Hawar: Your Quickest Summer Getaway By Melissa Nazareth

While most of my friends are travelling this summer, I’m stuck in Bahrain; which by a lucky twist of fate is not a bad thing at all! Why you ask? Well, last month Al Namal and VKL Group, the new operators of the Hawar Resort hotel invited me, among other media members, to make a trip to the Hawar Islands. The hotel, under the Best Western Brand has finally soft launched their property and the project hopes to materialise by December 2014. We boarded our speedboats at Al dur Jetty and this is one of the best parts of the experience, at least for me! You could also ride the bigger boats which take a little longer to reach. A sea plane project is underway too and visitors who choose to fly the 9-seater plane can reach the Islands in just 15 minutes! Two new luxury boats will be added soon and an exclusive jetty will be set up at the marina near the reservation office. We arrived at our destination in 45 minutes and were welcomed by the really hospitable staff. The resort has undergone both interior and exterior renovations throughout the 50-room property. 50 chalets will be added to make it into a 5-star resort. A convention hall which can accommodate 700 people will be added too.

The Officer’s Inspection

A municipality officer stopped at corps fields in Texas, and talked with an old farmer. He told the farmer, “I need to inspect your ranch for illegally grown drugs.” The farmer said, “Okay, but don’t go in that field over there”, pointing at the location. The municipality officer verbally exploded saying, “Mister, I have the authority of the Federal Government with me!” Reaching into his rear pocket, he removed his badge and proudly displayed it to the farmer. “See this badge?! This badge means I am allowed to go wherever I wish on any land!! No questions asked or answers given!! Have I made myself clear? Do you understand?!!” The farmer nodded politely, apologised, and went about his chores. A short time later, the old farmer heard loud screams, looked up, and saw the municipality officer running for his life, being chased by the farmer’s BIG BULL. With every step the bull was gaining ground on the officer, and it seemed likely that he’d sure enough get gored before he reached to safety. The officer was clearly terrified. The farmer threw down his tools, ran to the fence and yelled at the top of his lungs, “Your badge, show him your BADGE!!”

Moral:

1. Don’t show arrogance while using your authority. Use it with logic and common sense. 2. Let the other person speak if he wants to say something. It clarifies doubts and confusions.

The Monkey With The Wooden Apples

There once was a happy monkey wandering the jungle, eating delicious fruit when hungry, and resting when tired. One day, he came upon a house, where he saw a bowl of the most beautiful apples. He took one in each hand and ran back into the forest. He sniffed the apples and smelled nothing. He tried to eat them, but hurt his teeth. They were made of wood, but they were beautiful, and when the other monkeys saw them, he held onto them even tighter. He admired his new possessions proudly as he wandered the jungle. They glistened red in the sun, and seemed perfect to him. He became so attached to them, that he didn’t even notice his hunger at first. A proud, but less happy monkey continued to walk along the forest trails. The apples became heavier, and the poor little monkey thought about leaving them behind. He was tired, hungry, and he couldn’t climb trees or collect fruit with his hands full. What if he just let go? Letting go of such valuable things seemed crazy, but what else could he do? He was so tired. Seeing the next fruit tree, and smelling it’s fruit was enough. He dropped the wooden apples and reached up for his meal. He was happy again.

Moral:

Like that little monkey, we sometimes carry things that seem too valuable to let go. A man carries an image of himself as “productive” - carries it like a shiny wooden apple. But in reality, his busyness leaves him tired, and hungry for a better life. Sometimes, you just need to let some things go!

The memorable moment in your artistic life. There’s this story from when I was in college. I was coming back home, flying from Dallas to London. There was an American business man, typing away on his laptop immersed in numbers and excel sheets. I on the other hand, had an ink pen and my sketchbook. About four hours later of drawing and sketching, I looked at my piece and thought, ”What did I just draw?” The man next to me said, “That’s not bad, would you sell it for 50 dollars?” “Yes” I answered, with the biggest smile on my face. And that was the first piece that I have ever sold. This gave me the hope that I could be an artist one day.

