ow that the summer heat has cooled to a memory, it’s easier for us to look at the bright side of that period—the bright green side, that is. The

weather we experienced in June, July and August actually gave a great boost to our fairway turf project, as intended. The hearty, salt-tolerant Princess 77 Bermuda grass

that we used to replace the former fairway grass has grown in extremely well thanks to the hot temperatures. Not only will our fairways look better, play better and enjoy greater health, they will also allow us to conserve precious water resources, as the Princess 77 requires 20-30% less irrigation. The grass will go naturally brown in the winter, which also supports the USGA’s notion that brown is “the new green” and makes sense from an environmental and economic point of view. Hady Canyon Golf Club has established a charitable foundation to provide its members with the opportunity to support a number of local

non-profit organizations. The focus of this 501(c )(3) corporation is to grant financial aid to families in crisis, children in need, the aging and dying, the homeless, as well as charitable groups that promote literacy and education.

In support of this effort, the Shady Canyon Golf Club Charitable Foundation’s Committee is pleased to invite you to the First Annual Golf and Fundraising Event on Sunday, April 29, 2012. Our inaugural event will feature an 18-hole golf outing followed by both silent and live auctions. The entry fee of $200 per person will provide $175 of direct funding to the selected charities. Our goal for this event is to provide a $20,000 grant for each of the designated charities. Members are encouraged to enter a foursome, sponsor a hole for $500, donate a live or silent auction item (vacation homes, jewelry, wine, gift certificates), make a donation in any amount or bid on one of the auction items provided.

Men’s Talon Cup Celebrating Ten Years By Wayne McCollum

Four days of perfect weather at Shady Canyon’s Tom Fazio designed golf course is what Members and their guest were treated to in the 10th playing of the Talon Cup. From its infancy in Scotland, golf has always been about partnerships and pairings. Every other year, golf fans eagerly await the Ryder Cup pairings and unique partnerships among teammates who, every other week of the year, try to beat one another in individual competition. Every day on professional tours and local courses, men and women from all backgrounds are paired up before spending half a day together trying to conquer 18 holes. Pairings and partnerships are as indigenous to the links as putters and pars. Competition among the two-man teams was at an all-time high, but the main theme was mostly about having fun. General Manager Steve Buck and Director of Golf Brian Gunson made sure that every need of both Members and guests was taken care of over the four-day event.

It took months to plan the many tournament events that ran from Wednesday through Saturday. The Talon Cup is always the most anticipated tournament of the year for the men. According to comments, Members wouldn’t have changed a thing--except for a few missed putts. The event kicked off with a practice round on Wednesday, followed by the Stag Night with “knock your socks off” food and wine. It was just an all-around great evening with friends, both old and new. Each team played 18 holes of Better Ball of Partners on Thursday, 18 holes of Modified Alternate Shot on Friday, and 18 holes of Better Ball of Partners with Shamble on Saturday. After the completion of play on Saturday, the Ten Flight Winners and the two lowest runners-up qualified for a 3-hole playoff over holes 10, 1 and 9 to determine the Talon Cup Championships. The hard-fought playoff winners were Lance Brown and his guest, Eddie Garibay, from Los Serranos Country Club. The runner-up went to Chris Smith and Brendan Smith. Third place went to Sanford Edward and Glenn Vigil. The 2011 Gross Champions were to Ron McMackin and

Channing Tam. The other Flight qualifiers were: Chris Reedy and Jim Macy, Scott Carnahan and Anthony Sepci, David Clare and KC Wagner, Chuck Wentworth and Pete Weisel, Ken Potalivo and Mark Hardtke, Mike Noggle and Larry Noggle, Jim Lawson and Jeff Lawson and George Wood and Milt Wood. After the completion of play on Saturday, there was a presentation and reception for the players, spouses and significant others. Fletcher Jones Motorcars put up a new Mercedes Benz for a hole-in-one on hole #8, but no one was able to drive off with the new car. The tournament did have a hole-in-one by Jeff Lawson on hole #17 on Friday (sorry Jeff, wrong hole—wrong day). July 14th, 15th and 16th, 60 two-man teams competed for the Talon Cup bronze trophies, and most are already planning to return next year. The hospitality of the Club was extended to Members and guests in a way that will be long remembered. The schedule of events provided all participants with challenging golf, delicious cuisine, and great fun. A big round of applause for Steve Buck, Brian Gunson, Kirk Manley (on the score board), and Brian Hirth, our Tournamant Committee Chair.

