I

am writing this during the snow-mageddon - hunkered down with a blanket and heated rice pack! Thanks to my hard working staff, our February issue of Purchase Area Family is ready to hit the press - snow, or no snow!

I have a love-hate relationship with cold wintery weather. On the one hand I enjoy spending a day snowed in with my husband and furry friends. There’s nothing like a bowl of my hubby’s homemade soup and a good book! On the other hand my arthritic feet and hands hate the cold weather and will ache until Spring. We hope you enjoy this month’s magazine. We’ve featured some great local businesses, fun events to entertain you and a local landmark, The Hotel Metropolitan, that’s coming back to life. I’m very excited about the entrepreneurial spirit that’s clearly alive and well in western Kentucky. Check out the winner of the Small town, Big Ideas competition and look for another round of this competition which is based on the hit TV show, Shark Tank.

I opened and ran it for him until 2005 when I was given the opportunity to purchase it, and the rest is history, so to speak.” Linn and Jennifer dated for a few years before getting married in 2006. “At first I just helped out at the business,” explained Jennifer. “Then in 2007 I quit my job and started working here full time. For a couple of years it was just the two of us and one technician; that was all we could afford! We really both did everything from parts and sales, to delivery and book keeping. So very long days.” “Our Customers Are Our Friends” Linn and Jennifer love what they do. “Our customers are our friends,” Jennifer told me. “They don’t just come to the showroom when they need a piece of equipment, they come and hang out just for the conversation and to say ‘hello.’” Over the past 10 years, Horizon Lawn and Tractor has grown to a thriving business with nine full-time employees. “We carry the full line of Kubota equipment including lawn and garden to agricultural tractors with up to 141 HP,” Linn told me. “I would classify the bulk of our customers as large property owners or, ‘hobby farmers’ as they are referred to in the industry. This is anywhere from two acre estates to hundreds of acre hunting properties. We also serve the farming community, chicken producers and tobacco and hay farmers come to us for products and support. In addition to tractors and implement we sell over 100 0-turn mowers each year to commercial landscaping companies and home owners. We really have a product to fit any need.”

Over 20 Years in the Business “I was working for Larry Sanders at James Sanders Implement back in the 1990s” explained Linn. “A local Kubota dealer in west Kentucky went out of business and I had the opportunity to get that product line. I oversaw that for Larry and in 2002 he

Linn and Jennifer sat down with me recently to talk about their family business and how they came to own a business they love.

A Truly Family Run Business Horizon Lawn & Tractor is a family run dealership through and through. “Customers sit at the counter and chat,” added Linn. “When the twins were born just about everyone stopped by to say ‘congratulations' and see them. One couple even made little Kubota outfits for them!” “My family and parents have owned businesses in west Kentucky my whole life. I learned a lot of my family business values and practices from my mom and dad. Larry and Harrietta Harper both worked in the McCracken County school system, as well as owning small businesses around the Paducah area. They taught me a lot about doing things the right way. I truly believe it’s important to treat people well and keep your word - do what you say you're going to.”

Linn is from the St. John’s area of McCracken County and Jennifer is from Fancy Farm in Graves County. They live in Ballard County now. The store is between Mayfield and Paducah so they have strong tires to several communities. “We participate heavily in school fundraisers, volunteer and charity activities,” Linn told me. “It’s not possible to do it all but we want to help. To me, it’s an obligation to give back to the communities that support us. We wouldn’t be here without these folks.”

