is a time to reconnect with friends, family and the local community. Although the Covid restrictions have been removed in many ways, it is still a time to show caution. Restrictions or not, this will not stop us from enjoying what is shaping up to be a summer of love. A love for many things; going out, staying in, meeting a new partner or enjoying life with your other half. If, like me, you are not old enough to remember the original summer of love in '67, then get ready to enjoy a new summer of love this year... Covid style. 2021 is going to be an exciting summer, a summer to remember. We can all get out (safely) to experience what is on offer in this bountiful East Anglian paradise, with so may great towns, villages and countryside waiting to be discovered and explored. From vineyards to vegan restaurants we really do have the lot, check out page 38 for a few suggestions. The main thing to remember is that you need to have fun, enjoy the company you keep, be grateful for what you have and ensure you make the most of the area we live in. The summer of 2021 is here... and you are going to love it.

Norwich Theatre Company The Keeper’s Daughter has used the recent lockdowns to create a brand new show which will embark on an East Anglian tour this autumn. Based upon H.G. Wells’ The Time Machine, this dynamic, new, one-person production is a family show featuring puppetry, physical theatre, contemporary gadgets and electronic soundscapes, and has been designed to play community spaces such as village halls, churches and pubs, as well as theatres and arts centres. The show will open at The Seagull Theatre in Lowestoft on Tuesday 14 September and a full list of venues can be found at:

Everyone’s favourite Lowestoft export, glam rock giants The Darkness are back in town following the release of their new album, Motorheart. With support from British Lion, the side project of Iron Maiden bassist Steve Harris, the band will be performing their extensive back catalogue, as well as numbers from the new album, which will no doubt be brimming with their trademark guitar riffs, soaring falsetto and outrageous outifts. Their previous album, 2019’s Easter Is Cancelled, became the band’s fourth Top 10 album in the UK, topping the Official Charts Top 40 Rock Chart and the iTunes Rock Chart.

y the time you read this I am hoping the government’s plan to take us out of COVID-19 safety measures has been successful. Days out and breaks always seem to revolve around the excitement of food and drink. Whether you’ve packed up a picnic, thrown together some snacks or you’re heading to an eatery to be waited on. How many times have we set off on a journey and the kids want the sandwiches just as you are leaving the drive? Or you arrive somewhere and the first thing you do is have a coffee or perhaps something stronger!

Without realising it, what we eat and drink out is a huge part of a day/evening experience or holiday. We make plans over food and drink; we share stories, and we languish over dishes we can’t cook at home. Tucking into the food we love; with the people we love. In case you didn’t know (where have you been hiding?), Norwich is going mad for dinosaurs, thanks to Dippy On Tour at Norwich Cathedral - on the final leg of his nationwide journey (tickets are free and do not have to be pre-booked). So, it makes complete sense to throw into the mix great places to eat and drink to complete a day or evening out. Norwich Business Improvement District launched a new City Food Trail in February 2020 for Love Light Norwich

festival. And now, due to its popularity, the latest iteration follows the same concept, but this time themed all things dinosaur. The food trail starts 12 July and runs until 22 August. With over 25 venues in Norwich taking part, extend your trip by enjoying breakfast, lunch or dinner, or all three as part of the celebrations around the iconic 26-metre-long diplodocus cast on view. Not much time? Try a Deano Delight shake at Al Dente on St Giles Street. Or some TeaRex from Birchley's Loose Leaf Tea on Norwich Market, with a dinosaur themed cupcake from Debs,


Home of the Biggest Baps also located on the market. Or pop into Tofurei on St. Gregory’s Alley for a slice of Dino Nest Cake. And staying with sweet treats The Waffle House on St Giles is offering what sounds like a spectacular dish. Order a Jurassic Pot with erupting chocolate mousse volcano, salted caramel lava, chocolate soil, dinosaur cookie and dino eggs. Christophe’s Crepes in Davey Place and on Pottergate is the place to stop whether hungry or not. I’ve always found the smell of crepes so hard to resist. I absolutely love the idea of their themed dish called the Stegosaurus Back. This is a creation of mini-dutch pancakes with banana, using milk

In case you didn’t know (where have you been hiding?), Norwich is going mad for dinosaurs, thanks to Dippy On Tour at Norwich Cathedral - on the final leg of his nationwide journey

chocolate buttons as the stegosaurus' back, topped with nutella, chopped hazelnuts and strawberries. For a sit-down lunch or dinner, the Louis Marchesi is serving up a Brontosaurus Burger with Jurassic Fries, soft drink and a dinosaur gift bag at £8.00 for kids. And for the parents? You needn’t miss out on the fun, order a Tyrannosaurus Tanqueray and tonic which is a large Tanqueray and Fever Tree tonic infused with lemon and rosemary or a Raptor Cockail which is vodka, coconut rum, Midori, blue curaco and soda served over crushed ice, both £6. I suggest that perhaps you have the Brontosaurus Burger to accompany your Jurassic cocktails! Giggling Squid just across the road on Tombland has a great kid’s menu which includes two dino dishes. Choose between Pork ‘Dinosaur eggs’ or Pterodactyl Noodle Nest. Or have both if you’re having trouble deciding. Norwich Lanes is getting in on the action too. At Salt and Figbar on St John Maddermarket start with a Salt signature sandwich - the Cubanosaurus filled with Cuban braised pork, smoked ham, grilled raclette, mustard and dill pickled cucumbers. Then skip next door to Figbar to order a dino shaped sable shortbread biscuit with a smooth strong coffee. Whilst there make sure you return home with a selection of their decadent, indulgent cakes - there are many to choose from. Everyone will love you for it. I promise. Frank’s Bar has long been a favourite in Norwich and their dino offering isn’t disappointing. Tuck into some Pterodactyl wings of Norfolk chicken marinated in a lightly spiced sauce (gf) or for vegetarians Stegosauras Dips - blue

