We create beautiful landscapes that surround our home to encapsulate our lifestyles, and to take advantage of warm weather, cool nights and gathering with friends, whether it’s around the pool or congregating under the stars for a bountiful barbecue.

Our cover image for this issue also visually represents why landscape and architecture hold so much intrinsic value. Homeowners George and Marta Coito love to entertain outdoors and have a beautiful canvas to do so. George is a Landscape Designer and when they hired Vanessa Fong to design the home, the most important feature was that there needed to be seamless integration between the inside of the home and the gardens. The Landscape Design and Construction and the General Contracting of the home were undertaken by George’s company, Coivic Contracting Ltd.

The photo was shot by doublespace photography = amanda + younes. Amanda is a trained architect and worked in the field for five years. Younes is a former biologist turned landscape photographer. A mutual love of capturing the built environment led them to launch doublespace photography in 2012.

We have all experienced this: turning the pages of a design magazine or scrolling through endless Pinterest room settings when we see an image that stops us in our tracks. We may save it to a folder or tear it out for future inspiration but what is it about the picture that has enraptured us?

Chances are it was the artful and thoughtful curation of accessory items positioned on the coffee table. Or the casual, but oh-so-artfully thrown “throw.” The chic pillows arranged just so and perhaps a collage of wellplaced artwork.

The final styling of any living space is probably the most important thing a designer will do on a project and it is the one thing that is often overlooked. Clients become exhausted by the endless decisions of finishes and fabrics and by the time the couch is delivered, they really just want to collapse.

However, I strongly feel that the style stage is what really pulls everything together. Without accessories, artwork and plants, a home is simply a shell, a beautiful shell devoid of the homeowner’s personality.

When I’m at the end of a job and clients are preparing to move back into their home, one of the first things I ask them to do is to take their most precious objects out of the boxes and place them all on a table. I ask them to review each item and decide which pieces mean the most to them.

Once I’ve seen the items they wish to enjoy every day, I begin my styling list to “finish” each room. Interestingly seeing those beloved objects in different rooms can make clients love them even more!

So here is my styling list.

FLOOR OR TABLE LAMPS

The right lighting is crucial not only in the type of light it exudes but the type of look it creates. Acrylic, glass, and metals in organic or simple silhouettes finish a room beautifully.

LAMPSHADES

I only use clients’ lamps if they fit with the new decor but will bring some updated lampshades. Drum shapes are particularly easy to work with here.

PLANTS – EITHER FAUX OR REAL

Filling corners or grouping plants on tables or shelves breaks up a space filled with collectibles. Allow the eye to rest with plants. You can’t go wrong with a good faux plant, and there are many on the market today.

PLANT POTS

Just as important as the plants themselves, I look for natural looking finishes and am delighted with the offerings of faux pots, which unless you touch them, look pretty authentic.

CANDLES

I never go to a client without a set of tapers. I look for 20-inch or more tapers for a really elegant tablescape.

UNUSUAL CANDLESTICK HOLDERS

I love metals, woods, and ceramic finishes and also look for organic shapes. I like mixing these together.

LARGE, UNIQUE HARDCOVER BOOKS

You cannot style a space without books and I love books, particularly hardcover designs, or fashion-themed. They look so stylish and always finish a room to perfection.

LIKE BEADS OR ROPES

Ropes and beads have been popular for a while and I love draping them in and outside of bowls. They just work.

MIRRORS

Even if a client has a magnificent art collection, and I so appreciate that, I like to break it up with a mirror. I always put a mirror in a hall, but

when I create a collage of art, adding a mirror provides relief.

ARTWORK TO AUGMENT

A CLIENT’S COLLECTION

I also add small pieces of artwork off the shelf to fill corners but I don’t believe every wall has to have something on it. I tend to do this at the end of a style session.

FAUX FRUITS LIKE LEMONS OR LIMES

Especially in a kitchen styling, I love to add some faux fruit for colour and whimsy. But they have to look real. I once had a client bite into a faux orange. It was that good!

PILLOWS AND THROWS

Adding pillows and throws is a given when styling. Always buy down-filled pillows with zippers and whether thrown or folded, a throw adds a cozy and comfortable feel.

COCKTAIL TABLES IN DIFFERENT STYLES

Thankfully, gone are the days when we matched end tables. I often only use nesting tables and always pop in a pretty cocktail table to avoid everyone leaning into the central coffee table for their drinks or nibbles.

SMALL OTTOMANS

These are so fun and I usually use them in front of the fireplace. People, especially kids, love them and they add extra seating so easily and so inexpensively.