Linn and his family are avid hunters. In fact there might be more taxidermy in the showroom than tractors! “My brother Cliff, my dad and I are avid hunters,’ Linn explained. “We bow hunt elk in Colorado and New Mexico every fall as well as deer and duck in Kentucky, Tennessee and Missouri throughout the winter. We’ve had the opportunity to harvest bear, caribou, mountain lion and more over the years. As with many people in our area the outdoors is an important part of our heritage. There are life lessons learned in the woods that can’t be taught anywhere else. I feel very fortunate to have been raised this way and look forward to teaching my children the same values. With our bow and we like to have them mounted and displayed at the shop. I love it when it goes from dark and silence, to daylight and the whole world gradually comes alive.” Pride of place in the showroom is a 6 x 6 buck and in the office, a beautiful turkey. “Well that’s a funny story,’ Linn said. “I took my 7-year-old son out hunting one evening and we trailed these turkeys until they were in a big field. They were way too far off to shoot at, but it was his first hunt and he wanted to try. I nearly fell over when he hit that bird! It was an incredibly lucky shot, or an incredibly unlucky turkey.” Linn says he’s happy to show off the taxidermy to anyone who stops by - whether they want to see a tractor or not!

Doing What They Love Horizon Lawn and Tractor is not only a business to the Harpers. “It’s my hobby as well,” confessed Linn. “I like being here. I enjoy the people I work with and the many customers we have.”” I’ve been doing this 21 years and many customers have followed me since the early to mid-90s, and stayed with me. We have some second generation and now third generation customers who are on their third and fourth product. They have traded in and rebought because they love the Kubota products. We’re thankful our customers are very loyal.” Why Kubota? “Kubota is unique in that they focus exclusively on the smaller market equipment,” explained Linn. It’s a narrower focus and you can see that in the product quality. They are a very old Japanese company that dates back to the 1800’s. Japanese engineering is some of the best in the world and it’s reflected in the products. They’ve been in the US since the 70s and have become the best respected small equipment company in the world.

Amazing Detail Bodies Revealed displays the human form tastefully yet artistically. The polymer technology allows us to see human movement as it affects our body’s muscles, tendons and nervous systems. Unique Education “Seeing promotes understanding, and understanding promotes the most practical kind of body education possible,” states Dr. Roy Glover, chief medical director for Bodies Revealed. “The body doesn’t lie!” Unlike models that idealize the body through the eyes of an artist, the specimens in this exhibition will show the body and its parts as they really exist. Models have been used for many years to teach about the body, however, they do not allow for any variation in structure or pathologies – which is key in noting how unique our bodies are.

bet you think you know what the inside of your body looks like? Bones, veins, arteries, muscles – we’ve all got a pretty good idea of what they look like, right? Or do we? Discovery Park of America, in Union City, Tennessee, has a new and amazing traveling exhibition, Bodies Revealed. This international presentation both informs and inspires. It features more than 200 human bodies and specimens that have been carefully and respectfully displayed for visitors. Bodies Revealed offers a rare glimpse into the structure and functions of the human body. It’s a unique view inside the human body and its inner workings as well as an extraordinary learning opportunity. Bodies Revealed will be at Discovery Park of America in the ATA Traveling Exhibit Hall beginning Friday, January 29. The exhibit runs through May 1, 2016. The popular exhibit will offer area

The Polymer Process Polymer preservation, the process used to preserve the specimens for Bodies Revealed, is a revolutionary technique in which human tissue is permanently preserved using liquid silicone rubber. This prevents the natural decay process, making specimens available for study for an indefinite time period.

Polymer preservation provides a closer look at the skeletal, muscular, nervous, respiratory, digestive, urinary, reproductive, endocrine and circulatory systems by unveiling the mysteries of the human anatomy. How It Works: • Anatomists fix a specimen with chemicals to temporarily halt the decaying process. They then dissect it to expose important structures. • All of the water is removed from the specimen by replacing it with acetone. • The specimen is placed into a liquid silicone mixture within a vacuum chamber. Under vacuum, the acetone becomes a gas that is completely replaced by the polymer mixture. • Lastly, the silicone polymer is hardened. The end result is a dry, odorless, permanently preserved specimen containing no toxic chemicals. It retains the look of the original, but functions as if it were rubber. Preparation time varies. A small organ may take only a week, while a full-body specimen may take up to one year to prepare.

ith the help of local marketing and social media firm Socially Present, one lucky man is getting to bring his invention to a market near you!

