Some among you may perhaps recall a 1988 video by André Labarthe, who was invited by Martin Scorsese to shoot footage in his childhood home in New York’s "Little Italy". A famous scene…

iewers witness one of the world’s greatest directors become a child again when he has lunch at his parents’ house on his 46th birthday.
On the table were tortelli di Zucca (pumpkin-stuffed raviolis), mostarda and parmesan, Pecorino, a Sicilian cheese made from sheep’s milk, and most certainly the most popular Sicilian cheese, and an Eloro Pachino appellation wine, exclusively produced using the famous native grape variety, Nero d’Avola. Everything was lovingly cooked by Martin’s mother, Catherine. We learn in the video that she had initially made a few appearances in Raging Bull and Taxi Driver… but her scenes were cut out during editing. Viewers feel as though they are sitting with the Scorsese family for dinner, and are privy to a few anecdotes. For example, we learn that the love scene in Who’s That Knocking at My Door (with Harvey Keitel) was filmed in Martin’s parents’ bedroom, in this very house. Three years later, it would appear that the family meal at his parents’ house was Martin Scorsese’s inspiration for a scene in Goodfellas that has since become a cult classic. Here, the Sicilian director’s mother (nearly) plays herself in the role of Joe Pesci’s mother, who shares a meal with Robert de Niro and Ray Liotta. Ah, memories! How times have changed! In our 63rd issue, will Martin Scorsese be unfaithful to his Sicilian roots? During operation "L’Odyssée d’un Roi", three bottles of Louis XIII cognac were sold at auction for a total of $US 558,000. A restaurant in New York? The restaurant at the Crosby’s Street Hotel is superb. Which spirits do you enjoy? To relax, a little glass of Jameson on the rocks. When I go out, I can’t turn down a vodka tonic
with Kettel One or Grey Goose. I also discovered a vodka in Iceland when I was shooting Thor: The Dark World, the Reyka. At night it got very cold quickly. A Reyka with tonic and a squeeze of lemon. And the northern lights as a spectacle was amazing... What about wines? I would like to deepen my knowledge of wine. I have a weakness for Sancerre French wines and pinot noir. Otherwise, I love champagne. A film to watch with a final drink? Sometimes I need to unwind, so I watch a good film with special effects. Or otherwise, to stimulate my mind, I watch an art film or an old classic. I love French, Italian and Asian cinema. Recently I enjoyed A Bigger Splash with Ralph Fiennes and Matthias Schoenaerts. GORDON LEUNG It is behind the furnaces of the elegant Spring Moon, of the legendary Peninsula Hotel, that he officiates with discretion and virtuosity. The master of Cantonese cuisine, Gordon Leung, head of one of the finest gourmet establishments in Hong Kong, has just scooped his first Michelin star. How did you react to the announcement of this Michelin star? I was absolutely delighted. Not just for me, but for my whole team. It was also a wonderful tribute to the work of all those who have built up the restaurant’s reputation for 30 years. What makes Spring Moon stand out from its many competitors in Hong Kong? Spring Moon offers Cantonese cuisine’s most delicious dishes, such as handmade dim-sum and seafood specialties, served in a very 1930s jazz ambiance. If you’re looking for authenticity, this is definitely the place for you. And what makes the menu unusual? The rarity of the fish and seafood that we use that is included on our menus according to the seasons. And it’s exactly the same things for all the other ingredients. For example, at the moment we have baby spinach poached with Portuguese Goji berries. These special berries are only available three months per year. The Spring Moon is also known for its rare dishes that we continue to serve. "Eight Treasures Duck", which is very complicated to prepare given the number of ingredients: mushrooms, chestnuts, Chinese salted ham, lotus seeds, salted eggs, lean pork and barley. To make the dish, each

"treasure" must be prepared separately, while the duck is braised in abalone sauce for over an hour so that the meat fully absorbs the flavors of the sauce. What would be the best beverage to pair with such a sumptuous dish? Maotai immediately comes to mind. It is a brand of baijiu, a distilled white alcohol made from fermented sorgho, which is very popular in China. Maotai takes its name from a city close to Zunyi in Guizhou province where it is produced.

Do you have a cellar? Yes, but on a just-in-time basis. I’m not a collector. Whatever I have, I drink. But let’s say that in my cellar, I have a particular penchant for the estates of Anglore, Eric Pfifferling, the Crozes Hermitage at the Dard & Ribo estate, the Côtes Rôties from Yves Gangloff, le clos des Grives de Laurent Combier, whites by Jean-François Ganevat, the wines of Yvon Metra... I’m crazy about all of those.
What about spirits? Ah, Armagnac! My body makes me pay for it. And also cognacs and calvados. Every time I go to Normandy, I visit Breuil Chateau. I love tasting it in front of the fireplace! And whiskey? Of course, I love whiskey! Peated whiskeys: Lagavulin, Talisker, Oban... And the Hibiki from Suntory’s for Japanese whiskeys. Finally, can you recommend a restaurant? The Cantine du Troquet by Christian Etchebest in the 6th arrondissement of Paris. I ate snails sautéed with mushrooms and chorizo, it was perfect. JEAN-CLAUDE BIVER For the President of the watch department at LVMH, buoyancy has continued during 2016. The group has risen above a year tinged with gloominess in the luxury jewelry sector. The man, an avid collector of Château d’Yquem, is an enlightened wine lover. Interview… Jean-Claude Biver, the man to whom the watchmaking sector is indebted for having revived Blancpain and restored prestige to the brands of Omega and Hublot - no less - knows the tricks of a trade marked by extreme competition, which always allows him to stay in the top ranks of the profession. He notes: "Hublot experienced an increase in 2016 while the market was when the market was down by more than 10%. It has been at the top of the watchmaking industry for ten years now. Its outstanding innovation and creativity remain the driving force of its sales." For this "time master", it is in his cellar in his La Tourde-Peilz residence in Switzerland that immutably one of his other passions is immersed. As JeanClaude Biver is also crazy about wine, particularly the château d’Yquem, of which he even has a 1811 vintage. "Yquem is a unique case," he points out, "which reveals itself over time. It does not decline, even after 50 years (...) The only wine on this earth which lets you celebrate any centenary or bicentenary with quality." This stands among the other jewels of a collection which began at the dawn of the 1960s by this grandson of a Beaujolais winemaker, forged with
patience and passion, the big names parade: château Smith Haut-Laffite, château La Louvière, château Haut-Brion... "Wine is a ‘fusion’ of God and man", he explains with the emotion that he has found during his trips and his tasting like in his Ramatuelle house where a rosé from Provence manages to convey "the charm of the Mediterranean and the fragrances of the region". MIKE CHOI ‘Master of Havana Cigars’ since 2013, Mike Choi manages the Edward Sahakian Cigar Shop, an ultra-stylish smoking room in the Bulgari Hotel in Knightsbridge. An interview with an aficionado in one of London’s chicest locations. A few words about the genesis of the Edward Sahakian Cigar Shop? The idea of creating a store combined with a smoking room came from one of the hotel owners who is also a great cigar collector and regular at the Davidoff London store managed by Edward Sahakian for the past 35 years. I think he wanted to create a place of retreat where he could enjoy a cigar in peace. His choice fell upon Edward Sahakian due to his reputation, expertise, and success in the field. The task of setting up this luxury smoking room and store in the Bulgari Hotel was entrusted to his son Eddie. A new stage in the amazing story of this dynasty of real aficionados. How many cigars do you offer in your cellar? 130 different types. We are, I believe, the second biggest store of this type in a UK hotel. For the past four months, our bestseller is the Trinidad Vigia. Among our other best-selling cigars, there is also the Hoyo de Monterrey Epicure No.2, as well as the Trinidad Reyes. And which is the most expensive? A Davidoff Aniversario No.1 sold at $1,350 each. Which rare spirits could a customer pair with this cigar? The bar of the Bulgari has so many treasures in this

