It’s not every day that you get to hang with a culinary great. So you can imagine why I was willing to break a serious sweat around the prodigious wood-fired megagrill of Francis Mallmann’s protégé, Argentine chef Sebastián Benítez. I learned about his mentor’s famed livefire cooking techniques and later savored Los Fuegos’ Sunday asado, a meal of meat and more meat (plus some roasted vegetables and an unlimited dessert bar for good measure). Not a bad way to spend a Sunday.
One of the pleasures of living in Miami is being able to enjoy the outdoors yearround—whether that means partaking in a leisurely meal, going on an active excursion, or simply soaking up a little sun. Argentinian psychedelic blues, Arabic reggae, Ethiopian jazz—these are not the typical genres you’ll hear on the radio. But Isabella Acker is hoping to change that as the founder of Tigre Media. A veteran in the Miami music scene, she and a small team of international writers are connecting music lovers with global sounds by curating playlists to enrich your Spotify shuffle. They’ve since expanded to include a recording studio (Tigre Studios) and intimate concerts at the Tigre Den. “Tigre has always been [about] music discovery for citizens of the world,” says Acker. “We assume people don’t really know what’s happening around the world musically, so we like to be that cool curator friend. XAVM: Tigre Media has a foundation in Spanish-speaking music. Why did you start there?
Acker: I always felt that the Latin scene [and] industry is pretty insular if you don’t speak Spanish. I have felt this calling to create a more expansive, open, welcoming narrative around world music— Latin and beyond—for people who appreciate music in other languages but don’t necessarily speak them.
Tell us more about Latin artists breaking into the English charts in Miami and elsewhere.
Reggaeton has paved a lot of bridges. It is the main representation [on the charts], and I’m excited to show people what else is out there. We did a post called
“Five Colombian Artists That Aren’t Maluma.” We weren’t trying to throw any shade at Maluma; it’s just an opportunity to show there’s such a diaspora that exists. We have playlists that many people feel really connected to and playlists for moods and [others for] countries and cities.
Where else can music lovers experience live music with you? We launched a world music series at the Miami Beach Bandshell; we’ve made it free and open to the public. We want to continually ... build an ecosystem where people feel their music taste is represented in a way that they can experience it live. I feel like we’re just getting started. It’s been a really exciting space.
Part clothing shop, part art gallery, Wynwood’s Billionaire Boys Club/Ice Cream flagship store is on brand for its founders: rapper and producer Pharrell Williams and Japanese designer Nigo. “It’s going to be a place where people can come in to get inspired by the mix of fashion, culture, art, and design,” says Williams. New York design firm Snarkitecture transformed a 5,000-square-foot warehouse into a one-of-a-kind boutique. The designers drew inspiration from Everglades National Park, choosing a palette in greens and blues, and using environmentally friendly materials like recycled plastic, glass, and wood panels. More than just a store, the space will be a venue for artwork and installations, spotlighting artists from around the globe, while offering product collabs with brands like Human Made, Comme des Garçons, Bamford, Yellowpop, Baggu, Bunny Shapiro, Krink, Humanrace, and more. As a self-described “Miami girl” who was born and raised in Miami-Dade County, Nadege Green has always taken an interest in local history. But she often found a discrepancy between the recorded histories of the region’s white and Black residents.
“If you learn about Henry Flagler and Julia Tuttle, you should also learn about Jessie Trice, a pioneering Black nurse from Miami, and you should know Dana Dorsey, the Black man who once owned Fisher Island on Miami Beach,” Green says. “We have never really done a great job of teaching local history. It’s why people in Miami know about the Montgomery Bus Boycott but can’t really speak to what it was like to desegregate Miami-Dade Transit.”
Utilizing her skills as a journalist, researcher, and storyteller, Green launched blackmiamidade.com in February 2019, a history and storytelling platform highlighting the contributions and existence of the county’s Black past. Green has compiled scores of articles, timelines, maps, videos, audio files, and books, posting them online for anyone
looking to learn about parts of the city’s past that are often not mentioned or perhaps even forgotten.
“I remember feeling frustrated about how hard or difficult it was to digitally find Miami’s Black history,” Green says. “I [decided to] make it because it’s something that I care about and that I want other people to know about. It’s not that it doesn’t exist, it’s that people don’t know where to find it.”
