uann de Lesseps, everyone’s favorite countess and the star of “The Real Housewives of New York City,” has a new product she is very excited about. She created Fosé Rosé, a unique, natural, non-alcoholic sparkling wine with superfood ingredients that include damiana (an aphrodisiac) and schisandra (an adaptogenic liver fortifier known for its mood stabilizing properties). Herbal ingredients include rosemary and white oak with a hibiscus and white wine grape base. Fosé Rosé is available at drinkfose. com. Luann wanted to make something that was like rosé, that tasted like rosé, felt like drinking an elevated sparkling rosé, but without alcohol, and that was low in calories. Luann says, “I’m really hoping it can help take away the stigma of making the choice not to drink. No one likes to be judged for ordering a glass of Perrier {instead of wine}. I wanted to make things easier for people who are sober. It’s also great for people who still drink and just want to take a break from alcohol. It’s full of euphoric and hydrating properties. It really mimics the taste of a real rosé, which was important to me. You would truly never know the difference.” To get the product just right, Luann reveals that she perfected the taste over a year and eventually got it to the calorie level she desired. She worked with the Kin Euphorics company, who are actually making the drink. They are a very established brand. A portion of the proceeds will go to The Fortune Society, a nonprofit. In addition to being an entrepreneur, Luann is an acknowledged entertainer, TV personality, cabaret star, singer, and author. Recently, Luann was ranked the #1 Housewife by TV Guide, topping all housewives across all franchised cities. In 2021, she starred in a holiday cabaret show, “A Very Countess Christmas,” which played to sold-out crowds nationwide. She has been headlining cabaret shows since 2018. Luann has performed a range of pop tunes as well as her own original dance hit songs, “Money Can’t Buy You Class,” “Chic, C’est La Vie,” “Girl Code,” “Viva La Diva,” and “Feelin’ Jovani,” for a surprising showcase of charisma, charm, and magnetic stage presence. As a well-known reality TV star, you are constantly in the public eye. What do you see as the positives and negatives of having your life followed by millions of people? Let me start with the positives and end on the negatives. The positive thing for me is to be able to shine a light on things that are near and dear to me, such as the many charities I have worked with in the past and continue to work with today. Aside from that, being able to write music and sing with Natalie Cole was one of the highlights of my life. And now I’ve managed to create my own cabaret show, which I have been touring with since 2018 to sold out theaters across the country. The positives for me surely out-

weigh the negatives. I like to look at my life with the cup half full and not half empty. Being a personality on television opens the door for people to think they can say anything they want to you even if they don’t fully know you. The scrutiny we face when putting ourselves out there can be overwhelming and I try not to let what people think of me affect how I live my life. You have been very open about your battle with alcoholism and have recently created a non-alcoholic wine. Tell us why you decided to undertake this endeavor. I try not to label myself one way or another. It really is a journey you have to commit to day by day. Over the course of the past couple of years,

I was looking for something to drink with my daughter other than a Perrier or a can of soda. We couldn’t find anything that we really liked that was close to rosé wine, which was one of my favorite go-to’s, so we decided to make our own. That’s how the idea of Fosé was born. Necessity is the mother of invention. I wanted something elevated, in a beautiful bottle, which was low calorie, looked like wine, and tasted as close to wine as you can get. That’s what we created. Tell us a little about the charities that are near and dear to your heart? When I first started the Housewives, I was working with the American Cancer Society. Throughout the years I’ve been able to promote a lot of charitable organizations like that. I support The Ace Partnership for the homeless, and most recently, the Fortune Society for men and women who have been formerly incarcerated. What is one thing that you want people to know about you? When I do something like charity work, or create a brand like Fosé, or devise my cabaret, I put my heart and soul into it. I’m not just the kind of person that puts my name on something. I give it my full, undivided attention. I’m someone that’s very passionate about the work that I do and I’m a loyal friend and partner. What advice would you give your younger self? Have patience, perseverance, and be passionate about what you do in life. What does power mean to you? Power is being in control of your narrative. J

ackie Nuñez is a talk show host with 77WABC. She has a video podcast show and a YouTube channel for 77 WABC, as well as videos on its website, wabcradio.com. She also has two radio shows on the internet radio station, rememberthenradio.com, and is featured on a digital platform, GYNESIS radio, with It’s a Latin Thing. Previously, Jackie was the director of advertising and marketing for Gotham Radio, a global internet radio station, whose contents are talk shows, comedy, and independent music. In 2011, Jackie joined Gotham Radio. From an early age, she worked alongside her father, Jose Maldonado, in the music industry. They would draw up contracts and provide bookings for community dances, events, and nightclubs. In the late 1980’s, Jackie pursued her interest in the recording industry and was employed at two major recording studios, Variety Recording and Sound Ideas. While there, she sold studio time, assisted in editing sessions, booked musicians, assisted sound engineers, and promoted the studio to acquire new business for both studios. Jackie then focused on other projects and ventured into TV and film production. She freelanced for CNN and Spanish radio while attending the Center for the Media Arts in the late 80’s. Jackie has traveled and

road managed with many well-known Latin and jazz artists while working with Landy Soba Management. She has also appeared as an extra in several movies and TV series such as “Godzilla” and “Law and Order.” A few years later, Jackie accepted an offer to become an executive in sales at Noticias 1380 AM station and then moved to Radio Unica, 1680 AM talk radio network station. At both stations Jackie sold airtime, wrote and produced news segments and commercial copy, and promoted the stations in different Latin markets. At Radio Unica, 1680 AM, she predominantly promoted and sold soccer spots. Jackie was able to obtain viable clients such as Bacardi, Phillip Morris, Chivas Regal, Reader’s Digest, Kraft, Walmart, Kmart, JP Morgan Chase, Procter and Gamble, Colgate Palmolive, Coca Cola, Time Warner, Cablevision and many other sponsors to the list. She created innovative concepts to create

the need for advertisers and consistently stressed the importance of advertising on major mediums such as radio, television, print, and ultimately Internet radio. Jackie produced events to promote health issues by setting up health fairs and charitable events for different causes. She worked diligently with Habitat for Humanity and built new homes for those in need. She currently assists the elderly and takes on projects to help repair homes for many disabled and elderly people. Within the Latin market, Jackie is well known, and has a show on Gotham Radio called the “EL” Show (Entertainment Latino). She provides a platform through which she interviews many different artists in the entertainment industry such as actors, musicians, singers, and authors, and talks about interesting issues that affect Latinos and non-Latinos alike. Jackie emanates diversity in music, production, and marketing. She is currently writing a book which will be published soon.

