Letter I was browsing the net the other day when I came across a New Year resolution meme. It was about how we make promises to ourselves and don’t keep them or just carry them forward to the next year. I admit they’re funny because they’re true. But is it right to break resolutions? Is that how much we care for ourselves? We’ve come to the end of yet another eventful year. At the risk of sounding cliché, I must say that time flew and it’s been a rollercoaster ride. We’ve seen the good, the bad and the worse but have come out of it all, stronger. Two of the highlights at Bahrain Confidential have been our new look and of course our online presence. We launched our website earlier this year and have been going big on social media as well. The response we’ve received so far has been great and we’re hoping to interact more with all of you, our lovely readers. Keep filling us in, on your thoughts about our magazine, what you like and don’t, what you want to see in it and not want; we love feedback! Many of you have been complimenting us for our fresh layouts, designs and articles. We can’t thank you enough for all the love we’ve received, not only in 2014 but over the years.

So, for one last time this year, we bring you yet another issue full of fun and magic. For our main story this month (Pg 52), we spoke in an exclusive to Ali Sharaf, a web designer turned photographer who decided it was about time celebrities who do shoots for fashion and beauty brands get to enjoy the lime light. He believes (and we agree) that most brand shoots are about the products and the people don’t really show. ‘Stars With Ali Sharaf 2014’ is a project that explores the personalities of 14 famous celebrities in Bahrain. KEVIN Jenny Thomas interviews local music artist.

Music has always been my weakness. Walk into our office and you will know what I mean. It sparks creativity. So, when I met Abraham Mathew (Kevin), we got to talk about his music style, dream collaboration and bizarre things… How old were you when you started playing?

Probably around the age of 12 or 13. My mom was the one who forced me to learn the piano. The first year, I didn't like it, second the same. Then the third year, I saved up, decided to buy a piano and started making my own music. It started off as just sound, but it was a big step for me. It was a slow process, and I was beginning to love it. You know how everyone has a safe zone; well music slowly became my safe zone. The ideas and inspiration just kept on coming. The first time I recorded a song was when DJ Kevin saw me perform and was so impressed by it that he pushed me to record three songs and he even aired it on the radio! Definitely a proud moment for me.

Why music?

I think music makes everything better. It is therapeutic. I enjoy it and if it were my permanent job, I would do it happily every day! It’s a long process, but I know I’m on the right path.

What would you say your music style is?

Well it keeps evolving. It is around the genres of pop, rock and indie. Add instrumental somewhere in there too.

If you could collaborate with anybody, who would it be? Oh! I would love to work with Ed Sheeran.

The time when you felt that you made a difference or impacted somebody.

I remember there was this one time when I was playing at a lounge and everybody was on his or her phone, chatting etc. There were these two guys who kept moving to my music. At the end of my gig, one of them came up to me and said, “ Thanks man, I really needed that today”. That is why I play- to be able to help or move a person.

“A chef had recently told me that a food picture in a magazine made him crave it so much that he went and tried the dish. You know the feeling when your work has that kind of impact on the audience. I do, it makes me a very happy man.” Meet George Raphel, a simple guy born in a little town in India who earned his own photography crown. He had once decided to become a chef and then moved on to his passion for the camera. He has now combined his two interests and also ventured out into new and challenging areas of photography. Journey With The Lens

I’ve always admired sketching and painting. It’s probably one of the most beautiful mediums of expression. That being said, I must admit, having an easier access to a camera in high school, more than paints and brushes did change my perspective of art. Photography had become my preferred creative journey. It’s a talent that helps you understand yourself better. The opportunity to create something extraordinary out of just a pair of lens did give me quite a rush. My options were limitless. I could capture art, expressions, people, moments and movements. Once I began taking random pictures I realised this was what I wanted to do. When people say inspiration is everywhere, it is so true! You can be inspired by nature, the books you read, or just even by your everyday life. It’s also the drive to succeed. Being passionate about your profession is important. The minute you let complacency sink in, you know you’re going to compromise on results. Personally, I want to look at myself in the mirror each day and be proud of my achievements. Like the saying, “A picture speaks a thousand words,” I want my photography to do the talking, to document people, travel and life. Since I’m also passionate about food styling and food photography, I sort of (well, definitely) aim to have my pictures tempt and lure you into trying out the dish, which come on, isn’t bad at all!

