And one comment that comes up time and again is how much better Dales Life is than the free magazine they get at home. One reason for this, I’m sure, is the uncompromisingly high standards we set for our writing, photography and layouts. But there’s another – even more important – reason. Ever since we launched the magazine 30 years ago we’ve been 100% focused on the Dales. We write from a Dales perspective, about Dales people, Dales businesses and issues that Dales folk care about. As far as our readers are concerned we’re an indispensable part of their community.
We’ve always refused to promote businesses from outside our own beloved corner of the North. We’re determined to champion local businesses – even if it costs us revenue. High Fliers Swallows, swifts and martins are busy in the summer skies above the Dales. Brian Pike investigates these intriguing aerial acrobats
D
ozens of species of migratory birds that spend the winter in warmer climes have now arrived on our shores to nest and raise their young. Of these fair-weather visitors, the nation’s favourite is undoubtedly the swallow. One swallow may not make a summer, but no sunny summer’s day in the country would be complete without the sight of these elegant birds wheeling and diving above our fields, parks and village greens. Swallows are expert fliers and feed by snatching small insects from the air. There are three other summer visitors that make their living in much the same way, namely house martins, sand martins and swifts. Sometimes it can be difficult to tell the different species apart, though, so let’s start with the easiest distinction to make: swallows and martins versus swifts.
COMINGS AND GOINGS Swallows and martins generally arrive in the Dales in early-to-mid April, and set off back to Africa in September. Swifts are here for a far briefer time. They arrive about a month later, in May, and leave a month earlier, in August. A swift on the wing appears to be black all over (although in reality swifts are a very dark brown) whereas swallows and martins are blue-black with prominent splashes of white. And swifts have long, narrow, sickle-shaped wings, whereas swallows and martins have stubbier, triangular ones. Astonishingly, swifts spend virtually their whole lives on the wing, even sleeping in the air. Swallows and martins, by contrast, will readily perch on telephone wires and fences. Swifts can’t do this – their legs and feet are simply too weak.

If you’re still in doubt about whether you’re looking at a swift, use your ears. Swallows and martins twitter or chirp, whereas swifts call to each other with piercing high-pitched screeches, especially when they gather together into larger groups after a day spent foraging individually. Telling the difference between swallows, house martins and sand martins requires slightly keener eyes – unless, that is, you happen to see them on their way to their nests. Swallows like to nest on ledges under bridges or inside buildings that are open to the outside world, such as stables, outhouses, carports or sheds. House martins prefer the sides of buildings, typically tucking their nests up under the eaves. And sand martins nest in tunnels in sandy river banks, gravel pits and sea cliffs.
PAT T E R N M AT C H I N G Without a nesting site as a clue, take a good look at the bird’s tail and plumage. Swallows have long, forked tails, whereas both species of martin have short, stubby tails. And whilst all three are predominantly black and white, swallows – unlike martins – have red chins. As for telling the difference between house martins and sand martins, it’s the precise pattern of black and white that is key. Both birds have white undersides, but the sand martin has a black bar across its chest. The two species are equally distinctive when seen from behind: the house martin has a prominent white rump.

By the way, don’t assume your job is done once you’ve identified a single bird in a group. Swifts keep themselves to themselves, but swallows, house martins and sand martins often form mixed flocks, especially as summer draws to a close. All three species frequently mingle on telephone wires and migrate together. Although swifts, swallows and martins all feed on flying insects, they have different foraging patterns. Martins tend to stay fairly low, skimming a foot or two above fields, lakes and streams. Swallows, with their longer wings and more powerful flying style, often climb higher. Swifts, however, are the ultimate aeronauts, with a top speed of 70mph and a head for heights. You’ll often see them circling at high altitude, especially in the evenings, but just how high they venture wasn’t appreciated until a First World War French airman on night operations flew into a party of swifts asleep on the wing at a height of 10,000 metres. Other species of bird may fly higher than the swift – the current record is held by a Rüppell’s griffon vulture that collided with an aircraft at 37,000 feet – but none stays aloft for longer. Swifts touch down only to nest, and researchers tracking the birds with electronic monitors discovered that some individuals stayed airborne for a whole ten months straight. Even birds that landed for short periods still spent over 99 percent of their time in the air.

CHANGING FORTUNES The number of swallows, martins and swifts arriving in the UK varies considerably from year to year depending on weather conditions and the relative abundance of the insect populations on which they feed. In terms of long-term trends, British Trust for Ornithology statistics suggest that populations of swallows and sand martins are just about holding their own, but that numbers of house martins and swifts are declining rapidly. Swifts have suffered especially badly, and there are now less than half the number arriving in the UK than there were when surveying began in 1994. Swifts mate for life and return to the same nest sites year after year, and the ongoing refurbishment of old buildings has deprived them of many of the traditional nest sites they occupied for centuries. Installing swift nesting boxes in suitable locations may help to reverse the trend. Both the RSPB (rspb.org.uk) and Swift Conservation (swift-conservation.org) provide useful information on how to do this.

WILD ANGLE PHOTOGRAPHERS CELEBRATE THE BEAUTY OF THE NATURAL WORLD
The common blue butterfly by Brian Pike The sixty or so species of butterfly found in the UK include several ‘blues’, although in most cases, including the common blue, it’s only the male that has conspicuously blue wings – the females are predominantly mousy brown. In both sexes the undersides of the wings – seen when the insect is at rest – are a silvery beige studded with an intricate pattern of black, white and orange ‘eyes’. As its name suggests, the common blue is widespread throughout the British Isles, although it is less frequently seen in gardens than some of our more familiar butterflies such as tortoiseshells, red admirals and peacock butterflies. The reason lies in the preferred food plants of the common blue’s caterpillars, which include bird’s-foot-trefoil, black medick, white clover and common restharrow. These are plants of rough open grassland, heaths, coastal dunes, woodland clearings, roadside verges and waste ground, which is where you’re most likely to find these gemlike little butterflies on a sunny summer’s afternoon. The common blue’s caterpillars are mid-green with yellow stripes. Like other ‘blues’ they produce a sweet, honeydew-like liquid which is irresistible to ants. To protect this valuable food supply the ants will defend the caterpillars against potential predators, hence increasing their chances of survival.

