Legend of the Shepparton restaurant, pub and café scene, Mat Innes-Irons spends a lot of time fundraising for the community. Homescape caught up with him on a busy morning at his Fryers St café to find out a bit more about the big-hearted man behind the larrikin. Tell us a bit about your travels. I have many sensational memories of backpacking through Europe in my younger days with my brother Min. We were living on five dollars a day, which we managed to do for about four months, until we got to the Munich beer fest and had a bit of a blow-out there. I went skiing in New Zealand last year – that got the adrenaline going and gave me a zest for putting the body in danger. I’ve done the nice romantic trips with my wife Donna to Tahiti and Fiji, which she says is not even overseas! Thinking back to your school days, can you share some memories with us? My stand-out memories are to do with sport and being a professional cheat on cross-country runs. I’d end up with a group of six or seven behind me ’cos I knew all the short-cuts. It all came undone one day – we were hiding behind the bushes and we saw this kid run past and thought, “He’s not a very good runner so he must be near the back of the pack,” so we came out and followed him and I ended up coming third and had to represent the school! That sort of backfired. I went to Dookie Ag College to study horticulture, but got sidetracked. I decided to knuckle down and study hard one night – and probably only one night – when at about midnight a mate came into my room for a beer but I told him I was studying. He was shocked, but then wet his dacks ’cos I was studying last semester’s work – give me that beer! If you could be Prime Minister for a day what would you do? I’d colour my hair red and have a couple of beers with Tim Mathieson (Julia Gillard’s partner). I wouldn’t make too many rash decisions. I’m not so much into politics. Basically when I cark it I want to have people stand at my grave and clap and say, “Well done Mat” – that’s not going to happen if you get into politics. Which song best matches your personality? ‘Gonna live while I’m alive, I’ll sleep when I’m dead’.

Built in 1913, Chris and Debbie Bell’s painstakingly restored home of 10 years is a credit to their determination to bring this old beauty to her full potential. Polished timber floorboards throughout, original pressed-metal walls and ceilings, ornate fireplaces and antique pieces are testament to the period in which the home was built – if only the walls could talk! Debbie tells the story of how the large Dickinson family who used to live at Earlston would set up trestle tables along the

entrance hall for Christmas lunch. She says the hall, with its 3.6m ceiling, was also a popular spot for a hit of cricket among the many Dickinson boys. These days the entrance hall is lined with beautiful antiques, a luxurious floor runner extends from end to end and there are breathtaking surprises to be discovered behind every door. Enter the first bedroom and the quaint washstand next to the fireplace instantly catches your eye. Here Debbie has added the perfect touch to the elegant timber picture rails that adorn the walls – framed

Raegan shoots for the stars BY DEBBIE MORI

Photo shoots with Hollywood superstars, top fashion models and celebrity music artists are all in a day’s work for former Shepparton woman Raegan Glazner. As personal assistant to internationallyrenowned Australian photographer Ben Watts – the brother of actress Naomi Watts – Raegan travels the world and rubs shoulders with the stars. She lives in an apartment in Brooklyn, New York and takes the train into work at Ben’s Milk Studios, inspired by the sights and sounds of the vibrant city. Chic and confident at 34, outgoing Raegan has never been far from the limelight when it comes to photography. She won four Age Nikon awards as a student at Shepparton’s Wanganui Park Secondary College and, after studying at RMIT, went on to work for worldfamous Australian fashion photographer, the late Richard Bailey, and high-profile photographer Chris Colls, eventually shooting for Harper’s Bazaar, Madison, Cosmopolitan, Cleo, Vogue and Shop Til You Drop magazines.

