ewly reopened, Milflores occupies a wing of the historic Casa de los Milflores (House of the Thousand Flowers), which earned its name from the countless number of flowers cultivated in its abundant gardens. Being part of a 16th-century home, the hotel has an inherent colonial elegance which has been conserved by the work of engineer Amerigo Giraca and enhanced by designer Juan Carlos Rizo. Rizo was inspired by the name of the property to create a new and unique design concept for the hotel. Each of the six suites has been named for a flower that grows on the grounds, and the shade of that flower colors the opulent and contemporary furniture and décor found in each suite. I really love Las Rosas. It is probably my favorite suite,” states General Director Mariano Beltranena Falla. The door to Las Rosas opens onto a private, sun-drenched patio punctuated by a 17th-century red pila. The room’s custom-made furniture is a rich rose-red hue, and the handcrafted textiles reflect the sensual color of the fresh roses found around the room. Las Orquídeas has an outdoor living area complete with comfy sofas and a fireplace. Guests who stay in this suite can relax in private here while listening to the trickle of the fountain in their own garden. The bedroom is washed in a soft petal-pink, evoking the elegance of the orchid. Las Jacarandas is the most modern and popular suite at Milflores. Emphasizing the vibrant purple of the jacaranda, the suite boasts high, wood-beamed ceilings and a spacious and newly constructed bathroom with a Jacuzzi tub. on su regreso a Finca Filadelfia, Chef Miralles se inspiró en crear un nuevo menú para Pergaminos, el restaurante de fine dining. “Me encanta la cocina francesa y tailandesa. Son los dos estilos de comida que más me gusta comer.” El nuevo menú reúne platos de ambos mundos culinarios, así como las influencias de otros países europeos y asiáticos, con un objetivo específico en mente: “Quiero que los comensales se diviertan y experimenten tanto nuevos sabores como sus ingredientes favoritos en formas creativas. Me encanta entretener a los comensales y sorprenderles.” Debido a que son muy diferentes las técnicas, ingredientes y sabores de la cocina francesa y la asiática, la fusión se trata menos de los platos individuales que del menú
completo. Los comensales son presentados con platos que les llevarán en un viaje culinario entre los continentes, permitiéndoles experimentar una procesión de sabores diferentes pero complementarios. Fine Dining at Pergaminos
W
ith his return to Finca Filadelfia, Chef Miralles was inspired to create a new menu for Pergaminos, the resort’s fine dining restaurant. “I love French and Thai cuisine. They are the two types of food I like to eat the most.” The new menu brings together dishes from both culinary worlds as well as influences from other European and Asian countries with a specific goal in mind: “I want diners to have fun, and to experience new flavors and their favorite ingredients in creative ways. I love to entertain diners and surprise them.” Because French and Asian cooking techniques, ingredients and flavors are very different, the fusion is less in the individual dishes than the whole menu. Diners are presented with dishes that will take them on a culinary voyage between continents, allowing them to experiencing a procession of different yet complementary flavors. Regardless of the region the inspiration comes from, all of the dishes have been carefully designed to complement each other as well as to develop on the palate in a unique and playful way, creating a fun and rich experience for the diner. Most of the meat and seafood served at Pergaminos is imported in order to provide guests with the very best the
world has to offer. The pink and tender ahi tuna sashimi steak that graced my plate came from the Indian Ocean. The fish was carefully sliced and bathed in a dressing of light soy sauce, orange, wasabi, and coriander seed, and then drizzled with a rich caramel of dark soy sauce, coriander root, ginger, and sugar palm. Topping the tuna was a tangy mound of frisée lettuce dressed in rice wine vinegar and a sprinkle of black sesame seeds. The dish is not only visually appealing, the diner also enjoys a series of flavors on the tongue: the sweetness of the caramel, followed by the tang of the orange, then the salty influence of the soy sauce, concluding with the delicate umami of the tuna. It’s a carefully conducted experience that Chef Miralles takes pride in. The next plate served was the rack of lamb, moving the dining experience from Asia to Europe. Cooked with French technique, the New Zealand lamb was seared before being slow roasted, resulting in tender and juicy meat. The lamb was served with roasted vegetables and a flavorful mint sauce made by reducing lamb stock until it thickened, then seasoning it with mint liqueur, creating a savory and delicious complement to the lamb with a subtle yet lingering mint finish. With all the attention to detail that goes into the flavors of Chef Miralles’s dishes, it might be assumed that portion size has been sacrificed. But that’s not the case. Chef Miralles loves food and wants his guests to leave satisfied, not only by the taste and aroma of his dishes, but also by the portion size and presentation. If you have room for dessert, then you must try the cappuccino semifreddo or the amaretto crème brûlée. Chef Miralles was inspired by his mother’s sweet tooth, using the ingredients and flavors she loves the most, to develop a decadent dessert menu. His desserts are sweet and aesthetically appealing finishes to an overall impressive menu. Diners at Pergaminos will most certainly enjoy the new menu, but they will also be impressed by the service. It is expected that the staff of a fine restaurant will make sure diners are comfortable and enjoying themselves, but at Pergaminos they go the extra mile to accommodate diners’ needs, including preparing meals not on the menu to satisfy special diets and desires.

