Dramatic architecture and pared back interiors answer to the owners' desire for unadulterated sea views from Anguilla. Words by Natasha Were
or Suresh and Nutan Bhalla, the one non-negotiable factor in their plans for a Caribbean holiday home was the view. They wanted not just a sea view, but a sunset view. And it had to be visible not only from the deck or the living room, but from every room. On the rocky northwest coast of Anguilla – an island that fulfilled their criteria for safety, friendliness, quality of services and, of course, natural beauty – they found a parcel of land that provided the panoramic seascape they craved, and that all-important sunset, slightly left of centre. And there they built Villa Kishti at Black Garden: a villa whose vast dimensions and adventurous architecture embrace the wide, open ocean. The Bhallas enlisted the help of Toronto-based architect Frank

Hamilton, with whom they had worked on several previous projects, to help them create the seemingly impossible: a home that would capture the views from every angle, yet provide plenty of privacy for the couple and their three adult children. “Essentially, the mandate was to bring the outside in,” says Suresh. “If you were lying in bed, sitting in the bath, or standing in the shower, you had to have a view of the ocean. That was what we insisted on.” Acres of glass – floor to ceiling and wall to wall – were essential to provide those all-important views, but the ingenuity of Hamilton’s design is in the shapes and angles he employed and the orientation of each element, to ensure the ability to look out, without being looked in on.

Using the natural gradient of the land, he designed a series of interlocking spaces that descend towards the shore and fan outwards from a central hub, with two separate wings – one for the parents, the other for their sons – connected by curving tiered terraces and a cobalt blue arc of pool. The boys’ wing comprises three independent suites, each with its own living area, terrace, and en suite bedroom, the other is a lavish, double-height master suite with two walls made entirely of glass. “The dramatic drop of the land actually provided many positive opportunities,” the architect says. “It allowed for different views of the sea from all levels and also meant each of the three western suites could overlook the one below.” The glass walls of these suites were oriented away from the central terrace, affording them greater privacy and full frontal views of the setting sun.

The master suite, meanwhile, was designed to extend further towards the north, enabling Suresh and Nutan to see past their children’s wing and enjoy private sunset moments from their bedroom and outdoor hot tub. The upward sweeping roof lines on each wing may be suggestive of ocean waves, but they also serve to open these spaces up even more to the elements – a feature that was only possible, the architect points out, because they face north and therefore do not receive direct sun. Joining each wing are the gathering spaces – an open plan kitchen, living and dining room where wall-to-wall glass doors and transom windows above them frame the Caribbean Sea in widescreen cinematic style. Given the large dimensions of interior spaces and extensive use of glass, the interiors had to be crafted with care and precision, so as not

to jar or compete with the views. Canadian design firm Cecconi Simone stepped in relatively late in the process, says Suresh, but succeeded admirably in introducing a gently Asian aesthetic – the couple have travelled extensively in Asia and were particularly influenced by trips to Bali – while keeping it comfortable and contemporary. Interiors therefore maintain the sense of space with a simple, elegant design that uses natural materials and muted, earthy tones. Low-slung furniture is positioned in such a way that it does not interrupt sight lines, and select decorative pieces – elephant sculptures, ornamental wood carvings and the prow of a Balinese boat, repurposed as a coffee table base – add an oriental touch. Had the villa been located on a beach, the ambience would have been quite different, Suresh observes, but the volcanic rock shoreline is the ideal foil for such a distinctive and daring design. Suresh and Nutan Bhalla’s deep involvement in every stage of the design-build process has enabled them to create a one of a kind tropical retreat: a property where the combination of panoramic vistas and absolute privacy means that once they arrive, there’s very little reason to leave.

Days of yore
Taken almost 50 years ago, Margo Davis’ breath-taking photographs of Antigua capture the spirit of a people and document a different time and way of life. Words by Natasha Were t was whilst she was studying at Berkeley, California, that Margo Davis (née Baumgarten) met Gregson Davis, a PhD student from Antigua, who invited her to visit his home in the summer of 1967. As an outsider encountering a culture different from anything she had known growing up in Connecticut, USA, she felt compelled to photograph it. For the next five years she returned to Antigua each summer, RL
camera and rolls of film in hand, and spent her days not at the beach, as most visitors did, but exploring the small, rural villages, getting to know their residents and taking their photographs. The frank, direct gazes that stare out from her portraits are so open and honest – as if the subjects were looking right into the eyes of the viewer – that one is left in no doubt that there was deep respect and trust between photographer and subject.

