This is one of those diamonds. In GIA’s history, very few polished diamonds of gem quality have surpassed the 100-carat mark. Already part of an elite group due to its size, the highly transparent nature of this diamond adds to its rarity. This pure diamond is classified as type IIa which scientifically means it is lacking measurable levels of impurities like nitrogen, thus giving this diamond its pure white color.

This diamond was fashioned into a classic old world cushion cut, with its smaller table and open culet. Its faceting bears resemblance to other worldrenowned diamonds, such as the 45.52 carat Blue Hope Diamond and the 105 carat Koh-I-Nur.

A Dining Renaissance

Dining in the Palm Beaches has always been something of a sport, with points earned for scoring tough reservations, being seen at the right places, and being the first to discover under-the-radar gems. This year, that’s true more than ever. Not only has the restaurant industry emerged from the COVID bubble, it has come back with such vibrancy you’d never believe we’re on the heels of a pandemic. This month, we’ve asked some of the foodies of the millennial generation, who were among the earliest patrons breathing life back into the restaurant scene, to share their take on where to go for brunch with the besties, who’s brewing the best coffee in town, which dishes are most worthy of an Instagram post, and more. Come along as five young “hosts” take us through their favorite haunts in “The Millennial’s Guide to Dining in Palm Beach County,” starting on page 62. In Palm Beach, the youth revolution has such momentum that it has been dubbed a “youthquake.” The term is not new—the ever-chic Diana Vreeland coined it in 1965, when she was editor in chief of Vogue—but it certainly has never gained this much traction here. Now, thanks to a growing segment of fashionable, socially active, and well-connected youthquakers, the culture is shifting—and our cover this month reflects it. Michael Gregson Reinert, Joanna Gong, Samantha Cerny, Will Buchanan, and Devon McCready were gracious enough to sit for our photo shoot at Le Bilboquet (at midnight, no less) to document this moment in time. Thanks to the artistry of Joriann Maye-Keegan and a full production crew, the cover speaks of the exciting new energy percolating in Palm Beach. This concept comes alive in our fashion pages, as well. Influencer Bettina Anderson dressed to the nines and visited four area restaurants for a stylish takeover. In “Feast Your Eyes” (page 70), you’ll see Bettina making pizza at Elisabetta’s, crooning with pianist David Crohan at Café L’Europe, using the bar at La Goulue as her personal catwalk, and mingling with the marine life at 1000 North. As a creative outlet beyond her corporate career at Nestlé, Boca Raton resident Cecelia Feathers launched a mobile flower truck, the first of its kind in the area. “I am not a florist by any means, but I’ve always loved pop-ups, flea markets, and community events,” says Feathers. “I would go to these events all the time. For years, I found myself saying: ‘One day I’m going to do this,’ and ‘One day I’m going to do that.’ A mobile business has always been one of those ‘one day’ things for me.” Last year, she decided to turn “one day” into “today.” Feathers found a Japanese Kei truck, converted it into a floral fantasy on wheels, and soon booked her first events, including a pop-up at Rosemary Square. Now Birdie Floral Truck makes appearances around Palm Beach and Broward counties with Feathers’ signature collection of fresh and dried flowers and stems, pampas grass, and other unique items. NEW NEIGHBORS West Palm Beach is layered with distinctive neighborhoods, but the latest to make its mark is the Norton Dining and Design District, or the Norton District for short. A project initiated by the Dixie Business Association, the Norton District represents businesses along South Dixie Highway between Okeechobee Boulevard and Belvedere Road, including the Norton Museum of Art, Hive, and Dixie Dining Corridor restaurants such as Table 26 and Civil Society Brewing. As part of an ongoing branding campaign, with a website soon to come, banners highlighting the designation (using the Norton Museum’s colors and font for the sake of cohesiveness) were recently installed along South Dixie Highway.

THE GOODS

MAY MUST-HAVES Every item by Cecy, Palm Beach Gardens resident Cecy Martinez’s luxury bag and accessories brand, honors the classic glitz and glamour of 1950s Hollywood, but one line is particularly eye-catching. Martinez’s sustainable fish-skin bags are made from pirarucu, a massive freshwater fish native to the Amazon. The local indigenous population have long eaten pirarucu, but before they began to be repurposed, their skins were discarded. Now, after consumption, the scales are trimmed, dyed, and transformed into a luxurious leather alternative.