pond isn’t just a bonus for the local wildlife, it’s an opportunity to grow some gloriously colourful flowering plants that will brighten up your garden from early summer through to mid-autumn. Pond plants vary considerably in their requirements. Some need to be planted half a metre or more below the water’s surface whereas others prefer a depth of just a few centimetres. Yet others thrive in the damp, muddy margins. If you’re creating a new pond or remodelling an existing one, allow for maximum variety by incorporating slopes and terracing to provide both deep and shallow planting areas. Here’s a selection of attractive, easy-to-grow aquatic plants whose flowers will add colour and sparkle to your pond and its environs.
IN THE MONET Waterlilies (Nymphaea spp.) With their supremely elegant flowers and heartshaped floating leaves, waterlilies are some of the most stunning aquatic plants you can grow. And with modern dwarf cultivars you don’t need a massive pond to give them a home. Some will thrive in as little as 30cm of water, meaning that you can grow them even in a modestly proportioned tub. Larger cultivars will be more suitable for wider, deeper ponds, so discuss your requirements with nursery or garden centre staff before committing to a purchase. Waterlilies like full sun and, most importantly, calm water. If you have a fountain, cascade or other splashy water feature they will need to be kept well away from it.
H E R E B E D R AG O N S Menyanthes trifoliata Some of the largest waterlilies need up to two metres of water to grow in, but the majority of aquatic plants are less demanding – and more flexible – in their requirements. Menyanthes trifoliata, which sends up stems of gorgeous, delicately fringed pink-and-white flowers, can be planted at any depth from 1cm to 60cm – or even, at a push, in reliably damp soil. Commonly known, somewhat unflatteringly, as bog bean, Menyanthes trifoliata is a British native species; you can see it growing wild at Foxglove Covert Local Nature Reserve in Catterick Garrison. Like many tall marginal species it is popular with dragonflies and damselflies, who use clumps of it as egg-laying and perching sites. It is happy in either sun or part shade, but being a fairly vigorous plant it is not best suited to very small ponds.
B R I L L I A N T LY B L U E Pontederia cordata A striking plant for the 15–25cm deep zone is Pontederia cordata, also known as pickerel weed. It has bright green, arrowhead-shaped leaves and bears stout spikes of small, densely packed, vibrant blue flowers in late summer. A white cultivar (Pontederia cordata ‘Alba’) is also available, although it lacks the visual impact of the blue form. Pickerel weed hails from the New World and thrives in the wetlands of Canada, so it can happily survive a harsh Yorkshire winter. It likes full sun and will benefit from an annual feed.

PRETTY IN PINK Butomus umbellatus The flowering rush, Butomus umbellatus, is another handsome British native plant. Despite its popular name and its tall, grassy leaves it’s not technically a rush. Whereas true rushes generally have fairly sombre green or brown flowers, Butomus umbellatus bears generous domes of rose-pink, three-petalled flowers in June and July. Butomus umbellatus is a bold, structural plant that shows to best advantage in medium-to-large ponds. It does best in a sunny spot with its crown 15–20cm below the water’s surface. Like waterlilies, it’s a nutrienthungry plant, so dose it with slow-release fertiliser tablets every spring. Butomus umbellatus Dales Life | SUMMER 2022 |

ON THE EDGE Lobelia siphilitica Finally let’s turn to three plants that prefer to grow in shallow (0–10cm) water or reliably moist soil at the pond’s edge. Lobelia siphilitica, the cardinal flower, is another vivid blue plant from the Americas that flowers in late summer and early autumn. It makes a splendid cut flower but should be handled with gloves as – like many lobelias – it contains an irritant sap. Grow it in full sun or partial shade.
E XQU I S I T E I R I S Iris laevigata Iris laevigata, the Japanese iris, has rich blue, purple or violet flowers striped with creamy white. Unlike some irises it is an enthusiastic repeat flowerer, providing colour and interest on-and-off from late spring into early autumn. There’s an especially appealing cultivar, Iris laevigata ‘Variegata’, which provides additional visual interest in the form of boldly striped leaves. Iris laevigata prefers a sunny spot in soil on the acid side of neutral. Propagate by dividing the rhizomes in midsummer.
C O L O U R F U L C H A R AC T E R Houttuynia cordata ‘Chameleon’ Let’s end with a plant guaranteed to catch the eye of garden visitors: Houttuynia cordata ‘Chameleon’. The tangerine-scented flowers of Houttuynia – yellow spikes ringed with white bracts – are interesting enough in their own right, but it is the heart-shaped leaves that are this plant’s most notable feature. Green splashed with gold, they acquire increasingly bright pink tints as the season wears on, ending the year as a vibrant mass of colour. Houttuynia spreads readily by underground runners, making it an excellent ground cover plant. And if you end up with too much of it you can always consider eating the excess. The aromatic, peppery leaves are widely used in Indian, Japanese, Chinese and Vietnamese cuisine – hence the plant’s alternative name of ‘fish mint’ – and the rhizomes can also be cooked and eaten. KNOW YOUR ONIONS
It’s time to harvest your onions when the tops turn brown and flop over. On a sunny morning, gently lift the bulbs, ensuring the stems stay intact. Lay them in the sun to dry out, then move them into a garage or shed to cure. When the skin turns papery and the roots become brittle, they’re done.
Gardening can be tough on the knees, so it’s well worth investing in a top quality water-resistant memory foam kneeler. This colourful ‘British Bloom’ design example from the RHS shop (shop.rhs.org.uk) is smart and practical, and will make planting and weeding a lot more comfortable.

DIVIDE AND RULE
Once they’ve flowered, it’s good practice to divide congested clumps of iris to reinvigorate your plants and increase your stock. Carefully lift each clump and cut into sections, discarding the older, woodier parts. Shorten the leaves by half to prevent wind rock and replant in a sunny spot.