category on its menu. For me, the most outstanding are the 1960 Louis XIII Rémy Martin, a 1968 White Bowmore and a 1980 Dalmore Constellation Cask 2140. From a more personal point of view, what is your favourite cigar? My tastes evolve over time. Let’s say that one of my most memorable cigars is still the Cuban Davidoff No.2 given to me by Edward Sahakian. I smoked it at a friend’s house. Chablis
[ The one and only... ] Chablis, a world renowned French appellation thanks to its success overseas. It is certainly one of the most famous, but is also one of the most usurped in the world. However, it is still sometimes misunderstood by the wine lover: "A good Chablis but no chardonnay, please..."
There are many Premiers Crus. We’ve counted 40 of them! They produce complex wines with a lively and persistent finish, and boast great aging potential. While the Vaillons express themselves with more floral nuances, the Butteaux, on a heavier soil, deliver the richest wines. The Forêts have a more airy profile, a great finesse. As for the 7 grands crus, they represent the quintessence of the vineyard and offer racy, pure and complex long-keeping win after just a few years in the bottle. An extra asset then: there’s no point waiting a long time before opening these great wines. Les Clos or Blanchots Grand Crus can deliver and offer a concentrated, intense wine after just 5 or 6 years. It is not very difficult to find some of
these wines ready to drink at wine shops or restaurants. For the more patient, after about ten years, the wine will evolve into a patinated mouth with aromas of verbena and a very complex iodine frame. These sublime wines are paired with the most noble fish and shellfish, such as turbot or lobster. In contrast, we find the name Petit Chablis producing the simplest wines, the ideal companion for your oyster bucket. Wine maturation is subject to much discussion. Some winemakers have chosen to age their wines in a barrel while others prefer just a tank. It’s a question of philosophy and style where the use of the oak barrel does not seem compulsory to produce great Chablis with good keeping potential. Despite its isolated geography and its proximity to Champagne, Chablis is nevertheless closely linked to the Burgundy vineyards and represents 20% of its volume; an important figure that makes the Chablis area the true "reservoir" of Burgundy and explains its good standing on the international market. And we can’t go wrong with its price/pleasure ratio. In fact, the price of these wines, which are usually reasonable, allows the dry white wine lover to comfortably afford a good burgundy chardonnay. The cooperative wine cellar, La Chablisienne, which produces a quarter of Chablis wines, is a very good example and there is also a multitude of winegrowers producing perfectly vinified wines of exemplary quality. nd yet it is indeed 5453 hectares of Chardonnay that are planted on a virtually unique soil: the Kimmeridgian. There are already two key elements responsible for the success of Chablis wines: its soil and the volume of wines that this vineyard can produce every year thanks to its impressive size. Of course, the semi-continental soil plays a fundamental role in the typicity of these wines, but the Kimmeridgian is also largely responsible. This soil is white with marly limestone, rich in fossilized oysters and dates back about 150 million years. This is behind the minerality, the purity and the salinity of its wines. The sign of a great terroir, the expression of chardonnay is unique here, with a very strong identity. The wines are frank and provide immediate and obvious pleasure but hide many subtleties, especially through the Premiers and Grands Crus: an asset which is not always known to the general public.

2016 in Review [ A Good Year for Wine ]
With 2016 drawing to a close, it’s time to recall the year’s defining economic moments, with special consideration for the Grand Cru wine world market. As for the indicative prices of Burgundy wines, they are at their highest levels ever. With lower yields for the next 2015s, prices will surely not be decreasing. While demand for the best Burgundy wines is very strong in Asia (and worldwide), there could very well be some market resistance because of these prices - especially for wines from small producers. These prices will certainly be accepted for production originating from a few top-tier estates, but producers below this level of excellence may have difficulty selling their wines.
We clearly observed a continuous trend in 2016: collectors demonstrated a willingness to pay premium prices for wines from distinguished collectors offering a solid guarantee of their provenance. This is undoubtedly positive, and I think that we will continue to see this increased insistence on traceability.
For its part, the secondary market seems to have experienced a rapid expansion after the UK Brexit vote. With the decline of the pound, buyers the world over, especially those in America and Asia, took advantage of the attractive prices offered by British merchants. After the buying spree on British inventory, a certain level of parity was restored and increased optimism could be observed on the market. This was especially the case in Asia, where the demand for the best ready-to-drink wines is still high, with increased sensitivity concerning the prices for younger wines.
Furthermore, the 2015 Bordeaux campaign was met with more interest than other recent vintages. We nonetheless observed a decrease in demand from Asian wine lovers. Given that collectors concentrate on wine of a certain age and that Bordeaux winemakers seem reticent to lower their prices, we can surmise that, for the time being, the upcoming nouveau wine campaigns will fail to meet past success levels.
We anxiously await the arrival of 2017, which seems to herald a more international market than ever before. This bodes well for likely stability and growth following more tumultuous periods.

