Butter Boards are a big rage these days. At a recent event, I created a variety of different boards using butter, cream cheese and goat cheese. Get creative and have fun by keep selections simple, as sometimes, it’s all about what you have already in your pantry that go well together.
Goat Cheese goes well with sweet things like raspberry, strawberry or orange preserves, as well as hot pepper jelly. Top with glazed walnuts and finish with chopped fresh basil! Cream Cheese pairs well with pastrami smoked salmon, diced red onions and capers. Top with fresh dill and Everything Bagel seasoning!

star anise braising
This star-shaped spice is the dried fruit of a small Asian evergreen tree (a member of the magnolia family). Harvested when it’s still green and unripe, it’s dried in the sun, where it develops its red-brown color and a sweet warm flavor that’s reminiscent of licorice, clove, fennel seed, and aniseed. Star Anise is used primarily in Vietnamese and Chinese cooking. Ground star anise is a dominant ingredient in Chinese five-spice powder. Despite its sweetness, star anise traditionally is used in savory recipes, particularly with meats. It often is added whole to soups, stews and braising broths, to which it adds a sweet-licoricepeppery flavor.
Braising, the cooking of meat or vegetables by heating them slowly with oil and moisture in a tightly sealed vessel. Braising differs from stewing, in which the food is immersed in liquid, and from covered roasting, in which no liquid is added. Braising is a combination of covered roasting and steaming.

Prix fixe sells best when clearly tailored to an occasion, whether that is Hanukkah, Christmas, Christmas Eve, Kwanzaa, New Year’s, or — thinking ahead here — Valentine’s Day. With some shiny bells and whistles folded in, this becomes the key pillar of your marketing campaign’s in-store signage, email outreach, public relations efforts and social calendar.
Remember to promote your prix fixe menu as early as possible. When not preparing holiday meals themselves at home, diners prefer to shop around in advance to take one more thing off their busy planning schedules. If your marketing starts too late, you may lose out on possible covers.
DON’T COMPLICATE THINGS