Strapping Down a Cooler Jason Carnes, a lineman for Paducah Power Systems, was frustrated. He wanted to mount his cooler on to a vehicle so it was secure when it moved. He studied and pondered why this was such a daunting task - after all, it was just a cooler, strapped to another surface.

A Eureka Moment That was three years ago. After many months of brainstorming, he came up with the Cooler Commander, a tie-down that ratchets around a cooler to keep it attached to ATVs, boats and other power-sport vehicles. “After months of building, and learning to sew, I came up with the Cooler Commander,” he old me. “After using it once, and seeing my riding buddies fall in love with it, I knew it was time to file patents and see how far it could go.”

“One winter weekend I was riding with a large group of side by sides and ATV's. I had spent 10 minutes or more tying my cooler down - for the second time!” Carnes explained. “As I walked around, looking in the back of people's rigs, I noticed the chaotic ways the coolers were tied down. It seemed that in order to get a drink you had to remove two or three straps or cords! I went home that night and looked for a better way to tie my cooler down, but the only thing I found entailed modifying my rig. I knew there had to be a better way to solve my dilemma.”

Perfecting the Pitch Carnes, together with eight aspiring entrepreneurs, participated in workshops over the past four months. The workshops was designed to get him ready to present his idea at Paducah's first Small Town Big Idea - a Shark Tank-style pitch competition The workshops had specific focuses such as product, process, people, and profit. They highlighted resources to help advance these unique business ideas Small Town – Big Idea Small Town, Big Idea is a joint-effort to help someone in a small town or small area launch their product or service, and give them the practical tools to do that,” explained Jonas Neihoff, president of Socially Present. His company partnered with the Kentucky Innovation Network in Paducah to offer the workshops. "We developed a series of workshops to provide the basics for an entrepreneur to either launch a business, or sell that idea to investors,” Neihoff told me.

It’s A Winner! Carnes winning sales pitch earned him $20,000 in cash and prizes at the Small Town Big Idea Pitch Competition held this January. His prize package included such things as legal and marketing services, advertising and IT support from competition sponsors - the things he’ll need to get this great product to market.

Second place, and a $750 prize, went to Amber Barnett for Micropolitan, an online e-commerce marketplace aiming to bridge the gap between art and business in Paducah. Third place with a $500 prize, and the audience favorite award, went to Erin Hendley for her idea to expand her already successful downtown makeup artistry business into an innovative tourist attraction. She plans to construct a building in the shape of a giant tube of lipstick! Other ideas ranged everywhere from a portable device that chills drinks and freezes ice cream to a high-end Paducah-area boutique. The judges’ panel included several local business and economic development representatives. Cooler Commander Jason is proud of his invention and his victory in this competition. “Cooler Commander is a one of a kind tie-down system for your cooler that utilizes patented swivel-cam technology, “ explained. “It allows you to secure your cooler to whatever fuels your outdoor passion. One of the best things about Cooler Commander is that it requires no modification to your cooler or your vehicle of choice.” Carnes is ready to hit the ground running with his product. “I never considered myself an inventor or business man,” he told me. “I just solved a problem that myself and others have while riding off-road. Now, I will start attending off-road mud events all across the US and building the Cooler Commander brand.”