How did it all start? For as far back as I can remember I have loved drawing. Coming out 2nd in UNCEF’s International Art competition at the age of 10 gave me the confidence to take this on further. It was a scene of an old western cowboy bar, but with all kinds of monsters eating huge lizards. It was intense but pretty cool for a 10 year old. While my friends were in class studying, I was in the playground drawing and I loved every second of it.

Describe your art I’ll break it down into three. Technical: A mix of illustrations, typography, photo manipulations and calligraphy. Visual: My art is vivid in color, sharp in details and almost always contains a message. Style: Always experimenting with style.

What fascinates you? Life, history and freaks of nature, all forms of art, design and creativity, travelling and meeting new people, and learning about new cultures. Let’s add Underground Techno Music to that list.

How did you get to where you are right now? I’m so thankful for the17+ years of experience. Everyday I learn something new and progress a little. I started out like every beginner, working in firms and small studios doing my research from 3D graphics to Arabic typography, researched and went from tutorial to tutorial. I diversified my portfolio with design, branding, digital art, illustration, calligraphy, photography, character design, environmental design, furniture design, and maybe a little more! There’s one thing every artist needs to remember. Always listen to critic and comments, no matter how silly or small.

Tell us about your client base. I have had the opportunity to work with a mixed collection of international, regional and local companies from very diverse industries, like Hewlett Packard, Austin, PUMA, Coca Cola, Saudi Diesel Equipment, Tamkeen, Batelco, DaDeDu, Gulf Air, and many more.

amadan is a time of abstinence; it’s also an opportunity to think about ourselves, our families, and our society - and to reflect upon food and the other bounties bestowed upon us. Of those who regularly reach the back pages of Bahrain Confidential, some will have read my regular “Taste Life” column about food in the wider context. The Holy month of Ramadan is not about starvation, as so often portrayed, Sawm - the Arabic word for ‘fasting’ literally translates to ‘be at rest’. In modern, fast paced times, the opportunity to be at rest is essential for the well being of each and every one of us, providing an opportunity for worship, thanksgiving and self-examination. When we fast, we feel the pains of deprivation and hunger, learn to empathise with the oppressed and needy, and have an opportunity to respond. Fasting is a custom advocated by many religions, in Islam [only] those who are fit and able, are encouraged to abstain from food and drink during the hours of sunlight; those who can afford to, are also encouraged to donate to charity.

“…to provide food, we must protect the land upon which we all depend for our very survival; we have responsibility for stewardship of the land, for wildlife, farm animals and crops; land lost to development is lost forever.” In Islamic countries, during Ramadan, it is expected that communities will provide nourishing meals to all who pass through, irrespective of belief; this year, Mosques, Churches and Sikh Temples in London are working together, offering nourishing meals to people of all faiths. However, a meal alone will only sustain us for a few hours; to provide food, we must protect the land upon which we all depend for our very survival; we have responsibility for stewardship of the land, for wildlife, farm animals and crops; land lost to development is lost forever. Based on the premise that ‘communities and individuals, often on low incomes, can take control of their health and nutrition by gaining self sufficiency in food’, groups around the world are being established to buy land for community farming and

gardening. These groups are building smallholdings, and educating horticulturalists and gardeners, to raise their own animals and crops in small, manageable plots, aiming to end hunger and food related health issues at a local level. For those involved, the initiatives provide access to healthy soil, and a new opportunity for entire families and communities to develop sustainable relationships with food and agriculture. The spirit of Ramadan, being at peace is achievable through food and agriculture for the long term health and well-being of the whole community. Step 6 –Splash your face with cold water to close up all the pores. After applying a moisturising facemask, apply facial oil to your improved skin! The

