his holiday issue couldn’t have come soon enough. Here at QCExclusive headquarters we’ve been looking forward to this one for quite a while. All of us here enjoy the holiday season and everything that comes with it, from the food and drink, to the giving and receiving, to the precious time spent with family and friends. However, last year at about this time our inaugural issue was still on stands. We were in a time crunch of sorts and contemplated several options. The dilemma was: Should we rush to publish a holiday issue and risk producing something that frankly looked rushed or should we skip it and save all of our holiday ideas for the following holiday season? Ultimately we ended up skipping the issue and moving forward. With that said, we have had about 365 days of thoughts and ideas that have gone into this, our first Holiday issue, and we hope you love it. QC&A chris knott started selling clothing at ashworth’s in fuquay, nc at the ripe old age of 14. now his brand, peter millar, known for its classic patterns and on trend styles, has been acquired by none other than richemont, the luxury goods conglomerate that owns some of the world’s most premier brands. find out from the man himself, how it feels to be included in the same breath with brands like cartier, montblanc, van cleef and arpel, and purdey rifles. We know that you have been involved in the fashion industry since you were a teenager, how did you get started and where? Selling clothes at Ashworths in Fuquay, NC at the age 14.

Did you always know that you wanted to have a career in the fashion industry or did it just kind of happen? I really liked the job from the start. I wanted to be a manufacturer rep in the beginning. When did you actually start designing clothes and what was your first piece and how did it turn out? As a sales trainee in NY for a suit maker, I got to work with the Italy mills in designing suits and sportcoat fabrics.

Were you going through fabric swatches while your buddy’s were out playing baseball or were you a normal kid? No. I was playing all sports till I started working at the Men’s store. I was put on commission at an early age and liked the money so I worked 6 days a week selling clothes all the way through college. What about growing up in North Carolina has influenced your designs with your brand Peter Millar? Folks in the South have always been considered good dressers. School. A fellow from Fuquay was his national sales manager and had worked at the same store I grew up in. Ashworth’s. So we followed the Julian brand closely. For people that aren’t familiar with Peter Millar, how would you describe your style, and what kind of guy do you have in mind when designing? Wearable color. Classic, not traditional. Current but not modern. On trend but not trendy.

What time period is your favorite when it comes to men’s style? The 40’s and 50’s were the dressing years. Men had all their clothes tailored back then. What is your least favorite? The 1970’s. Too much double knit polyester.

If you could have anybody wearing your clothes alive or dead, who would it be? Frank Sinatra

Peter Millar clothes can now be seen all over the PGA Tour and is worn by a lot of the world’s best golfers. How did you break into the sportswear market and who currently wears Peter Millar on the Tour? We have Bill Haas, Brandt Snedeker and Harris English. Bill and Brandt are back to back Fed Ex cup winners. My Partner, Scott Mahoney and Millie Graham from Marketing really have all the tour connections. Our president of golf, Todd Martin knows every pro in the industry also.

Can you play? What is your golf handicap, and tell the truth? 7. I have always been able to play but never have committed to getting it down. I play tournaments but really use golf as a social avenue. Peter Millar was recently acquired by one of the world’s most prestigious Luxury Goods conglomerates, Richemont, which also owns other premium luxury brands like Purdey Rifles, Cartier, Montblanc, Dunhill, Chloe, and Van Cleef and Arpels just to name a few. Did you ever imagine your little startup company would ever get to this stature, and how do you think it will effect the direction and growth of the company moving forward? Being that the Holidays are right around the corner what are some family traditions in the Knott house over the holidays? We set up a unique snow village. It is modeled after a ski village. We go to three lots to find our tree, and my wife and daughter make home made bark. We always have a Christmas Eve Drop by for friends and family.

What is your holiday drink of choice? Dark and Stormy’s. A cocktail with Dark Rum and Ginger Beer.

If you were going to a swanky holiday party, what would you wear? I have a peak lapel dinner jacket in velour. I try to wear some festive plaid pants with it. Better stocking stuffer for a guy? Pocket knife or pocket square? I would have to go with the pocket square and a vintage tie bar. Better Christmas Crooner? Bing Crosby or Nat King Cole? They are both fabulous and we have work from both of them. Bing being a golfer, I have to go with him. I love the whole Palm Springs and Southern California vibe that he promoted. Christmas Ham or Christmas Turkey? Turkey Cranberry Salad..nuts or no nuts? We like it all the way. Loaded up.