I want my pictures to reflect my passion, enthusiasm and abilities. Along with embracing the edginess and originality of each photo, I want them to be drawn into the character, the landscape or just enjoy the mood of the picture. It’s how I express myself best. I’ve started my own freelance career in the island and I’m currently working on wedding and fashion photography. But then, my love for food kicks in and I start taking pictures of that too (hey at least it’s not the selfie kind!) A good food picture has the power to even rev up your appetite.

Stars With Ali Sharaf 2014

By Melissa Nazareth Bahraini photographer, Ali Sharaf explores the unique personalities of 14 famous celebrities in the Kingdom.

A

s a journalist and former events’ executive, I’ve been part of quite a few photoshoots and organised some fashion shows too. In every one of them, we always focused on the product being advertised; the SUV, the clothes, the make-up more than the model or the celebrity. Ali Sharaf wanted to turn the tables around and bring out people’s personalities. “I thought of an idea unique to Bahrain where we have a photoshoot about the people and not make-up or fashion,” he said. An Electrical Engineer by qualification, Ali started his first job as a Web Designer twelve years ago. “I was interested in design and trained with a

few friends. I then moved on to becoming a Graphic Designer, Senior Director and Creative Director. During that last stint, I met a fashion designer who had this shoot and I was inspired to try my hand at photography.” A self taught photographer, Ali has been freelancing for the past five years. “I started working with models and then wanted to move on to celebs,” he said and this is another reason Ali conceived the idea for the shoot. We further discussed the shoot and I asked Ali to describe some interesting personalities he worked with. “All of the celebrities were so down to earth and that was what stood out for me. We’d think they would be stuck-up just because they are famous but they

were not. We’d go out for dinner sometimes and in fact are still in touch.” When asked if any of the frames during the shoot were staged, Ali replied with a no. “The photographs you see are all the real personalities of the celebrities.” Ali said that time was one of the biggest challenges they faced. Coordinating a team of 30 including the celebs and wrapping up the shoot in just over a week, now that’s something! “Also, I didn’t know the celebrities and so I sat down with each of them, we had a chat and I got to know them. We also had questionnaires,” said Ali who always digs deep into his subject before any shoot so it’s easier when they’re in front of the camera.

Ali has been receiving requests to conduct workshops, for a while now. Though, he didn’t, until recently, as he wanted to wait until he was ready and had achieved all his career goals. “My recent workshop was successful,” he said, “and focused on lighting techniques, preparing for shoots, pre and post production aspects among other things. There were participants from Saudi, Oman and Dubai in addition to Bahrain.” Ali has expanded his portfolio from Bahrain to other countries in the Middle East and now intends to go international. He let us in on a project that is underway. “This one’s going to be between Dubai and India,” he said. Ali recalled how the economic crisis hit Bahrain just as he left his secure job and moved on to freelance photography. The shift had happened after 8 months of research and study. Though he was apprehensive, his mentors around the world asked him to stick around and Ali is glad he did. Ali gives a lot of importance to team work. “I noticed how quite a few

when you expand to large scale projects it’s all about team work.” Ali is happy to have met his team members. Though he didn’t know all of them initially, they are now friends and Ali believes that’s the best part about his job. “I meet a lot of creative and talented people,” he said, “and today, more than ever, it’s all about exchanging knowledge and information.” Ali believes in keeping things classy, elegant and simple. “Most of the celebrities didn’t expect to see me the way I am,” he said. “They expected to see a big guy but when they saw me they were like hey, you’re like a kid (chuckles).” Through ‘Stars with Ali Sharaf 2014’, he hopes to promote Bahrain and the local talent. “Bahrain is black and white with oil and trade,” he said, “we creative people are just trying to show the colourful, artsy side to the island.” I couldn’t agree more with him! As events go, The Vogue Fashion Experience held last month was a top one. Ok, it did help that from the moment my business class ticket arrived – I knew that I was going to be spoilt rotten and that’s exactly what happened.

he Dubai Fashion Experience was originally a one-night event that started last year. But due to the incredible success, it was extended to three days this year and jammed packed with everything a fashionista would want on their Christmas list. Donatella Versace, Roberto Cavalli, and Naomi Campbell were among the high profile guests last year. So I couldn’t wait to see who I would be rubbing shoulders with this time.

