The wedding gown Dame Elizabeth Taylor wore when she exchanged vows with her first husband Conrad Hilton, Jr is set to go under the hammer this month. The Cleopatra star, who was only 18 when she wed the hotel heir on 6th May, 1950, wore an oyster shell-coloured, floor-length satin gown, and now the special piece, to be auctioned off by Christie’s in London on 23rd June, is expected to fetch upwards of GBP50,000. The frock features an impossibly-thin 22-inch waist and was designed by Helen Rose, who also created Grace Kelly’s wedding dress.

Tell us about yourself. I am an Australian artist and focus on marine abstract art. I am a Visual Communicator and have established an ArtEnergy programme that is embraced by companies in India and Asia. As a designer, my work can be found in many luxury resorts in the Maldives and Australasia. I majored in Sculpture at the university in Australia and have studied Art History, so I have a strong academic background in the arts and enjoy travelling the world, exhibiting and also teaching art. Tell us more about your work. I am interested in abstract imagery and my art combines line, form, colour and composition through the use of amorphic shapes. The juxtapositioning of these shapes and bold colours, creates my style of abstract paintings. My work as a sculptor through the use of positive and negative space is referenced in my painting compositions.
You are well known as a marine abstract artist. Could you explain what that means, what inspires your passion in this area? Growing up near Australia’s Great Barrier Reef, I was always interested in the colours and patterns of the marine creatures and corals, and continue to use them along with rainforest jungle as my subject matter to help my creative processes. My Reef Series of paintings strongly reflect this through the use of macro images and many of my paintings are suggestive of underwater marine landscapes, quite minimalistic, but definitely not the usual well- behaved landscapes that most of us are familiar with.

What kind of colours, elements do you work with? For many years, I painted mainly in black and white. At the time I was primarily interested in portraying the relationships of the forms to each other and how they co-existed within the composition; I still have that interest, but now my most recent works introduce strong colours, sometimes discordant and sometimes combined with black and white.

In Australia, the high profile Hamilton Island Reef View Resort on the Great Barrier Reef and more recently famous corporates such as Bajaj Auto Limited in India are collectors of my large scale wall murals. What inspires your creativity. I am inspired by my surroundings, mostly the reefs and gardens of the world because of the locations where I work and live. Let’s say, a tiny butterfly-I notice not only the butterfly but its patterns and colours. I then use this information to create my macro paintings. The same applies to my marine imagery. The Lost Art Of Communication “and I was just like, you know”

ommunicating with one another should be as natural as walking, it is after all fundamental to the functioning of society, yet all too often it seems to be our biggest stumbling block. When I was younger, I assumed that I must be at fault if I didn’t understand what people were saying; with age, I came to realise that the failing lay with those who couldn’t understand the benefit of communicating clearly. A few years ago, I worked for a company where those of us near the “pointy bit” of the management pyramid were encouraged to take time with a mentor to “think”. It was a great idea - except, it was at the time when the term “thinking outside of the box” was in vogue. This feat of mental gymnastics took place in the “imaginarium” - a windowless

room, with soft blue lighting, bean bags on the floor, and tubes of coloured bubbling water lining the walls - it was akin to thinking inside of the box. Memories of this water lined space came flooding back recently whilst attending a meeting. The discussion between the staff of my client revolved around the use of words such as “space”, “around”, “synergy”, and “value-add”, along with acronyms, one of which, if I recall, began with the letter “S” - and a healthy dose of equivocators like “sort of” and “kind of”. The result was a lack of commitment to anything being said and neither I, nor others, had any idea of what the presenters were talking about. Returning home on the train, a girl sitting behind me talked endlessly on her phone; now anyone who has travelled on a British train will know that making a phone call is next to impossible - almost as difficult as getting a decent cup of tea

The night before my return to Bahrain I stayed in a hotel at Heathrow, in the reception was a huge sign saying “Our goal is to exceed the customer’s expectation.” I was left with the expectation that someone would ask me what I was expecting - no one did. No doubt employees entered some kind of temporary dazed state upon hearing this phrase before continuing to doing things exactly the way they had previously. If only this wasn’t true; increasingly, it seems, people no longer make sense. The next time I hear one of these mindless phrases I will tell the person, “I don’t have any idea what you have just said to me.”