As the winter months approach us, thoughts turn to celebration with family and friends. What better place to honor the spirit of the season than the iconic Biltmore Estate in Asheville. America’s largest home is known around the world as one of the most cherished and storied holiday travel destinations and fortunately for those based in the Queen City it is only a short three-hour drive away. From November 3rd – January 1st, you will discover the estate gleaming with festive décor and special events. No matter what your religious preference is, it is impossible to not be moved by the infectious cheer that is found throughout the property.

In 1895, George Vanderbilt chose to open Biltmore Estate’s doors for the first time on Christmas Eve, marking the occasion with a regal ball. The 250-room French Renaissance chateau filled with priceless treasures and antique furniture took over 6 years and 1,000 laborers to create and consists of 8,000 acres. This National Historic Landmark is open to the public year-round, however it is particularly magical to experience during the holidays. The main attraction is the largest of the 50 Christmas trees: the 34-foot tall Fraser Fir decorated with hundreds of ornaments and gift boxes and found inside of the Banquet Hall. A

After a fifteen minute ride passed fields of sorghum and through wooded pines we arrived at the water. We grabbed our gear and decided on a blind that would hide us from the ducks. We chose one several hundred yards away and started walking towards it. The sun had just started peaking above the trees on the horizon. It was early, and very cold. It only got colder as we entered the marshland towards our blind. After five minutes of wading through flooded timber waters we arrived. I hunkered down as the guide, an excellent caller, began to engage the ducks. We waited patiently, taking in the peace and quiet of our surroundings. We enjoyed the views and sounds and hues that generations before us had also enjoyed. We watched ducks, geese and other birds fly overhead. My mind cleared and I prepared myself for what was ahead. Fifteen minutes passed quickly. The guide and his calls received the ducks’ attention. The mallards circled slowly and cautiously, swirling seven or eight times above our blind and very high, well out of gun range. Then, suddenly, and collectively, the ducks mustered up the courage to approach. It was an experience more brilliant than I could’ve imagined. The mallards lifted their wings, cupping them for their fall, and came down quickly threatening to land on the water directly in front of us. The call had worked. Now all we had to do was execute. That morning, four birds fell to our guns. But it was never just about that. It was about the kaleidoscopic sunrise, watching the guide work with precision, enjoying the natural isolation of the duck blind, and taking in nearly 300 years of wingshooting and waterfowl hunting tradition.

Maple Leaf Duck Breast recipe by Blake Hartwick of Something Classic • 1 maple leaf duck breast • 4 to 6 baby carrots • 1 medium parsnip peeled • 1 tbsp butter • 3 tbsp pure maple syrup

Directions For Duck: Score duck breast with a sharp knife. Season with salt and pepper. In a cast iron skillet on medium to low heat place duck skin side down and render the skin until crispy. Flip over and place in a pre-heated oven at 325 degrees for 5-7 minutes. Remove the duck from the pan and let rest for a few minutes before slicing to preserve juices.