Hakuna Matata! The Lion King Play

T

he Lion King was Disney’s first original animation - that’s right. It was the first full-length animated film that wasn’t adapted from a pre-existing story. In 1997, after the success of the movie, Hans Zimmer brought the beloved movie to life on the Broadway stage. Disney’s The Lion King has captivated the imagination of audiences around the world. Now, you have the opportunity to see local elementary school students in this one-of-a-kind musical. The African savannah comes to life in Paducah. See Simba, Rafiki and an unforgettable cast of characters, journeying from Pride Rock to the jungle and back again, in this inspiring coming-of-age tale. “Everything the Light Touches Is Our Kingdom” Clark Elementary School will present Disney’s The Lion King Kids, March 28-29, 2016 for its 10th Annual Affair of the Arts. There are over 50 students involved in the production and presentation of the play. The students auditioned in December and found out right before Christmas break if they were cast for the play. There were so many great auditions that second round was held in early January. Students read from the script for Mr. Julian and Mrs. April Cochran from the Market House Theater. From January until the performance at the end of March, students will rehearse after school, on Mondays and Thursdays, for 60 to 90 minutes. “We just spent our first rehearsals on the opening song, ‘One By One,’ which only lasts a couple of minutes in the show,” explained music teacher Dale Julian. The song uses languages from Africa, including Xulu, Xhosa, and Swahili. Kids have to make a clicking sound that’s a part of the dialect. They are definitely having fun with the music. Missy Kern, Clark Elementary’ s art teacher, will be helping create the elaborate costuming and sets for the musical.” Maya Romanak who is cast as Pumbaa, the warthog, is a fifth-grader who is a three-year veteran in Clark musicals. “I like that we get to bring movies to life,” she told me. “When I watch movies, I always think, ‘What would I do if I got to be that character?’ When we have these plays, and I get to be these characters! Not only is it a lot of fun, but it helps me be a better speaker and singer. It will probably help me get a job in the future.”

“Tastes Like Chicken” The first performance will be held on Monday evening, March 28th. It will be a dinner theater and auction. Tickets for the dinner theater range from $1520 and go on sale at 7:30pm on February 23rd. Tables seat 10 people, and there are 32 tables. The dinner is a catered, sit down dinner. Students at Clark School will help serve the meal.

FEBRUARY MONDAY 1

During dinner a local auctioneer will auction off art items created by the students under the support and direction of Art Teacher, Miss Kern. After the auction attendees can sit back and enjoy the show! Tuesday, March 29, will be a second opportunity to see this local production. This presentation will be held in the Godwin Gymnasium at Clark School and is just $5 a ticket. Tickets can be purchased at the door. “Circle of Life” Music Theater International rents the shows to groups like Clark Elementary to perform. This program gives the school a license to produce the show. In addition to a license, The Lion King Experience features a rigorous curriculum designed to introduce teachers and students to a wide range of theatrical skills. With this particular show MTI has included short informational videos on different areas of theater, plot, music, using original actors from the Broadway production. The kids will get to see how all the parts go together and the original behind-the-scenes experience. Clark Elementary had a lot of help from The Market House Theater, especially Michael and April Cochran. They provided leadership, guidance, support, and hours of time to the students at Clark. “Their support and expertise are what allows our students the time to shine on stage and begin their engagement in arts education,” said Paducah Head Start director and student Mom, Kristy Smith Lewis.

estern Kentucky Community and Technical College (WKCTC) is getting ready for its annual ‘Super Sunday’ celebration on Sunday, February 28. The staff at WKCTC, together with civic leaders and local clergy, invite African-American, Hispanic and Latino students, and prospective students, to this very important event. This this is the sixth year for this education information fair that allow WKCTC representatives to connect with prospective college students and their families. What is Super Sunday? Super Sunday is an annual initiative organized by the Kentucky Community and Technical College System (KCTCS). Each of its 15 colleges, as well as the system office, have joined pastors all across Kentucky to promote the importance of education and to share the same message with their congregations - “Yes, You Can Go to College.” “WKCTC is seeking to reach out to the Hispanic and Latino population to increase their understanding of the value of higher education,” said Dr. Belinda DaltonRussell, WKCTC Vice President of Student Development-Student Affairs. “We want to show them how college can positively impact lives for current and future generations. The college would like to increase diversity on our campus and to make sure everyone is included in the education process, and