The time she dedicated to building relationships with the people she photographed was key, but this collection of images was also the result of a special confluence of circumstances, Davis says. It was thanks to her hosts in Antigua that she was able to meet many villagers, whilst back at Berkeley her photography mentor encouraged her to pursue her photographic endeavours. In the later years, having moved to Stanford University, she was strongly influenced by the anthropologists she met there. RL
“I became an ethnographer,” she says. “My interest in photography merged with my interest in anthropology. Rather than working as a journalist who reports on what they see, I became a participant observer, a part of the conversation – a methodology commonly used by anthropologists.” “I wasn’t that interested in photographing the hills and the trees and the sea – although I did take some such images to lend context to the portraits – but my main objective was to photograph a way of life. I was interested in the cultural environment, and the ingenuity the Antiguan people employed to survive.” Indeed, the setting and background visible in each image tell an eloquent story. From the barefoot children dancing to Otis Redding to women cooking outdoors on old oil drums, men at work in the sugarcane fields and mounds of bananas on the dockside, all reveal details of life in Antigua in the late 60s and early 70s. What lends even more meaning to her photographs today is that they were taken at a turning point in history: in Antigua, the shackles of colonialism were being shaken off, whilst in the wider world, the civil rights movement was gathering momentum. Whilst black and white photography is undoubtedly a medium of yesteryear that always carries an element of nostalgia, Davis says, these images should not be romanticised. She reminds us that lives were hard in the aftermath of colonialism; the people had survived despite oppression and slavery. These photos are meant to celebrate the beauty, strength and resilience of the Antiguan people. Davis’s images have acquired greater significance with the passage of time. More than a haunting collection of portraits and landscapes, they form an invaluable visual history of the island and its people. The publication Antigua 1967-1973 is out this October with book launches at Jumby Bay, Antigua in the fall.

he elegant Caribbean-style architecture, tranquil setting and muted, natural interiors of Bella Verde add up to a luxurious, yet supremely comfortable, family home. But looks can be deceptive. There is more to Bella Verde than aesthetics: it is also one of the most environmentally-sensitive private residences in the Caribbean. A LEED Gold certified home and the winner of the Governor’s Award for Sustainability in 2015, Bella Verde was a collaborative venture between GreenTech Cayman and Dart Realty, conceived as a model of sustainable design and construction, and sold as a spec home. The owners, a family of four, were not specifically looking for an eco-home when they happened upon Bella Verde. They were simply searching for the ideal piece of land on which to build. RL

“Location was probably the most important thing for us,” they say. “Being on the water was a must, as well as living in a neighbourhood where our children could ride bikes and roam.” The exclusive gated community at Salt Creek, with its canal front lots and communal playground, ticked all the right boxes; the views from Bella Verde – of calm waterways and emerald mangroves – were perfect, and because development was still in the early stages, the owners were able to reconfigure the layout to suit their lifestyle. At almost 7,000 square feet, Bella Verde’s proportions are nothing if not generous, yet the design retains an intimate ambience, with an open plan kitchen, living and dining area at the heart of the home, and additional spaces – a playroom, media room, pantry, home office and master bedroom at either end of the ground floor, providing pockets of privacy and quiet when needed. Decorated in warm greys, with pale wood-look floors, the interior colour palette is soft and soothing, a pleasing contrast to the vibrant blues and greens outdoors. RL

Glass track doors across the front of the living room fold all the way back, extending the living area to encompass the shaded terrace, where automatic roll down blinds keep out bugs and reduce heat gain, but allow cooling breezes to circulate freely. A 45’ pool with an adjoining hot tub at one end extends alongside the terrace, a lawn leading down to the private dock on the other. The mature, lush landscaping, expertly designed by Vigoro Nursery enhances the home’s welcoming ambiance. “The outdoors space is fantastic,” they say. “We knew we would spend a lot of time out there, but building out a full kitchen has really elevated our outdoor living experience.” Both being passionate cooks, the owners designed the kitchens of their dreams: his outdoors, hers indoors. Top quality Thermador appliances were just the beginning inside: custom cabinetry allows a host of appliances to be artfully concealed or embedded for a sleek, clean look, while a vast island – topped with a single slab of Ice Canyon Quartzite and illuminated by oversize Tom Dixon pendant lamps – provides a space to prepare food, eat and entertain. The outdoor kitchen is equally impressive, complete with fridges, RL

