Dear Friends, Welcome to the Winter Issue of Island Vibes – and Happy New Year! To those new to our island oasis, Island Vibes newsletter affords a glimpse into South Seas Island Resort’s multitude of happenings. To our return guests, we hope you’ll have the opportunity to “just escape” again in 2020. 2019 was a year of excitement here on our little slice of paradise. We were thrilled and honored to host the Hobie 16 World Championships. It marked the first time in 35 years that the Championships had taken place in the United States! The famed race brought almost 500 sailors from 25 countries and 6 continents right here to South Seas, where our beloved Sunset Beach served as the perfect launching spot for sailors. South Seas once again hosted the much-loved Holiday Stroll with a special concert by Peter Mayer, Island Hopper Songwriter Fest, and Yacht Rock Weekend. We also continue to host the Captiva Island Farmer’s Market every Tuesday through April 30th. Over the past year, guests have enjoyed our newest Sunset Beach hot spots, Latitudes Food Shack and Attitudes Beach Bar. We see the memories guests make at Sunset Beach - whether during the day or during our signature “Sunset Shellebration” - when they share photos via social media, and it warms our hearts to know we've helped to facilitate those memories. Guests have raved about the transformed Ships Store, which now boasts many more food and beverage options, gift items, and other souvenirs. We hope you’ll visit it, too, during your next stay. As always, few things make more of an impact than seeing romantic proposals and breathtaking weddings taking place at our resort. Sunset Pavilion continues to delight couples, and classic locations such as our T-Dock and Sunset Beach offer timeless backdrops for proposals and other unforgettable events. With temperatures in the 80s throughout the winter season, our 330-acre beach retreat offers the perfect backdrop for your island escape. Family vacations, couples getaways, corporate events, and weddings are made remarkable thanks to our stunning landscapes and wonderful staff. Build a wedding team that works seamlessly together. They'll have each other’s backs and will move mountains for you and your guests because they're happy to be at work with each other. 4. Weather can't be controlled and it can't be truly forecasted. How you prepare and react to it is key (decide early!). 5. Plan the best experience first, and the look of your wedding will be the icing on the cake. 6. Always get a videographer. 7. Don't over plan your schedule. With a degree in Culinary from Le Cordon Bleu, Cory was presented with an opportunity to move home and work at Blue Talon Bistro, a David Everett Restaurant. It was in the kitchen at Blue Talon, in his hometown, Cory developed a degree in comfort food with a French twist. Cory then took his talents to the Colonial Williamsburg Foundation, crossing paths with our own Chef Ken Clasen. Cory worked at Colonial Williamsburg for 2 years then made a move to The Wink Hotel in our nation’s capital, Washington D.C. After a stint at The Wink, Cory landed at beautiful Captiva Island. Cory’s main focus is The Pointe/Tiki Bar, Sunset Beach’s Latitudes, as well as Scoops & Slices. We look forward to Cory’s menu ingenuity and creative thinking to play an integral part in taking our culinary team to the next level.

Pan Seared Grouper with Cauliflower Purée Topped With Candied Walnut, Bacon & Crab Crumble, Garnished With Baby Micro Greens & Pickled Radish, Served With Broccolini & Baby Carrots.
INGREDIENTS
GARNISH
6-7 oz - black grouper 2 - heads cauliflower cut into florets 1 - tablespoon candied walnuts 1 - tablespoon chopped bacon 1 - tablespoon fresh lump crabmeat 3 - each broccolini 2 - each baby carrots cut in half Salt and pepper to taste

For the Cauliflower Purée: - Bring a pot of water to a boil with salt. - Once the water is at a boil, cook cauliflower for 5 minutes or until soft. - After the cauliflower is cooked, remove the water and drain. - Place cauliflower in a blender, season with salt and pepper, and blend until smooth. - Set aside for use later in the recipe. For the Crab Mix: - In a sauté pan on medium heat, cook the bacon slow to render out the fat and crisp it up. - Once the bacon is cooked, strain the fat and place back into the sauté pan. - Next, add in the crab meat and walnuts and sauté for 2-3 minutes or until the mixture is hot. - Set aside for use later in the recipe.
Cooking the Grouper: - Place a medium sauté pan on the stove over med-high heat and bring up to temperature. - While you are waiting on the pan to get hot, season the grouper with salt and pepper. - Now that the pan is hot and the fish is seasoned, add in 2 tablespoons of oil to the pan and sear the grouper for 3-5 minutes per side (you are looking for a golden brown color). - Once the grouper is seared and cooked to 145°f, set aside on a paper towel to soak up any extra liquid. For Sautéed Vegetables: - In a sauté pan on med-high heat add in 1 tablespoon of olive oil and bring up to temperature. - Next, add the broccolini and carrots and sauté for 3-4 minutes. - Season with salt and pepper to taste. - After sautéing for 3-4 minutes, add in 1 teaspoon of butter and reduce the heat to med-low and toss till the butter is melted. Plating the Dish: - Place the Cauliflower Purée down in the middle of the plate. - Place the grouper on top of the purée. - Take the crab mixture, and spoon on top on the grouper. - Place the sautéed vegetables off to one side of the dish. - Garnish with thinly sliced red radish and fresh micro greens.

We Have A Big Announcement!
Our courts will be getting resurfaced this year, and part of the project will include adding Pickleball lines to 3 of the tennis courts (for a total of 6 Pickleball courts)! Pickleball is a paddleball sport that combines elements of tennis, badminton, and table tennis, and it's one of the fastest growing sports in the country!

Captain Ozzie Fischer Born and raised on Captiva, FL, Captain Ozzie Fischer is a 2nd generation guide eager to fish for anything swimming in the water. Fishing at South Seas for 24 years, Capt. Ozzie’s favorite fish to catch are giant snook. The Bayside Marina is a Historical House that has been re-located at the Bayside Marina and the resort will run all fishing charters out of the space. The space will feature fishing charters, fishing tackle, live and frozen bait and much more!!! Adjacent to the building is a brand new paver patio area for relaxing and hanging out with friends and watching the boats return from a day of fishing on Pine Island Sound. Good times and memories will be had by all at the new Bayside Marina.
