Making a house a home
t about this time last year we closed on and began to move into our first house. It was hard enough just to find one we liked but furnishing it, decorating it and all the other miscellaneous things that went along with it were gigantic challenges. We’ve spent the past year since move-in day putting in hours and hours of work to make our first house a home. It’s been way harder than I could’ve ever imagined and we still have a long way to go, but it has all been worth it and the perpetual work in progress is coming along nicely. Decorating a home can be such a challenge because of everything you have to consider, from the color of paint to use on a particular wall to choosing rugs, chairs, curtains, and everything in between. With my personal experience in mind, when we put this year’s Annual Home Resource Guide together we tried our hardest to compile a really useful list of our city’s best providers and purveyors as well as some tips and tricks to make your home or design project as seamless and simple as possible. We hope you find it all very useful. Along with our Annual Home Resource Guide we have a ton of great home and design content. At 23, he became Concert Master of the BBC Welsh Symphony; by 24/25, he was Concert Master of the Philharmonia Orchestra of London, and he started traveling to all parts of the world. On one such trip in 2007, Warren-Green was invited to Charlotte as a guest conductor and candidate for the position of Music Director of the Charlotte Symphony Orchestra. “I was impressed by the city of Charlotte and by her orchestra.” Set apart from the other candidates, the committee recognized Warren-Green’s “innate personality and performance background.” He was offered the position and accepted. His wife, Rosemary Furniss and their son Jamie left England and traveled to North Carolina. Both however, retain to this day their relationship with the London Chamber Orchestra where Warren-Green has been Music Director and Principal Conductor since 1988 and Rosemary, First Violinist. Imagine, the changes can take place only after a semester of training,” says Warren-Green. Grades go up, bad behavior goes down, and student self-confidence shines bright with the thought of attending college, no longer a dream but a reality. That is why the Charlotte Youth Orchestra is so important. “We run it, my wife oversees the teaching, and the Symphony Guild helps too,” says WarrenGreen. With the Arts always on the cutting board, “it’s not the future of classical music that’s important; it’s the future of humanity.” Considered a great place to live, Charlotte’s “reputation is global,” explains Warren-Green. As Music Director, Warren-Green works with poise, passion, and cooperation. He is willing to take risks with the symphony and believes in his musicians enough to give them the freedom they need to thrive. Neva Starr of Twisted Metals creates some of the most unique wind chimes you will ever see and hear - all made out of used spoons, forks, and knives of all things - and they are beautiful, both in design and acoustics. by Melissa Justice | photos by Jamey Price
A
n inspiring artist with a mind that bears witness to new creations “born” from inspiration, Starr revels in the natural environment. “Having discovered from childhood a surreal language of artistic form,” Starr realized her view of the world was different. It was an extension of this one into an alternate reality where, empowered, she explores her creative side taking someone else’s trash and making it into “treasured forms.” By trade a graphic designer and photographer, Starr decided nine years ago it was time to widen her horizon and picked up metal working and woodworking skills.

Twisted Metals, is the up-cycling business Starr began in her back yard after her husband’s job relocated the family to North Carolina. Derived out of a need to fight the rising costs of child care, Starr’s hobby of “tinkering” soon became a booming business with current works available for purchase from about 30 different retail locations worldwide, at Patina Home and Gifts, and on etsy.com. Her story is an interesting one. As a child growing up, the Shenandoah Valley and Blue Ridge Mountains were her stomping grounds. Not a girlie girl, she didn’t enjoy playing dress up and having tea with her dollies. She loved playing in
creek beds catching bugs and “critters” and engineering objects made from Legos or anything else she could find. Because the natural world is an important aspect of her work, Starr spends a lot of time hiking and kayaking looking for the odd piece of driftwood or naturally shed moose antler needed to complete a piece. Vintage silver plated flatware from the 1800’s is used to make her one-of-a-kind Spoonfish Chimes, jewelry, ornaments, and other oddities, so Starr scourers antique markets and art shows looking to buy vast amounts. Each piece is handcrafted and unique. By using antique spoons, Starr’s pieces tell a story. She explains that “they get

to speak a history” rather than be discarded, destroyed, and forgotten. “I have a passion for making art that will last for generations to come.” Days are long, usually working 8-10 hours a day, seven days a week. But the job isn’t boring; it includes many perks allowing her husband, Joe, and their children to join her on these adventures. Experimenting with different types of media is something Starr has always done and enjoyed. Encouraged by her husband, Starr tries her hand in what most consider a traditionally male dominated art. With one liners like “Life’s short, Weld in heels” to “Silly Boys; Power tools are for Girls” Starr’s determination is not taken lightly. If she doesn’t have the skill set to complete a project, she “sets out to learn it.” Her approach to art constantly evolves and grows; it’s an extension of self. “I have the ability to simply look at an everyday object, to see its true potential while looking past what it is but more importantly seeing what it can become,” explains Starr.

