e can’t believe that it has been an entire year since the launch of our inaugural issue. Not to sound about as cliche as one can possibly sound, but it really does seem like yesterday that we were burning the early morning oil to publish our first magazine. A lot of things have happened in the last three hundred and sixty five days. We have met so many interesting and wonderful people, heard some amazing stories, experienced more than a handful of once-in-a-lifetime adventures, and we have tried to share all of this with you. 9th Annual BCC Rally for the Cure benefiting Susan G Komen For The Cure. This week long rally consists of 5 events: family day, ladies tennis, ladies golf and luncheon, men’s golf and finally a black tie gala. Since 2004, BCC Rally has raised $719,000 which unlike many charities consists of all volunteers, and all of the proceeds go towards the cause, and none towards overhead. Ingredients:

1 oz (30ml) vodka 1 oz (30 ml) apple schnapps 1 oz (30 ml) pumpkin juice Dash of cinnamon Splash of pineapple juice Frozen apple cubes

Pumpkins Juice Directions: Wrap 2 cups of pumpkin puree in cheese cloth. Place in strainer over bowl. Press on cloth to strain liquid.

Directions: Cut one apple in cubes, and freeze to make apple ice cubes.

Mix together vodka, sour apple schnapps, pumpkin juice, and cinnamon in a closed container or shaker. Pour in a martini glass, add a splash of pineapple juice and frozen apple cubes.

Ingredients

• 2 oz apple juice • 2 oz pumpkin juice • 1 oz pineapple juice • 2 oz club soda • Pineapple, cut into cubes • Apple, cut into cubes

• 1 oz (30 ml) of coffee • 1 oz (30 ml) warm milk • 1 oz (30 ml) pumpkin juice • 1 oz (30ml) Godiva chocolate liquor • Dash of cinnamon • Whipped cream • Chocolate bar

For pumpkin juice - wrap 4 cups of pumpkin puree in a cheese cloth that is placed in a strainer over a bowl, press down with another bowl to strain liquid out. It will yield about 4 oz of pumpkin juice. In covered container or shaker, mix together apple juice, pumpkin juice, pineapple juice, and club soda. Add handful of pineapple cubes, and apple cubes, pour in 12 oz glass.

Make pumpkin juice by wrapping 2 cups of pumpkin puree in cheese cloth. Place in strainer over bowl. Press on cloth to strain liquid. Make one cup of your favorite coffee. In a small sauce pot heat up one cup of milk. In a coffee cup add warm coffee, warm milk, pumpkin juice, chocolate liqueur and dash of cinnamon, mix well. Top with whipped cream, and grate a small amount of chocolate on top of whipped cream.

When he thinks of his birthplace he still hears the whistling vibrations of hundreds of passing scooters. He can still see the photo of Ho Chi Minh hanging on the wall of his mother’s home, which at the time was required by law to showcase. If you didn’t, you would go to jail. No questions asked. He recalls leaving the bustling city that he calls Saigon (better known to the rest of the world as Ho Chi Minh City) in the summertime to visit his grandparents in the countryside. There, they lived a simple life without the luxuries of the modern world. Their only source of electricity came from a car battery used to illuminate 30 • qcexclusive.com • September/October 2012

tiny light bulbs so they could see walkways at night. That life seems so far away now to Charlotte photographer Thien La. His memories of his homeland are over twenty years old. At the ripe old age of eleven, he and his family left Vietnam for California and then eventually ended up in Charlotte. His time as a boy in the Queen City was spent adjusting to an entirely new culture, learning a new language, and overcoming obstacles that come with a transition of this magnitude. Luckily for Thien, his mother, a strong and loving woman, was beside him all the way. Eventually, after years of hard work, Thien was a success, opening up a small business that ultimately thrived. However, as we all know, fate sometimes intervenes. Almost three years ago to the day, a friend of his, who knew he had an artistic talent, asked him to take pictures of her. Thien’s life hasn’t been the same since he said yes to the request. It only took one day behind the viewfinder of a camera for him to Charlotte photographer Thien La, on the other end of the camera. Within months he had sold his burgeoning business, turned his home into a studio, and rededicated himself to his new craft. Countless props ranging from old cameras to vintage motorcycles are stored in his garage. Models often stop in for brief sojourns and Thien will accomodate with a photo shoot. There the midnight oil, in its more modern equivalent, the luminescence of an Apple Macbook, burns brightly into the early morning. For Thien, photography is his life. Thien La’s passion and skill is evident with each and every one of his photos. Because of this, Thien, after just a short stint in the industry, is sought after by some of the best models and celebrities in the world. For the onlooker, his story embodies the American dream. Much like other historic foods for the common folk, notably shrimp and grits, the bisque has evolved and varieties of the dish abound. • 3 Gloves of Garlic minced • 2 carrots peeled and diced • 2 celery stalks diced • 1 medium white onion diced • 2 cups heavy cream • 2 cups vegetable stock • 1 Bunch asparagus • 1/2 pound lump crab • 1/4 cup flour

