Braveheart Black Angus Beef® grinds are ground fresh daily and can be ground to order. This means a longer shelf life and fresher beef. A variety of grinds are available, ranging from fine to coarse, with varying fat ratios so you’ll hit the perfect blend for each and every recipe. Fresh grinds are ideal for tacos, meatballs, sauces, meatloaf and custom-blended burgers. Whatever type of beef you serve, you’ll find a superior Braveheart selection in our full line of products. Beef Grading Braveheart Black Angus Beef® provides only the highest quality beef from the USDA’s top grades. Beef quality is based on the cooked product’s expected eating characteristics—tenderness, juiciness and flavor. Grades are given based on the amount of marbling in the beef. Higher levels of marbling are more likely to yield tender, juicy, flavorful cuts of meat. Our beef is available in Low Choice, Upper 2/3 Choice, and Prime (the highest level of marbling in the U.S. beef grading system).

We’ve gone above and beyond to create industry-leading standards that ensure quality and sustainability from field to plate. PathProven® Quality Assurance PathProven® is our exclusive, industryleading program for ensuring the quality, consistency and taste of Braveheart Black Angus Beef®. Through this process, cattle are carefully cared for by setting high standards for feeding, health, and humane treatment of Braveheart cattle, all of which are critical to delivering the best possible beef. We are leading the industry with the nation’s only DNA-based traceability system to confirm Braveheart cattle are majority Black Angus. This DNA tracing technology, DNA Traceback, also allows us to trace every cut of meat back to the animal it came from.

Industry Standards Happy cattle means better beef, which is why all Braveheart Black Angus Beef® cattle are raised under the most robust farm-tofork closed-loop program in the industry. This unique program focuses on animal welfare, sustainability and food safety. Every year, a third party audit verifies that our partners are following strict Braveheart guidelines, such as providing proper feed and controlled use of medication. In addition, with the guidance from Dr. Temple Grandin and the animal well-being advisory board, we have created over 40 industry leading specifications to ensure quality and humane treatment of animals. Cattle must come from no further south than Kansas, be raised with good handling practices, and be transported less than 200 miles for processing to limit their time on trucks, which reduces stress on the animal and yields more flavorful, tender meat.


Supply Chain Traceability

Creating confidence in every step from farm to plate. When you partner with Performance Foodservice, traceability is two-fold. It means understanding where your food comes from and feeling confident in its safety, but it also means knowing where your product is every step of the way from the time you place your order to its arrival in your kitchen. Our commitment to traceability includes: • Performance Foodservice always complies with all FDA and USDA regulations regarding product traceability and recall notifications. • Our industry-leading PathProven™ process ensures every step of select private branded products’ journey to the plate is 100 percent verified. In order to do this we work directly with feeders, breeders, growers, fishermen, and suppliers to verify the origin, handling processes, transporting methods and processing standards for every PathProven product. We also implement third-party audits to ensure our suppliers adhere to our strict standards. • Any time a product is recalled, we make sure our affected customers are aware and can take action immediately through Instant Recall, our automated notification system. • We are a founding member of the GS1 Initiative—a voluntary, collaborative industry effort to drive waste out of the foodservice supply chain, improve product information and establish a foundation for food safety through better traceability—and a member of the GS1 Food Safety Traceability Sub-Team. • We are launching scanning for delivery tracking at 23 locations so our customers know when their orders are complete and are evaluating GS1-128 scanning for the future.

Global Data Synchronization • In our vendor contracts, we require suppliers to participate in the Global Data Synchronization Network (GDSN), which facilitates the exchange of information between buyers and suppliers, ensuring product information is consistent and up-to-date. • Since January of 2015, supplier participation has grown and we have doubled engagement within the vendor community. We continue to focus on increasing participation in GDSN with great success. • We are currently focusing on increasing the amount of vendor nutritional information in the system and on assigning and validating Global Location Numbers (GLN) for all Performance Foodservice locations. • We provide data feeds to major account customers on cases received, cases in stock and cases delivered (this does not include GS1-128 data).

cut description: Pork belly is uncured, un-smoked and un-sliced bacon, starting out from the underside or belly of the pig. Chefs consider pork belly far superior to bacon. Pork belly has juicy fat layers wrapped around the meat. There isn’t much meat, but once cooked it becomes tender, similar in texture to pork loin. And that fat is melt-in-your-mouth quality. Best prepared by braising or roasting. Once it’s cooked and cooled, you can crisp up the skin in a skillet. If you roast it, the skin should cook up crisp.

INSTRUCTION: 1.

Mix all ingredients except ribs in a bowl and reserve 1/4 of the mixture for basting later

2. Place ribs in bag with marinade and seal , if using ziplock style bag submerge then seal 3. Cook in water bath at 165* for 12 hours, remove and store using safe food handling guidelines. 4. Ribs can stored for up to 4 days under proper refrigeration. To re-heat use hi-temp over or grill using basting liquid throughout.