The celebrity line up didn’t disappoint either. Lana Del Rey, Ciara and model Karolina Kurkova were among the star attractions along with renowned fashion writer Suzy Menkes, the International Vogue Editor, Vogue Italia’s Franca Sozzani and many designers including Alberta Ferretti, Philipp Plein, Cavalli, Emilio Pucci’s Peter Dundas and Massimo Giorgetti of MSGM. The three-day celebration was held in collaboration with Vogue Italia and Emaar and I should

imagine a small fortune was invested into making it a truly memorable experience. On entering my hotel room (which just happened to be one of my favourites due to Dubai Mall literally being next door)- The Address, Down Town. I couldn’t miss the mountain of gifts that had been sent by sponsors making me feel like a true VIP. The first night consisted of a fashion show held in the Dubai Mall and hosted by supermodel Karolina Kurkova. Eight international designers showcased

their Spring /Summer 2015 collection. The show was funky! To further enhance my VIP experience, entry was by invite only and although I didn’t quite make the front row, I had a better view than the 1000’s of shoppers clambering to get a look from over the banisters from the levels above. The designers included Stella Jean (Italy), No3 Design by Bushra Badri (UAE), Miuniku (India), Asudari (Saudi Arabia) and whose collection was extremely wearable and one to look out for, J. JS Lee (South Korea), Christopher Esber (Australia), Piccione.Piccione (Italy), Madiya Al Sharqi (UAE). Further Italian fashion brands and exhibitions were on display at the Fashion Avenue and open to the public. The Scouting Show of ‘Who is Next’ was held daily and organised by Altaroma in collaboration with Vogue Italia and celebrated its tenth anniversary this year marking its first decade of promoting talents who have been produced exclusively in Italy. On the Friday, it was the official opening of the international Talents Showcase and Fashion Talks and held at the Armani Hotel. Twenty of who are considered to be the upcoming international designers were present and their collections were on display and available to discuss them with the public and journalist and possibly future investors. In the afternoon, a number of talks and workshops were held. The first interview was by Franca Sozzani, Editor-in-Chief Vogue Italia and Suzy Menkes, International Vogue Editor on ‘New Generation in Fashion’. Emilio Pucci, Creative Director, Peter Dundas and Philip Plein followed afterwards. You could not move as the room was packed silly with international journalists and guests. I eventually slipped away to stretch my legs with a little bit of power shopping. The afternoon was followed by a Brazilian barbeque, at The Address Hotel, Dubai Mall. On the Saturday, more talks were held by designers Alberta Feretti, Roberto Carvelli and Senior Editor Vogue Italia, Sara Maino. Once again it was followed by a more personal power shopping and yes I haven’t dared to look at last month’s bank statement yet! Throughout the three-day extravaganza, a number of stores held activities for shoppers to enjoy. At Thomas Pink, a stylist offered style tips and presented the brand’s latest collection. The Emilio Pucci store hosted a styling workshop to show how you can style the Pucci scarf in multiple ways. Alexander McQueen brought in special haute couture gowns especially for VFDE and displayed them in the store. S*uce hosted a preview of a collaboration between Zayan, The Label and accessories brand Shourouk. Basically anyone who knows their designers and likes their fashion was in HEAVEN and could attend most events for free.

Shoe lovers paradise

Level Shoe District hosted its own VFDE extravaganza kicking off with a performance by British new-soul singer Laura Mvula on the opening night. Over the next two days, they hosted numerous events including the Virtual Shoe Museum exhibition and shoemaking masterclasses. It was a great experience and I’m quite confident that it will eventually be extended to a week. I also had to invest in another suitcase as every time I got back to my room there were more gifts. Plus after seeing some amazing fashion – I did a lot of shopping myself!