a griddle, wok and regular gas burners, and a wide bar counter that doubles as a dining table. Whilst the cooking and living areas are ideal for entertaining and socialising, in the master bedroom suite the owners enjoy a private sanctuary. From the spacious bedroom they can step out to the pool or a separate terrace; his and hers walk-in wardrobes allow ample space to store extensive collections of accessories, and a bathroom of vast dimensions features a double shower, twin vanities and a free standing bathtub. All these are eclipsed however by the outdoor shower, located in its own private courtyard, where the faux green wall adds a tropical touch. Behind the tasteful décor, site-specific architecture and cutting edge technology – UV reflective glass, Lutron LED lighting and window shades, ICF blocks, a solar array and more – work to keep energy and water consumption to a minimum. Woven into all of this, are details that put the owners’ personal style stamp on their home: textured bathroom wall tiles, antique glass knobs on dressers and a custom brushed brass stair rail all imbue the home with their own character. Cool, calm and comprehensively sustainable, the owners were not obliged to compromise on any aspect of their dream home to keep it as green as the developers intended. “Bella Verde is a great example of how much this industry has developed,” they enthuse. “You would never know walking into our home that it is a LEED home. A great deal of attention was paid to it being green and still gorgeous, and that is what makes this house so special.”

hen Jacob and Fiona MacAdam relocated from the United Kingdom to the Cayman Islands, they didn’t dip their toes into the real estate market with a small condo or townhouse; instead, they dove in with a five-bedroom, five-bathroom house in the sought-after Webster’s Estates neighbourhood of South Sound. Initially, the couple rented the house, but they quickly fell in love and made an offer. Built in 1996, the house was due for an update. The couple could already see the potential, having renovated previously in the UK. “We loved the
flow of the house, and it is such a lovely neighbourhood," Fiona explains. But it was close proximity to the couples’ respective workplaces that tipped the scales in its favour. They had a very clear, specific vision for what they wanted, which helped keep them on track, but also created a challenge, “It took us a while to find the right tradesman for what we proposed to do,” Jacob says. After a lengthy interview process, local firm AMB Construction was selected with Jacob overseeing the project. RL

The house was completely gutted and refinished down to the finest details, marrying style and function for a truly unique home. The couple’s passion for entertaining guided the design, from the open-plan, eat-in kitchen with its spectacular marble feature, to the custom chef’s kitchen neatly nestled in the utility room. One of the home’s most unique features is the climate controlled wine cellar with white-washed brick, modern shelving and beautiful glass doors. The walk-in cellar was created by repurposing an under-stair storage space. The first floor also features a living room, formal dining room, office and wet room bathroom.

The couple’s style is reflected throughout the home – modern lines, clean fittings and simple hardware are complemented by traditional English furnishings and French Provençal influences. The delicate grey colour palette is balanced with pops of colour in artwork and accessories. An updated staircase leads to the second floor with four bedrooms. Each of the spacious rooms feature natural light and en suite bathrooms.

The master bathroom’s rainfall shower, trough double-sink and floating vanity is both modern and luxurious. Inspired by a European hotel suite, the couple made the design decision to have the soaker tub in the bedroom. With up-lighting, and turquoise sea fan artwork, the tub becomes a main feature of the room. The master bedroom’s private balcony looks out over the back garden, large pool and mature trees. The pool, complete with a lap lane, is flanked by manicured lawns, palms and fruit trees. Outdoor tiles engineered to resist heat, were installed to ensure comfort for barefoot, island living.
In terms of efficiency, the air-conditioning system, including vents, was completely replaced and is controlled by a Nest learning thermostat. Thanks to the smart system, they have seen an average monthly savings of hundreds of dollars. Motion sensors on lighting also provide safe movement at night and energy efficiency. The couple explains that the project took several months of planning and about six months of temporary displacement, but are delighted with the result: a stunning home, in a beautiful neighbourhood, with its own unique features.

