Dear Friends, Welcome to the Fall/Winter issue of Island Vibes. As you know if you're a return guest, Island Vibes newsletter sets the stage for our exciting and engaging resort happenings. We've continued to produce this seasonally for years thanks to the "good vibes" we've received from guests. We're thrilled it's a favorite of so many! Fall offers an opportunity to recharge following an action-packed summer and prior to a fun-filled holiday season. We're always seeking to provide bigger and more engaging holiday initiatives for guests, and we have a fun-filled holiday season in-the-works. From Thanksgiving through New Year’s Eve, consider us your holiday-celebration-central. As always, we’ll end 2019 with an unforgettable, celebratory bash. But first, let's celebrate this wonderful season. A Family Favorite! Families explore the beautiful island of Captiva in search of ScoutAbout’s Points of Discovery, learning about the history and nature of our island. Once completed, head to Camp Skullywags to have the opportunity to redeem your colorful wristbands and earn a spot on the Wall of Fame.
Join us for our South Seas tradition. Our “Wish Upon a Seashell” Ceremony takes place every day at sunset, weather permitting. On selected days, live music adds to the ambiance of the beachside activity. Families have the chance to make a wish as they throw their seashell into the Gulf of Mexico.

Sanibel Sea School Nature Programs and Ocean Camps: Every day is a field trip! Sx3 introduces guests to the wonders of the marine world through meaningful, field based ocean experiences. Great for ages 6 – 13. Our nature programs include our Bird Walk and also Discover Shelling.

Camp Skullywags’ Turtle Tots: Daily for young families, toddlers ages 4 and under can enjoy special activities just for them. Go! Fish: Guests can test their fishing skills right off our T-Dock with a Coordinator’s assistance. We supply the rod and bait for you and will teach you what type of fish are brought up. Dennis Tassler joined Interstate Hotels & Resorts on August 13th as the Executive Chef of South Seas Island Resort. Bringing over 30 years of culinary experience to the Resort he has gained his knowledge while working at properties in Colorado, U.S. Virgin Islands, Florida, Arizona, Atlanta and Connecticut. Chef Tassler has been on the opening team for Three Independent Restaurants as well as Three Resorts ranging from 750 to 1,400 Rooms. Having spent 16 years previously with Hyatt Hotels, Chef Tassler has been involved in numerous task force missions and Hotel Openings in the Cayman Islands, Aruba, Puerto Rico, Trinidad and Toronto to name a few. These missions have afforded him the opportunities to be involved in many high profile events; participating in Four Superbowls, Three General Managers Conventions as well as the honor to cook for several dignitaries such as Queen Elizabeth and President Obama while catering the 5th Annual Summit of the Americas and the World Summit respectively.

Pan Seared Duck Breast with Herbed Risotto RASPBERRY SWEET AND SOUR DEMI, COCONUT MANGO COULIS JALAPEÑO BACON-RED ONION JAM CHARRED VANILLA CARROTS
INGREDIENTS Duck 4 ea. Duck Breast | 2 TBSP Olive Oil | Salt and Pepper
Over low heat add raspberries, vinegar and brown sugar and simmer until blackberries have fully broken down. Pass through a wire mesh strainer to remove seeds. Add demi, bring to a simmer Score the skin of the duck breasts in a criss-cross pattern, making sure not to cut the meat. Season Duck with Salt and Pepper, Heat oil and reduce to desired consistency: set aside. over high heat and place duck skin side down and get a hard sear Coconut Mango Coulis until golden brown. Flip duck over, reduce heat and set aside. Duck 1 ea. Mango, Peeled and Diced should be cooked medium rare and left to rest. Slice right before 2 C. Coconut Milk plating. 2 TBSP Honey Risotto 1 C. Arborio Rice ½ Yellow Onion Finely Diced ¼ C. White Wine 3 C. Chicken Stock 1 ea. Sprig Rosemary Finely Chopped 1 TBSP Chopped Thyme ¼ C. Mascarpone Cheese 2 TBSP Olive Oil Salt and Pepper To Taste
Cook all ingredients over low heat until mango is soft, blend in mixer until smooth. Jalapeño Bacon-Red Onion Jam 4 Strips Jalapeño Bacon 1 ea. Red Onion Finely Diced 2 TBSP Brown Sugar 1 C. Balsamic Vinegar
Chop the bacon into small pieces and put into cold sauté pan over medium-low heat. Slowly render bacon until crispy (about 10 minutes). Do not drain grease; add chopped onions and sauté until Heat the olive oil in a saucepan on a medium heat. Sauté the onion translucent. Add the brown sugar and vinegar, then lower the heat for 3 minutes until translucent, then add the rice and stir consistently and cook until all liquid is absorbed. for about two minutes until it starts to brown, deglaze with white Charred Vanilla Carrots wine and add fresh herbs. Once the risotto has absorbed all the wine, lower the heat and gradually add the chicken stock, one ladle 4 Ea. Baby Carrots ¼ C. Vanilla at a time, stirring between each addition and only adding more 1 tsp Olive Oil liquid once all the liquid has been absorbed. Right before serving, 3 TBSP Salt fold in mascarpone cheese to create a creamy consistency, adjust seasoning. Blanch carrots in salted boiling water, cool in ice water. Split in half and soak in vanilla for approximately half an hour (I would prep the Raspberry Sweet and Sour Demi carrots first). Sear over high heat right before serving. ½ Pint Raspberries ¼ Cup Red Wine Vinegar 2 TBSP Brown Sugar 1 C. Demi-Glace

Marinas and International Coastal Cleanup Fall 2019 Newsletter 2019 saw South Seas reopen the Bayside Marina for business! On February 15, 2019, Bayside Marina was reopened for retail and daily fishing charters. Bayside Marina has staffing daily from 8AM – 4:30PM to meet all your and fishing needs. Fishing charter boats run out of Bayside Marina full-time with charters going daily. Call the office to book your next great outing! Along with fishing charters, Bayside Marina offers exclusive Bayside Marina logo clothing, snacks, fishing tackle, and cold beer! On Saturdays at 10AM, we offer a casting program for all ages to come and try your skill against our casting targets. All levels of experience are welcome. Stop by Bayside Marina and check out the new space and activities. Bayside Marina is open 7 days a week, from 8AM – 4:30PM. Call 239-472-7570 or room extension 7570. On September 21, 2019, South Seas participated in the International Coastal Cleanup in cooperation with Keep Lee County Beautiful. South Seas staff members and their families volunteered on their day off to come out to walk the 2 miles of beach, picking up trash along the way. The 22 volunteers met at 8AM to gather supplies and began the walk at the South Beach area on South Seas Island Resort. Over the next 3 hours, the volunteers picked up 16 bags containing approximately 80 lbs. of trash from our beaches. Items included crab traps, socks, boards, Styrofoam, fishing line, bottles, and barrels. The team of volunteers had a great time and made great memories while keeping our beautiful beaches beautiful! Guests can fish at the T Dock or on a fishing charter without purchasing a license. Children under the age of 16 do not need a license. All ages can participate in South Seas’ Go! FISH catch and release program taught by resident fishing experts at the T-Dock.