Cover Story music sessions are held every evening at the houses of the bride and the groom. Everyone is invited! The maanziraat ceremony takes place a week prior to the wedding. It begins with krool khanun, a ceremony that involves decorating the door of the houses of the bride and the groom. In the evening, the bride follows an elaborate bathing ritual, during which her maternal aunt washes her feet. After the bath, her eldest aunt decorates her hands and feet with maanz (henna). This is followed by music and dinner. Then comes devgon, a ceremony that marks the transition of the bride and the groom from being single to being married. It is observed by the bride and the groom in their respective houses. The couple observes a fast before participating in the ceremony which is conducted by the purohit or the priest in front of a sacred fire. Agni Dev or the Fire God is a deity for Hindus because of which the sacred fire is
groom. The wedding can take place in the morning or in the night. Once the horoscopes are established as compatible, an auspicious day is chosen for livun or the traditional cleansing of the house. This ritual calls for the floors of the Kashmiri mud houses to be cleaned and treated with a mixture of cow dung (considered holy), mud and water!This is also the day when the waza or family cook arrives and puts together a mudand-brick oven called war in the backyard of the house. it’s time for some delicious cooking! The war is where the traditional meals are cooked for the wedding ceremony. And what is a wedding with out a little bit of music! Wanwun or

Flowers are also showered on the couple after which they change into new traditional attire. Duribat is another ceremony held on the same day and is attended by the maternal relatives of the bride and groom. Gifts are exchanged and a traditional vegetarian lunch is served. Though a lot of Hindus are meat/fish eaters, they consume a vegetarian meal for special occasions like weddings and festivals. Moving to the western region of India, Gujarat has a substantial number of Muslims who are categorised as the Bohra and Khoja communities. What’s a wedding without the mehndi (henna) ceremony! The mehndi (henna) takes place during the week before the nikah (marriage), sometimes the night before. All the ladies are invited for an evening meal at the bride’s family home. Traditional food is served which includes khitchra, meat and barley broth. While the ladies get their palms designed with henna, religious and other poems are recited. The actual wedding day is the nikah ceremony which is only attended by the men at the mosque. After the bride is formally asked of her acceptance of the proposal, the witnesses go to the mosque where the nikah is completed. Travelling to the eastern state of Bengal, the pre wedding ceremony starts with the dodhi mongol during which the bride and groom are feed sweets and curd. They then fast for the entire day until the wedding. Women relatives of both families fetch water to be used in rituals, from nearby waterbodies, preferably the Ganges (considered as holy by Hindus). This is followed by the gaye holud where the bride and groom are individually smeared in holud (turmeric paste). This is said to soften the skin. The wedding ceremony comes next where the groom arrives to the bride’s home. The groom’s mother doesn’t usually participate in the wedding as this is considered to have a negative impact on the couple’s married life. The groom changes into the wedding attire that is gifted by the bride’s family on his arrival. The bride joins the wedding ceremony a little later, carried on a wooden seat called piri. Now, that’s what we call “Making an Entrance!” She then encircles the groom seven times symbolising the seven lives that each of them will live for, as a married couple. Heavy ululation and blowing of conch shells is a common affair at Bengali weddings. No matter which region, weddings are a time for fun and bonding for the bridal couple and their families. Perhaps that’s what they mean when they say ‘Unity in Diversity’!