What gave you the idea to create a podcast focusing on Latin entertainment? I wanted to focus on the interests of the Latinos, especially our culture, our music, and our history. I wanted to focus on what matters to our people and bring back the sense of responsibility in our culture, sending out a positive message and keeping our culture and music alive and thriving. There are many non-Latinos who love our culture, history, and music as well. What made you focus your career on the fitness industry since you have such a diverse background? Being healthy has always been a part of my lifestyle. I decided to turn it into a career when I noticed that I could assist others in creating better life patterns which included working out. I literally saw people’s lives change for the better. Beyond weight loss transformations, it was seeing people find more joy with having a new way of life that was based on health and wellness. Do you ever get up in the morning and not want to work out? If so, how do you motivate yourself, and do you ever allow yourself a “pass?” Yes, I do have some mornings when I don’t want to work out. I wake up at 3:00 a.m. to be at the gym at 4:00 a.m. My workouts are 1.5 hours long. I train 5-6 times a week. The days that I do not want to work out is seldom because of lack of motivation but because of me not going to sleep at my scheduled time which affects my sleep pattern which in turn makes me tired. Those are the days when I do not want to work out. However, I have been disciplined for years to wake up early to work out, and the discipline has made it a lifestyle for me. I also use my workouts as therapy to cope with things that may bring me sadness. It allows me to listen to my music, lift, and do lots of cardio. God has given me a healthy body and I want to show my gratitude to him by taking care of it. I stay motivated because I know my health is not only important for me but also for my 4-year old son. I also stay motivated because I think of so many people who are not healthy enough to physically move the way I can, and it reminds me to cherish my health and keep going and hopefully inspire others along my journey. I give myself a pass on the days I do not workout reminding myself that life’s a balance and my body

However, I was able to transition to virtual training across the world providing one-on-one training and group classes, which has been fantastic. Each one of these driven and talented women have, in their own way, used their influence and position to make a difference. Our cover girl, Ainsley Earhardt, is an American television personality and co-host of FOX News Channel’s “FOX & Friends.” Each morning she provides viewers with the latest daily headlines across news, sports, politics, and entertainment. Ainsley pays it forward through her inspirational children’s books, “Take Heart, My Child: A Mother’s Dream” and “Through Your Eyes: My Child’s Gift to Me.” Her books contain quotes and scriptures that teach precious life lessons parents can pass on to their children so they can follow their hearts, dreams, and passions. ictoria Osteen has always had a passion and energy for life that is contagious. A lifelong Houstonian, Victoria worked in her family’s jewelry business and attended the University of Houston. It was in that same jewelry store where she met Joel, her future husband. Joel and Victoria regularly accompanied Joel’s father on mission trips to India and around the world, reaching out and serving in some of the most impoverished areas of the globe. Her compassion and passion for ministry grew during these years as she faithfully served in many capacities.

A few years ago, I had a friend who had foot surgery and had to stay off her foot for a month before going in for therapy. When the physical therapist first saw her, she asked, “Does your foot hurt?” My friend responded, “No, not at all.” Her therapist said, “Then why are you limping?” My friend hadn’t really thought about it but finally responded, “Well, I guess I’m trying to protect my foot from another injury.” The therapist said, “I understand, but if you don’t begin to walk normally again, your foot won’t strengthen, and the ligaments won’t go back into place. You’ll end up always walking with a limp.” It’s easy to understand my friend’s underlying fear as well as her need to believe that her foot could be strong again and to work through the process of a full recovery. It’s the same as when we’ve been hurt by others, when we’ve been taken advantage of, when we’ve failed, when we’ve been laughed at. When you’re in emotional pain, it’s easy to shrink back in a spirit of fear and allow an emotional limp to become a stronghold in your mind - a wrong way of thinking. The last thing you want to do is to step out in boldness or put yourself in a position where you can get hurt again. That spirit of fear is not of God. The apostle Paul says, “For God has not given us a spirit of fear, but of power and of love and of a sound mind” (2 Timothy 1:7). You can’t allow a painful experience to trick you into thinking you’re going to have a painful life. If you find yourself shrinking back because you’re afraid you’ll be hurt again, you have to understand that God can heal what hurts. He can make you stronger than you have ever been before. God has given you the power of recovery, courage, and determination. Any defeat and doubt will be turned into faith and victory. Today, you can believe in God and say, “I wasn’t designed to limp. I was designed to run. I will walk confidently forward in the things of God.”

Know Who You Are

Whether we realize it or not, we are all vulnerable to letting other people label and define us. We allow the false things that people say about us or the way they treat us to determine our worth and value. Even when we know it’s not true, we walk away feeling ashamed, inferior, intimidated, or angry. So how do we keep what we know is our true identity from being stolen or distorted? Just as we look in the mirror to see our true physical image, God wants us to be able to know our true spiritual image by looking into the mirror of his word. In Genesis 1, God says that he created us in his image. Having his image and likeness inside us was meant to be our source of strength and confidence. But that image was distorted when Adam and Eve sinned in the garden and were separated from God. Even then God said, “I’m going to rebirth this image in you.” So the image of God was given a rebirth in you when you put your faith in Jesus, and he came to live in you. Do you know who you are? If Jesus lives inside, you can live in a place of strength to say ‘no’ to the labels other people try to put on you. But you need to know who you are in him, so you have the authority to say no. A New Me

hat would you do if you were told to go home and die? What would you say to the person that was literally snuffing your life out right before your eyes? Believe it or not, I was faced with these questions on a cold winter morning in January of 2011. They were so disheartening that the person that looked back at me in the mirror for those past 44 years died right then and there and the person talking to you today is the person that emerged. I needed this invention of me, this likeness with the strength of steel on the inside, this much stronger version of me, to take care of business. Let’s be honest- I never did so much as yoga or any sort of meditation before. All of the sudden I’m creating whole new personalities. I feel like one of the Avengers. I could be Changer Girl, or Personality Shifter Girl, or maybe I should just be called Split Girl. As in, I am split in two and now I’m the other half of me. Because I had to come out the other side and I did. Now that I have impressed you with my superpowers, let me bring us a bit down to earth. It’s fun to refer to them as superpowers but we all know a coping mechanism when we see it, and this is exactly what was happening to me. Our minds are kind to us when we have more than we can handle and apparently that is what happened to the old version of me. Truth be told though I like the new me so much better. I like to try new things and often do. I’m grateful to cancer for giving me the new Viki. She is much less

complicated. What I mean by that is that there’s not a lot of grey in my life anymore. I don’t sweat the small stuff and I certainly don’t take anything or anyone for granted. It’s so refreshing not having the stress that the old Viki had. She spent all the time worrying what people would think of her. When really and truly, who gives a flying fig about that sort of thing? I unpacked that suitcase and boy was that nice. While I was writing my book “I Am the One,” I realized I had never looked back to acknowledge what I had gone through step by step to fight my cancer. In remembering, I discovered a promise to God that I had made. I promised God that if I could raise my children, I would help women. That day is today. So, I ask all of you to help me raise awareness for the new organization I formed to change the face of woman and healthcare. “Lunge for Healthcare” was born to give back the insurance dollars that was taken from women and their healthcare needs. We ultimately hope to get insurance companies on board with this amazing cause because of the millions of insurance dollars we will save them with our plan. Dr. Mary J. Gallant

How did you get started in your field/industry? My mentor at the University of Missouri was Dr. Robert W. Habenstein. He was associated with the sociology of the family and qualitative sociology. My undergraduate work led on to a master’s degree sponsored by a Killam fellowship in the area of family, kinship, and community in the North Atlantic. His own training at the University of Chicago connected me to his colleague, Dr. Gregory Prentiss Stone and, after Dr. Stone’s death, Dr. Joseph J. Galaskiewicz became my dissertation advisor. What are some of the biggest challenges/obstacles you faced in your career? Throughout my career I have been aware that women in academia are up against a different pattern of irrationalities than men are in handling various forms of institutional discrimination and how this affects interaction important to success. Doing research on this in several articles I presented and published helped me gain insight into how as a society and interpersonally we deal with systemic inequality. Gender scripts that guide our lives in many areas still need to be finetuned to make career paths smoother. In the worst of times, finding surprising alliances were as important as self-discipline and critical self-examination in gaining the higher ground I sought. Name one outstanding quality that you think people should know about you. Optimism. Miracles happen. Help them materialize.