Method of Production 1) Cut the asparagus into 1/4 inch pieces and boil for 2-3 minutes in salted boiling water. Take the asparagus out and place in ice water to stop cooking and let them cool. Set asparagus to the side. 2) In a large pot sautee onion, celery, and carrots until tender (about 7 minutes), dust with flour , and stir until the mixture is thick and the oil is absorbed. Then add stock and stir. Add more stock if needed. Reduce heat and allow to simmer. 3) In your mixer add asparagus and cream (or milk) and blend. Slowly add the soup mixture from the pot (step 2) to the cold cream asparagus. When blended and smooth, return to the pot and simmer. For the garnish, in a small bowl add asparagus tips, parsley, and cherry tomatoes (halfed), a touch of extra virgin olive oil, salt, and pepper. Serve soup in a bowl, and rest a spoon of garnish in center of soup and serve.

Live Well How do you deal with cancer when you’re first diagnosed? It varies for everyone. For me, once the shock wore off and I realized, “Hey, you could die,” I embraced it and fought like a bull. But, cancer affects people differently. There’s no right or wrong response. Cancer infects your stability, your outlook, your mind, body, and spirit. It plays to win; it plays dirty.

I recently had the opportunity to meet Heather St. Aubin-Stout, a breast -HEATHER St. Aubin-Stout cancer survivor and author, to talk to her about her experiences with the disease and her new book. Heather St. Aubin-Stout was only 43 when she was first diagnosed with breast cancer in 2006. However, cancer was not a stranger to her. St. Aubin-Stout’s mother was diagnosed with breast cancer at the age of 44. A year later, the cancer had metastasized to her mother’s lungs and liver. She passed away at the age of 45. Having been diagnosed at stage 1, St. Aubin-Stout’s early vigilance paid off. She was told her cancer was an easy cure, but after one year, the cancer came back, this time with a vengeance. “Psychologically, it was very difficult,” she says, “for my family and me. There’s no cure, and nobody can tell me why I’m getting it. It wasn’t genetically linked. I knew there were other people out there experiencing the same thing.” That’s when Not My Mother’s Journey was born. Stout hoped to encourage women to be vigilant, to get their mammograms yearly, and for younger women to notice changes in their bodies. “It’s recommended that women start getting mammograms at the age of 40, but not everyone agrees on that specific age. I think women should listen to what their body is saying. Not ignore it until you hit 40 just because that’s what doctors tell you.” “You’re right,” I say. “Cancer comes in many forms and if I hadn’t listened to my body, forced my general practitioner’s hand, I’d be dead right now. It’s a reality check.” Getting published is a difficult process and although

she received positive critiques of her manuscripts, most publishers thought there were just too many books on the market about cancer, so St. Aubin-Stout, with the advice of her editor, went the self-publishing route. “I’ve got to do everything myself: market it, push it, and advertise it. Live Well She hopes the book will eventually get national attention, but it’s a long, hard road. “I’ve been interviewed on local and internet radio, a couple of TV stations, but I’m not famous. I can’t get the book out there like a celebrity can, so I do the best I can. Not My Mother’s Journey can be purchased from Amazon and Barnes and Noble. It’s available as an e-book or as a paperback.” St. Aubin-Stout is at her five year mark. “It’s been an up and down journey,” she says. “It’s hard being bald and not being able to get off the couch…but now it’s exciting. To be able to go out and about; you have a new appreciation. The book is for everyone, and what I hope people learn is that they can get to that point without having to have a tragic diagnosis. Enjoy each day within moderation and balance.” Personally, I understand how easy it is to get bogged down. Sometimes, what’s truly important falls to the wayside because of work, stress, family commitments, and misplaced priorities, but that’s okay, it’s life. What St. Aubin-Stout wants us to grasp is our need to pull back, to be there for ourselves and for others. To note, this exercise can be performed with or without a weight. If you are just beginning, do not use the weight but as you progress, use one for an added challenge. To begin, lie on your side and place your left hand on the mat. Lift yourself up into a full side plank on your left arm keeping the arm straight and directly below the shoulder. Keep your right arm to the sky and stagger your feet so the top (right) leg is in front. Sweep your

