Dear Friends, Welcome to the Spring and Summer issue of Island Vibes. If you haven’t yet visited our 330-acre paradise, please allow the Island Vibes newsletter to acquaint you with all South Seas Island Resort has to offer. If you’re a returning guest, we invite you to learn all about our Spring and Summer activities and happenings. This issue of Island Vibes is all about family FUN. Throughout the year we welcome families from all over the world, and this time of year we enjoy watching families create lasting spring and summer vacation memories. Following a winter that saw unprecedented amounts of snow in parts of the U.S., I’m happy to say that seasonal temperatures average 84 degrees! And our iconic resort features new backdrops; spread out amongst the turquoise sea and white sand beaches at Sunset Beach is our newly unveiled Sunset Village, a collection of venues at Sunset Beach that is a destination unto itself. The new Latitudes Food Shack features casual dining in a laid-back setting. Menu items range from poke bowls and The Impossible Burger to old favorites like grouper sandwiches. But don’t forget the new Attitudes Beach Bar, ready to quench all of your island thirsts. We’ve also built a new towel hut and will be debuting beach volleyball courts this spring. Sunset Village truly provides something for everyone! Go! Fish: Guests can test their fishing skills right off our T-Dock with a Coordinator’s assistance. We supply the rod and bait for you and will teach you what type of fish are brought up. Hi Friends!
My coworkers call me the Director of FUN! I consider myself the Memory Maker. I was born and raised in Erie, PA. Went to Slippery Rock University and graduated with degrees in Resort Recreation Management, Business Administration, and Marketing. Moved to Florida 11 years ago for an internship here at South Seas, fell in love and never left! Continued studies at Florida State University and received a Certification in Event Management. I am also involved with a fabulous organization called RCRA (Resort & Commercial Recreation Association) that brings together college students in search of internships and hospitality professionals from
all over the world at yearly conferences; to network and host a job fair. I had the pleasure of hosting a National Conference here at South Seas. I have been full circle with this organization being the student and now on the other side as the professional. In my position, I oversee Camp Skullywags, Holiday Programming & Events, Corporate Group Recreation, Captiva Community Events, and our beloved ScoutAbout Program. You will see the Activities Crew all over the resort hosting fun activities for our guests and I typically jump right in with the team with my hair pulled back and the signature headband. Whether you are here on business or for pleasure, young or old; I would love to meet you. Let’s Put A Little Play In Your Stay!

Every day is a field trip! This 501c3 nonprofit organization introduces students, ages 6 - 13 to the wonders of the marine world through meaningful, field-based ocean experiences. Javier Santa
Chef Javier Santa has joined the South Seas team and now banquets will never be the same. Javier Santa has joined the culinary team at South Seas Island Resort, where he’s using his talent and experience to reimagine South Seas’ banquets. Javier loves to create unique and flavorful dishes that are memorable. Banquets will be transformed into dazzling dining experiences. The passion for cooking that Javier brings has been built over a lifetime. Early on he grew to enjoy experimenting with different flavors, styles, and types of food. Working under Chef Jesus Ramiro, the personal chef for the King and Queen of Spain, Javier gained extensive knowledge on Caribbean, Latin American and American continental food styles. This was a perfect addition to his vast knowledge in Asian and Pan-Pacific food cultures. For the past 18 years, Javier was Banquet Chef for the Caribe Hilton in San Juan. Chef Santa believes that a banquet should be something more than a regular dining experience. "No more uninspired and poorly tasting massed produced food,” Javier says. “I want to turn that thought upside-down and serve flavorful, well-prepared, colorfully-presented dishes prepared with excellence in mind.” Javier’s passion is in being able to fully express himself and to create joy and happiness. The banquet table is set and something beyond the boundaries of the imagination is being served.

Bacon Espresso Jam 1 pound of bacon 1 large onion 2 cups of brown sugar (packed) 1 1/2 shots of espresso 2 sprigs of thyme 1 tablespoon of maple syrup
Render bacon and onions – drain fat. Add brown sugar, syrup, espresso and thyme. Reduce by half, Once cooled half way, blitz with a food processor for 10-15 pulses. Cool and leave at room temp. DESCRIPTION: The Espresso Bacon Jam is an incredible accent to any dish however shown here it goes terrifically well with diver scallops.