Directions For Carrots And Parsnips: Over medium heat, melt one tablespoon of butter in a cast iron skillet. Add the carrots and parsnips and saute until they begin to caramelize. Remove the skillet from the stove and add the maple syrup. Place in a pre-heated oven at 275 degrees for approximately five minutes. very year I am reminded that magic exists. The wide-eyed child inside of me comes to the forefront as we take down the holiday boxes from their hibernation in the attic and open them up for a stroll down memory lane. As Dean Martin and Bing Crosby croon about the wonders of Christmas we unwrap handmade ornaments, string garlands around bannisters and sip on spiced cider. My grandmother plans the holiday menus, each of us excitedly chiming in with suggestions of our favorite dishes. The chill of the air outside, warmth of the hearth’s glow and nearness of those closest to us create a special magic that carries on with us through an evening of laughter and happy tears. For the next several weeks the hustle and bustle of the world outside is no match for the sanctuary of holiday spirit we have created. As the saying goes, “Home is where the heart is.” and in our home the heart is in the kitchen. Being a part of my family means spending a good deal of time cooking. When the holidays come around, we roll up our sleeves and roll out the dough. Regardless of the holiday the most anticipated dish to grace our table is my grandmother’s apple pie. In fact, this special dessert is so widely loved that certain members of the family will, quite literally, break out the tape measures to make sure their slice isn’t being slighted in size. I’ll admit that my grandmother works magic into her pie crust because, all of these years later, I still can’t seem to master the technique. As is the great American tradition, the perfect turkey (aptly named by the youngsters in our family as “the golden gobble”) is a staple on our holiday menu, but as we’ve grown up we’ve added new favorites to the menu. Pork roast with rosemary, dried cranberries and muscato reduction has become a fast favorite. Spiral honey ham makes its occasional appearance, spotted with fragrant cloves and drizzled with brown sugar glaze; always a welcome sight. Sumptuous savory sweet potato cakes, creamy mashed potatoes with fried sage leaves and grandma’s famous gravy, goat cheese tarts with balsamic glazed onions and warm steaming yeast rolls sparkle on the table like the ornaments on the tree. We welcome these traditional holiday dishes as enthusiastically as we do our friends and family, to warm and comfort our hearts and bring us happily into a new year. As we celebrate this holiday season in the Queen City we celebrate your traditions and invite you to create new ones with us, as Charlotte’s own local chefs have done by recreating the classics with their own special flair. Rosemary Herb Roasted Cornish Game Hen recipe by QCExclusive [photo opposite page]

• 4 1 lb Cornish game hens • 6 carrots peeled and cut • 5 red skin potatoes • 1 onion • 1 garlic clove • 4 sprigs of rosemary • 5 tbsp. of Olive oil • Dried + fresh cranberries • Salt and pepper

Directions For Hens: To prep hens tie the legs of each bird together and place skewer through neck skin to back. Turn the wings so they are under the hen’s back. Place the hens on a roasting rack. Make sure the hens are turned breast up. Place cut potatoes, carrots, onions, and parsnips in the bottom of a roasting pot. Mix olive oil, garlic, rosemary, salt and pepper in a bowl and then with a brush apply the mixture onto the hens and veggies. Place roasting rack of hens above the vegetables on top of the roasting pot. Preheat the oven to 375 degrees and roast. Do not cover roasting pot with lid. Cook hens and veggies for an hour and a half until the internal temperature of the birds is around 185 degrees. During the roasting process be sure to mix the vegetables every fifteen to twenty minutes. Once the hens are finished cooking remove them from the roasting pot. Return the vegetables to the oven, increase the temperature in the oven to 425 and continue to roast the vegetables for fifteen more minutes and until crispy and golden. Serve vegetables on bottom of plate and rest hens on top of the veggies. Garnish with sprigs of rosemary and cranberries (dried and fresh).

Hearty Rabbit Stew With Butternut Squash recipe by Terra Baltosiewich

The flavor of rabbit is mild and absorbs all the flavors it is combined with. Commonly enjoyed during the holiday season, rabbit stew is perfect for warming you up from the inside out. Rabbit can easily be substituted with chicken, but if you have never had rabbit, you’ve got to try it. This delicious meat, and stew will have you going back for seconds. • 3 whole rabbits, deboned and diced into one inch cubes • 3/4 cups all purpose flour • 8 tbsps butter • 3 stalks of celery, diced • 3 large carrots, diced • 1 large yellow onion, diced • 6 cups rabbit stock (see recipe below or use chicken stock) • 3 cloves of garlic

• 1 tbsp fresh rosemary, chopped finely • 1 tbsp fresh thyme, chopped finely • 1 cup red table wine • 1 ½ cups rabbit or beef blood • Salt and pepper • 4 cups butternut squash, diced in one inch cubes • 1 (8oz) package of shelled edamame • 5 tbsp cornstarch

