Dear Friends, Welcome to the Winter Issue of Island Vibes - and Happy New Year! To those new to our island oasis, Island Vibes newsletter affords a glimpse into South Seas Island Resort’s multitude of happenings. To our return guests, we hope you’ll have the opportunity to “just escape” again in 2019. 2018 was a year of new additions and many highlights. South Seas once again hosted a number of fabulous events, including a concert by Livingston Taylor, Island Hopper Songwriter Fest and Yacht Rock Weekend. We look forward to hosting many more exciting events this year. We have added a fun and exciting new event over Memorial Day with music, sand volleyball and a jam-packed weekend with fun in the sun! We’ve also continued our partnership with Local Roots, through which we’ll be hosting the Captiva Island Farmer’s Market on Tuesdays through April 30th. We’ve updated 40 new villas, added a fantastic new wedding venue overlooking the golf course called Sunset Pavilion, and added two food and beverage establishments to Sunset Beach: Latitudes Food Shack and Attitudes Beach Bar. As always, few things warm our hearts more than seeing romantic proposals and breathtaking weddings taking place at our resort. Our newly-debuted Sunset Pavilion offers swoon-worthy views, and classic locations such as our T-Dock and Sunset Beach offer timeless backdrops for proposals and other unforgettable events. With temperatures in the 80s throughout the winter season, our 330-acre beach retreat offers the perfect backdrop for your island escape. Family vacations, couples getaways, corporate events and weddings are made remarkable thanks to our stunning landscapes and wonderful staff. The Hobie 16 World Championship!
South Seas Island Resort has been named the Official Host Hotel of the Hobie 16 World Championship. From Nov.1st-16th, 2019, the International Hobie® Class Association (IHCA) will bring its prestigious event to our location, marking the first time in 35 years that Hobie will host a World Championship in the U.S. The Hobie 16 World Championships is the only sailboat class in the world to supply brand new identical boats for all competitors to race. Hobie Cat Company will provide the boats that will be used exclusively on the race course, located just off Sunset Beach, at the north end of Captiva Island. Sailors from more than 30 countries will be competing in three world championship disciplines: Women’s, Youth, and Open, as well as three additional disciplines; Masters Cup, Grand Masters Cup, and Great Grand Masters Cup.
With pristine natural surroundings and a multitude of dining and recreational settings, South Seas Island Resort is perfect for the Hobie 16 World Championships. “We are sure when the Hobie sailors from around the world visit Fort Myers, their beaches and Captiva Island, they will be impressed and keep coming back for their holidays for many years”, said Rich McVeigh, IHCA president. The closest rooms to the sailing venue are the Harbourside guestrooms and the 2-bedroom Marina Villas. The 1 to 3-bedroom condos (Bayside/Beachside/ Tennis) are just a short walk away on other parts of the resort, and there is a continuously-running trolley for your convenience. Bikes and golf carts are also available for rental. Stay tuned for more updates.

METHOD Shank • Season shank liberally with salt and pepper • Roast in covered pan over water at 300 degrees for 2 ½ hours Risotto • Small dice white onion, saute until translucent • Add Arborio rice and toast • Add white wine and water one at a time on medium to low heat until risotto is creamy and rice is aldente • Season to taste Roasted Pumpkin • Cut pumpkin in half and remove seeds • Place cut side down on roasting pan and cook until fork tender • Place cooked and peeled pumpkin in blender and purée until smooth • Once risotto is finished, add pumpkin purée to desired taste Tomatillo Relish • Small dice tomatillos, peppers, onion • Finely chop cilantro • Mix all ingredients including lime juice and olive oil, season to taste Broccolini

GUI Shrimp is a fish favorite throughout the year and can be used any time during the winter!
Pine Island Sound in Southwest Florida offers some of the best winter fishing in the USA! With water temperatures in the low 70’s and dropping into the 60’s in January and February, big “gator” trout tend to come around. Trout become a staple on the flats inside the sound, with fish becoming aggressive eating live bait like shrimp, pinfish and shiners as well as attacking artificial lures and top water plugs. Mixed with the trout, you can find winter snook, redfish, ladyfish and mackerel. With water temperatures cooling off, the nearshore fish move closer to shore; this makes catching Mangrove Snapper, Lane Snapper and Gag grouper a hot target.
Grouper and snappers will come closer to ledges, rock piles and submerged structure within five miles of the beaches of Sanibel and Captiva. Bottom fishing is the main method of catching most near shore fish this time of the year. This involves dropping a shrimp or pinfish to the bottom where the structure will be holding fish. Once caught, hold on and reel in quickly to get your catch to the boat.

Bait for the winter time: Shrimp is a fish favorite throughout the year and can be used any time during the winter! Pinfish and shiners are harder to get this time of the year, but with patience and hard work, you can fill the live well with the cast net. Light tackle, lower # line and leader, are key to tricking fish to take your bait. Using artificial lures this time of the year sometimes out-fishes live bait.
1/8 oz or ¼ oz jig head with a 3” or 5” soft plastic will work very well; try using a light tackle 7’ fast action rod, 2500 - 3500 size reel, 10 lbs braided line and 10lbs leader to catch your fish. If fishing nearshore, try a 7’ medium rod, 4000 size reel with 30lbs braid and 30 lbs leader.