Situado en una capilla arqueada al sur de la Catedral, Caffè Opera imparte los auténticos sabores de Italia tanto como exhibe elegancia colonial por su nueva ubicación.

arbara Trentavizi, la dueña de Caffè Opera, está de vuelta como chef principal después de tomar un descanso de cuatro años para continuar su trabajo como antropóloga social. Aunque aparentemente no relacionados, los valores que ella ha desarrollado a través de su profesión académica han sido incorporados en el restaurante: trabajar en equipo, apoyar tanto a los que producen alimentos orgánicos como los productores locales, y las filosofías del movimiento Slow Food que fue desarrollado por su compatriota italiano Dr. Carlo Petrini, que tiene como objetivo rescatar el placer de comer. A través de sus investigaciones y el amor a las culturas de Guatemala, Barbara desarrolló aún más su apreciación por su propia cultura y el deseo de compartirla a través de la comida que sirve en Caffè Opera. “Lo que comen los clientes aquí es auténtico y fresco. arbara Trentavizi, the owner of Caffè Opera, is back as head chef after taking a four-year break to pursue her work as a social anthropologist. Although seemingly unrelated, the values that she has developed through her academic profession have been incorporated into the restaurant: teamwork; supporting those who produce food locally and organically; and the philosophies of the Slow Food Movement developed by fellow Italian Dr. Carlo Petrini, which aims to rescue the pleasure of eating. When you ring the bell and cross the threshold of the luxury design hotel Milflores, you will not only be walking into a 16th-century home, you will be stepping into a unique experience. Milflores offers its guests exclusivity, exceptional service, and contemporary design all in a historic setting.

ewly reopened, Milflores occupies a wing of the historic Casa de los Milflores (House of the Thousand Flowers), which earned its name from the countless number of flowers cultivated in its abundant gardens. Being part of a 16th-century home, the hotel has an inherent colonial elegance which has been conserved by the work of engineer Amerigo Giraca and enhanced by designer Juan Carlos Rizo. Rizo was inspired by the name of the property to create a new and unique design concept for the hotel. Each of the six suites has been named for a flower that grows on the grounds, and the shade of that flower colors the opulent and contemporary furniture and décor found in each suite. The combination of contemporary design in a historic building makes for a beautifully eclectic atmosphere and truly earns Milflores the designation of the first and only luxury design hotel in La Antigua. Part of the experience of Milflores is staying in a colonial building, and because of its historic architecture, each rooms has its own character. Each of the suites – Las Rosas (The Roses), Las Orquídeas (The Orchids), Las Jacarandas (The Jacarandas), Los Lirios (The Lilies), Las Hortensias (The Hydrangeas), and Las Azaleas (The Azaleas) – has its own individual charm and
distinct palette of red, pink, purple, yellow, blue or orange, inspired by their namesakes. “Once you enter a room, you will feel the lilies, the jacarandas, the roses. I really love Las Rosas. It is probably my favorite suite,” states General Director Mariano Beltranena Falla. The door to Las Rosas opens onto a private, sun-drenched patio punctuated by a 17th-century red pila. The room’s custom-made furniture is a rich rose-red hue, and the handcrafted textiles reflect the sensual color of the fresh roses found around the room. Las Orquídeas has an outdoor living area complete with comfy sofas and a fireplace. Guests who stay in this suite can relax in private here while listening to the trickle of the fountain in their own garden. The bedroom is washed in a soft petal-pink, evoking the elegance of the orchid. Las Jacarandas is the most modern and popular suite at Milflores. Emphasizing the vibrant purple of the jacaranda, the suite boasts high, wood-beamed ceilings and a spacious and newly constructed bathroom with a Jacuzzi tub. Los Lirios is colored a joyous and sunny yellow. This suite has two queen-sized beds in the main sleeping area and a twin-sized day bed in the sitting area, making it an ideal suite for families. Serene shades of blue welcome visitors when they enter Las Hortensias. The spacious room has beautiful artistic touches and a fireplace to warm its guests at night. Las Azaleas is the coziest of the rooms. Bathed in a warm and inviting orange, guests will be surrounded in comfort when they snuggle up in the queen-sized bed. One of the distinctive attributes of the hotel is the amount of space that has been allocated as sitting areas for the guests. Even at full capacity, there is enough room to find a sun-drenched patio, a smart library, or a cozy lounge to enjoy all to oneself. The hotel will also soon be completing a garden and spa
area for its guests, complete with a lap pool, a massage room, and a large Jacuzzi with a stunning view of Volcán de Agua. The hotel’s restaurant, Jardín Azul (Blue Garden), seats twenty-five. Here guests can enjoy delicious breakfasts like scrumptious Eggs Benedict or French toast made with fresh brioche. For lunch and dinner, the restaurant offers its guests the finest wines to accompany the dish of their choosing. Jardín Azul’s main purpose is to provide for the needs of the guests staying at Milflores, but with advanced reservations, the restaurant will open its doors to those wanting an exclusive dining experience. Most small hotels would have difficulty, especially in the beginning, offering their guests such an expertly executed design with all the luxurious touches like L’Occitane toiletries and the finest Egyptian-cotton sheets, as well as be able to maintain an exceptional level of service, which is what guests remark on the most in the comment book in the lobby. The secret to sustaining this attention to detail and service from check-in to checkout, and doing so consistently, is that this small hotel has the backing of the grand Vista Real in Guatemala City. “Milflores is Vista Real’s little brother.