RL: Decorators Unlimited was founded in 1985 and you joined as Vice President in 2008. Why? JL: They were at the time, and remain, one of the top firms in the country, and I wanted to work with the best in the industry. Their team approach allows everyone to have input into creating amazing designs, and I value that philosophy. RL: You served with the Coast Guard before persuing your Interior Design degree. Tell us how those experiences complement each other. JL: Once I finished serving my country, I attended college and kind of fell into the interior design industry. My father is in fashion and my mother worked in art and furniture, so I grew up around design. I guess you could say it was in my genes! My experience in the Coast Guard instilled a strong work ethic and don’t quit attitude. It also gave me respect for a team effort approach, while understanding the need for leadership. RL: What aspects of the job do you most enjoy? JL: Being able to turn dreams into reality is amazing. We’re always researching new materials, finishes and styles, pushing the envelope so we can exceed our clients’ expectations.
RL: Tell us what makes the Decorators Unlimited unique. JL: Besides having some of the best designers in the world who always strive to create amazing timeless interiors, we also travel the world to find one-of-a-kind quality products. We have 19 designers on staff, so our knowledge and resources far exceeds our competition. Plus, our state-of-the-art 55,000 sq. ft. headquarters provides us the luxury of designing, shipping, and installing projects anywhere in the world. Our clients love that everything is under one roof: CAD department, two-storey fabric library, on-site warehouse, showroom and a custom cabinet shop. This allows us to save time, and our client’s money, while creating a more seamless approach. RL: What role does a well-designed interior play in our lives? JL: It’s everything. A well-designed and furnished house is comfortable to live in, and that makes families happy. RL: Describe your dream client. JL: A client who knows what they want from architectural style to interior vision and colour palate. When they have a clear vision, we can create the house they’ve dreamed of. We’ve been very fortunate to have a lot of clients like this throughout the years. RL: What projects do you have on the horizon? JL: We design and furnish over a hundred projects annually across the globe and always feel fortunate to be part of a great new endeavour. Right now we have The Ritz-Carlton, Sarasota Florida, a new build custom estate in Grand Cayman, new condo towers in St. Petersburg, Florida and community clubhouses throughout South Florida, just to mention a few.

RL: Who are your role models? JL: Decorators Unlimited Founder, Bob Martin, has been a huge influence in my life. He’s shown me how to always make sure the project functions before making it beautiful, as well as manage client expectations and properly run a large firm. Vance Cryder’s definitely been my spiritual role model. He taught me the value of always telling the truth and that if you givea 110%, you have nothing to worry about. RL

Keep calm AND invest WISELY By Georgie Loxton, CFA, Wealth Advisor with International Financial Planning Ltd.
O
n Friday June 24th, the UK voted to leave Europe. That day financial journalists reported that investors in global equities had “lost trillions of dollars.” Since the referendum, most major global stock markets have eclipsed their pre-Brexit levels and marched on considerably higher. That is, all those ‘lost’ dollars, and more, have miraculously been found again. The investors who panicked and sold are the only investors who lost money on June 24th and in the following few days. In hindsight they wished they hadn’t. But the urge to flee equities in a ‘crisis’ is very strong and the financial media often validates this urge by being perennially biased to the negative, as pessimistic stories appear more captivating than optimistic ones. Most financial stories in the news and on the Internet are short-term and sensationalist. It’s no wonder therefore that, according to a recent Gallup survey, almost half of the US population owns no stock market investments at all. This is a worrying statistic. It shows that almost half of the population may have no realistic plan for beating inflation over the longterm (since 1926 property has barely achieved that*). No plan whatsoever for building their wealth and their net worth. No plan for how they are going to generate an income in retirement that they cannot outlive. Sitting on the sidelines with your savings in cash might feel good, but it is a false sense of security and it is always driven by fear. It is easy to become anxious and fearful when we are faced with things that we don’t RL
understand. However, allowing fear to control your financial decisions is the biggest mistake you can make. Whatever it is that the media is focusing on – Brexit, Trump, the debt-ceiling, rising interest rates – you can’t control these things; they are just noise. And over time, what is absolutely true is that the stock market simply ignores this noise and continues its upward march. The best thing is to focus on your personal economy and ignore the global one. As Carl
Richards explains beautifully in his sketch, focus on the things that matter and the things that you can control. The health of your personal economy matters and you can control it by how much you spend, how much you save and most importantly, how much you invest. Investing your money is the only way to make it grow. In order to grow your money, you have to accept the waxing and waning of the market. You have to accept the volatility. Volatility can be painful over the short-term, but over the
long-term disciplined investors can use it to their advantage. An investor who ignores the noise and continues with a plan of continually buying stocks will benefit enormously from the volatility. Whilst traditionally volatility has been labelled as ‘risk’, it is only such if you have the wrong response to it. All those investors who responded to Brexit by abandoning their longterm financial plan and selling their stocks now find themselves sitting on the sidelines in cash, waiting for a better time to get back in. That time may or may not come. Investors receiving great financial advice were able to ignore the ‘Brexit noise’, focus on their goals and stick with their financial plan. They know that there will always be something. The media will always create a reason for panic, a reason for us not to invest. They realise that there are better things to do with their time than to try and position their portfolio for the next unknown geopolitical event. With their competent and compassionate advisor they are able to continue to build wealth for themselves and those that they love. *according to the Case Shiller index.