My eyes burn when I put in my contact lenses. When I wear contacts, I always feel like something’s in my eye. Like sand or dust. My eyes are red, painful, swollen and/or produce discharge. When wearing contacts, my eyes occasionally feel dry. Especially after long hours in front of the computer. I can’t wear my contacts as long each day as I’d like. End of the day comfort isn’t there. At night sometimes I experience glare and halos with the contact lenses on. Night vision isn’t that crisp and clear like day vision. To accurately find out the specific causes of your contact lens discomfort and to get specific remedies, you need to see your eye care professional. Your eye care professional will also rule out the possibility that your discomfort indicates a more serious underlying problem.
DO Always follow the wearing schedule advised by your ECP. Always keep a pair of sunglasses when you are outdoors in order to prevent your eyes from harmful UV rays. Wash and dry your hands with lint-free material before handling your contact lenses. Always use fresh solution to rub and rinse the contact lenses before insertion. You should replace your solution every three to six months, depending on the brand. Replace your lens case at least every three months. Earlier the better. Always use fresh lubricating and rewetting drops for clear and comfortable vision and long lasting relief from dryness and irritation. Immediately replace faulty, damaged or dried out lenses. Remove your contact lenses immediately if your eyes become red, dry or irritable or you have reduced vision in one or both eyes and contact your optometrist without delay. DON’T Sleep in your lenses. Re-use solution or use tap water to clean your lenses and never put your contact lenses in your mouth or use saliva to clean them. Put off visiting your optometrist if you are experiencing eye irritation or redness. Wear your lenses whilst swimming. Share your lenses with anyone else. Better known as alternative medicine, Ayurveda helps you discover the limitless benefits of basic items on your grocery list. “Avoid eating hot, spicy, salty and sour food,” says Dr PK Abjith, Medical Director at The Indian Ayurvedic Medical Centre in Mahooz, “instead go for sweet or bitter food.” Many fruits like apples, apricots, berries, cherries, plums and oranges could be sweet or sour and so you may have to choose carefully. Sweet fruits include avocados, dates, prunes, pears, and melons. Some of the sweet/bitter vegetables that you could snack on are asparagus, broccoli, cabbage, cauliflower, leafy greens, peas and celery. Pungent vegetables like garlic, onions and bell-peppers must be avoided. Go slow on caffeine and avoid ‘partying too hard’; these liquids are sharp and heating. Try drinking plenty of cool liquids, though not iced. Refreshing physical activities including swimming, gentle yoga and walks in the fresh air are great exercise options. “Avoid midday workouts as the sun is strongest at that time,” he says. Sunburns aggravate pitta (acidity) and so don’t forget to smear those sunscreens while your outdoors. Moon-baths* are cooling and calming for the skin. Replace hot tubs and steam rooms with a cool dip in the pool or a swim at the beach. It’s better to wearing light coloured and well-ventilated clothing. Pick cooling colors such as white and blue.

Who Will Save The Honey Bees? John Ridley talks about the decline of bees and their importance in our ecosystem.

cross the hills and meadows of Europe, to the fertile mountains and valleys of Lebanon, Yemen and Saudi Arabia, hot summer days are perfect for bees. Drawn by the scents of wildflowers, oak, thistle, and juniper, and the fragrances wafting from cherry, plum, and apple orchards, armies of bees collect nectar to be taken to the hive and made into honey. Some honeys are sweet; others slightly spicy, the distinct flavours come from the crops upon which the bees have foraged. According to a recent study, bees in the area around Mount Hermon in Lebanon, feed on, and pollinate, 2,700 varieties of plants, 500 of which are nectar producing. Besides providing honey, bees are a critical part of the wider ecosystem upon which we all depend. Whilst collecting nectar and pollen, they pollinate the plants upon which they are foraging. Without them, a large proportion of plants would not produce the fruit, berries and seeds that we, and many insects, birds, and animals eat. Across the world the natural, organic, approach to agriculture is under threat; bees

are in trouble, and their numbers are dropping. So important are they, that the farmers around Mount Hermon are adapting their farming methods to be beneficial to bees. More than 30 separate scientific studies have found links between certain pesticides and falling bee numbers. Last month, 15 of the 27 member states of the European Union voted for a two-year restriction on the use of these pesticides on flowering crops that attract bees. The ban will remain in place throughout the EU for two years. Whilst the EU was right to take a precautionary approach to the dangers of toxins used in agriculture, the vote has focused attention upon a single issue, and inevitably many will assume that the ban will solve the decline in bee health, it will not. Besides pesticides, bee decline is caused by changes in land use,
habitat loss, development, disease, farming practices and pollution. We, as consumers, are ultimately responsible for the health of the bee population - by choosing lower cost food, produced with toxic pesticides, herbicides

Environment Day 2013 Think-Eat-Save.