Directions for optional rabbit stock recipe: In large stock pot, add 8 cups of water, 6 stalks celery roughly chopped, 3 large carrots roughly chopped, 1 medium yellow onion roughly chopped, 4 cloves of garlic roughly chopped, bones and excess of two rabbits, one small handful fresh thyme and four large stalks of fresh rosemary wrapped in cheese cloth and tied off. Place all ingredients in stock pot together, bring to boil, then let simmer for 2 hours. Strain stock into bowl, and sit aside. Directions for rabbit stew: In medium bowl, cover cubed rabbit in flour, sit aside. In large stock pot, medium heat, add butter and let melt. Add rabbit and brown all sides. Add rabbit stock (or use chicken/ vegetable stock,) celery, carrot, onion, garlic, rosemary, thyme, wine, blood, salt and pepper. Bring to boil, then simmer for one hour. In small bowl, add cornstarch, and two tablespoons of water, mix well, add to stew. Add butternut squash, and edamame to large stock pot. Let cook for two hours. Serve on a bed of herbed roasted root vegetables. 90 • qcexclusive.com • November/December 2012

• 10-12 lb. rib roast with rib cage still intact • 1 cup Dijon Mustard • 1/8 cup dried Oregano • 1 tsp. red chile flakes • ¼ cup chopped garlic • kosher salt

Directions For Rib Roast: Combine mustard, oregano, chile flakes and garlic into a rub. Rub vigorously onto the skin and sides of the roast. Sprinkle generously with kosher salt and place in convection oven at 500 degrees for 18 minutes to crust. Lower the temperature to 300 and cook for 12 minutes per pound to reach an internal temperature of 110 degrees. Let the roast rest for 25-30 minutes before slicing.

Directions For Brisket: Important: brisket must be first cut. Prepare the brisket by seasoning with salt, pepper, garlic, and paprika. Place the brisket in a deep pan with 1” of water. Wrap the pan in aluminum foil. Cook the brisket at 350 degress for three hours. After one and a half hours cooking add sliced carrots, onions, and potatoes. When the brisket is finished drain the au jus and serve on the side along with red horseradish.

• 16oz. sour cream • 8 eggs • 1 stick melted butter • 1 tsp. vanilla • 1 tsp. salt • 1 cup of sugar • 24 oz. cooked medium egg noodles

Directions For Kugel: Mix all ingredients and place into pyrex dish. Wrap dish in aluminum foil to prevent burning. Cook at 375 degrees for one and a half to two hours (depending on oven). If you would like Granny Smith apples or golden raisins can be added to the mixture prior to putting dish into the oven. When finished add light cinnamon to the top of the kugel.

• 2 large Idaho potatoes, peeled, grated • 2 large eggs • ½ cup all purpose flour • 1 cup yellow onion, diced finely • ½ cup grated parmesan

• ¼ tsp nutmeg • salt and pepper • 1 stick of Butter For Apple Compote: • 4 Macintosh apples, peeled and diced

into ¼ inch cubes • ½ cup packed brown sugar • ½ cup white sugar • 2 tsp cinnamon • ¼ tsp nutmeg

Directions For Latke: In small sauce pan, at medium heat, mix together diced apples, brown sugar, white sugar, cinnamon, and nutmeg. Let cook until apples are softened about 10-15 minutes. Sit aside. Grate potatoes, and soak potatoes in water for ten minutes. Drain out water, and squeeze remaining water from potatoes. In medium bowl – mix together grated potatoes, eggs, flour, onion, parmesan, nutmeg, salt, and pepper. In small sauce pan, on medium heat, add a pad of butter, let melt, place one cup of potato mixture flattened down, let cook until golden brown on both sides. Perfect compliments to any protein from a hearty stew to cornish hens or turkey, roasted roots are simple and tasty. • 2 parsnips, diced in 1 inch cubes • 2 cups butternut squash, diced into 1 inch cubes • 8 petite red potatoes, diced • 8 dutch yellow baby potatoes, diced • 1 tbsp fresh rosemary, chopped finely • 1 tbsp fresh oregano, chopped finely • 1/3 cup extra virgin olive oil • Salt and pepper to taste

Directions For Vegetables: Preheat oven to 350 degrees Fahrenheit. Place vegetables on sheet pan, toss with olive oil, herbs, salt and pepper. Bake for 25-30 minutes depending on oven. • 12 oz. haricot verts • 6 piece apple wood smoked bacon • ½ pound butter • 1 tbsp. fresh rosemary • 1 pear • Salt and pepper • 1/2 tbsp. olive oil