Sociology Faculty | Rowan University

D

r. Mary J. Gallant has been an associate professor of sociology at Rowan University since 1992. Her area of specialization in her teaching is classical social theory, a course in the core of the sociology major throughout her tenure at Rowan along with Senior Seminars in Sociology and College of Humanity and Social Sciences (CHSS). Her research for her dissertation focused on the network structures of students in medical school and how it had the potential to strongly support socialization to the medical profession. Interested in destructive contexts and the self, her next major research was on the Holocaust and surviving extremity, 1933-1945, in hiding, rescue, resistance, the ghettos and concentration camps of WWII and the Holocaust. From 2007-2012, she served as chair of the Sociology Department and then continued as chair of the combined Sociology and Anthropology Department from 2013-2015. Dr. Gallant earned her Ph.D. in Sociology from the University of Minnesota in 1985. The Holocaust was a turning point in the lives of millions of European Jews, and, Post-WWII and beyond, it vitalized new research on trauma, human rights research and international law, war crimes trials after WWII, the IMT (London) and NMT (Nuremberg and Tokyo), as well as social policy and politics surrounding genocide intervention. Presently Dr. Gallant is working on a book chapter on WWII, collective memory and the Holocaust influencing military ethics and education. She published her first book in this area, “Coming of Age in the Holocaust: The Last Survivors Remember” (2002) and is preparing a new edition of this work. Her journal articles and book chapters associated with the study of the Holocaust at international conferences in Germany and Britain focused on rescue and resistance. In each of these works she is highlighting interaction strategies and self-processes associated with surviving destruction of the self during extremity. Dr. Gallant’s second area of research is related to the professions using social network analysis. This research emphasis emerged out of her dissertation on medical school socialization. In 2013, she published a second book, “Friendship Networks in Medical School: A Network Analytic Approach to the Study of Social Solidarity” at the invitation of a German publisher specializing in dissertation research. he older I get, the more I realize that karma is real. As the saying goes, “You catch more bees with honey than vinegar.” With winter winding down and spring on the horizon, here are some things to do with kindness in mind. We don’t all have to be Goodie Two Shoes, but doing good deeds makes you feel good and in turn, makes others want to do the same.

Little Things

Be the nicer person. If you are at the grocery store and have a cart full of items and the person behind you has four items, let them go ahead of you. Pay for the next car’s coffee or breakfast the next time you’re in a fast food lane. Give a server a really good tip. These people make barely any wages, they’ve suffered the past two years, and the food industry in general is still in crisis. Leave a water bottle and a chocolate bar for your mailperson with a thank you note. Give your hair stylist or nail technician a $5 or $10 gift card for a local coffee shop in addition to your tip. Spend an hour or two on a weekend or weeknight writing a few cards to long distance friends. Emails and texts are fine, but a real note is meaningful. Call an older relative just to chat. Look in on your elderly neighbors. If you like to bake or cook, make a few cakes or batches of cookies to drop off for local friends, or make a big pot of soup and share with friends or co-workers. You can even mail care packages to family or neighbor’s kids in college. Please and Thank You It doesn’t hurt to be polite. Hold the door for people. Let someone get in front of you in traffic. Altruism

If you’re uncomfortable giving to a neighbor or friend, give to a local charity. You can donate anonymously to many organizations. Most counties have a food bank or shelter (human and animal) that is always in need of supplies. Many local churches and synagogues have continuous food drives. The post office has a food drive every second Saturday in May. Go through your books and magazines and give some to local nursing homes and hospitals. If you have old blankets, donate them to a local animal shelter or rescue. Give, donate, and help others. Little things mean big things to many.

Crafting and Giving

I’m a crafty gal. I crochet, cross stitch, rubber stamp, make jewelry, wreaths, bookmarks, sun catchers, and always have a project or ten going on to keep me busy and sane. If you enjoy crafting, there are many ways to give of yourself. You can wrap a scarf and hat inside a plastic bag and tie it to a fence in a local park with a note. Hospitals always need baby hats, mittens, booties, and blankets. Hospitals and nursing homes welcome lap blankets for their residents. Animal shelters always need blankets. Pregnancy centers also welcome baby items, especially handmade hats and blankets. I hope you choose to do something and are pleasantly surprised in return. W

ith over 25 years’ experience in education, Dr. Marian S. Harris Ph.D., LICSW, ACSW, is interim vice chancellor for equity and inclusion and a professor at the University of Washington Tacoma, School of Social Work and Criminal Justice, an adjunct professor with the University of Washington, School of Social Work, Seattle, a former faculty associate at the Chapin Hall Center for Children, University of Chicago, and a former adjunct professor and research advisor, with Smith College School for Social Work, Northampton, Massachusetts. Dr. Harris is a nationally and internationally known child welfare researcher and teaches undergraduate and graduate social work and criminal justice courses and courses in the global honors program. She received her Ph.D. from the Smith College School for Social Work. She is a Licensed Independent Clinical Social Worker with a private practice for psychotherapy and consultation. Dr. Harris is a member of numerous professional organizations and serves on the editorial board for several social work journals. She was appointed by the Washington State Legislature as an inaugural co-chair on the Racial Disproportionality Advisory Committee for Child Welfare. She serves on the Washington State Children’s Justice Task Force, the Children’s Home Society of Washington board of directors, and is a volunteer partner with the National Center for Missing and Exploited Children. Dr. Harris was awarded the Bertha Capen Reynolds Fellowship, Roger R. Miller Dissertation Grant, NIMH Postdoctoral Fellowship, and the Martin Luther King Jr. Volunteer Recognition and Community Service Award from the University of Washington, Seattle, in 2007. She was honored as one of UW Distinguished Women in 2007 and received a Certificate of Appreciation for Mental Health Transformation in the State of Washington by Governor Gregoire in 2006. She was listed in the Who’s Who Among America’s Teachers in 2004-2005 and Who’s Who in Social Sciences Higher Education in 2004. Dr. Harris received the 2015 Day Garrett Award, Smith College School for Social Work, 2004 and 2016 Social Work Educator of the Year Award, and 2018 Social Worker of the Year Award, Washington State Chapter, National Association of Social Workers, 2017 UW Tacoma Distinguished Research Award, and 2021 Social Justice Award, from the Washington State Society for Clinical Social Work. 22 | P.O.W.E.R. What do you do to escape and recharge, even for a few hours? I listen to classical music, read, meditate, or take a long walk along the waterfront. What advice has helped you get to the next level? The advice I follow is: always work hard and demonstrate excellence in everything that you do; always do your very best and never take short cuts; never stop learning; always be kind to everyone from the janitor to the president; be honest and humble with a true sense of self; never forget your roots and values; and always have a plan of action with measurable goals. What book is on your bedside table right now and why? The book on my bedside table right now is “Black Refractions: Highlights from the Studio Museum in Harlem.” This book is on my bedside table because of my interest in gaining more in-depth knowledge about a fantastic exhibition of selected works from the Studio Museum in Harlem. I saw this great exhibition of selected works on June 26, 2021, at the Frye Art Museum in Seattle, Washington. What advice would you give to your younger self? I would advise my younger self as follows: have patience. Saying “no” is not a bad thing. Find balance in your life. Trust your instincts, love yourself, and always be true to yourself.