the ‘American dream’. Super Sunday is a great opportunity for the college to learn about the barriers that prospective Hispanic students face. It is also an opportunity for the community to learn how WKCTC can provide support.” Inspired to Dream The partner church for Super Sunday 2016 is St. Thomas More Catholic Church in Paducah. Super Sunday church service will begin at 1:00 pm, with the educational information fair immediately following in the church fellowship hall. WKCTC President Barbara Veazey and Mayor Gayle Kaler will speak briefly during the service. Miguel Lemus, WKCTC Graduate/ Speaker will share his testimony about overcoming adversity, career preparation and how education has changed his life. Celebrating Leadership and Success Pastor Raynarldo Maurice Henderson from Washington Street Baptist Church, together with Elizabeth Khadem and the Paducah Race Unity Group will each be presented with a Diversity & Inclusion Leadership Award. This was first awarded in February 2015. Each year, the KCTCS colleges select someone who has excelled in life as a result of attending college, and earning a degree, to be in the Super Sunday Hall of Fame. This year, Victor Escalante is the WKCTC Hall of Fame recipient. Victor earned an Associate in Science from WKCTC and went on to earn a Bachelor of Science in Chemical Engineering at University of Kentucky, Paducah Campus. He has pursued his dreams and is an inspiration to prospective students.

Dr. John Colgan: Colgan Pediatric Dentistry Proper care for baby teeth is imperative as they serve several critical functions, including: Fostering good nutrition by permitting proper chewing, aiding speech development, and helping proper development of permanent teeth by saving space for them. The American Academy of Pediatric Dentistry (AAPD), American Dental Association (ADA) and the American Academy of Pediatrics all recommend a dental visit for children by age one. Baby teeth are vulnerable to tooth decay from their very first appearance, on average between the ages of six and 12 months. The associative pain of tooth decay can prevent a child from eating correctly, impacting overall health and development. Additionally, undetected and untreated tooth decay can lead to infection, loss of teeth and expensive and mostly preventable

emergency and restorative interventions. A scientific paper in the journal Pediatric Dentistry revealed that children who wait to have their first dental visit until age two or three are more likely to require restorative and emergency visits. Pediatric dentists can detect early tooth decay, provide parents with information on proper oral and facial development, and determine fluoride needs and more. The year one dental visit can actually save money. A study in the journal Pediatrics showed that children who have their first dental visit before age one have 40 percent lower dental costs in their first five years than children who do not, due to the cost of dental and medical procedures that may be necessary as a result of poor oral health. Even before baby teeth appear, infants need proper oral care and fluoride supplements to help developing teeth grow strong. Parents should clean infant mouths and gums regularly with a soft infant toothbrush or cloth and water. Children older than six months need fluoride supplements if their drinking water does not contain enough fluoride. Fluoride supplementation in infants has been shown to reduce tooth

decay by as much as 50 percent. Babies should be weaned from the bottle by 12-14 months of age and breast-feeding should be discontinued once the first baby tooth appears and other sources of nutrition have been introduced. Parents should use a tiny smear of fluoride toothpaste to brush baby teeth twice daily as soon as they erupt. Once children are three to six years-old, then the amount should be increased to a pea-size dollop. Beverly A. Good preventive care starts at age one. This visit is to examine the child’s teeth for decay, learn about the tooth eruption process, learn about good oral hygiene, and have a fluoride treatment. Early care translates to a cooperative child. Just like any other hygiene practice, there is resistance on occasion. When a child has his teeth brushed thoroughly before he or she knows the word tooth, brushing is a part of life, just like a diaper change, or bath time. Good prevention, that is proper tooth brushing and diet, keep the child safe from tooth decay and the resulting dental treatment. An important part of that first dental visit is to evaluate the success of current brushing techniques, and assist the parent in learning how to care for their child’s teeth. Many dietary practices, such as putting a child to bed with a bottle, contribute to tooth decay in the young child. The use of sugary liquids such as juice and milk

in a sippy cup used as a pacifier is a dangerous practice. The best practice is to limit drinks to water between meals. Fluoride is the best protective measure available to prevent tooth decay. Children who are at high risk for decay can benefit greatly from regular fluoride treatments. High risk categories include children who have more than 3 sugary snacks a day, children whose siblings have tooth decay, and children whose families may not be able to afford regular dental care. Preventive care practices can help overcome the high risk. Remember that prevention is economical in time, money, and negative experiences. The goal is to have only preventive appointments with the dentist, and preserve every smile for a lifetime.