W
orld Environment Day (WED) is the largest social event observed globally on 5th June every year to promote awareness on the importance of preserving our fragile environment and ways to take corrective action. In 2013 the WED theme is ‘Think-EatSave’ and will be celebrated in Mongolia. WED is a day for people to come together to ensure a cleaner, greener and brighter outlook for themselves and future generations. The theme is on the importance of food loss and food waste which leads to wasteful use of chemicals such as fertilisers and pesticides; more fuel used for transportation; utilising more land, energy, labour and capital. The decomposition of food waste creates methane gas, one of the most harmful greenhouse gas (GHG) that contributes to climate change. The huge quantity of food waste going to landfills makes a significant contribution to global warming. Around one third of the food produced in the world for human consumption every year or approximately 1.3 billion tons gets lost or wasted which is equivalent to 6-10 per cent of humangenerated GHG. In USA, 30 per cent of all food, worth USD48.3 billion, is thrown away each

year. UK households waste an estimated 6.7 mMT of food every year, around one third of the 21.7 mMT purchased. This means that approximately 32 per cent of all food purchased per year is not eaten. In Bahrain around 15-25 per cent of all food purchased goes waste and finds its way to the garbage bin before even being used or eaten. Over 300 tons per day of organic food waste is being generated as domestic waste in the country constitutes 11 per cent of the total municipal waste. The discarded food waste is being collected by the local private contractors and disposed at the Asker municipal landfill site. While the dumping of food and other organic waste poses many serious environmental problems like attracting birds, proliferation of virmins and insects, occupying valuable land resources and generation of GHG, the major problem is a huge waste of money, as foreign exchange is spent in procuring the expensive food items which are mainly imported from foreign countries. We need to understand that there are nearly one billion malnourished people in the world, with this wasted food we can satisfy their hunger. 10 per cent
of rich countries’ GHG come from growing food that is never eaten. It is worth reminding ourselves that for every ton of food waste we avoid creating, we save four and a half tons of carbon dioxide equivalent. 4600 kilocalories per day of food are harvested for every person on the planet; of these, only around 2000 on average is eaten, more than half of it is lost on the way. With strict quality control systems, around 20 per cent of fruit and vegetables are rejected even before they reach the shops. Fresh products like fish, eggs, milk, fruits and vegetables make up most of household food waste. Much of household food waste is due to spoilage, overcooking, plate waste and over-purchasing. Food waste occurs also due to food not being used in time and caused by people cooking or serving in extra quantities. The solution lies in sustainable consumption and about ‘doing more and better with less,’ through reducing resource use, degradation and pollution while increasing the quality of life for all. The WED message is: Buying in actual quantities rather than randomly. Buying items with a longer expiry dates. Buying food items especially fruits and vegetables in limited quantities depending on actual use. Storing, saving and re-using the left over as it is or making other food/eatables from left overs. Inculcating good food utilising and storage habits among children and juniors.