This miracle oil is good for any type of skin – flaky, oily, or even skin suffering from acne. ong, short, bouncy, sleek for most women, hair is far more than a bundle of fiber. It’s an expression of style and personality. Research also suggests hair and self-image are closely intertwined. If an occasional “bad hair day” can make a woman feel bad, then fine or thinning hair can be a distressing to cope with every day especially in this heat. The average scalp has 100,000 hairs. After growing for two to six years, hair rests awhile before falling out. It’s soon replaced with a new hair, and the cycle begins again. Because resting hairs regularly fall out, most people shed about 50-100 strands every day. So it is normal to find up to a hundred strands on your hairbrush. So what causes thinning hair? It can sometimes be triggered by medical conditions, as well as lifestyle factors. As a starting point, hair loss experts recommend testing for thyroid problems and hormonal imbalances. There are also so many other factors that could be the problem especially living in the Middle East. Wearing a hijab can play its part along with the water. Crash dieting and poor nutrition can add to the problem. Certain hairstyles such as wearing cornrows or tight ponytails can irritate the scalp and cause it to fall out. Be aware that long-term use of these styles can cause scarring of the scalp and permanent hair loss. Stress is another factor along with childbirth. So what’s the solution for coping with thinning hair? One answer is to have a shorter haircut. But what if you don’t want that? Then the next step as suggested is to speak to your doctor. Dilara Nagib trashes the cowardly act of bullying.

D

epression is common among teenagers and defined as feeling worthless, frustrated and unimaginably annoyed with everything and everyone – including yourself. A lot of things can trigger it and one of them is ‘bullying’. From my perspective as a regular thirteen-year old, bullying is just plain stupid. Honestly, I find no other word even comparable to my utter disgust on the subject. Bullying is going up to someone, deliberately hurting them (whether it is physically, mentally, verbally or through the vivid interactions of social media) and gathering up pleasure from their weakness. And to make matters worse, it isn’t just a

that this is avoidable when looking at it from the outside, but inevitable when putting yourself in the picture. Suicide is another consequence of bullying, widespread and tragic! Teenagers, some not even having approached their sixteenth birthday, don’t hesitate for a moment to pick up a razor and slice their wrists. A victim of bullying is generally a person unable to defend him/herself and a bully is typically of a higher status and popularity. Most people who bully are infected with a terrible disease known as ‘hatred’. Bystanders may think they are not guilty as they are not involved in the act but the truth is if they know it’s wrong and choose not to help, they are equally at fault. Trust me, it doesn’t take long to just go up to a teacher or any responsible adult and warn them about the situation. If you’re afraid that the bully will target you for “telling”, you can always send the message anonymously, though I worry for you if your reputation at school has greater value to you than the life of your classmate.

It is obvious that you cannot do every exercise you would do every month. But keeping a systematic routine will help maintain your health and regime.

Control your Intake of Food For most of the gatherings during this Holy Month, you will notice how there will be well-circumference plates with food stacked as high and wide as a mountain! It’s all right to eat, but eat a little bit of everything.

STAYING FIT DURING RAMADAN

Make sure the ‘little’ stays little! While eating, make sure you eat slowly, chewing your food properly, and if you feel full, stop eating. Don’t force yourself to eat more than your stomach can take. After you have devoured your food, have some tea. It helps ease down the food.

You know people tend to be really nervous to exercise during Ramadan? That’s mainly because you’re fasting. That means slower metabolism. And when you break your fast, you’re eating WAY more than you normally would. We completely understand. How could you say no to those various types of kubba, samosas and bakhlavas and all this before the main dishes are served? People who have had an exercise regime before the fasting period tend to break up their routine for 30 days. This can be really unhealthy and can result in a regression of strength and fitness. It’s a huge setback on your cardiovascular and resistance adaptations. Let’s make this really simple. Stopping your exercise for a month is equal to losing four months of exercise.

Control What Goes In Talking about your intake of food, it is always a good idea to keep a track of the benefits of the food you eat. Proteins: stick to lean and complete proteins like turkey, chicken or beef. Carbs: Slow carbs are always recommended, like lentils, hummus, fruits and vegetables. Avoid having starchy carbs like pasta, rice, and bread unless it’s within 90 minutes post-workout. 56 | Bahrain Confidential | July 2014

Exercise: When And What So, people fasting are sometimes in a dilemma. “When should I exercise, what should I do?” It’s a good idea to train at least 90 minutes before Iftar. This is an ideal time as you break your fast soon and will quickly replenish your lost energy. Avoid training relating to speed and endurance during this time. Stick to short, high intensity workouts. Some are:

• 20 second sprint followed by a 2 minute walk (4-5 cycles) • Push ups (10 reps) • Planks (30 seconds and build slowly) • Squats (30 reps) • Bench dips (at least 25 reps) • Spot jogging Fats: Make sure you intake at least 5 grams of fish oil as well as olive oil, almonds, peanuts and walnuts. Make sure you stay away from the saturated fats and trans fats. No Processed Foods: Well that’s just it. NO PROCESSED FOODS!