LIVE EDGES Josh Utsey crafts custom one-of-akind pieces of furniture and lighting in his South End Studio. photos by Steven Mills
Seven years ago, without any experience at all but with a little bit of curiosity, and quite possibly an intrinsic need to create, Josh Utsey taught himself how to weld. From there he was hooked. After metal, came wood. On a trip with his parents to the mountains of North Carolina, Utsey was introduced to a man who sold barnwood. He was drawn to the strength, durability, and age of the wood and knew he wanted to make furniture with it. Meshing his metalworking skills with a new interest in woodworking, he began to design and build some of the most intriguing pieces of furniture - the intrigue stemming from the blending of beautiful live edge, antique cuts of wood with modern aesthetic and overall simplicity in construction. Utsey’s tabletops, made from all kinds of species of hand selected wood including poplar, cedar, antique hemlock, barnwood, walnut, oak, cherry and others are planed and joined with biscuits to create a seamless top. Utsey then finishes the tops with hours upon hours of sanding, starting with coarse paper and transitioning to a finer grit until the wood

is smooth to touch. He then applies the protecting finish. According to Utsey, “All finishes are simple so if something were to happen my customers can fix it. I use lots of water based polycrylic.” Once the top is finished Utsey attaches them to a variety of legs from beautiful, crystal clear, totally unique and modern acrylic legs to perfectly welded and executed powder coated and stainless steel legs. These combinations of live edge wood tops and modern legs (or the vice versa as Utsey is known to do quartered red cedar legs meshed with a steel top) give the piece of furniture an amazing dichotomy - natural and industrial, traditional and modern. Just as Utsey transitioned his curiosity from metal to wood, he now has added a new realm of design to his business: lighting. His brass lights are completely custom, well made, and quite original. Each light Utsey makes begins with a CAD drawing that includes all the dimensions, threads, screws, etc and then each part is machined. He even makes the globe adaptors to create individual stylized lighting. His lights, although a relatively new trade, are interesting and sure to catch on just like his tables. For the moment, Utsey is content with wood, metal, and lighting but you never know what the future holds for this self-taught creator. Why did you decide to go the Food Truck route to spread your culinary gospel? Gospel - I like that . I was doing personal chef work and catering and loved it, but I missed that restaurant sweat and pressure. I had offers in DC and Atlanta but honestly I wanted to work for myself here in Charlotte. So, with the help of family, I created my own job. What is the #1 go to item on the menu that you have become known for? Our menu changes so much, but our Rissoto Fritters are always on the box, and our Reuben is also a constant. When I first started we did a Ramen dish that was delicious, and in May it returns and Chef Chris has upped the ante and is making our Ramen from scratch. 52 • qcexclusive.com • May/June 2014
What are some of your favorite items on the menu? On our current menu it’s a close race between the Beef Udon hot pot, and the Chorizo Corndog, but Chris and Bou laugh because every chance I get, I eat beans and rice.
How do you come up with the menu? Does the menu change often and if so how often and based on what? It changes a lot. The changes are based on a lot of things - based off of sales, season, mood, and product availability. Our winter menu was more labor intensive during service and now going into spring , prep will be heavier but the service will be faster and has to be faster because, as we like to think, spring and summer are food truck season.

UNKNOWN Brad Shell and his team at Unknown Brewing Company bring an entirely new perspective and passion to the brewing industry and you can taste it in their beer.