Martinez works only with ethical sources who harvest legally and in accordance with all wildlife regulations. While she will continue to stock bags made from pirarucu and other exotic skins, additional fish-based leathers are on the horizon, too. Her newest line features high-grain Canadian carp and perch skins in various finishes such as pearlized, suede, and matte. HISTORY in the Making WITH A REVERENCE FOR THE AREA’S PAST, PLANS ARE IN MOTION TO REVITALIZE WEST PALM BEACH’S HISTORIC NORTHWEST

In the spirit of renewal, the West Palm Beach Community Redevelopment Agency’s various revitalization projects in the Historic Northwest District will premiere this year. The cornerstone of the CRA’s work in the area is the multimillion-dollar revival of the Sunset Lounge, a jazz landmark that dates to 1925. During the racially segregated Jim Crow era, the Sunset Lounge belonged to the Chitlin’ Circuit—venues where African American entertainers could perform safely— and drew notable acts like Ella Fitzgerald and Louis Armstrong. Over the years, the hot spot fell into disuse and became a relic. The project aims to honor and restore the club’s musical roots, reawakening it for a new era in Rendering of Heart & Soul Park, as seen from above

both music and racial relations. Once complete this summer, the renovated lounge will include a complete rehabilitation of the existing barrel-roofed building. The first floor will feature a bar and restaurant, while the second will return to its original role as a ballroom with a stage and third-floor mezzanine. In addition, a new two-story building to the east will house a kitchen, dressing rooms, and a box office, as well as a rooftop bar, patio, and garden. Across from the reinvigorated Sunset Lounge will sit the music-themed Heart & Soul Park, which will harmonize with the lounge by providing a place for the public to enjoy lush green surroundings and water

Heritage Tourism Many of these developments, most notably the Sunset Lounge, will position the Historic Northwest as a destination for cultural tourism, also called heritage tourism, particularly when it comes to Black history. Across the way is the pedestrian-oriented Styx Promenade project, which aims to preserve the legacy of the various pioneers who helped establish the area. Construction recently began to redevelop several buildings into replicas of the area’s traditional shotgunstyle homes, which will serve as mixed-use concepts housing eight local businesses. Also in nearby redevelopment efforts, construction of a redesigned Currie Park is set to begin next year. Another project, Mickens Village, remains in the “concept” phase for now, but the intent is to create a bed and breakfast and a museum chronicling local Black history. The dirt on pesticides and the war of organic versus conventional By Ivey Leidy Photography by Kent Anderson Research has long shown that pesticide residue can contribute to health issues. These chemicals act as endocrine disruptors, meaning that when they enter the body they can be mistaken as hormones, mimicking and disrupting the endocrine system. The endocrine system is an intricate network of glands and organs that produce hormones that carry out the majority of our

34

bodily functions. The hormones act as messengers to our brains and the rest of our organs and evoke corresponding responses. The hypothalamus gland, for example, controls water balance, sleep, temperature, appetite, and blood pressure. The thyroid is responsible for our metabolism, while the pancreas takes care of digestion and produces insulin to regulate blood sugar. The endocrine system also includes our reproductive organs, as well as our pituitary, pineal, thymus, and adrenal glands. When faced with disruptors, the signals from our endocrine system can become mixed, affecting everything from metabolism to reproductive health. With chronic exposure, they may cause serious health issues. Pesticides collect over time and are stored in the colon. That one piece of conventional fruit is not the problem, but the buildup is. The best way to limit your exposure to pesticides is to choose organic. Almost 70 percent of produce in the U.S. contains pesticides. Luckily, the Environmental Working Group (EWG) releases two lists every year: the Dirty Dozen and the Clean 15. The Dirty Dozen covers the conventional produce that carries the most pesticide residue. No. 1 on the list is strawberries. Studies show that one strawberry can have residue from 20 different pesticides. The Clean 15 outlines the conventional produce that is least likely to contain pesticides.

The benefits of eating organic don’t end at reduced pesticide exposure. Organic produce has 20 percent more antioxidants than conventional and no GMOs (genetically modified organisms), making them easier to digest and their nutrients easier to absorb. Organic farming also produces less greenhouse gas emissions and better soil quality as it doesn’t result in pollution from run-off pesticides. Eating in season can also help you get the most out of your produce. Because it’s being picked at peak ripeness, in-season produce has better flavor. These items are less expensive, given their abundance. They’re also significantly more nutrient dense as they aren’t being transported for weeks. Remember: The longer a fruit or vegetable sits on a truck or shelf, the more nutrient loss. We, as humans, are designed to eat seasonally. In the fall and winter, fruits and vegetables rich in vitamin C grow to strengthen our immunity. In the spring and summer, moisture-packed fruits and vegetables grow to ensure we are hydrated. Read on for more helpful produce insight by the bite, as well as my recipe for a beautiful seasonal vegetable salad.

SPRING VEGETABLE SALAD THIS IN-SEASON, ORGANIC VEGETABLE SALAD MAXIMIZES NUTRIENTS AND ENHANCES HYDRATION INGREDIENTS 3 large handfuls of baby lettuces (such as, arugula or mixed greens) 1 large zucchini 2 radishes 1 bunch of asparagus, roughly chopped

1 tbsp. olive oil 2 tbsp. water 1/4 cup fresh mint Zest of 1/2 lemon 1/4 cup walnuts

LEMON VINAIGRETTE INGREDIENTS 2 tbsp. lemon juice (1/2 lemon) 1 tbsp. Dijon mustard

1 tsp. raw honey 1/2 shallot, thinly sliced and minced (optional) 1/4 cup olive oil Salt and pepper to taste

Whisk together all ingredients, adding in olive oil last and gradually to emulsify.