ll of us have the tools, capacity and power to vibrate the highest emotional energy possible to go through our lives. Likewise, we have the mind muscle to vibrate at very low emotional energy levels, which ensures that we remain blocked from truly going forward on our paths. Do you remember when you last felt inspired, motivated and vibrant, whereby every cell in your body pulsated with positivity? During this uplifting energy, tasks that lie before us seem infinitely conquerable. The thing is we actually have the innate ability to feel like this 24 hours a day, if we choose to. It transpires from the knowledge of how to get into this emotional state. Let’s look at the example of a very low mood energy; depression. What does one have to do to get into a state of depression? Very simple really – just change their posture and decrease their thinking to thoughts of despair. By crunching our bodies inward, with our heads bowed and our shoulders slumped, perhaps even wringing our hands in distress produces an immediate physiological reaction of negative emotional energy. Combine this with a few thousand stressful thoughts over a period of time and we are well on the way to being diagnosed as depressed. On the contrary, if we were to change our posture outwards ie head up, shoulders back, chin out, hands away from the body; we immediately feel a physiological reaction of relief. Add to this, rumination within the mind of the most empowering, positive and
uplifting thoughts possible, then we are en route to an elevation of emotional energy. The upshot of this is feelings of joy, happiness and if the method is implemented long enough, even bliss. Try it now – change your posture to an inward one and check how you feel. Then do the opposite and amend your posture outwards and again, observe how you feel.
Then focus your thoughts on the visualisation of your perfect future, with specific details of living the life of your dreams. Within seconds, you will elevate your emotional energy. This is a simple technique on how we change our emotional state. So even if we were in a prison, we could feel inner contentment. Under any negative, external condition we have the power to feel good. Yet, too many people ‘enjoy’ the familiarity of negative emotions. We find habitual consolation in the emotions of frustration, depression and despair. It is a comfort zone for some, with many psychological rewards of living in this way.
The opposite higher emotions of ease and satisfaction only felt fleetingly from external sources such as junk food, the purchase of material items, external validation and so on. It is beneficial to analyse any subconscious pay-offs we may be getting from negative behaviours employed on a daily basis. Do you procrastinate, get depressed, over-eat, start conflict, have panic attacks or put others first? In all of these behaviours subconscious pay-offs exist, which will guarantee difficulty to break away from the habit. A good Therapist can assist to dismantle negative behaviours via the awareness and removal of subconscious rewards, as well as guiding us to the highest emotional energy available. When we are vibrating at a high energetic state; we are a pleasure to be around, our daily tasks and dream goals are easy to achieve and life is something that we flow through, rather than resist. We have the aptitude to feel and pulsate the uppermost emotional energy possible for as long as we want to and bring heaven on earth into our life experience. Papua is Paradise! Intrepid traveller, Rohan Shanker, has crisscrossed the globe in search for adventure. Writing exclusively for Bahrain Confidential this month, he shares some musings from his most recent quest – looking for the perfect scuba diving holiday. 4 flights. 3 cities. 2 airlines.1 boat ride. Total travel time: 29 hours and 40 minutes. Lying in a hammock, watching the sun sink into the sea, while white-tip reef sharks swim under my water cottage hunting a school of fish: Priceless!
Reaching Papua in New Guinea, Indonesia seems like quite an ordeal on paper and will perhaps turn off most travelers from ever going beyond the traditional tourist hot spot of Bali in Indonesia, but for me spending an entire week in Papua Paradise Eco Resort made the journey completely worthwhile. Located in the famed and undisputed capital of scuba diving in Asia, Papua lies at the heart of the most bio-diverse marine region on earth – Raja Ampat. Literally meaning ‘The Four Kings’, the lexis used to describe this remote corner of the world includes ‘breathtakingly beautiful, enchanting, nature untouched’ … and none would be far from the truth. For me, it is ‘Heaven on Earth’! In order to experience the majesty of this exceptional variety of coral and marine

life, I stayed at the PADI-certified resort, Papua Paradise. Managed by a couple – Leah Sindel and Chris Hamilton – the resort provides the ideal gateway for anyone wanting to leave the turmoil of city life behind and move to a simpler, more rustic, perhaps slower, pace of existence. Birie island is home to only the Resort and its staff and it’s approximate 2km circumference can be traversed in less than 30 minutes. Keeping with the eco-friendly axiom, all guest cottages are built over the coral reef with natural materials by traditional construction
methods and face the sunset. Most evening, after a rigorous dive schedule, I’d curl into a hammock with a Kindle and watch the sunset as nature put on her colourful show. If that isn’t enough, Paupa Paradise’s two house reefs are good for both diving and snorkeling. With experienced dive masters, who were willing to go the extra nautical mile to ensure the safety of guests and the reef alike, within seven days of stay there, I had spotted white-tip reef sharks, walking sharks, blue spotted stingrays, octopuses, lobsters, crabs, sea
Travel snakes, eels and not to forget the hundreds of varieties of fish; and often from the comfort of my cottage. Of course, for a closer look you’ll need to jump into the water that’s 2830°C all year around. Birie island’s 30 plus dive sites give you access to some of the richest coral reefs in the world. Crystal clean bays, mangrove shores, deep water reefs and a WWII plane wreck offer perfect opportunities for all levels of diving. Don’t fret if you don’t know how to dive; the dive managers are happy to teach or even give you a refresher course. The sheer plethora of life, color, size and shapes is awe inspiring at any depth. All in all, Raja Ampat offers enough adventure for amateur or advance divers alike, or even for a snorkeler looking for a lazy float. With friendly staff, an atmosphere of trust and a sense of complete freedom, it doesn’t take long for the resort to become a home away from home. During my time there Lithuanian, German, Dutch, Australian and Japanese guests of all ages mingled, swapping stories, four times a day during meals in the sea-view restaurant that provided a mix of homely western food and some extremely delectable Indonesian fare such as NasiGoreng, MiGoreng, Beef Rendangand fresh fish dishes.