At the center of the project is the site’s Instagram account,
@blackmiamidade, which shares images of Black life in Miami dating back to the late 1800s with its nearly 16,000 followers. You’ll find some of the biggest moments in Miami-Dade’s history—from Muhammad Ali (then known as Cassius Clay) defeating Sonny Liston in Miami Beach in 1964 to the “wade-in” protests at Baker’s Haulover Beach that lead to Virginia Key Beach being designated as a “colored beach” for Black residents. Then there are the celebrity stories, including Tupac Shakur signing autographs in North Miami in 1994, a photo of rapper Katrina “Trina” Taylor from her days as a student at Miami Northwestern High School, and even snippets of performances by R&B singer-songwriter (and Miami native) Betty Wright. But most posts feature regular folks

“One of my favorite images is actually circa the 1960s,” Green says. “It’s at Mount Sinai Hospital, and it’s of a Black nurse in the segregated ward caring for a Black patient who has just given birth. It is the most tender photo. The nurse is kind of rubbing her upper shoulder, and it looks very much like she’s saying ‘Good job, mom. You did a good job.’ It’s so sweet.”
“Sharonya Green, who is a professor, submitted an image of her grandmother, who worked at Ransom Everglades [School] back when it was called St. Alban’s,” Green says. “Her grandmother worked in the cafeteria. She was just talking about how her grandmother was just such a great cook and made French toast for the school cafeteria. They moved to Miami in the ’50s to pick tomatoes and pole beans before moving to the Grove. I love just getting a snapshot of other people’s family histories.”
Xliving their daily lives—whether they be a family posing in front of their home, children playing together, or a student beaming with her county spelling bee trophy.
“I like visualizing Black people in Miami’s history in sweetness and in joy, seeing Black glamour and Black performers, and just seeing the mundane,” Green says. “I’m really obsessed with beauty. I think Black people are beautiful, and I think rendering us visible is important in this place.”
To find the photos, videos, and stories she posts, Green scours academic databases, old newspaper archives, and eBay, looking to uncover and even buy back pieces of Miami’s history from third-party sellers as far away as Tennessee and England. “It’s like a treasure hunt,” she explains. “Repatriating these images back to Miami is important.”
For Green, it’s all about what she calls “the democratization of information,” which means everything she posts is always available for free, accompanied by written explanations that are conversational and accessible.
To make history applicable to the city’s youngest residents (and those without internet access), Green commissioned coloring book pages of important moments in Miami’s Black history, including a page dedicated to Christian Hospital, Miami’s first Black hospital, and another of Silas Austin, a Black man who was the first name listed on the City of Miami’s charter in 1896.
“Many of the books that are written about Miami Black history are more academic text, so they’re like college-level reading [and] not for younger readers,” Green says. “If we’re democratizing information, that means also acknowledging that everyone does not have digital access freely in the same way. Even if you have a cell phone that doesn’t mean you have a cell phone plan that allows unlimited streaming.”
Green is currently working on creating zines about Miami’s Black history, which she plans to post on the Black Miami-Dade website for free, and is curating an exhibition about Miami’s Black LGBTQ+ history titled “Give Them Their Flowers,” which will debut at the Little Haiti Cultural Center in March.
“It really takes a village, and I’ve always had a beautiful village of Black people in Miami who have been a part of my life,” Green says. “For me, this is a love offering back to the community that I have absolutely felt loved in.” «
“This one came from the State Library of Florida, and it’s of a Black man clearing mangroves in Miami Beach in the early 1900s in order for things to be built,” Green explains. “I just love this photo, because when we talk about who built Miami, quite literally we’re talking about, in a lot of instances, Black labor. This is a photo that visualizes that. This is the early 1900s: There were no large cranes or construction materials. A lot of this clearing of the palmetto trees, bushes, and things like that was manual labor.”
“Phil Harris, who was a Black gay man from Overtown, was a sought-after emcee,” Green says. “He was in the musical Bubbling Brown Sugar that played at the Coconut Grove Playhouse. He was also an actor. He was a dancer. He trained with the Katherine Dunham Dance Company. He brought the first Black chorus line to Miami. He was also very well-known and seen in Miami’s Black clubs. It’s just a really beautiful photo of him.”

You only have 18 summers with your kids. Make them count.
That’s a bit of cowboy wisdom bandied by the folks at The Resort at Paws Up, and it’s meant to remind parents—and anyone, really—that time is precious and the best way to spend it is together, preferably in wild places that awaken the spirit and get the adrenaline pumping.