During a recent trip home to visit her parents, Neil and Vicki Glazner, and her brothers Trent and Daniel, Raegan was reminiscent as she walked the corridors at her old high school, rapt to be back where her passion for photography began, inspired by long-serving teacher Kerry Short. Like a proud father he welcomed her with open arms and his excited group of students were somewhat star-struck, until Raegan’s vivacious and friendly personality won them over. Dropping names like Robert Pattinson, Taylor Lautner, Dev Patel, Uma Thurman, Pierce Brosnan, Miranda Kerr and the Red Hot Chili Peppers, Raegan enthralled her captive audience. The names she rattled off were just some of a long list of celebrities she has encountered while working as Ben Watts’ personal assistant and studio manager.

While Raegan doesn’t actually photograph Ben’s clients, she is responsible for setting up his photo shoots, whether they’re at the studios or in a far-flung international location, and she is “literally” at Ben’s side while he is working. Raegan has a hectic schedule as the famous photographer is always in demand and part of her job is to edit his shots. “We have a really big team of people on set. Most people who come in for photo shoots have a big entourage with them, especially the Hollywood stars. We shoot a lot of hip-hop artists and fashion models,” she says. Raegan has ambitions to launch her own work in New York. “I’ve just been in Paris with Ben and I’ve found some great spots to shoot there for my own personal project.” [hs]

History is viewed through many and varied prisms. And so, when asked to write a history of Shepparton to coincide with celebrations marking 150 years since the town’s official gazettal in 1860, my focus quickly sharpened. To its left is the Queen Anne-style National Bank building of 1887; it, too, was lost to the streetscape.

Here was a sprawling rural “capital” that I’d driven through many times and visited only for social quests. I’d drunk cold beer in a few of its pubs, visited friends on nearby farms, and kicked along the Goulburn’s banks during an occasional stop-over. But for someone outside the valley, what’s more from Melbourne, what possible light could I shed on the state’s fifth-largest rural city, home to Peter Ross-Edwards, crib of SPC, trucking companies, zealous European fruit producers and decadeslong ethnic melting pot?

As it emerged, plenty. Not because I’m an historian or academic or possess the deepest of insights, but because Shepp (excuse the familiarity, but everyone calls her Shepp) has so many rich and diverse layers. True, the landscape is flat, it’s well shy of architectural merit and it’s no top-line natural history idyll, but a great many qualities, has Shepp. Onion-like, peel back the layers and another confronts. And on balance, what the onlooker finds is a gritty, determined place of self-respect, sense of community and agricultural and

horticultural achievement; a cash-rich town with a healthy sense of self but devoid of hubris. But back to the start. Back in December 2009, Bruce Wilson, former mayor and avid gatherer and consumer of local history, and his good-hearted allies at the Shepparton Heritage Centre, outlined what they wanted for their 150-year book. Later meetings refined the plot and process, decade-by-decade research (a chapter for each of the 15) picked up speed, and writing in earnest began in February this year. By July the book’s spine was broken and in early September was bundled off to the printers – locally based Prominent Group, of course. It’s been a sometimes bumpy ride, but a short one. In all good faith (and humility) the end result is an accessible history for general readers. Titled Water: the vital element, 150 years of Shepparton’s growth (agreeing on the title was a work in itself), it reflects upon Shepparton’s rise from a humble hamlet of 30 people in 1860. The narrative, scattered with anecdotes, links the 15 decades of a relentless march to major provincial town status, highlighting the notable and curious facets of this growth. Water – and the virtues of the Goulburn

River catchment – was the chosen theme on which to shape the story because without this “liquid gold” many of the historical and vital advances made by Shepparton and its pioneering people would never have transpired. But this is not a history book. Rather, it’s a book of history. It doesn’t chronicle all facts and figures and notable folks, but connects many of the happenings that made for a prodigious town. For some, seeing Buddha Bux ride his bike off the “top tower” at the Raymond West Swimming Pool to the barking hoots of the urgers-on below, hollering “Geronimo” on his idiotic descent, is highly memorable. To others, it’s the soubriquets Blossom Town, Food Bowl or Heart of the State. Still others cite the establishment of Goulburn Valley Grammar, the growth of GV Health and the hospital, the unavoidable CowParade, or being home to a world-class equine centre at Congupna, as vital benchmarks. For those who like to look at history, the book is liberally illustrated with images that give all generations a window to Shepp; some of these have not previously been published. This latest account of Shepparton’s march, while not always marked with praise, provides due recognition of its progress and, it’s hoped, just the right dose of humour and respect.