Directions For Haricot Verts: Blanch haricot verts for three minutes and immediately shock in an ice bath to stop the cooking process, set aside. Place bacon on a sheet tray and cook until half way done, remove from oven and let rest at room temperature. When bacon becomes room temperature make a small bundle of beans and wrap each bundle with a half piece of bacon and place in a shallow baking dish. Sprinkle with salt and pepper and cook for 10 minutes at 375 or until bacon is golden brown, remove from oven and pipe on the butter . For Butter: Bring butter to room temperature, peel, core and roast pear until browned, Heat 1 tbsp. oil in skillet until smoking and add rosemary. Fry for 10 seconds and remove from heat. Place butter, finely diced pear and rosemary in kitchen aide on high and wisk until butter has doubled in volume.


Macaroni & Cheese recipe by Ma Barter • Salt and pepper • 1/8-1/4 teaspoon onion powder (To Taste) • 16 oz box elbow macaroni • 16 oz of grated extra sharp cheddar cheese • 6 oz of grated extra sharp Monterey jack cheese • 16 oz of grated Colby or Colby-Jack cheese • 1 small white onion • 2 large eggs, lightly whisked • 1/8 stick butter • 1 pint sour cream • 1/2-1 cup whole milk

Directions For Macaroni And Cheese: Grate 1/4 of small onion. Grease interior/sides/bottom of baking dish and set aside. Pre-heat oven to 350 degrees. In large pot, boil water, adding salt & table spoon of olive oil. Add and cook elbow macaroni. Drain pasta in colander and return to pot. Stir in butter, grated onion, pint of sour cream, 1/2 cup milk, two whisked, eggs, salt and pepper and onion powder to taste. Gradually fold into mixture, grated cheeses, reserving enough sharp cheddar to cover top of casserole. Add additional milk as necessary to make mixture moist. Generously cover casserole with remaining cheese. Place casserole on center rack and bake 2030 minutes or until it’s bubbling and top begins to lightly brown. Remove from oven and allow to setup/cool for 1015 minutes before serving. Yields 12-15 servings.

Holiday Cranberry Relish recipe by Aunt Shelia • 1 orange • 1 lemon • 3 boxes of Jello (1-lemon, 1-cherry, 1- lime) • 1 large can crushed pineapple • 1 bag, chopped pecans (leave out if allergic) • 2 cans, whole cranberry sauce

Directions For Mixing the Relish: Into the large, heat-resistent bowl, add: 1 box lemon, 1 box cherry and 1 box lime Jello mix. Add three cups, hot, boiling water. Stir mixture until all gelatin is dissolved.

Directions For Cranberry Relish: Open 2 cans of whole, cranberry sauce and add to hot, gelatin mixture-allowing the cranberry gel to dissolve. Add the zest of one lemon and one orange and stir. Open the can of pineapple and drain off the liquid into a separate container. Combine the juice from the orange, the lemon and the juice of the canned pineapple with enough water to measure one cup of cold liquid. Add this cup of cold liquid to a second cup of water to measure TWO CUPS of cold liquid. Add this cold mixture to the bowl. Add the crushed pineapple and crushed pecans (optional) to the mixture. For congealing, use a jello mold or a pyrex dish. Turn these ingredients into the pyrex dish and allow to congeal for 8 hours in refrigerator. Pumpkin Soup recipe by Drew Trepanier

Warm your body and soul with this colorful and flavorful holiday soup.

Sweet Potato Cakes recipe by Rob Masone • 1 medium edible pumpkin or large can of pumpkin puree • 1 shallot, minced • 1 leek, thinly sliced

• ½ cup white wine • 1 quart vegetable stock • 1 pint soy creamer • Salt and pepper to taste

Directions For Soup: If using a fresh pumpkin use a large knife to trim the top and bottom off the pumpkin. Use the knife to cut the skin off the sides then split the pumpkin in half. Use a spoon to scoop the seeds and inner flesh out. Once clean cut into 1” by 1” pieces. The seeds can be saved and toasted with olive oil, salt, pepper, and cumin and used as a garnish. In a large pot over medium heat, sweat the shallot and leek until softened and fragrant. Add the pumpkin and sweat for 5 more minutes, stirring frequently. Deglaze with the white wine and reduce by half. Add the vegetable stock and bring to a boil. Once boiling, reduce to a simmer and cook until the pumpkin is softened all the way through (more stock can be added if necessary). When the pumpkin is soft, puree in a blender until smooth, then add in the soy creamer. Adjust seasoning and serve.