Paws Up is that kind of place. A mountain resort sprawled across 37,000 acres (for comparison purposes, Manhattan is 10,890 acres) near Greenough, Montana, Paws Up tantalizes visitors with nature’s majesty and the promise of adventure. The setting is an exquisite wilderness with mountains stretching to the horizon, rivers running through ponderosa forests, and wide-open meadows where you see more elks
than humans. Being surrounded by the stillness and silence of the land has the net effect of slowing you down so that you notice things like a patch of bluebells in a field of oxeye daisies, or the halo of afternoon light
around a horse’s mane.
This is balm for work-weary adults, but for children, it’s pure magic. When kids get out into the wild, away from screens and regimented schedules, a transformation happens. It’s fun to watch them sing along with the cowboys by the campfi re, become experts in s’more construction, or learn to thread a fl y onto a fi shing rod. Why watch Yellowstone when it’s outside your door? And who needs a video game when you can race an ATV through a muddy road?
Few places facilitate familial bonding like Paws Up. It starts with the accommodations, which are as luxurious as they are cozy and offer families plenty of roaming space inside and out. The 28 ranch homes nestled within the pines come in one- to four-bedroom configurations and have all the amenities: large stone fireplaces, Western-chic decor, private decks out back, use of a Lexus SUV, and—the most important of all—mountain views for days. For the more rugged, there is “glamping” (fun fact: Paws Up actually coined this term) in tented camps by the river or deep in the woods. These aren’t ordinary tents. Appointed with luxe beds and en-suite bathrooms (with
heated floors!), and tended by a camping butler, they give a whole new meaning to “roughing it.”
Activity-wise, there is everything under the (big) sky. The horseback-riding facilities may be the best in Montana, and that’s saying a lot. Paws Up has the state’s largest equestrian center with 52 horse stalls, 100 miles of trails, and a 29,000-square-foot riding arena. Rides range from short trail walks along a creek to a six-hour Frontiersman Ride that crosses the Blackfoot River and climbs 1,000 feet to breathtaking lookouts. Since Paws Up is located within a cattle ranch, there are opportunities for cattle drives and unique pastimes like cow croquet, which was invented here.
A favorite for all ages is ATV touring. These allterrain four-wheelers will take you just about anywhere, including a ghost town dating to the late 1800s. Garnet was a mining town in the Gold Rush days, and you can see evidence of its heyday before it was abandoned. The general store still contains relics of the era, and the saloon is so well preserved you might be tempted to order a drink—in a dirty
glass, of course. Whether on- or off-road, every ATV adventure comes with an adrenaline rush, which inevitably leads to great stories by the fi re.
And then there’s the food. Be prepared to taste real Big Sky Country cuisine, prepared with foraged ingredients like huckleberries and locally sourced meats and freshwater fi sh. Not to be missed: the Chuck Wagon, an authentic dude ranch cookout. Feast on tomahawk chops, ribs, and Dutch-oven cobblers while you work on your lasso and hatchetthrowing skills, or chill out on a wagon ride with a driver who deals out local lore and hums cowboy tunes. Change sets the course for the future— something that the venerable Ritz-Carlton clearly understands.
The Ritz-Carlton Golf Resort, Naples first reinvented itself in 2021, when it debuted a 14,000-square-foot aquatic play area called The Reservoir. It features a 600-foot lazy river, kiddie splash zone, and three waterslides. Also poolside: Private cabanas at the adults-only pool and the Ría outdoor restaurant focused on diverse Latin American flavors from Mexico, Peru, Argentina, and wherever else executive chef Aldo Novoa Rodriguez takes his inspiration for seasonal menus. Whether you order the tacos de camarón estilo Baja stuffed with beerbattered shrimp or bife de chorizo 12-ounce New York steak, be sure to finish with the house-made flan with horchata ice cream and fresh, hot churros with abuelita chocolate sauce.
These new amenities are an inescapable draw for intergenerational families since there are likely to be non-golfers in the group. On a cloudless summer day, smiles were aplenty as grandparents emerged from the lazy river and siblings splashed down a tandem slide. Children stood excitedly at the free sunscreen stations in anticipation of afternoon fun.
But back to golfers. The resort is home to the Tiburón Golf Club’s pair of 18-hole signature Greg Norman courses that host the PGA Tour QBE Shootout and LPGA CME Group Tour Championship each year.
