It has been a long journey to get to where we are now and, as Boris likes to remind us, we still need to approach the future with caution. Let's sensibly celebrate what we have all achieved together as we build back bigger, better and stronger. Now is the time of the staycation. Many of us have been holidaying in the UK for years, but with the Covid situation as it is in so many other countries around the world many more of us have embraced what the British Isles has to offer. A rich bounty of home-grown goodness. With so many great destinations right on our doorstep we are realising that we didn't really need that eight hour flight. Spending time with your loved ones is ultimately much more important than recreating a Life on Marbs. The importance of our local communities has never been so prevalent in our minds, and at the centre of these are the local businesses which have supported and served us over the years. Now is our time to support them. The shops, pubs, restaurants, theatres and many other local businesses which come together to form an integral patchwork quilt each as diverse as the next. Without them we will just be a society of next day deliveries. So remember your local pub... needs you.

Tony Cragg at Houghton Hall Now until 26 September Major works by the celebrated British sculptor Tony Cragg are on show in the grounds and historic interiors of Houghton Hall in Norfolk. The exhibition, curated by the artist himself, includes large-scale bronze and steel sculptures sited in the gardens and grounds, and smaller pieces shown in the State rooms and gallery spaces of the house. Several new works have been made specifically for the exhibition. Lord Cholmondeley, owner of Houghton, said: "Tony Cragg at Houghton is the sixth contemporary art exhibition held at Houghton since 2015. I am particularly grateful to Tony for the chance to show his sculptures here in Norfolk, and for agreeing to curate the exhibition himself. As life is no longer, for the moment, as we once knew it due to the challenges of Covid 19, we have been faced with some extraordinary logistical problems; not least transporting exhibits to the UK from Tony’s studio in Germany. aving spent what feels much longer than a year in slippers and ‘nice tops’ we’re getting closer to enjoying life as it used to be. And whilst we’ve been patiently waiting in the wings, many of our favourite venues have been hard at work making sure they’re Head Out Not Home July 2019 safe to welcome us back and, in some cases, able to offer us more things to do than before. We’ve seen a lot of innovation, thinking outside the box and investment taking place. Staycations are the big travel story this year. The spotlight has never shined so brightly on domestic travel destinations near and far. TV has adapted and we’ve looked down the lens watching unique travelogues from around our beautiful isles – in all weathers – it’s been an absolute delight to watch. I think we’ve all learned something from these shows. One lesson being that destinations in the UK can still be enjoyed thoroughly in our wetter, colder months and that no matter where you are there is delicious seasonal food and drink to enjoy. We just need the right clothes and attitude. Yes, we’re back to being fully dressed again. Another lesson learnt has been that whatever we thought we knew about our home there is still more to discover. This summer The Assembly House in Norwich opens three new bedrooms to add to the eleven they already have. I can’t wait to see what they look like. Last summer I treated my family to a one-night stay, and though it was only a short distance from home it was a wonderful stay! Being able to walk in high heels to a restaurant close by and getting to my favourite shops in minutes was really great. And we did what we do when we go ‘away’, we enjoyed fabulous meals and food, we ate well and frequently in 24 hours! We really made the most of our surroundings and perfect city centre location. I can’t

Gone are friends and family members frozen on screen with seconds feeling like minutes as we wait to reconnect, and gone are the days of only being dressed from the waist up. wait to do the same again this summer. The Myrtle Fish is a new elegant Edwardian-style Frolic 31 electric launch from The Maids Head Hotel. It makes me happy to see such a lovely new way to enjoy more of Norwich and the river Wensum. The Myrtle Fish will take landlubbers on a two-hour gentle motor to Whitlingham Country Park through Norwich. Passengers will gain a new perspective of the city from the water, a river which hundreds of years ago was busy with traders bringing exotic goods and textiles from the continent. Some Myrtle Fish services will also include afternoon tea – less exotic but definitely more refined than the 17th century! Further al fresco pursuits include a two-hour walking tour - Norwich: A Black History with Paul Dickson Tours (tickets £7.50). This themed tour proved so popular in autumn last year for Black History Month that Paul now offers it all year round. The Shakespeare Festival in Norwich Cathedral Cloisters returns with Macbeth (9-10 July, £20); buy food and wine at the venue or bring your own to enjoy a picnic. Hot on its heels is the latest GoGo sculpture trail, GoGo Discover (12 July–11 September). Cafe Gelato
Look out for 20 huge T.rex dinosaurs situated on the streets of Norwich here to accompany Dippy on Tour at Norwich Cathedral (13 July–30 October), in what will be a dinosaur themed summer here in Norwich. And to add to the excitement, Norwich Business Improvement District brings a prehistoric City Food Trail offering dino-dishes (not to be mistaken for dishes made of dinos) and special offers. Look out for dinosaur shaped neon lights in the windows of participating restaurants, cafes and pubs. Heading indoors we have treats too. I’ve really missed our city museums and art galleries full of treasures, but worry not because they’re back! From 17 May until 4 July scoot up to Norwich Castle Museum & Art Gallery to see a masterpiece on loan from the National Gallery in London. Bellotto’s majestic painting The Fortress of Königstein from the North (1756-8) is on view, considered to be one of the most impressive and original 18th century landscape paintings in the artworld. Being two-meters wide this exquisite piece is certainly a painting to ponder. The Königstein fortress was built in Germany in the 13th century and still exists today, situated around 25 miles from Dresden. Another reason (as if we need a reason) to visit Norwich Castle is to experience their exhibition A Passion for Landscape: Rediscovering John Crome. Celebrating the works of John Crome on the bicentenary of his death in 1821, we have a collection from this great Norwich School painter known as one of Britain’s great Romantic artists. This will be the first major Crome exhibition since 1968, so isn’t to be missed. Crome’s landscapes of Norfolk are even more compelling right now as we’ve enjoyed so much of the outdoors in the county over the past year, it seems fitting that the re-opening of the castle includes such incredible works of natural Norfolk.
And sticking with outdoors, after all it is finally the beginning of summer and hopefully good weather. Head back to the city on Sunday afternoons from mid July to September for Norwich Business Improvement District’s new season of Head Out, Not Home. Moving to Sundays from its usual Thursday evenings, this free entertainment programme will keep shoppers, families and visitors amused whilst bringing an uplifting and jovial mood to Norwich. Grab a delicious authentic ice-cream from CafeGelato on Opie Street and sit back and enjoy. Finally, Tombland has had a makeover. There are now more outdoor tables to enjoy food and drink than ever before. The Giggling Squid alone has seating for 100 and if like me you’ve been in Norwich since mid-April, I’m sure you’ll agree that all the extra outdoor tables with people enjoying themselves has really added to the city centre atmosphere. Fancy a city centre overnight stay? Make the most of Norwich this summer by booking even if you’re local. The Assembly House has one-night stays for two for £199 including afternoon tea and a bottle of fizz in your room (17 May–1 September). The Maids Head Hotel has rooms from £120 including breakfast per night (and some rooms accept dogs). Gothic House B&B is just £105 per night plus there are rooms at Best Western Annesley House on Newmarket Road and Stower Grange in Drayton. Crome
A traditional seaside town with a world-famous pier and plenty to do in or out of the sea
T
his popular Victorian resort is known as the ‘gem of the North Norfolk Coast’. Its main attractions have changed little over the years, yet continue to draw visitors from around the world: there’s the atmospheric pier, home to the Pavilion Theatre, where the UK’s only remaining traditional end of the pier variety show takes place each year. Add in the delicious namesake crab and beautiful blue flag beaches and it’s no surprise this is still a holiday hotspot.

