprised to hear about? At home, I don’t feel like cooking anymore because I am busy cooking all day. So my wife does all the cooking for our family.

What do you enjoy most about your job? I love thinking about flavours. Is this the best combination? Can I make this dish even better by adding something else? Creating a dish is a process, and I guess I’m in love with this process.

What do you like to cook for yourself at home? I love it when my wife cooks comfort dishes like her chicken ragout.

NATIONAL PIZZA DAY Saturday 9th February

Maurilio Molteni, Head Chef at TOZI tells us what pizza means to him, from being a boy growing up in Italy, to his own special creations today for TOZI. Pizza has become so popular in recent years in London with new places opening every day. When I was a young boy in Italy we used to go out as a family once a month for pizza as a special occasion. We did this because one, we didn’t have much money and two, because my mum was a great cook! Nowadays it’s normal to eat pizza at any time. At TOZI we’ve created a different sort of pizza - our Pizzetta, a smaller version of a classic with mozzarella, wild chicory, Tuscan

sausage and chilli our beautiful Spianata which is new for the winter menu with four cheeses, roast potatoes and black truffle pesto. This is my favourite on the menu at the moment - it’s irresistible, the flavours start playing with each other in your mouth making it impossible to share! The secret of a very good pizza largely lies in the dough. We use two different flours and prove it very slowly. We wait for two days which makes it tremendously light and easier to digest. And of course, we only use the best ingredients on our pizzas and that makes a big difference. From the cheeses to the hams and the tomatoes - every single item comes directly from Italy.

KAY WETTASINGE How long have you been working as a yoga teacher? I’ve been teaching in Hong Kong and London for over five years. This year with Park Plaza hotels we hosted three summer yoga pop-up events on the stunning rooftop of Park Plaza London Waterloo with an amazing breakfast served afterwards. How did you become a yoga teacher? I worked in finance before as a senior PA. I loved the job but it was 24/7 and I got really ill with anxiety and stress so I decided to try yoga which made me feel great. I wanted to study so that I could help other people

Could you describe what your job might entail on a day-to-day basis? It’s not as always as glamorous as it looks! I get up at 5.30am, lug yoga mats around London on the tube and sometimes get home at 10.30pm! But I also walk and cycle a lot, I train at lunchtime and I love going home to make myself a big breakfast after my morning sessions. It creates a good worklife balance. What would you say is the most interesting thing about your job? Definitely the people - everyone is so different. It’s beautiful that they trust me so much - in their homes, with their secrets and flaws. It’s just fascinating to get to know them and really help them to be more in balance.

Is there anything about your job that you think people would be surprised to hear about? The fact that yoga is for everyone - all ages and abilities. It’s not just about the downward dog! Yoga means unity, not purity like some think. You’re allowed pizza! What do you enjoy most about your job? Again people - seeing them shine, relax, grow and find out that anything is possible. At first, they think things are impossible but then they start to believe in themselves more. What’s the most unusual thing that you’ve encountered whilst working as a yoga teacher? What is normal? Everything’s weird! I’m asking people to lie on their chests and stick their bums in the air! We’re all different, it makes us wonderfully unique.

HELLO, 2019 Pancake Day This year Shrove Tuesday falls on 5th March. A few of our favourite haunts to enjoy this great day at in London are - Where The Pancakes Are, My Old Dutch and Le Merlin Creperie. Tate Britain - The EY Exhibition: Van Gogh and Britain Van Gogh comes to Tate Britain in this major exhibition beginning in March. Over 45 of his works will be on display alongside British artists such as Francis Bacon and David Bomberg, who were most influenced by him. 26

FIVE MINUTES WITH... SHANE HAMPSHIER What has been your best gig to date? I’ve always wanted to be known as a big band singer so when I was asked to sing with the Ronnie Scott’s Jazz Orchestra for the first time, that was a real pleasure for me. Along with a few other singers, I was invited over to Monte Carlo with the band to perform as the ‘Monte Carlo Rat Pack’ at the famous Sporting Club for a post-race gala to all of the F1 drivers. That was brilliant! How would you describe your music? I love performing with jazz musicians and singing any pretty lyric with a nice melody, so I’m drawn to the jazz standards from the Great American Songbook. Anything boppy, bouncy and bright! But, the music that I write is more romantic with a big production, kind of like a modern Take That song.

in the end, as long as you’ve brought happiness to others, you’re alright! I love Frank Sinatra’s voice, Bobby Darin’s vocal range and wit and Michael Bublé’s musical arrangers, although I have one or two great arrangers of my own. What’s your favourite cocktail? Any December or Christmas-time my schedule is flat out for and has been since the beginning. It can be a bit crazy to perform so often but in terms of an occasion that stands out, there was a fight that broke out in front of me while I was singing ‘Ain’t That a Kick in the Head’. That was pretty mad.

Who inspires you and why? Ever since I was young, I’ve been inspired by anyone who can sing or entertain a crowd. If they can do both then, to me, they’re a real draw. I think,

What are your favourite songs in your set? In a normal set it would have to be ‘You Don’t Know Me’ by Ray Charles but ‘Another Way to Die’ is always fun in my James Bond shows.

a genius. Lance Ellington, one of the singers on Strictly Come Dancing, is the nicest guy and invites me to watch him perform often. He is one of the best singers, the perfect performer and human being. Check him out! What do you have coming up? Last month, I performed in a lot of Christmas shows, charity concerts and theatre events as well as flying out to Abu Dhabi and India to perform on cruise ships! On December 8th my new EP came out, which I’m really excited about. This year, you can come and see me perform at Pizza Express, Dean Street on January 5th and Ronnie Scott’s Jazz Club on February 17th.

VIRGIN LONDON MARATHON Probably the most inspirational day in the London annual calendar. Thousands of runners take to the streets to cover the iconic 26.2 miles for charity or their own amazing personal achievement and thousands of supporters come out to encourage them. Head to Embankment for all the atmosphere and to cheer them on for the brutal last mile. Bring jelly babies and tissues! Sunday 28th April
