Most days pass by at record-breaking speed, so consumed are we with our everyday stresses. The holidays remind us to shift gears, to take time to be thankful for the life we live, and for those in our lives that bring us joy and happiness. So, slow down a little. Surround yourself with people that are near and dear to your heart, regardless of the family (orange) tree connection. Be merry! This issue is all about giving - from random acts of kindness to selecting the perfect holiday gift. We hope that we have “wrapped up” some great gift ideas that can make a heartfelt impact, not only for those we know and love, but also for those less fortunate than ourselves. A ll Wrapped Up the Best Gift Ever e As the holidays rapidly approach, ‘tis the season of events and festivities. It’s also a time to reflect, be thankful, and spend time with friends, family and loved ones. But what about those that are less fortunate?

L

Living in the woods or on a park bench, alone, hungry, homeless, I shudder to think about how one might feel under these circumstances. Homelessness is in our community. In the hustle and bustle of day to day living, we barely seem to have time for our individual needs or those of our family, much less to volunteer our time to anything else. However, it is in times like these that we need to be a strong community and give some of our time and resources to those less fortunate. A great way to be a part of a community is to volunteer your time. Volunteering with organizations that you are passionate about not only sparks your passion, but also helps you connect to other people with similar interests. These non-profit organizations really need our help NOW more than ever. With the uncertainty of an election year, budgets that are already stretched to their limits are cut even more. The giving of your time is a special gift that you can give that won’t cost you a dime. In fact, I am sure it will leave you feeling happier on the inside and it might even put a smile on your face. Don’t worry if you can’t commit to a ton of hours, start out by giving a little, maybe half a day a week or more if you have the time. This way, you won’t feel overwhelmed by adding it to your already busy schedule. Volunteering your time is the most selfless thing you can do. Another great way to support a charity is to donate your unwanted items. This provides you with a tax deduction and the proceeds from the sale of your unwanted items helps support the local non-profit. We live in a generous community. Many local businesses, families and foundations support our charities and charitable

events throughout the year. Please support these local businesses and foundations that promote charities all year long! We could not spotlight every non-profit and charitable organization in our area, so we’ve chosen a few of our favorites. We’ve compiled a “giving list” of all the amazing non-profit organizations that do their best each and every day to assist someone or something in need. ne afternoon while filling up my car, I happened to notice a hand-written sign on a chalkboard between the two gas pumps. It read: “$.05 from every gallon of gas for the entire month of September will be donated to the tornado victims of Vero Palm Estates.” I immediately went into the store to meet the owner, Rajesh (Raj) Patel, to find out more information. The Gator Truck Stop, located on the corner of 82nd Avenue and Highway 60, was already one of the least expensive places in town to get gas by at least ten cents per gallon. And here was Raj, donating five cents for every gallon of gas purchased for the entire month of September! The world needs more people like Raj. Raj exemplifies this selflessness and kindness without needing to be acknowledged for it and did not expect to be recognized for his generous gift. Do kindness! Together we can all make a difference to create a kinder and more caring society. Pass it on…!

The History of McKee Botanical Garden

I

n 1929, developers Waldo Sexton and Arthur McKee, looked at 80 acres of natural hammock and saw enormous potential. Three years later, McKee Jungle Gardens opened. This pioneering example of tropical landscape architecture became one of Florida’s earliest and most popular tourist attractions, hosting hundreds of thousands of visitors over 44 years of operations. With its fly-trapping pelican flowers, cathedral Royal Palm Grove, exotic wildlife and resident alligator, the Gardens helped to establish Florida as a lush and unique tourist destination. By the 1960s, attendance had begun to wane. The development of central Florida theme parks and opening of Interstate-95, which routed visitors around McKee’s location on US1, rendering it unable to compete. McKee Jungle Gardens ceased operations on May 1, 1976 and was sold to condominium developers in 1978. All but 18 acres was bulldozed. For twenty years, the heart of the Gardens remained untouched. In 1994, the Indian River Land Trust launched a fund-raising campaign to save the remainder of the Gardens. The property was successfully purchased on December 1, 1995 for $1.7 million. McKee supporters collectively raised an additional $9.1 million for the gardens’ restoration.

