Didn’t we do the New Year count down just yesterday? We’re already two months down! It’s been a great start nonetheless; the women’s conference organised by Sri Sri Ravi Shankar just added a star to the already thrilling start; read the first hand experience of this enlightening conference by yours truly, on page 66. We’re barely a month away from the much awaited Formula 1 Grand Prix; you can almost feel the excitement in the air! This year promises to be the best so far, as it’s the 10th anniversary and the first race to be held in the night; BIC has no intentions of letting us or Bahrain down and is set to show the world how to put on a first class performance; if you put your ear to the floor you can almost feel and hear all the hard work that is currently be done at the track to ensure everything has been organised to the T, right from the pre-race preps to the high octane cultural events (look to pages 16 & 18 for the events calendar). Our Special Education Feature, this month (pages 36 to 44) showcases a few of the Kingdom’s education pioneers. Equipped with the best tutors, training programmes and

How did art become a reality? I have always enjoyed making art. Ever since I was young, I found myself getting lost in my childish drawings. I feel that the things you enjoy most as a child really connects you to what you want to become in the future. Art was always a passion for me growing up, and I feel that was the key to everything and to my future. Your Inspiration Exploring and discovering other art scenes always has an influence on oneself. I feel travelling and attending art galleries, or art fairs outside of Bahrain always helps feed your mind with creativity and inspiration. What styles do you use? Portraits to me are very intriguing, but I wanted to develop an artistic style that enabled me to enhance the painting’s aesthetic look. That is when I developed the skill of layering, helping me create a more contemporary and post-modern approach to painting portraits. I place my subjects within an intensely coloured and ornamented surface. This results to the artwork having a more contemporary and psychedelic quality to it. Your proud pieces I’m really proud with the piece I submitted for the 40th Bahrain Annual Exhibition. I received really good feedback at the exhibition’s opening. When the Prime Minister, Shaikh Khalifa bin Salman Al Khalifa first saw my painting, he had a genuine smile on his face that made me feel so

Why Montessori For The Kindergarten Year? Montessori education was founded in 1907 by Dr Maria Montessori, the first woman in Italy to become a physician. Guided by her discovery that children teach themselves, she designed a “prepared environment” where children could freely choose from a number of developmentally appropriate activities. Now, over a century after Maria Montessori’s first ‘The Children’s House’ in Rome, Montessori education is found all over the world, spanning ages from birth to adolescence. While the Montessori Method allows children to choose the activities they want to work on each day, and how long they will work at a specific task, there are specific “ground rules” for the class that are consistently enforced by the teacher and other students. This environment naturally teaches children selfdiscipline, and it refines important skills like concentration, self-control and motivation.

5. Classroom Environment Teaches Order

All objects and activities have precise locations on the shelves of a Montessori classroom. When children are finished with an activity, they place items back into their appropriate places. This sense of order helps facilitate the learning process, teaches self-discipline, and caters to a young child’s innate need for an orderly environment. When children work and play in an area that is neat and predictable, they can unleash their creativity and focus fully on the learning process.

6. Teachers Facilitate the Learning Experience

Teachers in the Montessori classroom are “guides” who are there to facilitate the learning experience, rather than determine what it will look like. Teachers take the lead from the children in the classroom, ensure the ground rules are followed, and encourage students to perform tasks at their own pace. However, teachers do not determine the pace of the classroom – that is strictly up to individual students, as teachers strive to remain as unobtrusive as possible.

Montessori takes the child’s education outside the classroom. It affects how they interact with others, the freedoms they have in the home, teaches them to care for themselves, their environment, and others, and teaches them how to be an active participant in their learning and environment.

Subjects You Enjoy

In high school, selecting the subjects you enjoy will help you in the long term as you will do well at them and attain the best results. It’s about finding the subjects you are passionate about and then endeavoring to excel in them. For example, if you are the type who likes to read novels and writes stories, subjects like English Literature, Sociology and Psychology are going to benefit you tremendously. Pick subjects that portray your strengths, capabilities and are likely to provide you with the qualifications required for your ambitions. Down the road, when you are applying for your undergraduate degree, you can

decide if you prefer learning the same subjects or different ones. For undergraduates and postgraduates, the subject choices become slightly concentrated, as you begin to specialise in one faculty; however studying a variety of subjects as your electives to enhance your understanding and gaining exposure is a wise notion.