right (top) arm toward the mat and “thread” it under your left armpit, reaching for the back of the mat, while rotating your hips to face the ground and balancing on your toes. Rotate your body back to the starting side plank position and repeat 20 times then do the same on the other side. Complete two sets. • Forward Lunge with Bicep Curl

Start with your feet shoulder-width apart, dumbbells next to your thighs and palms facing forward.

While stepping into a forward lunge with left foot (bending until thigh is parallel to the floor and maintaining that the knee is aligned over the ankle) , curl the weights to your upper arms always making sure your arms stay flush to your body. Lower the weights back down as you push through your left heel and return to the starting position. Do all given reps on right leg; switch sides and repeat. Complete 15 reps, 3 sets. As you get more advanced, increase your weights and reps.

Single Leg Dumbbell Row

Start by grabbing a pair of dumbbells, stand with feet shoulder width apart and then bend at your hips and lower your torso until it’s nearly parallel to the floor. Let your dumbbells hang at arms’ length from your shoulders and face your palms toward one another. Next, slightly bend your knees and raise one leg and hold it in the air. Contract your abs and glutes the whole time throughout this exercise. Row the dumbbells to the side of your torso, keep your arms close to your body and imagine there is a pencil between your shoulder blades that you are squeezing. Slowly return your arms to the starting position. Beginners, you may have to lower your leg down after every rep but as you advance try to stay balanced on your one leg the entire time. Complete 15 reps each side, 3 sets. • Curtsey Squat with a Front Raise

Begin by standing feet hip width apart and a dumbbell in each hand, arms resting in front of your body, palms facing toward your body. Cross your

right foot behind your left leg and lower down in a deep curtsy, as you keep your hips and torso facing forward. As you get more advanced, your curtsey will get deeper until your back leg is a mere inch from the floor. From this position, raise weights to shoulder level in front of your body, palms down, keeping elbows slightly bent. Lower weights while standing back up to the starting position. Complete all 15 reps on one leg before switching to the next. Complete 3 sets on each leg.

Start by standing with legs in a wide stance, toes turned out. Your knees need to stay in line with your toes so don’t go too wide. Holding a dumbbell in each hand, raise your arms straight up above your head, palms facing in as you keep your shoulders relaxed and your arms right next to your ears. Tuck your pelvis under and slowly bend into a plié squat while at the same time bending your elbows and slowly lowering the dumbbells behind your head. Pushing through your heels and squeezing your glutes,

legs and abs slowly begin to rise up as you simultaneously raise your arms back up straight overhead to the starting position. Complete 3 sets of 15 if you are a beginner or 3 sets of 20 if you are advanced and try heavier weights.

eptember all over the world is known as the beginning of the fashion calendar. It is fall when we anticipate a change in trends and those trends dictate what direction fashion will go into for resort and summer collections for the rest of the fashion year. This year has been no exception as we

have seen in some of the absolutely stunning shows at NYFW. When fall strutted in New York in February the fashion world could not wait for the season to arrive and leaves to change their colors. After seeing a video of their song Obey Your Guns and hearing the buzz around town about the band, we wanted to see what was so special about Charlotte’s own Matrimony and they obliged. See what they have to say about groupies, life on the road, and angel rock.