I

t’s a glorious cold and sunny winter’s day; children play ball whilst their parents meet friends, chatting over coffee; the gentleman in the refreshment kiosk knows me well and provides regular cups of espresso and bottles of cool water. Just behind is the Colosseum, tourists stand in awe, looking at the magnificent Roman building; the bustle provides a constant background noise, loud but not imposing. Fresh air, the magnificence of Rome, watching people, and taking the opportunity to listen to music all help to inspire creativity that a soulless concrete box (also known as an office) never could; but does writing in the park whilst listening to music actually make me more productive? Without a means of cutting out the background noise, I find it difficult to focus on work in a noisy workplace, especially open offices; I’m not alone, noise reduces productivity. Those who work with music, tend to perform better than those who don’t - the monotony of production lines was often eased with background music, now, for many, considered part of the work place environment. Music, following regular patterns, affects our mood and behaviour; military music has always been used to instil a

Total silence can be equally off-putting, a moderate noise level does, for me at least, improve creativity; classical music in the background appears to be the most effective. Some avoid music altogether, claiming they are tone-deaf. Actually, I doubt that anyone is tone-deaf; when my Mother phones me to say ”Hello”, I know who’s calling and the mood she's in. Being tone-deaf, I would not be unable to hear the pitch of the engine of my car and know when to change gear; nor could I distinguish between somebody from Manama and somebody from Rome. Having spent so many years working in uninspiring soulless offices, I have no doubt that my creativity increases with classical music playing in the background, perhaps a pair of headphones are not as distracting as some think. t’s been a busy time at work, lately, because the festive season is next door. Hey! Not that I mind it; busy is good. Though, sometimes I feel I just need a break. Recently, Rimal Spa at Mövenpick Hotel Bahrain invited me to try their relaxing treatments and I happily said okay! The entrance to the spa is on the ground floor. The spa’s interior is luxurious and stylish, and at the same time warm and welcoming in a simple, non-cluttered, Zen like way. The fragrance of the many products, once you step in, and aroma of the teas in the ‘relaxation zone’ are tantalising and inviting to say the least…before you know it, you’ll be wishing you were cocooned in a fluffy white robe and heading to the hammam. First, I took a tour of the spa with Daniela Nikolic, the Spa Manager. There are segregated wings – relaxation zones, hammams, treatment rooms – for men and women. Each of the 12 treatment rooms is multi-purpose, complete with in-room showers (saves

you the trouble of walking in and out of your room!) and beds. There are also three double rooms that can be used by couples and friends and two hammam suites. Tricia Collins, the Spa Consultant told me how everything at Rimal Spa is tailored to suit guests’ needs. For instance, I was asked if I was experiencing any pain or discomfort in any specific area of my body. Then based on my feedback and other details like my skin type and requirements, I was advised a facial and body scrub. Further speaking of personalised service, my feedback-form gave me a choice between Classical and Spa music! After I filled the form over a glass of the spa’s refreshing, signature iced tea, the treatment began. We started with the body scrub followed by a short steam session to open my pores. After that, a warm, soothing shower and I was ready for some moisturising. My therapist gave me a massage as she applied the moisturiser, undoing every knot in my body.

We then moved on to my facial. I remember feeling thoroughly relaxed as the bed beneath me warmed up (thermal beds are the best!) and my feet were elevated - the beds have an arrangement to allow that - to enhance blood circulation. A number of organic, halal-certified products by VOYA were used on my skin accompanied by a massage and steam treatment to open my pores. My Journey Into Bahrain’s Health And Wellness

Osteopathy is an old-school practice and people tend to question its credibility to medicine. But, Bahrain has given me the chance to prove that osteopathy is indeed a necessary and helpful practice for people.

grew up in Bahrain since 1971; studied here and continued in the UK where I qualified as an osteopath in 1984. I got married and returned to Bahrain, where I had both my children. In 1992, I left Bahrain and continued to practice osteopathy in Australia till my return in 2009. I first envisioned osteopathy in Bahrain in my early years back when I was a young graduate. However, the journey began in 2006 when I came down to Bahrain on a visit. I continued to come and go for the next three years. The need for osteopathy became quite evident to me when many expressed wishes to have me stay and practice in Bahrain. In 2009, I moved to Bahrain to work towards this goal. It has

Cucumber Grapefruit and Mint Water

So what you all know is that grapefruit is the fruit to have if you wish to burn fat, but cucumbers help in avoiding water retention. You can add lime or lemon to this detox water if you want to go all out. Add half a grapefruit (sliced), half sliced lemon, half cucumber sliced and a couple of mint leaves. For optimal results, leave the ingredients with the water for couple of hours. This way all the goodness is in the water and it will help you remove those toxins that make you feel sluggish.