True to nature

It’s not only the cows that live an organic lifestyle at Ian and Wendy Klein’s pretty Pine Lodge dairy farm on the outskirts of Shepparton. The couple, foundation members of the popular Australian True Organic brand, have embraced all things natural. The Kleins milk 320 predominantly Friesian dairy cows on their 261 hectare certified organic property. The organic milk they produce is sent off the farm to be used in True Organic’s dairy products as well as Melbourne-based Lemnos Foods and multi-national dairy giant Parmalat’s organic ranges. With more and more organic products available in supermarkets these days, the Kleins’ milk is in constant demand in Australia and overseas.

“If your soil is healthy then the plants are healthy and so your cows are healthy too,” Ian says.

Their environmentally-sustainable property boasts soil that is naturally high in phosphorous, attributable to the fact that they constantly feed minerals to their dairy cows and then convert the animals’ effluent into fertiliser for the farm. The high level of organic matter in the soil produces abundant, healthy, pest-free crops.

In fact the Kleins’ use of natural therapies to treat their own ailments or illnesses is what prompted the parents of five children to convert their conventional dairy farm to an organic enterprise 15 years ago.

Wendy says there are no chemical fertilisers used on the farm and if a cow does get sick or injured, homeopathic remedies, vitamins, minerals and herbs are used to treat the animal. “We don’t use any antibiotics, hormones or drugs of any kind on our cows,” she says.

“We’re trying to lessen the impact we have on the environment in any way we can. We recycle as much as possible. Water is harvested from the roofs on our property and used to clean milking machines and the milk vat. It then goes into the dairy effluent pond. Any water run-off on the property goes to the lowest point on the farm – which has a large recycling system – to be used again for irrigation,” she says. The Kleins have a compost heap which they use for farm fertiliser and they mulch their tree plantations with newspaper and old straw.

“The Organic Food Chain audits the farm but the certification process is overseen by the Australian Quarantine and Inspection Service. Every year we have an on-farm audit. They go through our records, inspect the property and take soil samples,” Ian says. “We have to have training records and we also have an environmental management system,” Wendy adds. The Kleins’ dairy herd has produced more than 1.7 million litres of milk this year, some of which has been used to make

Lou Costa’s charming private oasis just outside Rushworth is the perfect example of gardening with personality. It is also a magnificent model of the serious environmental message very close to this landscape architect’s heart. In an area devastated by drought for the last decade, Lou’s garden is a picture of health with lush growth and an abundance of self-seeding plants and bird life to signal the general wellbeing of the bush block. All this has been achieved with limited water, no artificial fertilisers and a tiny budget.

You see the talented garden designer is passionate about living harmoniously with her environment, and her own private patch is a pure example of what can be achieved without interfering with the natural cycle of life in the garden. the natural flow of water when it rains and many of the plants in Lou’s garden grow wild in the surrounding bush. “This is a philosophical garden. It shows that you can have a happy, healthy and attractive garden without messing too much with the gene pool. I wanted to create a landscape where the line between garden and bush is blurred. The transition needs to be subtle.” When Lou arrived at the property five years ago she had to improve the Capeweed infested, compacted, very gravelly earth before she could plant anything. “It was in the middle of a drought, so it was hot, dry and dusty. Every time the wind blew, the dust would swirl around and there wasn’t much topsoil left. It was a very desolate kind of space.” To deal with the poor soil Lou brought in truckloads of eucalyptus mulch from locally pruned trees which has broken

down and turned into soil. The tree mulch provides nutrient and, combined with gravel mulch, retains moisture to nourish Lou’s hand-collected seed and lovingly nurtured seedlings. Lou collects seed within a 20 kilometre radius of her property. “The plant communities in my garden replicate what is in the surrounding forest and that is the secret to success; find out what your local species are and grow them. This will give you the best rate of success in your garden, especially under conditions like drought,” Lou advises.