For Cynthia Hew, Owner of Bon Vivant, the heart of the home is most definitely the kitchen. After years in front of the camera and working in the financial services industry, she decided to stir things up and follow her passion. In 2007 she opened the luxury kitchen retail store and demonstration space, Bon Vivant. When not in office, Cynthia can be found with her family or pounding the pavement preparing for her next marathon. RL: Were you always passionate about food and cooking? CH: I love good food and always have. As a child I would spend my allowance on dining out and could always be found on a countertop asking, “Whatcha making?” My Uncle was a chef at Cracked Conch many years ago and he also lived next door to us where I grew up in Louisiana. I loved to watch him cook in his outdoor kitchen. RL: Tell us about Bon Vivant. CH: Bon Vivant is home. It’s a place for people to come learn, experience and – I hope – dream. We are a complete kitchen store offering retail goods to give people the tools to enjoy their cooking experience. We also provide cooking classes to help foster a passion for all things culinary, and kitchen appliances and design services to allow dream kitchen spaces to become a reality.
RL: How do you balance business, motherhood and being a wife? CH: I’m not sure if I really do, as all tend to crossover at times. Jacob, my son, has been in the store from four weeks old and there is often business chatter over family dinners. I guess the balance comes in knowing when to stop talking shop. Like most things, the highs and lows of business and the responsibility of family are like a roller coaster – I climb, coast and descend quickly on a regular basis.
RL: What element of Bon Vivant do you most enjoy? CH: Business strategy. I enjoy developing a product/brand/image and then fostering the company’s culture so that employees love what they do and customers keep coming back because they love us too!
RL: What’s your best selling item? CH: My people. I know that’s not what’s being asked, but they’re my greatest investment. I see them as relationship builders, and without them and their knowledge I wouldn’t have an item to sell. RL: What kitchen item do you consider a must-have? CH: Steam/Convection oven – it’s amazing. RL: Why did you open Bon Vivant? CH: Transition. Bon Vivant happened because I was ready to do something that I really enjoyed that also allowed me to give – to my community, my customers, my staff and myself. RL: Tell us about the cooking classes. CH: We offer weekly cooking classes for both adults and growing gourmets. They started as a way to allow customers to use the equipment, so they would know what they were buying. We then realised how much fun it was and now offer weekly classes, private/corporate events and birthday party bookings. We work in tandem with local chefs, who are such a great asset, to develop themes and new ideas.
RL: What are the most exciting things happening in the industry today? CH: Innovation: smart tools and technology. For the appliances it’s about energy conservation and smart systems that reduce work load and integrate with other operational systems in the home.
TOP TEN RL: How have you seen clients’ cooking habits change? CH: They have more confidence in buying locally. It’s taken a few years, but we have been consistent in our message and our track record proves there is tremendous value in buying locally – for the consumer and our country. RL: What role do you think cooking plays in our lives? CH: It brings us together. I find cooking to be like solving a problem – next thing you know there are two, three, four people in the kitchen all asking ‘Where can I help?’ That fellowship isn’t one you see when making a bed! And, it’s not just during prep, but when everyone sits for the meal. That’s when you listen, chat, laugh and live.