Keep Your Options Open It is a tad ambitious to presume that secondary school and college students will know what they want to become in the future. Furthermore, compelling them to opt for subjects their siblings or parents studied

is definitely a prejudice. Every individual is different, and so are their interests, academic strengths, learning styles and aspirations. Your eldest may be good at Mathematics, but the youngest might be good at painting while doing miserably in other subjects. Therefore, it is advisable to keep the subject options open in secondary school and college.

Before you join college, take time to think and plan your studies, so that you have an idea of where you are headed. Do some research on the subjects you opted for in college, so you know what your future may look like.

The Bigger Picture

It is advisable to study a variety of hard and soft subjects in secondary school and college mainly because of the rapidly changing job market. Excelling in hard subjects may help you obtain an interview, but to keep the job, one needs to have some knowledge of the soft subjects, too. These subjects help an individual develop and enhance creativity, soft skills and equip him/her with diversified knowledge.

Avoid choosing subjects because of: Peer pressure: Use your grey cells

to think about what you wish to do in life. Develop objectives and goals and set forth to accomplish them. Following the crowd will not lead you anywhere.

Siblings/parents did it: Our society generally consists of followers. Therefore our younger generation tends to do the same and follow suit, which is good in some cases, but not always. Millennial generation needs to decide what they wish to study.

Level of difficulty: Never think that a subject is difficult or else you will unconsciously block your mind from understanding its dynamics. Try doing it to the best of your capability and if required, seek extra help.

education special Last month, Professor Sameer Otoom was appointed by RCSI Council as the President of The Royal College of Surgeons in Ireland (RCSI), Bahrain. Bahrain Confidential speaks to Sameer about his vision for the institution which will celebrate its 10th Anniversary in September 2014. You’ve been a part of RCSI for a while now. How has the institution evolved over the years? We started off in 2004 with our campus in the Seef area, with 15 staff and 27 students. Today we have 1,200 students of 40 different nationalities and a team of 120 staff members, in addition to the 100 clinical staff working in the hospitals. We have also expanded our portfolio of courses; initially we only had medicine, but now we also impart nursing and postgraduate education. There are plans to develop new programmes and we are in the process of conducting feasibility studies in this respect, led by our Chief Operating Officer, Mr Stephen Harrison-Mirfield.

What is the major challenge that RCSI has overcome, as a team? One of the main challenges has been adapting the international curriculum to local culture. Importing a high standard curriculum from RCSI Dublin must be accompanied by appropriate and diverse methods of delivery, to ensure the highest quality is maintained. We benchmark our programmes against international standards of excellence in healthcare education, including the World Federation of Medical Education, European standards and the World Health Organisation. What is your vision for this institution? We plan to enhance the health of the population of Bahrain, other GCC countries and beyond, through our work at the University. We are focusing on three main pillars, being Teaching and Learning; Research; Community Engagement and Service. Our aim is to inspire, educate and train competent and caring graduates who will assume leadership roles in their profession. Research involves subjects related to the region, including cardiovascular diseases like diabetes, blood diseases, and oncology. We will also ensure that collaborative partnerships are established with the local and wider communities. RCSI Bahrain will celebrate its 10th anniversary in September this year. What are your thoughts on this? We will be organising a large event for our staff, students, alumni and all our stakeholders. We plan to establish a Bahrain Chapter for RCSI alumni who are based in Bahrain. We thank our students and dedicated staff for achieving this important milestone, and our external stakeholders including the Ministry of Education, Higher Education Council, Ministry of Health, Tamkeen, Bahrain Defence Force Hospital, King Hamad University Hospital, Salmaniya Medical Complex, American Mission Hospital and other private hospitals, for their continuing support. They are an integral part of our success and it is only with this kind of support that we have already achieved so much and will continue to achieve our goals.

We could pick our sauces and so we opted for Holandaise which is a creamy and the Home-made Basting sauce which is spicy. Our side dishes were potato wedges and vegetables; you can choose any two to go with your steak. The meat here is so tender, and the side dish menu and sauces compliment the steaks really well. Also, you can wash all this down with red wine or any cocktail of your choice; we stuck to fresh lime juice.