Each morning, I was woken by the chirp of a thousand birds leaving their nests for the day and each evening, was lulled into sleep by the rhythmic sound of the waves hitting the white sandy beach behind my cottage mixed with the cacophony of crickets and frogs that sounded almost orchestrated. Bahrain Confidential (BC): What skillset does Manchester United Soccer School (MUSS) look at for the selection process? MUF Coaches (MUF): It’s important to be the entire package. Of course talent and technique is important but we don’t just rely on that as there are many players who have natural ability. We also see other elements like leadership skills and soft-skills. It’s important as to how the player carries himself or herself on the pitch. Physical maturation is another aspect, basically how they use their body. BC: What do you think of Bahrain’s football talent? MUF: We’ve witnessed a huge energy for participation at the tournament, this year. The kids were great. No one

This is demonstrated by Sir Alex Ferguson being at the helm for over 26 years. We really look after our own, be it ambassadors to the club or young kids coming through.

BC: How was the overall experience of being in Bahrain? MUF: It was an absolute pleasure coming here. We have been working with VIVA telecom for the past three years now and they are doing some fantastic work in the region. Back home we work for the Manchester United Foundation, basically working in the community, globally. We were happy that VIVA also shares these values to inspire potential and fulfill dreams.

Tamkeen Expands SME Financing Programme Tamkeen has signed an agreement with Bahrain Development Bank (BDB) to add BD10 million to the Enterprise Financing Portfolio as part their joint objective to ensure the availability of lowcost financial solutions for SME enterprises in Bahrain, which is under the framework of Tamkeen’s SME financing programme, one of the key initiatives launched by Tamkeen. The programme is offered by Tamkeen through a number of leading local banks, including BDB, whereby Tamkeen subsidises 50 per cent of the profit on the loan amount. With the agreement, the total value of BDB and Tamkeen’s Enterprise Financing Portfolio increases to BD110 Million, and the number of beneficiaries is expected to reach around 3760.

Toyota Consolidates its Position in the Gulf Region Toyota announced a strong growth performance in the Gulf Region, selling 158,223 units in Q1 2013, which resulted in the brand further consolidating its position with a 39.6 per cent market share. In achieving this performance, Toyota registered a 23 per cent increase in sales as compared to the same period in Q1 2012. This impressive first quarter growth in the GCC follows the record sales performance of Toyota last year, when over 593,000 units were sold. A strong lineup of products backed by a robust after sales service along with emphasis on the development of new designs, product innovations, quality and reliability seems to have a favourable impact on the customers. Toyota’s SUV product range did exceptionally well in Q1 reflecting the demand for this category of vehicles among consumers in the GCC. Toyota
PRADO sold 18,443 units to post a 56 per cent growth in unit sales year on year, while the new look RAV4 sold 3,057 units for a 51 per cent increase in sales during the same period. Toyota Avalon received a good response from customers in the region recording sales of 3,998 units to register a 58 per cent increase and the Yaris recorded sales with 9,221 units to register a 56 per cent increase in sales. In terms of new launches in 2013, Toyota introduced the 2013 Avalon in the GCC market in Q1. eter Lyons moved to the island only a few months ago and has the ball rolling already. Having rich experience with names like UK based Chaophraya Group and Papa G, he intends to enhance the guest-experience at all BFLC restaurants. Prior to this he worked in Qatar and shares that he prefers Bahrain to his previous base. “The people here are very hospitable.” While in Qatar, Peter managed The Noodle House which was franchised by Jumeirah Group. He admires Jumeirah Group’s approach to training and aspires to develop a good training methodology for his team in Bahrain. “Every individual learns differently,” he says and adds that it’s important to train according to one’s needs. He believes that there is a difference between service and hospitality and is determined to incorporate this at the properties he’s managing. He says that service is mere order-taking; a ‘yes sir, no sir’ approach but hospitality is building a relation with guests. “We need to be hospitable not only with guests but also with colleagues. If I’m not nice to one of my colleagues then she in turn may not be nice to her subordinates and ultimately the guest will suffer.” As part of the training, Peter makes it a point for waiters and waitresses to taste for themselves the various dishes. “We want our staff to know everything about our food from the history of dish to the ingredients that go into them. We always use fresh ingredients and our food is not mass produced.” The pizzas at Cucina Italiana for instance use fresh dough and are baked in a wood burn oven giving them a smoked flavour. Cucina Italiana has a skilled Italian chef who conducts cooking classes at the restaurant. What began as monthly classes, are now being held three times a month. There are plans to add a fourth session which would feature
a Masterchef competition. School visits will soon be arranged at Cucina Italiana where children can create their own pizzas and will be taught the basics about food. Speaking of the food at Bennigan’s Peter shares how the restaurant now offers Irish breakfast - soda bread, black pudding, plum tomatoes and an American one serving pancakes and waffles. Bahrain Confidential explores the basics of this fascinating dish, from Japan’s kitchens. Having entered mainstream cuisine around six years ago it has gained massive popularity with gourmands across the globe.
SushiThe Maki Story T hough Sushi is credited to Japanese cuisine today, this preparation was popular in China before it was introduced to Japan. The early form of the dish, Nare-zushi was first created in Southeast Asia. Translating to ‘sour-tasting’, sushi originally comprised fish that was fermented using fermented rice. Back then the rice was discarded and the fish eaten unlike modern day sushi where the rice is eaten as well. Though there are different forms of the dish today, sushi is essentially made of shari (cooked vinegared rice), neta (usually raw fish or other sea food) and condiments including shoyu (soy sauce), wasabi, Japanesestyle mayonnaise and gari (sweet pickled ginger). Nori, a type of Japanese algae is also used in some forms of sushi like Maki-zushi. The various original forms of Japanese sushi are very different from the more contemporary Western style sushi. The California Roll is one of the earliest Western sushi created to suit the Western palette. The Japanese forms include Nigiri-zushi, Gunkan, Maki-zushi (Futomaki, Hosomaki, Temaki, Uramaki), Oshi-zushi, Inari-zushi, Chirashi-zushi and Onigiri.
In 2002 a visionary by the name of Mohamad (Oliver) Zeitoun ventured into introducing indigenous ingredients, like home-grown olive oil to traditional Japanese cuisine. Since then there has been no looking back! Maki today serves a range of sushi including Amer Maki, Oze Akami Maki, and Tara II Maki. Zeitoun later went on to introduce other ingredients such as balsamic vinegar, wild thyme, and black truffles to maki roll dishes thus redefining Asian cusine. Maki’s new olive oil brand, Oliver’s Table won a gold medal in Japan and was appreciated as a healthy ingredient that can be blended with Japanese and Asian seafood favorites. The restaurant has been presented with many other awards – Best Japanese Restaurant, Best Sushi Presentation and recently bagged a few more at Horeca 2013. Maki Bahrain celebrated ‘Hanami’ (flower viewing) festival that takes place in Japan during spring. Some of the restaurant’s most delectable dishes were garnished by edible flowers. This was the first among other Maki properties to launch this colourful festival. In addition to Bahrain, Maki operates in Lebanon and Kuwait.

