Pink Praline Financier and Pistachio Financier
Prep time: 15 minutes Cook time: 18 to 20 minutes Makes: About 20 pieces These little French almond cakes get their name from the rectangular moulds they are baked in that resemble a bar of gold. Ingredients: 7 tbsp (3 ½ oz) unsalted butter ½ cup icing sugar 1/3 cup all-purpose flour 1/3 cup ground almonds 2 egg whites
3 tbsp pistachios, finely chopped 5 pink pralines, crushed In saucepan over low heat, melt butter. Pour into glass measure and let stand to cool. Reserve clear butter and discard solids. Set aside. In bowl, sift together icing sugar, flour and almonds. Add reserved butter and stir to combine. In separate bowl, beat egg whites until stiff. Fold one-quarter of the egg whites into the mixture until combined. Fold in remaining egg whites. Divide dough in half. Stir pistachios into one half. Into remaining dough stir in pink pralines. Fill financier moulds. Smooth tops and clean edges.
Bake at 325 F for 18 to 20 minutes or until golden and dough pulls away from sides of pan. Let cool in pan for 10 minutes.