Detective Sara Hirst returns in this crackling, twisty thriller set in the mysterious beauty of North Norfolk. Author Judi Daykin lives in North Norfolk and was determined that her stories would be set in the countryside around her own home. “I’ve lived in Norfolk for over forty years, and I love the countryside on the north coast. ow is the time to embrace the good weather as well as the easing of restrictions. It has been such a long journey to get to the point where we can see loved ones and maybe, just maybe... hug them. The garden has been tidied and you have dusted off the BBQ, however this is now the time to stop and think. Do
you really want to just roll out the same old stalwarts of the garden menu? The same old collection of slightly burnt burgers and dull salads just won’t cut it, especially as this is a time to rejoice. Pimp up your menus with some of these great dishes or create a banquet for your garden guests and cook them all... just make sure you stock up on doggy bags.
Mutti falafel burger with salad, spicy tomato sauce & lemon tahini 8 SERVINGS INGREDIENTS: • 8 burger buns • 1 head of lettuce or other salad FOR THE FALAFEL (16 PIECES) • 220g dried chickpeas (no canned or cooked chickpeas, this is very important) • 1/2 onion • 25g fresh parsley • 10g dill • 1 teaspoon salt • 1 teaspoon all purpose flour • 1/2 teaspoon cumin • 1/2 teaspoon coriander • 1/2 teaspoon pepper • 1 teaspoon baking powder • 1/2 teaspoon baking soda • Oil for frying (enough to have about an inch in your pan) SPICY TOMATO SAUCE • 300ml passata • 1 tablespoon oil • 2 small chilis, finely chopped • 2 tbsp soy sauce • 2 tbsp maple syrup • 1/2 tsp cornstarch diluted in 3 tablespoon of water
METHOD: FALAFEL The night before, add dried chickpeas to a bowl and cover with water and 1/2 teaspoon of baking soda. Let them soak overnight. The next morning, drain chickpeas very well. Add chickpeas, chopped onion, parsley, dill, salt, pepper, cumin, coriander and flour to a large bowl and toss to combine. Working in small batches, process in a food processor. Texture should be like coarse meal. Cover the mixture and refrigerate for at least an hour. Add an inch of oil to a skillet and heat to 180°C. Form the falafel: stir in baking powder, add a couple tablespoons of the mixture to the palm of your hand, form a ball,
and slightly flatten the ball. The mixture doesn’t hold together all that well, so just be gentle and steady with the pressure. Carefully drop the falafel in the oil and fry for 3-5 minutes until medium brown on the outside. Avoid over-crowding the falafel. Be sure the oil is at the correct temperature before adding the next batch. Transfer cooked falafel to a paper towel lined plate to drain. SPICY TOMATO SAUCE Heat the oil in a skillet over medium heat. Once hot, fry the chili for 1 minute. Reduce the heat and add the passata. Bring back the heat to medium and cook for about 5 minutes. Pour in the soy sauce, maple syrup and cook for 3 more minutes, stirring regularly. Add the diluted cornstarch
LEMON TAHINI • 1/3 cup tahini • 1/3 cup fresh lemon juice (2 small or 1 1/2 large lemons) • 1 tablespoon olive oil • 1 teaspoon maple syrup • 1/2 teaspoon salt • 2 tablespoons water
and mix to combine, cook for about 2 minutes or until thickened. LEMON TAHINI In a small bowl, combine the tahini, lemon juice, olive oil, maple syrup, and salt. Whisk to combine. Add the water and whisk until a creamy dressing forms. TO ASSEMBLE: Cut the burger buns and toast them in the oven or in a toaster. Add lemon tahini on the bottom, cover with salad leaves and falafel. Top with the spicy tomato sauce and close the burger. Serve immediately. 27

SERVES: 6 INGREDIENTS: • 1 small brown onion, diced small • 150g fresh or frozen peas (thawed), reserve some for serving (optional) • 400g tin of chickpeas, rinsed (drained weight 230g) • Large handful fresh spinach, washed • 2 large cloves garlic, peeled • 50g tahini paste • Salt & pepper • Large sprig of fresh mint leaves, washed – reserve some for serving • 20g pine nuts, lightly toasted • Small handful dill and sesame seeds for serving METHOD: Place the diced onion with a dash of oil or water into a small frying pan with a lid and cook over a low heat until they become soft and translucent (5-10mins). Remove the cooked onions from the heat and pour into a food processor. Add the peas, drained chickpeas, spinach, garlic, tahini, seasoning and mint leaves (reserve some for serving if desired). Pulse until smooth and creamy. Transfer the mixture into a serving dish and top with the toasted pine nuts, extra mint leaves, dill and sesame seeds. Serve with breadsticks or raw, sliced vegetables.

