Dear Friends, Welcome to the Spring and Summer issue of Island Vibes. If you haven’t yet visited our 330-acre paradise, please allow the Island Vibes newsletter to acquaint you with all South Seas Island Resort has to offer. If you’re a return guest, you’ll learn all about our Spring and Summer activities and happenings. This issue of Island Vibes is all about family. Throughout the year we welcome families from all over the world, and this time of year we enjoy watching families create lasting spring and summer vacation memories. Following a winter that was abnormally cold throughout much of the U.S., I’m happy to say that seasonal temperatures average 84 degrees! Consider our resort your ultimate playground with endless backdrops; the turquoise sea, white sand beaches, lush greenery and, of course, swoon-worthy sunsets. Guests can test their fishing skills right off our T-Dock with a Coordinator’s assistance. This is a catch and release program that is great for beginners or guests that just want to get out for an hour.

Charred Lime & Blackened Ahi Tuna with Cilantro Yield: 4 servings Ingredients: - Ahi Tuna Steak 6-7oz (4) - Fresh Cilantro ½ bunch - Limes 1-2 - Salt and Pepper 2 tsp - South Sea’s Island Resort Blacken Seasoning 2 tbsp Directions: - In a small mixing bowl, add the ahi tuna - Chopped up the cilantro until fine and reserve for later - Cut the lime in half then char on the grill and then reserve for later - Add the Blacken seasoning, salt and pepper to the bowl - Finally add the coconut oil to the bowl - On a hot grill, place the ahi tuna on and grill it with a crosshatch sear for 10 seconds on each side - Remove ahi tuna from the grill and let it rest for 4-5 minutes - When resting, squeeze the freshly charred lime juice on top of the ahi tuna and chopped cilantro - Once rested slice the ahi tuna on a hard base with a sharp knife SERVE AND ENJOY