Another change came in December, when the resort announced its name change to The RitzCarlton Naples, Tiburón to encompass a broader
experience, according to the resort. In addition to tennis drills and fitness classes, these experiences include a virtual reality entertainment lounge, live music at the Bella Vista Lounge overlooking course greens on weekends, and complimentary, 45-minute “lifestyle” photo shoots. Morning people will appreciate the Early Bird Tour golf cart excursion along the certified Audubon Cooperative Sanctuary courses that kicks off at 7 a.m., before golfers tee up. An alternative is to drowse lazily before heading to the breakfast buffet at Lemonía—which evokes an Italianate bistro at this Mediterraneandesigned property—and then burning the calories on the resort’s bicycles.
There’ll soon be more in store for visitors to the 20-year-old resort. As part of its evolution, the guest rooms and suites are being updated (to be unveiled in 2024). The facade’s new paint job is expected to be completed this month and another restaurant by chef Rodriguez will open by year’s end.
At press time, the free shuttle to The Ritz-Carlton’s beach resort, which was undergoing a major renovation when it was badly damaged during Hurricane Ian in September 2022, was not operating. When it does reopen—scheduled for March— those staying at The Ritz-Carlton Naples, Tiburón can revel and relax in cabanas along the Gulf of Mexico, yet another family attraction. The number 707 has quite the provenance. It’s best associated with Boeing’s legendary jetliner, once flown around the globe by the likes of Pan Am, TWA, and John Travolta. It’s also the area code for some of the world’s greatest wineries, nestled in Napa, Vallejo, and Sonoma. Then there’s its spiritual significance as a so-called “angel number.”
But for lovers of high-performance luxury automobiles, 707 is going to have an even more mouthwatering significance: It’s the name of Aston Martin’s new flagship DBX SUV, the DBX707.
Here, the 707 signifies the spectacular power output of the twin-turbo V8 nuclear reactor lurking under that curvy hood. Over in Europe, it’s 707 PS, short for Pferdestärke, which is the metric measure of horsepower. Here in the United States, the output is actually 697 hp, though it’s as close to a nice,
round 700 horseys as not to matter.
That makes this firesnorting Aston the world’s most powerful luxury sport-utility vehicle. It’s more powerful than Lamborghini’s 657-hp Urus Performante, more potent than Porsche’s 670-hp Cayenne Turbo S E-Hybrid, and considerably beefier than Bentley’s 626-hp Bentayga Speed.
In the Aston, the source of all this power is an upgraded version of the DBX’s Mercedes-AMG-sourced 4.0-liter twin-turbo V8. Equipped with deeper-breathing turbos, redesigned induction and exhaust systems, and a witch’s brew of engineering wizardry, it raises the stock DBX’s 542-hp output to that 707, sorry, 697-hp level. To add to the fun quota, the DBX’s 9-speed automatic transmission has been ditched in favor of a
rapid-shifting, AMG-sourced version with Race Launch Control for truly breathtaking, off-the-line acceleration.
To showcase all this force, the 707 gets some cool visual muscle to enhance that already drop-dead-gorgeous bodywork. The trademark Aston grille is now 27 percent bigger for ingesting even more engine-cooling H2O, and it’s surrounded by acres of carbonfiber intakes and splitters. At the rear, twin exhausts have been replaced by a quartet of menacing pipes, with a longer roof spoiler for better aero. Throw in a set of optional 23-inch black rims—22s are standard—paint numbers on the doors, and this new Aston
wouldn’t look out of place on the front row at Sebring Raceway.
Climb aboard, buckle up, and punch the start button high in the center of the dash to hear that big V8 roar. And yes, this new 707 is insanely fast. Fast as in zero-to-60-mph sprints in a mere 3.1 seconds. Or zero to 100 in just 7.9 seconds. Top speed? A nontrivial 193 mph.
But the true beauty of this he-man Aston is its duality. Select the GT drive mode and the 707 calms and quietens for those times when you don’t want to drive like Mario. Of course, Sport and Sport+ are a click away to bring back the excitement.
What is most staggering is the 707’s sheer nimbleness and agility through curves. With air suspension and an electronic anti-roll system, body lean is almost eradicated. Throw it into a tight curve and it just sweeps around.
Inside, the cabin offers the kind of handcrafted luxury and style you’d expect from Aston Martin. There are acres of perforated,
double-stitched Bridge of Weir leather, genuine carbon fiber, and lots of choices for funky-colored seat panels.
Alas, Aston has to stick with lots of handme-down Mercedes technology, so the 10.3inch display looks and feels like something out of the Dark Ages. Plus, the teeny buttons on the wheel and center console were surely designed for the fingers of a 3-year-old.

