O
ne of the best things about working on an F&B magazine is discovering new places that surprise and tantalize our taste buds. We had this experience in a couple of the places found in this issue.
For instance, we were very pleasantly surprised by Chef Tonny Chan’s work in his new restaurant featured in “Hidden Gem in Geylang”. Personally, I had almost given up on enjoying steamboat meals outside because of the amount of MSG often found in the food. Chef Chan has managed to change my mind with his quality offering. Another dish he created had us absolutely seduced. Read the article to find out what dish it is! Hidden treasures can also be found in neighboring Johor as featured in the Mount Austin spread. Food is not only good, but also affordable. It is easy to grab a few pals and drive over for a full day of fun, relaxation and great food with a reasonable budget. In fact, we enjoyed the food so much that we are planning for a personal trip there again to enjoy the food that we’ve shared with you in this issue. And if you’ve been eating too much or pushing yourself too hard at work, perhaps it’s time to take a break in Koh Samui. Our editor headed out for a detox-and-relax getaway and returned with fond memories he will hold on to for a long time. We believe you would too. Work hard, play hard and eat well. Make memories and share them with people you care about, just like how we like to share our experiences with you.

Taiwan Beer
T
he beer marketplace is a crowded one with many breweries claiming its own secret recipe and their share of the market. For a long time, the image of beer had often been associated with a bittersweet taste targeted towards the male population. The entrance of Taiwan Beer, however, began to stir up a wave of refreshing sweet change in beer offerings. Taiwanese Culture Icon Gold Medal Taiwan Beer was launched in Singapore in 2011 by Kaimay Trading, an experienced local food distribution company. Brewed by the 112-year-old Taiwan Tobacco and Liquor Corporation (TTL), the amber lager beer has a distinctive taste due to the addition of Formosa Rice and complements many types of food, especially that of Taiwanese and Japanese cuisine. The beer appeals to both Asian and Western palates. It won the title of Gold Medal Beer in the Monde Selection in 1998 and has maintained a similar standard ever since. The beer contains only 5% alcohol and is sold widely in Taiwan, earning itself an iconic status endorsed by top celebrities such as Ah-Mei and Jolin Tsai. Like Fruity Bubbly Besides Gold Medal Taiwan Beer, Kaimay added the “Sweet Touch” Fruit Beer to its selections with top Chinese celebrity Chen Yi Han as the brand ambassador. Like Gold Medal Taiwan Beer, Sweet Touch is brewed with Formosa Rice to create TTL’s trademark smooth taste and then coupled with fruits to create a unique range of fruit beers. 4

With 3 flavours to choose from (White Grape, Lychee and Green Apple), Sweet Touch has been described as being reminiscent of champagne due to its crisp mellow body and fresh bouquet. At a low alcohol content of only 3.5%, they appeal to ladies and light beer lovers. New Flavours In response to the increasing number of consumers who are seeking alternatives to traditional brews, Kaimay extended their fruit beer range with Sweet Touch Green Apple Fruit Beer as well as Taiwan Beer Mango Fruit Beer and Taiwan Beer Pineapple Fruit Beer. In fact, they had just debuted another 2 new flavours under the Taiwan Beer Fruit Beer Series during Beerfest Asia 2013 held in June. The new flavours - Grape Fruit Beer and Orange Fruit Beer – feature a harmonious marriage of real fruit juice with the Gold Medal Taiwan Beer. They have a relatively low alcohol content of 2.8 % and contain at least 5% real fruit juice from freshly-picked Taiwanese produce. The beers are refreshingly easy to drink with an excellent fruity aroma. The taste is a crisp combination of dry and sweet with a clean finish that departs from the harsh bitterness of normal beers. This makes the beers perfect for Asian cuisines, local snacks and pastas. Taiwan Beer’s offerings can be found at leading supermarkets and convenience stores.

We also tried a new dish on the menu: Steamed Curry Crab with Glutinous Rice. This dish is a must-try if you love curry and seafood.
Steamboats are a great way to get people together. Conversations flow easily and relationships warm quickly over a boiling pot. Yet the thought of eating a pot full of MSG-laden stock and ingredients in some steamboat restaurants can be quite a turn off for some people. Fortunately, we discovered a hidden gem in Geylang that not only changed our opinion about eating steamboat outside but also serves a wicked crab dish!
All begins with the stock
Most standard steamboat meals start off with a bland stock that is created from basic ingredients or made using a stock cube. The soup usually gets its full flavor at the end of the meal. Tonny Restaurant’s new Hong Kong -style steamboat set meal, however, comes with a well-flavored soup base made from hours of brewing pork bones, green peas and dashes of pepper. Scoop a little deeper and you would find porridge at the bottom of the pot. The soup is palatable right from the beginning but does not overwhelm the taste buds. In fact, it tasted more like a regular restaurant’s specialty soup and we found ourselves scooping for seconds. One concern we had was whether the addition of ingredients into the soup would make the soup too rich at the end? Our worries were soon laid to rest. Another important factor that distinguishes Tonny’s steamboat from others is the use of fresh and high quality ingredients. A 4-person set meal starts at $28 per person and includes ingredients such as large prawns, abalone, scallops, meat and more. Even the fishballs are handmade so they have incredible texture and are much healthier than conventional ones. Smaller groups or those who would like more ingredients can opt to order ala carte ingredients. The ingredients served to enhance the soup and we still had refreshing soup that tasted just right at the end. Extra tip: Do not neglect the different types of painstakingly handmade chilli sauce. We would buy back jars of the sweet chilli if we could!

