8 Strategies for Overcoming Nerves Do you love speaking in Public? If you do then you are not quite normal! The vast majority of people do not relish the prospect of standing up in front of strangers and giving a speech. In many surveys its ranks as being the #2 fear of people after the idea of being burned alive! So people would rather be rather die by fire than give and eulogy at a funeral! The good news is that there are ways to overcome you fear, to become a great speaker or just someone who can hold an interesting conversation for more than a few minutes. Lessons can be learnt so that when you next give that company presentation , sales talk, wedding speech or even explaining to your spouse why you are late home you will sound confident, inspiring and persuasive . Half the battle is to overcome your nerves. You know the feeling, when you forget what to say next, when your knees begin to shake and your voice sounds like a member of the Bee Gee’s Over the years I have come up with some tips to avoid those nerves. 1.Know your speech - (KNOW THE AUDIENCE DOES NOT!) Know your audience, the room, be organised and above all Practice Practice Practice 2. Visualise the outcome you want- believe in you. See in detail – your appearance, sound of applause, audience nodding and smiling, the contentment you feel, your solid, clear and strong voice. 3. Focus on the message – not yourself- put all your energy into it (take a Red Bull if necessary). 4. Connect with audience- look for smiling face, your audience does want you to succeed, and they don’t want you to be an absolute failure. 5. Put the past behind you, if you gave a poor speech last time, forget it, now’s a new opportunity. 6. Look your best, dress to impress, but not to much better than your audience. 7. Breathe deeply- take deep breaths. Enough to calm you down, not too many that you faint! 8. Give up the belief that you have to be perfect. – Professional speakers make mistakes from time to time, so can you, its not the end of the world, it just feels like it. How to brew tea:
Firstly, use filtered or spring water: your tea will only be as good as your water. Black Tea : Heat water to a rolling boil; Use 1 level teaspoon/ 8 oz. cup; Flavored and small leaf teas: 3 min. steep; Full leaf teas: 3-5 min. steep. Oolong Tea : Heat water to a rolling boil; Use 1 level teaspoon/ 8 oz. cup. Larger leaf teas : 7-12 min. steep. Jade Oolongs: 5- 8 min. steep. Green Tea: This step is very important !! : Heat water to steam: not boiling! If your water does come to a boil,allow it to settle for 45-60 sec. before preparing your tea. This will prevent it from becoming bitter…. Use 1 level teaspoon/ 8 oz. cup. Steep for 2- 2 1/2 min. White Tea is prepared like green tea except that it requires a 3-5 min. steep. Resteep 2-3 times. Herbal Infusions: Bring water to a rolling boil. Use 1 tablespoon/ 8 oz. cup or 1 oz./ qt. water. Sipping tea require a 10 min. steep. Medicinal and or root teas require a 15-30 min. steep. Rooibos can be steeped from 10-20 minutes--it requires at least 10 minutes to release all it’s stored Vitamin C (which on an ounce to ounce basis, Rooibos has the same levels)

The secrets to Wine & Food Matching Wine and food matching is the process of pairing food dishes with wine to enhance the dining experience. Pairing wine and food can sometime be a daunting task. In most cases one can often play it safe using the colour formula; red wine with red meat, dry whites with fish and sweet wine with puddings. Matching the weight and body of the wine to food is usually the key to a good combination. It should usually take precedence over the colour formula. A delicately poached chicken breast can be rendered almost lifeless by a heavy high-alcohol, extravagantly, fruity, buttery oaky chardonnay. Equally, a richly flavoured Coq au Vin would knock a light wine. When it comes it comes to food take into account its acidity, its sweetness (not least in savory dishes) and its saltiness. A dish with a definite element of acid will usually need a wine with acidity to match. For a dish that has fruit sauce as the integral ingredient it may be best to opt for a wine with slightly sweetness such as a Riesling Spätelese. There are many of us who want to look younger, slimmer and taller. Some resort to cosmetic surgery, others hit the gym. That way your body will look proportionate. Colours - You can use colours to camouflage certain areas of your body and make yourself look slimmer. The key is to wear darker colours over areas you want to hide and lighter colours over areas you wan to highlight. Darker colours tend to recede and lighter colours appear larger than they are. This does not mean that if you cover yourself from head to toe in black, like Catwoman, you will have an ultra slim look. Pair an all black outfit with colourful scarf that hangs down from your neck. This way, the eye will move vertically creating the illusion that you are taller than you are . In fact, any vertical line on the body make you look taller and thinner while horizontal lines that cut up the shape of the body, such as stripes or a belt, can make you look slightly shorter. Play up your strong Parts - One way to look slim is to expose the thinner areas of your body. Normally your neck, ankles and wrists. So when you wear jackets, show your wrists. When you wear pants, go for cropped pants that end above the ankle. This will help you look slimmer. See the world with different eyes… So many people travel these days…Most of us just automatically pack, go to the airport, check-in, fly, pick up their luggage at the other end (wherever that might be) check in to the hotel and go to work. Travel has lost some of its mystery and fascination, it has, fallen flat! I was one of these harried business travelers for