H

ow do you put a label on a band whose influences are as diverse as Tom Petty, Stevie Nicks, Van Morrison and Lil Wayne among others? It was 11am on a sunny Saturday morning at 5Church restaurant in Uptown Charlotte when we sat down with the band, Matrimony, to try to answer this question. We had heard about the Charlotte based band for the first time just a few months earlier from our friend Alejandro Torio. We told him that we wanted to start including and featuring music and bands in the magazine. Without hesitation he said that Matrimony had to be the first band that we featured. With our interest piqued by his suggestion, we went to YouTube to see what we could find out. What we found was a band whose sound is meaningful, melodic and full of soul. “Do you guys want something to drink before we get started” I asked. In almost perfect harmony, all four members replied, “I’ll take a Jameson on the rocks please.” I immediately smiled at the resounding response and couldn’t help but think to myself, this is going to be good. As we sat across the table from each other sipping on our whiskey drinks, I immediately noticed a striking resemblance between three out of the four of them, as well as the intricate and captivating imagery tattooed on their arms and necks that were sure to represent stories and experiences of their past. As I soon discovered, their story is rich with themes of family, tradition and a love for music that began long before any of them were even born. With a great grandfather who played in a bluegrass band and a grandfather who played the washtub bass, musicality runs deep in the veins of siblings Ashlee, Jordan and CJ and in a sense, was inherited. “We first started playing music as children and had a child band called the Fabulous 5. We’d play at family functions and get togethers to entertain the family.” Lead singer and guitarist, Jimmy is originally from Belfast, Ireland and first met brothers CJ and Jordan while playing gigs around Charlotte. They became friends instantly and started playing gigs locally around Charlotte. With a foundation of trust and friendship that originated from the music they played together, the two brothers decided that they wanted to introduce Jimmy to their younger sister, Ashlee. The connection and chemistry between the two started with the music, and is evident when you hear the almost effortless and perfect blending of their harmonies, and the marriage of their voices. As life often imitates art, they were soon married and the band Matrimony was born.


As the story goes with any working band with aspirations of making it to the next level, Matrimony’s #1 goal has been to book gigs, tours, and festivals wherever they can. Aside from playing local Charlotte venues like The Evening Muse, Visualite, and Neighborhood Theatre, their journey has also taken them to huge festivals like SXSW (South By Southwest) in Austin, Texas and they have even played internationally in Jimmy’s homeland of Ireland. The lakes and rivers around Charlotte don’t usually come to mind when one thinks about fly fishing. In fact, I bet if you asked one hundred fly fishermen to name a good place to enjoy our craft in North Carolina, not one single person would mention the Queen City. Truth be told, before about two weeks ago, I damn sure wouldn’t have mentioned our city in a response. When I think of fly fishing destinations, I think about gin clear streams in Western North Carolina or the waters of Coastal North Carolina. I would never have imagined that some of the very best fly fishing (and the most sporting) takes place on the waters in our own backyard. Then I met Captain Paul Rose. Captain Paul Rose, owner of Carolina Bonefishing, has been fishing for 30 plus years and guiding the waters around Charlotte for over ten years. According to Paul, “I am a utility type guide. I can guide the cold water mountain streams for trout, the saltwater for reds, and the warm water lakes of the Piedmont for carp,bass and panfish.” Rose grew up fishing and hunting and was taught the importance of the outdoor lifestyle. When he was just a boy, his dad, after a long week at the factory, would always spend the weekends hunting and fishing with Paul and his brothers. “If we did good in school we could skip the occasional day from school. He always said not to tell mom,” said Paul. In an effort to keep the sporting tradition alive, he has made the same deal with his daughters, however they have a slightly different arrangement. According to Paul, “My three daughters have the same incentive, but if we fish there must be a little shopping involved. We call it ‘Deals with Dad’.” I met Captain Paul about an hour after sunrise at the put in ramp on Highway 16. The fog was burning off of the water at Mountain Island Lake. It was calm and glassy. I waited several minutes for Paul and then spotted a wellused Hell’s Bay flat boat approaching. He acknowledged me and pulled the boat within inches of the dock with ease. I boarded the small boat, introduced myself to Paul, and we were off. The wind blew as we sped past beautiful shoreline weaving in and out of buoys and avoiding fallen trees and