S
aint Arnulf of Metz, a Frankish priest who rose to become Bishop, lived during the Dark Ages (6th century CE). Believing water unsafe to drink, Arnulf preached the need to drink beer. According to legend, it was 642 CE when the parishioners of Metz went to Remiremont to recover his remains. The return trip to Metz was long and the terrain rough. With little to drink, the parishioners feared for their lives and prayed, “By his powerful intercession the Blessed Arnulf will bring us what we lack.” It is said that a small remnant of beer appeared at the bottom of a pot and continued to multiply until they arrived safely back in Metz. As a result, the Catholic Church canonized Arnulf giving him the title of Patron Saint of Beer. As he so aptly said dur-

three brew clubs and two distilleries. But these opportunities taught me that I really could make a go of it. After five years in the making, beer is flying out the door [of my very own brewery]. It’s a miracle.” With the opening of The Unknown Brewing Company, Shell’s dream became a reality. Charlotte is a growing city with “lots of people coming in from all parts of the country. It’s a perfect place for craft beer,” says Shell. “And besides, we are closer to our family.” Embraced by both the local craft breweries and people of Charlotte, Shell stands by his word that “if you talk a good game, you’ve got to deliver it.” With the beer culture being very similar to the wine culture there is an agenda. “I permanently want to change the face of beer and the culture surrounding it. I want to showcase knowledge, talent, and passion for all things beer.” As a result, the brewery produces four core beers: an Indian Pale Ale (American style with more hops, more alcohol, more flavor, and with a thick white head), a Pale Ale (golden tan with a “light crisp sweetness and great body”), a wheat beer (light with a “smooth creamy note”),

and what Shell calls a Pre-Game beer (lower hops, lower alcohol with a golden color). The Unknown Brewing Company is “unapologetic, always looking forward in an esoteric approach to brewing beer.” Different from other craft brewers in Charlotte, Shell’s knowledge base, large scale production, and history incorporates personal experience with nationwide distribution. The brewery has 30 tanks. Each tank holds 13,000 pints of beer and takes two weeks to refill. SHRIMP Peel and devein the shrimp and lightly coat with sesame oil and season with salt and pepper. BOK CHOY
Trim up the head of baby bok choy and remove any bruised leaves. Bring a pot of water to a boil. Prepare an ice bath. Once the water is boiling – place the head of bok choy in the pot and cook for 45 seconds and then plunge into the ice water to stop the cooking process – then remove from the ice and pat dry and reserve. Explore the nuances of Verica’s North Carolina Shrimp on a bed of forbidden rice served with bok choy, shiitake mushrooms, turnips, carrots, and ginger. INGREDIENTS • 5 fresh shrimp • Sesame oil • 1 head of baby bok choy • 3 shiitake mushrooms • 5 baby turnips 60 • qcexclusive.com • May/June 2014
• ½ cup black forbidden rice • 1 cup water • 1 pound of carrots • 2 tb of peeled ginger root
• 1 quart of chicken stock • Teriyaki Sauce • Salt • Pepper
Cut the shiitake mushroom into ¼ and set aside (The best way to cook the shiitake mushrooms is sous vide – meaning we place them in a vacuum sealed bag and cook them in a water bath at 185 degrees for 30 minutes). TURNIPS
Clean and trim the turnips – lightly toss with sesame oil, salt and pepper Blanche the turnips in the same fashion described above for the bok choy – the cooking time will vary

depending on the size of the turnips. (Sous vide method – cook them for 45 minutes @ 185 degrees.) RICE
The black forbidden rice is a 2-1 ratio – two parts liquid (water, chicken stock, or vegetable broth). Rinse the rice then place in a sauce pan and cover with desired cooking liquid. Bring to a boil and then lower to a simmer. Cook until all of the liquid is gone. Remove the pan from the heat and cover and let it rest for 15 minutes. CARROT PUREE
Peel the carrots. Mince the ginger root. Cut the carrots into roughly the same shape. Place the carrots
and ginger in a sauce pot and cover with the chicken stock. Add some salt and pepper. Cook the carrots until very soft – strain and reserve the liquid. Puree the carrots in the food processor adding some of the reserved cooking liquid as needed to achieve a mashed potatoes type consistency. Reserve the cooking liquid for final preparations. Add salt and pepper. FINAL PREPARATION
Heat a sauté pan – add a little sesame oil – once hot add the shrimp and sauté over high heat until cooked. Remove the pan from the heat and add some of the teriyaki glaze to coat and set the shrimp aside. Heat an additional sauté pan – add sesame oil – add the turnips, mushrooms and bok choy and then add some of the reserved carrot cooking liquid and glaze the vegetables. Season with salt and pepper and arrange on the plate. Arrange the rice on one side of the plate and arrange the shrimp atop the rice. he home on 7501 Morrocroft Farms Lane is both vast and beautiful. Originally built by a couple who spent a great deal of time traveling, it is evident that their experiences abroad influenced the home’s construction. The highest quality craftsmanship and materials were used allowing the current homeowners to take possession worry-free. With but a few changes based on taste rather than need, they repainted, replaced the wallpaper and draperies, and added plantation shutters. Although there is an abundance of space, the “design lends itself well to an easy flow and comfortable day-to-day living.” It is hard to imagine based on the size, but many visitors consider the house “cozy” especially when having an additional side door and back stairs. 86 • qcexclusive.com • May/June 2014