Everyone has heard of the benefits of aloe on your hair. But things get interesting when you add them to your water. It helps in circulation and digestion; it increases your energy and eliminates fatigue. All you have to do is split the leaf down the centre and remove the gel. Mix the gel with water and lemon in a blender and process for, say about a minute and your aloe water is good to go.

he day started, quiet and slow and as the weather cooled down, Bahrain International Circuit became busier and livelier than ever. Some really good music set the mood for the evening. There were so many people dressed up as characters from Manga and Anime to Marvel and fairytales…the costumes were, undoubtedly, outstanding. I made my way down each blue-lit corridor until I arrived at a new, wide room. I decided to find out what was going on when I heard the chant – “Troy! Troy! We love you Troy!” – and naturally, being a complete non-gamer and by this point exhausted like a fish out of water, I thought to myself, “Now, who’s this Toby?” I thought the name was Toby, for a good ten minutes. Somehow, I managed to squeeze myself to the center of all this excitement about Mr Baker and let me tell you, it was not comfortable. I was in the middle of sweaty people dressed in strange outfits and, gosh, I was so utterly lost! After a few moments of being shoved and poked at, the crowd got excited again and so I knew something was about to happen. That’s when I heard people whispering, giggling and gasping, and suddenly a man, seven feet tall and dressed in black came striding through, smiling

and waving. There was a moment when I, Dilara Nagib, was exactly four and half centimeters away from Troy Baker! While he talked to the crowd, at one point he looked straight into my camera’s lens which I’ll admit, was thrilling though at the time I still had no clue who this guy was. The Cosplay competition was being held in another area and I nudged my way to one of the initial rows where I began capturing the biggest even of the night on my phone. I spoke to Zahra Kazerooni, Founder of Art Shack. “This event is pretty awesome and everyone looks great,” she said, “honestly, I love the costumes!” A cheerful crowd stood behind barriers, less than two meters away from Naomi Kyle and Julia Voth. They grooved to the loud music and were only visible through the neon disco lights. Everyone was cheering, screaming, clapping and supporting the contestants as they walked out onto the big black stage and showed off their fantastic costumes. In the middle of this entire gala, there was me, standing quite awkwardly, not knowing who on earth was in power of the stage, but knowing that I was sure having a great night! Dilara Nagib is 14 years old and currently studies at St Christopher’s School. She enjoys reading and writing in her spare time, and aspires to one day become a professional columnist for a reputed magazine in California.

Stories Of A Trailing Spouse Maria Sorger explains the term 'Trailing Spouse’.

A

number of people have mentioned to me that, whilst they do enjoy reading my articles they are nonetheless annoyed by the term Trailing Spouse. To them it is a derogatory term that invokes images of passive women enjoying coffee mornings and idle activities, rather than strong minded individuals who have embarked on an exhilarating yet difficult journey. Fact is: We have chosen to follow our husbands, to be supportive partners and together explore a different culture and way of life. Fact is: We hate to be known only as someone’s wife or mother as though our personal self has been absorbed by our family simply because we have no other impressive professional title such as General Manager, Director etc. Fact is: We need to come to terms with it. We need to ask ourselves the reason why a title is so important. Is this what defines us? We must remember that no one is able to make us feel a lesser person unless we allow them to.

Why then are some of us upset by the term Trailing Spouse? I believe it is because the word trailing signifies being behind and we women do not like to be associated with being behind anyone. After all, we are at the forefront of our family’s success.How about we change our mindset and turn this negative inference into a positive one as is the case in the saying: ‘Behind every great man is a woman’. We are the strength lurking quietly in the background, behind the success of our family. Perhaps if we looked at it this way, the term Trailing Spouse would not feel so undesirable anymore. Or maybe it’s the fact that we are not in a workplace environment but are put in a situation of a spouse follower which, probably at the time the decision was made, we felt it all sounded exciting but as soon as reality hit and we found ourselves at home alone, the first thing we asked was why did we follow our spouse. It’s probably then that the truth dawned on us and we thought – I am a follower. Possibly, the best course to take is to go out there and do something

significant, turn the situation to our advantage and become a leader in our own right – don’t bother with other people’s opinions. We need to learn to develop our own self-worth from our own values, knowledge and beliefs rather than from the society in which we live. Would another title such as ‘Expat Wife’, ‘Roaming Spouse’ or ‘Corporate Wife’ make us feel better? I don’t think so – it does not really matter what other names are bestowed on us, we alone can define ourselves from the inside out. It is a difficult step to take but we must bear in mind that no one else can or will do it for us. As Nelson Mandela rightly said: “One of the most difficult things is not to change society, but to change yourself.” Maria Sorger is a marketing professional and MBA graduate. Fatema Abdulaziz and Fatema Ahmed, Computer Science graduates from University of Bahrain have developed an app to assist job seekers registered at the Ministry of Labour, in their search for jobs. The app and website are tailored to facilitate not only applying for jobs but also to digitalise the process to make it more efficient and easy for both parties – the job seeker and the Ministry.

