INTERVIEW WITH DAV I D E S ER A CAFÉ MANAGER AT 106 BAKER ST How did you find yourself working as manager at 106 and getting into the restaurant industry? I’ve been working at 106 for almost four years and the manager for six months. I've been here since the opening in June 2014. When I first came to London six years ago I moved into the hospitality industry and worked in a small restaurant where my manager let me learn everything. When she moved to become manager for 106 she brought me with her. It was my dream to become the manager of this place, I wake up every morning full of energy to pass on to our customers and the team.

What can we expect from the 106 menu? Everything is freshly made every day with amazing ingredients like mangetout, broccoli, ravioli, salmon, herbs and spices. We serve breakfast until 11am with bacon and sausage rolls, scrambled eggs with avocado, croissants, cakes, juice, yoghurt, freshly cut watermelon, smoothies, smoked salmon with cream cheese, toast with butter and jam, and the full English. At 11am our display changes completely and we prepare lunch - six main courses and salads that change every day. There are chicken escalopes, peppers stuffed with beef, Israeli couscous,

pearl barley, new potatoes. We have lots of veggie and glutenfree options too.

price is good and we really care about the quality and culture of the food. It’s great Mediterranean food and all our suppliers are Italian. But on top of all this I think the customers really feel appreciated by us. They spend a bit of time with us, have fun teasing me when Roma lose at football and I teach them a bit of Italian. It’s our philosophy to make our customers happy, remember little details about them and greet them with a big smile and ‘Buongiorno!’

What would you choose for the perfect lunch from 106? I’m Italian so it would be the freshly made ravioli filled with veal and tomato sauce. On the side I’d have a pesto salad with smoked buffalo ricotta, tomatoes and cucumber salad and roast potatoes. A main course with three sides is £8.10 takeaway or £9.60 to eat in. A selection of salads is £5.30 takeaway and £6 to eat in.

What do you like to cook for yourself at home? I’ll make pasta or pizza if friends are coming but I eat a lot of food from the restaurant as we don’t throw anything away and it’s freshly made everyday. Every Thursday we have a charity come to collect leftover food for the homeless.

Tell us a bit about the area around Baker Street. I love this area. Regent’s Park is one of the best parks in London. Lots of our customers work in the surrounding offices and go to the university but there are lots of tourists too coming for Madame Tussauds and the Sherlock Holmes Museum. What do you think keeps customers returning to 106? The food is good, the coffee is good, the

London's Ye Olde Shops London has a long and rich history; handwritten Roma tablets suggest the city was founded around AD 70, and from 1831 to 1925 it was the world’s largest city.

It’s also long been a centre for trade and enterprise, various businesses and entrepreneurs flourishing throughout the centuries as the capital’s importance in the world steadily increased. Some of the most noble, traditional shops and trades remain in the hands of the same families centuries after their founding, defying modernity and the passage of time to prosper in the 21st Century. Lock & Co Hatters (1676) If bespoke headwear is what you’re after, then Lock & Co – which has been perfecting millinery for over 340 years – is the place for you. Lord Nelson, Oscar Wilde, and Winston Churchill have all been clients, no surprise given the precision and care they put into crafting the perfect hat (their famous conformateur gives extremely precise measurements). Berry Brothers & Rudd (1698) Booze has figured heavily in London’s history, from the Gin Craze of the 18th Century to the invention and export of stout, porter, and India Pale Ale. Still going strong in its original location after eight generations of family ownership, the capital’s oldest wine company has an illustrious past; as well as being supplier to the Royal Family since 1830, it provided wine for the Titanic and remains one of the city’s premiere wine and spirit merchants. It’s also located across the road from St James's Palace, something that no doubt aided its prestige and royal connections.

Ede & Ravenscroft (1689) Saville Row might get all the fame and recognition, but the humble trade of tailoring was being perfected long before W1S became the centre of the sartorial universe. What started as robe maker to the judiciary and landed gentry has become the foremost supplier of formal wear for Royalty, academics, and the legal and clerical professions. But it’s not just gowns and arcane attire; they also do a bespoke range of shirts, suits and other tailoring to help all manner of people look sharp.

Twinings & Co (1706) There’s nothing quite as quintessentially British as a good ‘ol cup of tea, and Twinings have been brewing up a storm on The Strand since 1706. Now boasting over 200 teas in stock, their original shop also hosts a loose tea bar for tastings and a small museum that spans the history of the company and the drink that made it famous. And it’s not just the world’s biggest purveyor of tea – its logo, created in 1787, remains the oldest corporate logo in the world and graces some of the prettiest packaging you’re likely to find anywhere.

James J Fox (1787) Sir Winston Churchill, wartime Prime Minister and one of the most iconic Brits of all time, was rarely pictured without one of his beloved Romeo Y Julieta cigars dangling from his mouth. And at the height of his popularity, they were supplied by James J Fox, the oldest cigar merchant in the world, from their prominent shop on St James’s Street. They remain purveyors of some of the finest cigars and smoking accessories anywhere, and while everything can be ordered online, a visit to the shop is well worth it – aside from a sumptuous interior and the largest walk-in humidor in the UK, they also have a museum dedicated to the cigar’s rich, storied history.