The vibrancy continues with this stunning show stopper of a tart, which doubles up as a nutritional powerhouse of a main course. SERVES: 6 INGREDIENTS: BASE • 200g buckwheat flour • 150g oats • 100g hazelnuts, ground • 40g sesame seeds • 100g coconut oil, melted • 1/2 cup gram flour • 1 tbsp xylitol sugar alternative (available as Total Sweet) • 1/2 cup water • 1 grind sea salt FILLING • 1 block firm tofu 396g net weight, drained • 150g gram flour • 250ml water • 1.5 tsp wholegrain mustard • 30g cup nutritional yeast flakes • 1/2 tsp kala namak salt (optional) • 1 clove garlic peeled • 1 tbsp of turmeric TOPPING • A selection of your choice of tomatoes, enough to cover the surface of the quiche. I used 5-6 of different sizes. Slice larger ones and halve the smaller ones. • 2 red onions sliced

This colourful pate tastes as fresh as it looks and kick starts this spring meal with an air of excitement.
Turmeric, thyme & tomato with red onion vegan quiche
METHOD: BASE Process the hazelnuts to a fine crumb texture in a food processor. You could sub the hazelnuts for almonds or ground almonds. Then pour the ground hazelnuts into a large bowl and add the buckwheat flour, oats, sesame seeds, gram flour and salt. Melt the coconut oil gently in a pan and add the xylitol. Gradually pour the melted mixture over the flour mixture and work quickly with a spoon to mix until you reach a crumb-like texture and no dry flour remains - scrape down the sides of the bowl until all ingredients are combined. Now, add the water and continue to stir and combine well. Pour the mixture into the flan baking dish (my dish measures 35cm dia - adjust the quantity of the ingredients to suit your size of dish). Press the mixture flat and up the sides of the dish until evenly spread. Smooth out with the back of a spoon. Bake the base blind (without the filling) in a preheated oven for 10 minutes. Remove from the oven ready for the filling. FILLING While the base is baking in the oven. Wash out the food processor jug (if used from the hazelnuts). Add the drained tofu, gram flour, mustard, nutritional yeast flakes, kala namak salt (if using), garlic, turmeric and water. Process until smooth. Pour the filling into the base and smooth out using the back of a spoon or spatula. Top with the sliced red onion and tomatoes, ensuring the topping is generous to provide maximum flavour per slice! Bake in the oven for a further 2025mins until baked through and turning golden. Remove from the oven and add sprigs of fresh thyme, a drizzle of balsamic vinegar and a scattering of sesame seeds before serving. RECIPE NOTES Serve alone or with green salad leaves. 29

INGREDIENTS: • 3 small oranges – sliced thinly • 200g softened butter (150g for the cake, 50g for oiling the baking paper) • 100g xylitol • 4 large eggs, beaten • 50mls plain yoghurt • 150g spelt wholemeal flour • 120g ground almonds • 2 tbsp desiccated coconut • 2 level tsp baking powder
DID YOU KNOW? Upside-down cakes have existed for hundreds of years and originated when cakes would have been cooked over an open fire. An ingenious way to get a decorative top adorned with caramelised fruit was to put the fruit and sugar in the bottom of a pan over the fire. When the cake was cooked and the pan was turned out the unattractive top became the bottom and the fruity goodness on the bottom became the tasty looking top.

METHOD: Start by lining the bottom of the tin with the baking paper. Using a clean paper towel, spread 50g of the softened butter on top of the baking paper in the tin. Arrange the orange slices, starting from the middle and working towards the edges, overlapping as needed to cover the bottom of the tin. Set to one-side while you make the cake mixture. Cream the remaining softened butter and xylitol together in a bowl. Add the beaten eggs and yoghurt and whisk until incorporated. Next, gradually whisk in the spelt flour, ground almonds, desiccated coconut and baking powder until you reach a smooth batter consistency. Gently pour the batter on top of the arranged orange slices and spread evenly. It may help to pour the mixture
in 4 sections and use a spatula to gently smooth the batter over the oranges, so as not to disturb them. Bake in a pre-heated oven at 180°C (160°C fan oven) for 45mins. Place a piece of foil over the cake during the last 10-15 minutes if it begins to brown too much. Remove from the oven, allow to cool for 15mins. Once cooled, release the spring-release and lift away the edges from the tin. Place a plate on top of the cake and quickly turn the cake so that the oranges are now on the top. Carefully peel the baking paper off to reveal the cake. Best eaten on day of making. If you store any uneaten cake in the fridge and find it has soaked up the juice from the orange slices, you can re-heat the cake for10-15mins to help dry it out again.

FOR THE BASE INGREDIENTS: • 100g walnuts • 100g ground almonds • 150g buckwheat flour • 100g unsalted butter (or vegan spread) • 1 tbsp xylitol sugar alternative (available as Total Sweet) • Pinch salt • 1 egg beaten (or 2 tbsp ground flax seeds) METHOD: Place the walnuts into a food processor and pulse until finely chopped. Add the ground almonds, buckwheat flour, butter (or vegan spread), xylitol and salt. Pulse until the mixture resembles breadcrumbs. Next, add the beaten egg (or ground flax seeds) and a splash of ice-cold water and pulse a couple of times, just until the mixture comes together. The mixture will still be a little crumbly at this point but turn out the mixture onto a floured surface and knead gently until it comes together a bit more. Then wrap in clingfilm and leave to chill and rest in the fridge for about 30-60mins. Place the chilled pastry onto a clean board, dusted with flour and use a rolling pin to gently roll out the pastry to a length and width to fit your baking tin, with enough to leave some to go up the sides of the tin. Gently transfer the pastry into the baking tin and use your clean fingers to press into the shape of the tin. Using a fork, prick all over. Place the tin into the fridge for 30mins to set. This will prevent the pastry from shrinking during cooking.