Recently, the New York branch of the House organized a sale of Bollinger champagnes directly imported from the cellars of the Champagne house. Very much awaited by fans of the brand, the day was marked by the auction of a bottle of Bollinger 1914 Experience for $12,250. Aged for 102 years, this precious beverage was recently exhumed from a disused gallery and is accompanied by a visit and a tasting in the cellars of Bollinger for its buyer. A Jeroboam (3 liters) of Bollinger RD 1979, also found a taker for $6,738 (estimated at around $3000) and three bottles of Bollinger 1973, a rare year, more than doubled their high estimate by being snapped up for $5,145. A test tasting of success for the very first auctions organized around the Maison Bollinger.
Also nicknamed ‘the man with the 40 chateaux’, Bernard Magrez is not just the only owner of four grands crus classés in Bordeaux. He has the same number of rare musical instruments: a Stradivarius 1713, a 1975 Nicolas Lupot violin, a 1660 Cassini viola and a 1788 Fernando Gagliano cello. A few words about your cellar? The first-growth Bordeaux wines that I often buy make up most of my cellar. I have a weakness for Saint-Julien wines, particularly for the Ducru-Beaucaillou, Talbot and Beychevelle Chateaux. The best you’ve ever tasted? The superb vintages from Mouton-Rothschlid, Petrus, HautBrion… On a professional level, Alteo Properties, which you manage, is part of the Alteo Group… Yes. The Group’s main activities focus on the sugar cane cultivation and transformation sector, as well as on energy production. Alteo now has 15,000 ha of land on Mauritius and is also present in Kenya and Tanzania. What about Alteo Properties? It all started in 2006 when we launched the island’s most prestigious property project, Anahita Mauritius, which is an IRS program (Integrated Resort Scheme), allowing foreigners to purchase full property assets including those designed by architect Jean-Michel Wilmotte.

What are your earliest memories of wine? Even as a student, wine was one of my passions. I even envisaged being an oenologist...I remember tasting very fine bottles of Chateau de Pommard. As for red wine, I was first conquered by burgundies before moving towards Bordeaux wines. And for white, first of all I tasted Alsace wines, and then I went for Loire and Burgundy wines.

The Castéja family has launched its "La Grande cave" website with its sights clearly set on entering the direct consumer sales market with a focus on Bordeaux wines. "We offer over one thousand different labels, representing the largest number of product references, be they wine estates or brands, and we will cover the entire range of wines, from 4 euro bottles to the most prestigious grand cru wines," insists Frédéric Castéja, in charge of this business line. "We guarantee that we will only sell wines already in stock," adds President of the family holding company, Philippe Castéja. This is a powerful sales incentive for lovers of fine wines, who can rest assured that the precious bottles have been held under ideal conditions prior to delivery. "What makes this site special is that we only offer Bordeaux wines, because it is managed by a family from Bordeaux and we believe in our fine wines," stipulates Philippe Castéja.

The site features teaching tools that transport visitors on a voyage through the vineyards of Bordeaux: a sensory engine allowing users to discover their "œnological profile", an educational guide and an address book of the essential sites and vineyards of Bordeaux. Each wine estate producing Grand Cru Classé wines has its own custom page. A section offering services, advice and private conciergerie is available to meet all specific requests. The group is aiming for La Grande Cave to generate an annual turnover of 2 million euros in 2017, with a view to adapting the concept for deployment as a chain of stores. The website nonetheless refrains from selling abroad, because the trading group already exports worldwide. "Since we cannot be in competition with our importers and distributors, La Grande Cave will therefore be focused on the French market," stresses Frédéric Castéja. The Bollinger Wine Libraries In 2010, concealed behind a wall of empty bottles, an abandoned wine cellar containing bottles and magnums of reserve Bollinger wines was discovered. It was clear from the outset that they were very old. This "forgotten cellar" had miraculously preserved period small wooden panels whose inscriptions indicated the origins and vintage of certain batches, for example an 1886 Le Mesnil-sur-Oger, an 1893 Verzenay and a 1914 Aÿ.

