Pink Praline Cupcakes of Love (Praline Red Velvet Cupcakes)

Ingredients: Cupcakes: ½ cup unsalted butter, softened ¾ cup granulated sugar 1 egg 1 cup all-purpose flour ¼ cup cocoa powder ½ tsp baking powder ½ tsp baking soda ¼ tsp salt 1 cup buttermilk ¼ tsp red paste food colouring 8 crushed pink pralines Frosting: 2 egg whites 2/3 cup granulated sugar ¼ tsp cream of tartar Pinch salt 6 crushed pink pralines Method: Line 12 muffin tins with paper liners. In mixer, beat butter with sugar until well combined. Beat in egg. In separate bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt together. Stir into butter mixture, alternating with buttermilk, making three additions of dry ingredients and two of buttermilk until smooth. Stir in red food colouring. Stir in crushed pralines. Divide evenly among paper liners, filling about ¾ full. Bake in centre of 350 F oven until tester comes out clean, about 20 minutes. Remove to rack and let cool completely. Frosting: In heatproof bowl over simmering water, using hand-mixer, beat eggs, sugar, cream of tartar and salt until mixture holds stiff peaks, about 5 minutes. Remove from heat and continue beating until cool. Fit pastry bag with 1/4 –inch star tip. Pipe frosting on cupcakes. Sprinkle with crushed pralines.