his tart showcases some fabulous ingredients and looks and tastes good enough to be on the finest restaurant menu, so will definitely enhance any garden party to impress family and friends. Serve with dill pesto and simple steamed vegetables or salad leaves.
After chilling, place a sheet of baking paper over the pastry and then add some baking beans or some uncooked, dry rice to weigh the baking paper down. Bake the pastry in a pre-heated oven at 180°C for 10 minutes. Remove from the oven ready for adding the filling ingredients.
FOR THE FILLING INGREDIENTS: • 5 medium sized free-range eggs beaten • 1 tbsp milk • 100g smoked salmon • 1 small courgette cut into ribbons using a peeler • 4 asparagus tips, washed and halved lengthways • 50g watercress, remove any thick, tough stems • 100g feta cheese, crumbled • Salt & pepper seasoning METHOD: Mix the milk into the beaten eggs then pour the mixture into the prepared tart
base. Next, take small amounts of the smoked salmon and pinch together, placing the salmon at even intervals within the egg mixture. Then, do the same with the courgette ribbons, asparagus tips and finally the watercress. Crumble the cheese over the dish and season well. Bake the tart in a preheated oven for 20-25mins. Place a piece of foil over the tart if it begins to brown on top towards the end of the cooking time. Remove from the oven and allow to cool slightly (or fully depending on choice). Serve with a drizzle of dill pesto and fresh greens.
DILL PESTO INGREDIENTS: • 30g dill • 20g fresh basil • 4 tbsp olive oil • Juice of ½ lemon • 2 tbsp fresh parmesan cheese, grated METHOD: Place all ingredients into food processor, blitz and serve. 33

Skinny sausage burgers with pea houmous & spicy beetroot salsa SERVES: 4 INGREDIENTS: • 1 pack Powters Skinny Pig Sausages • 4 brioche burger buns FOR THE PEA HOUMOUS: • 250g frozen peas • 1 clove garlic Less than 3% fat • 1 tbsp olive oil • Juice & zest of 1 lemon • 1 can chickpeas, drained with 2 tablespoons brine reserved • 2 tbsps tahini • Handful mint and chives FOR THE SPICY BEETROOT SALSA: • 500g raw fresh beetroot, cut into 1cm chunks • 2-3 tbsps dill seeds • Bramley apple, peeled and chopped • 2 red onions, peeled and chopped • 1 red chilli, de-seeded and sliced • 250g caster sugar • 250ml red wine vinegar METHOD: Grill the sausages on the barbecue until gently charred and cooked through. To make the pea houmous, cook the frozen peas in a pan of boiling water for 2 minutes, or until just tender. Drain and run under cold water, then drain again. In a food processor, whizz all but a handful of the peas with the remaining ingredients. Blend until smooth then fold through the remaining peas. To make the Spicy Beetroot Salsa, place the beetroot in a saucepan with the remaining ingredients and bring to the boil. Once boiling, turn down the heat and simmer slowly until the beetroot is tender, the liquid is reduced and sticky and the mix has a thick, jam-like consistency. Grill your brioche buns and top the base with your chosen relish before arranging a layer of sliced sausages on top. 34

Remember to keep them light and fruity and multiply up the ingredients if you have to serve large numbers. Keep a large stock of ice in the freezer - it’s always easier to buy the ice in bags, not only is it more convenient but the water has normally been filtered removing the residue normally left by regular tap water.
Grapefruit & gin fancy SERVES 2 INGREDIENTS: • 80ml gin • Grapefruit, thinly sliced • 2 tbsp lemon juice • 100ml grapefruit juice • Lemonade, to top up METHOD: Stand a grapefruit slice upright in a tumbler and add a few ice cubes. Pour in the gin and the lemon and grapefruit juices, stir, and top up with lemonade.
Bitter sweet daiquiri SERVES 2 INGREDIENTS: • 1 Berczy Lemon & Lime • 400g strawberries, plus extra slices to garnish • A few dashes of angostura bitters • 50ml-100 ml white rum or vodka • 2 limes, juice 1, slice 1 • A few sprigs of mint METHOD: Blend the strawberries, then add the lime juice and a few drops of angostura bitters to taste. Add the rum or vodka and blend again. Take two highball glasses and layer with the ice, strawberries, lime slices and mint. Add the rum mixture and top up with Berczy Lemon & Lime. Add more mint, strawberry and lime slices to finish.
Rose, peach & raspberry sangria SERVES 4-6 INGREDIENTS: • 1 Berczy Peach & Raspberry • 500-750ml Rosé wine • 4 peaches, sliced • 2 lemons, slice 1½, juice ½ • 150g raspberries • A handful of thyme sprigs METHOD: Blend two of the peaches with the lemon juice and 150ml of the rosé in a blender until smooth. Layer the peach slices, thyme and raspberries with ice in a jug, pour the peach mixture and the rest of the rosé in four alternating pours. Top with Berczy Peach & Raspberry. Pour into glasses to serve.

It’s time to turn your garden in to the extra room outdoors
E
ntertaining in our gardens is a great way to enjoy the weather, especially as lockdowns are easing and we can start to see our friends and family again. We are all going to be using our gardens to the max this summer so it’s time to pimp up your outdoor spaces and make them into an extra room. Sorting out your garden can really feel like an extension to the house. Opting for versatile and relaxing spaces which can be enjoyed in the evening as well as in the day is the way to go. Not all of us are blessed with large gardens so it is definitely key to make the best use of what we have. Remember that Rome wasn’t built in a day, so plan out your big projects wisely to maximise your time at the weekends. Here we have compiled some suggestions to inspire you on the road to the garden of your dreams.
Bi project
Is your garden in need of a major makeover? The best way to start is write down a wish list of everything you would really love to have in the garden. Create a board on Pinterest and capture your ideas which give you inspiration to work towards. Do you want a water feature? What about lighting? Now is the time to plan for these features because you will have to think about things like power or drainage. It is easier to dig the channels and bury the heavy duty cables to run the power before you lay the lawn or patio. Think about what you are going to use the space for? Is it a grown-up space for entertaining and relaxing, or do you want it to be an exciting sensory experience for younger members of the family? Whatever the end product will be, make sure you have thought of every eventuality, because unless you are going to employ a landscaping company you
will ultimately be the project manager… so the buck stops here. After you have planned out large features and thought about drainage and cabling you need to think about the build. Are you laying a patio? Building decking? And what order should you be completing each section? Maybe complete all of the heavy duty work before you lay the lawn, this way wheelbarrows and other equipment won’t churn up your new turf before it has had time to become established.
Decking and patio areas
If you have a large expanse of lawn this is a great way to break this up and add in sections to your garden to accommodate your garden furniture. Only have a small space? Create a low maintenance continental courtyard feel with some textured slabs in a warming colour. Raise up areas with decking, just remember not to go too high or you might be intruding on your neighbours privacy or even need planning permission if you went over a certain height. Ultimately we want a deck not a mezzanine floor. Import things to note are where in your garden are these sections being placed. Where does the sun sit in your garden? It's pointless creating a seated section in the part of the garden which is permanently in shade.