In addition to the food, the ambience is great too. The dim lighting and comfortable seating add to the experience. Though there is a fine dining feel to the space, the peppy music and live band give things a very ‘at home’ feel. There is a nice selection of books too and so you can catch up on some reading if you wish. All in all, great service, value for money food and classy dining best describe this experience. Harmony Evolution towards Perfection. Last month, the 6th International Women’s Conference was held at the Art of Living (AOL) Ashram, Bengaluru, India and I was invited to attend the event along with eleven other women from Bahrain.

n the past, the thought of ‘attending’ a women’s conference wouldn’t have been high up on my agenda. But oddly enough, at the end of last year I made one promise to myself - to get back into AOL breathing and viola, now I was on my way to the main headquarters itself! Could this be my calling? A group of us arranged to fly out a day before the conference, because no matter what flight you take to Bengaluru – you still arrive very early in the morning. So, we planned to catch up on our sleep and chill. The excitement grew as we boarded our flight from Doha. The ladies mingled preparing got to know each other a little better as the plane was taxing down the runway for take off. A chap who sat in economy with us suddenly jumped and ran down the aisle towards business class screaming ‘We’re all going to die!’, then disappeared, followed by a number of men who leapt up, chased after him and jumped him. The whole scenario although worrying, had turned out to be more of a comedy show as the stewards rushed to close the

But ever so often, an elbow or fist would fly through it, followed by ‘ahhh, pow, ohhhhs’. Eventually, we turned around and he was duly arrested. But well done Airline staff and passengers who bravely tackled the rather disturbed gentleman! Fortunately, that little episode was the most stressful thing about the whole trip. As our mini bus that picked us up from the airport drove up to the gates of the Ashram, amidst the Panchgiri Hills, I knew we had arrived at a sanctuary of tranquillity. Stunning architecture was nestled on lush lawns. It really was quite breath taking, calm and screamed out spirituality. Over the course of day, more than 1000 women arrived at the Ashram from over 150 countries, including women from rural India, to participate in the three-day conference titled, ‘Harmony Evolution towards Perfection’. The AOL hosts this biannual conference as part of its multi-faceted initiative for women empowerment. The talks and themes of the conference supports the on-going programmes that address everything from violence against women, female feticide, education, child labour and brides through to care for HIV positive individuals. All proceeds made from the conference are invested back into these causes. At this point it is easy to be cynical,

smile and say “Right, I’m sure some of the money is, but after spending my late teens and 20’s exploring some of these spiritual centres, I’m usually the first to agree about ‘suspiciously wealthy guru’s and their management teams’”. At 19, I found myself at the foothills of the Himalayas, sat cross-legged and bare foot in a circle chanting, while tapping our shoes on a ‘special’ rock followed by throwing imaginary spells towards the monastery in the distance. A month later, I was staying at the very monastery that I had been spirituallty attacking. But this time, the shoe was on the other foot (excuse the pun) and we were meditating bad vibes back to the Ashram I had just left. I think it was over a cloud dispute or something!!! Fortunately, I saw the whole ridiculous scenario and many more, as it was more of ‘what not to believe in’. But, until the day I am proven wrong – I honestly believe the AOL is one of the most genuine, charitable organisations that I have been lucky enough to visit and become a part of. From their educational programmes through to women’s vocation, there are many projects in progress to help better the lives of poor people. It is frustrating that the super-rich and greedy governments of deprived countries do not follow the AOL model to help overcome more poverty. According to most people I’ve met including many non-believers – the Indian

press has done everything it can do, for years to expose Sri Sri Ravi Shankar, the ‘Guruji’ of the organisation as a fraud – but to date have failed. Each morning of the course we had a choice of participating in a session of meditation or yoga, which started at 6.30am and went on for an hour and half. This was followed by an optional visit to one of their Ayurvedic doctors to discuss your health and have your body type diagnosed, all of which was complimentary. The conference was held in the stunning Vishalarkshi Mantap (VM), a beautifully crafted five-layered architectural structure shaped as a lotus. The marble edifice couldn’t have offered a more appropriate venue for such a conference. Over the course of three days, speakers who are considered leaders in their fields took to the stage to share their stories and experiences of how they overcame oppression and learnt from others to become very successful. It was inspirational and educational. It truly felt that certain messages were being directed at me and I’m sure everyone else felt the same. There were guest speakers from Belgium, Norway, New Zealand, South Africa, India, etc that consisted of ministers, actors, professors, activists, etc. The sheer diversity of the delegates