corn tortilla chips with a trio of veggie dips (vn) (gf). Washed down with either The Velociraptor which is ginger ale, orange juice and grenadine or a Jurassic Julep made with bourbon, peach and mint. For vegans, vegetarians and people who sometimes don’t miss eating meat and fish try Namaste Village, Pizzaterian and The Green Eatery. All have wonderful, themed dishes to eat in or take-away if you really need to get home! Finally, the cathedral has a host of smaller events and things to do when visiting Dippy. As you reach the man himself, visitors will arrive through a wave of 3,000 fish, part of an exciting sculpture called Your Waves Go Over Me. You can even take home a memento as the fish are for sale online www.wavewithfish.com. Individual fish are £16 with a shoal of 12 fish for £170. Around the Cloisters take a trip through time with a special installation to help you step back into the age of the dinosaurs. There’s also story telling for children, talks, tours, film nights and more (please book tickets, some events are charged for), including a free event Relaxed Sessions with Dippy on 19 August, 11 September and 14 October. These three sessions are autism-friendly “relaxed” times especially for autistic people of any age and their families. This pretty Georgian town is surrounded by country parks and offers plenty of hidden gems to explore

H

olt’s handsome 18th century buildings, charming hidden courtyards and myriad art galleries, shops and eateries make it an idyllic place to spend a day. After most of the town was destroyed by a fire in 1708, it was painstakingly rebuilt using the Georgian style of architecture that is still on display today. The market place in the heart of the town houses a cross memorialising the soldiers who lost their lives in the war, which forms part of the Holt Owl Trail, a circular route which will take you to all the key landmarks – simply follow the owl pavement plaques.

What to see and do

You won’t find many chain stores here, so it’s an ideal place for a spot of shopping. Head to Bakers and Larners, a family-run department store, where you can lose hours wandering the food hall, kitchen shop

and aisles of other trinkets and homeware goodies. Discover the town’s four hidden flint stone yards, where there are independent shops, tearooms and other gems waiting to be explored. If you fancy getting away from it all, head to Holt Country Park, a beautiful 100 acre woodland with picnic areas, nature trails and a playground for little ones. Just outside the centre of Holt is the North Norfolk Railway station where you can catch the famous Poppy Line steam train services to neighbouring Weybourne and Sheringham. The nearby ruins of Baconsthorpe Castle – a moated, fortified 15th century manor house – is also well worth a visit on your way home.

oe Hill, Operations Director at Ipswich based coffee brand, Paddy & Scott’s, is gearing up to take part in this year’s prominent Come Fly With Gi Scottish Highlands Trek, to raise money for breast cancer charity, Coppafeel! Coppafeel! is a charity set up by Kris Hallenga to help raise awareness

of breast cancer amongst younger people. Kris has teamed up with bestselling author, Queen of the (Welsh) jungle and podcast host of Happy Mum, Happy Baby, Giovanna Fletcher, to create a once-in-a-lifetime trek and adventure to raise money and awareness of Coppafeel! and reach more young people across the country with its life-saving message. The trek is taking place from 12th18th September. Zoe will be joining Giovanna, TV host Emma Willis, Kris Hallenga and 100 other fundraisers to take on the gruelling five day trek that features the most challenging parts of the Rob Roy Way in Scotland, which is a

128km route linking Drymen (on the West Highland Way) with Pitlochry in Perthshire. Zoe was diagnosed with breast cancer in 2019 at the age of 34 and went through 10 months of treatment including surgery, chemotherapy and radiotherapy. Throughout her treatment Zoe took encouragement from the charity. "A breast cancer diagnosis in your 30s accounts for less than 5% of all cases, so it can be difficult to find a peer group you can relate to. Coppafeel! made my cancer diagnosis a lot easier to cope with, with great advice and a lovely community. My mum was also diagnosed with breast cancer for the second time halfway through my treatment, so I know how important these support networks are when you are given a breast cancer diagnosis," said Zoe. "I didn’t hesitate in signing up to this

challenge - cancer affects us all in one way or another and raising awareness to catch it as early as possible, as it stands, is our best chance to fight it. Coppafeel! were there when I faced my cancer diagnosis, with great advice and a lovely, welcoming community so taking part in the trek was a no-brainer," explains Zoe. "What better way to raise awareness and funds than to trek 86km and 4530m of ascent over five days whilst camping every night in Scotland! It’s certainly going to be tough, but I am determined to do it and meet my target." Cherry & chocolate triple chip cookie cobbler