FRESH FLOWERS AND GREENS

Clients are usually exhausted at the end of a project so fresh flowers and greens are a way for me to say thank you and to show them how important these fresh beauties are in a space.

ASSORTED TRAY SIZES AND SHAPES IN DIFFERENT FINISHES

I won’t ever come without trays. They create compartments on surfaces, look organized and oh so stylish.

CLOCKS

I love big clocks and use them in kitchens, mudrooms and laundry rooms. Sometimes I use multiples in a row if a client has an international lifestyle. Very chic.

CRYSTALS AND ROCKS

Sometimes clients have collections like shells and I love to pop them in with other accessory items.

VESSELS AND VASES IN VARYING TEXTURES

Back to the organic movement –I like worn out pieces. A chip or two doesn’t hurt either as it adds authenticity to a room.

SCULPTURAL OBJECTS

These pieces work so well with wall art. Remember collections are not only limited to the wall. I seek out unusual shapes and forms.

BASKETS

Baskets always say cozy to me and I love to use them to hold chopped wood or to hold multiple throws in a family room when cozy movie nights are on the agenda!

Yes, the list is long and we often purchase multiple items so we can “play” with what feels right.

Arriving at a client’s home, unloading and unpacking these items is a joy for a designer and where the real creative work is done.

But as in every layer of design, a careful thought process exists here too.

My basic rules for grouping items:

RULE ONE: THE POWER OF THE ODD NUMBER

Yes, that rule has been around for a long time and it is still used by designers. When grouping objects together, pick 1, 3 or 5 items. They don’t have to be the same but this odd pairing creates a tension on a surface. It allows the eye to move fluidly through the pieces.

RULE TWO: HEIGHT MATTERS

Once you have those odd numbered items grouped together, take a good look and make sure they are different heights. If you have a set of three that match, consider using those art books mentioned in my style list to create different heights. This creates visual interest.

RULE THREE: FIND A COMMON DENOMINATOR

Back to those items you selected. Take another look and see if there is something common in all of them. Is it colour? Is it texture? This creates harmony on the surface.

RULE FOUR: ADD SOMETHING UNEXPECTED

Once you have assembled some odd numbered items, look for something that is different to them. It could be a book, a strand of wooden beads, a marble fluted bowl filled with paleo Santo sticks. Just something different. Sometimes you need to play with different pieces.

RULE 5: ADD SOMETHING ORGANIC

Design trends today suggest our return to organic roots. I never style a table without adding a tumble of stones picked up from a travel or a unique hand-carved box from some exotic place.

And you don’t have to be finishing up a renovation to follow this guide. Sometimes simply moving existing furniture around and mixing up old collectibles with new pieces can literally jumpstart a living space.

Warmer weather will soon be upon us and a newly curated home feels exhilarating and renewing. Nothing could be more satisfying than that.

LIFE ON THE EDGE

In a city fond of superlatives and thrilling views, Edge, on the 100th floor of the 30 Hudson Yards skyscraper, covers both. Opened in 2020, it’s the highest outdoor observation deck in the Western Hemisphere at 344 metres — about the height of the Eiffel Tower. A glass floor adds to the fun. If that’s not enough, suit up in safety gear to scale the outside of the skyscraper.

Recreate a 91-year-old photo and get a daredevil’seye view across Manhattan from the top of Rockefeller Center with the city’s newest attraction, The Beam, which opened in December.

The High Line, a former elevated industrial rail line, is now one of New York’s most popular outdoor attractions. It’s just under a kilometre long and dotted with public art, ending at Manhattan’s newest neighbourhood, Hudson Yards.

There are two new tasty additions to Hudson Yards. There’s a new location of 110-year-old business Russ & Daughters, where luscious lox and cream cheese on a house-baked bagel is a must-try. Mercado Little Spain is a Spanish food market with bars and food kiosks from El Bulli alums José Andrés and brothers Albert and Ferran Adrià.

You can’t come to New York and skip having a slice. A new favourite is Brooklyn’s L’industrie Pizzeria, which opened a West Village location last fall. The burrata slice is a decadent delight. Soft-serve olive oil gelato topped with sea salt is a revelation.

The city was an easy choice for the pair to bring forth their concept. “We’ve always loved Hamilton, and we thought it would make sense with the concept so when the opportunity of the space came to us, we jumped on it,” Abedi says. “We’ve both been interested as far back as we can remember,” says Abedi. “Hospitality is such a fast-paced industry, that lets you be creative, and we thrive in it.”

