Banana-Pecan Crunch Parfait PREP: 10 min. INGREDIENTS: • 2 cups POST SELECTS GREAT GRAINS Crunchy Pecans Whole Grain Cereal • 2 medium bananas, sliced • 1/4 tsp. almond extract • 1 cup thawed whipped topping • 2 Tbsp. pecan pieces DIRECTIONS: PLACE 1/2 cup of the cereal in each of 4 parfait glasses. ADD bananas and extract to whipped topping; stir gently until well blended. Spoon evenly over cereal. SPRINKLE with pecans. Serve immediately. Makes 4 servings.

Special Extra:

For added color and texture, serve topped with dried cranberries or other dried fruits.

Take Along:

To take this easy dessert to a party, spoon the cereal into parfait glasses. Mix the whipped topping and extract; place in tightly covered container large enough for the bananas to be added to it later. (An empty tub works great!) When ready to serve, slice the bananas and add them to the whipped topping mixture; spoon over the cereal. Sprinkle with the pecans. (NOTE: Be sure to keep the whipped topping mixture cold until you are ready to assemble the desserts.)