Less is more It’s better to have dozens of big apples and pears than hundreds of miniature ones. Fruit trees naturally drop a proportion of their immature fruit in June; as soon as this happens it’s time to thin them further. Aim for just one apple or two pears per cluster, and no more than two fruits every 15cm. 36

Beyond Borders An innovative Yorkshire-based school of garden design is opening its doors later this year. We meet its award-winning founder, Alistair Baldwin 38

orkshire already boasts some of the country’s finest gardens, both traditional and innovative. And this autumn an exciting new garden design school will open to budding northern designers. It will be based in the inspiring surroundings of Harewood House, renowned for its 120 acres of gorgeous gardens set within a magnificent ‘Capability’ Brown landscape. The Yorkshire School of Garden Design is the brainchild of Richmond-based landscape architect Alistair Baldwin, whose consultancy, Alistair W Baldwin Associates, has undertaken a string of prestigious projects both locally and nationwide. Northern highlights of their impressive portfolio include the delightful Rose Gardens at Wynyard Hall and the stunning new flower garden – and restored historic Japanese strolling garden – at Grantley Hall. Alistair, a Chelsea Show Garden medal winner who studied garden design at Leeds, traces his passion for landscape design back to his childhood. “My father was in the Foreign Office and as children we were lucky enough to be exposed to some amazing landscapes in Spain, Italy, Syria and the Lebanon. From an early age I knew I wanted to spend my working life outside, making things.”
D I S T I N C T LY D I F F E R E N T So what decided Alistair on the idea of the Yorkshire School of Garden Design? “I spent twelve years as an academic at Leeds Metropolitan University before becoming director of a landscape design firm in York and subsequently setting up my own practice. I loved teaching, and I really miss it. It’s very much a two-way thing, and you learn so much from your students! “Whilst there are currently a limited number of places where you can study garden design here in the North I’m keen to offer students something rather different. “I have my own particular approach to teaching garden design, based on the principle that everyone designs in their own way. Garden design is an art, and you can’t simply tell someone how to be an artist. For me, teaching garden design is about drawing out each individual student’s potential, creating talented, individualistic designers who follow their own vision rather than just following a set recipe. “I think it’s the ideal approach for designers who will be working here in the North – which is why I wanted the word ‘Yorkshire’ in the school’s name. The client base here in Northern England is distinctly different from that in the South, and I want our courses to reflect that.”

S O M E T H I N G F O R E V E RYO N E The school’s flagship Diploma in Garden Design course has been devised to equip students with all the design, technical, business and communication skills needed to start their own practice or join the team of an established designer. There will be two days of contact per week during term time. One will consist of lectures, workshops, seminars or field visits led by Alistair and his team of talented, top-flight professional designers. On the second day students will design in a studio environment and receive oneto-one tuition and feedback from tutors. As well as the one-year Diploma the school will be offering an exciting variety of short courses for aspiring practitioners, established designers and enthusiastic amateurs. If you’re considering becoming a garden designer, An Introduction to Garden Design will provide an outline of the basic principles and give you a taste of what to expect from the Diploma course. Grow for it Tasty home-produced fruit made easy
STRAWBERRIES hese are the most popular soft fruits. They’re very easy to grow either in the vegetable plot or in containers. Plants produce the best crop after two years and usually last three to four years, after which they will need replacing to produce the best crops. The large-fruited varieties produce runners bearing young plants, which can be planted into the soil to produce more new plants.

PLANTING They prefer a sunny, sheltered site, but will tolerate a little shade. Good drainage is necessary and well-rotted manure or compost should be added to the soil. Plant little plants during late summer and transplant them 12 inches (30cm) apart in rows 18 inches (45cm) apart. Dig a large enough hole to spread the roots out evenly and make sure that the crown is level with the soil. Cover with soil and water well. Keep strawberry beds free from weeds, as they can inhibit the growth of the plants. If planting in containers, plant at any time.

After producing fruit, the plants send out new shoots and little plants start to develop along them. These can be secured into the soil or compost to grow roots. When they have rooted, separate them from the main plant and replant them. To protect from frosts, cover plants with fleece or a cloche. Use straw as a mulch, which also serves to rest the fruit and keep it off the moist soil. Water all plants during a dry spell. Keep water off the plants by watering in the morning so that they have a chance to dry out before the night. Use netting to protect the fruits from birds.
HARVESTING Pick the fruits when they’re red and shiny. Harvest them frequently to encourage new fruit to develop. Bright red strawberries to make strawberry jam, or just to eat as picked with cream or strained plain yoghurt.
PRUNING Straight after harvesting when all the fruits have been picked, cut off all the leaves to approximately 3 inches (7.5cm) above the ground.

If you plant them in an old wooden fruit box, the colour of the bright red strawberries against the rustic brown box makes a very attractive addition to the garden or a lovely gift for a gardening friend. The moss is used decoratively and pushed into the outside gaps of the box to cover up the black plastic that holds in the compost.
1 Line the box to contain the compost. Try
recycling a used plastic compost bag by cutting it up and lining the inside of the fruit box. Cut holes in several places in the base.
2 For drainages, either add some broken
pieces of terracotta pots, or recycle a polystyrene plant holder by breaking it into small pieces and distribute evenly in the base of the box.
3 Fill the box generously with a good-quality, moisture-retaining compost.
4 Plant six to eight strawberry plants evenly and water in.
5 Tear off pieces of moss and push into the
gaps at the side to cover the black plastic. Place in a warm, sunny position and wait for the fruits to grow.
6 When the fruits begin to emerge, add
some clean straw at the base of the plant. This holds the weight of the fruits and acts as a mulch to keep soil temperatures down and deter weeds.

n a town that’s famous for its Georgian architecture, The Fleece is unapologetically different. Thumbing its nose at its elegantly understated neighbours, the hotel is a riot of fairytale turrets, oriel windows, crenellations and faux-medieval detailing. The design was decidedly controversial when it was built in the 1890s; nowadays it’s revered as one of North Yorkshire’s most extravagant examples of the Victorian Gothic style. Inside, The Fleece has the lofty, spacious rooms typical of its era. The dining areas have been decorated to achieve a stylish, contemporary feel that shuns Victorian fussiness whilst remaining in sympathy with the quirky grandeur of the building itself. Muted blue paintwork, pale wood tables, a stone-tiled floor and quirky modern light fixtures create a cool, relaxing ambiance.
SALAD DAYS We visited The Fleece for Sunday lunch, but whilst most fellow diners were tucking into generous portions of beef, pork or chicken with all the traditional accompaniments, we decided to try out some of the more adventurous, less obviously Sunday-centric offerings. The first of our brace of starters, a warm salad of smoked duck, peas, broad beans and Jersey Royal potatoes, convinced us that Chef – who serves from an open kitchen between the bar and the restaurant – knows what he is doing and is determined to make his mark. The smoked duck itself was delicious, but it was the attention to detail that had been expended on the other elements of the salad that particularly impressed us. The vegetables had been immaculately prepped: broad beans had been peeled, shallots and peppers were finely minced and radishes reduced to wafer-thin, red rimmed disks. The result was a riot of colour that tasted as zingy and vibrant as it looked, boosted by a lovely sharp dressing and a scattering of cumin seeds.
Our other starter, a double-baked cheese and spinach soufflé, offered less scope for presentational oomph but nonetheless packed masses of flavour – in fact it was one of the best soufflés I’ve had for some while. Made with a fearsomely tasty aged Cheddar, it sported a smart, crispy brown top and was set in a moat of supremely creamy sauce. Without the addition of spinach it might well have been too rich even for my self-indulgent palate.
GOAT’S STORY On to mains, and a wild mushroom, leek and goat’s cheese risotto topped with a soft-poached egg. I felt the risotto itself could have been a touch lighter – and the rice a little more al dente – but the flavours were bang on. The goat’s cheese and leeks announced their presence boldly and the mushrooms had kept their individual texture and character. I don’t believe I’ve ever had nigella seeds sprinkled on a risotto before, but they certainly added extra jollity – well done Chef for trying something a bit off-piste. Like the risotto, our other main – lamb and black pudding shepherd’s pie with creamed cabbage and bacon – was a cosy, comforting plateful of grub. The black pudding added richness, spiciness and an interesting point of difference to a traditional favourite, and the creamy mélange of cabbage and smoky bacon was totally in keeping as an accompaniment to this hearty Sunday lunchtime option.