Summer house or pagoda?
These can be a big investment, but can be so worth it. The right summer house for example can create an extra room to enjoy throughout the year. Dining and entertaining in these spaces can give you great enjoyment and the decor and furnishings can be full of colour and adorned with decorations you wouldn’t normally consider in the main living areas of your home… let your imagination run wild. Yes they normally come with a price tag to match, but from our experience it is most definitely money well spent. Now this is something to give some serious thought to. We appreciate they are not for everyone – they are really relaxing and great fun, but they can take a lot of looking after so make sure you really want one and it's not going to be a fad.

Once again we have two clear categories here – wired or solar, each bringing their own challenges and benefits... but which one to choose? All exterior lights need to be protected from the elements, especially if they are of the wired variety – you can never take any risks with electricity, so if in doubt it is always best to talk to an expert. All garden lights need to rated at least IP43, ensuring that they’re safe and will endure outside. You will generally find that solar variations will have a lower IP rating than the wired kind. Installation Solar lights are pretty easy to install. Something like a rock light to light up pathways or add a little blast of light to a flower bed just need to placed, what could possibly be easier than that? Just remember to make sure the solar panels get enough light throughout the day to charge up. Other solar lights normally just need a few holes drilling to secure them in place. 38
Wired lights on the other hand take a little more effort as cabling will have to be run. If you are running cables in the ground this ideally needs to be done pre-build and using the appropriate products to ensure that the wiring doesn't degrade in the ground and that it is safe if it is accidentally dug up. Outdoor sockets can be added to plug appliances like water features. It is best to get a qualified electrician to do this. Let it shine The level of brightness and the quality of light mainly depends on how much you spend, however generally speaking the wired variety will generate a brighter and better quality of light than its solar powered cousin. Things to look at are lumen and lighting distance. Also do you want to switch the lights on and off manually or with a smart device like your Alexa or do you want them activated with a PIR when motion is detected?
Get away from the gadgets
There are generally two types of people, those who want to get away from the electronics and those who don’t. If you are looking to turn your garden in to a tech free sanctuary there are plenty of ways to include other types of entertainment. The sound of silence - Part of the enjoyment of the garden is to take the time to enjoy the world around you. You may not live in a tranquil setting of the quintessential English garden but the sounds from an outdoor town space can offer a relaxing break in its own right. Kick back and read a book whilst listening to the sound of nature. Too quiet for you? Bump up the noise levels with a meditation inducing wind chime. Fancy a game? - You don’t have to build a tennis court, why not invest in some super-sized games like a giant Jenga, or take a board game outside? Anyone for scrabble in the sun with a glass of Pimms?
Add a rug to your decking to create a different and luxurious look, just don’t leave it out all night.

Now you have a beautifully landscaped garden with an amazing deck you need somewhere to sit to fully enjoy your garden – get this right and you are ready to kick back and relax. It's worth thinking about whether you are going to be entraining and how many you want to seat on a regular basis. It's no good putting in all this effort to make your garden look fab just to have to rummage around in the garage to find the old camping chairs you occasionally use when hubby drags you off to a wet and windy Sunday league match – by the way it's worth noting at this stage that there is a big football tournament happening between the 11 June-11 July this summer so you may need a quiet sanctuary in the garden to retreat to. Hom grown Now you have gone to all the trouble of laying a new deck or building your amazing summer house it is time to get on with the planting. Here we look at a few tips to get you heading in the right direction.
Planning
You planned out your garden, so you should already have an idea of where you want everything positioned. This will include where you envisioned flower beds or planters will be positioned. Knowing your garden is of utmost importance. Check out the aspect – is it south-facing or north-facing? Knowing where the sun falls in your garden will ultimately determine what and where you plant; not just where you wanted your sun trap decking for when you work on that tan. Doing a soil test will also help you to choose which plants to select. Getting the planting selection wrong can not only be frustrating but expensive. Is your soil acidic or alkaline? If in doubt you can always ask the advice of your local garden centre. Consider the plants you put together as well as the type. After all you want your garden to look great all year round not just a short seasonal burst of colour.
Planting & feeding
If you take your time to plant properly your garden will grow well and live for a long time. Take the time to weed and prepare the soil; add plenty of fertiliser and mulch where appropriate. Don't plant too deep, some trees for example will not flourish, nor should you plant too shallow as this can cause the root ball to dry out. Knowing when to water and feed is literally life and death. Remember that a good watering of the root ball once or twice a week is better than just watering the leaves a little bit everyday. It is the roots that absorb the water, not the leaves. When feeding try and do this every couple of weeks throughout spring and summer, however it is worth remembering that you will need to feed more frequently if you are growing in pots or planters.
Pruning & pests
Pruning can always seem like a daunting task. How much do I cut back? Which bits do I prune? But if you learn how to do this well your plants will grow stronger and will

flower or bear fruit better too. Knowing when to prune, how to cut and shape your plants is the key to success. Research your plants and find out how.
Why not try
Vegetables and herbs - It is worth starting small when it come to planning a vegetable patch. It can be tempting to treat this section of the garden a bit like a supermarket display. Instead stick to a few varieties which you love to use and you will find you will have a better harvest. Don't be under the illusion that you will have an extensive harvest and will be self sufficient like the Good Life, however, you can have some wonderful home grown produce to enjoy. When you reach this stage enjoy the fruits of your labour with a celebration, gather round your friends and family and show off your strawberries. Potatoes are an easy place to start and will have a high success rate with minimum effort. You can always cultivate your own seed potatoes or buy some locally. Remember to earth-up when the shoots reach around 20cm. Dwarf fruit trees - This is an easy way to not only grow a fabulous tree in a pot, but you can also reap the benefits of a fruitful bounty when your tree bares fruit. With so many different varieties to choose from you will definitely find the right one for you.