SHOPPING TIPS 1. Organic produce is labeled with a five-digit code beginning with nine. 2. Conventional produce is labeled with a four-digit code beginning with a three or four. 3. If the skin/husk is thick and tough like an avocado or a banana, it can be eaten conventionally, as the pesticide sprays are less likely to penetrate that thick skin.

In a lidded sauté pan, add the asparagus, olive oil, and water. Cook on medium for 5 minutes with lid on or until tender but still vibrant and green. Using a vegetable peeler, peel zucchini into ribbons. Using a mandolin or sharp knife, thinly slice the radishes. Arrange salad beginning with baby greens. Add cooked asparagus to the center. Arrange zucchini ribbons and radishes around the asparagus. Garnish with mint leaves, lemon zest. and walnuts. Drizzle with lemon vinaigrette.

With its stunning design—and nontrivial $60,000 price cut—Karma Automotive’s new GS-6 is HARD TO RESIST By Howard Walker Forget that this curvy, sinewy-bodied Karma is a plug-in hybrid. Or that there’s a fully electric version around the corner. Or that its dashboard can be made from timber salvaged from California wildfires. No, what will have your head rotating like the gal in The Exorcist is the car’s breathtaking shape. The most beautiful vehicle in the world? This is surely one of them. Maybe it’s all those rollercoaster swoops and sweeps over the giant 22-inch wheels. Or that raked-back windshield or ski-slope-like rear screen. Or the way the body looks like it’s been stretched like a dollop of Play-Doh. Remember, this is a car that’s almost as long as a BMW 7 Series but as low as a Porsche 911. Gaze at it in profile and it resembles a hip-high Italian supercar—with four doors and a trunk. But first, a little history lesson. Back in 2011, the LA-based Danish car-designer-turned-entrepreneur Henrik Fisker began building his 56

Fisker Karma plug-in hybrid. Before the company went belly-up in 2013, he’d made around 2,450 cars. Enter the Chinese Wanxiang Group, which snapped up the assets, kept the gorgeous design, and renamed the car the Karma Revero. The corporation started producing the modified version at a new factory in Moreno Valley, California, in 2016. Alas, a crazy-ambitious $130,000plus price tag, a punishing safety recall, and constant funding challenges meant the car never really gained traction—or sales. Fast-forward to 2021 and all has changed. After a $100 million cash infusion last summer, a solid business plan, and a ramp-up in dealers—we now have enthusiastic Karma retailers in Boca Raton, Fort Lauderdale, Miami Beach, and Naples—Karma is back. Arguably the biggest news is the smarter pricing. The newly launched Karma GS-6 plug-in hybrid has a starting sticker of $85,700. That’s down

The Right FORMULA Formula Boats’ SENSATIONAL new 53-foot 500 SSC family cruiser debuts Mercury’s 600-hp V-12 Verado outboard By Howard Walker The ghost of Don Aronow must be smiling at the awe-inspiring sight of Formula Boats’ newest flagship, the 53-foot 500 Super Sport Crossover, spearing across the water at an insane 60-plus mph. Prior to creating such iconic brands as Donzi, Cigarette, and Magnum out of his gritty Thunderboat Row factory on 188th Street in North Miami, Aronow—the undisputed king of go-fast boats—founded Formula Marine in 1962. He sold the company two years later, but not before his groundbreaking 23-foot needle-nosed Formula 233 had dominated the Florida powerboat circuit, winning the 58

grueling Miami-Nassau and Miami-Bimini offshore races. Aronow lived and breathed high horsepower, so the mere sight of this new $2.8 million Formula 500 SSC would have had him salivating. That’s because hanging off the back of this sleek, stylish, XXL-sized bowrider is a quartet of 600-hp Mercury Verado V-12s. The 500 SSC has the distinction of being one of the first boats to not only be designed around these truly revolutionary outboards, but to offer them at all. These V-12s boast two-speed automatic transmission and a steerable gearcase—the en-

Formula calls the concept SmartZone; here it totals 40 linear feet of cockpit on one continuous level. The area under that vast hardtop is especially great. To open it, either power back the glass roof or lower the vertical glass sections between the cabin and the rear seating/eating area. And did I mention that the push of a button levitates a 65-inch flat-screen TV out of a cabinet? It’s ideal for watching the game or an after-dinner movie at anchor. While that huge rear swim platform (which totals 71 square feet) kind of looks like an afterthought, it does give easy access to and from the water. It also provides a place to stow a paddleboard or two—or a spot to simply stand and gaze at those mighty Verado V-12s. I recommend reserving a gazebo for smaller parties as it is outdoors with a beautiful view and a sense of exclusive seating. Everything on the menu is made fresh and ready for sharing. Island vibes: Mr. Mack’s Island Grill Mr. Mack’s brings the Caribbean feeling I miss by serving up authentic Jamaican cuisine. Its signature jerk chicken is prepared in the outdoor grill; order it with peas and rice, hard dough bread, or steamed vegetables. The location is small, with not much indoor seating, but you can sit outside on the patio or hang around the grill for what we in the Caribbean call a “lime.”