The Hotel Metropolitan

T

ina Turner, B.B. King and Louis Armstrong. What do all of these influential Americans have in common? Easy. Besides being famous, and fabulous musicians, they all spent a night or two in our neck of the woods - at The Hotel Metropolitan. This hotel is one of the few African American historical sites still standing in the Purchase Area. Since it is Black History month, it is only fitting that we explore the unique wonders of this historical gold mine. A Real Hotel This hotel was the first of its kind in western Kentucky – place where “colored people” could stay the night. It was owned and operated for, and by, African Americans in Paducah. In 1904, a man named Henry Steed purchased a home on the booming 7th street of downtown Paducah. His wife Maggie Steed wanted to build and run a hotel for African Americans passing through. Henry could not see the same vision as his wife and refused to see it through.

By Ami Middleton something that was a need for this area, she used her husband’s name in order receive rights, and be approved, to build her hotel. A Place to Stay Maggie used the title to her land to make sure she had the materials for the new hotel. Maggie was used to living with strangers, she and her husband, like many others during this time, allowed people to stay in their home while they traveled. This was their way of making a living. When the hotel was completed in 1909, Maggie had used the deed and roughly $1,250 to make her dream a reality.

In a twist of fate, not long after the purchase of his home, Henry passed away. The house was left to his wife, Maggie. In 1908, Maggie decided she was going to pursue her vision, but there was a problem. Women did not have rights to do such a thing until the 1920’s. So, in the pursuit of fulfilling her dream, and creating

Business was not hard to come by and Maggie’s hotel became a staple of the community. The General Association of Colored Baptists in Kentucky, along with several other groups, stayed in this hotel when their conventions took place in and near Paducah, practically when they held their Golden Jubilee at Washington Street Baptist Church. After the word got out, along came many other groups. Music to Our Ears One by one several African Americans came into town and left their mark on the historical Hotel Metropolitan. Many were performers and musicians. Familiar names that contributed to making the hotel’s reputation included Louis Armstrong, Duke Ellington, Cab Calloway, Chick Webb's Orchestra, B.B. King, Bobby "Blue" Bland and Ike and Tina Turner. Several of these celebrities had specific wishes when staying at the Hotel Metropolitan. Ray Charles, for example, did not like to go up and down the stairs so he stayed in a room in the back of the hotel downstairs. Ike and Tina always requested a particular rooms when they visited. Many star athletes spent a night or two at the Hotel Metropolitan including members of the Harlem Globe Trotters and the National Negro Baseball League. The Purple Room The hotel was more than just a bed for the night. In the 1930’s another building was added to the hotel called “The Purple Room.” This room was built because performers who occupied the rooms of the hotel would often get a little rowdy after hours. The room was built behind the hotel in order for guests to have a drink, practice their music and just let loose without disturbing others who were staying. This building still stands today and can be toured along with the hotel. From Hotel to Museum Once segregation ended the hotel lost much of its business and a lot of its luster. It became a boarding house and was very run down. The Hotel was condemned in 1999 and the community became aware of its condition. Cheryl Cooper and I had a shop across from the Hotel, “explained Betty Dobson, director of the Hotel Metropolitan Museum. “Neighbors started telling about the history of the place. We formed the Upper Town Heritage Foundation (UTHF) to try and save the building.”

and renovated the building. Maybe that bed in the Purple Room really did have Ike & Tina Turner sleeping in it!” An Ongoing Renovation The Hotel Metropolitan is still undergoing renovation but is now a museum and open for the public to visit. Using two $100,000 Rural Business Enterprise Grants and $100,000 appropriated by the Kentucky General Assembly in 2000, the UTHF has completed serious structural repairs on the building. You can see the Hotel by appointment and stay overnight in order to get the full experience. When visiting, you can take a tour of the entire facility and who better to show you around than the infamous “Maggie Steed” herself – played by Dobson. Dobson is busy raising awareness and funds to complete the renovations. “Who would’ve guessed such a significant piece of history is placed right in our backyard!” Said Dobson. “Everyone is welcome,” she told me. “It is not only African American history, it is our history, it is your history.”

