Cashiers is located on a plateau near the southern tip of the Appalachian mountains in western North Carolina. Centered around the crossroads of US highways 107 and 64, a small village comes alive with activity in the warmer months when people from all over the south – and beyond – arrive to escape the summer heat and humidity. Cashiers’ name is said to be derived from the gem mining trade that flourished here in the early 1900s. Miners were paid in cash for the gold and gemstones they found – hence the name “Cashiers,” as well as its pronunciation as “CASH-erz.” Because of Cashiers’ location, it remained relatively isolated until the mid 20th Century. The Depression-era Civilian Conservation Corps improved the roads through the area and built the Blue Ridge Parkway. INSTRUCTIONS

(Serves 8)

Rinse and dry the fish. Rub the exterior and interior of the fish with olive oil. Fill the cavity of the fish with rosemary, thinly sliced garlic, and ground black pepper.

Salt Baked Fish INGREDIENTS

• 2-3 # Sea Bream or Sea Bass (cleaned and scaled) • 2 tablespoons of Georgia Olive Farms - Extra Virgin Olive Oil or substitute • .5 tablespoon fresh ground pepper • 4 cloves garlic sliced thin • 3 sprigs fresh rosemary • 6 cups coarse sea salt • 4 egg whites • Zest of 2 lemons • 1 lemon cut into wedges

Preheat oven to 350 F

Whip egg whites to stiff peaks. Fold egg whites and lemon zest in with salt. On a baking sheet lined with tin foil, form a layer of salt with about half of the salt mixture. Place fish on top of the bed of salt and cover with the remaining salt mixture. Stuff fish with lemon wedges and secure fish with an oven-safe string. Pat the salt down and shape firmly around the fish. Bake fish for 40-45 minutes. Let fish sit for 10 minutes before cracking salt cast with a fork. Remove fillets of fish, drizzle with olive oil, and serve with fresh lemon wedges.

• 2 cups buttermilk • 4 cups fresh frozen peas

Mint and Spring Pea Soup

• 8 mint leaves • 1/4 cup of roasted and chopped pistachios • greated nutmeg (to garnish) INSTRUCTIONS Before you begin, have a large bowl of ice and water (big enough for your saucepan of buttermilk) and set aside. In a saucepan, place the buttermilk and bring to a simmer. Once simmering add 4 cups of peas and a small pinch of salt, simmer for 2 min over medium heat. Keep a close eye on the buttermilk, so it does not boil. The peas should be tender and not be fully cooked. Once cooked, immediately place saucepan in the ice bath and cool, stirring mixture until chilled. Once cooled, add peas and buttermilk to the blender, add mint leaves and blend on low speed for about a minute. Pass the soup through a fine-mesh strainer and chill immediately. To serve, place in a soup bowl and garnish with chopped and roasted pistachios and a small amount of grated nutmeg.

MEET THE CHEF Isaac Werre started his career at Le Cordon Bleu Culinary School near Rochester Minnesota, where he was born and raised. After graduating, he moved to Miami and worked under Chef Norman Van Aken at Carysfort in the Ocean Reef Club. After his tenure in South Florida, he traveled in the U.S. working and staging at various 5 star and Michelin rated restaurants such as Boka in Chicago and Chez T.J. in San Francisco before moving back home to follow a career as a personal chef for Minnesota Timberwolves player Kevin Love. Missing the restaurant business, he and his wife moved to be with family in Paso Robles, CA. He worked at DAOU Estate Winery and Justin Vineyards. While at Justin, The Restaurant at Justin was named Food and Wine, 'Winery Restaurant of The Year.' He brings his incredible talents to the High Hampton Inn here in Cashiers and now shares his favorite winter and spring recipes with Landmark. FAQs How is the WiFi in your rentals?

Local infrastructure is not the same here as it is in metropolitan neighborhoods. While most properties do have WiFi, the connection speeds are slower and cannot handle streaming on multiple devices simultaneously. We encourage our guests to take full advantage of the mountains and get out to explore and enjoy.

Do you offer pet-friendly rentals?

Yes! We welcome dogs at many of our rentals. Please see our website for specific properties. There is a non-refundable pet fee.

Are there any amenities offered?

While Landmark Vacation Rentals does not offer any amenities, we do have several properties that provide our guests access to community amenities as well as close proximity to public access activities.

What activities are there nearby?

There are many hiking trails for everybody - not to mention the waterfalls in the area and the unique shopping. Ask our rentals team or check out our blogs at landmarkvacations.com for more suggestions.

What should I bring?

Your toothbrushes and personal care items. Landmark Vacation Rentals prides itself on its professional laundry service, which provides bed linens and bathroom towels. A starter kit is in the home when you arrive that includes coffee, dish soap, dishwasher pods, a scrubbing sponge, laundry detergent, paper towels, toilet paper, and hand soap.

What about wildlife?

Western North Carolina has abundant wildlife (bears, deer, turkey, snakes, and more). Please do not feed the bears! Garbage disposal instructions are provided for each property. Garbage needs to be properly bagged; most homes do have garbage pickup. Please help us keep you and our wildlife safe by following our instructions.

What is your cancellation policy?

Please refer to our website for exact details - these may vary from property to property.

What if I arrive late for check-in?

We provide three after-hours check-in locations. You will be directed to the most convenient location for your rental property, where you will pick up your check-in packet. Your packet will include printed directions to your rental. Please follow the printed directions as GPS isn’t always reliable on the mountain.