Eventually it became a separate entity from the Land Trust, and McKee Botanical Garden held its formal dedication in November 2001. With a renewed focus on native horticulture, the Garden remains true to its jungle heritage, featuring 10,000 native and tropical plants as well as one of the state’s largest collections of more than 100 varieties of waterlilies. The property also houses two unique structures designed and built by founder and folk artist Waldo Sexton and is listed on the National Register of Historic Places. More than just a destination for horticulture,

McKee Botanical Garden hosts a diverse variety of cultural and educational programs including lectures, workshops, special events, and art exhibitions. McKee Botanical Garden welcomes tens of thousands of visitors from around the globe each year, and continues its storied legacy of delighting and educating all who step through its gates. To walk the serene paths of McKee today or to have known it in its earlier Halcyon days when it was an 80-acre Tarzan playground replete with friendly bands of monkeys and ponds full of basking alligators makes it almost impossible to realize it was largely invisible to all of us and was facing extinction only 18 years ago. To be part of a community that is wise enough to recognize the concealed- by- time yet important potential and respond generously-in the case of McKee, with over 10 million dollars worth of privately raised funds- is to see Historic preservation effort at its finest. Together we can continue to reveal Vero’s best features and ensure that they will be treasured places that add to the magic and beauty that surround us here each day. Citrus Roots:

Hallstrom Farmstead

f you pick up the Old Dixie Highway at the Oslo Road intersection, as an alternative route to points south of Vero Beach, you will enjoy a relaxing journey off the main thoroughfare, as well as an opportunity to visit a true historical treasure— The Hallstrom Farmstead. The visit to this delightful farmhouse and the docent-led oral history tour are worth the short jaunt out of town along this tree-lined meandering road. Admission is only $5.00. The Hallstrom home is located on a large parcel of the original pineapple plantation, the citrus grove and farmstead established in 1909, by Swedish immigrant and horticulturist Axel Hallstrom. In February 2001, the Florida Review Board recommended the property for listing on the National Register of Historic Places. The Hallstrom Farmstead began as a 40-acre pineapple plantation in 1909. In 1906, it replaced with citrus as the primary cash crop. In 1918, the construction of the Hallstrom home was completed atop the Atlantic coastal ridge, an ancient coastal dune. The house still stands today as a historical, two-story, gable roof, with brick on frame construction. It is a home designed with hints of Victorian influence. Oral history tells us it was constructed with the help of local Scandinavian craftsmen and it has weathered the years gracefully. When you visit the Hallstrom Farmstead you have a sense of being in the presence of greatness, and this is what makes visiting Hallstrom so exciting. You are face to face with the past. Not only do you learn what happened here, by you are able to connect a slice of history to the present. The Past to the Present After settling the farmstead, Axel was intrigued with the fallow orange trees that had adapted to the climate after being brought to Florida generations ago by Spanish explorers. He grafted this hearty Spanish citrus rootstock to a more palatable fruit stock and thus created a hearty tree that would grow tasty fruit. Following a catastrophic freeze in 1917, which destroyed the citrus crops in south Florida, it was the plantings from this nursery that survived and was sold to citrus growers to replenish their groves. Axel’s hybrid citrus plants became the foundation crop of what is today the South Florida citrus industry. This is just one of a hundred reasons why the Hallstrom Farmstead is of such historical significance. To learn more, we encourage you to call the Historical Society 772-788-3435 for a tour schedule. Practicing Non-Greed in the Season of Giving

T

his time of year we are busy buzzing about, dutifully collecting presents for our friends and loved ones. Some are easy to shop for, others not so much. Have you ever asked yourself “what can I get for that person who has everything?”. We live in a time of excess and unfortunately during the holiday season that excess can reach its peak. In yoga there exists a set of moral principles yogis are encouraged to live by. One is Aparigraha

the practice of non-greed or non-hoarding. The idea behind this is to live with enough to be comfortable and happy, without being overly indulgent; strive to avoid selfishness and greed and exhibit generosity. The underlying belief being if we all live this way there will be enough to go around... So how do we integrate Aparigraha into our modern day lives? Recently my son demonstrated Aparigraha in action. One of our young training clients revealed