METHOD: Preheat the oven to 180°C (160°C fan) Gas Mark 4. Defrost and rinse the cherries, drain all the excess liquids. In a large bowl, add the cherries with the sugar, vanilla extract, almond extract, cornstarch, pinch of salt and lemon juice. Pour cherry mixture into a 27 x 18cm (7x10in) baking dish. Bake for 30 minutes. Meanwhile remove the cookie dough from the fridge and let it rest at room temperature for 10 minutes. Cut the dough balls in halves and roll each half to form smaller balls, then gently press them with a spatula. Remove the cherry mixture from the oven, reduce the temperature to 160°C (140°C fan) Gas Mark 3. Evenly arrange the cookie dough over the cherry filling. Set in the oven and bake for an extra 15 minutes or until the cookie dough is ready and the juice from the cherries is bubbling. Serve immediately or let it cool and serve later, it tastes great with vanilla ice cream or custard.

PASSION FRUIT MARTINI

Simple, sophisticated and bursting with zingy tropical fruit flavours, this is the perfect summer cocktail with an added burst of bubbles. SERVES: 2 INGREDIENTS: • 2 ripe passion fruits, halved • 60ml vanilla vodka • 30ml passoa • 1 tbsp lime juice • 1 tbsp sugar syrup • prosecco, to serve METHOD: Scoop the seeds from one of the passion fruits into the glass of a cocktail shaker, add the vodka, passoa, lime juice and sugar syrup. Add a handful of ice and shake well. Strain into two martini glasses, top up with prosecco, then add half a passion fruit to each as a garnish. Make your own sugar syrup: Boil equal quantities of sugar and water in a pan for about 5 minutes, until it has a syrupy consistency. 27

Mini poppadoms with mango chutney Finely shred 3 peeled carrots, dice ½ a cucumber and finely slice 4 spring onions. Mix together with a squeeze of lemon juice and 1 tbsp toasted mustard seeds. To serve, pile into bought mini poppadom crisps, top each with a small dollop of mango chutney and scatter with coriander leaves. Cucumber salmon slices Cut 1 large cucumber into 20 thick slices and scoop out some of the seedy middle, leaving a dip. Mix 200ml crème fraîche with zest 1 lemon and freshly ground black pepper, then spoon 1 tsp into each dip. Top with a piece smoked salmon, lemon zest and some black pepper. Stuffed prosciutto balls Mash 100g feta with ½ finely chopped chilli, 2 tsp chopped mint and zest and juice of ¼ lemon. Roll into 24 small balls. Quarter 6 prosciutto slices lengthways, then wrap each prosciutto strip around a feta ball.

Lauren from King’s Cake Emporium spends her free time creating delicious, fantastically decorated bakes for special occasions. One day she’ll open her own bakery, but for now, she’s sharing her baking tips, tricks and know-how with Places&Faces.

I

am a self-taught home baker who loves nothing more than feeding my family and friends sweet treats. Throughout the pandemic, I have been doing weekly doorstep deliveries to loved ones so they could continue to get their sugar fix. I love to try out new recipes but feel frustrated when the recipe lists endless ingredients I don’t have or are so niche that you know they won’t get used again. A short but sweet recipe (pun intended!) always draws me in. Not only is it great for beginners or children but perfect to have in your back pocket when you need to rustle something up last minute.

Mix’n’Match This recipe is simple, delicious and versatile! You can use any chocolate of your choice or can swap out the chocolate chips for Smarties, M’n’Ms, Mini Eggs, or if that’s a bit too sweet for you, some dried fruit will also be great!

 e i k oo C INGREDIENTS: Makes approx 30 cookies – quantities can be halved

• 200g butter/baking spread, softened • 200g soft light brown sugar • 2 tbsp golden syrup

METHOD: Preheat the oven to 180˚C/Gas Mark 4 and line a few baking trays with baking paper. Beat together the butter and sugar. Once this turns pale in colour, add the golden syrup and beat until smooth. Add approx half of the flour and stir until mixed. Add the chocolate and remaining flour. Once mixed, pop the dough onto a lightly floured surface and knead for 1-2 minutes by hand until smooth. Roll small pieces of dough in your hand to form a ball, I find 40g is a good size. Place these on the baking sheets spaced well apart, pressing each down slightly. Bake for 10-15 minutes or until golden brown. Remove from the oven and leave on the trays for 2-3 minutes before transferring to a wire rack to cool completely.