A giant crab sits on top on of a generous serving of rice and seduces with its fragrance the moment it arrives at the table. Both the crab and rice are infused with a curry flavor that is addictive and not overly spicy. We would head back for this dish again. While the interiors are simple, Tonny’s Restaurant is a great place for casual dinner with family and friends especially if you enjoy fresh and good quality food at reasonable prices.
Famous chef in the kitchen Chef Tonny Chan is no stranger to the local culinary scene. The Hong Kong-born chef started his foray into cooking in his teens and moved to Singapore more than 20 years ago. Now with over 30 years of experience under his hat spanning across different countries and restaurants, Chef Chan continues his career with passion and creativity in Cantonese cuisine. He remains a firm believer of using fresh and quality ingredients. The friendly chef has also been featured on national newspapers and TV programs frequently. Chef Chan had helmed his own restaurant in different locations and each time his loyal fans have followed him from one place to another. In response to requests from his regulars, Chef Chan’s Tonny Restaurant is now back in Geylang along the pleasant stretch of Lorong 3 with a convenient multi-storey carpark located right next to it.

I will always remember I
have to admit: As someone who is not familiar with beaches and sea sports, Koh Samui was not high on my list for a good retreat. I landed at Samui airport late at night and found my expectations lowered even further after darkness accompanied me nearly all the way from the airport to the hotel.

t first glance, the gleaming red giant crab enthroned in the claypot may seem like the star of this dish but it was the thin vermicelli hidden underneath that kept our chopsticks busy. The vermicelli braised in stock together with fresh live crab allows the natural sweetness of the crab to seep into the bee vermicelli, which turns out to be a winning move because the vermicelli oozes with flavor at every bite. We would not mind a drive out to Sembawang for this dish anytime!

ever judge a fish by its cover. While this dish may look ordinary on the outside, great effort has been taken to prepare the fish within. Hidden beneath a layer of crispy homemade batter is a generous slice of Dory Fish fillet that has been marinated over two days in a variety of ingredients including milk. This leaves the flesh tender and juicy even though the external layer has been fried to crispy perfection that’s not too oily. rom friends, to partners, to buddies. These seven young people working together with trust and responsibility. Although it was challenging in the beginning, now, they are looking forward to expand into other parts of Sumatra, planning to conquer a bigger share of its lucrative F&B pie. It all began in December 2010, when seven young men aged between 32-40 decided to start Roemah Kopi Wak Noer, with its mainfocus on good quality coffee. With this aim in mind, these brave young men had to forego locations with cheap rental (savings on rentals are a common practice with F&B start-ups in Medan) and zoomed straight into Jalan Uskup Agung, an area similar to district 10, Bukit Timah in Singapore. Amongst friends and relatives, not many gave them any chance to survive in this bold and highly exploratory first venture. Today, not only have they earned a reputation of being the high-end coffee meeting place, they have also opportunistically ridden on their rapid success and opened an up-market pastry shop next to Roemah Kopi Wak Noer, called Sam’s Place. Their simple objective is to educate coffee lovers in Medan with good quality local/imported coffee, provided with good service staff, trained by overseas trainers. Food Wagyu & sirloin steak. here are many people who contest the history of Bak Kut Teh. Some believe that it originated from Malaysia. Personally, I think the Teochew Bak Kut Teh is pride of Singaporean food. Having opened only in September last year, the centre offers a host of massage and wellness treatments such as massages for various parts of the body, cupping, guasha, ear candling, scrubs and even pedicures. Prices are reasonable and start from RM30 for a 30-minute foot reflexology session.
People who love sushi bursting with different flavours will like the Mishuji Ferris - a colourful sushi roll made with cucumber and crab rolled inside rice and lined with seabass. An inhouse special mayonnaise sauce, fish roe and eel tops the creation. We enjoyed the Gindara Mentai Yaki which is grilled cod fish with cod fish roe. The fish was fresh and tender and the fish roe added a lovely twist to the otherwise plain tasting fish. We found Japanese diners in the restaurant during lunch, which is often further assurance on the food quality for non Japanese diners. The restaurant also offers Japanese liquor such as sake and choya . The existence of dividers between tables offers much privacy for quality time with friends, family and business associates. For example, a 1-hour foot reflexology and another hour of Chinese traditional massage will only set you back RM98 for 2 hours of bliss. At first glance, the menu selection is noticeably smaller than most Chinese restaurants but the owners prefer to keep it that way. It is common to see some of their signature dishes on nearly every table and it isn’t because there isn’t anything else to eat –the food is good enough to keep customers coming back for more again and again. Throw the diet plan out of the window and indulge in the KL Hokkien Mee. The light and chewy texture of the handmade noodles is one of the best we have tasted and leaves one feeling much lighter than expected after ingesting a similar meal. With 52 branches all over the country, Station 1 Café is probably one of the most recognisable café brands in Malaysia. The 4 year-old branch in Austin Height features a wide selection of mains, pastas, pizza and sandwiches across western, fusion and local cuisines. We were impressed with the tender texture of the Chef’s Delight Chicken Chop which was just right – not too tough, not too soft. Served with lattice fries and salad, the portion is generous. The store is known for selling tastefully designed Asian style items for the home and personal use. What’s up for sale? Chinese country furniture with real history and have been restored to its former glory by skilled artisans. Some pieces even date back 150 years and many are made of solid wood. There are also newer pieces that have taken on a modern design but are made from recycled wood that had been salvaged from homes and furniture with a similar amount of history. A pure camphor wood chest that still has its signature fragrance will only set you back $390. The factory in China has been affected by a government land redevelopment plan so they engaged Lim’s to clear their excess stock at factory direct prices.