Pretty Cactus is run by Donna and her lovely team from the shop in Brooke, South Norfolk. Donna started the business in 2018, growing a passion into a business. Donna had always been a plant lover, spending hours in the garden centre and DIY stores picking up sad and reduced plants – nursing them back to health. The homegrown plants were sold at country fayres and craft markets. Before long, Donna was so busy she decided to give up her corporate job and run Pretty Cactus as a full-time venture, opening her very first shop and website to sell online. However, one struggle many of us face is how to spruce up our conservatory after leaving it empty for so long. Do we introduce more décor, do we renovate, or do we change the look of it entirely? Before you pick up that hammer, let us talk about a much easier fix: houseplants. Here are some tips and suggestions on the plants that would love to live your conservatory. If you spent any time on social media during lockdown (how could you not?), then you probably saw your friends, your family members, and the friends of your friends’ family members start to collect plants. While this may have seemed like one of those faddy trends that everyone will love for just few months, I can assure you that this one is here to stay. This is because plants have been cared for and kept in the home, especially in conservatories, around the world for hundreds of years. No matter where you place a plant in your home, it automatically adds decorative touches or acts as the design centerpiece of your space without the hassle of any renovation or installation like your other home improvement projects would. Now, if you already hopped on this bandwagon… good for you – you’re halfway there. But if not, that’s okay; introducing plants into your conservatory to give more of the indoor/outdoor feel you desperately need after a cold winter is easier than you might think. There is a variety of certain plants that will love your conservatory space much more than others; you can pick and choose from these to fit your style and the size of your space without worrying if they’re fit to live in so much sunlight. If you’re just getting started with plants, the easy-to-care-for cactus will come to be your best friend. This resilient family of plants evolved in deserts, so they are already in love
with sunlight. Each species of cacti is also drought resistant, allowing you to go extended periods of time without watering them. You could even leave on holiday for a few weeks and come back to a happy cactus. Cacti are much more than the tall, prickly towers you see in western films; they come in hundreds of species, ranging from the small Baseball Cactus, all the way to the alien-like Orchid Cactus. Even if you have a small conservatory, a cactus can be placed outside in the summertime, adding a decorative touch to any garden. On the other hand, if you’re going for the more dramatic look in your conservatory space, the tall Ficus is going to be more your style. This family of plants is known for the famous Rubber Tree, a plant kept in homes around the world for its stunningly smooth and shiny leaves and commanding presence. And yes, this is the actual plant used to make rubber. While most Ficus species require regular, hands-on care, they can reward you with consistent new growth during the growing season that can reach to heights of multiple meters tall. Depending upon your aesthetic, you can find a Ficus of any size, shape, color, or pattern to fit your conservatory or any other space in your home. In the end, the plants you bring into your home is completely up to you. Keep in mind the level of care and dedication some require and always take advice from the professionals because it could save the lives of your plants and save you the money you may otherwise spend replacing dead plants. House Selling your house? Here are the top 10 things you must do if you want to make a quick and successful sale.

ost of these may seem obvious but many sellers overlook the simple things which can make their home much more desirable and easy to sell. The last thing we all want is to either struggle with selling or have to drop the price dramatically, especially if we have our sights set on our next dream house.

CURB APPEAL It is vitally important to make a good impression to your potential buyers, not only when they arrive for a viewing but also on the photo for your listing on the property sites. This is the first thing everyone will see so make sure that lawns are cut, woodwork is painted and upvc is wiped down.

CREATE A WELCOME Make sure that the entrance to your home is welcoming and organised. Only hang a few coats, not every single jacket that you own... the same goes for shoes. Don’t leave your favourite gym trainers kicked in the corner, although you love them, chances are that nobody else will. Get a door matt, but be careful if you opt for a comedy message printed on it, not everyone will find it funny.

CLEAN This may be one of the most important steps. Clean and then clean again. Let’s be honest, most of us are not completing our weekly routine to the standard of a deep clean. Don’t miss out light fittings, windows and cupboards. Once you have finished this step your work isn’t done... you have to maintain the standard of clean so you are ready for the viewings and not caught out. DECLUTTER Most of us will find this a challenge. You have to be ruthless with this. Do you really need 45 scarves, 99 pairs of shoes and 500 paperbacks? Have a clear out; donate, bin and sell. You will be amazed how quickly you will free up space and how tidy your house will suddenly look once you have shed some unused possessions. Not to mention it will make your move easier with less to pack and give you extra cash for any items you can sell, you’d be surprised how much you will make.

THINK NEUTRALS Have you gone with a bold and creative pallet for the paint and wallpaper in your home? Maybe it’s time to tone down your style and go for something with a wider audience appeal that helps potential buyers imagine their things in your home. A more neutral pallet will help increase the appeal and lighter colours can make the rooms look bigger.

FINISH OFF Now is the time to finish any of those half completed DIY jobs. Does it need repairing? If the answer is yes best get it fixed.
REMOVE PERSONAL ITEMS Your children might be budding artists but it is time to take down the gallery on the fridge and limit the family photos on display. Once again this depersonalises your home and helps the potential buyers to subconsciously imagine themselves living in that space with their own family. You almost need to create a ‘clean slate’ appeal which buyers put their own stamp on.
REARRANGE The way you have set out your furniture and belongings may be the way it best suits you and your family, but is it the most practical or aesthetically pleasing. Rearrange furniture and even remove furniture if things are too cluttered. Nothing makes a room feel smaller than having too much furniture in it. Make sure walk ways are clear and that doors open fully.

NAME THAT SMELL Does your home smell? Are you sure? You might love your pets so much you might be oblivious to their odours. Ask a good friend who will be honest with you and get them to give your home a nose test.