There’s definitely a secret ingredient in Aioli’s biscuits that makes them addictive. If it’s early in the morning or if you need an afternoon boost, order the crack coffee.

Hidden gem: 215 Speakeasy If you’re looking for a bar with a little mystery, look no further than this secret bar that everyone knows, developed by Vincent Toscano. He knows exactly what you need without having to ask.

Best place for a cheat meal: La Fonda Sports Bar I have to go back to my roots for this one—La Fonda has some very good Colombian food. I order the bandeja paisa, a traditional dish in Colombia. If you’re not in the mood to eat three pounds of food, the churrasco is really good, too.

Favorite brunch spot: Grato Grato does a lot of things right and brunch is no exception. The breakfast pizza is my go-to, as well as the omelet, which changes regularly.

Brewery: Civil Society Brewing Co.

This has been my go-to place for years. Civil Society brews all its own beer and is constantly collaborating with other breweries. I’m a huge fan of the Beach Access and a sour called Grandma’s Lemonade that is a must-have.

He used his own chai spice mix as the base tea and paired it with a Canadian maple whiskey to complement the rich flavors. A syrup made from lemongrass and hibiscus flowers yields undertones of fresh florals and bright lemon. The blue color comes from oat milk, which Cornell steeped with butterfly pea flowers. The Nomad Sake Mojito, by mixologist Vincent Toscano, begins with mint muddled with a raspberry tea–infused simple syrup, before adding sake and lime juice. enowned chef and culinary explorer Anthony Bourdain once asked a simple question: “What nicer thing can you do for somebody than make them breakfast?” For Jennifer and Omer Horev, a healthy breakfast has become a way of life, a business venture, and an opportunity to entertain friends and family. “Breakfast for us is the most important meal of the day,” says Jennifer, who serves as chief brand officer of Pura Vida, the couple’s health-conscious cafés with locations across South Florida, including one at Rosemary Square. “We sit down with no electronics and enjoy family time in our home.”

Omer and Jennifer worked together to organize the festivities, with Omer leading the kitchen and Jennifer working with Liz Ryan of Orange & Rose Events on the design. The meal began with passed hors d’oeuvres, including chia seed parfaits with granola (opposite page), and ended with croissants in flavors such as goat cheese, Nutella, and pistachio hazelnut.

Omer, Pura Vida’s chief executive officer, says that starting with healthy, casual food is at the center of everything—in his restaurants and his home. “It is most rewarding to get together with family and friends and start the day with a healthy meal,” he says. “That is very important to me.” Both Omer and Jennifer grew up in homes filled with food and entertaining. Born and raised in Israel, Omer recalls that, thanks to his mom and grandmother, cooking was everything. “We grew up in the beach town of Netanya near Tel Aviv,” says Omer. “For Friday night Shabbat, we had an open-door policy for neighbors, friends, and my grandparents. So food and hospitality are a natural for me.” Jennifer was born in Chicago (her grandparents owned a restaurant in Skokie) and raised mostly in Weston, Florida.

She learned about hospitality from her mother. “My mom taught me how to create comfortable spaces with a feminine touch and insisted I learn to put things back where they belong,” she says. But food and hospitality wasn’t the first career path that either Omer or Jennifer took. Instead, the Miami real estate market beckoned them. Good thing, too: The pair met when they were realtors working opposite ends of a transaction. Jennifer brought the buyer; Omer was representing the seller. “I believe Omer got the best deal of his life that day,” quips Jennifer. With the sale complete, Jennifer and Omer soon became a couple. But they’d had it with real estate and wanted a new adventure. So they pivoted, pursuing a healthy dining concept Omer had been conceptualizing. “I was looking for a great healthy breakfast place in Miami for myself and could not find one, so I thought about creating my own,” he says. “With the natural colors and vegetables that I loved in Israel, the idea of locally sourced, organic foods in a wellness hub concept was a no-brainer for me.” Omer started Pura Vida Restaurants—serving healthy breakfast options all day—in 2014; Jennifer joined the following year. The first location opened on Washington Avenue in South Beach, followed by outposts at the University of Miami in Coral Gables, Edgewater, the Miami Design District, PALMBEACHILLUSTRATED.COM | MAY 2021

Guests chose from a variety of libations, including Lulu’s Lemon mimosas, topped with blueberries and rosemary. The meal also featured a platter of soft-boiled eggs and salmon, as well as appetizers of hummus with pita.