DOWN THE HATCH As for desserts, our sticky ginger pudding with pineapple, butterscotch sauce and clotted ice cream was – as the name suggests – a kissing cousin of sticky toffee pudding. The large, juicy slab of pineapple set on a dusting of ginger biscuit crumbs was a refreshing addition to the plate, and the pudding itself was winningly light. Personally I would have dialled the ginger content up a notch or two. Our chocolate and amaretto mousse cake, with its exuberant decorative chocolate shard, was a delightfully rich indulgence, but for me it was the nugget of smooth, ethereal tonka bean ice cream that stole the show. Tonka bean – which, if you haven’t tried it, tastes like a heady mixture of vanilla and air freshener – is an ingredient I adore but which seldom appears on menus nowadays. GIN-CURED SALMON WITH RYE SODA BREAD This recipe involves almost no work, but the curing process takes 24–36 hours, so do plan ahead. It’ll be worth it.
SERVES 4 INGREDIENTS 500g piece of skin-on, salmon fillet (choose a piece of salmon cut from the centre of the fillet if possible, you want a piece that is roughly rectangular) 150g caster sugar 150g coarse sea salt 50ml gin 40g dill
GIN-CURED SALMON Put the salmon, skin side down, in a baking dish big enough so it can lie flat. Mix the sugar, salt and gin together in a bowl. Chop up the dill, including the stalks, and add it to the gin curing mixture. Stir it in, then spread the cure over the salmon, making sure all the flesh – including the sides – is covered in the lovely, green-flecked, salty, sugary, gin-soaked mixture. Cover the salmon in a few layers of clingfilm, pressed down against the flesh, then put a board or a plate on top of it and weigh it down with a kitchen weight or a couple of cans or jars. Put it in the fridge to ‘cook’. And it really does effectively cook. If you like a light cure, leave it for 24 hours. If you prefer it a bit more cured, leave it for 36 hours. When it’s had its time, take it out of the fridge and scrape off as much of the cure as you can. Don’t worry about the dill, which will cling, it’s the salt and sugar you need to remove. Give it a quick rinse under the cold tap and pat it dry with kitchen paper. It is now ready to eat. I like it sliced as you would a loaf, each slice around 5mm thick, or a bit less. The skin will just gently peel off. It is, I promise, soft and meltingly delicious.

GIN-CURED SALMON WITH RYE SODA BREAD continued Rye bread is a quintessential part of Scandinavian meals but making it from scratch is a time-consuming affair, and if you are an inexperienced bread maker like me, it feels like too many things could go wrong. However, our failsafe friend soda bread can be made with rye flour and, honestly, I think it is just as good.

MAKES 1 LOAF INGREDIENTS 25g oats 25ml boiling water 400ml natural yogurt 1 tablespoon brown sugar 400g wholemeal rye flour 1 teaspoon fine sea salt 1 ½ teaspoons bicarbonate of soda
RYE SODA BREAD Preheat your oven to 180°C/gas 4. Put the oats into a bowl with the boiling water and leave to soak for 10–15 minutes. Once they are nicely mushy, stir in the yogurt and sugar. Then mix in the flour, salt and bicarbonate of soda until everything is combined and you have a sticky dough. Scoop out onto a floured work surface and shape into a long baton. Put on a greased baking tray and cook for 45–55 minutes. Give its bottom a tap and if it sounds hollow, it’s done. Cool on a wire rack.

CONTRARY CHEESECAKE This recipe is a mash-up of a cheesecake my mum makes and one that my friend Penny makes. It requires a little beating and a bit of bashing and it is very amenable to any adaptations you might want to make. SERVES 4–6 FOR THE CREAMY BIT 250g mascarpone 150g cream cheese (I use a light one because I prefer the texture, but full-fat is fine too) 25g caster sugar zest and juice of 1 unwaxed lemon 1/2 teaspoon vanilla extract 100ml double cream FOR THE CRUNCHY BIT 100g ginger nut biscuits (about 10) 30g butter TO SERVE 350g mixed summer berries zest of 1 unwaxed lime, plus a squeeze of juice mint leaves (I like to chop them into ribbons) icing sugar
FOR THE CREAMY BIT With an electric hand whisk, beat together the mascarpone, cream cheese, sugar, lemon zest and juice, vanilla extract and cream until smooth and well combined. Chill in the fridge. You can chop and change your citrus flavours at will – use an orange, a lime or two, or a clementine – and play around with the biscuit base accordingly. FOR THE CRUNCHY BIT Put the biscuits in a bowl, break them up a bit with your hands and then bash them a bit with a rolling pin until you have a nicely uneven crumb. Melt the butter in a saucepan, add the biscuit crumbs and stir so they are well coated. Pour the mixture into a nonstick tin (you are going to break this base up, remember, so it can be any size tin), pat the crumb down with a wooden spoon then put the tin in the fridge. You can add 1 tablespoon of cocoa powder (or more) to the mix to make a chocolate ginger crumb. Or use digestive biscuits instead. I’ve added a handful of chopped hazelnuts on occasion too. Add a teaspoon of spice – cinnamon or mixed spice for a wintery version. TO SERVE How you present this pud is really up to you. In glasses, a bowl or a plate. Biscuit crunch beneath the cream and the fruit, or on top. Anything goes. I like the berries mixed gently with the lime juice and zest, some of the mint leaves and just a sprinkling of icing sugar. I’d serve them alongside a generous blob of the lemony topping, scatter the ginger crunch with abandon and decorate with a couple more mint leaves.