Now, if you fancy making these cookies extra special, scoop 30 individual teaspoons of your favourite spread such as Nutella, Biscoff etc onto a chopping board and freeze for approx 30 minutes. Once you have formed your balls of cookie dough, flatten them slightly in your hand and wrap this around your frozen spread. This will give you slightly larger cookies with a delicious, surprise filling!

ck Chicken DUCK & AVOCADO SALAD WITH MISO DRESSING SERVES: 4 as a starter INGREDIENTS: • 2 Gressingham duck legs • 1 ripe avocado, peeled and sliced • 2 radishes, washed and sliced • 150g mixed leaves, washed • Small bunch coriander Dressing • 100g white miso paste • 75ml light olive oil • 50ml light soy sauce • 50ml maple syrup • 50ml rice wine vinegar (use white wine vinegar as substitute) • 25ml blended sesame oil • Pinch coarse black pepper

METHOD: Pre-heat oven to 180°C or 160°C fan. Pat the duck legs dry with kitchen paper and season all over with salt and pepper. Place the duck legs on a baking tray, skin side up and roast for approx 1 hour and 15 minutes. You can use this time to prepare the salad and dressing. Whisk all the dressing ingredients vigorously in a bowl. At the end of cooking time, check the duck for tenderness and return to the oven for 15 minutes if more cooking is required. Once the duck is cooked remove from the oven and allow to cool until it is at a temperature to handle, then remove the meat from the bones and set aside until ready to serve. Divide the leaves and avocado onto 4 starter plates. Scatter the duck over the top and spoon over the dressing. Garnish with fresh coriander. This dish also works well with any cooked duck left over from a roast and of course will save you time.

Caesar salad is a firm favourite for many and lends itself very well to duck. SERVES: 2 as a main or 4 as a starter INGREDIENTS: • 2 Gressingham duck breasts • 3 to 4 gem lettuce • 2 slices sourdough (roughly torn into 3cm pieces) • 30g shaved Parmesan Dressing • 100ml light olive oil • 30g finely grated Parmesan • 2 cloves garlic, peeled and finely chopped • 4 tbsp mayonnaise • Juice of half a lemon • 1 tsp Dijon mustard • 1 tbsp water

DUCK CAESAR SALAD

METHOD: Pre-heat oven to 200°C or 180°C fan. Dry the duck breasts well with kitchen paper. Lightly score the skin with a sharp knife, six to eight times, and season both sides. Separate the gem leaves, wash and drain. Whisk or blend all the dressing ingredients. Add more water if needed to create a thickness you prefer, and season to taste. Lay the duck breasts skin side down into a wide, oven proof cold pan without any oil. Cook over a low to medium heat for 6-8 minutes until golden and crisp, carefully pouring off any excess fat into a bowl as the duck cooks. Place torn bread around the duck and place pan in the oven for 6-8 minutes. Remove from the oven, turn the duck over so it’s skin side up, mix the bread in the duck oil. Remove bread onto kitchen paper and allow duck to rest for 10 minutes. Meanwhile take a large bowl, place in the leaves and coat them with half of the dressing. Divide onto your serving plates. Share out the bread croutons. After resting, slice the duck and place on top of the leaves. Drizzle with the remaining dressing and scatter the shaved Parmesan on top.


SERVES: 2 to 4 people INGREDIENTS: • 2 Gressingham spatchcock poussin • 1 tbsp light olive oil Chimmichurri • Small handful flat leaf parsley and coriander, roughly chopped • 2 garlic cloves, peeled and finely chopped • 1 red chilli, finely chopped • 1 tbsp white wine vinegar • 2 tbsp light olive oil • Sea salt

Potato salad • 400g new potatoes • 1 tbsp horseradish cream • 1 tbsp mayonnaise • 1 radish, washed and thinly sliced • 2 spring onions, thinly sliced

If you start cooking the duck in a cold pan the pan will heat slowly, as will the breast's skin and fat, rendering out the fat and making the skin incredibly crispy. Remember to spoon off any excess fat if needed to get the perfect finish.

Slaw • Half small red cabbage, core removed, thinly sliced • 1 carrot, peeled and grated • 1 small white onion, peeled and thinly sliced • Juice of 1 lemon • 2 tbsp light olive oil • 1 tsp white wine vinegar

While oily fish is considered a top source of omega-3 fatty acids, duck also contains these heart-healthy acids.

Chimmichurri is a wonderful Argentinian condiment that is easy to make and goes extremely well with any grilled or roasted meats. Best made a few hours before so the flavours can really take hold.

METHOD: Pre-heat oven to 200°C or 180°C fan oven. Pat birds dry with kitchen paper and lightly season all over. Preparation of the chimmichurri can be done a day ahead. Mix all the ingredients together, season with sea salt, set aside or refrigerate. Simmer the potatoes in boiling salted water for 10 minutes until tender and then drain. Mix all the slaw ingredients together, season with salt and pepper. Place a large frying pan onto a low to medium heat and add oil. When hot carefully lay in the poussin breast side down until coloured, approx 6-8 minutes. Turn the poussin over to seal. Cook for 2 minutes. Transfer to a roasting tray and place in the oven for 20 minutes. When cooked remove from the oven and rest in a warm place for 10 minutes. In a mixing bowl put in all ingredients for potato salad, cut some of the larger potatoes in half if needed, and mix well. Season to taste. To serve place the slaw and potato salad into seperate serving bowls and the chimmichurri into a ramekin. On a chopping board cut the poussin in half along the breast bone. Drizzle any poussin juices over the bird and a spoon of chimmichurri. Place everything into the middle of the table so everyone can share.

uicy beef patty, melted cheese, soft bun and a dream combination of condiments and toppings – nothing says ‘it’s the weekend!’ like a fully loaded burger for tea. National Burger Day is celebrated in the UK on the 26th August, so whether you’ll be firing up the BBQ at home or heading to your favourite burger restaurant, here are our top recipes and recommendations to help whet your appetite.