West Avenue in South Beach, and most recently Rosemary Square in West Palm Beach (with new spots in Aventura and Fort Lauderdale coming soon). So when the couple recently invited a small group of friends to their waterfront home for a party, they decided to serve the most important meal of the day: breakfast. While Omer handled the bar, moved the furniture, selected the music, and took care of the dishes, Jen designed the decor, selected the flowers, and whipped up the eggs. Their home is airy and open, an indoor-outdoor masterpiece with whitewashed oak floors, lots of stone, plenty of natural light, and a backyard pool and patio area that overlooks the Intracoastal Waterway. “When we bought this house, our thoughts were about entertaining friends and family here,” says Jennifer. This includes regular visits from Omer’s two children, Emma, 9, and Adam, 7, from a previous marriage. Jennifer and Omer

The decor pulled the inside neutrals out with pops of color from Japanese blue tweedia, Italian ranunculus, dahlias, tulips, sweet peas, and blackberries. “I picked flowers from Anthology Floristry that speak to spring for the table’s centerpieces,” says designer Liz Ryan of Orange & Rose Events. “Breakfast should always feel bright and fresh.” On the tabletop, pops of green came from the linens by Freshly Set, with natural flatware from Pialisa, dinnerware from A Different Look, patterned green tumblers from Tavola Tabletop, and menu cards by Callie Buck. “To tie everything together, we pulled elements from the table linens onto the menu cards,” says Ryan. The menu of fresh, clean daybreak delights included avocado smash on toasted multigrain sourdough atop a wood board; smoked salmon, soft-boiled eggs, feta cheese, and tomatoes presented on a white ceramic platter; bagels and sliced sourdough in a black wire basket with spreads of

cream cheese and avocado smash; Jennifer’s herb salad, a blend of arugula, walnuts, dried cranberries, scallions, and cilantro with a honey lemon dressing; and an Israeli salad made of diced red onion, cherry tomatoes, Persian cucumbers, cilantro, and green pepper tossed in olive oil and lemon. What’s better than a breakfast party? A breakfast followed by desserts. Devoured by all, the sweet and savory offerings included goat cheese, Nutella, and pistachio hazelnut croissants from Pura Vida served on a threetiered gold stand, as well as a white cake with florals from Earth & Sugar displayed on a marble base. As the breakfast came to a close and Jennifer and Omer’s sated guests said their farewells, Scott Harris, a food entrepreneur and founder of Deliver Lean, summed the event up beautifully. “Omer and Jen are generous hosts who know how to take care of family and friends,” he says. “Real soulmates who work and share a life together, they are a very special couple.” « PALMBEACHILLUSTRATED.COM | MAY 2021

t used to be blue-chip bottles (classified Bordeaux, Premier and Grand Cru Burgundy, vintage Port and Champagne) that experts most prized—and that earned collectors credibility as they began the process of building a cellar. But all that has changed in recent years, as the Golden State has gained equal footing in the wine world. Thanks to the

rise of California’s cult Cabernets, suddenly Harlan and Screaming Eagle have become just as valuable as Lafite and Mouton. What follows is our roundup of vineyards and vintages emblematic of the newest batch of California collectibles. Like their predecessors, they can be expensive and difficult to find, but they will evolve over time and provide an exhilarating drinking experience.

VÉRITÉ

Pierre and Monique Seillan arrived in Sonoma in 1997 at the request of the late Jess Jackson, who wanted to make a wine as good as the legendary Château Petrus. Jackson had the deep pockets to make it happen, and Seillan supplied the winemaking talent. The result was Vérité (French for “truth”), a remarkable trio of wines that combine French sensibility with American charm—and boast an opulent mouth feel. Seillan picks the grapes before they become overripe, which yields high acidity, an appealing freshness, and a level of alcohol moderate by today’s standards. The Range: La Muse (93 percent Merlot), La Joie (84 percent Cabernet Sauvignon), and Le Désir (82 percent Cabernet Franc); all $375.

PROMONTORY When you’re Bill Harlan, you can afford to be fussy: You can purchase land in the wilderness of southwestern Oakville, wait for the vines to mature, and scuttle the entire first vintage (2008) if you don’t think it’s good enough. With his son Will installed as managing director, Promontory is now coming of age and promises to be every bit as amazing as both Harlan Estate and Bond. It’s all part of Harlan’s plan to establish a “California first growth” and a 200-year legacy. One and Done: The estate produces a single Cabernet Sauvignon, labeled (like Harlan and Bond) as a Napa Valley Red Wine; $700-$800.

Some translate the name as “word of mouth,” but it literally means “broadcasting from the hillside”—a good description of winemaker Eric Sussman’s (pictured right) graceful, artistic treatment of high-altitude Pinot Noir, Chardonnay, and Syrah. Sussman studied agriculture at Cornell and worked in France, Washington state, and throughout California before settling down in western Sonoma. His wines balance pure, vibrant fruit with an unmistakable sense of place. People collect wine for many reasons, but these are wines that collectors will actually buy and drink. OVID