The exterior of the home is expansive. “We added copper gutters and wood shutters plus changed the exterior white trim to a warmer tan to complement the existing handsome brick.” The pièce de résistance is the granite veranda on the back terrace. Covered by a beautiful copper roof, the outdoor kitchen sits under a copper canopy and is outfitted with beautiful stainless steel appliances making it the envy of any chef. Perfect for entertaining, the veranda is the place where you can sit, laugh, and relax from the day’s activities. Alongside the veranda is a backyard filled with various trees, shrubs, flowering plants and vibrant colored hydrangeas all evidence of the extensive landscaping that has taken place during the past twenty years. Also contributing to the “relaxing tempo” are several soothing fountains.
When entering the home via the foyer, friends and guests will marvel at the “grand statement” it makes, “with high ceilings, curving staircase, and white marble floors accented with black granite.” The best quality and expert craftsmanship was employed by the previous owner when planning this space. The dining room and kitchen are very intimate. “We have enjoyed the dining room and have found the fireplace adds much ambiance.” There is a matching fireplace that mirrors it across the entry into the piano room. Another fireplace can be found in the family room and is the perfect location for Christmas morning where “stockings are hung with cheer.” On warmer days, the two sets of French doors lead to an enclosed veranda where “alfresco dining and relaxing” take place.
The master bedroom is on the main level. “It has definitely been wonderful for us. The children have spacious living and sleeping areas, and there is even a separate den for their use.” With plenty of storage space and closets who can complain! But most “delightful” is that the “lady of the house has her own sink, toilet, and makeup area.” With a place to call one’s own, the “man cave” is down the hall from the master quarters. “A den, just for the man who enjoys his television and wishes to stretch out on the sofa for naps.” With an extra special touch, the den opens onto the veranda allowing him to keep watch on the steaks grilling for dinner. The garage is amazing. “I must tell you that the first question I asked the former owner was, ‘Do you have a three bay garage?’ He looked at me with a big smile and asked me May/June 2014 • @qcexclusive • 87
to walk with him. [Upon entering the garage, I was stunned.] It is marble.” Large enough to entertain when inclement weather threatens your plans, the garage is clean, tiled and completely finished. The house on Morrocroft Farms Lane is the perfect home. Have you ever lingered in a vacation villa, cabin or second home wondering why it feels so different from your real home? Architects and designers will tell you the reason may be that primary home design focuses more on satisfying outside influences whereas vacation homes are designed specifically to create a state of serenity. Twelve years after Augusta Homes built what she then believed to be her 6,500 sq. ft. dream ‘forever’ home on Lake Norman, the homeowner started yearning for a place that was more visually connected to the natural surroundings and thereby restorative in character. “It dawned on me that what I really wanted was a genuine lake house. A more natural and organic structure that looked like it belonged along the water’s edge and had been there for some time,” she explained. So after doing her homework, the quest for the ultimate creative collaboration to stay faithful to her vision began and it would be done with those she trusted. “Building a custom 92 • qcexclusive.com • May/June 2014
home is like driving cross country together in a car. If Augusta had not been available, I wouldn’t have pursued this.” What evolved was an exact reversal from all that is conventional around the lake. The house named ‘Carroll’s Luck’ is a masterpiece that strikes that rhythm between luxury and humility. It combines the unapologetic purity of rustic architecture with sophisticated modern tailoring. The fusion of uncluttered space and expertly restrained detailing creates that second home feeling her spirit was seeking. With all its visual magnificence, it is hard to believe that this is a ‘right-sized’ home at a modest 4,200-heated sq. ft. “This project is a true testament to not going huge and massive, which then allows investment into higher quality concepts and materials,” explains home designer Jim Phelps. There isn’t a single space in this three bed, three bath home that goes unused. At one room deep, the center of the home feels like a penthouse loft with a vaulted 23 ft ceiling and 16 ft. windows boasting views of the lake yet large enough to show as much sky.