Sport other obstacles. To my surprise, there was no one else on the water. Within ten minutes we had reached the first cove where we would be fishing. He turned into the small cul-de-sac of water and immediately started looking for fish. “This is why I have a boat like this. Without a flats boat you can’t get into this shallow water.” said Rose, “and that’s where the fish we are going to be hunting feed.” “Did he say hunting?” I asked myself. In minutes I knew why. He silenced the engine, handed me a fly rod and told me to strip out some line. What he said next was unexpected, “We’re going to be fishing for carp today.” Just as I never would’ve ever answered ‘Charlotte’ to a question regarding fly fishing destinations in North Carolina, I never had thought of carp as a sport fish. Many think of the common and grass carp as trash fish, cleaning the lakes, and eating whatever they can smell. However, as Paul informed me not seconds later, “Carp are very spooky fish, hard to catch, and when you hook them they fight like hell. They’ve all got shoulders.” After a short briefing on our target. Paul grabbed a long ten foot pole off the side of the boat and climbed up onto a stand at the rear near the motor. From his new elevation he could easily spot fish. With the pole, he pushed us closer and silently through a mere six inches of water towards the back end of the cove. “Do you see him? At ten o’clock. About twenty yards out,” Paul said. I looked but to no avail. I saw absolutely nothing. He repeated what he said and then asked, “Don’t you see the mud?” I couldn’t see anything. This same event happened numerous times, until my eyes started to adjust. Then finally, I saw my first target, heaved out an awful cast and was rejected within seconds. This rejection happened over and over again. Sightfishing for carp had, in just several hours, turned into the most challenging fly fishing experience ever. I saw

the entire day pass by without one single take. Cast. Rejection. Cast. Rejection. The frustration began to build and I thought I had been beaten by, of all things, the carp. I was about to throw in the towel. And then, Paul shouted again. “Twelve o’clock. Ten yards in front of you coming right at you.” I cast, hit the fish’s nose with the fly, saw it bounce off of him, and then the fish did what all others that day didn’t, he took the fly. Instantly I could tell that this was going to be the single most powerful fresh water fight I had ever experienced. The fish played me for ten minutes, making multiple runs away from the boat, squealing the drag on the reel, and doubling over the rod. Finally netted, I held the fish briefly, then placed it back into the lake water. It swam quickly away to be caught another day. The day came to an end successfully, but I was also left perplexed. After all the trout I’ve caught, it was the common carp who had humbled me. Yet I wanted more. I said bye to Captain Paul, headed back down Highway 16, and not ten minutes later was on the horn booking a second day on the water, excited for another day searching for “Carolina bonefish.” There is no doubt that this stlye of fishing is one of the rawest and most challenging types of fishing I have ever had the chance to do. I urge all anglers and sportsmen and women to put aside your skepticism and try it. If you do you will become addicted. I first saw Erich Moffitt’s artwork hanging on the walls of a North Davidson establishment. From the first painting I saw, an acrylic named “The Silver Dollar Symphony” portraying the members of a colorful jazz band, I knew I liked his work. Little did I know that just two weeks later I would get the opportunity to meet Erich and talk with him about his passion for art, his inspirations, and his goals as an artist. We met at Brevard Court in uptown Charlotte. The area is known to many as the French Quarter and anyone who visits can understand why. When you turn the corner from the hustle and bustle of Church Street, you are whisked away. The area pays homage to the bygone days of another era in Charlotte, reminding me more of Savannah or New Orleans, or maybe even another part of the world, like Paris than of our own modern city. The original buildings from over a half a century ago still stand, old and imperfect, shadowing the court made of faded red brick. The alleyway is framed by old pub signs and restaurant awnings. Patrons sit outside under umbrellas, dining on simple food and sipping craft beer and wine. At the very end of the court is Genome Gallery. Standing in front of the door to Genome, a name derived from Greek origin meaning “to come into being,” is a group of people, artists I assume. They are smoking cigarettes, drinking, and laughing. I introduce myself to the group and ask for a tour of their space. The small but vibrant main room showcases all the exhibitions. The walls don over twenty five pieces of absolutely intriguing artwork in a variety of mediums ranging from acrylic to digital art, and even a piece entitled “Adam Names The Animals” a collaboration between both Moffitt and Partridge. “Adam Names The Animals” for me is the standout of the exhibition. The large 60” X 48” painting shows off the artists’ skill and attention to detail. The colors are diverse, including virtually the entire spectrum. The illustrations are elaborate. The meaning, whimsical and fecetious. According to Moffitt, “The piece is sort of a tongue-in-cheek take on the part in Genesis where Adam names the animals. In this case, you have all of these animals that are larger than life, larger than humanity, huge lumbering behemoths that all come together around the tree of life to get named by Adam.” Regardless of meaning, the peice is magnificent and achieves exacly what Moffitt tells me is his goal with art, “I want people to like my work regardless of if they know what it’s about, regardless of whether or not they know what it’s worth or how many hours I’ve put into it. For my sake, I want to brighten up somebody’s day with my work. A lot of the ideas that I play with in my work feed into that. The idea of Adam and the Animals, the centerpiece in the Megafauna


