Northern Restaurant And Bar Unveils Exclusive Keynote Interview: Simon Rogan & Tom Barnes Acclaimed culinary luminaries, Simon Rogan and Tom Barnes, announced as Keynote Theatre speakers at NRB 2024.

Manchester has been chosen as the inaugural location for this initiative, highlighting a significant milestone for Northern hospitality.

Northern Restaurant and Bar (NRB), the leading trade show for the North’s hospitality industry, is set to deliver a culinary spectacle with an exclusive interview with acclaimed chefs Simon Rogan and Tom Barnes at NRB 2024. As a pioneer of the farm-to-fork movement in the UK, and founder of Umbel Restaurants, Simon Rogan will be joined by Tom Barnes, the former executive chef at three Michelin-starred L’Enclume and one Michelin-starred Rogan & Co, Henrock, and Home by Simon Rogan, for the opening event at NRB’s Keynote Theatre.

Simon Rogan’s trust in Tom Barnes as the torchbearer for this initiative underscores the city’s role in shaping the future of culinary excellence. Barnes’ vision for an unpretentious yet ambitious dining restaurant in the North is poised to captivate gastronomes and elevate Manchester’s status on the global culinary map. Skof will be owned and operated by Tom but will form part of the next iteration of UMBEL Restaurants, where the group will support talented individuals in opening their own restaurants and businesses.

The interview on March 13th at Manchester Central promises to be a landmark event as Simon Rogan and Tom Barnes take the stage for an in-depth and exclusive interview, delving into their extraordinary lives and careers. Hospitality, Marketing and Experience Consultant, Lucy Noone-Blake, founder of Pear, will be hosting the interview. Under the UMBEL Restaurants umbrella, Simon and his team have introduced a groundbreaking division aimed at empowering their chefs to open their own restaurants, breaking barriers and reshaping the culinary landscape.

Three years ago at her dad’s birthday party Shirley White had the spark of an idea for a new business. I looked around and realized that in our community we do a lot of homemade food and people bring their drinks in plastic reusable bottles she says. I thought, surely there’s a better way of presenting this. My and my children’s generation are not going to do what my father’s generation and the generation before did, which is making the drinks at home. Shirley’s background was miles away from the drinks industry. After spending time working for local government, she spied an ad in the evening standard that caught her eye and went along to a wine and cheese evening, during which she landed a customer service role in the world of market data and investment banking. After 30 years working in the city for companies including Telerate, Deutsche bank and HSBC, she was ready for her next challenge….so OTC Beverages was born. OTC offers sorrel and non-alcoholic ginger beer in bottles and cans now available in corner shops and takeaways across London….a new flavour will soon be available. Although it is a new industry for her, Shirley says there have been many transferable skills from her former life in finance. It’s the skills you get from from project management and juggling a number of programmes within large organizations, she explains. In addition she has researched, networked, learnt product design, packaging.. and more importantly being able to work with people from all backgrounds in order to provide a product which is healthy and can be utilized by all.

From the start Shirley knew she didn’t want to be brewing up drinks in her own kitchen, but says it took some time to perfect the recipe in the factory. She adopted a less is more philosophy to their formulation by using only identifiable quality ingredients such as organic cane sugar instead of artificial sweeteners. She emphasizes the natural health benefits of ginger and sorrel as well as their potential in an ever growing market for non and low alcoholic drinks. Her flavours are already proving popular, with OTC Beverages being shortlisted for a number of accolades including the Great British Food Awards. Shirley is now working to bring her products to more locations in Landon and has plans for the rest of the world as well. There are a few logistical wrinkles to iron out, but she’s hoping to bring her sorrel and ginger beer to other markets including America and Africa. Currently, it’s at the point where you’re growing the brand, you want it to take on momentum and you want it to be an identifiable brand of choice when people go to a shop to buy a cold drink, she says.

The Goring Hotel Appoints Jeet Chauhan Director Of Food And Beverage London’s iconic luxury hotel The Goring is delighted to announce the appointment of Jeet Chauhan as Director of Food and Beverage. Jeet is no stranger to London’s culinary scene and brings critically acclaimed skills to The Goring. Confronting The Mammoth-Sized Elephant In The Room Gwen Powell of CleanConscience calls on the hospitality industry to be held more accountable for unwanted assets that still have value The hospitality industry is trying hard to be more open about its environmental and sustainability obligations. However, according to Gwen Powell, the Founder of UKbased charity, CleanConscience, greenwashing is still rife and needs to be addressed. Reporting is largely focused on operational activities and, to a much lesser extent, on the construction phase. What is completely overlooked, however, is what happens during renovations and whether redundant materials, such as furniture, fittings and linen, that still have resource value, are given a second life.

"What goes unseen is the mountains of duvets, pillows, curtains and linen that end up in skips, and yet are in perfectly good condition", says Gwen Powell. "It's especially galling to see mattresses thrown away when more than a million children and families in the UK are currently in ‘bed poverty1'", she added. A surge in the number of hotel renovations is expected due to the UK Government's recent announcement that the 400+ hotels, currently used to house asylum seekers, will be returned to normal use. This will inevitably mean a soft or hard refurbishment, which in turn will create a large amount of redundant assets. Frustratingly, a cost-effective alternative exists in the shape of CleanConscience; a social enterprise specialising in hotel ‘decant and soft-strip ‘projects that benefit the environment, the hotel, as well as the many charities it supports, numbering 73 in the UK plus 3 in Sierra Leone and 7 in Lithuania. Gwen believes that, "It should not just be illegal to greenwash, it should also be illegal to dispose of perfectly good assets via a waste contractor". The next time a hospitality chain thinks to make an overthe-top green claim, it could do well to remember that, since the end of April 2023, ‘greenwashing' has been outlawed under the Digital Markets, Competition and Consumer Bill. The Competition and Markets Authority (CMA) now has the power to take action against organisations making ‘false or misleading environmental claims' and will ensure such statements align with UK consumer law. In fact, the CMA can levy fines of up to 10 per cent of global income for serious breaches..