Who can use it?

The mobile app can be used by job seekers registered at the Ministry of Work. The website can be used by employees of the Ministry and job seekers registered in the Ministry of Work. Both are aligned to the rules and regulations of the Ministry of Work.

Platforms: Android and iOS based. The

application will be linked to the Ministry of Labour server and have access to their jobs’ data base.

Current Status: Currently they have created

Phase 1 which is a dummy app that served as their final University project. They won ‘Best Senior Project in Computer Science’ for the app at the University of Bahrain.

Relationship with VIVA: The Ministry

recognised their project and with support from VIVA the ladies will now deploy it. VIVA will assist by giving them the resources needed to turn this project from a

dummy to reality. With the technical assistance from VIVA they will be able to enhance the application and do a full roll out.

Why did they create it? To assist

unemployed graduates and others in their search for a job and to digitalise the process that is currently undertaken by the Ministry of Labour.

What can you do with the Job App? Search and apply for jobs • Create an account – the Ministry provides a password to access the account • View listed jobs that match the profile of the job seeker • Apply for listed jobs and follow up on the status of the application • If the application is successful the app allows you to view details of appointments for future interviews

Abu Dhabi hardly has a reputation for being the party capital of the Middle East. So it’s quite hard to imagine it attracting a host of celebrities, models and seriously rich business people for a weekend. Unless, of course it was the F1! The race not only attracted racing drivers, fast cars and fans to the country. But also hard core party lovers and of course there was only one venue to be seen at – The Amber Lounge.

itled as the ‘Ultimate Party’ by many magazines, I was fortunate enough to be invited and there was no way I was going to turn down such an offer when I discovered my invite was worth a crazy BD2,488 for the night! So what did this amount of money buy? A ‘Classic’ table, a personal waitress on hand to fill my flute with as much champagne and other beverages that I could consume from 11pm – 6am in a seriously cool venue, with really good music and a crowd of people who thought they were seriously too cool. Ohh yes and a complete cart blanch to party in private with who ever you wanted to!!! Without the threat of social media getting a hold of the pictures, as no photographs were allowed to be taken once inside the club. This was enforced by six foot tall and as wide bouncers monitoring the place. My first impression – Wanna-be models vying for the attention of the seriously rich men who were looking to party hard and spend their cash. So it was a win-win scenario and I’m sure since that night there are plenty of beautiful and happy shoppers cursing the Dubai malls. Splashing the cash given to them by their newly acquired sugar daddies! (MEOW). We arrived at quarter to twelve and it only started to get busy from around two thirty. Initially, the crowd came across as clicky as people huddled together clutching their drinks, swaying while trying to remain looking beautiful. But as more drinks were consumed, the cool factor started to thaw and the party animal emerged. Revelers were dancing on their tables, in the isles and the dance floor was heaving with the music banging. Overall it was a fabulously, entertaining night and if you’re into people watching, this is a place to be. Sonia Irvine, who is the sister of racer Eddie Irvine, established the Amber lounge in 2003. The concept follows the race around the world and for three days the Amber Lounge comes alive attracting the beautiful, rich and famous.

The Abu Dhabi event was held on Yas Island at the Marina and enabled me to party the night away with celebs such as (well at least spotted) Dani Miniogue, Lewis Hamilton, Nicole Scherzinger, Daniel Ricciardo, Prince Harry and Estelle (who sang) to name just a few. Professional and leggy dancers wearing glittery, micro hot pants and bras danced on stage while a live saxophonist played along to the house music in the background. There were also shisha stations set up on the balcony outside overlooking the track. Was it a night to remember – yes I think so and well worth the red eyes and the tiredness I felt as I sat at my desk the following day giggling at little things that popped back into my head about what I had seen the night before.

he blistering hot Roman summer is again just a memory; but even in winter we enjoy warm and pleasant afternoons - best spent in one of the city’s many parks, or sharing dinner with friends on a terrace overlooking the bustling streets. Many in Rome have a second kitchen area outside, perfect for cooking meals with friends; this weekend I agreed to prepare the main course for small a gathering, others contributed to the “banquet” that seemed to last from midday until well into the evening. My contribution was a simple dish; Roman although I suspect every Mediterranean country claims to the same recipe.