But as for owning a load-carrying, family-hauling sport ute that really thinks it’s a supercar, that’s just priceless. «

It’s not what you’d call a great day for boating. A feisty 25-knot blow is frothing up gnarly, 6-foot, white-capped swells in the Atlantic waters off Fort Lauderdale Beach. As we poke our nose out of Lauderdale’s cruise ship channel into the ocean, it feels like we’re in an episode of that Haulover Inlet show on YouTube, about to get slammed by confused rollers lunging every which way toward us.
Nothing to be concerned about here. We push forward on the throttles, feel the thrust of 3,200 horsepower, and in seconds we’re slicing and dicing the waves at an impressive 32 knots, water cascading off each side of that towering bow.
This is the sleek and sexy Pearl 72, an ultra-luxe, design-focused mini superyacht brimming with innovation. It is the latest debut from British boutique builder Pearl Yachts, which has been around since 1998 and today offers a lineup of flybridge motor yachts that includes a 62, an 80, and a 95. It pulled the wraps off this all-new 72-footer at last year’s Fort Lauderdale International Boat Show, and we were given the chance to put it to the test.
See the 72 at the dock outside Lauderdale’s Boatyard eatery and she exudes high style. She’s from the drawing board of longtime Pearl naval architect Bill Nixon, who seems to have focused on filling the superstructure with swaths of dark-tinted glass—from floor-to-ceiling saloon windows, to oversize windshield panes, to mile-long windows along the hull.
And the hull is full of cool inventions, like the massive transom garage (unheard of in a 72-footer) that is big enough to swallow a Williams 345 jet tender and a Jet Ski. There are also electric drop-down side sections just ahead of the swim platform where you can tie up those water toys.
Best seat in the house? That would be on the foredeck with its sofa, table, and vast sun pad big enough for an army of sun worshippers. Second best seat? Up on the flybridge behind the wheel.
So much thought went into the flybridge layout, with its full outdoor kitchen, U-shaped sofa alongside the helm, and even more sun pads at the back. Another cool feature is the industry-first, multi-positional,
powered sunshade in the flybridge with louvers reminiscent of extra-large Venetian blinds.

But it’s inside the Pearl 72 where the style and innovation really shine. The whole interior is the creation of British designer to the stars Kelly Hoppen, who has channeled the vibe of a hip Manhattan loft. In the saloon, that means a central, full-beam galley with the dining area way forward under that huge glass windshield, plus a sofa and chairs close to the back deck and sliding rear doors to facilitate indoor/outdoor living. There’s another surprise on the lower deck: twin master cabins. They’re perfect for when two couples are cruising, so nobody ends up feeling like a second-class citizen.
Easing into the narrow canal leading out into the Intracoastal Water-
way is a breeze thanks to the bow and stern thrusters. Standard power for the 72 is a pair of 1,400-hp MAN V12s, though most buyers are opting for the optional and highly desirable twin MTU V10s packing 1,600 hp apiece. Flat out they’ll punch the Pearl to that 32-knot top speed, or cruise serenely at 25 for a range of around 250 nautical miles.
The mastery of that hull design comes into its own when you spin the wheel hard over for a series of tight figure eights. Even in those big swells, the 72 feels rock solid, unperturbed, and super responsive to the helm.

MALLMANN, CHEF SEBASTIÁN BENÍTEZ ISFire creates while it destroys, an element that has been revered for millennia. Fire illuminates, gives us warmth, and allows us to cook. These days, when most of us think of fire, we think of sitting around it with mulled wine and a s’more. But fire in its purest form is a profound necessity that enables life to flourish. It has sustained the people of Argentina for thousands of years, with Argentinians fostering a rich cultural tradition of cooking meat by flame across the country’s varied and rugged terrain.
Celebrated Argentine chef Francis Mallmann rose to fame by honoring and elevating the fire-focused cooking methods he learned as a child in Patagonia—and introducing those techniques and flavors to the masses. Lucky for South Floridians, Faena Miami Beach debuted Mallmann’s restaurant, Los Fuegos, eight years ago with the help of chef de cuisine Sebastián Benítez. A Buenos Aires transplant who worked at the Argentine
capital’s Faena Hotel nearly from its inception, Benítez was ready for a new challenge and jumped at the opportunity to open the brand’s next property in Miami Beach.
Mallmann’s passion for cooking over fire is rooted in Argentine gaucho culture, the nomadic horsemen of the eighteenth and nineteenth centuries who are frequently compared to America’s cowboys. Living off the land, gauchos relied on fire to cook the animals they hunted. Building the fire, preparing the meat, and then slowly cooking it was all part of their tradition. There was no hustle, no other tasks to complete—just the primitive notion of sitting by the fire while tending to its flames.