Lou’s artistic touches are created from found or seconds objects and inject a magical, fun feeling to her garden. Old wire bed bases are used as decorative wall hangings, broken china and crockery are used to fashion eye-catching mosaics, while an outdoor kitchen, complete with pedestal basin and a bottle collection, is one of Lou’s favourite spots.

It could be the magic spell of a hospitable country town. It may be the feeling of something special in its history-steeped streets, or possibly the delectable local produce that is always available. Mike Wellington and family came to Rushworth for a holiday in 1984 and effectively never left. “We fell in love with the lifestyle and we found all we needed was here. It was a lovely place to visit and now a great place to live,” Mike says. “I know of at least three couples more recently who have chosen Rushworth to retire.” Retired himself, Mike is president of the Rushworth Museum and devotes many hours working to preserve the treasures donated to the organisation for public enjoyment.

“I found myself gravitating to the museum as an interest and it is a wonderful way to be able to contribute to the community.” The collection of memorabilia, housed in the 1913-built Mechanic’s Institute, includes the doors from the neighbouring Whroo church dating back to 1857 and a miner’s bucket from the early 1900s. “you couldn’t put a value on a collection like this. It is very important to the identity of the town,” Mike says.

Mary-Jo fortuna also believes Rushworth is a very special place, describing herself as an “early tree-changer” drawn to “Rushy” in 1975 from Melbourne with her husband and young family.

Mary-Jo knew the town, having spent childhood holidays there with an aunt, and decided it was her long-term home, bringing up seven children on her own after losing her husband in 1984.

These days she travels victoria in her role as la Trobe university shepparton campus coordinator for the faculty of humanities and social sciences, and lecturer in sociology and politics, but is always happy to steer the car home to Rushworth at the end of the day. “I have no desire to live in the larger towns – I like the peace and quiet and feeling of openness outside the cities, as well as the greater sense of being part of a community,” Mary-Jo says. and it is her volunteer role as editor of the local newspaper, Waranga News, for the past 32 years which makes her most proud. “It is very satisfying to be involved in a community-owned publication such as the Waranga News. I’m very committed to the idea of community newspapers and especially their role in small communities. ours has the interests of the community as its main agenda. It gives a voice to local people about issues that concern them, and it lets everyone know what is going on around the local towns.

another local with his finger on the pulse is butcher and town stalwart, Jeff “slim” perry. slim is Rushworth born and bred and is a wealth of information about his beloved home town, sharing all he knows with his customers – who he cheerfully welcomes to his butchery by name – and inquisitive visitors who appreciate him pointing them in the right direction. he has raised his five children in the town with wife pauline and is a true example of what makes rural towns like Rushy not just survive, but thrive. Most recently slim has been instrumental in the establishment and continued success of the town’s community bank. The friendly butcher believes Rushworth is rich in amenities and services with two schools and a kindergarten, health clinics,

sweet success Shepparton-based photographer Serana Hunt, who works regularly for Homescape magazine, has been shortlisted as a semi-finalist in the prestigious Moran Contemporary Photographic Prize 2010. All entrants in the national photographic competition were asked to interpret ‘Contemporary Life in Australia’. Serana says, “The selected photograph is an image of my daughter, Storm and it is a part of a series of photographs, ‘Rite of passage’, documenting young people within our community.” Serana’s photo was one of 238,000 works submitted in all categories of the 2010 Moran Prizes. “To have this photograph selected means the world to me because it means that my work is at a level that I am trying to achieve and it has really boosted my confidence.