and eminent speakers was intended to bring local perspectives with a global vision to specific problems. This year’s conference was intended to not only act as a catalyst for dynamic action, but also to nurture and tap the inner harmony so that individuals could go back to their fields with more knowledge and enthusiasm to continue making a positive difference in their communities. Fortunately, unlike other conferences we could pick which speakers we wanted to listen to. So, when we weren’t being inspired, we had the choice – book an appointment to rejuvenate both your senses and spirit at the Ayurvedic Spa. The treatments were extremely affordable and all the therapists had been adopted from a young age and when old enough trained by the monastery. Each evening after yet another delicious vegetarian meal (which was specially prepared for all delegates attending the conference), entertainment was laid on. The first evening everyone convened on the lush gardens below the VM to listen to traditional singing, after which, His Holiness Sri Sri Ravi Shankar held an open question forum, which was broadcasted internationally, followed by meditation under the stars. At this point, I knew I had found home away from home, when two stray dogs came and snuggled into my legs and stayed with me until the end. The other nights included a typical style and very entertaining Bollywood musical and a beautifully choreographed fashion

show held under the stars at the Guru Paduka Vanam – a rock-cut open amphitheatre. Once again, all participants were volunteers and orphans from the Ashram itself. Of all the speakers who bravely took to stage, one woman deserves a mention - Ms Asha Bhonsle, Playback singer who was awarded the Vishalakshi Globe Award on day two. According to everyone who was more familiar with her, she was the one who was most open about her life experiences and the hardships she had endured to get to where she is. She even broke into a song at various points in her story. It was beautiful. She started her career as a young child and her family became dependant on her salary after her father’s unexpected early death. She has sung 12,000 songs in fourteen languages including a single with Boy George – an international and often troubled star who we’ve interviewed and featured in this magazine. Now, she’s also a successful restaurateur. I could’ve listened to her life story for hours. Overall – although I didn’t go with any expectations – it turned out to be one of the best experiences I have had the pleasure of recently experiencing. A big Thank You must be extended to Bhanumathi Narasimhan, Chairperson of the conference and the woman behind the initiative, who I had the privilege of interviewing along with her brother – His Holiness Sri Sri Ravi Shankar that I will share with you next month. Finally, huge hugs to Maria, my AOL teacher for never giving up on me and chasing me to go.

Seven Day Skinny Jeans Plan By Anoeska Drent

You’re sitting at your desk still recovering from a postweekend sugar coma. Your favourite “skinny jeans” are tight. You think to yourself I’m not eating ever again! WRONG. Skimping on meals is not going to get you back in your skinnies sooner. If anything, it will mess up your metabolism even more than binging. Eating nutritious, balanced meals and working out will help get your metabolism pumping and calories burning, which will have you back in your skinnies before you know it!

Two slices of cauliflower crust pizza with a side of steamed vegetables. Sesame-Tofu Stir-Fry (Another excellent meal you can make a big batch of to last a few days.) Beet, Orange & Fennel Salad with a side of quinoa. Healthy Chicken Salad served over lettuce or on a slice of whole-grain toast.

Here’s my 7 Days to Skinny Jeans Plan:

Snacks

1 medium apple with 1 tablespoon of peanut butter 1 cup of red grapes and a low fat string cheese. 1⁄4 cup of almonds 1⁄2 cup of bran cereal (or Grape Nuts) with milk and a few berries raw veggies with three generous tablespoons of hummus. 1 hardboiled egg with a few wholegrain crackers. Celery with a tablespoon of almond butter and a few raisins.

The Rules Commit. Keep your eyes on the prize (aka those darn skinny jeans) Drink lots of water! At least 8-10 glasses a day. Pick one exercise to do every day (save one day for rest). Pick one meal from each category for each day. Pick one snack for each day. Try sneaking your exercise in before breakfast. Otherwise, just make sure you exercise!