Set under an open-air canopy, 350 Members and their guests were able to visit 75 wineries offering more than 150 wines to taste. Executive Chef Dominique Briaire prepared specialty food stations specifically designed for perfect wine pairings.

Artists from the Judy Schroeder Gallery in Orange displayed their works and painted live pictures, which were auctioned off at the end of the evening. The money raised became the first contribution to the Shady Canyon Golf Club Charitable Foundation. Thank you to the artists and Members who donated wines to the Silent Auction. The FF Reveal Shady Canyon Members were once again treated to an exclusive reveal by Ferrari of Newport Beach. First was the California in 2009, now the FF. The FF is a four-seater that utterly changes the whole GT sports car concept, hailing nothing short of a revolution in the automotive world. Even the most cursory glance at the FF’s sleek, Pininfarina-penned super model profile will tell you that. Guests were treated to tray-passed delicacies, Layer Cake Wine sponsored by Napa winemaker and Shady Canyon Member Chris Radomski, as well as cocktails sponsored by Carl Nolet Jr. from O.C.-based Ketel One Vodka. During the event, artist Bill Patterson captured the energy of the Ferrari brand and the evening’s reveal on canvas. The gracious host ended the event with an exciting raffle of Patterson’s original artwork, which went home with one lucky guest.

Shady Canyon Members Descend on Scotland By Jeff Wallach

Earlier this year, Shady Canyon’s Director of Golf, Brian Gunson, commanded an expedition of eleven Members back to his homeland of Scotland. The group roughed it at such hostelries as The Old Course Hotel in St. Andrews and the Turnberry Resort, Brian’s former place of employment. When not undergoing such daunting tasks as taking their own towels down from the heated towel bars or enjoying shortbread and single malt whisky in their luxuriously appointed quarters, they did manage to play a few golf courses during their visit. Favorites included The Old Course at St. Andrews, Carnoustie, Kingsbarns, Loch Lomand, Prestwick, Troon and Turnberry—an admirable portfolio of some of the best links courses on the planet, including several on most Top 100 lists. When asked about his own personal highlight, Gunson didn’t have to think too long. “Shooting 63 at Kingsbarns,” he replied. But a close second place was the group’s unique invitation to tour the Royal and Ancient Clubhouse in St. Andrews. Members received a full explanation of the roles of the R&A and the USGA in protecting the rules and etiquette of our great game. They also had a chance to ask questions, most of which were more insightful than that of one Member, who inquired whether it might be possible to get a cup of coffee while they were there. Golf goes High Tech The use of video technology and high-speed cameras is a cornerstone of any good instructional program. The ability to show players what they are doing in their golf swing is possibly the fastest way to improvement. A good instructor delivers information to his students in three direct manners. First, the instructor should [verbal] explain the concepts with no confusion. Next he should show [visual] players exactly what they are doing in their golf motion and in different positions during their swing. Finally, the instructor should put players into the proper positions [feel] using drills.

Family Fall Festival All the children who came to our Family Fall Festival picked pumpkins at our Pumpkin Patch to carve or paint for Halloween. Dressed in their costumes, they descended to the Event Lawn to participate in our carnival games, jump in the bounce house, or take a hayride on the golf course. DJ Al Darroch, our Master of Ceremonies, entertained the children with many games throughout the afternoon. The cake walk was a family favorite, with Halloween-themed cakes prepared by our pastry chef. We celebrated the day with face paintings and the balloon artists who created hats and little animals to complement the children’s costumes. Besides our traditional BBQ lunch buffet, we also offered freshly grilled corn-on-the-cob, cotton candy, snow cones and make-your-own caramel apples. Fall has arrived at Shady Canyon.