It might be easy to light a match and start a fire, but properly cooking on fire takes some know-how. Still, the culinary world initially underestimated Mallmann’s cooking. While some saw only burnt food, others began to understand its beauty and the harmony
that’s necessary to achieve it—the balance between charred and raw or crispy and soft, for example.
“You really need to cook with all your senses—looking, feeling, smelling, listening,” Benítez says. “It’s not easy, and you really need to be present in that moment.”
Cooking outdoors—as Benítez does each week for Los Fuegos’ Sunday asado—comes with its own set of challenges. Monitoring the wind’s direction, for instance, is vital. If left to its own devices, a draft could easily redirect the heat and, even after countless hours, the meat could still be raw.
In conjunction with Argentina’s tradition of cooking over fire, Mallmann also spotlights different ancient cooking modalities and has even created one of his own. He translates the Argentine native techniques of slow cooking and salt baking into his cuisine with salt-crusted fish and his world-famous fiery dome. The dome (Mallmann’s own invention) is inspired by the gaucho’s way of slow cooking an entire animal on crosses strategically placed around an open fire, Benítez explains. The contraption is handmade of metal and can accommodate a variety of proteins, vegetables, and even fruits hung around the fire on hooks or grilled on the dome’s lower portion.

But it’s not a cooking method that works for all types of food, Benítez adds. Pieces of meat must be thick, and fruits and vegetables need to be hard, like pineapple, cauliflower, or cabbage. Meat is suspended high above the fire so it gets a full, smoky flavor. As the hours progress, it’s moved closer to the heat to cook through. Just before serving, it’s placed right next to the flames to achieve Los Fuegos’ famous char.
“After working with Francis, I learned everything can be cooked over the fire—bread, fruits, vegetables, seafood,” Benítez says. “With the correct technique you can cook almost
everything over the fire.”
Most Argentine homes have a barbecue grill, so cooking over fire is ingrained early. The weekly Sunday asados—or barbecue dinners—are their own quasi-religion, never to be missed and always with a focus on friends and family. For Benítez, the family-style meal is complete with a few choice proteins his dad grills such as chicken, chorizo, and steak, plus a fresh salad, bread, and a bottle (or two) of red wine, of course. At Los Fuegos, Benítez strives to give guests a similar experience, complete with roaring fires and endless delicacies.

1. Patience is key: Embrace the fact that cooking over fire isn’t fast and furious. It takes hours. Accept that, Benítez says, and the outcome will be worth it.
2. Practice makes perfect: There’s no manual Benítez can share. He says proficiency comes from making mistakes and learning from them.
3. Commit to the investment: Slow cooking needs an investment—in quality produce and proteins as well as time.
4. Build your burn: Start with hardwood charcoal, which offers an even heat
and temperature, making it easier to cook with than wood.
“You need to understand the language of the wood that is totally different than charcoal,” Benítez says. So, work your way up to playing with wood.
5. Choose the right wood: Once you’ve graduated to wood, Benítez suggests using oak, hickory, or mesquite. Build a chimney-like structure with the logs, making sure there’s nothing in the middle of it. In the hole, place a few pieces of paper and light the fire from there. Once the wood is lit, you
can add charcoal in the middle. 6. It’s all in the prep: First, make sure you have the right cut of meat. For slow cooking, choose a thick cut, like brisket. Then, consider your seasoning. In Argentina, Benítez explains, meat is only seasoned with coarse salt before cooking. That means no brining, rubbing, or marinating. “We’re not really famous for putting too much stuff on the meat,” he says. Finally, there’s temperature. Ensure the meat is at room temperature before placing it over the fire.

“It’s a very genuine experience of what it feels like eating in Argentina,” Benítez explains. “That’s why we do it on Sunday and not any other day. It really brings the vibe of a genuine Argentinian table.”
For Benítez, his pièce de résistance is cooking fish over the fire. It’s a difficult task due to the inherent fragility of the fish, he says, but it’s a challenge he enjoys. For grilling novices, Benítez suggests starting with meat—specifically easy cuts like tenderloin, which you can quickly grill on both sides to the desired temperature. This way, you can experiment and practice tending to the fire. Once you’ve nailed the smaller cuts, graduate to thicker selections like short rib or brisket.