Falafel (V) INGREDIENTS (SERVES 4) • 400g can chickpeas, rinsed and drained • 1 small red onion, roughly chopped • 1 garlic clove, chopped • Handful of parsley (see page 55 for tips on growing your own) • 1 tsp ground cumin • 1 tsp ground coriander • ½ tsp harissa paste or chilli powder • 2 tbsp plain flour • 2 tbsp sunflower oil • toasted pitta bread, to serve • 200g tub tomato salsa, to serve • Green salad, to serve METHOD: Drain and rinse the chickpeas and pat dry with kitchen paper. Tip into a food processor along with the onion, garlic, parsley, cumin, coriander, harissa paste, flour and a little salt. Blend until fairly smooth, then shape into four patties with your hands. Heat the sunflower oil in a non-stick frying pan, and fry the burgers for 3 minutes on each side or until lightly golden. Serve with the toasted pitta bread, tomato salsa and green salad.

Based in Rendlesham, Suffolk, Stokes have been producing quality condiments and preserves since 2004. Cook up a storm with their BBQ Essentials bundle, containing everything you’d ever want to put in a burger: Tomato Ketchup, Real Mayonnaise, Original BBQ Sauce, Sweet & Sticky BBQ Sauce and Burger Relish. £15 | stokessauces.co.uk

INGREDIENTS (SERVES 4) • 1 small onion, diced • 500g good-quality beef mince • 1 egg • 1 tbsp vegetable oil • 4 burger buns • Salad and relish of your choice, to serve METHOD: Tip the beef mince into a bowl with the diced onion and egg, then mix well. Divide the mixture into four. Lightly wet your hands, then carefully roll the mixture into balls, each roughly the size of a tennis ball. Set in the palm of your hand and gently squeeze down to flatten into patties about 3cm thick. Make sure all the burgers are the same thickness so that they will cook evenly. Put on a plate, cover and leave in the fridge to firm up for at least 30 minutes. Heat the barbecue to medium hot. Lightly brush one side of each burger with vegetable oil. Place the burgers, oil-side down, on the barbecue. Cook for 5 minutes until the meat is lightly charred. Don’t move them around or they may stick. Oil the other side, then turn over using tongs. Don’t press down on the meat, as that will squeeze out all the lovely juices. Cook for 5 minutes more for medium. If you like your burgers pink in the middle, cook for 1 minute less each side. For welldone burgers, cook for 1 minute more. Take the burgers off the barbecue and leave to rest on a plate. Meanwhile, slice four burger buns in half. Place, cut side down, on the barbecue rack and toast for 1 minute until lightly charred. Place a burger inside each bun, then top with your choice of accompaniments (we’re pro-gherkins here at P&F HQ!).

Made from 35-day dry aged beef and packed with quality ingredients including pancetta bacon, American cheese, pickled onions and a secret burger sauce, customers can choose from one, two, three or four stacked patties. The menu is short and sweet, currently with five starters, four mains and three puddings, and is added to by the daily specials. However, each one of the choices on the menu are stars in their own right making a small menu difficult to select from as you want to order one of everything. Maldon salt

chicken shawarma flatbreads

shredded slaw, pickled chilli & herb labneh with

SERVES: 4 INGREDIENTS: Labneh: • 500g thick Greek yoghurt • 1 tsp Maldon salt • Handful of dill, chopped Chicken Shawarma: • 8 chicken thighs, skinless and boneless • 1 lemon, zested and juiced • 50ml olive oil • 3 garlic cloves, crushed • 1 tsp ground coriander • 1 tsp ground cumin • 1 tsp ground cinnamon • 1 tsp smoked paprika • ½ tsp dried oregano Shredded Slaw: • ½ red cabbage, shredded • ½ green cabbage, shredded • 2 carrots, ribboned • 5 radishes, finely sliced • 2 tbsp Greek yoghurt • ½ lemon, juiced • 1 tsp Maldon salt • 1 tsp nigella seeds To Garnish: • 50g pickled jarred chillies • 4 flatbreads • Handful of mint, leaves picked • Handful of parsley, leaves picked

METHOD: Prepare the labneh the day before. In a large bowl, mix together the yoghurt and the Maldon salt. Then line a fine sieve with muslin cloth, and pour the yoghurt in. Tie the top of the muslin around the yoghurt so it is sealed and then place the sieve over a large bowl in the fridge. Allow the yoghurt to strain and the liquid to drip into the bowl below – leave this overnight. The next day you should have a much thicker and creamier consistency. The longer you leave it the thicker it will get – more a spreadable cheese. Once you have strained the labneh stir through the chopped dill and leave in the fridge until you are ready to use it. You can also prepare the chicken to marinade the night before, as this will ensure the best flavour and help tenderise the meat. In a large bowl mix together the olive oil, lemon zest and juice, crushed garlic, spices and oregano. Season the mixture well with cracked black pepper and a good pinch of Maldon salt. Add the chicken thighs and mix so they are well coated. Clingfilm the bowl and place in the fridge overnight. The next day you are ready to prepare and cook your Shawarma. Start by making the shredded slaw by adding all the shredded vegetables in a large bowl and tossing through the Greek yoghurt, lemon juice, Maldon salt and the nigella seeds until it is all well combined.