• 20-30 minute bike ride You don’t have to exercise as hard as you normally do, but at least you are not giving up entirely. Always remember, it is important to stay hydrated whenever you can during this month.

Tell us a little about your background in music and sound therapy. My most recent certification was on ancient and modern methods of healing using eastern and western music. I also have a certification from BBC World and have worked with Radio Bahrain, in the past; so I know how to operate various radio equipments and software. In addition, I have 3 years of experience in Carnatic music (South Indian classical music), a year and a half of experience in Kathakali (a South Indian dance form), 2 years of experience in Western classical music and 4 years of experience in healing through music and mantra chanting. Working with kids at the orphanage in Bahrain through the Royal Charity Organisation (RCO) and other rehabilitation centers, is also a part of what I do. I have been implementing music therapy successfully for almost two years now; in a few months time I will get integrated

What’s your take on the music produced these days? What impact is it having on us? Sound or music can either heal you or harm you. History tells us that up until 1939 any tuning resonating in dissonance to 528 hertz (Hz) was forbidden. During the Baroque era these tunings were gradually introduced in symphonies and sonatas, up till the rock and roll era when such tuning were used and expressed freely. 741 Hz resonating in western music is in dissonance to 528 Hz and suppresses the heart chakra; it suppresses spirituality, human creativity and consciousness to awakening, and promotes the feelings of separation. Use Ramadan as an opportunity to learn: talk to your local friends about what The Holy Month means to them, how it affects their lives, and how they benefit from it. Ramadan also provides a unique chance to accomplish some of your own goals. Instead of complaining about why things are different, try to learn and understand the reason for the difference. Nobody is asking you to fast or follow the rules of Ramadan.

DEPRESSION often surfaces as we may feel lonely, remember the past or things that didn’t work out like we would have wanted them to. When grief overwhelms us we feel helpless, hopeless and stuck. Depression is often decompensated anxiety when our defenses can no longer cope. PESSIMISM is another close relative of depression. Being overwhelmed we often search for what’s wrong, instead of looking at what’s right. Remedy: Actively seek to change these feelings simply by having a filter that emphasises on the good and lets the bad strain through. JEALOUSY comes when we compare ourselves to others and end up ‘less than’ the other. This is often a remnant of parenting where we’ve been compared to our peers with comparisons that are unfavourable. Remedy: In Islam, ‘qadr’ or the concept of predestination aims to stop us from making unfavourable comparisons. We must remember, we are born into our circumstances like wealth, health, looks etc and try and look at the less fortunate, may be view them with the compassion we would like to have.

LOW SELF-ESTEEM often results from comparing ourselves to others and never reaching our standards. We often mercilessly judge ourselves so that others won’t and this colours our self image. Remedy: We must reward our small accomplishments and look at what we do well. BEING JUDGEMENTAL is another nasty one. Sometimes our negative filter gets activated and tries to make us feel better by pointing out the flaws in others.

