Why not try this delicious recipe from our friend Jacqui Shears, Nutritionist at the Australian Nutrition Centre.

GLUTEN & DAIRY FREE

Method 1. In a skillet cook the diced onion, bacon and mushrooms until brown.

2. Add cannellini beans, tin tomatoes and tomato paste, bring up to heat.

3. Add curry powder, garam masala, squeeze of lemon juice and season with salt and pepper.

4. Turn down to low heat and allow to simmer for 10-15 minutes. Ingredients 1 can of cannellini or pinto beans (drained and rinsed) 1 can of crushed tin tomatoes 2 tablespoons of tomato paste 4 rashers of short cut bacon (diced) 1 small onion (diced) 6 button mushrooms 1 teaspoon keens curry powder ½ teaspoon garam masala 1 lemon (juice) Salt & pepper to season

Additional tips 1. This meal can be made vegetarian with the exclusion of bacon and add more mushrooms. Or replace cannellini beans with pinto beans.

2. Add a poached or fried egg on top, baby spinach and avocado on the side.

3. Leftovers can be enjoyed the next day.

4. Replace the bacon with a ham hock and cook in a slow cooker.

5. Add a chilli to the mixture or the amount of curry powder to increase the flavours.
