A culture of cleanliness

The COVID-19 pandemic has undoubtedly had an immense impact on the restaurant sector. A recent report forecasts losses of between 51 and 77% of expected revenue this year, but there is a glimmer of hope following the government’s announcements concerning the partial reopening of premises from 4 July. I spoke with Peter Teska, global infection prevention application expert at Diversey, to get a better understanding of the challenge ahead, and of the critical need for restauranteurs to embrace a culture of cleanliness. Peter said: “Restaurants need to be prepared for a new standard of cleanliness…It requires businesses to overhaul cleaning procedures, conduct thorough training and implement new employee-centric policies. Many restaurants will need to rethink their approach to cleaning as the pandemic continues to bring cleanliness to the forefront of everyone’s minds. There are several considerations that owners and managers must take when establishing new cleaning procedures, including frequency, thoroughness, accountability, as well as teaching core values and processes.” Peter points to training as a key element in safely reopening restaurants. “Training topics should include infection prevention, food safety and personal hygiene,” he continued. “When employees understand the ‘why’ behind hand hygiene, social distancing measures and proper cleaning, it minimises the risk of lapses in cleanliness.”

As restaurants plan to reopen we all hope that their long-term survival will be assured. All foodies out there can’t wait to get back to their favourite eating houses, but consumer confidence as well as excellent cuisine must be high on the menu. In closing, Peter Teska said: “It’s important for restaurant owners to understand where to invest their funds now to support their long-term survival. Taking the time to reassess the corporate culture and educate employees about the role of cleanliness is an important first step ahead of reopening. Training ensures that all employees understand the expectations around cleaning and know how to execute the processes and procedures correctly.