Patricia L. Blake Author, Acting Patrol Commanding Officer, Retired LAPD

P

atricia L. Blake joined the Los Angeles Police Department (LAPD) in May of 1983. Her career as a sworn LAPD officer spanned almost 34 years. Patricia was promoted through the ranks and held the positions of acting and assistant detective commanding officer, patrol watch commander, and acting patrol commanding officer. She was part of a leadership team at the Foothill Division that focused on crime analysis, developing crime strategies, and implementing cutting edge predictive policing. Upon retirement, Patricia continued as an active reserve officer as the officer in charge of a unique mounted volunteer cavalry unit, the Valley Community Cavalry Rough Riders (VCCRR). This cavalry unit was deployed in local parks, trails, and business malls throughout the city. The unit’s mission includes public outreach, crime prevention, education, mounted color guard for parades, evacuation, and search and rescue efforts. The unit enhances goodwill and a partnership between police and the local community. Patricia earned a B.A. from CSUN, a M.A. in Organizational Leadership from the University of Phoenix, and she completed the West Point Leadership Course with the LAPD in 2003. She was an affiliate of the Los Angeles Women Police Officer and Associates and the California Peace Officers Association. Patricia became one of two of the first female field patrol field training officers at the Rampart Division. She was also the first female senior lead officer at the same division in 1989. She received the Officer of the Year award at Rampart, and earned a Meritorious Unit Citiation at the Wilshire Division as the officer in charge of a hand chosen special problems unit. She participated over ten times in the annual international law enforcement 120-mile Baker-to-Vegas team relay run. Recently, Patricia wrote a factual book documenting her career and real life police work with the LAPD entitled “Touched by the Hand of God in the City of Angels.” In her spare time she enjoys church activities, racquetball, horseback riding, and jogging.

What do you do to escape and recharge, even for a few hours? I enjoy horseback riding, jogging, racquetball, walking my dogs on the trails, and reading a book. What advice has helped you get to the next level? I believe that you should seek out excellence through continual improvement. I took advantage of all the opportunities given through the department including training courses to develop my leadership and mentoring skills. Getting a formal college higher education helps. Always try various challenging work assignments. What book is on your bedside table right now and why: I am currently reading “With All Due Respect – Defending America with Grit and Grace,” by Nikki R. Haley, former United States Ambassador to the United Nations. It is all about the concepts of professionalism, leadership, integrity, and inner strength. She is a true leader with integrity and values. She is also a successful career woman with a family. I find her inspiring. What advice would you give to your younger self? I would tell myself to surround myself with positive trusted family and friends, and to be more confident and self-assured in myself. Roxane Maliszewski

R

oxane Maliszewski started learning classical guitar when it was bigger than she was. Her guitar performances consistently brought home the highest awards in competitions. Eventually she was told she should be teaching, not competing. In high school, she was asked to help teach music theory at a local college. At the same time, her teaching skills and academic prowess led her chemistry teacher to work with the school to adjust her schedule, so she could teach chemistry while the teacher was away. Roxane opened for Richie Haven on several occasions when he performed in Louisville, Kentucky. While in Cincinnati, she performed for over a decade at a recognized French restaurant, often singing in French or one of four other languages besides English. When Cincinnati celebrated its sister city Nancy, France in 1991, Roxane performed on TV for the second time, internationally. Roxane’s singing gigs were usually a second job. She wanted to work with her hands and became a skilled tool and die/model maker. This gave her a place to rigorously apply her skill in mathematics on a daily basis. She was especially adept at building models or prototypes from pictures and engineering drawings, which complimented her degrees in Mechanical and Electrical Engineering. One of her more interesting jobs was building models/ prototypes from movie stills for some of the first toys that came out after the first “Star Wars” movie. Roxane often helped companies to understand and meet ISO9000 requirements and improve processes. She has retired from tool and die, but continues to sing, teach, and has started an online business. How did you get started in your field/industry? I aced the mathematical and mechanical aptitude test for the tool and die apprenticeship program at GE, which was the highest score in their history.

r. Terry M. Anderson is an international consultant and the president of Gulf Coast Quality Management Systems, which is an international business consulting group based in Pensacola, Florida. The company provides cyber security, DoD contracts, ISO certifications, auditing, and business development services. Dr. Anderson is also the founder and president of Sports Venue Marketing. With over 40 years of experience, she specializes in leadership, branding, marketing, public speaking, and international business consulting. She earned a Ph.D. in International Business from the University of Munich. Dr. Anderson was inducted into the American Sports Legends in 2001. She is a retired LPGA touring professional. She is also a craft beer brewer and has won various competitions and gold medals for her brews and recipes. Dr. Anderson supports the Battered Women and Abused Children charity, and Kid’s House, based in Pensacola, Florida. She donates any winnings from beer competitions to Kid’s House. She enjoys reading, craft beer, and painting.

Many women enter fields that are becoming obsolete. What do you do to escape and recharge, even for a few hours? I have four dogs. They are all unconditional fur babies. All are rescues- two Scott’s American Bulldogs, one Mastiff and a miniature Teddy Bear Golden Doodle. They all are comforting and some of their antics would make any one escape the day and bring a smile. What advice has helped you get to the next level? One thing I was taught at a very young age was- don’t forget where you came from, nothing in life comes free. It takes hard work. Get all the knowl-

The book on my nightstand is “American Marxism,” by Mark Levine. With everything going on in the world today, it has been interesting reading about thing I learned in college. The second book on my nightstand is “The Journey: How to Live by Faith in an Uncertain World,” by Billy Graham. God will always be in my life. What advice would you give to your younger self? I would tell myself to listen more to the wisdom of my elders. Sometimes the greatest learning comes from a story told by an elder person. We often tend to skip or forget the story. My mentors were my parents. They were both very successful people and I always wonder how I would ever make it to their level in life. Dr. Heidi L. Huhn What advice has helped you get to the next level? There are a few phrases and a philosophy that have guided me over the years. The first key phrase that comes to mind is: “Focus on moving forward.” Every year I adjust my goals as each year brings unexpected changes. My short-term milestones are based on my mid-term and longterm goals. The second guiding key phrase is to: “Surround yourself with like-minded people,” meaning that they have the same drive and ambition as you. Granted, this does not always equate to an agreement as it is good to see other’s viewpoints. My overall philosophy is to always have a primary and a secondary plan. This is true for forms of income, bank accounts, etc., including keeping your resume up to date. There are many opportunities in this world. What book is on your bedside table right now and why? I love nonfiction and reference-type books. There are three books currently sitting on my table. “Life in Motion: An Unlikely Ballerina,” by Misty Copeland is an amazing story of perseverance, courage, and strength. The “Farmer’s Almanac” has fascinating weather projections and gardening calendars; there is a plethora of information therein. And of course, the “Life Application Bible” that guides me through the ups and downs in life. What advice would you give to younger girls/your younger self? Never be afraid of going in your own direction. Travel solo, stop and smell the flowers, take time to talk to people, slow down and enjoy life! Life can be exhausting. Learn ways to deal with the stresses of life that work for you. One thing I do is make a list of everything that needs to be done so I can see what I want to focus on with the energy that I