Not a drop of dry wall in view, the home is resplendent with hardwoods harvested by the homeowner’s family sawmill business in North Carolina. Her favorite is the ceiling lined with pecky cypress, a rare southern river and swamp wood damaged by fungus that dries out to reveal a unique naturally occurring pattern. mended applying a waterborne matte finishing system by Loba GmbH & Co. KG to the rift and quartered white oak floors. “There isn’t a shiny surface in the house!” smiles the owner. A major contributing detail to this overall appearance was the expert level of attention to custom cabinetry. “We pushed this cabinetry to look more like furniture by apply-
ing end details and finishing techniques one would normally see on a table or a chair,” says interior designer Kimberly Brewer Nawn, who spent two days at Banner Cabinets in Banner Elk mixing up custom blend stains in their laboratory on different species of woods with the homeowner. The strategy was to make everything look natural and not overpowering. The end result is four rooms perfectly blended into one large
flowing space that envelops, soothes and immediately makes you feel still. Still enough to gaze into the home’s axis point: a stunning 32” Foccault’s iron orb crystal chandelier hovering gracefully over a custom stained concrete dining room table. ture piece) inspired by François & Co. scagliola stone fireplaces. The matte black terracotta ‘FireBalls’ that the homeowner bought online serve as the living room’s conversation starter. Outside living was given much attention as well. The home features a football game friendly outdoor kitchen with a builtin pizza oven and a commercial beer chiller behind the bar. Directly opposite of that is a screened in porch that acts as an extension to the master bedroom suite. ike many growing families in Charlotte, Ches and Chrys Riley left their Charlotte bungalow in search of the perfect house that fit their style and taste as well as their growing family. They were in search of a house that their family could grow into, create memories in; a place that was a direct reflection of them, warm and open. After searching far and wide for this very home, the Riley’s decided that their perfect home didn’t exist. Ches and Chrys met Troy and Mary of New Old at a Homearama and ultimately decided that a custom home was going to be worth the time, energy, and investment. Choosing New Old to execute their dream home was easy for the couple. “We had a great initial interaction with Troy and Mary. They were very easy to talk to and seemed to truly understand our vision and the direction we wanted to go in. We
admired the unique quality and design of their houses, as well as their attention to detail.” According to New Old, the Riley’s weren’t alone in their decision to make a custom home. “Today’s custom client wants their home to stand apart. We are seeing a lot of people becoming braver with their design choices and wanting their homes to truly become an extension of their individuality. They are savvy and well-armed with pictures of what they like torn from magazines or electronically submitted from design websites like Houzz.” The Riley’s 4000 square foot, four bedroom, five bathroom home is located in Myers Park but is not typical of the Georgian and European style architecture that you expect to see in the posh Charlotte neighborhood. Tucked between towering oak trees, it sits perfectly on its lot like it was made for it. The home is a mix of Clean Craftsman and American

NewOld specializes in many different building styles, but American Farmhouse style architecture holds a special place in Mary and Troy’s hearts. “The farmhouse style of architecture is as American as a slice of warm apple pie and more so than any other style it exudes warmth and nostalgia for days past.” This style is most evident on the exterior with the large open front porch and exterior stained wooden accents like the barn door shutters, window boxes, and trellis over the garage. The interior is showered with rustic appeal with a number of reclaimed materials, including 150-year-old beams from a tobacco drying barn in Kentucky, antique heart pine flooring salvaged from an old mill, and pine tongue and groove wall paneling in several rooms as well as a generous stone fireplace and reclaimed mantle. These traditional, historically inspired features anchor the home and provide a