Make sure the environment is quiet, don’t arrange viewings for when your son is competing in a Fortnite tournament or when the teenage children next door have got band practice. Don’t get caught out by property faults in a rush to beat the stamp duty deadline

OU DECIDE to make the move or invest in a holiday home on the coast, now is a great time with the current incentives around. However, a sobering statistic is that 1 in 4 sales fall through, costing the homebuyer on average £2700. Property issues can crop up pre or post sale, ranging from new build snags to more serious considerations for older properties. Any conveyancing solicitor or mortgage broker will advise you to do your homework. After all, you and the lender are investing money into an asset and their job is to make sure the investment is sound. But there are checks you can do yourself for your own peace of mind during viewings.
PROBLEMS TO LOOK FOR IN OLDER HOMES
Older homes are generally more prone to problems after sale. You may not pick this up when viewing and making offers, but, after moving in, they may become apparent. Which include most of the issues you may experience in a new build. Boilers and heating systems are a common issue. Unlike new builds, with a new energy efficient combi boiler and thermostatically controlled radiators, that Victorian property may have a boiler that has not been serviced or maintained in years. You need to assess whether replacing would be a better option than making do with stored hot water and an inefficient and expensive heating system. Damp may be an issue. Don’t forget to look up! Many homeowners see damp as a common issue in older properties. This can be due to condensation which can affect airtight, modern homes. Water ingress from roofs and foundations needs to be remedied, but better air circulation can often improve damp and mould caused by condensation. A reputable builder or surveyor can help identify any issues. Bathrooms. You need to check WCs, bathrooms and en-suite shower rooms carefully for functionality and aesthetics. New homeowners claim that low water pressure, faulty cisterns and leaking shower cubicles are the most common faults. Electricals. While electrical checks must always be carried out by a professional, there are some visible signs of potential problems you can look out for. Singe
marks on light fitting and switches and sockets or visible loose fittings and cracked socket housings are warning signs of poor maintenance and need to be raised with the vendor’s representative.
COMMON ISSUES IN NEW BUILDS
Like any home, new builds can have defects from minor to serious, but the good news is that it is incumbent on your developer to fix these quickly and you can report faults for up to two years. These are some of the most common things to check out. External doors and windows. New homeowners often have issues with new windows and doors. We have heard stories of French doors “moving” in new homes so they are difficult to close and lock. Trickle vents in windows can be badly fitted and we have seen reports of condensation within double glazed panes. Internal doors. As homes “dry out” it’s often inevitable that internal doors move and may need adjusting or removing and planing to make them fit correctly. This is one of the more common complaints in new homes. Kitchens. The heart of the home and one that you will probably spend a lot of time in. Homeowners often point to multiple issues here with kitchen taps, sinks, issues with tiling and finish. Other problems like no holes to accommodate the pipes and cables for washing machines and dishwashers in kitchen units are common. Again, a site foreman or one of the team can easily sort this for you providing you report it promptly. Kitchen units, like the property’s internal and external doors, may need some adjustments too. Reception rooms. Common issues here include ill-fitting electrical points, low quality floor fittings. If you’ve paid extra for these, you can take action but longer term, many new home owners upgrade flooring upstairs and downstairs.
TYPES OF PROPERTY SURVEYS
At their most basic, mortgage companies will ask for mortgage valuations, also known as Level One, this is conducted by a surveyor to provide the lender with a level of confidence that the property is free from major issues. Secondly, a home buyer report probes
deeper and looks beyond residuals, comparisons and postcodes. These are sometimes referred to as Level Two surveys. Finally, a full structural survey, now called a Building Survey, will provide a detailed report on a house. For new homes, a Level One survey will usually suffice if the developer is reputable and registered with the NHBC. Without a doubt though, you will need to go through a process of ‘snagging’ throughout the property to highlight problems needing remedial work by the developer in a timely fashion. Snagging is simply a way of checking that your new home is up to standard. This means that everything works and looks as it should in aesthetic terms. Whichever survey you choose during the buying process, it will identify some potential issues. However, this, in all probability will be after you are already way down the line. There are businesses that do house condition or snagging checks before you commit. These are usually conducted by a professional that acts on behalf of you, the buyer and not the lender, developer or estate agent. The beauty of having an independent house check is that you are completely in-the-know before committing to a purchase that could cost you more money in the long run or even prevent you letting your home out in a timely manner. Independent property checkers are experts that have a checklist of at least 150 checks including interacting with fixtures and fittings. Some also provide a comprehensive report with photos, which you can refer back to time and time again while you are deciding on a property. Property is a major investment and you need to differentiate in a new build and older home whether the issues are serious (subsidence and Japanese knotweed) or minor (low water pressure, doors that don’t fit snugly) and take expert advice throughout the home buying process.

Question: How do I write my will and ensure that it is valid and legal and where are wills kept? Answer: To write a legally valid you will need: • To be over the age of 18 and of sound mind. • To make it voluntarily and not under duress. • To make your will in writing. • To ensure your will is signed in the presence of two witnesses who are both over the age of 18 and • To have two witnesses sign the document in your presence. Wills can be kept by a solicitor, a bank or with companies that offer will storage facilities. Otherwise, you can keep it at home.