At the age of 17, I joined the Army with the premise of paying for college. Though I started as an administrative assistant, I was afforded an additional duty as a terminal area security officer, the predecessor to cybersecurity. I decided to pursue a computer science degree and work as a consultant in pursuing a cybersecurity career. Something told me cybersecurity would be a much-needed skillset in the future. They moved to Washington, DC in the 1990’s, where she honed her hospitality and management skills and established three highly acclaimed restaurants. She also began her involvement with local and national charities. She brought her passion for supporting charities and her local community with her when she moved to Naples, Florida in 2007. Owner, Restaurateur, Philanthropist Aielli Group What inspired you to become a restaurateur? What started off as a coincidence became my calling. When I married chef Fabrizio Aielli, it made sense to team up with my husband and complement his skill set. While he was responsible for the culinary concepts, I managed our service staff and took responsibility for our PR and marketing efforts. This was the perfect fit for me since I am very passionate about connecting people for a common goal, building an environment where guests enjoy the dining experience, and having employees thrive to succeed in the hospitality industry. How does it feel to have your restaurants frequented by VIP’s and celebrities from around the world? It is certainly an honor to host celebrities and a testament of our hard work. We have created some great memories with different famous people, and it has been always interesting to get to know the person behind that famous reputation. However, at the end of the day it truly boils down to one essential focus point: every guest is a VIP and needs to be treated like one. Everyone (including celebrities) is looking for the same thing: great food paired with outstanding service. Working with your husband can be both rewarding and challenging. How do you separate your work and personal life? At times it can be challenging, but we always had a very clear understanding of our responsibilities and expertise. Fabrizio is responsible for the kitchen, and I take care of the front of the house (FOH) and PR/marketing. The good thing is that we both like what we are doing in our part of the business. I didn’t want to participate in the kitchen and Fabrizio didn’t want to deal with marketing matters. As you grow as a couple, you also learn from each other and know how to fill the gaps. Constant communication and the focus on a common goal is key.

When you are not working at one of your restaurants, would you prefer to eat out or stay at home and make a meal? It depends on the mood. It is part of our culture to create a homemade meal and share it with our loved ones, especially during holidays. However, we do enjoy going out to eat occasionally for different reasons, such as supporting other friends in the hospitality industry, getting inspiration from other culinary concepts, and simply enjoying a great dining experience just the two of us or with friends. What is one strategy that has helped you grow your business? It is quite simple. We believe that quality, freshness, and purity, paired with genuine hospitality are the foundation of an excellent dining experience. When you dine with us you will taste our love for food and the experience shows that we care for you. When we say we care for you, it actually goes beyond the dining experience. We care not only for our guests and staff but for our community. We believe that each of our restaurants should be a pillar in our community. That is why it has always been an integral part of our business to support local charities year round. You are well known for your philanthropic efforts. What are some of the

most important things you would like to give back to your community? Our family not only takes pride in being a part of the Naples and St. Petersburg community, but we also believe that it is our responsibility to act and give back to the people who have been supporting us for so many years. We are not only talking about the thousands of people we have employed over the years and the great patrons we have, but also the most vulnerable ones in our community. Every charity and cause has its fundamental function in our society. Fresh Blue Crab Cake and Capellini, Lobster Cappuccino Ingredients

For the pasta

2 whole fresh jumbo blue crab, cooked and broken down 2 whole eggs (cracked and slightly beaten) 2 Tbsp. Dukes mayonnaise 1 tspn. Dijon mustard Zest from 1 lemon 1 tspn. lemon juice 1 Tbsp. chives Salt and pepper to taste

4 oz. capellini Extra virgin olive oil 1 tspn. minced garlic ½ tspn. chopped parsley ¼ cup of chicken stock Pinch of red chili flakes

In a bowl combine ½ of the crab, eggs, mayonnaise, mustard, lemon zest, lemon juice, chives, salt and pepper, and mix. When it comes together, fold in remaining crab. Heat a well-greased cast iron skillet to medium high heat. Add olive oil and 5 oz. of the crab cake mixture. Place in an oven preheated to 400° F and cook for 5-7 minutes. Repeat until they are all cooked. Remove and set to the side of the stove to keep warm.

Fill a small sauce pot 2/3 full of water. Add 1 tablespoon of salt and bring to a boil. Add capellini and cook 3-5 minutes until al dente. Meanwhile, in a small sauté pan add extra virgin olive oil, garlic, and chili flakes and simmer until garlic in toasted. Then add chicken stock. Drain and transfer the cooked pasta into the small sauté pan and cook for 1 minute.

For plating Remove crab cake from pan by flipping onto plate. Spin a portion of pasta on top and top with lobster cappuccino (be careful- the lobster mix comes shooting out of the thermowhip canister) and serve.

For the Lobster Cappuccino 1 cup lobster stock (reduced and rich in flavor) 2 Tbsp. heavy cream 1 tspn. dry sherry 1 tspn. versawhip ½ tbsn. xanthan gum Bring lobster stock to a boil and remove from heat. Add heavy cream and dry sherry. Then pour into a vita mix blender. Add versawhip and xanthan and blend until smooth. Add to an iSi thermowhip and add two CO2 charges.

Lobster Risotto With Roasted Tomato And White Truffle Perfume Roasted Tomatoes

Directions

Prepare roasted tomatoes: (6 hours ahead) Season tomato halves with salt and oregano. Place in colander. Let tomatoes sit for 2 hours to remove moisture and concentrate flavors. Preheat oven to 125F. Line a baking sheet with aluminum foil. Place tomatoes cut side down, on foil. Drizzle with olive oil and roast for 3 to 4 hours, until tomatoes are slightly shrunken and cooked but not dry. Remove from oven and cool for about 5 minutes before handling. Remove skins if desired. Make garlic-infused olive oil (1 hour ahead) Place garlic and olive oil in a small saucepan over lowest heat possible. Heat for 1 hour or until garlic becomes very soft and infuses oil. Remove garlic. Season to taste. Prepare risotto Risotto Cut lobster meat into ½ inch cubes. In heavy-bottomed pot over medium high heat, place garlic oil. Add onion and sauté, stirring constantly, taking care not to brown. ¾ pound lobster meat, cooked Add rice and cook, stirring, for about 2 1 Tbsp. garlic-infused olive oil minutes. Add wine and stir constantly ½ white onion, chopped until absorbed. Add stock, about ½ cup 1 ½ cups Acquerello Carnaroli rice at a time, stirring constantly and adding 1½ cup dry white wine more as liquid is absorbed. Continue 4-5 cups lobster stock (seafood or vegetable process until rice is soft and creamy, but stock work too) slightly al dente. ½ cup tomato sauce Add roasted tomatoes, tomato sauce, 10 leaves fresh basil finely chopped basil, and lobster meat, continuing to 1/3 cup, plus 2 tspn. unsalted butter stir. Cook mixture for another 4 minutes. 1 Tbsp. Italian parsley chopped (extra for Stir in butter, parsley, truffle oil, salt, garnish) and pepper. Stir well to combine all 2 Tbsp. white truffle oil ingredients. Garnish with parsley and Sea salt, to taste grated parmesan. Serve warm.