Then prepare the skewers. Cut the chicken pieces into thick strips and thread onto the skewers – if you are using wooden skewers rather than metal, just ensure to soak them in water for 30 minutes before using (this stops the wood from burning). Heat up the BBQ or alternatively you can use a griddle pan. Cook the chicken skewers for 4-5 minutes on each side until golden and charred and the chicken is cooked through. Place the flatbreads in the oven to warm up. To serve, spread some labneh onto the warm flatbread, then top with shredded slaw, chicken shawarma and some pickled chillies. Garnish with an extra pinch of Maldon salt, some mint and parsley leaves and a squeeze of lemon juice.

SERVES: 4 INGREDIENTS: • 8 large tiger prawns, shells on • 200g unsalted butter, softened • A thumb sized piece of ginger, grated • 2 garlic cloves, crushed • A large handful of coriander (stalks and leaves) chopped • 1 lime, zested • 1 tsp Maldon salt • 1 red chilli, deseeded and finely diced • 1 lime, cut into wedges, to serve • Coriander leaves, to garnish METHOD: In a high-powered blender or food processor, blitz together the unsalted butter, grated ginger, garlic, coriander, lime zest and Maldon salt. Mix this until you have a smooth and vibrantly green butter. Heat up the BBQ or alternatively you can use a griddle pan. Brush the prawns all over with the green butter until they are well coated. Place them on the griddle and cook for 2 minutes on each side until they are bright pink and cooked with light charring on their shells. Remove the prawns from the griddle and brush with some more of the butter, allowing it to soak in. Add the lime wedges to the hot griddle pan and cook them for a minute on each side to char. Remove the lime wedges and squeeze them over the prawns. Sprinkle over the finely diced chilli and coriander leaves and the prawns are ready to serve.

INGREDIENTS: • 50g Maldon salt • 1/2 tsp thyme leaves • 1 lime wedge • 6 blackberries, plus 4 for garnish (10 in total) • 5 sprigs of thyme • 150ml reposado or silver tequila • 30ml agave syrup • 75ml lime juice • Ice METHOD: Mix together the Maldon salt and the picked thyme leaves on a small plate. Rub the rim of a lowball glass or short tumbler with the wedge of lime so it is wet. Then turn the glass upside down into the salt and thyme mix and press and turn it so there is a good even coating of salt around the rim of each glass. In a cocktail shaker add the 6 blackberries and 3 thyme sprigs, then muddle these well together, pushing the blackberries so they burst and break down. Then into the same shaker add the tequila, agave and lime juice. Fill the shaker half full of ice, then pop the lid on and shake really well for a minute. Add some ice cubes into your salt rimmed glasses. Then pour the margarita through a fine strainer into each glass. Garnish with the remaining blackberries and a sprig of thyme in each glass – serve immediately.

uring August your garden is still at its summer best, with plants and flowers flourishing in the good weather. You might think this is too late in the year to start planting vegetables, herbs and salad, but there are many varieties that can be sown and grown late in summer – plus, it’s a great time to get organised for autumn and winter harvests, as well as keeping some crops coming through into early spring. So, dig out your trowel and watering can and give growing your own a go.

Carrots

SALAD

There’s still time to make direct sowings of fast-maturing carrot varieties such as 'Adelaide', just make sure these are in the ground by the end of August at the latest and be wary of pesky carrot fly.

Lettuce In the greenhouse or indoors, sow winter lettuce in module trays to plant out towards the end of August. Lettuces are hardier than they look and can be overwintered for picking as leaves from April through to June, giving a long season of harvest from just one sowing.

Spinach Overwintered spinach grows beautifully sweet leaves and can survive the harshest frosts. Sow in the second and third weeks of August; harvest from November and March.

Rocket Sowing wild rocket in early August will make plentiful leaves before winter, and then lie dormant. New growth in spring offers two months of harvests. Sow in late August if using salad rocket; harvest both from October.

Swiss chard Swiss chard can be sown in drills now for autumn 'baby leaves' or left to overwinter for a spring crop.

Radicchio Sow outdoors for use as an autumn salad leaf (they’re great in sandwiches). This vibrant red leafy veg is a relative of chicory and has a bitter taste.

VEGETABLES Radishes Radishes are very quick to crop, being ready to eat in as little as four weeks. Make direct sowings this month for an autumn harvest, or try sowing winter radishes, which can be left in the ground and dug up as required, or lifted in November and stored.

HERBS Parsley You can sow this hardy biennial herb in seed trays to grow in the greenhouse or indoors throughout the winter, or plant the established herb into its final position in a pot or raised bed outdoors in early August.