that he hadn’t eaten dinner because his mother hadn’t been paid and there was no food left in his house. My son overheard this and approached me later that night in tears. He just couldn’t accept that this boy had gone hungry. He wanted to know what he could do. He asked if he could take his allowance and birthday money and buy a Publix gift card for the boy. The next day we did exactly that. I don’t think my son has ever felt better about anything he has done in his life. He learned a most valuable lesson that day, that giving is truly the greatest gift. This year try to stay grounded during the frenetic, over-spending, holiday season by adopting the concept of Aparigraha. If you have a special person who truly needs nothing, give them a gift that serves or benefits those in need. Remembering the special interests of the individual is important, for example if they love the ocean consider donating to an ocean conservation fund. ver considered trying acupuncture? Although this ancient form of medicine may still be foreign to many, acupuncture is the most widely used form of complementary medicine in the United States. The principle behind acupuncture is that vital energy called “Qi” flows through the body in pathways, known as meridians. The free flow of Qi is essential to health. Qi can become blocked or stagnant, resulting from many factors that range from stress, to poor diet, to surgery. Blocked Qi leads to pain, illness, and “dis”-ease. Acupuncture needling re-establishes the healthy flow of Qi, promotes blood circulation, regulates the nervous system, and encourages detoxification. Super-thin, sterile needles are inserted into particular points chosen to help alleviate symptoms and restore well-being. Acupuncture is virtually painless and often deeply relaxing. There is no universally agreed upon explanation for how acupuncture works; however, a substantial body of evidence has shown that it does. Proof lies in studies done on patients who received acupuncture while simultaneously undergoing fMRI (Functional Magnetic Resonance Imaging). For example, acupuncturists claim that a point on the 5th toe (UB-67) affects vision, and when this point was needled under fMRI, the visual center of the brain lit up with activity. Clinical results also offer proof. In September 2012, the journal Archives of Internal Medicine published a review on the effectiveness of acupuncture to treat pain, based on patient improvement. The researchers concluded, “Acupuncture provides more relief from various types of chronic pain than does usual care and should be considered a valid therapeutic option.” Across the nation, many prestigious medical centers offer acupuncture including the Mayo Clinic, Cleveland Clinic, MD Anderson, Sloan-Kettering, and Duke University Medical Center. Chief of Anesthesiology at Duke, Dr. Timothy Gan, provides acupuncture in the operating room prior to surgery to improve outcomes. Dr. Gan has found that acupuncture before surgery combats the side effects of anesthesia, reduces the need for pain meds, speeds healing, and results in shorter hospital stays. he first mobile phone looked like a standard house phone, or an army field radio: it was contained in a large case, it worked on the go, but it was not very elegant. Like-wise, plastic surgery began with large surgeries achieving big results; however, recovery required weeks of down time. Today, most plastic surgery patients seek a fresh look, but need to return to work in just a few days to a week. They are looking to be refreshed, not redone. Fortunately, today’s cosmetic surgery procedures can fill these requirements. Muscle blockers such as Botox cosmetic and Dysport are used to soften lines around the eyes and to lift the brow. Fillers can soften lines around the mouth, turn up the corners of the mouth, and add volume to deflated faces. Skin can be renewed with chemical peels and fractional lasers. These less invasive treatments allow some an immediate return to work, and in all cases, down time is less than a week. Surgical lifts today use small lighted retractors and small incisions to lift the jowl and improve the neck contour. These procedures have been marketed on television as new; they are not. Dr. Rosato has been doing small incision facelifts for the last seven years. In addition, recovery from facial surgery is hastened with the aid of post-surgical makeup allowing patients to return to work after a brief recuperation. Most trunk and breast surgeries are done as outpatient procedures, and many patients can return to work in a week to ten days. Prime Time

P

rime rib is considered to be a favorite pick during the holidays. Most people prefer the small cut of the rib as it is the leanest. Actually, the larger cut is the best choice! The more marbled the meat, the more tender the cut of the beef. Certified Angus Beef is previewed, inspected and judged before ever going to the butcher. Certified Angus Beef is never distributed to the butcher prior to 21 days. However, Peter Conti, the butcher at A Butcher Shoppe & A Bit More..., chooses to dry age his beef for an additional 30 days. This dry aging process enhances the flavor, and makes the meat more tender. It also kills any pathogens and extends the life of the product. A Butcher Shoppe offers an entire line of expertly aged Certified Black Angus grade beef, custom cut to order, all natural poultry, pork, lamb and veal. The Prime Rib Roast Start with pre-heating your oven to the highest setting (500 degrees). Season prime rib roast to taste, and cook in oven for 15 minutes. Reduce heat to 350 degrees and cook 25 minutes per rib. Remove from oven and let stand for 15 minutes prior to serving. Slice meat and serve. A Butcher Shoppe specializes in cutting the prime rib off the bone; then ties back to the bone for easier cooking and serving. To make the very best Au Jus Sauce, keep the drippings from the cooked roast. Sauté Vidalia or a white onion; combine drippings. Add one tablespoon of freshly ground horseradish. Picking the Perfect Pinot