years, clocking up to 300 days away from home some years…the glamour and fun was truly gone.; until one day my circumstances changed and I went to Egypt on the way to a Board Meeting in the US. I arrived there a day ahead of a group of people I was joining and embarked on the adventure right away : I hired a guide, Mohamed (what else?) a large burly smiling man who introduced me to mosques, large open places where people worshipped and I had to put on a green robe. It was not Friday so I was allowed to enter, albeit only the women’s section, and admire the intricacies of the wood carvings . What a difference to the churches I knew! This place had very high ceilings, a large open atrium and a few fountains at the entrance for ablutions, a place of social gathering as well as prayer : a discovery! Then on to Coptic Cairo, where allegedly Jesus and his parents hid in the bowels of a minute temple, and then we drove in Mohamed’s old Merc out to Giza, in tight and creative traffic, meddling with donkey carts laden with colourfully arranged vegetables, trucks full of ripe red tomatoes and other miscellaneous over filled busses and modes of transport. No rules here it seemed, just who was the most daring. Incredible that we and all the others on the road arrived alive! Yes traffic in Cairo is an adventure of its own! We finally arrived at one of the wonders of this world, the pyramids at Giza, towering above a plateau overlooking the Nile and the city. Imposing, majestic, mysterious. One approaches with a sense of reverence for them and their builders (nobody seems to be able to agree who or really when they were built and for centuries the controversy has raged…to this day nobody seems to agree). You cannot but be in awe at the sight of these colossal buildings and I would have some very powerful experiences in the so called King’s Chamber, a huge “room” of granite at the end of the steep ascent of the “Grand Gallery”, experiences of peace and tranquility, a sense of who I truly am overcoming me quite unexpectedly! This was a turning point in my life. Travel had irrevocably changed, my life had irrevocably changed, I had irrevocably changed. The journey went on the next day, to Luxor where I made some more discoveries. Egypt is a place for historical exploration and also spiritual journeying as well as confrontations with various types of Energy. I started to learn all this very quickly as my sensitivity increased, my awareness sharpened when reflecting at the sacred lake in Karnack or the temple of Abydos…I just allowed “things” to well over me and watched how the inner turmoil I had carried upon arrival in Egypt slowly ebbed away. Such joy and wisdom…which I wanted to share with as many people as possible! This was the seed to creating Sacred World Journeys. Why EQ matters more than IQ You probably know how intelligent you are. Maybe you’ve been tested for an exact IQ score? - Pharmaceutical companies market their medicines as brain enhancers - Publishers promote mind mapping, train the brain software and books - Psychologists ponder the ancient argument of nature vs. nurture with their patients - Scientists study the cognitive behavioral component of the brain, attempting to decipher its complex processing - Parents and teachers all over the world persevere to make their children ‘smarter’ - Last but not least, religious leaders and philosophers paint and success as one’s destiny or fate Logical reasoning, math skills, understanding analogies, and verbal skills are all areas of academic intelligence. Researchers are constantly puzzled by the fact that while IQ can predict to a significant degree academic performance, and, to a lesser degree, professional and personal success, there is always something missing in this equation. IQ alone has never been enough to predict professional and financial success. Some studies show that at best, IQ contributes to about 20 percent of the factors that determine career success, which leaves 80 percent to “other forces”. What are these other forces? Time Magazine states that, “Emotional Intelligence may be the best predictor of success”, and over the past decade, thanks to the work of Daniel Goleman, Emotional Intelligence (EQ) has come to be seen as a critical component of success. According to Goleman, “People with high emotional intelligence tend to be more successful in life than those with lower EQ even if their classic IQ is average”. The characteristics of an emotionally intelligent person are being able to “motivate oneself and persist in the face of frustrations, to mange and control ones emotions and impulses, delay or even defer self gratification, regulate ones mood and keep distressing situations from hindering ones ability to perform, to empathize and to hope” despite the varying stages of life. A significant difference between IQ and EQ is while IQ stays relatively constant throughout a person’s life, EQ can be learned or improved upon by professional training or coaching. “I am a product of great mentors, great coaching,” says the formidable Indra Nooyi, the 54 year old chief executive of PepsiCo, who says she would not have made it to the top of her company had it had not been for her coaches. The problem with a population obsessed by high IQ is the following: academic intelligence or IQ alone offers virtually no preparation for the challenges (or opportunities) life may bring. This ability to cope or resilience is the key to being emotionally intelligent. Ultimately, what distinguishes these bright individuals from the rest is that their passion for learning transcended the structured environment of their classroom. Their curiosity, sense of adventure, courage, and desire to experiment helped them discover their true passions and strengths, which inevitably led to their success.