ith the help of some archival research conducted that same year, other mysterious inscriptions gradually began to make sense, revealing the true extent of this discovery. Indeed, the wine archives enabled us to unveil the exact meaning of the inscription "CB 14" – an 1830 vintage!
In 2012, under the guidance of Cellar Master Gilles Descôtes, the House embarked upon a vast restoration project, aiming to save these rare old wines. While the state of preservation varied between bottles, the project meticulously restored over 4,000 bottles. Taking three years to complete, this major initiative resulted in the June 2016 unveiling of two living wine libraries, namely, Galerie 1829 and La Réserve. Galerie 1829 showcases old Bollinger wines preserved since the House was founded in 1829: 7330 bottles (in standard bottle, magnum and jeroboam formats), 65 different vintages. The spotlight will shine particularly brightly on the vintage Bollinger R.D. collection, created in 1952, in addition to the vintage Vieilles Vignes Françaises collection, developed since 1969, and the red wine collection. La Réserve will showcase one of the very foundations of Bollinger style - our reserve magnums. A few figures: 3125 bottles, 45 vintages,16 different crus. . A
flamboyant fifty-something, Richard Orlinski is a man on a tight schedule. No sooner had he left our photo session at Studio Harcourt (Paris 16th) than he was busying himself to get to another. It must be said that he is a prolific, on-trend and hyperactive artist, constantly on the go and who’s not afraid to dabble in a bit of this and that (sculpture, music, cinema); whether this is in his artistic practices (resin, aluminum, marble, stone, stainless steel, petrified wood) or in his uninhibited approach to wine. At the head of a four-child "Orlinski team", this rock-star-esque dad is clocking up the miles circling the globe, moving between St. Barts and Aspen. He has one regret about his fast-paced lifestyle: "I love to cook but I just don’t get In 2004, he launched his concept ‘Born the time. The flow is fast, a reflection of his meteoric rise. Considered the world’s best-selling French contemporary artist, he is paradoxically better known to the mainstream press than Art Press, his peers reproach him for his famous friendships and his eclecticism, and no doubt also his ambition for wide-scale seduction. In fact, the Frenchman likes that his trajectory is more closely resembles American success stories than it does to the existentialist questions of German-speaking intellectuals. Richard Orlinski has it all and more. Whatever, he’s not the type to be affected by it. He’s been around the block a few times. As a young graduate, the Parisian already had a string of professional experiences under his belt: business, design, interior architecture, real estate, events... We point out to him that sculpture came along much later. He’s soon to rectify it, adding that although he started living off his art later on in life, he’d been creating it ever since his childhood. In 2004, he presented his first red resin crocodile and launched his concept ‘Born Wild’, which focuses on "the animal instinct and human nature" and aims to "transform negative impulses into positive emotions". Exhibited at the FIAC in 2006, his ‘bestiaire flash et pop’ [flash and pop bestiary] is reminiscent for some of Roy Lichtenstein, Andy Warhol, Keith Haring and Niki de Saint Phalle. It took just a few months to invade the network of celebrity galleries in Paris, Saint-Tropez, Cannes and Miami. Then the consecration came along. His devotees include Sharon Stone and Pharell Williams, hotels, the very well-heeled, not to mention the public authorities, as evidenced by his work at the ski resort of Courchevel. For several years, the most fantastic Savoyard resort in France has been hosting a spectacular open-air exhibition. On a trip through the village and up to the peaks of Saulire you’ll come across an impressive red gorilla, a 5-meter-high bear, horses, wolves and even an incredible openwork tiger.

••• Radical, daring creations without half measures, just like the "extra black" chocolate that he munches or the "frank, powerful wines" that he adores and that he likes to discover with the help of his friend Vincent Moreau, the man in charge of the Château de Ruth and the Galuval Estate: "As far as red is concerned, I’ve a certain penchant for Côtes-du-Rhône but I’m always happy to go along with the guidance of vineyards, friends, encounters. I also like rosés from the Alpilles, especially from Vallon des Glauges. As a young man, at the age of 17, I tasted great wines, Romanée Conti, Cheval Blanc or Château Ausone, stolen by my classmates from their Neuilly cellars. But I knew absolutely nothing about them!" And today? "I’m an enthusiast, I’ve got my fair share of experience", he states modestly, explaining that he’s trained his "palate over time and on his travels". "I’m often surprised by the quality of the Californian, Australian and South America wines that I’ve been introduced to". However, not to the point of taking photos of the labels. It’s a matter of method. "I only like wines that I’m told about, there needs to be a human element involved, the artisan’s input",
says the sculptor. A unique confession for a public figure so able to galvanize the crowds. After the dancefloor-filling electro single Heartbeat, a clubbing hit featuring Dutch singer Eva Simons, Richard Orlinski will unveil his brand new title next January: Paradise. Resulting from a rare invitation from Disney, in a few months he will present a reinterpretation of the famous Mickey magician from Fantasia. Further enhancing his biography, the piece is planned for spring 2017 at Michel Lafon. This constantly surprising, top-ranking artist has so many moments to clink Ruinart, his favorite champagne; we also found out that he is an Asian cuisine aficionado, a Japanese sake connoisseur and he does not rule out an artistic collaboration with a vineyard one of these days... AN BEASTLY COLLECTION The common thread in Richard Orlinski’s artwork, his concept ‘Born Wild’ invites the animal in us to ask inquire about the "paradoxical essence of savage beasts, which are ferocious, powerful and dominant but are symbols of freedom, intelligence (...)". Often predators (shark, wolf, tiger etc.), but sometimes herbivores (hippo, elephant, bull etc.), for Richard Orlinski, what they have in common is that they present themselves as conquerors, wearing their fractal, faceted shapes, sometimes matte, sometimes lacquered and in spectacular dimensions. These are zoomorphic works complemented by a series of symbolic pieces, such as superman, jeans and stilettos as a nod to pop culture and folklore.