show is taking a very serious subject like the origin of life and translating into sort of a Saturday-morning-cartoon-like mindset that highlights both the seriousness in silly things and the silliness in serious things.” Moffitt’s other paintings are just as dichotomous, displaying amazing skill in his craft while tackling silly subjects. His “Seisuki & Mai” is a tribute to the Japanese manga artist, Hayao Miyazaki and his “Legends of the Mushroom Kingdom” is a piece inspired by Super Mario Brothers. His style of painting and illustrating is inspired by some of the greats, both dead and alive. According to Moffitt, “These days if you were to ask me what my major artistic influences would be I would say Gustav Klimpt, J.C. Leyendecker, and Alphonse Mucha. Nowadays I like to look at artists that will be for the betterment of my own skills, people that I can still learn from and those arent exclusively dead artists (Scott Scheidly).” Alongside “Adam Names The Animals” are a gaggle of Scott Partridge’s panels. Partridge’s digital art for Megafauna was designed around particular shapes and patterns like chevron and triangles. The art is colorful, depicting everything from tigers and monkeys to the largest panel that features Australopithecus, one of the main hominids in the evolution theory. The Australopithecus is made from the letters of Genesis. The piece can be interpreted in a variety of ways, but for Partridge, he believes the work simply tells the story of two different belief systems through one piece of art, all controversy aside. According to Partridge, “The Australopithecus skull represents the scientific narrative of our origins and the first chapter of Genesis represents the biblical reference. If you treat the scientific consensus as religion, it is not going to serve that purpose well, and conversely, if you try to treat stories as science, they don’t do a good job. I think that problems arise when one is treated as the other.” The binary attributes of this work make it a powerful piece and allow for an array of interpretations. According to Moffitt, the pieces of Megafauna embody what art should be. “Art should not be about catering to one specific craft, it should be about communicating either a world view or an individual idea to someone who can appreciate it and that someone can be anyone out there. All that takes for a piece of artwork to sell is for the right person to see it and connect with it,” said Moffitt. After viewing the exhibition and learning about each of the

pieces we continued the tour of Genome. We make our way up a set of stairs hidden by a door in the main room. At the top of the stairs we turn right and enter the studio of Genome’s resident artist Henry Schreiber. Henry sits on a stool, elbows on his desk, working on art for his next exhibition. His paintings of marmots adorned the walls and easels of his area. As his comical subject matter, these creatures are painted realistically (dressed up as famous people like Napolean and Mona Lisa) and are technically sound. Another artist, Alexandra Loesser is in the room chatting with him. Her piece, “How To Get Famous”, a painting of a nude woman on a stool with a camera hanging around her neck, was mounted on the walls as well. They show me all of the paintings from past exhibitions and then we all talk about Genome’s existence and what the gallery is trying to accomplish. According to Moffitt, “Genome is different than a lot of galleries in Charlotte. A lot of galleries in the area only promote the type of art and artists that they feel they will be able to market as opposed to saying, this month we’ll have this series of styles, and the next month we’ll have this variety of artists. They’re locked in, more or less, to a specific profile of their clients and that’s what’s expected. Upsetting the apple-cart would upset their client base which is something that they aren’t going to do. It’s not a good or bad thing, it’s just how it is. For an artist like me, that’s why a place like Genome is all the more tempting, because its new and fresh. They can afford to make mistakes, they can afford to take risks and chances, move in different creative directions, see what they can experiment with, and find out what works and what doesn’t.” It seems that the other artists agree with Erich and find the gallery’s goal very appealing. By creating an artist network that serves as a foundation for contemporary works spanning different mediums and styles, all kinds of artists have a chance to thrive and their art now has a chance to reach local, national, and international audiences. s the saying goes, “The kitchen is the heart of the home,” but for a restaurant, the heart and driving force is undoubtedly the chef. Coastal Kitchen and Bar’s Executive Chef, Clark Wade, took the time to sit down with us and talk about his culinary journey and influences, the importance of using fresh local ingredients, and more . He also gave us a taste of the wonderful and unique creations