When berries aren’t in season, a rhubarb compote will go well (perhaps with orange rather than lemon in the creamy bit). Or frozen fruit, like cherries or blackcurrants, gently thawed and served warm alongside it – in which case I might go against type and serve it in a glass to make the most of the juice.

LEMONY COURGETTES WITH BASIL, BURRATA AND ROCKET If courgettes are young and fresh, they’re simply delicious, which is why I’ve taken to growing a few in the garden. They love a bit of flaky salt, lemon juice and good extra-virgin olive oil, but want for little else. Bright, fragrant basil, creamy, rich burrata and bitter, peppery rocket are nothing more than flourishes. SERVES 2–3
METHOD
INGREDIENTS 4 firm, fresh small–medium courgettes, a mixture of colours would be nice 4 tablespoons extra-virgin olive oil finely grated zest and juice of 1 large lemon 1 small garlic clove, grated or crushed to a paste a couple of handfuls of peppery rocket leaves a handful of basil, leaves picked 1 burrata flaky sea salt and freshly ground black pepper
Nick the tops and bottoms off the courgettes with a sharp knife. Use a vegetable peeler to pare nice, thin, wide slices from the courgettes. If you don’t have a peeler that will do this, use a sharp knife instead. Place the ribbons of courgette in a bowl. Trickle in half the extra-virgin olive oil, and add the lemon zest and juice, the garlic and the rocket leaves. Season with salt and pepper.

Tumble the courgettes together with all these ingredients. Cut half of the basil leaves into ribbons and add these to the courgettes. Give everything another mix. Arrange the dressed courgettes over a large plate or serving platter. Tear over the burrata and season everything well with salt and pepper. Trickle over the remaining extra-virgin olive oil and scatter over the remaining basil leaves.
GRILLED LAMB WITH LAVENDER, FETA AND HONEY Lavender and lamb are absolutely lovely together. These kebabs play on that same successful combination. I like to finish them with crumbled feta cheese and a spoonful or two of runny honey and pretend I’m in Greece or something. METHOD
SERVES 2 INGREDIENTS about 400g lamb (off the bone), from the leg or the top of the shoulder 2 tablespoons extra-virgin olive oil finely grated zest and juice of 1 lemon 3 garlic cloves, thinly sliced 4–5 lemon thyme or regular thyme sprigs, leaves picked and roughly chopped 2–3 heads of fresh lavender flowers, or 2 teaspoons dried petals, plus extra to finish 3–4 oregano sprigs, leaves picked and chopped 100g feta 1 tablespoon runny honey sea salt and freshly ground black pepper
Place the lamb down on a board and use a sharp knife to trim away any excessive sinew, membrane or fat. Slice the lamb into 1cm medallions or thereabouts. Place them in a bowl and add the extra-virgin olive oil, lemon zest (not the juice at this stage), garlic, thyme, lavender flowers and oregano. Season the meat with salt and pepper and tumble everything together. Leave to marinate in the fridge for a few hours, or overnight if you like. When you’re ready to cook, take the lamb from the fridge and thread the pieces of meat onto two skewers, or four if you prefer. Don’t force the meat on too tightly because that would mean the heat will take longer to reach the middle. Light your fire or barbecue and when you have a hot bed of glowing embers, set the kebabs down on the grill. Cook them, turning every 4–5 minutes, for 12–14 minutes if you’re using leg and 20–25 minutes if you’re using shoulder (that might seem like a long time, but lamb shoulder takes a bit more cooking), until the meat is lovely and caramelised on the outside and cooked through. Lift the kebabs off the grill to a board or plate. Crumble over the feta, sprinkle with a few extra lavender petals and trickle with honey. Serve with a good spritz of lemon juice, some flat breads and some minted yogurt or lemony hummus.

LEMON AND BAY RICE PUDDING WITH BROWN SUGAR BAKED APPLES I used to make something like this in the farmyard kitchen at River Cottage. During the winter, it was a cold place to work, even with the stove on. I remember baked apples and rice pudding would always bring a heartening smile to everybody’s faces. METHOD
SERVES 2 INGREDIENTS 500ml whole milk 200ml double cream 50g caster sugar finely grated zest and juice of 1 lemon 4 bay leaves 100g pudding rice, rinsed 2 apples 2 tablespoons light brown soft sugar a knob of butter

Once you have a gentle fire going, put the milk, cream, caster sugar, lemon zest and bay leaves in a shallow, heavy-based pot and stir them over the heat. Warm up the milk and cream to help dissolve the sugar, then add the pudding rice. Stir well and wait for the liquid to come to a boil, then move the pan to an area of the fire where it’s just simmering. Cook gently for 35–45 minutes, or until the rice is tender. It’s important to stir it once in a while to prevent the rice from catching on the bottom of the pan. Halve the apples from top to bottom (there’s no need to peel or core them). Lay the apple halves, cut-side up, on a double layer of foil, large enough to encase the apples in a parcel. Sprinkle the tops of the apples with the brown sugar and dot over the butter. Sprinkle over the lemon juice, then fold the foil over the apples to create a neatly sealed parcel. Set the parcel carefully down in the embers of the fire. The apples need to be cooked in a gentle, glowing heat, so don’t let them come into contact with any parts of the fire that are super-hot. Bake for 20–25 minutes, rotating the parcel occasionally to ensure the apples cook evenly. Remove the parcel, open it and prod the apples with a knife to check that they are tender. If they’re not quite ready, rewrap and return to the fire for a little longer until they are. Serve the apples hot, alongside the rice pudding, with all the sweet, buttery juices from the parcel.