Here, the local elite could sip cool cocktails in peace. The brand launched the Martini Racing Team, its own car racing stable, easily identified by its blue and red stripes. At the end of the 1950s, a young and then unknown Andy Warhol would become one of the many artists to craft advertising campaigns for Martini since 1890. James Bond himself, through the person of Sean Connery, became part of the tradition with his famous line "Dry Martini, shaken, not stirred".
The Birth of a Vermouth In 1863, in the Piedmont region, Alessandro Martini, a wine merchant, and Luigi Rossi, a botanist and expert in liqueurs, shared the same passion for original aromas. They combined their talents in association with the accountant Teofilo Sola to build a small company that then produced a vermouth based on wine and aromatic plant extracts. Out of the association of smoothness and bitterness, Martini & Rossi was born…
The Art of Mixology Then, the passion for cocktails experienced a downturn. Martini then had a series of dark years... A new era began in 1993, when the fifth generation of Rossis sold the company to Bacardi, the giant rum company of Cuban origin. At the end of the 1990s, perhaps thanks to Tom Cruise’s charming cinematic role as a bartender, cocktails experienced a worldwide resurgence in interest. Martini tried to profit from this craze… But since the 2000’s, Martini has struggled to seduce the new generations. The House then banked on its origins and went upscale with the release of two special reserve products at the end of 2015, Ambrato and Rubino. For the past few months, the Italian brand has completely renewed the design of its iconic bottle and has launched a new campaign based on its mythical logo. This is to set it apart as the essential aperitif brand and to put it back on the long drinks landscape, with drinks like Martini & Tonic, accompanied by a wedge of lime or orange, to provide a light, fresh and sparkling note.
A Genuine Ascent Alessandro Martini was a true globetrotter who travelled the world to introduce Martini Rosso, the house’s very first creation. He very quickly established a solid reputation in Italy, and rapidly beyond its borders: in Europe and Argentina, and later, in the United States, China and Japan… Its renown stimulated the creation of new aromas. Luigi Rossi, the botanist and wine-making expert, spearheaded the creative process. He first created Martini Rosso, the vermouth par excellence. In 1872, he created a unique and versatile liqueur, Martini Bitter: bright red, with a subtle orange flavor and gentian highlights, it remains a timeless beverage. Then, in 1900, the House released an Extra Dry version of vermouth: slightly woody, with notes of raspberry and lemon. It was followed in 1910 by Martini Bianco with a slight sweet touch of vanilla flowers. In the years that followed, while preserving the singular nature of the brand, the descendants of Martini & Rossi would launch new creations. Cocktails in Fashion House Martini and its Master Artisans, the Master Botanist Ivano Tonutti and Master Blender Giuseppe Musso, have worked for nearly 8 years to develop Gran Lusso, limited to 150,000 bottles worldwide, launched in celebration of the brand’s 150th anniversary. We deemed it important to focus on this elixir.
MARTINEZ • In an ice-filled mixing glass, chill 3 cl of Martini Gran Lusso, 3 cl of gin, as well as a drop of maraschino liqueur and a touch of Angostura Bitter. • Mix the contents 5 times and then filter. • Pour into a cocktail glass and garnish with a lemon peel.
We have combined two unique botanical extracts. The first extract was inspired by a historical vermouth recipe made using moscato that had previously aged for one year in wooden casks. GIUSEPPE MUSSO Martini’s Master Blender Giuseppe Musso became House Martini’s seventh Master Blender in 2011. His mission was to combine the elixir with a selection of the best wines to respect Martini’s unique flavor. Without revealing Martini’s recipe, can you say a few words about it? Besides grapes, Martini’s recipe includes over forty natural ingredients, called botanicals: aromatic plants, flowers with multiple scents, fragrant fruits, exotic woods, rare roots and mysterious spices from around the world that form the soul of Martini.

Do you have a few words to describe Gran Lusso? It reveals an atypical flavor that is slightly bitter, obtained from aromatic extracts of selected plants. The smooth sweetness of aged moscato adds a spiced and sweet touch to this vermouth. With their notes of lavender and rose, red Barbera grapes provide a unique sweetness to this beverage. What are the current trends for your new creations? For the past 7 years, the continuing trend is vintage, rare vermouths, with retro formulations.

hile the origins of this cocktail made of red vermouth, bitters and gin are somewhat nebulous, almost all versions involve an Italian noble. During the Belle Époque, in 1919, Florence’s Café Casoni was the place where the Florentine aristocracy went to have aperitifs in the evening before having dinner. Count Camillo Negroni loved cocktails and was a regular customer whose usual drink was an Americano. Curious to try something new and a bit bored with his usual selection, the Count asked the barman to strengthen the aperitif by using the same ingredients, only skipping the soda water and adding some gin. This cocktail was an immediate hit. All of Café Casoni’s patrons wanted to taste this "americano with gin". To shorten this overly long name and to honor the count, the barman had the idea to name it after its inventor, Negroni…
Martini redeveloped its esthetic codes and redesigned its iconic bottle to embody curves and roundness. The Italian brand paid homage to the points of reference that bear witness to its heritage.

For Bar Le Botaniste, the interior architect has replicated the luxury of an imperial tent in the heart of a military campaign, while the dining room reproduces scenes above the chimney relating to the date of 18 Brumaire, a decisive moment in French history, preceding the coup d’état that lead to Napoleon becoming First Consul.
It is no accident that the upper crust of Paris discretely weaves its way through here rather than putting itself on display. On the eve of autumn, in the corner of a fire burning in the chimney in the first lounge to the right of the entrance, one can barely notice a politician having a one-to-one meeting in the fading daylight. Only insiders press on to the half-light of Bar Le Botaniste, concealed around a plant wall… Inspired lovers of all things French, the owners have certainly done what they intended. They waited to find the historic site that would make all the difference, for which they had the most beautiful parts listed by Les Bâtiments de France. That’s what Shangri-La Paris is all about: firmly rooting the steps of its patrons in French heritage. Contrary to most palaces, each nook here traces back the thread of history with the sure knowledge that the Seine flows nearby. No need to call upon French interior decorators to tell a story. Pierre-Yves Rochon had only to draw upon the true story of the person who embodies the premises: Roland Napoléon Bonaparte. The latter was a veritable globetrotter who devoted his entire life to science and who made this residence the head office of the Société Française de Géographie. From the Rotunda to its masterful staircase and historic lounge (which is reminiscent of La Galerie des Glaces), everything reflects Versailles. of happiness that reprises the esthetics of the Château of Malmaison that Joséphine de Beauharnais acquired in 1799 as her residence following her divorce from the Emperor. Shangri-La Paris is not merely one more palace. Those who observe the premises take note of all the woodwork, moldings and other works of the trade guild artisans who take their proper place as part of France’s collective history and have made this place one of exceptional heritage! Each space is a living theater - even the dome of the La Bauhinia Restaurant held lots of surprises in store when in place of a normal ceiling the architects discovered a dome whose architecture was typical of Eiffel. The site also features a light shaft that now requires the twice-yearly assistance of two mountain climbers to clean the glass roof, the drapes and the hundreds of bulbs contained in the colossal Murano glass chandelier. The Shang Palace, Paris’ first true Asian gastronomic restaurant, is perhaps the only culinary outpost that is faithful to the language of the peninsula. The kitchen is orchestrated by Samuel Lee, a chef who presided over the greatest kitchens in Hong Kong and Zhejiang for 6 years. His approach is to enrich the recipes learned from his mother with specialized cooking techniques rather than to serve overly westernized dishes. The result is a menu that is at once traditional and sophisticated. MATHIAS MÉNARD Having recently arrived from Lasserre, the illustrious Parisian house where he met Chef Christophe Moret a few years ago, Mathias Ménard took up his duties as head -sommelier for the new Palace on Avenue d’Iéna this past August. What is the cellar’s current inventory? We now stock 650 product references and approximately 12,000 bottles. Most of those wines are from Bordeaux and Bourgogne, both wine-growing regions with a proven track record. But I start from the premise that a great cellar is built progressively, and deep down I dream of doubling the size of our cellar in the next five years.
What is your best memory as a sommelier since you arrived? Pouring a lofty Pomerol, Château La Conseillante 2005, into a carafe on the terrace of our best suite, the Shangri-La Suite on the top floor, opposite the Eiffel Tower and all of Paris. Time stood still...
CULTURE AND GASTRONOMY With three restaurants, including two with Michelin stars, three ambiances and three cooking styles, a special place is reserved for culture and gastronomy at Shangri-La. Awarded one star by the Michelin Guide, Shang Palace proposes a culinary voyage through southeastern China, surrounded by an elegant and typically Asian decor. Within a hushed ambiance, the décor for L’Abeille (two stars in the Michelin Guide) seeks to be elegant and contemporary, based on silver and taupe grey tones.

