Don’t toss leftover pasta! Add an egg to bind, whatever veggies you have onhand, and a bit of salty aged cheese on top for a quick but delicious second-hand dinner. 1. Preheat oven to 375°F. INGREDIENTS Leftover pasta Leftover roasted vegetables Mushrooms, sliced
2. In a large bowl, using tongs, thoroughly toss pasta, vegetables, mushrooms, fresh
herbs and egg until well blended. Place mixture in an oiled 9-inch pie pan and top with cheese.
3. Bake 20-25 minutes. Allow to cool slightly and slice into wedges to serve.
Additional vegetables (spinach, eggplant, etc.) 1-2 Tbsp. Fresh basil and oregano 1 egg, lightly beaten Aged Parmigiano-Reggiano cheese