Exercise Options

30 minutes of cardio (running, kickboxing, step aerobics etc.) 1 hour of yoga or Pilates Intervals: Run for 60 seconds, walk for 90 seconds (repeat 8 times) Circuit: 100 jumping jacks, 20 crunches, 20 squats, 10 push ups, 25 bench dips (you can do this using a chair), 60 second wall sit, 60 second plank (repeat two times) 1 hour hike with steady incline. Quickie: 20 lunges, 50 jumping jacks (or swap out jumping jacks for jumping rope for 2 minutes) SemiQuickie: 15 minute jog, 20 squats, 20 sit-ups.

Breakfast Options

Greek yogurt topped with walnuts, a handful of berries (or sliced banana) and a light drizzle of agave nectar. Steel cut oatmeal with 2 tablespoons of dried apricots, 2 tablespoons of slivered almonds and a splash of almond milk, and a veggie omelet with a slice of whole grain toast. Half an avocado stuffed with cottage cheese and a side of sliced tomato. Ezekiel toast topped with 2 sliced up hardboiled eggs served with half a grapefruit. Breakfast Quinoa (Make a big batch and eat it for breakfast for a few days. It’s delicious!)

Lunch & Dinner Options

Whole-grain pita filled with chicken, arugula, sliced tomato, a teaspoon of crumbled feta and a drizzle of olive oil; serve with a side of grapes. Grilled Bruschetta Chicken with a small side salad (use a mixture of lemon, olive oil and balsamic vinegar for the dressing) Zucchini “Pasta” with a side of quinoa.

“Everyone deserves access to clean water,” says John Ridley.

I

t’s not uncommon to pay BD2 or more for a bottle of water with a meal in a restaurant; there’s a wide selection to choose between - waters from Arctic glaciers, the mountain snows of Mount Fiji or the Andes. For those with a more exotic taste, there’s the option of Tasmanian rainwater, or waters pumped from beneath the oceans - costing BD100 per beautifully decorated bottle. It’s nice to have a choice, but ultimately, it’s just a bottle of water - collected and transported across the planet at great cost to the environment and the pocket. Tap water suits me, it’s clean, costs little, and is readily available. The charity, Water Aid, estimates that 1/6 of the world’s population has no access to clean, safe drinking water, and 5,000 children die every day.

“Pumps provided by Water Aid provide clean water for a lifetime, they cost about BD15 per person - the same price as a couple of bottles in a restaurant” During my last visit to India, I spent time in a village with a hand pump, provided by the charity, to draw clean water from the rocks far-below the surface; the people of the village were lucky, the water was clean - no one died from water borne infections, spread through polluted water. A nearby village, having no pump, was less fortunate; people drew their water from wells that became contaminated during the monsoon season. Throughout the hot months, the groundwater level dropped; women and children had to walk further

down the valley to find water for cooking, drinking, and washing - or buy bottled water. The water and soft drinks companies invest heavily in brand identities; to be seen with the “right brand” in hand is deemed to be both fashionable, and a sign of affluence. Meanwhile, the industry extracts vast quantities of water from wells and aquifers, causing springs to dry, and leaving agricultural land barren; people are forced to buy the water taken from below their feet. Back in 2005, the Chairman of one of the biggest bottled water companies was widely quoted as saying that “water is a need, and access should not be a public right”; he has since asserted that the quotation was taken out of context. Agree or not, he recognised how valuable water is highlighting how desperately out of touch we’ve become with the water that sustains us. Next time you are asked whether you would like a bottle of water with your meal, remember there are three choices, still, carbonated, or tap water. That said dont spend all your time talking to them but also try and build new connections. I recently conducted a quick poll asking fellow expatiates for their advice on handling transitions. This one was my favourite: Dont turn down a coffee invitation to go buying furniture or appliances. Let friends comes first!

Culture shock is an unwelcomed side effect of moving from a familiar environment to a new country and culture. According to a research there are 3 types of conditions that determine the impact of culture shock: Cultural differences Individual differences Individual experiences one has and the treatment one receives from members of the host society Though the transition is difficult you can cope with it. Here is how. 1. Prepare. Embrace yourself with knowledge of the country you are relocating to. A relocation training will help and includes cultural awarness training, communication workshops and bi cultural workshops.

DID YOU KNOW? VIVA’s Twitter followers increased to over 28,000 from only 600 in September 2010. VIVA was the first company to introduce a 24/7 customer service Twitter account and online chat support. VIVA’s Facebook followers have increased to over 81,000 from only 6,000 in September 2010.