CRAB TART Crabmeat always feels like such a treat to me and I almost prefer the rich umami kick you get from brown meat to the delicate sweet white flakes. This recipe uses both, but if you prefer a more subtle crab flavour, stick to only white meat. SERVES 2 PREP TIME 20 MINUTES + CHILLING TIME COOK TIME 45 MINUTES FOR THE PASTRY 150g wholemeal or white spelt flour 100g plain flour, plus extra for dusting 150g unsalted butter, cubed and well chilled 1 egg yolk FOR THE FILLING 2 eggs, plus 2 egg yolks 2 tsp olive oil 1 small onion, finely chopped 70g crème fraîche 150ml double cream ½ tsp English mustard powder 50g brown crabmeat 200g white crabmeat sea salt and freshly ground black pepper watercress, to serve
METHOD For the pastry, blitz the two types of flour and the butter in a food processor until the mixture resembles breadcrumbs. Add the egg yolk and ½ tbsp chilled water and pulse until the pastry comes together into a ball. Add a little extra water if the pastry is still too crumbly. Wrap in cling film and chill for 30 minutes. Preheat the oven to 200°C/180°C fan/gas 6. Roll the pastry out on a floured surface and use to line a 23cm loose-bottomed cake tin. Chill in the fridge for 15 minutes. Prick the base of the pastry case all over with a fork, then line with baking paper and ceramic baking beans/pie weights (rice or dry pulses also work), and cook the pastry for 15 minutes. Remove from the oven, tip out the baking beans and remove the paper. Crack the eggs for the filling into a large jug and lightly beat with a fork. Lightly brush the base of the pastry case with a little of the beaten egg and return to the oven for 5–7 minutes for the pastry to get some colour and to seal the base. Set aside. Reduce the oven temperature to 180°C/160°C fan/gas 4. Meanwhile, heat the oil in a small frying pan (skillet) over a low heat. Add the onions, season with salt and pepper and cook for 8–10 minutes until softened. Use a wooden spoon to mix the crème fraîche, double cream and mustard into the jug with the eggs. Season well then stir in the softened onions and crab meats. Slowly pour into the pastry case and bake for 25–30 minutes or until the top is lightly golden and the filling is just set in the middle (a slight wobble is good). Leave to cool on a wire rack. I like to keep the tart in the tin, to make it easier to transport. Serve with a scattering of watercress. The tart will keep for 1 day at room temperature.

CRUSHED ROASTED POTATO AND SALSA VERDE SALAD Give this a try if (like me) you are not a fan of potato salads made with mayo. I love serving it with the porchetta sandwiches as a Sunday roast picnic. SERVES 4–6 PREP TIME 5 MINUTES COOK TIME 1 HOUR 15 MINUTES INGREDIENTS 1kg medium new potatoes large pinch of crushed red chillies 2 tbsp olive oil sea salt FOR THE SALSA VERDE 1 tbsp salted capers, rinsed, squeezed dry and chopped 2 anchovy fillets, chopped 2 garlic cloves, finely chopped 25g bunch flat-leaf parsley, leaves only, chopped 25g bunch mint, leaves only, chopped grated zest of 1 unwaxed lemon 3 tbsp extra virgin olive oil 1 tbsp red wine vinegar 2 tsp Dijon mustard
METHOD Preheat the oven to 200°C/180°C fan/gas 6. Cook the potatoes in a pan of salted boiling water for 20–25 minutes until cooked through. Drain well. Tip the potatoes into a large roasting tin and use the back of a fork (or the heel of your hand if the potatoes are cool enough) to gently push down on the potatoes, crushing them slightly without breaking them apart completely. Season with salt, scatter with crushed chillies, then drizzle with the 2 tbsp olive oil. Roast for 40–45 minutes, turning halfway through cooking, until golden and crispy. Meanwhile, combine all the ingredients for the salsa verde. I like to keep mine quite chunky, to keep the flavour of separate ingredients distinct, but you can chop finely, or even whizz in a food processor, if you prefer. Transfer the roasted potatoes to a large bowl and toss through the salsa verde. Do this while the potatoes are still warm, so they soak in all the flavours of the dressing. Set aside to cool before packing. Ideally, make the salad on the day of your picnic, so it keeps its crunch, but it can also be made a day ahead and chilled in the fridge, in which case take it out of the fridge in time for it to come to room temperature before eating.

PORCHETTA SANDWICHES WITH FENNEL & APPLE SALAD Roasting a whole piece of pork belly to make a sandwich might sound excessive but think of this as the centrepiece of your picnic. Cooking the pork rind separately makes the porchetta much easier to carve and helps achieve extra-crispy crackling. SERVES 8 PREP TIME 20 MINUTES COOK TIME 2 HOURS 50 MINUTES INGREDIENTS 20g bunch sage, leaves picked and finely chopped 4 sprigs rosemary, leaves picked and finely chopped 1 tsp fennel seeds 2 garlic cloves, finely chopped 2 tbsp olive oil 1.2kg piece boned pork belly (you’ll need the rind, but ask your butcher to separate it from the meat and score it for you) sea salt and freshly ground black pepper 8 ciabatta rolls and garlic mayonnaise, to serve FOR THE FENNEL AND APPLE SALAD 1 fennel bulb, thinly sliced 1 Granny Smith apple, thinly sliced juice of 1 lemon olive oil, to drizzle
METHOD Preheat the oven to 200°C/180°C fan/gas 6. Put the sage, rosemary and fennel seeds in a bowl with the garlic and 1 tbsp of the oil. Lay the pork onto a chopping board, rind-side down, then rub the herb mixture all over the flesh. Season with salt and freshly ground black pepper. Roll the meat into a long sausage shape and tie securely several times with kitchen string. Rub the outside with salt and pepper. Rub the remaining 1 tbsp of oil over the scored rind and season. Lay the meat into a large roasting tin with the rind draped over it (this will help keep the meat moist), cook for 20 minutes, then reduce the oven temperature to 180°C/160°C fan/gas 4 and cook for a further 2½ hours. When there are 30 minutes of cooking time remaining, move the crackling to one side and baste the porchetta with the cooking juices in the tin, to give it a chance to brown. Transfer the porchetta and crackling to a tray lined with kitchen paper. Once cooled all the way through, wrap in foil. The porchetta will keep for 3 hours at room temperature, or transfer to the fridge and keep for up to 3 days. The fennel and apple salad benefits from being made just before you head out to your picnic. Simply put all of the ingredients in a bowl and toss in some salt and pepper to taste. To assemble, spread the ciabatta rolls with garlic mayo, then fill with thinly sliced porchetta (be generous!) and the crispy apple and fennel salad. Wrap the sandwiches tightly in baking paper or foil, using string or rubber bands to secure. Break the crackling up into small pieces and pack them separately to serve on the side.