Named for the Roman poet, Ovid is located high up on Pritchard Hill, which has been described as “Napa’s Rodeo Drive.” Ovid’s 15 acres of Cabernet Sauvignon and Cabernet Franc were planted in 2000, on rocky, iron-rich soil that gives the wine an earthy, mineral-infused flavor. In addition to having one of the best vineyard locations in Napa, Ovid has benefited from superstar viticulturalist David Abreu and famed consulting winemaker Michel Rolland. The result is a powerful, concentrated, and age-worthy wine that has fired the imagination of collectors. Roughly 1,000 cases are produced in a typical vintage, with most of it sold to a mailing list. Pride of Possession: Ovid Proprietary Red Blend ($325)

NICOLAS-JAY In 2011, entrepreneur and music producer Jay Boberg teamed up with lifelong friend Jean-Nicolas Méo (of Burgundy’s legendary Domaine Méo-Camuzet) to establish a small winery in Oregon. Pinot Noir is sourced from organic, biodynamic, and certified LIVE vineyard sites across the state. The partnership combines Boberg’s energy and enthusiasm with Méo’s intuitive knowledge of winemaking, not to mention the same coopers and barrels used at Méo-Camuzet. While the results have been electrifying, Nicolas-Jay is still in its early stages, and the quality arc has nowhere to go but up. Denise and Stephen Adams purchased 80 acres on Howell Mountain in 2008, at elevations of nearly 2,000 feet. As owners of Château Fonplégade, a St. Emilion Grand Cru Classé, as well as Pomerol’s Château L’Enclos, they were no strangers to the wine business. The couple spared no expense, hiring vineyard manager Michael Wolf and consulting winemaker Philippe Melka. The result is a rendering of mountain-grown Cabernet that stands all the clichés on their heads. Rich, supple, and sensual, the wines are a delight to drink now, while fine-grained tannins promise a long life. Production is low and might necessitate a search, but you will be rewarded for it. Trio of Winners: TERESVS ($130), QUINTVS ($190), and the flagship ADAMVS ($350, pronounced “adam-us”)

ULTRAMARINE

A California cult sparkling wine? Absolutely. Ultramarine is vintage dated, composed only of grapes from the celebrated Charles Heintz vineyard, and bottled, riddled, and disgorged by hand. Self-taught wine scientist Michael Cruse was smitten with the high end of French grower Champagne (think Jacques Selosse) and decided to replicate that style in the Golden State. For those unable to find Ultramarine (or unwilling to spring for it), consider Cruse Wine Co., his second label, a collection of natural wines made from unconventional grape varieties. Unparalleled: Ultramarine Charles Heintz Vineyard Blanc de Blancs and Blanc de Noirs ($200)

LITTORAI

Ted Lemon studied winemaking in Dijon and became the first American to manage a Burgundy estate (Domaine Guy Roulot in Meursault). After returning to the U.S., he and his wife, Heidi, spent years searching for suitable vineyard sites, while Ted worked as consulting winemaker to some of the state’s most prestigious estates. Littorai is a collection of high-altitude sites along the Sonoma Coast, from which Ted Lemon crafts California’s finest Chardonnay and Pinot Noir. No one does it better. Top Wines: Chardonnay from the Mays Canyon, Thieriot, and Charles Heintz vineyards; Pinot Noir from Hirsch and The Haven on the Sonoma Coast; as well as Cerise and Savoy in Anderson Valley; $70-$120.

ACCENDO CELLARS When F. Scott Fitzgerald observed that there were no second acts in American lives, he hadn’t met Bart and Daphne Araujo (this page, top). After spending 25 years at their acclaimed Araujo Estate, the couple sold the winery and opened a new venture. Accendo Cellars is devoted to reviving the style of Napa Valley wines of the 1950s, ’60s, and ’70s. Grapes are sourced from some of the region’s top vineyards, including several owned by the Araujos, with the goal of producing wines with “balance and restraint.” The Cabernet has been sought after since its first vintage in 2013. J.J. Cohn, producer of The Wizard of Oz, established his winery in Rutherford in the 1940s. The property was sold after his death, with part of the acreage (including some of the original 1945 Cabernet vines) going to his grandson, Bret Lopez. Lopez has assembled a winemaking dream team and named the venture for a major character in his grandfather’s magnum opus. Ralph and Laura Lewis, the third-generation owners of Okeechobee Steakhouse, are penning a new chapter of their culinary legacy with Okeechobee Prime Seafood. Plans for this venture have been in the works for some time, but Ralph notes that the pandemic prompted action. With COVID flattening their catering business, the Lewises decided to transform their event hall into a seafood restaurant. The space, which opened in March, now features a 138-seat dining room plus a 48-seat covered terrace known as The Barn. “Our hope is to give our patrons a one-of-akind, elevated seafood dining experience,” says Ralph. “Providing an opportunity to enjoy impeccably sourced and prepared seafood, combined with the legendary hospitality the Okeechobee Steakhouse family is known for, will set us apart.”