Lessons In Life
A boy and a girl were playing together. The boy had a collection of marbles. The girl had some sweets with her. The boy told the girl that he will give her all his marbles in exchange for her sweets. The girl agreed. The boy kept the biggest and the most beautiful marble aside and gave the rest to the girl. The girl gave him all her sweets as she had promised. That night, the girl slept peacefully. But the boy couldn’t sleep as he kept wondering if the girl had hidden some sweets from him the way he had hidden his best marble. Reflection: This simple story gives us a simple lesson that he who does evil expects evil. This lesson applies to all stages and domains of life may it be professional or familial. If you don’t give your hundred percent in a relationship, you’ll always keep doubting if the other person has given his or her hundred percent. Give your hundred percent to everything you do and get peace of mind.
A Good Lesson A lady was driving along with her father. They came upon a storm, and the young lady asked her father, What should I do?” He said “keep driving”. Cars began to pull over to the side, the storm was getting worse. “What should I do.” The young lady asked? “Keep driving,” her father replied. On up a few feet, she noticed that eighteen wheelers were also pulling over. She told her dad, “I must pull over, I can barely see ahead. It is terrible, and everyone is pulling over!” Her father again says, “Don’t give up, just keep driving!” The storm had gotten terrible, but she never stopped driving, and soon she could see a little more clearly. After a couple of miles she was again on dry land, and the sun came out. Her father said, “Now you can pull over and get out.” She said “But why now?” He said: “When you get out, look back at all the people that gave up and are still in the storm, because you never gave up, your storm is over.’’ This is a testimony for anyone who is going through “hard times”. Just because everyone else, even the strongest, give up. You don’t have to ... if you keep going, soon your storm will be over and the sun will shine upon your face again!