TOMATO AND PEACH PANZANELLA WITH HONEY, SMOKED SALT & LAVENDER This is the easiest of recipes, but I break the prep into three parts: first, I season the tomatoes, giving the smoky salt a chance to get right into them; second, 30 minutes to 2 hours before the picnic, I toss in the onions, dressing and toasted sourdough to give the bread a chance to soak up the juices; finally, I top the salad with peach wedges and a flourish of lavender and honey, just before tucking in. SERVES 4 PREP TIME 5 MINUTES COOK TIME 5 MINUTES + 30 MINUTES SITTING INGREDIENTS 800g ripe tomatoes, in a variety of shapes, colours and sizes flaky smoked salt, to taste 3 tbsp extra virgin olive oil 1½ tbsp red wine vinegar ½ red onion, thinly sliced 2 thick slices day-old sourdough bread 2 ripe peaches, cut into wedges a few lavender flowers (optional) good-quality honey (I like to use a lavender or wildflower honey)
METHOD Slice the tomatoes, or cut them into halves, quarters or wedges, depending on their shape and size. Put them in a large bowl and season generously with smoked salt. Cover and set aside for at least 30 minutes (longer is fine). 30 minutes to 2 hours before you plan on eating, toss the olive oil, vinegar and red onion into the tomatoes. Toast the bread until well charred and, once cooled, break large chunks into the salad. Toss well to combine, then transfer the salad to an airtight container and keep chilled until you go out. Just before eating, add the peach wedges and scatter with the lavender flowers (if using), breaking the flowers slightly between your fingers as you go. Toss the salad well to combine, then drizzle over some honey; about 2 tsp should do it.

GOOSEBERRY & ELDERFLOWER TRAYBAKE Gooseberries have such a short season that every bite of this traybake feels like a real treat, and a taste of British summer. Substitute raspberries or cherries when gooseberries are not in season. MAKES 12 PREP TIME 20 MINUTES COOK TIME 40–45 MINUTES INGREDIENTS 125g self-raising flour 75g ground almonds 100g soft light brown sugar 150g butter, melted, plus extra for greasing 2 eggs, lightly beaten 75g natural yoghurt grated zest of ½ unwaxed lemon 3 tbsp elderflower cordial, plus extra for the icing (frosting) 150g gooseberries 2 tbsp granulated sugar 15g flaked almonds 2 tbsp icing sugar crème fraîche (or mascarpone spiked with a few tablespoons of sweet muscat wine), to serve
METHOD Preheat the oven to 180°C/160°C fan/gas 4. Grease and line a 20cm x 15cm cake tin. In a large mixing bowl, use a wooden spoon to combine the flour, ground almonds, brown sugar, butter, eggs, yoghurt, lemon zest and elderflower cordial. Beat until smooth. Scrape the batter into the prepared cake tin and level the surface using a palette knife. Toss the gooseberries in half of the granulated sugar, then gently arrange them on top of the batter, spaced evenly. Scatter the remaining granulated sugar and the flaked almonds over the top and bake for 40–45 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool in the tin. To make the icing, put the icing sugar in a small bowl and mix in just enough elderflower cordial to form a thin paste with a drizzling consistency. Drizzle liberally over the cake. It’s easiest to take the cake to the picnic in its tin, but you can cut it into 12 pieces beforehand, and wrap to take with you. Serve with crème fraîche or, if you’re feeling indulgent, mascarpone spiked with sweet muscat wine.

he Beswick pottery was founded in 1894 in Stoke-on-Trent. Originally the factory produced tableware and ornaments, and it wasn’t until the eve of the Second World War that they started making the high quality animal figurines with which the name is now synonymous.

Nowadays the Beswick brand belongs to Dartington Crystal, which continues to produce figurines under the Beswick name.

“Initially Beswick released horses in chestnut and rocking horse grey. Other colours were added later, at which point Beswick dropped the earlier colourways, making them scarcer at auction today. They even made a blue gloss example, but I have yet to see one – readers should keep their eyes peeled! Rocking horse grey models always achieve good prices, especially when in good condition. “Mounted figures, such as the cowboy shown here, are amongst the more popular Beswick items. However they are more complex and intricate in their design and consequently prone to damage and less commonly found in good condition. “Figurines of cattle have sold well over the years, with buyers mainly in the agricultural sector. The models are based on champion stock, so have well-known names. Models with long production runs are quite common and don’t command a premium but more specialist breeds such as Belted Galloways and Shorthorns are more keenly sought after at auction. “These charming Red Friesian cattle figurines illustrated here were produced in very small numbers for the Beswick Collectors Club and issued in 1992. Prices have fluctuated over the years but dedicated collectors are willing to pay substantial prices for such rarities. “Interest in Beswick tends to focus on the animal kingdom, and within that on British wildlife or domestic animals. In 1948, however, Beswick secured the right to reproduce a range of Beatrix Potter characters. COINS AND BANK NOTES Rick Parrish introduces some notable lots that came up for sale this April at Ripon-based auctioneers Elstob & Elstob

oin collecting has been popular for over 2,000 years. The ancient Roman emperors collected and gifted coins issued by earlier Greek kings, and the practice of coin collecting was revived by 14th-century European monarchs, earning it the nickname ‘the hobby of kings’, explains expert numismatist Rick Parrish. Today coin collecting is no longer reserved for the elite, with collectable categories to suit every whim and budget. The Royal Mint now issues large numbers of celebratory and commemorative coins that can be found in circulation, and these coins are hugely popular because of the nostalgia they offer.
Recently coin collecting has seen something of a boom, and sale records are regularly being broken. With bank interest rates so low, collectors have looked to diversify their savings and investments. And thanks to the advent of third-party grading and authentication, even novice collectors can now buy a rare coin and have no doubts about its authenticity. Coins offer something tangible that other investments such as alcohol in bond or stocks and shares do not. It is this link to the past, combined with good financial performance and an ever-growing demand, that has taken the hobby from strength to strength. Dales Life | SUMMER 2022 |

1 Operation Bernhard was a Nazi
Second World War operation to forge British bank notes. The initial plan was to drop the notes over Britain to bring about a collapse of the British economy. The unit successfully duplicated the rag paper used by the British and produced nearidentical engraving blocks. The Bernhard unit closed in early 1942 but was revived later in the year with a new aim of forging money to finance German intelligence operations. Prisoners from concentration camps produced British notes until mid-1945. This Operation Bernhard fifty pound note was sold by Elstob & Elstob for £120. 2 Gold guineas are especially keenly
sought after as they represent Great Britain’s first machine-made gold coinage. They were first minted in 1663 under Charles II and were discontinued in 1814. Gold guineas were withdrawn from circulation to be melted and recoined as sovereigns, and hence are scarce today. This 1794 George III guinea – known as a ‘spade guinea’ because of the design on the obverse – was sold by Elstob & Elstob for £550. 3 Silver double denarii of the joint
emperors Balbinus and Pupienus who were elected in the year 238. Having returned to Rome after defeating their rival Maximinus in battle, they soon began arguing amongst themselves about who was the most important.