Remedy: We must try our best to understand the vantage point and qadr of others. We can all be winners. TOXIC RELATIONSHIPS are reactivated as communities come close during this month. We can face this by limiting contact. Remedy: We can perceive them as a dangerous substance. HATRED is a toxic defense mechanism. It’s made up of layers of anger and resentment about things we felt were unjust or unfair. The feeling is toxic for the one who hates because it is particularly heavy and dark and clouds over and invites anger, pessimism, jealousy and others to join. Kempinski’s Bahraini Students Graduate

Students celebrate their graduation

On 12 June, in front of proud family members, 15 young Bahrainis graduated at a ceremony held at the Kempinski Grand Hotel. Gulf Insider has followed the story unfolding from the beginning. In January 2014 Kempinski, with support of Tamkeen and together with Third Wave International (TWI) and William Angliss, one of the top hospitality training institutes in the world, embarked on a new initiative for Bahrain’s hospitality sector – Grooming Bahraini Hospitality Talent programme– established to empower young Bahrainis with professional training in hospitality and provide employment at a globally-reputed hotel group. The apprentices received tutoring in class room setting, as well as practical onthe-job coaching with dedicated Kempinski mentors for each student. The graduates have now begun working in departments such as culinary, front office, food & beverage, reservations and housekeeping. According to Kempinski Bahrain, every hotel in the country is - and has been - struggling to find sufficient numbers of qualified Bahrainis willing to work in hospitality. Mr Puneet Singh, the general manager of former Kempinski Grand & Ixir Hotel Bahrain City Centre explains, “Globally, Kempinski Hotels is committed to developing native talent, whatever the locality. In Bahrain, we just couldn’t find enough Bahrainis with the necessary skills to fill the numerous positions available; therefore we decided to recruit new Bahrainis and provide them with the required skills. Together with the partners we designed a tailor-made training course to give the local talent a stepping stone into one the fastest growing industries in the kingdom.Kempinski started this pioneering initiative but it will only have a major impact if other hotels in Bahrain embrace it and roll it out in their hotels. As international hotel chains operating in Bahrain, it is our moral duty to develop the

human capital of the country hosting us, this is the first step.” One of the biggest challenges in attracting Bahrainis is the cultural taboo about working in hotels. Mr Singh continues “The industry should be marketed to the youth and their parents, and we’re glad to see the government of Bahrain is taking steps towards that. One of the advantages of working in hotels is that employees have so many career options to choose from. When thinking about hotels most Bahrainis first think about food and beverages or guest services; however there are many other fields such as finance, sales and marketing, engineering, meetings and event planning, and so on. Career progression in hospitality can be rapid if employees are focused. Most people who rise to the management level positions in hotels actually start at entry level jobs. By being dedicated and persistent Bahrainis can have wonderful careers in hospitality.”

Troodos Waterfall: Take a safari jeep to this place through all the dirt roads and amazing surroundings and add to the fun. The onfoot trek to the waterfall is something else with the caves and other marvelous structures. Mount Olympus: The safari jeep ride up the mountain on high speed gives you an adrenaline rush. Once on top you feel the temperature drop which is mesmerizing and the stunning view from 19,000 feet above sea level makes Mount Olympus a must-visit. Kykkos Monastery: This is a great place to pick up some authentic Cyprus goodies at great deals. The wine tasting is a great experience too. The interior of the monastery with the paintings and everything and the structure as a whole is breathtaking. Paphos: The beach here is a beautiful – Cyprus is famous for its beaches and when you’re here you understand why!

I

open the terrace door and take a tentative step onto its wooden boards - the whiffof salty sea air teases my nostrils as my ears welcome the sound of waves gently crashing on the shore. All around me tall palm trees, coconut trees -their branches swaying to the mild breeze – mingle in stark contrast to the colourful exotic flowers as I take in the beautiful tropical surrounding. Pure bliss. Paradise. A tray of freshly brewed coffee and crispy croissants – probably ordered by my husband – is beautifully set on the table. Did I mention that I have officially become a trailing spouse? Wikipedia defines trailing spouse as: “a person who follows his or her life partner to another city because of a work assignment. The term is often associated with people involved in an expatriate assignment”. Personally I think a trailing spouse is much more. Yes, we get the perks of

travelling to exotic places and not so exotic ones – we have the help, sometimes the driver, other times a crammed apartment in a bustling city or a beautiful villa by the beach. Our ability to adapt to our immediate habitat goes into full gear the minute we land on foreign soil. Trailing spouses know the happiness of the whole family falls on their shoulder. They have to ensure their children settle into school and make friends; they have to organise the house, the social life, know where to find doctors, plumbers, carpenters, deal with the day to day challenges that a foreign country – let alone a foreign language poses. They are the heroes that make it all happen. And as the family settles into a routine with husband off to work, kids to school, the days turn into weeks and after you have done all the exploring and coffee mornings that you possibly can or want to do, reality sets in and so does the restlessness. Now what? How can you fill your days with meaningful tasks that will give you a sense of accomplishment?