Lobby will offer a dining experience with an Americana menu. “The menu will be updated seasonally; most of the items will stay, but we do make adjustments every few months,” says Chanaa.

According to Ontario Maple, maple syrup is often referred to as the first agricultural crop of the year. Cranberry Baked Brie

Yield: Serves 6-8

Prep Time: 20 minutes

Cook Time: 25 minutes

Ingredients

1 (16 oz) brie wheel

1 cup pecan halves, lightly toasted

½ cup dry cranberries

½ cup pumpkin seeds, lightly toasted

1½ cups maple syrup

Directions

• Preheat the oven to 325°F.

• Line a baking sheet with parchment paper.

• Place the brie on the prepared baking sheet and bake until soft, 25 minutes.

• Meanwhile, in a small pot, warm the pecans, cranberries, pumpkin seeds, and maple syrup over medium heat, mixing until warmed through and the maple syrup evenly coats everything.

• Transfer the baked brie to a serving dish just large enough to hold it snugly without crowding and pour the maple syrup mixture overtop.

• Serve immediately while still hot alongside toasted baguette and a small spoon or knife for spreading.

Maple Glazed Bombolone

Brioche Ingredients

4 eggs

4 cups bread flour

1/4 cup caster sugar

1 tsp cinnamon

1 tsp sea salt

1/2 cup softened unsalted butter

1 packet active dry yeast

1 cup milk

Directions

• In a stand mixer with the hook attachment mix flour, cinnamon, yeast, salt, and sugar at low speed.

• Add in the eggs one at a time followed by the softened butter and milk.

• Once the ingredients have combined, turn the speed to medium-low and allow to knead for 10-15 minutes or until the dough begins to peel away from the sides of the bowl and forms a ball.

• Remove the hook and form a ball in the bowl, place a damp towel over the bowl and let it sit in a warm place to rise to double its size (about 1-2 hours).

• Once the dough has proofed to double its size, punch it down and transfer the dough to a prepared surface. Here you can use a ring mould and cut circles into the dough.

• Place on a parchment-lined baking sheet until ready for frying.

• Place the donuts in oil 360°F for 1-2 minutes a side or until they are browned.

• Remove and let cool.

Maple Glaze Ingredients

4 tbsp salted butter

1/3 cup maple syrup

1 cup powdered sugar

1 tsp vanilla extract

Directions

While the brioche is baking, make the glaze. Add the butter to a small pot set over medium heat. Allow the butter to brown slightly until it smells toasted, about 2-3 minutes. Remove from the heat and whisk in the maple syrup, powdered sugar, and vanilla. Dip or drizzle the doughnuts into the glaze and enjoy.

Soused Heirloom Beet Salad

If

MAPLE DRESSING

Ingredients

90ml cider vinegar

60ml maple syrup

20g Dijon mustard

Pinch salt

1/2 clove garlic, crushed

1/2 shallot minced

20ml olive oil

100ml canola oil

20ml shoyu or soya

Directions

Combine vinegar, water, maple syrup, mustard, garlic, and salt. Blend until smooth. Slowly mix in oils one at a time. Refrigerate.

SOUSED BEETS

Fennel, rhubarb or a similar vegetable can also be used.

Ingredients

30 baby beets, cooked, peeled, split in half

6 cloves garlic, sliced

6 shallots, sliced

300ml olive oil

225ml cider vinegar

75ml maple syrup

2 sprigs rosemary

1 vanilla bean, split

TT black pepper

TT salt

Directions

Sautee garlic and shallots in 100ml of oil. Add cooked beets and remaining ingredients. Simmer for 2 minutes and allow beets to cool in the sousing liquid. Ideally, marinate overnight in refrigerator.

BARLEY CRACKER

STEP 1: BASE

2 cup toasted ground barley

¼ cup whole wheat flour

3 tbsp malt powder

1 cup Guinness beer

Directions

Mix dry ingredients (toasted ground barley, whole wheat flour, malt powder). Add beer to combine - should be the consistency of dry pie dough (you might need more beer). Roll thin and bake at 325°F. Grind up in blender.

STEP 2: CRACKER

196g barley cracker base

75g sunflower seeds

6 eggs

1 ¼ sugar

1 tbsp baking powder

Pinch salt

Directions

Blitz cracker base + sunflower seeds. Add baking powder. Whip eggs + sugar; fold in the rest of the ingredients. Spread mixture on silicon mat about 5 mm thick. Bake at 320°F with a high fan for 5 minutes until golden brown. Once cooled down will crisp up.