They proved unpopular with the people of Rome and were executed by the Praetorian Guard after reigning for a mere three months. These two coins, both in ‘Near Extremely Fine’ condition, were sold by Elstob & Elstob for £300 and £480 respectively. 4 Following the trial and execution of
Charles I, Cambridgeshire Parliamentarian Oliver Cromwell eventually assumed the title of Lord Protector of the Commonwealth of England, Scotland and Ireland, a position he occupied from 1653 until his death in 1658. His head appeared on coins of the period, styled as a Roman emperor. This 1658 Cromwell shilling was sold by Elstob & Elstob for £1,000. 5 This particular version of the one pound
note, bearing the signature of the Bank of England’s Chief Cashier Cyril Patrick Mahon, is quite rare. The type was first issued in 1928 to replace the preceding ‘Treasury notes’. However in 1929 Mahon was succeeded by Basil Gage Catterns, making this combination of note and signature a one-year type. This scarce note is made yet more desirable by its immaculate uncirculated condition. Sold by Elstob & Elstob for £100. nn Duffield certainly doesn’t believe in resting on her laurels. In 1999 she and her husband George Duffield, MBE – a now-retired top jockey with some 3,000 wins under his belt – bought Sun Hill Farm at Constable Burton and swiftly transformed it into a first-class racehorse training yard. Just over two decades later Ann is still a well-respected trainer, currently eyeing up the future prospects of the un-raced two-year-olds she bought at this spring’s ‘breeze-up’ sales. But her business activities have now diversified well beyond the stable yard, bringing Sun Hill a degree of stability to counterbalance the natural ebbs and flows of what can be a harsh and volatile industry. She’s at the helm of a number of exciting ventures, all of them giving a welcome boost to the local economy.
FIT AS A HORSE Concern for her horses’ wellbeing has always been a top priority for Ann – summed up in the cleverly ambiguous tagline to the Ann Duffield Racing logo: Where Horses Come First. Operating under the umbrella title of Sports Horse Fitness & Rehab, Sun Hill’s enviable equine facilities are now open for use by local show jumpers, eventers and point-to-pointers.
Olympic medallist Nicola Wilson, one of Yorkshire’s most successful horsewomen, is a big fan of Sun Hill’s cold salt water treadmill – a resource few yards in the country can boast – which provides a low impact but high intensity workout suitable for all types of horses, including those recovering from injuries. It may come as a surprise that The Green Howards Museum’s collection includes numerous pieces of Robert ‘Mousey’ Thompson furniture, much of it on display and regularly used at museum events. This summer the museum is inviting fans of the Mouseman’s furniture to find out more about the pieces created for those who served; part of a full day immersed in Mousey, and including a visit to the Kilburn base of this ever-popular Yorkshire furniture maker. “Starting with a coffee here at the museum, in the stunning surroundings of our Normanby Room, sitting on Mouseman chairs at our Mouseman tables, you’ll be introduced to our extensive collection of Robert Thompson furniture. We’ll explore the stories connected to the furniture on display and discuss the different types of furniture commissioned by the regiment. Next, a gentle stroll to the regimental chapel in St Mary’s parish church will enable us to see yet more unique pieces of Thompson’s work. In the afternoon, we’ll head over to Kilburn for a tour of the Robert Thompson visitor centre.” Starts at 9.45am, transport returns to Richmond between 4pm and 5pm. Power Points We talk to David Shackleton of Eccles Heddon Solicitors about Lasting Powers of Attorney David Shackleton obtained a Masters degree in Law at Leeds Metropolitan University and is currently a Partner and Head of the Private Client Department at Eccles Heddon’s Ripon office. Most people are well aware what a will is, even if they haven’t actually got round to making one yet. Lasting powers of attorney are equally important when it comes to taking sensible precautions regarding your own and your family’s future, but are much less widely understood. A power of attorney, explains David, is a legal mechanism that enables someone to appoint trusted family members or friends as attorneys to make decisions about important matters on their behalf should they have an accident or illness that deprives them of their mental capacity. “There are two types of lasting power of attorney, and a person can nominate a different attorney or set of attorneys for each type. Property and financial affairs powers of attorney cover issues such as managing bank accounts, pensions, investments and property.”
“Health and welfare powers of attorney cover issues such as what kind of care a person receives – for example choice of care home – and giving or refusing consent to particular kinds of medical treatment. “Typically accidents and illnesses that make it impossible for you to handle your own affairs come out of the blue,” says David. “Suddenly you’re in the situation that your property and assets still belong to you but you’re unable to manage them yourself. A lasting power of attorney resolves the situation, but you have to set it up in advance, before you know you need it – that’s to say while you still have the mental capacity to put it in place. “I often describe a lasting power of attorney as akin to home insurance. You set up your insurance and pay your premium, but it’s not until later on, if something goes wrong, that it proves to be worthwhile. And if it does turn out to be needed, you and your family will be jolly glad you put it in place. “Of course it’s not necessarily a sudden event that can deprive a person of their mental capacity; it could, for example, be a progressive disease. If that’s the case then it’s very important they don’t postpone putting a power of attorney in place. Once mental capacity has waned it’s too late to start the process.”

“If a person hasn’t put a lasting power of attorney in place and loses the capacity to sign paperwork then somebody – usually a family member – will have to apply to the Court of Protection for a deputyship order. It can be a lengthy process and it’s rare for deputyships to be granted for health and welfare issues. “The main preparation that people need to make for setting up a power of attorney through a solicitor is to select and obtain permission from suitable attorneys and to provide us with attorneys’ full names, addresses and dates of birth. Up to four attorneys can be appointed, either jointly (their decisions need to be unanimous) or jointly and severally (any one attorney, or any combination of them, can take decisions). Appointing attorneys jointly can be a problem, because if one attorney dies, for example, then that lasting power of attorney becomes null and void. “You can also select replacement attorneys as a backup to cover situations in which attorneys are unable to act, die or lose their own mental capacity.”

“Our current charges are £500 plus VAT for a single power of attorney and £600 plus VAT for two. For four – that’s to say property and financial affairs powers of attorney plus health and welfare powers of attorney for a couple – we charge £700 plus VAT. The charging structure reflects the fact that the work done to set up an initial power of attorney makes subsequent ones much quicker to produce. On top of those charges the Office of the Public Guardian charges £82 to register each document. “From our point of view as solicitors we can usually get the work done promptly – within a week – but due to the backlog of work caused by Covid it can now take the Office of the Public Guardian about three months to register a power of attorney, rather than the two months it took before.