“Grandma’s Recipes” On February 13th Grandma’s Recipes will be held just as it has been successfully for the past seven years. For only $5 you can come taste some authentic “soul” cooking. Afraid they might “fall through the floor,” neither Dobson, nor Cooper, went inside the building until the state preservation office came to visit. “The brown paneling installed in the 70s was buckling and the floors were damaged,” Dobson told me. “But there was this beautiful staircase that shone through the dust and decay. A feeling came over me and I could just see Elle Fitzgerald and Billy Holiday coming down those stairs – I was inspired! Cheryl and I grabbed each other and we just knew we had to save it.” “That was 17 years ago. Fortunately, the people who owned the hotel had saved many of the original furnishing in the upstairs bedrooms. We put it back into the rooms after we had cleaned

I

f your house is anything like ours you’ve probably just put the last of the Christmas decorations back into storage and are finally back into a routine. During these colder winter months I find myself spending more time at home which gives me an opportunity to browse my cook books. That’s a good thing because it’s almost Valentine’s Day – a great time to cook a romantic meal. A Romantic Foodie I’m a bit of a romantic and enjoy showing the lady in my life that she is loved especially on the romance day of the year. This wasn’t easy to do for the first few years we were together because I worked a swing shift. Unfortunately, I was assigned to work afternoon shift on Valentine’s for the first four years of our relationship. So, we would celebrate the week before when I had an evening off. But then I got promoted and swing shift became a bad memory. That year, I planned a big blow out Valentine’s celebration. I made

reservations at a respectable restaurant in Nashville many weeks in advance to ensure a good table. It had been a few years since I had done something like this and forgot one important fact. Valentine’s Dining Debacle No matter what the movies and romance novels portray, Valentine’s Day is a money making event for restaurants. Many (though not all) will try and serve as many meals as possible to accommodate demand. You may be served by a waiter hired just for the rush of the evening who’s unfamiliar with the food or the restaurant. You may find your service is very quick (so you don’t hang around and more can be served), or very slow (because the kitchen is over loaded with orders.) Set Menus A few weeks after making my reservations and way too late to change them, I received an email from our dining destination that they would be serving a limited menu. For those of you not up on your food service jargon that means the restaurant is probably booked

solid for the evening and the kitchen has set a menu of only two or three options for your meal. In addition, most of these dishes have been prepared ahead of time for expedience. Being the foodies we are, this didn’t sit well with us but what were we to do? We had planned to stay the night in Nashville, so we went ahead with our dinner plans at an up-scale Italian restaurant. The meal and service were less than stellar. In fact, the salad was limp and the main course was lukewarm! Ever since then, we typically stay at home for Valentine’s Day. I cook a special meal, open a good bottle of wine and present my love with tokens of my affection. An Act of Love I’ve always said that cooking for someone is an act of love. Yes it is a necessity that we eat, but what we eat and how it’s prepared makes a world of difference. I’m also of the opinion that everyone should have some basic culinary skills like roasting a chicken, preparing vegetables or a salad, and how to make an omelet. So I’m going to challenge all my male brethren out there to make some plans for this Valentine’s Day - which this year falls on a Sunday. If you feel bold, cook for your partner, but I suggest you check with your partner first as they may be expecting a meal out. (Not everyone thinks that a lovely home cooked meal Valentine’s Day worthy). Fresh & From the Heart If you have limited skills in the kitchen, seek help. There are plenty

broccoli or green beans. If you are really feeling bold, make a nice dessert but to save time and have a guaranteed hit, I recommend a small box of chocolate truffles, paired with a nice bottle of wine or champagne.