“Contemporary photography can often be confronting in its honesty or portrayal, and it can also be stunningly beautiful or unusual. It is very difficult to be recognised in this field of photography as the avenues for presenting your work are limited to finding exhibition space or recognition through artbased competition.” Serana’s photograph, ‘Storm, Twelve’ is on display at the Dookie Harvest Café. A few short years ago ‘skinny latte’, ‘espresso’ and ‘flat white’ were words more commonly spoken in Lygon Street, Carlton or Fitzroy Street, St Kilda, than in country Victoria.

Today however, you can get your fix of great quality coffee right here in the Goulburn and Murray valleys. Yes, Melbourne’s coffee culture has percolated into regional Victoria and it’s not just the humble milky cappuccino on offer. Going out for coffee is now a regular pastime, and more importantly, it’s a social event and one that keeps us in touch with our friends and family.

Here in the valleys our obsession with coffee has reached new heights.

Echuca, for example, has its very own ‘coffee only’ café in BYL Espresso. Who’d have thought five years ago that a café that only sells coffee would survive in country Victoria? Survived it has, and it now boasts more than 100 regular coffee drinkers, consuming up to 45kg of ground coffee a week.

Owner and local identity, Luke Teasdale, says BYL offers a meeting place for locals, where the relaxed and social atmosphere is a high priority, and of course, so is the great quality coffee! Coffee culture moves into top gear at Shepparton’s Bean Around Coffee company, based at The Last Straw Café – a unique straw building where you get to watch and smell the roasting process of coffee beans hand selected from around the world. Only the freshest beans are used in order to produce the quality, taste and aroma that only true coffee lovers can appreciate. These guys take their coffee seriously!

Friar’s Café

The Last Straw Café Seven years ago Friar’s was grinding eight kilograms of beans a week. Friar’s coffee drinkers now consume 30kg of freshly roasted coffee a week, sourced from Shepparton’s Dimattina family, whose passion for roasting goes back generations.

“Friar’s coffee drinkers consume 30kg of freshly roasted coffee a week.” Owners John O’Donoghue and Shingo Fujimoto are obsessed with creating the perfect cup of coffee and ensure each roast, single origin or a house blend, is undertaken with strict attention to detail.

Similar evidence of coffee culture can be found at Shepparton’s Friar’s Café. Coowner Mat Innes-Irons says the coffee business is now a monster and demand for good coffee is at 100 per cent.

The Last Straw Café has a loyal following of regulars who consume 80-100 cups a day. Each cup is brewed from a traditional Italian lever machine by master roaster and barista, Shingo.

“It is a very competitive business and customers will not stand for a sub-standard product. If it is not a damn good coffee it will be sent back, or worse, you won’t see that customer again.

Back in Echuca, coffee addicts flock to the Black Pudding Café and Deli, owned by John and Rob Taverna. The brothers’ strong Italian heritage is evident in their awesome coffee and food and in the friendly atmosphere at this historic port area café.

“What a difference consumer demand makes … 20 years ago it was a spoonful of Caterer’s Blend stirred with an icy pole stick and most people put up with that,” Mat says.

In five years, ground coffee consumption at The Black Pudding has grown from eight kilograms to 20kg a week with up to 300 cups churned out on any given Saturday.