The chicken needs to be tenderised to keep it moist during cooking; place the meat onto a chopping board, drape cling film over the top, then pound with a meat tenderiser - a tool that resembles a mallet; alternatively use the base of a heavy saucepan, working from the centre to the edges.

500 g chicken breast or thigh meat, pounded flat Black salt & black pepper 1 table spoon each butter and olive oil 1 large shallot, minced

Chicken, tomato, tarragon and cream; this easily prepared dish is always a hit, leaving everyone asking for the recipe or second helpings; it’s perfect for either a quiet dinner, or as meal for the festive season. I’ve often served it with mashed potato, but being in Italy, it had to be served with pan-fried polenta strips, sprinkled with fresh ground pepper and black salt (I’ll tell you more in the coming months). Tarragon goes a long way, a handful of the fresh herb is plenty; as for the chicken, breasts are often used, but I think the meatier flavour of chicken thighs better complements the tarragon.

250ml chicken stock 1 tin diced tomatoes with juice A good handful of chopped fresh tarragon 150 - 200 ml double cream (according to taste)

Ingredients:

In a large sauté pan, heat the butter and olive oil until browned and almost smoking. Remember, the butter flavours the meat and the olive oil keeps the butter from burning at a low temperature. Season the chicken with salt and pepper; when the butter starts to brown, add the chicken to the hot pan, making sure not to crowd the meat so that it browns, not steams.

Cook for about 2 minutes per side until the meat is a golden brown. Remove the chicken from the pan, cover and set aside. Lower the heat to medium and add the shallot, stir for a couple of minutes, taking care not to let it burn. Add the chicken stock, bring to the boil and then simmer until it has reduced by about half. Pull the long slender tarragon leaves from the stem, and finely chop the leaves. Ingredients - 1kg red potatoes - 300gms all purpose white flour - 1 egg - 1tbsp grated parmesan cheese - Nutmeg - Salt

For Pesto Sauce - 600gms fresh basil - 2tbsp grated parmesan cheese - 2tbsp grated pecorino cheese - 1tsp pine nuts - Extravirgin olive oil - Salt - ¼ cup cream

Method 1. Boil the potatoes with the skin for half an hour, until cooked. 2. Then peel the potatoes when they are still hot. Smash the potatoes, add egg, cheese, ¼ teaspoon nutmeg, ¼ teaspoon salt, mix everything and then add the flour. 3. Mix and then make the gnocchi, making small rolls and cutting cubes of the desired measure. 4. Put them on a tray with a bit of flour to avoid that they stick together.

Ingredients - - - - - - -

1 egg ½ cup caster sugar 200gms butter 2 cups plain flour, sifted 400gms pot prepared fruit mince 1 Granny Smith apple, peeled and grated Icing sugar, to dust

Method 1. In a bowl, lightly beat egg, sugar and butter together. Stir in flour to form the dough. Turn dough out on a lightly floured work surface and knead lightly until smooth. Wrap dough in plastic wrap and chill for 30 minutes. 2. In another bowl, combine fruit mince and grated apple. Heat oven to 180 degrees centigrade and on a lightly floured surface, roll pastry out to 3mm thick. Use an 8cm round cutter to cut out 18 circles. 3. Fit the circles into the base of 18 standard muffin tins. Prick the bases with the tip of a skewer. Spoon fruit mince into the pastry bases. 4. Cut 6cm circles from remaining pastry (re-roll scraps, if necessary) and use these to form lids to the pies. Cut out small star patterns before fitting lids, if desired. Bake for about 20 minutes or until the pastry is golden brown in color. Dust with icing sugar to serve.

Avoiding Offence

Generally speaking, very short skirts and tight midriff tops are frowned upon in public, although acceptable by hotel pools, in private clubs and on the beach.