Spring onions

DID YOU KNOW?

Winter-hardy spring onions such as 'White Lisbon' and 'Performer' can be direct sown now. Onions don’t germinate well in temperatures regularly above 20°C, so sowing outdoors in rows is advisable. If sowing in module trays, up to 10 seeds in each should give a worthwhile clump next spring.

According to an old English folk tale, parsley will grow best in a household where the wife wears the trousers!

Winter cabbage Finish planting out winter cabbages early in the month – be sure to allow about 45cm between plants as they get quite big.

Cauliflower Plant summer or autumn cauliflowers outside early in the month for an autumn harvest – the perfect time for roast dinners with plenty of homemade cauliflower cheese!

Kale Finish planting out kale for winter and spring cropping. Kale tolerates cold weather better than most other brassicas, although it should be netted against birds if possible.

Coriander This leafy herb may be a bit like Marmite, but it is easy-to-grow and can be sown from spring to autumn. Water regularly and harvest when needed.

Dill Dill hates having its roots disturbed or being transplanted, so sow in-situ, either into pots or the ground where you want it to grow. These feathery plants may need support from canes, as strong winds can flatten them.

Chervil Sow this mild aniseed-flavoured herb directly into prepared soil outdoors. Plant in a shady, cool spot and water regularly. Be aware that chervil is a prolific selfseeder, so it might pay to keep it in pots if you don’t want more of it! 47

F

itness has always been an escape for me. I can’t remember a time when I wasn’t heavily involved in a sport of some type. In recent years, I took up triathlon and quickly got addicted. Cycling has become my favourite of the three disciplines in triathlon. During the earlier stages of COVID and lockdown in England, I set myself a challenge to explore north Norfolk more by bike. I would set out riding and only take roads I had never been down before. Sometimes this ended in flat tyres on gravel roads, but mostly in unforgettable views and a bad cycling tan. One day towards the end of the summer, I set off in the early morning to combat anxiety. I didn’t stop riding until my brain slowed down. By the time I stopped I had ridden 103 miles, and I felt so much better mentally. I love the freedom and empowerment cycling brings me, and the friends I have made through the sport. I want to share this joy and make cycling accessible to everyone — anyone can do this sport and love it. Cycling really is the most versatile sport — in addition to being a basic form of exercise, it is also transport, can teach basic mechanic skills and is a great way to escape. I find there is nothing more freeing than chucking on my helmet (please always wear one) and heading out for a ride. Here are some tips for how you can get out exploring on wheels. 59


Life&Living GETTING STARTED I will repeat it again before going any further — please, please always wear a helmet. Besides that, no special kit is needed, just a helmet and a bike. I recommend wearing closed top shoes at all times as well, safety first! Depending on how far you plan on riding there are a few things to consider. Whether you are going at a leisurely pace, or really stomping the pedals, you are burning energy. Pack a bit of fuel in a rucksack or your pocket — my go to is a flapjack — and some water. Although recent evidence would suggest otherwise, Norfolk can get very sunny, and unless you want to return from your ride looking like a double lolly, wear some sun cream. On the opposite end of the scale, consider taking a waterproof. Before you set off, make sure your tyres are pumped up, and it might be wise to carry a spare, especially if going on the roads for some distance. It is easy to pick up small stones or flint on quiet Norfolk roads.

WHAT BIKE SHOULD I GET? In my book, any type of bike will provide for a great day. If you already have your own, fantastic, get out there. If not, consider hiring one for the day. Best to try a few options to see if cycling is for you, or hiring is a great way to avoid dragging your bikes on holiday when you already have limited space in the car! If you are looking to go off-road, a gravel or mountain bike are going to be solid options. The mountain bike will be more sturdy for the less experienced cyclist but will be slightly heavier and harder work. For on-road cycling, Norfolk and Suffolk both have some fantastic routes for road bikes. If you would like to go a bit further but haven’t quite built up the fitness yet, an E-bike could be a great option for you. There are a variety of settings from full assist to partial, where the motor will only kick in if you drop below a certain speed and need a little help. E-bikes are a great way to keep a group together if some are lessexperienced cyclists.

WHERE CAN I GO? It is widely agreed that the best rides end with coffee and cake so I can highly recommend starting or finishing at a coffee shop. A favourite amongst cyclists near the north Norfolk coast is Black Apollo Coffee House in Holt. Another way to enjoy cycling is to include an ice cream or pub stop somewhere along the way. I like to cycle the coast road and stop for an ice cream in Hunstanton or Sheringham — a great way to explore the area. My favourite pub would definitely have to be my local — The Dun Cow in Salthouse — which has a big garden, plenty of room for a hungry group of cyclists. If you are a family looking for something on closed roads, Holkham Park is the place to go. There is a cycle hire with options for family members of every size and age. You can hire bikes for a couple of hours or the full day, with plenty of time to explore the park and the surrounding nature reserve before returning to the park for a coffee in the courtyard cafe. The past year has been so testing but it really did encourage so many people to get outside and enjoy fresh air activities. Whether this was you or not, I can’t recommend cycling enough. It is such a fantastic way to explore, get some exercise and learn some new skills. Gather up some family or friends, pack a picnic and get out there on two wheels. Be sure to give me a wave if you see a nice blue and orange bike pottering around the north Norfolk coast.