Having been with FOX for 14 years, and co-hosting “FOX & Friends” since 2016, are there any other things you would like to accomplish in the media world? My goal was to wake up America each morning. I would be happy staying in this position for the rest of my career. God has blessed me. With the division in our country today, how do you feel women can come together to overcome this political upheaval? I do believe we are more alike than we are different. We want what is best for the next generation. We want to live in a safe country and enjoy the unalienable right to pursue happiness. I believe listening to each other and respecting one another without anger or dissent is the best way to overcome political upheaval. To love one another and come together on what unites us (and not divides us) is the best way to improve the future of our country. What motivated you to publish “The Light Within Me: An Inspirational Memoir?” My book publisher approached me about writing a memoir about my faith and journey to “FOX & Friends.” In the beginning I was hesitant because I didn’t think I was seasoned enough to write my story. However, after a lot of prayer, I felt 36 | P.O.W.E.R. Magazine

God pushing me to share the greatest gift I have ever received – and that is my relationship with Jesus. How were you inspired by your daughter, Hayden, to write two children’s books? I wanted to be a mother desperately. I have a wonderful mother who taught in the public school system for more than three decades and she shared her love of books with us as children. So, when I found out I was having a baby, I wanted to do the same for my daughter and other children around the world. I wanted them to know how special and what blessings they are. What advice would you give to other women who are going through a divorce and finding it difficult to heal? Divorce is truly awful, but I would tell women who are in the depths of despair to take heart and know you will get through the difficult days. It won’t be easy, but it will strengthen your faith and teach you to lean on God more than ever. There is joy again on the other side. How do you balance your time between work and family life? I am so fortunate to have a job in the morning because I have the rest of the day with my daughter. I pick her up from school each day and spend all summer with her when

she’s not in the classroom. We share a beautiful bond and try to enjoy every moment together. I take naps during the day and study for my show after she goes to bed. What are some personal things that you want people to know about you? I am very blessed and have had a wonderful life. I have a sweet, caring, smart child and a supportive team helping us. My family is incredible. I have a loyal group of friends and my faith is strong. I thank God for it all. Tell us what you do to escape and recharge, even for a few hours? I love going to church, listening to music, reading about current events or a good novel (when there is time). I enjoy travel, spending time with my child and loved ones, and exercising. The big question . . .

ow do we know if he is the one? You don’t. There are many good people in this world, and the one guy that we found in our 20’s may not be the one for us in our 30’s or 40’s, etc. What we look for in a partner in different stages of our lives depends on our needs at the time, so there really isn’t a standard rule book that says, “Yep, he’s the one.” However, there is an across the board standard (or should be) when it comes to knowing that he is not the one. He is not the one if your gut tells you he’s not the one. We should always trust our instincts and know that your gut feeling is right. Never try to rationalize your doubt. If you doubt it, go with it. Your gut feeling is almost always right. He is not the one if he is abusive in any way- verbally, mentally or physically. Abuse should never be tolerated. Ask yourself this question, “Have I ever made excuses for his behavior? Has he?” If the answer is yes to any of these, he is not the one, especially if he makes you feel insecure. When a man loves a woman, he wants to elevate her. He wants to put her on a pedestal. He wants her to feel worthy and empowered. He doesn’t want to keep baby in the corner. He is most definitely not the one if he feels the need to make you feel jealous. That is strictly a selfish motive. It strokes his ego and, in turn, you become doubtful of yourself. He is not the one if he belittles you in front of others. This is an elevation tactic. He elevates himself by putting you down and making you feel insignificant. Just

remember that the most insecure men will always elevate themselves by lowering you. He is not the one if he consistently puts his needs before yours. A relationship has to have reciprocity. If not, resentment sets in. He is not the one if he can’t fight successfully. This is a big topic in my workshops. How do you fight successfully? You must stick to the topic. Discuss the issue, not the person. Do not name call; do not character assassinate; do not bring up the past; and certainly do not pass judgment on your partner. You can’t take back what is said. Choose your words wisely. He is not the one if he is unwilling to work on bettering the relationship. All relationships are a work in progress. We need work daily on ourselves and with each other. Working out our differences in a productive manner is important. He is not the one if you don’t feel safe with him. If you can’t confide in your partner and trust that he will hold your heart safely in his hands, how could he possibly be it? He’s not the one if he lacks empathy and compassion. Observe how he treats others. That is a telltale sign. I always look to see how someone treats another in a service industry. Are they respectful? Are they patient? Do they treat them as equals? These are non-negotiable rules for me when I am looking for a potential life partner. Other things to consider are the following: Are you having great sex? Sexual compatibility is important. If it’s not mind blowing, are you willing to work on it? We


Is he the one? don’t want boring. We want to keep your sex life exciting. Are you transparent? Are you comfortable in your relationship where you can share your thoughts and feelings without fear of judgment? Are you having fun together? Laughter is very important in a relationship. We can’t always be serious. We should be able to let our guards down and just have fun. How do your friends and family feel about your partner? While it’s not a deal breaker, it is important to consider their opinion. If multiple people feel the same way about your partner (in a negative manner), then there must some truth to it. Why did his past relationships not work out? Was there infidelity on his

part? If so, how does that make you feel? Once a cheater always a cheater is not necessarily true. If you feel the need to express concern for this behavior, you must talk about it. We literally can make a list of all the things that we want and don’t want, but when we are in the midst of the relationship, sometimes this list can go to the wayside. Love is not about a list. It is about the guttural feeling of everything we can’t possibly put into words. Love has no logic. When love is right, it is beautiful. But when love is wrong, it is the most difficult, heartbreaking, gut wrenching feeling of hopelessness. Love is everything we feel, good and bad. It is so important to pay attention to the red flags that

sabel Madison grew up immersed in beauty culture as the daughter of a cosmetics visionary. She learned at a young age that feeling beautiful and being beautiful were one and the same, and it was having a sense of confidence, sophistication, and subtleness that made her feel beautiful. Just as Isabel began infusing her vision into her father’s cosmetics company, she made the choice to put motherhood before her career and raised three children. However, her passion for cosmetics never faded. Her current company is a result of an experience she had with her sister while out shopping. Isabel’s sister began to feel overwhelmed by the wide variety of vibrant colors of lipstick in a store’s cosmetics departments. She felt that the lipsticks were overly wild and bold. arjorie Graf is the president and chairman of the board of directors of Graf & Sons Inc. which is a wholesale sporting goods store based in Mexico, Missouri. They sell sporting goods, hunting products, ammunition, shooting, and reloading materials on a national scale. Graf & Sons, Inc. was founded in 1957 by Arnold Graf, his wife Velma, their two sons Bob and Howard, and their spouses. What has become known as “The Reloading Authority” first started as a gasoline service station in Mexico, Missouri that sold boats, motors, hunting, and fishing merchandise. Bob and Marjorie Graf became sole owners of the business after the passing of co-founder Arnold Graf in 1972 and the retirement of Howard Graf in 1981. In 1986, Bob and Marjorie started to advertise across the board and began to sell internationally. In the beginning they shipped just 1,000-2,000 products a year but with the creation of their website, www.grafs.com, in 2001, the product lines expanded to fit the need. Today, Graf & Sons stocks over 20,000 products and ships both nationally and internationally by mail order, phone sales, and internet sales. The company has many extremely competent employees including Marjorie’s two sons who are also involved with the business. Marjorie specializes in finance and the overall operations. She also oversees the exporting side of the business, customer service, and sales. Previously, Marjorie served in sales and service at Mexico Refractories and Kaiser Refractories for over 16 years. In 2013, Graf and Sons Inc. was recognized by the Mexico Chamber of Commerce for their leadership in business, their retail business, and their philanthropy, and was honored at the 29th annual Commerce & Industry Appreciation Dinner. In January 2019, Marjorie received the Mexico Chamber of Commerce Presidential Award. Recently, she was the 2019 inductee “as an individual” into the Missouri Trapshooting Association Hall of Fame on May 17, 2019 at Linn Creek, Missouri. This was quite an honor as she has always enjoyed the shooting and hunting sports. Sadly, Marjorie’s husband Bob passed away in 2018. Roast Leg of Lamb with Rosemary Ingredients ¼ cup honey 2 Tbsp. prepared Dijon-style mustard 2 Tbsp. chopped fresh rosemary 1 tspn. freshly ground black pepper 2 Tbsp. lemon juice 2 Tbsp. balsamic vinegar 3 cloves garlic, minced 5 lbs. whole leg of lamb 1 tspn. coarse sea salt Directions