TO SERVE

Assemble the following:

• Whipped ricotta seasoned with salt and pepper

• Sweet and sour apple jam (or you can use sliced Granny Smith apples)

• Watercress greens lightly dressed with maple dressing

• Room temperature soused beets

• Barley crackers

• Bee pollen (for garnish)

Pipe ricotta on the bottom of a plate. Place beets lightly coated with marinating liquid. Dress watercress with maple vinaigrette and cover over beets. Spoon over apple jam or line sliced apples over. Garnish with barley cracker and bee pollen.

Apple & Carrot Maple Walnut Breakfast Loaf

with Maple Cinnamon Butter

Ingredients

1 1/2 cups all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground cinnamon

1/4 tsp salt

1/2 cup unsalted butter, room temperature

1/4 cup dark brown sugar

1/4 cup pure maple syrup

2 large eggs, room temperature

1/3 cup Greek vanilla yogurt

1/2 cup apple sauce

1 large carrot, scrubbed and finely grated, about 1 cup

1/3 cup roughly chopped walnuts

1 large ambrosia apple, skin on, washed and cut into very thin round slices, seeds removed

2 tbsp pure maple syrup

Maple Cinnamon Butter

1/2 cup unsalted butter, softened at room temperature

2 tbsp pure maple syrup

1/8 tsp ground cinnamon

1/4 tsp flaky sea salt

Directions

• Preheat oven to 350°F.

• Butter the bottom and edges of a 9x5 loaf pan. Cut a 4-inch wide strip of unbleached parchment paper and place it in the centre of the loaf pan with some overhanging on the sides of the pan. This will help lift the loaf out of the pan with ease.

Ontario Maple Cheesecake

Cheesecake Directions

• While the crust is cooling, blend together in food processer the cream cheese and maple syrup until smooth, about 2 minutes, making sure to scrape down the sides of the bowl as needed. With the food processor running, add eggs, one at a time, until just incorporated. Pour batter into the cool prebaked crust.

• Firmly tap the pan on the counter and set aside for 10 minutes before baking. This allows the air bubbles to rise to the top.

• Once oven is preheated to 225°F, bake cheesecake until edges are set but centre is slightly jiggly. Using a food thermometer, probe the centre of the cheesecake; until the cheesecake reaches 165°F (takes about 2.5-3 hours).

• Remove cheesecake from oven; allow to cool on the counter for 2 hours before chilling in the fridge for another 6 hours.

• Once cheesecake is chilled, using a sharp knife scrape around the sides of the cake to release the cake from the pan.

Topping Directions

• Sprinkle granola around the top edge of the cheesecake. Drizzle the maple syrup inside the ring of granola.

• Garnish with fresh berries or edible flower petals.

moved to Oakville a few years ago. Like so many people during Covid, I was seeking a change of scenery, a reset. I craved the excitement that lay within exploring a new city. Having moved from Toronto, my family and I were ready to find new local amenities. It was through this process that we discovered how many amazing gems there are in Oakville. From bakeries, ice cream shops, and coffee houses to even an incredible record store that rivals the best in Toronto.

Then, there’s the Moonshine Café on Kerr Street. I kept hearing about this establishment and would occasionally drive past it with a persistent sense of intrigue and curiosity. However, we’re all creatures of habit. We rush to get to work, to the gym, to school, home, and repeat. We don’t harness the moments. We miss out on experiences. Instead, we capture visual lapses in time on our curated social media feeds rather than being present. We’re all searching for that perfect filter and angle. I too am guilty of this.

Lucky for me, I got a backstage pass to the Moonshine Café. It was during a meeting with owner, Jane, that I discovered what this hidden gem truly means to its loyal patrons. So, what is it about this place that’s resonated

with so many for nearly two decades?

The answer is very clear. The late John Marlatt and his wife Jane Mackay’s passion for art’s profound ability to connect a community.

John and Jane met in high school and eventually became life partners. Their love for music, art and community brought them together and ultimately manifested into the Moonshine Café, which was built in 2006.

John and Jane met in high school and eventually became life partners. Their love for music, art and community brought them together and ultimately manifested into the Moonshine Café, which was built in 2006.

Their goal was to create a meeting hub that would showcase the art scene in Oakville. A place for musicians, poets, and independent artists to thrive. This was all realized in the most seamless fashion. The interior is stripped down to its essentials. The walls are adorned with pictures of all the musicians who have passed through and the times that John and Jane shared. Years and years of music, memories and emotions seep into the walls of the café.

When you walk into the Moonshine there’s a sign depicting John’s house rules. “We are here to listen to live music! Please be respectful of the artists, and gauge your volume accordingly. Bring your positive vibe,” it says.