A grill and its roaring flames aren’t just a carnivore’s delight—fruits, veggies, and desserts needn’t be an afterthought. One of Mallmann’s most famous desserts is grilled pineapple, which is brined in vanilla, spices, and simple syrup for 24 to 48 hours and then hung to grill in the dome. The balance of its sweet flavor with its charred exterior results in a concentrated smoky flavor reminiscent of mezcal, Benítez describes. “When you serve it with ice cream, believe me, there’s not many things more delicious than that,” he says. Home chefs can grill just about any fruit can. Try throwing a banana on the grill until the skin gets dark and starts to peel away. Serve it with vanilla ice cream, and thank Benítez later.
Although chef Benítez often doesn’t even have time to eat while running his kitchen, he appreciates the simple pleasure of popping out of the trenches to survey the dining room and see guests savoring the food. “It’s not very romantic in terms of how much we enjoy the food, but there’s a lot of joy in giving,” he says.
His personal indulgence comes when he’s outside, under the sprawling sky, building the fire. It’s a time for him to disconnect, concentrate on the fire’s hypnotic flames, hone his craft, and just be one with nature. «

No one likes the droning, swarm-of-bees sound of a Jet Ski at full tilt—not to mention the stinky aroma of the unburned hydrocarbons it emits. Make it all-electric and the droning goes away. So does the smell. People on the beach will smile again.
This is the thinking at Montreal’s Taiga Motors, which recently introduced the world’s first series-production, battery-powered personal watercraft (PWC) it calls the Orca.
There’s the option of 90-hp or 160-hp motors, both juiced by a 24-kWh lithium battery bank that sits low in the craft for added stability. With the 160 you’re looking at a top speed of 54 knots and
a range of 28 miles. Trust me, 28 miles on a Jet Ski is plenty.
When it comes to charging, a Level 1 socket will top off the batteries in 14 hours, or in 3 and a half hours with Level 2. A DC fast-charger will take the batteries up to 80 percent in 30 minutes.

Rand’s newest and most exciting offering is the allelectric Escape 30 center console, which gives owners the choice of three power options, from a modest 140 hp, to a mid-range 355 hp, to an insane 616 hp that delivers a 55knot top speed. All this is built into a hull that uses lots of
High-tech Swedish boatbuilder Candela is creating waves in the world of all-electric dayboats. Its latest is the 28foot, all-carbon-fiber C-8 with remarkable foiling technology.
Power up to around 16 knots and the boat rises on its two forward foils and single rear foil to cruise at 24 knots with bursts up to its 30-knot top speed. Its super efficiency is partly due to its single electric motor that’s mounted in torpedolike housing in the rearward foil.
And that efficiency is going to be
heightened with the partnership between Candela and the Swedish carmaker Polestar, which will provide its battery and smart-charging systems. Polestar’s know-how should improve on the C-8’s current range of around 57 miles at cruising speed.

Everyone comes to Miami for a reason. For some, it’s a political safe haven. For others, it’s a respite from brutal winter weather up north. For photographer Alessandro Sarno, Miami offered a sanctuary where he could press a much-needed pause button on his life.
The Italian-born photographer was working in London when he was dealt two very personal losses. Realizing that “it was time to restart and leave everything behind,” he recalls, Sarno decided to trade the grayness of London for the glitz of the Sunshine State.
Having fallen for Miami as a young man watching episodes of the ’80s series Miami Vice, the Magic City was an obvious choice. “I loved the bridges, the bay, the jungles, the architecture, neighborhoods, neon signs, flashy cars ... and the hot chicks,” he says with a laugh. “I loved Miami way before I stepped on its soil for the first time. ... I remember being fascinated by it—and I still am.”
Upon his arrival, he slept on a friend’s couch and spent his days cruising the streets of Miami on his plum-colored Vespa, exploring the unassuming corners, lush landscapes, and tropical modernist architecture of his adopted home.
After a few weeks, he moved into The Betsy, South Beach’s iconic art hotel, where he says he dreamt of having an exhibition. Many years later, Sarno’s dreams would become reality after a chance encounter with Lesley Goldwasser, the hotel’s co-owner and a renowned art collector, who gave Sarno a solo exhibition featuring his photographs of the Bahamas.
Sarno’s first trip to Miami coincided with the beginning of many visits to the lesser-known Bahamian islands. Capturing the daily lives of the Bahamian people became an obsession, as he recalls being “drawn to the intricacies of Bahamian life: worship services, concerts, funerals, civic activities, and all the little details which emerge in between.”