I ponder this thought as I slowly sip my coffee gazing out at the ocean. Should I start a business? Or perhaps pursue my MBA? Maybe I should help at a local charity. How about I write a book? Or learn a language? There are many options available and whatever you decide to follow, it is important you create the right mind-set that will allow you the opportunity to rise to the challenge and enjoy your overseas assignment with all the rich experiences that it offers. Reinvent yourself by choosing to do something inspiring and enjoyable that will give you a sense of satisfaction and lead to a more fulfilling life. I stand up, suddenly energised by these beliefs. Yes. I will start a new business venture. I will cherish my time on this idyllic island. I will do something I have never done before and gain knowledge and experience from it - but for now, I think I will take a little stroll on the beach. Last month VIVA unveiled its new VIVA BH mobile self-care app that offers customers unrestricted freedom to access and manage their accounts and stay connected with VIVA’s latest products and services. We also introduced a new gateway to enhance the cinema experience of movie fans with the launch of the cinema.bh site enabling the online purchase of tickets and much more! So we ventured into asking two well respected digital influencers to test both the VIVA BH app and the cinema.bh site and share with us their experience. This is what they told us!

Ever since VIVA Bahrain launched its Self-care mobile app, managing my bill, plan and account became easy and more convenient. All of the information about my VIVA account that is accessible online is now just a quick tap and a sign-in away with their Self Care mobile app – though I wish VIVA named its app something catchy like “My VIVA” or “VIVA Connect”. As a user of both, Android and iOS devices, I was happy to find out that VIVA Self Care app is available as a free download through Google Play or the iTunes App Store. The app is also available for free through Windows Phone Ali M Alsabbagh Store and BlackBerry App World. I hope that eventually, the VIVA Self Care mobile app will come preinstalled on devices. Anyway, here are my reasons why it’s a must-have for any VIVA customer: 1. My usage is available at a quick glance. The summary screen shows my summaries for minutes, messages and data usage. Then in a click of a button, I can easily pay my bill. 2. Everything looks and feels easy. Zain Shop Surprise

Zain Bahrain launched a unique customer reward initiative across its retail outlets. The Zain Shop Surprise initiative randomly picked customers waiting in line were and treated to a reward based on the transaction made. The element of surprise was how the announcement was made; once the customer’s queuing number was called out by the queuing system, a traditional Bahraini band performed while Arabic coffee and sweets were served to the customer. The rewards included free top-ups, bill payments, SIM replacement, handsets and much more. The initiative was held as Zain Bahrain celebrated the launch of its new and most modern network which promises super-fast download speeds, stronger coverage, and a remarkably better experience along the latest 4G LTE technology and HD Voice.

Air Arabia’s Android App

Air Arabia launched its smartphone application on Android. The app which has been available on Apple iOS since last year will now also be available to download on all android smartphones through Google Play. The free to download mobile application allows passengers to purchase tickets, review and amend bookings, as well as select seats using their smartphone. The app also provides customers with connectivity to the airline’s website and call centres, as well as offering an abundance of travel information.

RCSI Bahrain Graduation

More than 240 future doctors and nurses have graduated from a conferring ceremony at the Royal College of Surgeons in Ireland – Bahrain (RCSI Bahrain). For the fifth consecutive year, the Conferring was held under the patronage of His Royal Highness Prince Khalifa bin Salman Al Khalifa, the Prime Minister of Bahrain. This year 81 candidates from 15 different countries were conferred with Degrees in Medicine. There were 135 degrees in Nursing and 26 Masters Graduates. 186 of the graduates were from Bahrain.