Good of the Planet We’re all becoming increasingly aware of the impact our actions have on our world. S&P Senior Investment Manager, Matthew Keay, looks at how you can be planet-friendly with your investment portfolio.

I

nvesting ethically has become mainstream. There was a time when choosing investments from companies and countries with a good environmental and social record was a luxury, with a compromise to be made in terms of performance. However, this is no longer the case. Ethical investments are producing returns and performance that can rival and often exceed their less earth-friendly counterparts. Ethical investing can mean a lot of things, screening out ‘bad’ areas or investing in positives. One of the most common ethical investing themes is ESG investments. ESG refers to the standard of environmental, social and governance risks and opportunities within an investment. Environmentally responsible companies will have high standards in respect of anything that might contribute to climate change, so striving to limit pollution, water usage and their carbon footprint. They may also be directly positive for the environments – companies which limit water wastage or recycling, for example. Companies with a good social record will have good health and safety standards for their workforce, a positive attitude to human rights and will engage with the communities in which they operate. An analysis of a company’s governance will explore how well they are managed, the record of their Board in terms of financial reporting and their transparency in terms of policies for diversity and inclusion.

We are seeing ever greater interest in ESG investing. They have the potential to match or even exceed the performance of more traditional investments: it is apparent that a good ESG record enhances the desirability of a company, and that a bad record could hinder performance. Clearly, establishing the record of a company in terms of its impact on the planet is not easy for the amateur. However, there are reporting sources available to investment managers that allow us to rate a company’s performance against all ESG benchmarks to support financial advisers when building suitable investment strategies for clients. Further to this, meetings with managers of ethical/ESG funds allow us a greater chance to interrogate the managers’ application of ESG standards when assessing investments. For many investors, the most effective way to access ESG investments is through a managed investment portfolio. Managed investment portfolios contain a mix of assets aligned to a risk profile. This asset mix is monitored by specialist investment managers within agreed parameters and adjusted, if necessary, to optimise their risk adjusted return. Our own S&P ethical model portfolios, managed by our investment management team, have been running since 2009 and have delivered proven growth to match our clients’ objectives within their agreed investment risk profile. For those with more specific requirements – such as hard exclusions or targeted positive impact investing

Inspirin women Lisa Angel Andrew Hirst talks to another local inspirational woman, who has taken her business idea from her living room to an international stage with a multi-million pound turnover.

I

f you wanted to describe Lisa Angel in a couple of words "creative passion" would fit the bill. Lisa is a true champion of local creative talent and her own artistic journey began when she started her fashion degree at the Norfolk Institute of Art and Design. This eventually led Lisa on a path to achieving the job of her dreams as a buyer for a major high-street chain in London. A job with bright lights and plenty of travel, what's not to love. But as we go on our life's journey sometimes our priorities can change. After the birth

"I didn't know what to call the business, and I was persuaded to use my name." Lisa said. "As the company has grown many of the original customers still buy personalised jewellery from us. I always try to buy locally myself. It is worth walking the extra distance to go to a local shop or producer. Norwich is such a fantastic city... vibrant and full of inspiration." Today the business has grown to a £9million turn-over and includes two retail outlets, one in Chantry Place Shopping

An inspiration to everyone, proving that great things can be achieved from small start-ups just by believing in yourself, your abilities and your products; whilst having the courage to take the first step. of her first child Lisa took the brave and exciting first step on a new path. Splitting her time between being a new mum and designing her own jewellery, she found a new outlet to reignite her creativity. In 2004 Lisa sold her car to help fund her dream and soon began selling her bespoke designs at craft fairs, including being a regular at venues like the Forum in Norwich. Lisa's living room soon became home to everything from concept and design to production and packaging, and is the birthplace for the brand that we know today as Lisa Angel Ltd. Very soon a local loyal following of customers was growing and, even though the business now has many sales throughout the UK and internationally, the strong Norwich base of customers is 66

"I have always felt strongly about the personalised jewellery. It makes a special piece of jewellery even more

personal, which can be loved and cherished for years." "We have such a great team of people who are extremely creative and talented, and have a passion for the industry. They are helping us to continue to build on our success." When Covid hit and lock-downs were starting to kick in Lisa and the senior management team took the decision to shut the doors for the first time in seventeen years. Several of the staff were in tears and came up with creative ways as to how they could keep working, producing and fulfilling the customers orders online. Known as Lisa Angel Hero’s, these staff members went above and beyond to continue the creative journey the company had been on, keeping the doors open. Lisa, now a mum to three, like so many others unfortunately contracted Covid in April of this year. "It wasn't great, but it could have been so much worse. The thing that seems to be lingering on is the fatigue. Just doing regular things which would have normally been in a regular day seem to take more effort. I sometimes think it is just my imagination, but others I am certain that I am still feeling the effects of the virus." Lisa Angel continues to grow the business whilst staying true to the ethos which has made the company such a success.