The extended stays eventually resulted in a collection of coffee-table books and photographic essays on the Bahamas, including Eleuthera: The Garden of Freedom, Exumas: The Kingdom of Blue, Cat Island: Diamonds and Rust, Exuma Cays: Land and Sea Park, and his travel guide, White Bull on the Highway
Meanwhile, as his love affair with Miami persisted and over the course of the next 15 years,
Sarno would return to Miami to document its people and places with his camera. These photographs would eventually become the ultimate love letter to the city, in book form. The idea for Miami: Contemporary Visions from a Tropical Jungleland came to Sarno while he was visiting friend (and now publisher) Stefano Carniato of Giusto Libri.
Soon after, during a visit to the HistoryMiami Museum, Sarno discovered the Miami Stories series, a collection of first-person narratives about Miami’s

past, present, and future shared through writings, video submissions, and audio recordings. “An idea sparked in my head to accompany the photos with real-life stories,” Sarno remembers.
To achieve this, he reached out to the museum’s folklife curator, Vanessa Navarro Maza. “We collaborated to find stories in our archive related to the themes [in] his photographs,” Maza says. Through QR codes printed throughout the book, readers can immerse themselves in the sights and sounds of the city, a goal for Sarno who wanted to
create “a book that satisfies all the senses. I thought about the scent, but that became too complicated,” he says, laughing.
Miami: Contemporary Visions from a Tropical Jungleland includes influential moments in and snapshots of the city’s history, such as the establishment of Little Bahamas, ancient ruins from the Tequesta tribe, the rebirth of a Cuban brewing tradition, Miami’s segregation era, and an incredible underwater world beneath the city’s urban development. Jungleland also features stories and commentary from celebrated Miami natives—including celebrity restaurateur Michelle Bernstein, who praises Sarno’s work. “This
is an epic tale of a fascinating city—our city—and its evolutionary narrative,” says Bernstein. “His images flood my senses with memories [from] every decade of my life here in South Florida.”
Other famous contributors include Cocaine Cowboys filmmaker Billy Corben, who notes that “Miami has always been a tale of (more than) two cities: haves and have-nots, natives and immigrants, past and future, paradise and swamp. That dichotomy, tribalism, and allure are captured vividly, vibrantly, and occasionally tragically by Alessandro’s penetrating eye.”
Adding to Jungleland’s full-spectrum experience of photography
and recordings from Miami Stories are poems by Richard Blanco, who was the poet at President Barack Obama’s 2013 inauguration, and Oscar Fuentes (aka the Biscayne Poet), whose verses elicit a warm nostalgia from both natives and transplants alike.
As for Sarno, his own Miami story came full circle when he debuted his book this past December to a packed house back where it all began: South Beach’s The Betsy Hotel. “I would’ve never guessed that all the time spent cruising around Miami on my Vespa with my camera would become the invaluable visual treasure it is today,” he says. Ingredients
1 cup ripe Campari tomatoes
1.7 fl. oz. Ketel One Vodka
2 tsp. white balsamic vinegar
Pinch of sugar
Two pinches of salt and pepper
Ice 1 cherry tomato for garnish
Thoroughly muddle the Campari tomatoes in the shaker. Add the vodka, balsamic vinegar, sugar, and one pinch of salt and pepper. Add ice and shake vigorously. Double strain into a martini glass. Shortly after stepping through the narrow entryway of his clients’ future Coral Gables home, Carlos Rodriguez—co-owner, along with Leandro Lantigua, of Miami’s ModPlay—had that sixth-sense jolt all interior designers hope for when approaching a new project. And although the split-level spread had many issues, including a sprawling open floor plan with low ceilings and little architectural character, Rodriguez knew he was up to the challenge.“I felt a kind of pressure from both sides, then the house suddenly opened up,” he explains. “I was immediately connected to how light it was and how fresh it felt.”
When the client learned that Rodriguez had been on the design team of the Faena Hotel
Miami Beach for six years before launching ModPlay, he requested a bar to showcase his vast tequila collection. Rodriguez delivered with a spirits corner marked by the Art Deco touches that fans of the Faena will instantly recognize. Steps away in the dining room, a massive live-edge table can accommodate both dinner parties and large family meals. Rodriguez maintained the ecochic vibe of the space with rustic pendants made from rope and capiz shells.
Of all the rooms in the house, the kitchen was the biggest quagmire—and Rodriguez’s favorite space to tackle. The remodeling plan included black-and-white checkerboard tile flooring and a wallpapered breakfast nook.