Mat says Friar’s also uses a separate grinder for decaffeinated coffee, and it’s not just Skinny Milk that people like … soy milk is more popular than ever. Coffee culture is here to stay and however you choose to enjoy your daily coffee fix (or two) it’s the taste and the experience that you’ll come back for. SHEPPARTON COUPLE JOCK AND MAUREEN O’CONNOR SHARE THEIR HAIR-RAISING ADVENTURES IN AMAZING NORTH VIETNAM IN THIS NEXT INSTALMENT OF THEIR EXCITING TRAVEL DIARY. We flew into Hanoi, North Vietnam in March where we travelled with a company called Wide Eyed Tours – something I should have paid more attention to, as I was the victim of a pickpocket gang within hours of our arrival! I was trying to save a mate from a girl who was attempting to steal his camera – but after some pushing and shoving, Doug still had his camera, and five minutes later I discovered my wallet containing $300 and my credit cards was missing. After reporting the theft to the police and cancelling my credit cards etc. it was time to have another Jameson and soda and get on with the trip. The next day we took off on a cyclo (rickshaw) tour of Hanoi, which included the Old Quarter and Uncle Ho’s Mausoleum. On our third day we headed north to spectacular Halong Bay for an overnight stay on a traditional ‘junk’ – a bit of an unfair description really, because the traditional motorised sail boat was very comfortable, with great food and a very friendly crew. Halong Bay has some 1690 small islands and emerald-coloured waters. We anchored in time to view the most amazing sunset and with sole use of the

boat, we had a very funny karaoke night. The next morning 17 very hoarse karaoke enthusiasts headed back to Hanoi, passing through wonderfully picturesque countryside and small towns. We also saw lots of rice paddies – Vietnam is the third-largest rice producer in the world. The next day we boarded our coach tour to Cuc Phuong National Park where we went on a seven kilometre walk to see a 1000-year-old tree. The walk took threeand-a-half hours and to me felt more like tackling the Kokoda trail in a day! On return to Hanoi we flew to Hue (pronounced Whay) where the highlight was a five-hour motorbike tour of its war ruins, pagodas, countryside villages and private homes. We were also treated to a vegetarian lunch. Now five hours sounds like a lot, but in actual fact we spent most of the time visiting sites and travelled by motorbike in between – a must-do if you get the chance. By the way – yes, we were covered by our travel insurance. The following day we went down to Hoi An by coach, travelling through the Hai Van Pass and via Marble Mountain. Ah! Hoi An – one of my favourite places in Vietnam. We stayed at the Golden Sand

Beach Resort for four nights of R&R and a swim in the South China Sea, just five minutes from down-town Hoi An. Hoi An is known for custom-made clothes and leather goods, including shoes. We also did the compulsory cooking tour, which was great fun, thanks to a very funny master chef! [hs]

Friar’s Café Legendary Eggs Benedict INGREDIENTS

(Serves 2)

The hollandaise sauce is critical! It makes or breaks the dish. Take a shortcut and you are out of the house!

Is time for Brunch!

Hollandaise Sauce 3 egg yolks Pound of salted butter (440gm) Pinch of white pepper 1 cup of white wine (Sauvignon Blanc or the like – nothing too strong) 1/4 cup of good-quality tarragon-infused vinegar

METHOD Melt the butter in the microwave until completely melted and allow to cool. Mix the vinegar, wine and pepper in a small saucepan and boil over high heat until reduced by 1/3. In a stainless steel bowl (or other suitable double-boiler bowl), add egg yolks and vinegar mix. Whisk constantly over boiling water until it becomes a thick glossy sabayon (thick custardy consistency), but be careful not to take it too far as you don’t want scrambled eggs! By this time the butter will have separated into two layers, one being white and milkylooking, the other one being clear. You want the clear layer. This is called clarified butter. While whisking constantly, add the clarified butter in a very thin stream, keep whisking, whisking, whisking. Your arm will almost break but keep going! You should end up with a beautiful, thick, glossy sauce. If it starts to separate, stop adding the butter immediately and add about 1 tablespoon of warm water, keep whisking and then start adding butter again once it’s emulsified. Most important – don’t let it go cold. Once it’s cold it’s ruined. Keep at around 37°C. Not too hot either or it will separate.

METHOD To finish, layer muffin, ham, eggs and then a generous serving of your delicious hollandaise. Top with freshly cracked pepper. Enjoy!

The trick to perfect poached eggs • Only use really, really fresh freerange eggs. The fresher the eggs, the better the results • Eggs must be at room temperature • Add a dash of vinegar to the water