How long have you been working with Park Plaza Hotels & Resorts? I have worked for Park Plaza Sherlock Holmes and Park Plaza Victoria for since 2002. In 2006 I decided to start my own business and I was working in The Tower Hotel in St Katherine’s Docks when I bumped into a General Manager who I’d worked with previously. He was opening Park Plaza County Hall London and asked me if I'd like to tender for the hotel contract. I won the contract and it was my first new opening. After that they began to build Park Plaza Westminster Bridge. I was watching it go up and it just kept getting bigger and bigger! We did a pre-launch party on the 13th floor and we had to carry everything up 13 flights of stairs! I tendered and had a trial for the contract for that hotel and then the others until I won the contract for all the Park Plaza hotels in London.

I now get involved with a lot of their other projects like prop design, landscaping, interiors and installations, to keep everything looking fresh and up-to-date for the hotels. Could you describe what your job might entail on a day-to-day basis? We start between 3am and 7am depending on what we’ve got on that day. Our flowers all arrive from Holland and we have to check them, load the vans and place the orders for the next day. Most displays have to be done early before the guests get up for breakfast and it’s easier to drive around London at that time. We go back into each hotel several times a week to check everything looks perfect. At the end of the day we might wash and limescale up to 300 vases.

How did you become a florist? I’ve been doing it for about 23 years. My first Saturday job when I was at school was in a greengrocers that sold a few flowers. I became the manager of that shop and then went on to work for a florist in Baker Street who had several shops across London. When I went out on my own it was just me, a pair of scissors and loads of passion. Now I have three vans, a 3000 18

What would you say is the most interesting thing about your job? I think so much more goes into it than the client sees - they just see the end result (which is what we want). But really it’s heavy, dirty, smelly work. I’m constantly learning new techniques and ways of doing things. With the large installations you have to understand the engineering and logistics of the structures making them safe and robust, and thinking about how you can get them through doors breaking them apart and rebuilding them. Park Plaza leave me to be very creative which is great and we work to the individual feel of each of the hotels who all have their own style.

Is there anything about your job that you think people would be surprised to hear about? Most of our flowers come directly from Aalsmeer Flower Auction in Holland - the biggest in the world. They get flowers daily from all around the globe - Ethiopia, Colombia, Ecuador, Italy, Singapore, and sell 20 million flowers every day from their 128 acre site. The flower prices change every day. Flowers also come in different grades - A1, which we get

- the nicest with long, strong stems, heavy heads and a better structure, smell and aesthetics - and A2 + A3, which the supermarkets get - they’re not as tall or scented, they have less colour and longevity. What do you enjoy most about your job? It’s so nice to get up in the morning to do something you enjoy (especially when it’s that early!). We see guests taking pictures of the displays and sharing it on social media - that’s a memory for them that we helped create. We love chatting to the guests and getting their feedback. It’s my passion more than my business, we love what we do and ultimately want the guests to have the best experience. What’s the most unusual thing that you’ve encountered whilst working as a florist? There is never a dull moment. We’ve worked with everyone from A-list celebrities to government agencies and as florists we will hear everything. We also write all the messages for the flower cards. Discretion is key - we hold all the secrets.

How many productions has Above The Stag produced? In Vauxhall alone, we've produced over thirty shows. Add to that the shows in Victoria and you have many, many more!

Here at London Revealed we just love a fringe theatre company who are prepared to think outside the box. With this in mind, you’ll struggle to find a better provider of high-calibre contemporary productions than Above The Stag in Vauxhall, especially since they are the frontrunners in LGBT+ theatre.

Which has been your favourite? I'm not sure I could pick one. The last show, Grindr: The Opera, is definitely one of my standout favourites and our annual adult pantomime (in which I once made an appearance in a mouse costume) is always the highlight of my year.

Their last production – Grindr: the Opera – went a long way towards putting them firmly on the map, championed by their General Manager Tom McGregor, who took some time to chat to us about the latest goings on in the award-winning playhouse.

How big was the cast there? Grindr: The Opera had a cast of seven, plus three fabulous musicians.

Thanks for sitting down with us today, Tom. So, how long have you been with Above The Stag? I've been with the theatre since it moved from its original home above The Stag pub in Victoria in 2013. It's been an incredible experience witnessing the rapid transformation from then to now.