As I sit in conversation with Jane, I’m overtaken by a sense of belonging, sincerity and genuine hospitality. This place is legendary. Bands from Canada, the UK and the U.S. have all taken the

stage here, a place that is so completely unassuming from its exterior, most of us would pass by and never take notice. If you’re paying enough attention though, you might have caught a glimpse of John wearing a cowboy hat, sitting in the front of the Moonshine barbecuing with a cigarette in his mouth. He was lovingly known to many as “The king of Kerr.”

We’re all obsessed with our phones, and our screens have become our companions. At the Moonshine there are no televisions. Everyone is encouraged to be present, to enjoy what’s in front of them free from distraction. As someone in the hospitality industry, I keep an eye out

for growing trends. Listening rooms are growing in popularity. The Moonshine was way ahead of the curve. At its core its ethos is universal. Be present, and revel in the fleeting moments that we all share.

The cliché that nothing lasts forever is true. John sadly passed away last year. Over 1,000 people attended his funeral. Parliament even acknowledged his passing. Jane was forced out of retirement to return to the Moonshine and continue to run the business. What struck me about Jane was her positivity and resilience. She is dedicated to keeping his legacy alive.

Sadly, like so many businesses, the lease at the Moonshine will expire at the end of this year, leaving its fate in question. So, I highly encourage

you to visit this local bar, have a pint, disconnect from your devices and experience authentic moments through its live music performances.

Local animal rescues and charities with pets in need of loving homes

It’s with good reason that the dogs, cats, guinea pigs and rabbits adopted in the past four years have come to be known as pandemic pets.

Forced to sequester at home due to COVID-19, people adopted a record number of animals thinking that the addition of a pet would stem loneliness and create a happier, healthier home life. Now, four years in, animal shelters are struggling with a deluge of unwanted animals thanks to people returning to work or simply finding the costs associated with pets too burdensome. Some pet owners who no longer want their animals are even on wait lists to return their pets to shelters.

But there is an added problem with COVID pets, says Heather White, animal care and community education manager for the Oakville & Milton Humane Society, which cares for about 3,000 animals each year. “The average person that wants a pet wants one that will integrate into a family quickly,” she says. “Often these pandemic pets are uncomfortable around new people and other pets. It takes some work to integrate them back into people’s homes so you’re asking someone to take on a project.”

While the Humane Society is always in need of foster homes, the need is greater among those homes willing to take on pets deemed more challenging. Animals with medical needs such as diabetes or those that are pregnant require foster homes, for example, that are less stressful and more spacious.

Still, if people are looking for a rewarding experience, fostering is a great way to make a difference, says White. “It helps the animal,” she says. “It helps the shelter and it enables us to do more great things for animals and it has a great and positive impact on the person adopting the animals. A lot of people get hooked.”

Ladybird Animal Sanctuary, which works to raise awareness about the negative impacts of backyard breeders and puppy mills, has a network of 40 to 60 foster homes. Its objective is to help animals that are at threat of being euthanized. A Hamilton-based registered charity since 2011, the sanctuary is fundraising to purchase acreage for headquarters to shelter animals and to continue educating

the public about animal welfare. Most of its pets come from animal services in Hamilton, Burlington and Toronto.

“When a shelter hits a certain capacity they can no longer take in additional animals from the public and sometimes they are turned away,” says Janine Stoll, executive director and co-founder of Ladybird. “And sometimes they need to euthanize the less adoptable older ones or those with medical conditions. That’s where we step in.”

While there are many ways to support Ladybird throughout the year, its big annual fundraiser will be held on April 12 in Dundas at Shawn & Ed Brewing Co. Tickets can be purchased online at LadyBirdAnimalSanctuary.com.

While Ladybird applauds newly introduced legislation aimed at stifling puppy mills, Stoll wonders if the proposed law has a tough enough grip to remove cruel and unethical breeding practices. The bill prohibits puppy mills and includes animal welfare measures such as the creation of a tracking system for canines so there would be a public record of a dog’s history. If approved, Ontario would be the first Canadian province to fine the owners of puppy mills. Proposed fines stand at $10,000 to $25,000. Other proposed changes in the legislation include breeding restrictions and an increase in the number of animal welfare service inspectors.

These organizations give a voice to those who can’t speak for themselves: the animals. “Our fosters are the lifeblood of what we do. They provide a lot of hands-on work. Taking an animal out of the shelter means they have a second chance to have a great family. You give them a chance to be loved again and to live out their days. You can often tell the animals are grateful.”