Question: What is the 'Tell Us Once Service' that can be used when someone dies? Answer: The Tell Us Once Service is a free service which enables you, on the death of a person, to report in one go the death to all government and local council services. This includes the person’s pension, any benefits they are receiving, passport if they have one, Blue Badge if they have one, council rates, etc. At the time of registering a death the registrar will advise you of the service and will help you by giving you a unique reference number which you can use online or via the phone if you prefer. There is provision for a person registering a death if they have a disability themselves with a video relay service and Relay UK. This service must be used within 84 days of receiving your unique reference number. Question: I think I may be entitled to the Attendance Allowance, but I do not have access to the internet and no close relatives. Can I get help from any organisation to receive and complete an application? Also, how long will it take to get a decision as to whether I am eligible? Answer: Both Citizens Advice (CAB) and Age UK offer help to fill in Attendance Allowance application forms, so give these organisations in your local area a call. You will normally get a 'decision letter' in around 6 weeks - this will tell you whether you'll get the Attendance Allowance. It will also tell you how much you will receive and how long your Attendance Allowance will last for.
Question: What is a personal wheelchair budget and who is eligible? Answer: Personal wheelchair budgets were introduced as part of a range of measures to improve current wheelchair service provision, to ensure people have better experiences of care and to give people greater choice over the wheelchair provided. The personal wheelchair budget model has been developed to include people who are referred and meet the eligibility criteria of their local wheelchair service and receive a face-to-face assessment with a clinician. People who are already registered with the wheelchair service will be eligible when they require a new wheelchair, either through a change in clinical needs or in the condition of their current chair. Inheritance Tax is only payable on a small percentage of estates these days. Carl Lamb looks at the issues for those people who are affected.
T
he prospect of “death duties” used to be a major concern for those with moderate to large estates but nowadays Inheritance Tax (IHT) exemptions are widely available so only a small number of people will now leave estates that will have an IHT liability. However, for those with very large estates and those whose circumstances mean they miss out on some of the exemptions available, IHT remains a significant threat to the legacy they can leave to their heirs. For the average family comprising a couple who are homeowners and have children, there are IHT exemptions that could total £1 million. Every individual has an IHT exemption – known as the Nil Rate Band – of £325,000. If a couple are married or civil partners, any unused Nil Rate Band not used on the death of the first partner is passed to the surviving partner, so if the first partner leaves everything to the second partner, on the second partner’s death the estate has a Nil Rate Band of £650,000. An additional IHT exemption is granted if the value of the family home is left to direct descendants – children or grandchildren plus stepchildren and adopted or fostered children. This is known as the Residence Nil Rate Band (RNRB) and can also be passed between couples who are married or in a civil partnership, if unused. The actual exemption will depend on the value of the property involved to a maximum of £175,000 per person (2021/22 tax year), giving a total maximum RNRB for a couple of £350,000. However, the RNRB is reduced on a tapered basis for estates that are worth over £2 million, with estates losing the entire additional
exemption if they are worth over £2.4 million – or £2.7 million (2021/22 tax year) for a couple on the death of the second partner if the first partner’s RNRB has been transferred. Added together, the combined main Nil Rate Band and Residence Nil Rate Band for a couple would therefore total £1 million, provided the estate is worth less than £2 million. However, if they have no direct descendants, the RNRB cannot be claimed. Unmarried couples not in a civil partnership are treated as individuals
opportunities. These include annual gift allowances, which allow certain gifts an immediate exemption from IHT, including an annual total gift allowance of £3,000. Gifts are normally considered outside your estate after seven years. Any gifts you make within the last seven years of your life will only be subject to Inheritance Tax (IHT) if the total value of those gifts exceeds your Nil Rate Band. There are other planning measures, including certain trusts and investments, that offer the opportunity to mitigate

It’s a good idea to start to plan for this as early as possible so that you can make the most of any available opportunities. for IHT purposes: the maximum each can leave exempt from IHT is £500,000, provided each leaves the value of their share of their home to their children. If the first partner leaves the value of their home to the second partner, then no RNRB is allowable on the first partner’s estate. Single or divorced/ separated people face the same issues. A single person with no children could potentially own a home that exceeds their NRB of £325,000 without taking account of any savings and investments. Mitigating a future IHT liability is perfectly possible, with the right planning. It’s a good idea to start to plan for this as early as possible so that you can make the most of any available
IHT if you have a potential future liability. Financial planning can make a huge difference so do get advice to ensure that your heirs can get the maximum benefit from your estate. nna Charters has dedicated her life to helping and supporting others. She works full time as a dental hygienist and owns her own skin care business. Not even a pandemic could stop her supporting others — Anna is a team leading volunteer for the NHS track and trace program. Anna’s inspiration, however, comes from her two young boys, one of whom has extra needs — he has autism and is non-verbal. He is on the list for a communication pad to enhance his
Despite Anna’s stacked schedule, she didn’t predict ending up on her current career path. She studied animal science at university with the goal of being an inspector for the RSPCA, balancing her studies with a job as a dental nurse. Following university, Anna realised how competitive working with animals can be. With the support of colleagues, she decided to return to education to become a dental hygienist. Having shadowed a hygienist in a clinic previously, she felt inspired to forge a career in the field. Anna found the course very challenging but had support from friends, family and colleagues. Dental hygiene is very competitive, Anna said, and she is grateful she was a little older than other applicants to the course.
“He is an incredible little boy,” Anna said. “Everyone could do with being a little more like him — the world would be a far kinder place.” communication levels. NHS resources are stretched, Anna said, so she works to fulfil his needs. “I would rather work really hard to pay for him to have every opportunity,” Anna said. “He reminds me everyday to be kind to everyone. You just never know what is going on in someone’s life, and everyone deserves kindness.” 66
“Choosing a career at 18 is a big decision, I would have struggled,” Anna said. “Being older helped me, I worked hard and was more dedicated.” Dentistry is a very balanced field in terms of gender equality Anna said, she always finds herself included in treatment plans and discussions. COVID-19 brought some changes to the practices from which Anna works. An even more rigorous than normal cleaning and disinfecting cycle is performed in between each patient. But Anna always welcomes a challenge — as if last year wasn’t tough enough, she launched her own business. Skin Revival is the next step on Anna’s journey to help others. When she was younger, Anna suffered from acne and
other skin problems. Clearing her skin up really helped her self confidence, she said. “I wanted a new challenge and I had already studied the head and neck — it was the natural progression,” Anna said. “It can really help your self confidence, and with that, your mental health.” Based out of dental practices in Ipswich and Bury St. Edmunds, Anna is able to offer packages in conjunction with dental treatments. Bridal packages include cosmetic treatments and teeth whitening, providing the perfect look for the big day. Family time is vital for Anna to unwind from her busy career and hectic volunteer schedule. She enjoys long walks, visits to theme parks and swimming. Anna’s biggest love is one she shares with her sons — horses. Although she doesn’t currently have her own horse, she is able to ride a friend’s horse occasionally. She said her son lights up when he is around the animals. Spending time with her family helps her relax from her constant battle to get the support he needs. “He is an incredible little boy,” Anna said. “Everyone could do with being a little more like him — the world would be a far kinder place.”