What has been the best/funniest moment? The best moment has definitely been our move to this incredible new venue on Albert Embankment. As for the funniest moment, I'm 24

not sure I'd be allowed to reveal that! Have there been any celebrities who have come to see your shows? A couple of years ago, the Supremes' Mary Wilson came to see Torsten: The Beautiful Libertine, a then new musical starring Erasure's Andy Bell, who has since become a patron of the theatre alongside TV's Su Pollard and Lord Michael Cashman CBE. Grindr: The Opera, your last show, tell us about that? Grindr: The Opera was the first musical production in our new theatre and puts Grindr, the notorious gay dating app, into the exaggerated world of opera. It was a daring, humorous look at the changing landscape of

relationships and the greatest catalyst for it, Grindr. How important is it for you to support the LGBT+ community and businesses around Vauxhall? It's incredibly important for us to support the LGBT+ community, especially since many venues catering to it have closed or are closing. Having said that, we are also incredibly grateful for the support the community has shown us over the last ten years. We have active relationships with several businesses in Vauxhall, which makes the local community more exciting and connected!

Day of the Dead, or All Souls’ Day, is celebrated in Mexico and across other South American and European countries to remember and celebrate departed relatives. Families use the day to reconnect with loved ones by building private altars called ofrendas. They also bring possessions, gifts, favourites foods and drinks to the graves of their lost relations, for them to take on their spiritual journey.

Chino Latino, with its South American roots, will be honouring Day of the Dead in Nottingham, Leeds and London. On Saturday 3rd November, Chino Latino London will have a special menu which will include a signature skull cheesecake dessert. The pudding, created by Executive Chef Werner Seebach, is made from a white chocolate, yuzu and raspberry skull-shaped mousse perched on top of a lychee and matcha crunch. What has been your best gig to date? Tough one! My biggest gig was singing at Wembley Stadium for the Champions League Final. But musically-speaking I love the intimate gigs in venues with brilliant sound and a musicloving audience, so my favourite gigs have been at The Hospital Club in Covent Garden and a recent gig at Pizza Express Holborn with my full 6-piece band - grand piano, double bass, percussion, cello and lots of vocal harmonies.

composer Chris Thile of Punch Brothers who teams up with people from all genres (from classical cellist Yo Yo Ma to jazz pianist/composer Brad Mehldau) and is a constant inspiration.

How would you describe your music? Acoustic, organic, story-led, inspired by my Scottish and American heritage. I'm influenced by folk, Bluegrass, Americana, jazz and South American music. I love combining elements of these different influences in my writing and picking up new instruments for inspiration. I play guitar (Spanish and steel-string), banjo, ukulele, mandolin, piano, harmonium, omnichord and whatever else I come across and can get my hands on! My background is also in vocal harmony and arranging so I always enjoy adding vocal harmonies when I get a chance.

What’s been the craziest moment in your career so far? A very crazy and happy moment for me was winning the Coffee Music Project Award a few months ago. It's a singer-songwriter competition in London (there's also one in New York and LA). When they read out my name my heart jumped out of my chest and I was walking on cloud nine for a week after! Other crazy moments - when Sir Ray Davies announced my name on stage in his BASCA Award speech! Sir Paul McCartney giving me the thumbs up for my singing at the Royal Albert Hall was also pretty cool! And whilst we're on the Sirs, singing completely acoustically and a capella when I was 16 at Sir Barry Gibb's birthday party.

What’s your favourite cocktail? Ah that depends on my mood! When I need a pick-me-up it's an Espresso Martini. When I want a taste of the past I go for an Old Fashioned I'm an old soul through and through!

Who inspires you and why? I grew up on a musical diet of the Great American Songbook and folk songs of the 60s and 70s, so I've always loved the jazz greats like Ella Fitzgerald, Nina Simone, Sarah Vaughan and singer-songwriters like Joni Mitchell, Paul Simon, Nick Drake. More recently I've discovered a lot of Bluegrass and Americana music - Gillian Welch, Alison Krauss and Union Station, and the extraordinary mandolin player, vocalist and

Favourite songs in your set? Don't make me choose! But If I had to, then I'd guess I'd go for a summery bossa nova anything by Tom Jobim really! I wrote a song inspired by Brazilian bossas and it's called ‘I Left My Heart in Rio’ - you can hear it on Spotify/ iTunes/YouTube.

Who have you had the pleasure to work with? Well I've mentioned a few famous folk already but I'm going to drop a few more names. I had the enormous pleasure of singing on Radiohead's last album ‘A Moon Shaped Pool’. I was a fan growing up so that was quite a cool day! And of course the aforementioned Ray Davies and I have worked together a little too. He mentored me on a songwriting retreat and got me to come to Konk studios to record one of his songs and do a little music video there too! But the biggest pleasure has been creating my album with the wonderfully talented producer and songwriter Tim Baxter.

What’s next for you? The album is on the way. But in the meantime there are some singles coming out over the next few months. On 21st September, I'm releasing the song that won the Coffee Music Project competition - it's called ‘London's On Fire’ and I'll be having a full band gig on the 20th September at 229 The Venue. I'll also be releasing ‘Give Thanks’ which won a Nashville songwriting competition and features lots of vocal harmonies and banjo picking. I'm recording it at Ray Davies' Konk Studios and releasing it ahead of Thanksgiving this year and my American tour in October.