ave you seen the new Jaguar XF around town? I have, and EuroMotors (Jaguar Land Rover) recently gave me the opportunity to test drive the vehicle for a day, and this was my experience. The Jaguar XF is a very attractive ride. One might find themselves asking, what’s so special about a Jaguar, or what is all the fuss about? I’ll start with the technology as it is most interesting. Keyless, the XF turned over easily, purring softly as long as the key was in the counsel. Park assist helped me out of a tight crunch at the dealership. There was not a moment when the car was not alive as it has sensors on both sides and even front and rear ends. As I pulled out onto the Sitra

Although old-school turning the head seems more practical (which I do religiously), really the car handles it for you, aiding you and ensuring that you have a stress free ride. The interior boasts leather which was very hot upon entry, but not for long as the air-conditioning system brought the temperature to a wonderful cool in a very short time period. Through the highways the XF glided, and the next part of the ride was very interesting because it was my favorite. The XF’s interior is oh-so comfortable but for a reason I found difficult to describe. I felt like a pilot safely navigating the streets. While driving you feel comfortable, safe and engaged. Even on slightly rougher terrain, the suspension system really enhanced the experience and somehow the shape of interior felt, well, cozy.

The XF also boasts a great sound system, to which I took the liberty of playing one of my favorite CDs. Crisp and clear, the system was both easy to use and set. Bluetooth allowed me to work while in the car and the drive assist kept me forewarned about vehicles in potential blind spots. All in all, it was a wonderful and mature experience. The XF is well thought out for comfort, style, class and would suite anyone looking for a convenient, efficient and luxuriously comfortable vehicle. Butternut Squash, Potato & Chickpea Stew with Fresh Coriander & Mint (Serves 4) This dish is easy to prepare, low in fat and a lighter alternative to serving Thareed for Iftar during Ramadan. If you are not a butternut squash fan, replace with carrots.

Ingredients: • 2 tablespoons of olive oil • 200g of thinly sliced red onions • 3 garlic cloves, peeled and crushed • fresh ginger (1 and 1/2 inch piece), peeled and finely chopped • 1 or 2 small green chili, finely chopped • 425g can chopped tomatoes • 3 tablespoons tomato puree • 500ml of chicken or vegetable stock • 500g of butternut squash, peeled, seeded and cut into chunks

• 100g of fresh baby corn, thickly sliced • 1 extra tablespoon of chopped mint, for garnish • 2 extra tablespoons of chopped coriander, for garnish • sea salt and freshly ground black pepper, for seasoning

Method: • Heat the olive oil in a large sauté pan on medium heat, add the onions and cook until softened. • Then add the garlic, ginger and chili; cook for about a minute stirring continuously. • After that, add in the chopped tomatoes, tomato puree, chicken or vegetable stock and stir together. • Now, add in the potatoes, butternut squash, mint, coriander and dried lime. Season with some sea salt and ground black pepper. • Bring the contents of the pan to a boil and then reduce heat to a simmer. Half cover the pan with a lid and cook for about 15 minutes. • Next, add in the chickpeas and fresh baby corn and cook for a further 15 minutes or until the potatoes are tender. • Check seasoning and add more salt if necessary and discard the dried lime.

Taste Life! Pomegranate molasses is a common ingredient in Middle Eastern dishes, says John Ridley.

R

uby red pomegranate molasses has a uniquely, deep luxurious, sweet and sour flavour and tannic tang from the bitter pith that houses the juicy red seeds. It’s a common ingredient in Middle Eastern dishes; try it as a salad dressing, or in baked Kibbeh - a perfect dish for Ramadan. Kibbeh has been a popular dish across the Middle East since the days of the Assyrian Empire (some 1000 years BC), but is most common in Lebanon, Syria, and Palestine where women who made the best kibbeh were said to possess God given ‘kibbeh fingers’. This is a gluten free variant of baked Kibbeh, substituting bulgar wheat with quinoa, is best baked in advance, then reheated a day or two later or is equally delicious eaten cold with a fresh salad, tomatoes and pickles. Serves 8 For the base - 125 g white or red quinoa - 1 tsp lemon juice or vinegar - 120 ml chicken or vegetable stock - 1 medium onion - finely chopped - 500 g minced lamb - lean - 1/2 tsp sea salt - A good grind of black pepper - Juice of one lemon - Lemon rind - grated - 1 tsp sumac - A handful fresh coriander leaves - chopped - 1 tsp cinnamon - 1 tbsp tomato puree