Powell goes on to say that, "The hospitality industry is well known for this ‘throwaway' culture, following the quick-and-easy route of hiring a waste carrier to take care of unwanted items that are not easy to redistribute. Somehow, however, hotels still manage to belong to certifying bodies such Green Tourism, Considerate Hoteliers, and Green Key, and use ‘green' slogans in their marketing". Emma Whitlock, Manager in England for Green Key, the leading standard for excellence in the field of environmental responsibility and sustainable operation within the tourism industry says, "The topic of waste is central to Green Key criteria. It is mandatory that establishments register their total amount of waste and have recycling facilities in place. In addition, the Guideline criteria recommend that establishments have a waste plan in place in order to reduce waste and donate materials that are no longer used to charitable organisations.“ "It is a requirement that all awarded hotels increase the number of Guideline criteria being met each year that they apply, and we encourage them to seriously consider the amount of waste they create and what happens to it. Seeing redundant items reused and bringing real social benefit to communities in need, is far better than sending it to landfill or incineration."

DOBBIES OFFICIALLY OPENS ITS LARGEST EVER STORE AT THE JUNCTION, ANTRIM Dobbies, the UK’s leading garden centre retailer has officially opened its largest ever store (Thursday 5 October) at The Junction Retail and Leisure Park. The 110,000sq ft flagship store is Dobbies’ second venture in Northern Ireland and has created 120 new jobs, making it one of the largest employers within the Antrim and Newtownabbey borough.

Local retail brand Musgrave to supply over 1,800 food hall products in first-of-its-kind partnership As further commitment to driving and investing in local growth, a unique partnership has been forged with Musgrave NI, a leading retail and wholesale business, who will supply a specially curated range to Dobbies’ 3,539 sq. ft food hall including Signature Tastes, Donnybrook Fair, Happy Pear and Frank & Honest Gourmet Coffee.

Television presenter Pamela Ballantine officially opened the doors this morning joined by Deputy Mayor of Antrim and Newtownabbey Borough Council Councillor Rosie Kinnear; Dobbies CEO, David Robinson; Dobbies Antrim General Manager Ken Ferguson and Operations Manager Jenny Campbell; and The Junction landlord, Lotus Property’s MD Alastair Coulson. Dobbies also welcomed school children and their families through the doors following the announcement of a partnership between Dobbies and local SEN school, Riverside. This is the largest store in Dobbies’ UK portfolio with outdoor and indoor plant areas; gardening products; seasonal items; pet, gift and toy departments as well as cookshop and home décor; a food hall, a Little Seedlings children’s soft play area and new restaurant and coffee shop, serving breakfast, lunch and afternoon tea.


Opening ahead of the Christmas season, the new store features Dobbies’ full festive product range with an extensive programme of seasonal events planned from November onwards including Santa’s Grotto, a Quiet Grotto experience for those with additional needs, Santa Paws, Santa’s Breakfast and more.

New hotel in the historic Boswells department store

Boswells was one of the world’s oldest department stores, family-owned and much-loved by the local community. In the tradition of great British department stores, it was a place of discovery – a treasure trove of toys, cosmetics, fashion, household essentials, a haberdashery, well-known tearoom, and café.

Arranged over seven floors, the interior design has been informed by the heritage of the two distinct buildings that make up The Store. Both buildings have a distinct architectural language that runs throughout the refurbished and extended spaces. These have been sensitively worked on by Urban R, Reef Groups’ team of architects and designers, with multi-purpose open-plan public spaces divided into different areas through elegant design choices – reminiscent of a department store filled with moments of joy that entice – and juxtaposed with intimate corners, and moments of escape.

Reimagined as a hotel, restaurant, rooftop bar, co-working bar, and spa, The Store, delivered by Reef Group and EQ Group, will present a labyrinth of spaces to discover and explore. The expert hospitality team at EQ are looking to delight guests with a sense of curiosity and wonder, reflecting the rich heritage of the building’s former life.

The 101 rooms are spread across the two interconnected buildings, with six district design typologies, some with plush velvet headboards, panelled walls, and bold art deco features, others with leafy courtyard views, a muted palette and textures that comfort and cocoon. Bringing the rich tapestry of Oxford into the space, bespoke patterns and furniture echo the tiles and patterns of the rooftops or follow the line of the city’s “dreaming spires” to offer uninterrupted views. The Restaurant, Treadwell, will be ‘Untraditionally British’. Surrounded by incredible Oxfordshire countryside, the modern restaurant plays with sustainably sourced produce from local suppliers and brings unexpected multicultural influences to quintessentially British dishes. Expect Chicken Tikka Masala Pie, with gunpowder new potatoes and makhani jus; and The Store Cheeseburger, double smoked applewood cheddar, Cotswold chorizo & jalapeno jam, pickles, seasoned fries.

The Store, Oxford, will launch in 2024. Located on Broad Street, in the heart of the city, The Store sits in the building of the historic department store and Oxford institution, Boswells.