Introduced for the first time in the region, VIVA brought to Bahrain the VIVA ‘Tweet for a Treat’ machine, which was introduced as part of its 3rd year anniversary celebrations offering everyone Thank You gifts. The VIVA Tweet for a Treat gift machine was such a success that an initiative was introduced during Eid for parents to tweet on behalf of their children and receive ‘Ediyah’ for them. To date, we have enjoyed over 2,000 interactions with consumers and it’s been great fun!

VIVA has established wide presence on social and digital platforms, including Facebook, Twitter, Instagram, Linkedin, Google+ and more.

TOP Social Media Initiatives VIVA’s Instagram Recharge Initiative during the holy month of Ramadan where VIVA’s Instagram account followers responded to pictures of prepaid cards with missing digits to complete the recharge transaction. Over 1,800 customers participated throughout 30 recharge initiatives.

VIVA’s Instagram Smartphone Initiative where the latest

mobile phones were given away to customers predicting missing digits of the smartphone posted. We had around over 3,500 interactions posted on participation for all devices, a fantastic result!

VIVA’s Facebook Makeover

VIVA fans were offered the chance to revamp VIVA’s presence on the social media channel creatively. The best designed entry would win a BlackBerry Z10 smartphone in addition to having their design profiled as the VIVA’s new look, on its Facebook page. The campaign received an astounding number of entries and support from 26,000 fans; nearly 100 entries from VIVA customers were registered. As VIVA marks its fourth anniversary this month, we look forward to unveiling new and even more exciting social media campaigns in 2014!

HUE, the food and art lounge celebrates its first anniversary this month. Bahrain Confidential spoke to entrepreneur and art connoisseur, Kanika Subberwal about her plans for the fine dining café cum art gallery and the journey so far.

e walk into HUE lounge on a bright Thursday morning; sunlight streaming in through the wide glass-walls of this colourful, artsy space; the gentleman behind the counter invites us to make ourselves comfortable on one of the many couches (or chairs); oh the furniture here is a class apart, not only because it’s colourful, but also has varied patterns and textures (our favourite was the white couch on

Spacious and classy are what best describe HUE lounge; oh! This one’s an art lovers’ and even a bloggers’ paradise (you so want to have your next photoshoot here!) How does it feel to have finished one year and how has the journey been so far? It definitely feels great! I’ve been very lucky to have a fantastic support system, a group of people, right from our logo designers to the interior stylists, who have been on the same page as me and we’ve worked as a great team. We’ve had HE Shaikha Mai bint Mohammed AlKhalifa, HH Shaikha Hind bint Salman AlKhalifa and HH Shaikh Nasser bin Hamad Al-Khalifa visit us and appreciate our work, so we must be doing something right! This has been a very humbling experience for me personally, as well; though I’ve been organising and managing art exhibitions for over a decade, conceiving and running a concept like HUE is a totally different ball game. When investments are involved there is an element of responsibility that comes in. Rediscovering sides to me that if used can be strengths but if not used may turn into weaknesses, this was the steepest challenge.

What’s special for the anniversary? Well, we have quite a few art exhibitions planned. In addition, we have a new menu that our chef is working on. Food is such an integral part of HUE lounge; like I was saying it’s art too. Chef Paulo joined us in August last year and since then our kitchen has changed and improved. Every meat we serve has a different flavour. Our food’s not glamorous and pretentious but it sure has flavour. So, if there is an herb or a special ingredient then you will taste. How does HUE stand apart as an art space? We’re a fine dining café cum art gallery. Generally art spaces are conformed to the rustic look, stone floorings et al; now that’s a good thing but then I believe it restricts clientele and guests to a niche. HUE lounge is for everyone who appreciates art and food, which is an art in itself. It took me 18 trips to identify this place; I needed something that was not part of a hotel or mall but yet part of a community. We take good care of our artists and guests. I’m an art buyer myself; it’s very difficult to sell to people without feeling like a buyer. A lot of times the buyers make

I felt like a diva steering through the streets of Bahrain, in and out of traffic, mastering turns and looking, well good and in top form doing it. Taste Life! John Ridley raises a ‘toast’ to butter.