Oktoberfest You did not have to travel to Munich this year to celebrate an authentic Oktoberfest. Shady Canyon’s Beerhall served the traditional Spaten Oktoberfest beer as well as Hofbrau, Franziskaner, Weihenstephaner and more. The culinary team recreated some of Raphael Tuch’s family recipes,

including Wiener Schnitzel, Bratwurst and other

sausages with Sauerkraut, Roasted Pork and Rotisserie Chicken, Dumplings and Spatzle. The dessert buffet offered handmade German delights, such as Apple Strudel, Black Forest Cake and Linzer Torte. The oompah band got everybody up dancing and singing and had Members partake in our “Stein-Holding” competition. “Ein Prosit, ein Prosit der Gemutlichkeit.”

Some people think handmade pasta sounds so difficult, but it is actually fairly straightforward and simple. This versatile Mediterranean favorite is the perfect fresh italian plate to accompany any glass of wine.

Roasted Vegetable Ravioli Caponata Roasted zucchini and mushrooms mixed with tomatoes, garlic and olives Pasta Recipe - For about 36 ravioli 2 whole eggs 2 egg yolks About 3 cups of all-purpose flour 1 tbsp olive oil 1 pinch salt 1 whole egg with 1 tbsp of water for egg wash In a mixing bowl, place the flour and salt. Separately beat the eggs and olive oil using the mixer paddle or the hook. Slowly incorporate the egg mixture into the flour and mix 8 to 10 minutes, until the dough is smooth (add more flour if dough is too sticky or add a little water if the dough is too dry). Remove dough from mixing bowl and refrigerate. Cover with plastic wrap and let it rest while you prepare the roasted vegetables. Roasted Vegetable Filling 1 large carrot 1 yellow zucchini (yellow skin part only, about ¼” thick) 1 green zucchini (green skin part only, about ¼” think) 1 large portobello mushroom (no stem, remove black shaft) 1 red bell pepper (ends cut and open flat) 1 tsp chopped garlic 2 tbsp olive oil for roasting 2 tbsp olive oil for filling 3 tbsp chopped herb, thyme, oregano, basil 2 tbsp ricotta cheese ¼ tbsp grated parmeggiano reggiano Preheat the oven to 375° F. Season vegetables and baste with olive oil. Roast vegetables separately on a cookie sheet, letting hard vegetables cook longer. You want all the vegetables to be roasted evenly. Remove from the oven and let them cool, then dice all the vegetables (1/4” diced). Place all the vegetables in a bowl; add the ricotta cheese, parmeggiano reggiano, garlic, olive oil and herbs. Mix well and check seasoning; then set aside.

Roll the Pasta Divide pasta dough into 4 equal parts. Using the pasta hand crank, roll the pasta dough to about 1/8 of an inch thick. Set sheets aside and keep covered with plastic wrap or a wet towel. Repeat until all the dough is rolled. You should have 4 sheets of about 6” wide to 30” long. Assemble the Ravioli Take 1 sheet of pasta and place on a flat surface; brush egg wash on top of pasta and then place a tablespoon of vegetable mixture “every 2” (about 1” from either side).” You should have 2 rows. Place another sheet of pasta on top; press with your finger in between each dollop of filling to seal all around. With a round cutter (5cm) cut each ravioli, making sure filling is in the center,. Then one at a time, seal off all edges so that the filling will not leak during cooking. Place ravioli on a cookie sheet and repeat until done. Make the Caponata 1 tsp chopped garlic 1 lb cherry tomatoes cut in half 1 yellow zucchini (yellow part only, diced ¼”) 1 green zucchini (green part only, diced ¼”) 1 large red pepper (charred and peel, diced ¼”) ½ cup kalamata olives (pitted and sliced) 2 tbsp julienne basil ½ cup tomato sauce or marinara sauce ¼ cup olive oil Salt and pepper to taste Heat up the olive oil in a sauté pan, then sauté cherry tomatoes, garlic, pepper, yellow and green zucchini and black olives. When the tomato starts melting, add marinara sauce, julienne basil, salt and pepper. Boil the Ravioli Boil 4 qt of water with 1 tbsp of salt. When the water is boiling, add the ravioli. Return to a boil. Keep ravioli al dente, then drain. Serve Ravioli In pasta bowl, dispose 2 tbsp of caponata. Place 1 or 2 ravioli, then 1 more tbsp caponata, then another ravioli.