T

he holidays are upon us and the parties are just beginning. Warm social gatherings at the hands of an accomplished host or hostess beg for a great thank you gift from the guests. What better way to express your appreciation than a choice bottle of wine? A simple Cabernet, Sauvignon Blanc or Pinot Noir, may just be the ticket. I strongly recommend the elusive, yet seductive, Pinot Noir which has the style and taste to match almost any palate. Without being overbearing at times like a Cabernet, or sometimes a little crass like a Sauvignon Blanc, Pinot Noir is the Sophia Loren of grapes. From the racy, elegant and lean French Burgundys, to the dirt, spice, berry infused Oregon varietals and then to the rich, smoky, dark fruit driven Californians, Pinot Noir is your favorite gal pal. In other words, Pinots can be aristocratic and charismatic all in one day. Lately, I’ve been drinking (ahem, tasting) all the Pinots I can get my hands on. Some of the highlights of this extensive study have included:

Wine is always a welcome gift. My best advice is to sample some of those recommended above and pick your favorite to stock up on. Next time you’re heading out to a party you’ll have the perfect hostess gift right at hand. And if you have any bottles leftover, you can always enjoy them! Cheers! NuttyAbout Fruitcake ‘T is the season of gift-giving, good tidings and giving thanks for all of our many blessings. However, often times those that show up to a holiday party with fruitcake in hand, are given a less than heartfelt thank you as it’s tossed to the back of the pantry only to be discovered around Labor Day! Yet this poor, misunderstood and underrated cake presents with a dignified list of ingredients fit for a king! Rich in dried fruit, nuts, liqueur, and spices, fruit cake has been a Christmas tradition since the 16th century. The earliest evidence of fruit cake dates all the way back to Ancient Rome and a cake full of pomegranate seeds, pine nuts, raisins and barley. Honey, spices, and preserved fruits were added in

the middle ages. Fruit cake became popular in America when it was discovered that sugar could be used to preserve fruits. This and an abundance of sugar from the American colonies created an excess of candied fruit, making the cakes very popular and affordable. Liqueurs and brandy are another common addition since they preserve the cakes for many years. This gave rise to the ridicule that fruit cake receives in the United States. Legend has it that one family has passed the same fruit cake from generation to generation since 1878, and it has still not yet reached its expiration. In the south, fruitcake enjoys a more welcomed reputation. In the early 1900’s, an Italian pastry-maker, Savino Tos, immigrated

to the United States by way of New York and eventually settled in Claxton, Georgia opening what was to become The Claxton Bakery. Come fall, Tos decided to capture the spirit of the holiday season by offering a premium quality fruit cake, filled with nature’s finest fruits and nuts. Today, The Claxton Fruit Cake Company describes their southern cake as having “Sun-ripened California Raisins, delicious pineapple, crunchy Georgia pecans, plump juicy cherries, freshly shelled walnuts and almonds, tangy lemon and orange peel blended into a rich pound cake batter…baked to a golden brown.” Don’t let those “nuttier than a fruitcake” comments deter you – the nuts are the best part! I

n 1972, Evelyn Corcoran was an empty nester and decided to open her own shop in Arundel Court on Ocean Avenue in Kennebunkport, Maine. An antique sign found in the attic of the building established the name “Roundabout.” The shop known as Roundabout first carried handcrafted goods and pottery, Mexican silver jewelry and loomed crafts. Evelyn and her husband, Hal, loved traveling to Mexico and various other places to meet the local artisans who poured their talent and passion into their work. As the years went by, Roundabout changed its merchandising with the times to keep one step ahead of the latest trends. Evelyn loved going to all the various markets and personally selected each item for the store. Evelyn’s sons, Hal and Peter, joined her in the courtyard with stores of their own. In 1980, Evelyn and her husband, Hal, opened Zoo Apparel in the adjoining building. Roundabout was initially in the Portales de Vero location. Due to the hurricanes of 2006, and after waiting on building repairs for almost a year, Roundabout was relocated to its current location at 2905 Cardinal Drive. The original Roundabout store had fun items and was very kid oriented. It was the first “trendy” store in Vero. Stickers were a really big thing back then and the kids loved coming into the store to browse the many walls of sticker selections, shiny bags, clips and party favors. Eventually, the store changed with the times, and started carrying fine paper such as Crane, William Arthur, Vera Wang and more. Becoming the place to find fun, eclectic, home accents customers discovered they could also order custom wedding invitations, imprinting and personalized stationery. Roundabout is a family affair, where pride is taken in hand-selecting each and every item, from cards and napkins, to great gift items and botanicals. Evelyn’s son, Peter, now assists her with the daily operation of the store, the family coming full circle in a “Roundabout” way when Peter merged his three store concepts with his mother’s. Roundabout’s loyal customers come by to visit the store on a weekly basis, so the Corcoran’s and Jo, her right hand manager, know their customers well and often personally pick out items for them. It’s like having your own personal shopper or concierge. Jo is an expert in consulting with custom wedding invitations or other special occasion needs. They also do custom design printing from their large selection of party invitations or let them design something special just for you. Here Comes the Sun… a Photographer’s View