W

e’ve been eating butter for thousands of years; it’s a staple part of the diet for many of the world’s oldest cultures. Until the end of the Second World War we ate plenty of it, mostly made on farms or in small familyrun dairies; blamed for heart disease, high cholesterol, and making people fat, butter was to be consigned to decades in the nutritional wilderness. Science and technology, we were told, offered a healthier option, and we were encouraged to eat industrially produced margarines and spreads, manufactured from highly processed fats, blended with unpronounceable additives. My grandfather, a farmer, had a simple rule “unless you can grow it or make it on a farm, don’t eat it”; now it’s increasingly clear he was right - these cheap, highly processed emulsions, are more harmful than the natural fats found in butter.

“Butter milk, the byproduct of making butter, is prized in the Middle East …” Tiring of artificial flavours, colours and textures, we are increasingly rediscovering the evocative tastes of real butter; and with escalating sales, the food industry is having to admit - the market for their industrial processed products is in decline. Growing up in a farming family, we used butter in copious quantities, in baking, and on bread, potatoes and spring vegetables; its delicate taste still evokes images of herds grazing on pastures - stretching for miles alongside slow-flowing streams. In the morning, the aroma of a cooked breakfast, served with hot toast and butter, enticed us all to the kitchen table; and on winter’s evenings, in the days when there were only two television channels, the family would toast crumpets on the embers of the

open fire - to be quickly buttered and eaten whilst still piping hot. Served with thick cream, or custard, left over bread was transformed into the perfect winter comfort food - delicious bread and butter puddings. Making real butter is a work of art, as it slowly churns, and the gentle “slosh” becomes a rhythmic “thump,” the cream separates into buttermilk and butter “grains”. The butter maybe washed in ice-cold water and salted before shaping and refrigerating. Butter milk, the byproduct of making butter, is prized in the Middle East, it’s a precious liquid with a slightly sour, acidic taste and can be used for making breakfast pancakes, scones, breads, even salad dressings and wonderful milkshakes. Each batch of natural butter has a different taste and colour, changing with the season, climate, and diet of the cows. In winter, when they are indoors, it will be almost creamy white, taking a richer, creamier taste and slightly yellow colour as the cows are moved outdoors to graze on the spring pasture. In a very different process, industrially produced butter is manufactured in large centrifuges, with additives used to maintain a consistent texture, colour, aroma and flavour. Try keeping half a litre of thick whipping cream in the fridge for the next time your children announce that they have nothing to do, and won’t tidy their bedrooms. Half-fill a jar with the cream, close the lid, and get them shaking it in time to their favourite singer - dependent upon their musical taste it may be necessary to leave the room. After 15 to 20 minutes you should have a jar containing butter and buttermilk. Remove the butter and place on a muslin cloth, squeeze to remove any excess liquid. Place in a bowl, add salt to taste - enjoy on fresh bread or hot toast. Butter is like a beautiful kiss with the person you love most; and as we seek to enjoy the enriched flavours it adds to all foods, more and more restaurants are offering tasting menus with a selection of artisan butters and breads - it has become a celebration of good agriculture and cooking. Tell us about the latest additions to the menu. Butcher Shop’s latest menu is simply a gesture of appreciation to our regular customers for their loyalty. For others, we developed a menu where one can enjoy gourmet food at affordable prices. It’s home cooked meals at an extremely affordable price-point, with an elegant style where fresh quality ingredients are the stars. We have changed a lot of our dishes, but have kept the dishes that have rightfully earned The Butcher Shop and Grill its great reputation and status as the meat experts in South Africa, Dubai and the rest of the GCC countries. With the new menu, all the steaks are now served with the choice of two side dishes as well as a complimentary choice of homemade sauces. We intend to deliver the best food with a broad variety at amazing prices. The new menu offers a choice of 14 different starters, some are brand new like the Chicken Coxhina, originally Brazilian street food but adapted to suite local palates. For salads, we use unique fresh vegetables like baby Cos lettuce for our Caesar salad, Mesclun leaves and Sakura mix. We have also introduced Quinoa in two of our salads. For our main dishes, a large variety

For poultry lovers, in addition to the regular grilled chicken we added an duck dish and for seafood lovers, we introduced a huge seafood platter and a new mussel pot, in addition to the fish of the day and grilled tiger prawns. Lamb is now offered in an oriental style of slowly roasted shoulder to delight local tastes. Our selection of burgers is now served with complimentary onion rings, chips and coleslaw, starting from BD3.9. They are some of the tastiest, juiciest and best value for money burgers in the market. Another popular inclusion to the new menu is the ‘combo meal’ selection.