nice balance against the more contemporary aspects. More important than the overall esthetic of the house, Ches and Chrys wanted their dream house to be a place where people felt at home and comfortable. They wanted the layout of the interior to be one of openness and functionality, with very little wasted space. The dichotomy between new and old is striking throughout the house. It is a perfect balance of classic detail aside modern appeal and technology. This is most evident in the kitchen which happens to be Chrys Riley’s favorite room. “I love the layout and being able to have everything at my fingertips and right where I want it. The kitchen is open to the living room so when I am cooking, cleaning dishes, or preparing snacks, I am still able to be a part of the action, watch and play with the kids.” In addition to an open floor plan, the kitchen boasts custom, hand painted cabinets, professional style appliances including a 48” gas range top, convection ovens, dishwasher drawers and even separate refrigerated beverage drawers, making it easier for the kids to grab drinks and snacks. The entire home is smart-wired and all of the electronics can be controlled easily with a remote or iPhone. Everything 102 • qcexclusive.com • May/June 2014
in the house is “smart”. The entertainment center in the living room has a remote controlled television cabinet for easy cover-up. There are built-in speakers set up throughout the entire house that can easily be controlled through the iPhone or iPad. Building a custom home can be overwhelming and it is hard not getting wrapped up in the details. The Riley’s were up for the challenge and enjoyed watching their ideas come into fruition. For Ches it was the best part. “My favorite part of the whole process was watching the progression and execution of bringing ideas and white-boarding from ‘concept to reality.’ It was the feeling that we got when we turned the corner each Sunday morning on our routine weekly drive-by to see our ideas turned into a finished product. It was very exciting. Our three-year-old even got into the process.” In the end, the finished product exceeded the Riley’s expectations. The project required a lot of time, energy, and decisionmaking, but help and guidance from Mary and Troy of New Old made the process more than worth it for them and their family. Known to many as the cradle of American golf, Pinehurst is home to several of the most historic courses in the world. The Village of Pinehurst was the first golf community to become a National Historic Landmark. More golf championships have been played in this small southern town than anywhere in the country. This June all eyes will be focused solely on Pinehurst’s flagship course, No. 2, as it makes history yet again and becomes the first course ever to host both the men’s and women’s U.S. Open Golf Championships in back-to-back weeks. Over a century ago James Walker Tufts sold his soda fountain empire and purchased nearly 6,000 acres of land in rural North Carolina with one goal in mind; to create a health resort for those ailing from respiratory sickness. Originally from the northeast, Tuft envisioned a quaint, charming, and lively New England-style town perfectly architected and manicured for its residents and guests. That is exactly what he built. At the center of his town, originally known as Tuftstown, and what would become Pinehurst, he built the Top: The Resort Clubhouse at Pinehurst No. 2. magnificent Carolina Hotel. There residents and guests enjoyed a variety of activities from equestrianism to archery and tennis. Golf was not a part of early Pinehurst, that is, until several guests were spotted striking golf balls in adjacent cattle fields. The rest is history, and a whole lot of it. Scottish gentleman and renowned golf course designer, Donald Ross, came to Pinehurst at the turn of the century and immediately started shaping the landscape. Embracing the Sandhills’ clay and sand, wiry grass, and tall, slender whispering pines Ross created golf courses that accentuated the natural beauty of the area. No course exuded these traits more than his masterpiece, No. 2, a course that still winds through densely wooded scape, ebbing and flowing ever so smoothly over its native slopes. Ross would go on to design hundreds and hundreds of golf courses throughout 108 • qcexclusive.com • May/June 2014