For the topping - 500 g finely sliced onions - Beef fat, or oil for frying - 50 g Pine nuts - 1/2 tsp ground cinnamon - 1 pinch ground allspice - 50 g crushed pistachio nuts (not salted) - 2 tbsp pomegranate molasses or lemon juice Method • Soak the quinoa overnight in cold water with 1 teaspoon vinegar or lemon juice. • Drain and rinse the quinoa, add to the stock and gently cook until all the liquid is absorbed, drain and leave to cool. • Add the onion, meat, quinoa , lemon juice, lemon rind, salt, pepper, coriander, sumac, cinnamon and tomato puree to a large mixing bowl, then mix ingredients thoroughly by hand. • Cover with cling film, refrigerate, and leave for 12 to 24 hours. • Oil the base of a 25 cm ovenproof baking dish and firmly press meat mixture into it. • Flatten with your hands and rub a couple of tablespoons of oil over the top.

• Cut into nine wedges (do not remove from baking dish). • Bake for 30 minutes at about 180ºC, until the meat juices are visible on the surface of the mixture, remove from the oven, and allow to cool. • Fry the cinnamon and allspice in a couple of tablespoons of beef fat or oil, until the aroma is released - stirring frequently • Add the onions and sauté until they are sweet and golden. • Add pine and pistachio nuts and fry, stirring until lightly coloured. • Spread the onion and nut mixture over the pre baked base and leave to cool. • Drizzle the pomegranate molasses over the top. • Cover with cling film and refrigerate for 12 hours. • When ready, bake for one hour at 180ºC. • Serve with green and tomato salad and labneh or Greek yoghurt. Vegetable Soup

Bukhari Rice

You will need • 1 zucchini, grated • 1 carrot, grated • ½ cup green beans, chopped length-wise • 1 cup cabbage grated • 1 cup cauliflower, grated • 1 cup oats (Quaker Oats recommended) • 5 cups of water • 1 cube of chicken soup • 1.2 tsp black pepper powder • 1 ½ tsp salt

You will need • 2 kg chopped mid-size meat cubes • 4 cups of Bukhari Rice • 4 onions, chopped length wise • 3 carrots, grated • 3 tomatoes grated • 8 cups of water • ½ cup raisins • ½ cup almonds • 1 tbsp tomato paste • tsp cumin powder • 2 tbsp salt • 1 tsp cinnamon • 1tsp black pepper powder • ½ tsp cardamom powder

Let’s Get Cooking • Boil the water with the chicken soup cube and add oats along with the black pepper powder. • Add all the mentioned vegetables gradually with salt, and allow the soup to cook on low heat for half an hour until all the ingredients blend well. • Serve hot.

Let’s Get Cooking • Wash the meat cubes and sauté them a little in oil and keep aside, • Sauté the onion, grated carrots. Once they are well sautéed, add the meat and mix everything together. • Add to the mix the tomato paste with the tomatoes, salt, black pepper powder, cardamom powder, cumin, cinnamon and water and leave it to cook on low heat for an hour. • Add cooked rice to the meat and leave it until it sets. Make sure to not turn over the rice. • Peel almonds and sauté them along with the raisins. • Put rice in a serving dish, arrange the meat on top of the rice, garnish with almonds and raisins and your Bukhari Rice is ready to be devoured.

Taxis are easily available in the capital, Manama, and have meters but be sure to make the driver use the meter. 99% of drivers won’t switch on the meter and will try to charge you double the legal fare. Beware! Confidential Tip: BD1 per five minutes in the cab is the most you should pay for an un-metered journey. Avoiding Offence

Generally speaking, very short skirts and tight midriff tops are frowned upon in public, although acceptable by hotel pools, in private clubs and on the beach.