Three Cheese Lasagna Serves 6

Lamb Chops Our Valentine’s Day meal is typically lamb chops broiled with garlic and rosemary. The trick to lamb is not to overcook it and we like ours rare, to medium rare. After rubbing the lamb chops with olive oil, rosemary, garlic, salt and pepper, place under a broiler for three to four minutes on each side. Depending on thickness you will have a medium to medium rare lamb chop. I generally will serve this with green salad, steamed broccoli and maybe a potato side. Pair this with a good bottle of Cabernet Sauvignon or Pinot Noir.

of great cooks around that can give you pointers as well as videos of some great chefs on line. The local markets and bakery can help out with ingredients and dessert. The trick is making the meal fresh and from the heart. And if you have the time and the inclination, prepare a “test run” meal or at least the main course that you plan to serve. You gain a bit of experience and know what to expect when the big day comes. Some fairly easy recommendations for a Valentine’s Day meal are Lasagna, Lamb Chops, or Cornish Game hens. All these dishes are relatively simple to make but involve some time to preparation. Any of these main courses can be paired with a green salad, a starch like potatoes or wild rice (except the lasagna), and a green vegetable like

Cornish Game Hen Cornish hens are another option for your special meal. They don’t require a lot of preparation and can make an impressive main course served with some wild rice and green beans or green peas. If you want to try this, I have the recipe posted at iListPaducah.com/ articles/icook. The article is called “Need a little leg?” Lasagna Lasagna is always a popular dish and can be prepared ahead of time and modified to suit the diners. A traditional Italian lasagna may contain béchamel sauce, ragu (meat sauce), and Parmigiano Reggiano (cheese). More commonly in America, lasagna will be prepared with ricotta, mozzarella, and parmesan cheese as well as a tomato sauce and layers of pasta. You can also add zucchini, spinach or ground meat.

Put the marinara into a medium sauce pan and place on stove on medium heat. Add the ground meat, oregano, basil, garlic, tomato paste, and bay leaf. Bring the sauce to a simmer stirring occasionally for 20-30 minutes. Taste and season to taste.

1 – 24 oz homemade marinara or good quality jarred sauce 6 to 9 sheets of Lasagna noodles, purchased or homemade 1 LB Ground beef, lamb or veal, browned and drained 1 TBSP dried Basil 2 tsp dried Oregano 1 tsp granulated garlic powder 1 TBSP tomato paste Bay Leaf Salt & Pepper to taste 1 LB fresh Mozzarella cheese, sliced into ½ inch thick 8 to 15 Oz Ricotta cheese ½ to 1 cup Parmesan cheese, grated Water for boiling pasta

In a large stock or pasta pot, fill about ½ full with water and add salt to season the pasta. Bring the water to a boil and add the lasagna sheets. Cook until the pasta is al dente (done but not squishy). Drain and rinse with cold water and put back into pot. Cover pasta with cool water to keep it from sticking together. Preheat your oven to 350 F with the rack in the middle. Put about ¾ cup of the sauce into the bottom of an 11x7 inch baking dish. Place a single layer of pasta on top of the sauce. Spoon in and spread around 3 or 4 ounces of the ricotta cheese. Place several slices of the fresh mozzarella on top of the ricotta to form a layer. Add ¾ a cup of the sauce on top of the cheese. Repeat this process until you have formed at least three layers or filled your baking dish. Top the lasagna with ½ to 1 cup of parmesan cheese. Set the baking dish on a larger cookie sheet and put them in the oven. Bake at 350 F for 30-35 minutes or until the cheese is melted and lasagna is bubbling. Broil for a couple of minutes to lightly cook the top layer of cheese.

My lasagna consists of three cheeses, beef ragu using homemade marinara sauce, and fresh lasagna noodles. If you don’t have access to fresh lasagna noodles or homemade marinara, use a good quality jar of marinara and dry lasagna noodles but please don’t skimp on the cheese. The flavor and texture of real ricotta and fresh mozzarella (in the deli section) will raise this dish to new levels. If you decide to make lasagna for Valentine’s Day, pair it with a nice light salad of mixed greens, some crusty bread from a local bakery, and respectable Chianti or Pinot Noir. Dessert can be truffles or a fruit cup with some Prosecco or Champagne. One last thing, get your significant other a nice gift and leave the oversize teddy bear at Wal-Mart.