CHRISTOPHE MORET In less than two years, the Chef has earned two stars in the Michelin Guide for L’Abeille, Shangri-La Paris French restaurant, and has injected new life into vegetarian and vegan cuisine. A gastronomic challenge fit for a Palace, and well met. What is the "signature" of L’Abeille? The sauces and gravies. This is also the signature of French cuisine, which we tend to forget. It is an aspect that must be defended. My team spends 50% of its time working on sauces! We use products of exquisite quality, because a sauce without proteins does not hold up at all. My sauces are made using blue lobsters from Brittany, and scampi caught in pots off the coast of Scotland. These are sauces for refined palates that insist on nothing but the best, and they require lots of time and culinary sophistication. What are two details that make all the difference to the dining experience? Placing the sense of smell at the center of the meal. The bellringing ritual confers an initial sensation connected to the dish. Next, carving in the dining room whenever possible, so long as it does not overly slow down the serving. It is a noble moment, punctuated by elegant and precise gestures. The way the meal is served is very important. A dining room is the scene of a theatrical play. Each person plays a role and all participate in the show. How do you work with the sommelier ? Each time the menu changes, we prepare two servings of the dishes. One for the maître, the other for the sommelier. I rely on their opinion, because some dishes form a whole. If it hadn’t been for the sommelier, I would never have thought to present my Sake Sea Urchin Royale, which has become our signature appetizer.

Which direction would you like to take? The demand for wines from Bourgogne is currently very high, but I would like to steer my customers to other terroirs, such as those in Italy, – a country dear to my heart – and to wines from the New World. I would also like to spotlight other French regions like Languedoc and the Loire Valley, that now produce wines reminiscent of those from Bourgogne, since wine growers there are increasingly adopting methods from Bourgogne, with finesse and a very aromatic dimension. I am very open-minded... and I am also called upon to provide accompaniments to ambitious, highly complex Cantonese cuisine. This new challenge is exciting for a sommelier.

I
t all started on November 18, 2015... Congregated in the United States in the luxurious Goldstein villa up in Beverly Hills, a small circle of privileged invitees watched the international launch of 100 years: the movie you will never see. A cinematographic and artistic opus (outside of France) written (and starring) John Malkovich, produced by Louis XIII, the film was produced by Robert Rodriguez and will not be unveiled until.... November 18, 2115! It pays tribute to the time needed to create a bottle of Louis XIII. In fact, each bottle is the fruit of the work of four generations of cellar masters over 100 years. It is a blend of 1,200 eaux-de-vie, the youngest being at least 40 years old. "Nobody, except the editor, has seen the film in its entirety," insists Ludovic du Plessis, Global Executive Director of Louis XIII. "It’s a project intended for future generations". A thousand happy few then received an invitation card to pass on to their descendants for a private screening in 2115 at Grollet Estate in the Cognac region, the historic stronghold of Louis XIII.
The birth of "L’Odyssée d’un Roi". To realize this triptych selection, it was necessary to collaborate with the most prestigious French Houses. The trunk, 3 of which were made from precious leathers, was handmade in Hermès’ workshops. It draws its inspiration from classic trunks, of those which made their way to America by boat and was used as a precious case for the Louis XIII magnum carafe. Inside: a white gold pipette, a goldsmithery treasure hand-forged by Puiforcat. Used during a service ritual, each pipette is shaped, stamped and engraved with the wheel, according to an ancestral technique. And now for the decanters… Mouthblown, carved and engraved as in the past, with the copper wheel at the royal glassmakers of Saint-Louis, they are accompanied by four glasses and each is decorated with the continent in which it was put up for sale. As for the unique combination of Louis XIII, it was enriched with a selection of the oldest eaux-de-vie of Grande Champagne preserved by the House, bequeathed by each Cellar Master to his successor. A cognac like no other with unique aromas.
A story of transmission Let’s not forget that the current cellar master, Baptiste Loiseau, who has been in the job since 2014, is today selecting the eaux-de-vie which will be blended by his successors in a century. Like a cathedral builder, he will never see the result of his work. According to Ludovic du Plessis, "transmission remains a strong value for our House, which began to assemble the first reserves of old eaux-de-vie as early as the middle of the 18th century, following the intuition of Rémy Martin, founder of the eponymous house. It was his great-grandson, Paul-Émile Rémy Martin, who created Louis XIII in 1874. That is one hundred and fifty years after the creation of Maison Rémy Martin, in homage to King Louis XIII who was the first sovereign to distinguish cognac from other eaux-de-vie". And so the job of creating a royal spirit was complete.