Roasted Potatoes with Shallots

Ingredients 3-5 lbs. Yukon gold potatoes cubed 1 package onion soup mix 4 shallots peeled and sliced in ¼” slices ¼ cup olive oil 1 Tbsp. parsley ½ tspn. pepper Directions

Wash potatotes. Cut in half, then slice each piece in 6 or 8 large cubes. Place in large bowl. Peel and slice shallots. Place in bowl with potatoes. Pour in soup mix, parsley, pepper and oil. Mix well. Place in large sealed bag and marinate in the refrigerator for an hour or so. Can be prepared a night ahead of serving to save time. Preheat oven to 400°. On foil-lined baking sheet, pour potato and shallot mixture out and spread evenly. Roast for 30 minutes. Remove from oven and mix well. Cook for another 30 minutes. Remove and test that potatoes are fork tender. If not, put back for another 15 minutes. Serve.

In a small bowl, combine the honey, mustard, rosemary, ground black pepper, lemon juice, vinegar and garlic. Mix well and apply to the lamb. Place in large oven bag and marinate in the refrigerator overnight or up to 2 days. Preheat oven to 450°. Sprinkle salt over lamb. Seal seasoned lamb with marinade in the oven bag, place on a roasting pan and bake at 450° for 20 minutes. Reduce heat to 400° and roast for 55 to 60 more minutes for medium rare. The internal temperature should be at least 145° when taken with a meat thermometer. Let the roast rest for about 10 minutes before carving.

Baked Creamed Spinach with Frizzled Onions Ingredients 2 packages frozen creamed spinach (Seabrook) 1 cup + ½ cup frizzled onions (Durkee) Directions Defrost spinach in the refrigerator overnight. Preheat oven to 375°. Spray a deep casserole dish with butter spray or olive oil. In separate bowl, mix spinach and 1 cup frizzled onions together. Pour into sprayed baking dish. Top with ½ cup of frizzled onions. Cover tightly. Bake for at least 45 minutes. Serve.

Raw Asparagus Ribbons with Parmesan Dressing Ingredients 2 lbs. large asparagus, bottoms trimmed off (about 1½”) ½ cup coarsely grated Parmigiano-Reggiano cheese 4 Tbsp. fresh lemon juice 2 Tbsp. red wine vinegar 1 tspn. warm water 1 Tbsp. lemon zest ¼ cup extra virgin olive oil Kosher salt and freshly ground pepper

Directions Wash and dry lemon. Zest the lemon lightly and keep a tablespoon of zest aside. Place lemon in microwave for 25 seconds. Remove and place on clean kitchen towel. Roll on towel vigorously to make squeezing the lemon easier. Place half lemon at a time between the upper part of a pair of metal tongs and squeeze over bowl to juice. Using a vegetable peeler, shave the asparagus into long, thin strips and transfer to a large bowl. In a small bowl, mix the Parmigiano-Reggiano with the lemon juice, zest, vinegar, water, and olive oil. Add to the asparagus and toss to coat. Season the salad with salt and pepper and serve at once.


Apricot Brisket (Passover)

Ingredients Directions 3 Tbsp. vegetable oil Season the brisket liberally with salt and pepper on all sides. 6 lbs. beef brisket In a large heavy skillet, heat oil over medium high heat. When 4 large onions, chopped the oil is hot, brown the beef on all sides (3-4 minutes per side). If 3 carrots, peeled and nickeled the brisket is too large, cut it in half first, and brown in two stages. 1 package dry onion soup mix Place the meat in a large Dutch oven with a lid or a very large, (Goodman’s) deep cooking pan. Set aside. 1 lb. dried apricots, diced Add onions to the drippings in the skillet. Sauté over medium 1-2 cups of water heat until the onions are beginning to brown. Stir in carrots and Salt and pepper

cook for 5 more minutes. Pour over the brisket in the Dutch oven. Sprinkle one package of dry, instant onion soup mix over the browned meat and vegetables. Arrange all of the apricots on top of the soup mix. Pour enough water around outside of meat, not on top, to cover the sides of brisket. Cover tightly with foil. Bake at 325° for 2 hours. Check liquid; if dish is starting to look dry, add a bit more water around meat. Re-cover, and cook another 2 hours. Meat should be very tender- if necessary, bake for an additional ½ hour. Remove meat to cutting board. Cut across grain to serve after letting it sit at least 20 minutes. *This is best made a day or two ahead of when serving. It freezes beautifully. Store the meat separately from the gravy. Slice very thin slices when cold. Place back into the pot, put gravy back after skimming off the fat. Reheat covered at 300° for an hour or more.

Spinach Feta Pie (Passover)

Artichoke Pie Ingredients 2 cans artichoke hearts 5 eggs, beaten 1 lb. mozzarella, diced (reserve ½ cup) ¼ cup grated Parmagiano-Reggiano cheese 1 tspn. pepper ½ tspn. salt 1 pie crust shell (top and bottom) ½ cup diced salami

(optional: Top with a few sliced cherry tomatoes for presentation)

Directions

Drain artichoke hearts. Roughly chop and place in large bowl. Add all ingredients and mix well. Preheat oven to 350°. Place pie crust in pan. Pour mixture into pan. Top with reserved ½ cup mozzarella cheese. Place 2nd pie crust on top and crimp edges. Poke a few holes so steam escapes. Bake for 45 – 55 minutes until nicely browned.

Ingredients 4 large eggs 6 matzoh boards 1 pkg. Farmers cheese 8 oz. grated parmesan cheese 8 oz. crumbled feta cheese 20 oz. frozen chopped spinach (thawed overnight in fridge) ½ tspn. pepper 2 Tbsp. vegetable oil or olive oil spray

Preheat oven to 350°. Thaw and drain spinach (wrap in clean kitchen towel and squeeze out excess water). Place matzoh in large bowl. Put a heavy plate or bowl on top of matzoh. Cover matzoh with water and soak for about 10 minutes. Remove plate and drain in a colander. Break up the matzoh by hand in the large bowl. Make a well in the middle and beat the eggs. Add pepper, cheeses, and spinach. Mix all together. Coat 9” x 13” pan with oil. Pour in mixture. Bake for 45 minutes until top is slightly browned. Serve hot, room temperature, or cold. Can be served for breakfast, lunch, or dinner.