Regional seafood takes center stage, with Ralph stressing that they’re procuring as much as they can from area fishermen. Meet Me at BUCCAN

Clay Conley’s innovative small plate restaurant, Buccan, celebrates its tenth anniversary this year. Long before he made his way to South Florida, Conley grew up on a farm in Maine and started his first restaurant job as a dishwasher at age 13. He worked in Boston with Todd English, eventually becoming the culinary director for 18 of English’s restaurants around the world. He gained fame as the executive chef at Miami’s Mandarin Oriental before moving to Palm Beach County and opening Buccan in 2011. Last year, at the height of the pandemic, Conley started the nonprofit Buccan Provisions to help feed people struggling with economic hardship. PBI recently caught up with Conley to discuss Buccan’s past, present, and future. (buccanpalmbeach.com) —Mark Spivak PBI: What was the inspiration for your small plate concept? Conley: It was always what I wanted to do—I had been thinking about it since my days in Boston with Todd English. My dream was to have a place that was hyper-focused on ingredients but less formal. I was probably naïve at the time, which helped a lot.

How has Palm Beach changed in the past decade? The quality level in restaurants is higher. There’s been an emergence of more casual dining, which means that there’s now something for everyone. Sometimes you want to go out for a high-end experience, and sometimes you just want a burger. It

Your menu at Buccan changes frequently. Where does the inspiration come from? I read a lot of cookbooks and look at a lot of Instagram pages. Certain ingredients come around at certain times of the year, and we like to tweak the flavors. Spring is my favorite time to cook, since you have the best produce from Florida and around the country.

When New Yorkers migrated to Florida for this year’s winter season, one of their most popular restaurants came with them. Le Bilboquet, the elegant French bistro on Manhattan’s Upper East Side, opened in Palm Beach in February with the goal of bringing a new level of excitement to island dining. “When we first started looking in 2019, we felt the restaurant scene was missing some energy,” says Dobromira (Dobi) Trendafilova, managing partner for the group, which operates locations in Sag Harbor, Atlanta, Denver, and Dallas. “We think of Le Bilboquet as something very vibrant, like a house party where everyone knows each other.” Designer David Lucido drew on Art Deco themes for the dining room and courtyard, situated in Via Encantada off Worth Avenue. Open doors allow the two spaces to blend together in good weather. The courtyard is typically full by noon, resonating with the sound of popping Champagne corks. On any given day, the most popular dishes are the Cajun chicken

and Le Bilbo Royal, a seafood tower with oysters, clams, shrimp, Alaskan king crab, and whole lobster. Almost exclusively French, the wine list is heavy on the classics of Bordeaux, Burgundy, and Champagne, and there’s an innovative selection of craft cocktails to begin a meal. Owner Philippe Delgrange, who supervises the service at Bilbo (as New Yorkers refer to it), arrived in Palm Beach to set the tone for the opening. Reservations are only accepted on the restaurant’s website, rather than by phone or third-party platforms. Those who have visited Café L’Europe recently have surely noticed a change in both ambience and cuisine. The South County Road icon has received a much-needed “Palm Beach facelift,” says general partner Emanuela Marcello, who runs the 41-yearold institution alongside her husband, Mark. After closing in early July for some minor renovations, the restaurant experienced flooding that necessitated a more substantial overhaul. The Marcellos embraced the opportunity to reimagine Café L’Europe for the next generation, while still maintaining its character. They knocked down an existing wall to create one large space unified by a U-shaped bar. Working with interior designer Sara McCann, they opted for more contemporary decor and coastal colors. They also added outdoor seating—a must during COVID times, but an addition that feels in step with the restaurant’s European essence. “We wanted to maintain some of the architectural features of the original,” says Emanuela. “We wanted a guest to walk in and still feel like they were walking into Café L’Europe, but it’s a better and more updated Café L’Europe.” LIBBY VOLGYES

Lebanese cuisine is grounded in the health benefits of the Mediterranean diet and based on the concept of sharing small plates, or meze. Nicolas Kurban is on a mission to bring that authentic cuisine to Delray Beach’s Atlantic Avenue with Amar Restaurant. “I wanted to offer something that didn’t exist here,” he says. “To me, a restaurant is not just about food but also service, ambience, design, and music. It’s a total experience.” Nearly half of Amar’s menu is devoted to vegan and vegetarian dishes, based on recipes from Kurban’s father’s restaurants in Lebanon. Must-try items include classic meze such as hummus, baba ghanouj, and tabouleh; an entrée of el mehchi (eggplant stuffed with spinach, onions, and chickpeas, baked with tomato and red pepper sauce); and homemade desserts like kanafeh (a semolina and melted cheese tart with orange blossom and pistachios). A sampler option is available, and all dishes are accompanied with freshly baked pita bread from the wood-burning oven. Shake well and strain into a highball with fresh ice. Top with the sparkling water and garnish with mint and basil leaves.