"These especially designed works of art are the fruit of four prestigious players in French luxury: Louis XIII, Hermès, Puiforcat and Saint-Louis" notes Jamie Ritchie. A globetrotter who’s constantly traveling, he tells us with great enthusiasm of French genius through the fabulous story of Louis XIII. I’m so lucky to make a career from my passion! "There’s nothing better", he declares. "L’Odyssée d’un Roi refers to the many journeys made by Louis XIII, a symbol of French art de vivre since its creation. It is a tribute, a way of reminding us that he has accompanied some of the major events of the 20th century, from that of the transatlantic crossing to that of Concorde. Louis XIII is a brand which goes way beyond the world of spirits, it is global, the height of luxury." "As for The Film Foundation, it seems quite natural for us to remain in cinema. Like Louis XIII, it is an arena for international expression. Made exclusively from the prestigious Grande Champagne, Louis XIII cognac was first made in 1874. This was also the date of the first impressionist painting exhibition in Paris. The works of Monet, Renoir, Pissarro, Degas and Cézanne were causing uproar among critics....
The maiden voyage of the Normandie, the first transatlantic liner, a symbol of 1930s France and the height of French luxury and refinement. It is considered one of the best liners ever built. Louis XIII cognac was served there in first class.

Louis XIII cognac won a prize at the Universal Exhibition in Paris. This exhibition attracted over fifty million visitors. Did you know that the date also marks the appearance of the Métropolitain, with the first Paris metro line (Porte de Vincennes - Porte Maillot)?
World War II, Operation Overlord was launched by the allies to land in France. It was D Day, 176,000 men landed on the French coasts. Paris was liberated and General de Gaulle paraded along the Champs-Elysees and placed an order of Louis XIII to celebrate the victory.

Out of all sports, polo is undeniably the most exclusive, the one that most bears values of excellence and fortune. It’s only natural that the watch industry would focus on this area - it not only likes to keep time, but also dress athletes. There are multiple approaches: Functional, traditional, straight-up sturdy or plain equestrian. The watch offers great flexibility and technique to players and followers alike. Behind this myth, we must realize that playing polo with a mechanical watch is pure madness. No matter how resistant and protected it may be, it is still subject to dangers when wearing it during matches and the risks of breakage in particular.

But if we want to be pragmatic and wear a watch, it should be as hard as a helmet and sacrificial. The I.N.O.X. by Victorinox is surely the toughest of them all. Mounted on its camouflage paracord strap, it blends into its grassy backdrop. So, for amateurs...
This does not discourage watchmakers, who continue to offer watches designed for the game due to their practicality, resistance or are simply inspired by the lifestyle associated with it. Practicality focuses on timing, like in the case of the Hublot Classic Fusion Chukker. Its chronograph counter measures out the 7 minutes and 30 seconds of each chukka. Another solution to protect it is to reduce the watch’s glazed surface. Richard Mille invented its RM053 in this way; it just displays the hours, minutes and its tourbillon, in little openings in the middle of a large titanium cover. Tilted, they put the time directly under the eyes of the player. In a similar way, De Bethune has created an ultra-scratch-resistant model with no large glazed surface, which is brittle by nature. Its DB27 D Polo Edition concentrates on readability thanks to its digital and mechanical display. JaegerLeCoultre continues to associate itself intimately with specialist watches, such as Reverso Squadra Chronographe, but the Reverso has been living its life for a long time away from the mallets. That said, the principle of a A POLO MATCH A match is divided into 4 to 8 periods known as chukkas, each lasting seven-and-a-half minutes, and split up by 3-minute breaks to change horses. Although the referees have whistles to intervene on faults committed during the game, the periods are signaled using a bell or a horn.

espite appearances, polo is a contact sport. Although it’s not violent - polite society wouldn’t dream of it - it still has its fair share of collisions, friction and heated exchanges. During the seven-and-a-half minutes of each of the game’s eight chukkers, two teams of four players compete in dexterity in terms of how they handle their steeds, just as much as in how they handle their mallets. A ballet reserved for the best riders, polo is certainly an elitist sport.

THE ORIGINS OF POLO While we cannot precisely establish when and where the game of polo originated, it is believed to have been created roughly 2,500 years ago, by the equestrian peoples of the Central Asian steppes located between China and Mongolia. Are there any watch faux-pas? Yes, of course. But watchmaking follows its own specific subtle codes. For example, a model as armored and iconoclastic as a Richard Mille RM053 would seem out of place if it were not born under the noblest auspices. The extreme sophistication of its movement is largely concealed by its case intended to protect it from blows. Supported by Pablo McDonough, one of the best players, it’s easily accessible to him thanks to his stratospheric paycheck. In old money circles, this argument is still vulgar, so it is better not to point this out.

he crowning spirit of the English colonial world, gin has never known such fervor. As micro-breweries multiply, craft gins follow suit throughout the world, aided by a particularly flexible production method. Escaping the constraints of aging, gin is also not linked to a single distillation. So, we just select our own pure alcohol and add to it a palette of tailor-made flavors, but of course respecting that which defines this white spirit: the juniper berry. More than one hundred artisanal gins coexist and display a variety of unique tastes. Always bitter, inevitably, they are modulated with flowers, spices, aromatics and plants of varying rarity that bring with them an additional sweetness, depth and aromatic richness.
WHAT ABOUT CHAMPAGNE? After sport, and that goes for polo too, nothing can replace water. Gastronomic signature [ Art Gallery & Vintage Car Exhibit ] Each year, the largest exhibit of contemporary art in the United States is held in Miami. The event, called Art Basel, gathers the most important international galleries to exhibit renowned artists and reveal new talents in the fields of painting, sculpture, drawing, photography, video, experimental works and more. Gallery owners, collectors and artists meet there. It is an occasion for the happy few to go to the Miami Supercar Rooms, recently created by Elo, a former top model in the 1990s, who is now busily combining a series of roles: entrepreneur, artist, collector and gallery owner. Here he offers an original concept: an art gallery that exhibits cars from his personal collection, matched with performances by chefs from Miami’s restaurants. In Miami, you can feel an overall effervescence beyond what is typically felt here. The weather is beautiful and warm. It is hard to believe that winter is coming… This joyous hustle and bustle is attributable to Art Basel. Each year, during the first week of December, art in its myriad forms is celebrated at the Convention Center; from the world’s most renowned painters (e.g. Matisse, Picasso, Kandinsky, Soulages and more) to new artists whose popularity is on the rise. The art market is divided and organized into a hierarchy for the various clienteles sometimes attracted by the exhibits organized on the fringes of Art Basel. The entire city is in tune with the event. The teeming district of Wynwood, already known for its impressive mural paintings, is on the rise. Former warehouses are being transformed into avant-garde galleries, surrounded by trendy boutiques and hip restaurants. Miami is reinventing itself. For the time being, we are waiting for Elo, as we sip a mojito.