the country, none of which were more closely tied to his legacy than No. 2. Simply put, the course is legendary. Awe-inspiring photos of Bobby Jones, Ben Hogan, Arnold Palmer, and other greats who’ve played the course hang from the walls of the vaunted Clubhouse. The Wall of Perpetuity and its placards, engraved with names like Curtis Strange and Jack Nicklaus, line the hallways honoring the history behind the North & South Championship, the longest running amateur tournament in the country. Looper, Willie Lee McRae, famous in his own right, can tell you story after story about all of the famous people (and a handful of presidents) he’s helped to birdie a hole on the course. The statue of Payne Stewart, aptly placed behind the 18th green, conjures up visions of Stewart’s miraculous 15 foot putt to beat Mickelson at the 1999 U.S. Open Championships. On ev-
ery fairway and green homage is paid to the game. Out of every hole and divot, rich tradition seeps from No. 2’s holy grounds like oil out of a gusher. The rich tradition keeps on getting richer. With the help of golf course designers Bill Coore and Ben Crenshaw, No.2 has undergone quite the redesign, or better yet, a return to the visions of its original creator. The course will be a robust 7,560 yards long featuring wide pristine fairways and undulating firm greens. Hazards will come in the form of the natural environment. Instead of a thick cut of emerald colored rough; sand, wire grasses, and pine straw in-

hris Coleman is the ultimate local. He was born and raised in the Queen City, learned his trade here, was an executive chef here for eight years, and now with the help of the Dunhill Hotel, has opened his first restaurant right here in the heart of uptown - The Asbury. Chris’s culinary career started where most do, in the kitchen of his mother and his grandmother, Maw Maw. After some formal education at CPCC, Chris developed his personal style at McNinch House as the Executive Chef from 2005-2013. “I really enjoyed my time at McNinch; it’s where I grew up as a chef, and as a person. I was there so long it really was family.” But McNinch was not his restaurant. Chris needed something to call his own, a new challenge to learn from. Working as the Culinary Director for the Dunhill Hotel, overseeing all of the food and beverage operations, gave him the opportunity he had been looking for. Following his own interests in the Farm to Fork movement in Charlotte, it was easy for both Chris and the Dunhill to transition from Harvest Moon Grille to his new concept: The Asbury; a farm to fork modern, Southern restaurant. The Asbury’s tagline “Honoring the past, celebrating the season, looking forward” embodies Chris’s vision and the staff at The Asbury intend to convey this with service, ambiance, and most importantly, food. Asbury wants to showcase the more elegant and refined southern food of the present and future. When asked what he is most proud of while creating the menu for The Asbury Chris simply says, “During menu planning, each kitchen team member helped to create the dishes that fulfilled my vision for the menu. There is at least one component or idea from every team member on my menu, and I’m very proud of that. If we’re going to truly represent the Modern South, we need to hear the voice of everyone, not just myself or my sous chefs.” This vision of the New South is truly evident in every aspect of their restaurant. The sleek, contemporary dining room fits with our sleek city. Their
approach to service was described by Chris as “ a refined and comfortable approach”, with the help of their new restaurant manager, Jenny Villapando, formally of Nolen Kitchen and Illios Noche. Still being a Southern restaurant, you can expect to see the favorites: biscuits, chicken and dumplings, flounder, and mac and cheese. The modern twist can be seen in some of the different ingredients used like house made Benton’s bacon jam or house made Uncle Scott’s root beer BBQ sauce, tomato dusted popcorn and grilled chevre croutons. The way in which some of the dishes are made are modern as well like sous vide, foams, gels, and powders. Chris wants to reiterate that modern techniques are only utilized when appropriate. He never would let technique outshine flavor or the quality of the food. In fact, many old school and famously southern techniques are also utilized in the menu like grilling, smoking, braising and confit, and preserving and pickling. There are many components that contribute to a great restaurant experience and for Chris what makes The Asbury great is “Our atmosphere is lively and comfortable, our service is friendly and refined, and our food is creative, fun and most importantly, tasty.” The past, present, and future is what inspired Chris and ultimately what created the concept of The Asbury.