W

We are Nicki and Chrissy of Vitalic Photo, located on the Treasure Coast with a studio in Sebastian. We feel fortunate to be located in the beautiful “sunshine state” so that we can incorporate one of the greatest of all subjects into our work…the sun! One of our specialties is to uniquely capture sunlight into as many of our images as possible. Time is maximized while natural light is available, and we only use artificial, off-camera lighting when we absolutely have to, such as indoor shots or a dark wedding reception venue. Whenever possible, we try to schedule our sessions around sunset to maintain a consistent look in our work; midday, full sunlight that creates harsh shadows and squinty eyes is avoided. Our photography effectively harnesses sun-flare to create a dramatic result. This must be timed just right to create a magical, sun-drenched look that has become our trademark. Even after the sun has set, gorgeous shades of pastel pink and blue that produces soft, ethereal images can be captured. Another reason we love being photographers in Florida is the miles and miles of coastline available to us. Our white, sandy beaches and aqua blue waters surround us with year-round natural beauty, and as smaller destination weddings become increasingly more popular, our quaint little town of Vero Beach, that may seem relatively unknown, is fast becoming an attractive area to hold this kind of special event for people from all over the world. Couples fall in love with our clean and unpopulated beaches, laid back atmosphere, and gorgeous venues with amazing ocean settings, and we love to capture images of them frolicking in the sand on their wedding day. While destination weddings in the past may have seen a more literal tropical theme, today’s brides want sophisticated coastal touches such as soft aqua, blues, greens, creams, and textures that are perfect accents for modern beach soirees. We have even seen pale pinks and peaches that beautifully 38 November-December 2012

complement the beiges and blues of the ocean. Details, like collections of different sized vases, or even white sea coral incorporated into a centerpiece, can be artistically rendered to create magnificent photographs. Every bride longs to have a “unique wedding,” and preserving those details is the perfect way to ensure that day that will be memorable. Martin Ingwersen, a member of the Vero Beach Power Squadron, will be one of the few remaining World War II veterans on the Space Coast Honor Flight, which makes it possible for our veterans to visit their memorial in Washington D.C.

December 7 7th Annual Nighttime Christmas Boat Parade Starts at 6:30pm Best viewing is from Royal Palm Pointe, Young Park, Riverside Cafe, the bridge catwalk, and the marina. There is no entry fee and it’s a lot of fun. Captain’s meeting is held at the Marsh Island Club and the awards ceremony is at Loggerhead Marina.

Three miles of beautiful beaches provide swimming, scuba diving, snorkeling, shelling, and sunbathing. Canoeing and kayaking in the Indian River Lagoon are also favorite pastimes. beach safety BE AWARE OF TIDES: Always be aware of the tides when you are at the beach. Respect the ocean and stay safe. TAKE YOUR TRASH OFF THE BEACH: Remove all your trash from the beach and find a trash can. Plastic bags can kill birds, turtles, and other sea creatures that can mistake the bag for food. Bring extra trash bags with you and do your part to help keep the beach beautiful. Love your ocean! SUPERVISE CHILDREN: Stay near your children and keep your eye on them. Never let children play in the water unsupervised. Play close to a lifeguard station. Teach your child to respect the ocean too. BE AWARE OF DANGEROUS RIP TIDES: Rip tides are strong currents that can pull a person away from the shore. If you get caught in a rip current, do not panic or struggle. Swim parallel to the beach and call for help. Never swim alone. Don’t swim out farther than you can swim back. It’s always best to swim near a lifeguard station. REPORT INJURED BIRDS OR MAMMALS: If you find an injured bird or mammal, do not touch it. Call 911 (non-emergency) and they will notify the proper authorities.

LIFEGUARDS: Several places throughout the county offer lifeguarded beaches. At each station, signs are available to notify beach goers of current surf conditions along with appropriate beach flag warnings.