It is this concept that makes the Miami Supercar Rooms original: to match the pure esthetics of cars elevated to the heights of works of art through their design, history, mechanics, myths and accessories with the intense enjoyment of culinary flavors. It is the hedonistic combination of pleasing the eyes and the palate on the same site. Miami Supercar Rooms opened in February 2016 and was an immediate success… We sat down at the custom bar, the final product of the transformation of a 1971 Chevrolet C30 pickup truck. He starts with the basics: "If my belly is happy, then I’m happy." A knowledgeable gourmet, he loves tasting and testing dishes, and confides that if he had chosen another profession, he would have found culinary criticism fulfilling. Elo is cosmopolitan and curious about others, and his taste gravitates to world cuisines, with a penchant for exotic dishes. The variety of South American, African, Asian and Mediterranean cuisines fascinates him.

AN INFORMED COLLECTOR Passion is the engine that drives him. Gastronomy is his fuel. Elo emanates relaxed elegance and contact, cheerful energy and eludes clichés. He is a shrewd businessman with unbounded creativity. His motto is "I am not a sheep, I am a shepherd." And follow him we did. 7
Can you describe your collection? It’s a quite varied collection, featuring several rare models, such as the 196 Ferrari SP (1961), the Rolls Royce Booth (1958) or the SL 300 Mercedes (1955), but most especially very different styles: classic, sports, vintage, customized... It’s not just a matter of accumulating cars. The thing about a collection is that it is never complete. It shifts and changes. I travel the world to see a car. Sometimes it is a wonderful encounter, sometimes it just doesn’t click. For me, it’s a matter of falling in love with the car. Which car most fills you with pride? I see cars as works of art. I don’t associate the value of a car with a given number, even if it unquestionably has a cost. I view the vehicle as a work of art that bears witness to its era. I study its form, its history… It’s plain to see that its DNA either speaks to me or doesn’t...

How are transactions completed? It’s different every time. The language of car lovers is international. A collector will only let go of a car if he is sure that it will be in good hands. It’s a transfer. I do buy cars, but sometimes I may do a trade. One car in exchange for another, and once, even a house in exchange for a car! Do you have any upcoming projects? Yes, opening a Supercar Rooms in London in 2017…

In the wake of the Second World War, the need for affordable means of transportation was keenly felt in Italy, prompting some companies to embark upon manufacturing motorcycles. Opposite: a 1953 Maserati and 1955 Fratelli Ferrari motorcycle. The latter motorcycle has nothing to do with Enzo Ferrariâ&#x20AC;&#x2122;s famous automobile brand, as it belonged to two brothers who shared the Ferrari family name. ining at Miami Supercar Rooms is a novel and luxurious experience. You find yourself in a private dining space with table set for six, to partake in an elegant 5-dish feast meant to please the eyes and the palate. In a contemporary setting, your dining space houses an iconic model from Elo’s car collection. A major-domo is exclusively at your service to ensure a flawless flow. He enlightens the guest with respect to the model exhibited, for which he knows the history, mechanics, designs and all details. He accompanies you through the Car Gallery, directs you to the (open) bar and introduces you to your DJ. Everything has been designed to ensure a memorable evening out. Of course, such a service comes at a price: $US 3000 for 6 people. But this covers your entertainment until the end of the night! Dinners are offered on Friday, Saturday and Sunday nights.
MEMBERSHIP CARDS Miami Supercar Rooms operates like a club with 3 service levels. Membership is free. The range of services is determined based on the type of membership: • White gives you access to all the site’s locations and gives you priority when making reservations. • Silver gives you free access to the Car Gallery and confers special privilegesW for the dining service. • Black gives you access to the Car Gallery and to the bar that offers 4 fixed prices, with a selection of matching drinks, always as an open bar.

Guests admire it as they drink a Pouilly-Fumé, made from Sauvignon grapes. This wine is sophisticated, mineral, fruity and full-bodied, whose

This car inspires desire, just like this Italian wine, Amarone della Valpolicella, produced in the province of Verona. A generous alcohol content, with a long mouthfeel, fruity: this wine is powerful, smooth and complex with a high concentration of aromas.
3 1935 "PACIFIC" DELAHAYE
This is a unique model... Guests visually caress it as they sip a Californian Napa Valley Syrah. Rich in aromas of blackberry, with contrasting peppery notes. This one has a strong personality!

MIAMI VICE COCKTAIL A cocktail with a Latin flair. A salsa rhythm in a wellchilled glass…
T
his is the favorite cocktail of Elo from Miami Supercar Rooms. It is an allusion to the American TV series Miami Vice and to the actors Don Johnson and Philip Michael Thomas. This cocktail is the city’s signature, without the vice. Its sweet granita texture evokes a Cuban flavour and the sweetness of strawberries.
INGREDIENTS
• 6 cl of Cuban rum • 3 cl of pina colada syrup
RECIPE
• 2 cl of lime juice • 4 cl of strawberry syrup
• Put some ice in the blender. • Add 3 cl of rum, the strawberry syrup and the lime juice. • Blend until the ice has a granita texture. Set aside in frosted glass. • Blend the rest of the rum (3 cl), the pina colada syrup and ice cubes until the mixture has a granita texture. • Pour into the glass containing the previous mixture.
A time-limited exhibition is organized based on the artistic work of Tomas Loewy. For one day, car collectors are invited to publicly exhibit their favorite model, on a few streets in the Wynwood district, with trophies awarded at the end. In this way, the entire district around Miami Supercar Rooms offers locations for contemporary art, making it a sort of Art Basel Fringe Festival, enabling visitors to stray from official itineraries. So, have a drink at the bar, visit the Car Gallery and a few nearby exhibits… how’s that for a program?