What has been the response to the new menu? Customers are quite delighted with the changes, especially the complimentary sauce and second side. More importantly, we are seeing a lot more crowd who now find the ‘larger variety offers’ a good family dining option. What is your favourite dish? Veal tenderloin with wild mushroom and truffle is a killer and is quite a distinguished plate. Where did the inspiration for these dishes come from? Every dish had it own inspiration and story, and a few were a collaboration of ideas from the management team. The inspiration stemmed from a desire to break the perception that a steakhouse outing is a heavy one dimensional meal. I wanted to create firstly a selection of meals that would still cater to the red blooded steak carnivore, as well as those who prefer something lighter, and who like to sample a range of flavors and textures. A Slice of Napoli Our pizzas are Napoletana, not Italian; there’s a difference, says Chef Giuseppe Fiorillo.

hef Giuseppe Fiorillo could whip up a pizza with his eyes closed! This pizza guru’s journey began as a child when he’d carry bags of flour into the kitchen, mix dough and count pasta shells. 31 years in the Food & Beverage industry and he is still having fun cooking, experimenting and learning. What is a typical day like for you? I love my job and so I’ve never really had to ‘work’ a day in my life. Everything I do, I love and do with passion. I listen to music on my way to work and look forward to the rest of my day. Sometimes even on my day off I come to work if I have things to do.

What makes your pizzas stand apart? We use the best, fresh ingredients flown straight from Napoli. Our pizzas are Napoletana, not Italian; there’s a difference; the best pizzas in Italy are found in Napoli which also offers competitive prices. In the North of Italy you may get a pizza for BD5 but in Napoli you’d get a delicious deal for only BD2.5. My home town is Napoli and I’ve been into pizza making forever. If I touch the flour I know if it’s going to work; I can gauge if the

So experience and knowledge are key factors too. According to you, is pizza making a science or art and why? I believe it is both. It’s a science when you have to measure the exact quantity of flour, and other ingredients like water; also maintaining the right temperature of the oven and such things. It’s an art because there is flexibility. For instance, Bahrain has humid weather and so the amount of water that goes into the flour differs on some days depending on the weather; we can tweak the recipe. What defines the taste of your pizzas? Apart from the right cooking techniques I believe it’s the cheese. We use ParmigianoReggiano and Grana Padano, from Italy.

Did you know that there are 9 types of Grana Padano and it’s just like wine - the older, the better. Fior di Latte is a kind of Mozzarella which is dry and a little sweet and was used on pizzas, before. Also, no one really uses fresh mozzarella these days as it is too watery and may affect the consistency of the pizza. If you had to create a pizza after yourself, what would go onto it? I’d love a simple pizza with zucchini flowers stuffed with ricotta cheese and parmesan, and fried, as toppings. I’d also like to launch a concept of a pizzeria in a pedonar (walking market). May be someday! What is the new Bella Napoli concept about? We’re soon to open the very first branch of Bella Napoli in Zayed Town. This will focus more on Italian fare as opposed to Le Chocolat which also serves French and other fusion cuisine. Of course it will be under the same parent company, Jasmis Corporation WLL. Business Hours Friday is the Islamic equivalent of the Christian Sunday. The weekend falls on a Friday and a Saturday. Most shopping malls and commercial centres are generally open seven days a week.

Things to know Taxis

Taxis are easily available in the capital, Manama, and have meters but be sure to make the driver use the meter. 99% of drivers won’t switch on the meter and will try to charge you double the legal fare. Beware! Confidential Tip: BD1 per five minutes in the cab is the most you should pay for an un-metered journey. If traveling from the airport or busy taxi rank, add BD2/after midnight add BD1 to the total e.g. a 10 minute drive from the airport after midnight should cost you no more than BD5 (BD2 + BD2 + BD1= BD5). Taxis do use meters and companies may use similar rates.

Avoiding Offence

Generally speaking, very short skirts and tight midriff tops are frowned upon in public, although acceptable by hotel pools, in private clubs and on the beach. If visiting a mosque, cover the body well (women should ensure that arms and legs and hair are fully covered). Shoes should always be left outside the entrance.