By Mark Spivak If you want to visit a distillery, there’s no need to hop on a plane to Louisville and drive across the Bourbon Trail. Around 40 distillers currently belong to the Florida Craft Spirits Association, and they produce everything from rum and vodka made with local ingredients to aged expressions of whiskey. Here, we present a subjective list of the best. Florida Farm Distillers: Marti and Dick Waters craft their awardwinning Palm Ridge Reserve whiskey on a small cattle farm outside Umatilla. This bourbon-style spirit is handmade in small quantities, aged in charred-oak barrels, and bottled at 90 proof (“whiskey the way it’s supposed to be,” according to Dick). Despite the low production, Palm Ridge Reserve is available at select Florida retailers. (palmridgereserve.com) Manifest Distilling: Located in downtown Jacksonville’s Sports District, Manifest is a full-scale organic distillery producing regular and barreled gin, potato and Florida citrus vodka, rye whiskey, coffee liqueur, and fernet. The facility includes a bar and tasting room. Tours are offered, as well as a monthly Discovery Series that allows consumers to get hands-on experience in the blending and formulation of spirits. The concept of intuitive eating came to prominence in the mid-1990s, when registered dieticians Evelyn Tribole and Elyse Resch coined the term and outlined 10 principles for incorporating it into daily life. In essence, intuitive eating lives outside of diet culture and instead prioritizes eating mindfully. Christie Caggiani, a registered dietician, nutrition therapist, and certified intuitive eating counselor with Therapeutic Oasis in Jupiter and Boca Raton, shares more about this innovative approach. PBI: How does intuitive eating differ from traditional dieting? Caggiani: The first major distinction is that intuitive eating is really about reconnecting with our bodies, its signals, and, as a result, rebuilding trust. In contrast, we know that traditional dieting and rigid, restrictive rules [can] disconnect us and harm our relationship with food, our bodies, and the way our bodies actually work. Intuitive eating is about making peace with food and knowing that food is not good or bad, just different, thereby allowing us to honor what we’re needing in the moment. Why is it important to distinguish between physical hunger and emotional hunger? Physical hunger is our body’s biological message letting us know it’s time to refuel, something our body needs many times daily. When we diet, we disconnect from that crucial signal—sort of like losing the connection to the gas gauge in our car. Food is often used as a coping mechanism, either distracting us or attempting to comfort us, though it won’t truly “fix” the underlying feelings. Becoming aware of the times we use food [in this manner] is a priceless piece of healing our rela-

tionship with food, as long as we can approach it from a curious, noncritical way. What kind of successes have you seen with people who have adopted intuitive eating? So often I see people who have come to the realization that dieting doesn’t work, but they don’t know what to do next. The joy that they experience when they realize they can eat real food, feel better, and trust their body to tell them when they’re content is priceless. As they learn to throw away the scale and start to respect their bodies, they find they become more confident in their own skin than they ever did on a diet. They learn to move their bodies with activities that are actually fun, rather than punishing themselves with gym memberships that they hate. And one of my favorites is when people learn that they can keep any food in their home—even food they used to overeat or thought was “off limits”—and no longer feel fearful of it or out of control around it. They feel at peace in their relationship with food, and their physical, mental, and emotional health is better for it. How would you recommend people get started on a path to intuitive eating?

Ever catch a glimpse of yourself in a mirror and notice that you’re slouching? Worried that your balance problems will lead to a fall? Posture and balance issues are not reserved for older individuals and they can have far-reaching health implications. Good posture is actually a type of fitness. The muscles of your body are supporting your skeleton in a way that is efficient and stable. However, many factors can impede that ideal support structure. Some of these include pain or past injury, genetics, extra weight, or inactivity. Technology addiction can also be to blame. Sitting at a computer, using a tablet or smart phone, or slouching on the couch while watching TV for extended periods of time can cause you to stoop or bring your shoulders forward. There’s also “text neck,” caused by continuously bending your neck forward. Even stress can result in overly contracted muscles and poor posture. Forward posture can shift your center of gravity and increase the risk of falling. It also means your muscles have to work harder to

keep your body balanced, making them progressively tighter. “Balance is the base of support, so poor balance affects the quality of everyday activities,” says Narisa Steinberg, co-owner of The Facility for Personal Training in Boca Raton. “Poor posture leads to conditions such as poor digestion; misaligned spine; back, neck, and shoulder pain; headaches; jaw pain; and breathing difficulty. If not corrected, poor posture can worsen health consequences.” The facility’s state-of-the-art balance and posture lab offers a full-body scan that produces a graph indicating the position of the head, neck, and spine. The analysis reveals areas that need improvement and offers a library of efficient movements that can be done with trainers at the facility, at home, or both. “Anyone suffering from poor posture or balance is a candidate for the balance and posture lab,” says Steinberg. “Posture and balance are predictors of a shorter life span, but they can improve at any age.” (thefacility bocaraton.com)

The late research biologist’s deceptively minimal paintings encourage viewers to reflect upon the intercon-

During his life, Iwasaki used his art as an expansion of his devotional practice of shyakyo— the reverent act of hand-copying sacred Buddhist texts—and drew on characters from the Heart Sutra. DANCE OF THE SWANS After a year-long live performance hiatus, the Boca Ballet Theatre will honor the enduring spirit of dance with one of the most beloved ballets of all time.