Flourless Chocolate Cake with Raspberries

Ingredients ½ cup granulated sugar ½ cup water 1 stick unsalted butter 12 oz. semisweet or bittersweet chocolate 1/3 cup sweet liqueur, such as Cointreau or Chambord 6 eggs 1 cup heavy cream 2 Tbsp. sugar 1 basket fresh raspberries (optional) Directions

This unusual cake may be made in advance -- make sure to bring it to room temperature before serving with whipped cream and a few raspberries. Preheat the oven to 325° and set a rack in the middle level. Butter an 8-inch round pan and line the bottom with a disk of parchment or waxed paper cut to fit. Butter the paper. Chop the chocolate finely and set it aside. Combine the sugar and water in a saucepan and bring to a boil over low heat, stirring occasionally to make sure all the sugar crystals dissolve. Remove the syrup from the heat and stir in the butter and chocolate; allow to stand 5 minutes. Whisk smooth. Whisk liqueur and eggs, one at a time, into the chocolate mixture, being careful not to over mix. Pour the batter into the pan and place the pan in a small roasting pan covered with one inch of warm water. Bake about 45 minutes, until set and slightly dry on the surface. Cool to room temperature in the pan and cover with plastic wrap. Refrigerate dessert in pan. To unmold, run a knife between the dessert and the pan and pass the bottom of the pan over the heat. Invert to a platter. To finish, whip the cream with the sugar until it holds a soft peak. Spread the whipped cream on the top of the dessert. Decorate the top with the raspberries.

Lemon Almond Thumbprint Cookies (Passover) Ingredients

2 cups almond meal (blanched) 1 cup granulated sugar (separated into ¾ and ¼ cup) 1 large egg, beaten Finely grated zest of 1 lemon ½ cup apricot or raspberry jam Directions

In large bowl, mix 2 cups almond meal, ¾ cup sugar, egg, and lemon zest till you have a cohesive dough. Cover and refrigerate for at least 12 hours, or overnight preferably. Preheat oven to 350°. Line a baking sheet with parchment paper. Place remaining ¼ cup sugar in a small bowl. If you have a ½” (small) cookie scoop, use this. Otherwise, pinch off pieces of dough about the size of a quarter, roll them first into balls, then into sugar. Gently press the end of a large wooden spoon into the middle of each cookie making a ‘thumbprint’ and fill with about half a teaspoon of jam. Arrange cookies one inch apart on parchment lined baking sheet. Bake until cookies have just a hint of color but still remain soft, 8-10 minutes. Cool on a rack completely, and store in an airtight container using wax paper in between layers.

Passover Macaroons by Geri Shumer Ingredients 1 egg ¾ cup sugar 7 oz. coconut flakes 3 Tbsn. butter, melted 1 ½ cups dark chocolate chips Directions Preheat oven to 350°. Use a mixer to mix all above ingredients, except chocolate chips, together. Use a teaspoon to drop large spoonfuls onto a well-greased cookie sheet. Wet your fingers with water and gently shape each spoonful into a dome shape. Bake at 350° for 10 minutes, then lower temperature to 250° and bake another 10 minutes. While the macaroons are baking, melt the chocolate in a saucepan over a low flame. When the macaroons are done let them cool 3 minutes and then dip the tops of them into the melted chocolate. Let cool 30 minutes before serving.

What are your thoughts about plastic surgery in a post-COVID world given all of the changes around us in the past several years? This has been an incredibly reflective time for me, not only with the tremendous impact COVID-19 has had on the world, but also in terms of thinking about my own part in this. What does beauty mean in a postCOVID world? How can we make something that has often been dismissed as frivolous and superficial into something that adds to the quality and fabric of our lives? Ultimately, I think that the answer to those questions is that beauty is about confidence. Pretty skin and long eyelashes are not about how your face looks. They are about how you feel about yourself, and how you radiate that confidence into greater productivity in the world around you. What are the latest trends in plastic surgery and injectables? Plastic surgery is becoming a less invasive field with more technological developments and better product innovation. The future of the field will be more beautiful and powerful results delivered less invasively. In terms of greater changes in the zeitgeist, I think we are all feeling more subdued. This represents a return to naturalness in medical aesthetics. The ‘Maleficent’ cheekbones, ‘duck’ lips, and ‘Jessica Rabbit’ buttocks represent an era prior to coronavirus, and this is not what people want anymore. Seeing our friends and colleagues succumb to this disease and watching our society and economy shut down has made us all a little more serious, a little more restrained, and a little more mature. I predict a more natural approach to plastic surgery, and frankly I am looking forward to this. I think of beauty in the tiny details and excellent outcomes in the millimeters, and a small boost can have a great impact. What are the most important products from your skincare line for those who are not ready for the world of plastic surgery and injectables? Innovation is key in skincare, and I’m obsessed with ingredients. If you use medial-grade science-backed in-

Power means the ability to make good decisions, to have the presence of mind to be able to consciously craft life choices that serve your community, your family, and yourself well. The Power of Three My Triple Negative Breast Cancer Story I s there any real significance to the meaning of numbers? I didn’t really think so until I was diagnosed with triple negative breast cancer on March 13, 2013. There are lots of threes in there. On March 3, 2013, Triple Negative Breast Cancer Awareness Day was first officially recognized as a national day. When I was first diagnosed with triple negative breast cancer I thought, “This sounds triple bad!” Like many of us, I had no idea that there were even different types of breast cancer. I live in Bergen County, New Jersey, the home of the Triple Negative Breast Cancer Foundation. When I told a few close friends that I was diagnosed with TNBC, they referred me to the executive director of the foundation, Hayley Dinerman. Hayley immediately took me under her wing and introduced me to other thrivers, as well as opened my eyes to the importance of community, advocacy, and sharing my journey. Until I was diagnosed with breast cancer, I didn’t understand the importance of seeing other women diagnosed with this disease who are surviving and thriving - living long, happy, and healthy lives. TNBC is scary. It’s known to be an aggressive type of breast cancer that’s challenging

to treat. I needed to see that there are survivors hitting their 10, 15, and 20 year marks. It gave me hope. Hayley and her team have worked very hard to create a true home for TNBC patients and thrivers, as well as their caregivers. The foundation’s website, tnbcfoundation.org, is overflowing with information, resources, and a welcoming community. There are supportive events both online and off that make everything better for those of us diagnosed with TNBC. My background is in fashion and beauty PR. Throughout my breast cancer journey, I struggled to look and feel my best. I began scouring the internet for beauty tips and tricks to help manage the appearance-related side effects of my experience,

as well as for niche products that would help me with recovery from treatment. I began to keep track of the best advice and items that I found, then created the CancerFashionista.com blog to share my recommendations with other women facing similar diagnoses. Cancer Fashionista quickly grew in popularity with its readers and followers on social media, and I’m proud to say that I’ve become a trusted voice in the breast cancer community, as well as in the triple negative breast cancer community. This past year I launched my podcast, Dear Cancer, I’m Beautiful, and was recently appointed as board chair of the TNBC Foundation, which is a huge honor for me, to help carry the torch for our mission. One of my first roles as board chair was to spearhead Triple Negative Breast Cancer Awareness Month this past March. We raised funds for critical medical research and gave a voice to the women who make up our TNBC community. The month included our second annual Power of 3 campaign, where we invited patient advocates to share three things they wish they knew when they were first diagnosed. We empowered women to step forward and share their stories, so that those of us who were diagnosed last week, yesterday, today - will feel a sense of hope that they too can stand up to this disease. We connected with phenomenal organizations like P.O.W.E.R to spread disease awareness and to show women diagnosed with TNBC that they are never alone.