he’s crafted for the one-of-a-kind menu at Coastal Kitchen. The menu at Coastal is a direct reflection of Chef Clark’s diverse culinary background. As a magna cum laude graduate of Johnson and Wales in Charleston, Chef Clark honed his chops making all kinds of soul and comfort food, or in the words of Chef, “Food that hits your belly and is full of love and makes you think of mama once you take that first bite.” A great example of this is the black eyed pea falafel, one of Chef Clark’s

original creations at Coastal. He used a southern staple, the black eyed pea, as a substitute for the chick peas in the Middle Eastern staple. After graduating from Johnson and Wales, he worked under a Vietnamese Chef for four years who helped train his artistic eye. He also introduced Chef Clark to Southeast Asian flavors which he incorporates into his unique dishes created exclusively for Coastal Kitchen. You can taste the Asian influence in his Tuna Crisp, a dish that features a Wonton Crisp topped with


jasmine rice, wakame salad and ahi tuna, and then drizzled with ponzu, wasabi mayo and sriracha mayo. The presentation is beautiful, and the combination of diverse textures and flavors are exhilerating. According to the chef, even though he puts a lot of effort into the presentation of each and every dish, the most important thing is how something tastes. COASTAL’S BLACK EYED PEA FALAFEL INGREDIENTS

4 Cups cooked Black Eyed Peas ½ Whole Onion Diced Small 2 Tablespoons Minced Garlic 1 Cup Finely Chopped Parsley 2 Eggs 2 Teaspoon Baking Powder 1 ½ Tablespoons Cumin 1 Pinch Teaspoon Cayenne Pepper 2 Tablespoons Extra Virgin Olive Oil 4 Tablespoons Fresh Squeezed Lemon Juice 2 Cups Panko Bread Crumbs Preparation Instructions

Preheat oven to 425F. Put the peas in a food processor and pulse to puree them. Pour into a large bowl. Then add onion, garlic, parsley, and egg into the food processor and pulse to combine. Add the mixture to the peas. Stir in the remaining ingredients plus salt and pepper to taste. Form small patties with the mixture and sauté 2 min on each side until golden brown. Serve on warm flat bread or pitas with your choice of toppings.

all is here and I for one am ecstatic about it. It’s not that I don’t love summertime in the city. In fact it’s quite the opposite. However, by the time Labor Day arrives, I’m over the hundred degree days and the high humidity. This fall in particular has gotten me really riled up. For those of you that are sports fans you know exactly why. We’ve had about a six month drought when it comes to sports in the city. Now, with the first week of the season in our sights there is so much to get excited about. First, the Carolina Panthers are back and better then ever. With a great draft, a strong returning core, and Super Cam, our team seems to be set for success. Ryan Kalil, the center for the Panthers, knows what I’m talking about. He’s so confident he took out a full page ad in the Charlotte Observer telling everyone why this team will win the Super Bowl. Ryan Kalil, cheers to you and good luck achieving your goal. Second, with all this football comes a

whole bunch of tailgating. From brews to barbeque, September and October are filled with flavor. There are several excellent beer festivals in Charlotte including the Charlotte Oktoberfest. I personally can’t wait to attend another year of BBQ and Blues, one of the South’s biggest barbeque festivals. The list of fall activities doesn’t stop there. For those that could care less about sports, beer, or barbeque, there are a plethora of options for you as well. The arts and culture scene is heating up as theaters across Charlotte start their performances. There are fashion shows virtually every week of September, lots of love and support during all the activities for October’s Breast Cancer Awareness Month, and, if you enjoy the outdoors you can always escape to the mountains to watch the seasons and colors change. Point being, there is no excuse for you not to enjoy fall in the Queen City. So, get out there, cheer on your Panthers, and have an amazing autumn.