Directions For Cakes: Peel sweet potato and coarsely grate in blender. Add ginger & fine chop. Add lemon juice, pepper flakes, nutmeg, salt, eggs, flour & pulse. Spoon batter onto skillet or flat top, cook until browned (3-4 min.) per side.

Directions For Brussel Sprouts Trim the stem from all brussel sprouts and cut in half. Toss in oil and salt and pepper and roast in a 375 degree oven for approximately 35 minutes until heavily caramelized and almost to the point of being burnt. In a large sauté pan sweat the shallot and garlic over medium heat until fragrant and softened. Add in brussel sprouts, tempeh bacon, demi base, and vegetable stock. Bring to a boil, then reduce to a simmer and cook until stock reduces and sauce thickens (about five minutes). Plate and serve.

It doesn’t get more holiday than Apple Pie. Try these for a twist.

Lobster Mac & Cheese recipe by Rob Masone

• 1-1/2 pounds of fresh cooked lobster meat • 1 pound Fussili Pasta • 8 ounces of mascarpone • 4 ounces of goat cheese • 1/2 tsp. sea salt • 4 ounces of heavy cream

Directions For Lobster Mac And Cheese: Bring all ingredients to room temperature. Bring 1 gallon of salted water to a rolling boil. Cook pasta until al dente. Strain and return to pot. Keep warm. Stir in mascarpone, goat cheese, heavy cream and lobster.

• 16 oz. cream cheese spread • 4 tbsp. brown sugar • 1 tsp. pumpkin pie spice • 4 whole apples, • 1 apple, chopped • ½ cup shredded cheddar • ½ cup candied pecans • 1 package puff pastry

Directions For Apple Pie: Mix together cream cheese, cheddar cheese, pecans, chopped apples brown sugar & spice in bowl, mix well. Core and hollow out the whole apples, stuff with cream cheese mixture and top with a lattice puff pastry top. Bake 10-15 minutes or until heated through and bubbly.

Stuffed Dates recipe by Rob Masone

• 8 Dates, pitted • 1 cup gorgonzola cheese • ¼ cup candied pecans • 8 pieces apple wood bacon

Directions For Stuffed Dates: Combine gorgonzola and pecans, fill cavity of date and roll with one piece of smoked bacon, securing with tooth pick or wooden skewer, place in oven at 350* for 10-15 minutes or until bacon is cooked through and crisp.

A Return To The Bucketlist Inspired by New Year’s Resolutions and the End Of The World

D

ecember 21st is approaching fast and, according to interpretations of the Mayan Calendar, so is the end of the world. Now, I’m not a believer in this theory, but everytime I hear chatter about it I do start thinking about several things. I think about my own mortality. I think about all the things I haven’t done. I think about my bucket list. When I was 18 years old I conjured up a list of 50 things I wanted to do before I turned 30. There were all kinds of crazy things on the list. Everything, and I mean everything, was on it, from running with the bulls in Pamplona (check) and backpacking Europe (check) to climbing Mount Everest (nearly impossible to complete) and owning a 1981 Land Cruiser FJ60 (sadly incomplete). Needless to say when I turned 30 there were still twenty-some odd goals left to check off. I’ll admit that I fell a little short. However, lately I have had the urge to resume checking off adventures. I have no reason not to. After all like a good friend once told me: “None of us gets out of here alive”, so why not have some fun and really enjoy life. Below is what I have left on my bucket list. Barring the end of the world, hopefully this time I will actually have the resolve to complete it. Maybe next year around this time I will look back to see what I have accomplished, re-tweak it if my goals change and new adventures arise, and strive to check them all off one by one. Now it’s your turn. What’s on your list?