Juice it up By Kyle Fulton
Like Christmas without Santa, the Caribbean holiday season wouldn’t be complete without sorrel rum punch. Traditionally served during the festive season, it is made by steeping the sepals of the Roselle Hibiscus plant in water and spices and adding a healthy splash of rum. Refreshingly sharp and tangy, the cranberry-coloured drink is purported to have many health benefits that include: to strengthen the immune system, improve digestion, increase energy levels, help prevent cancer, lower blood pressure, slow the aging process, and last but not least, calm the nerves, although that could just be the rum talking.
Sorrel Rum Punch 2 lb sorrel flowers Washed and trimmed: remove the core of the sorrel flower and discard 5 thick slices of peeled ginger 6 whole cloves 1 cinnamon stick 2 ribbons each of dried orange peel and lime peel (optional) 8 cups water 1 cup muscovado sugar for simple syrup 2 cups amber or dark rum (optional) Fresh limes for garnish Add water, sorrel, spices and peel to a large pot, bring to a boil then reduce heat and gently simmer for 30 minutes. Remove from heat and allow mixture to steep for up to 24 hours. In a second saucepan combine equal parts water and muscovado sugar. Stir over medium-high heat until sugar dissolves, then turn heat to high until boils, then reduce to medium heat for three minutes while stirring continuously. Remove from heat and allow simple syrup to cool. Double strain sorrel mixture (discard contents) and pour into glass containers; add simple syrup and rum according to taste. Serve chilled over ice and garnished with lime slices.

Synonymous with luxury and long associated with celebration, champagne has an interesting history full of myth and mystery. Here we pop the cork on all things effervescent with Lee Quessy of Cayman Distributors Group and local brand ambassador for LVMH. oth an area and a wine, the region of Champagne lies about 100 miles northeast of Paris. Made under the strictest legal and quality controls, only wine from this region and produced via the Méthode Traditionnelle can truly be called champagne. By law seven grape varietals may be used to craft champagne, however, it is typically produced from just three: Chardonnay, Pinot Noir and Pinot Meunier. Law also states that all grapes used must be grown within AOC designated vineyards and handpicked. The region’s unique terroir is what enables it to grow so well the specific grape varietals required to produce this exceptional elixir. Wetter and colder than other areas, it was once an inland sea that left behind large deposits of limestone and chalk. Able to retain vast quantities of moisture while also draining well, roots can easily journey through the soil in search of nutrients.
Méthode Champenoise After the still wine is produced it is blended by way of assemblage. Considered an art form by many, often more than a hundred wines from various vintages are crafted together to produce the desired result. This is of particular importance when creating non-vintage champagnes, when consistency is key, as they represent a House’s signature style. Next, the liqueur de triage, a mixture of yeast and sugar, is added and the bottle resealed to allow for a second fermentation. It is this step that produces the essential and treasured fizz for which champagne is known. After a designated period of aging, bottles are riddled – rotated consistently and stored on a slight angle so that the neck collects the sediment produced from fermentation. Necks are then flash frozen and the yeasty plug removed in a process referred to as disgorgement. It is then that the dosage is added. Dosage determines the champagne’s sweetness. RL

MYTH versus fact FACT: Workers wore special metal masks to protect themselves from impromptu explosions in cellars. MYTH: French monk Dom Perignon invented champagne. Not true. He did, however, make important contributions: figured out how to control the fermentation process by developing corks and improving bottle design. Sweetness Sweetness comes from a process called dosage, when a liquid mixture of reserve wine and sugar is added back into the wine before recorking. This happens immediately after disgorgement. The amount of residual sugar determines the type of champagne. Styles Champagne comes in a variety of styles that are defined by grape varietal, sweetness and quality. Blanc de blanc is made solely from Chardonnay. It ages well and with maturity becomes buttery and intense. Blanc de noirs is crafted from Pinot Noir and Pinot Meunier grapes and tends to be quite full-bodied and powerful. Rosé is made from blending white and red base wines and includes contact with red grape skins. It tends to be more structured and forceful due to contact with the skins. Non-vintage indicates the wine was crafted from current vintages along with reserve wines. Representative of a House’s signature style, it is the blender’s job to ensure consistency from year to year. French law states these champagnes must age for a minimum of fifteen months. Most champagne is non-vintage. Vintage champagnes are crafted only in good harvest years. While they may source from different vineyards, they can only use grapes from that year and the bottles must rest on the lees for more than three years. Prestige Cuvée or Tête de Cuvée is the top end of the spectrum. Using only the best grapes from the best vineyards, these champagnes are produced in small quantities from superior vintages and age at least seven years on the lees.

rom open-to-the-elements architecture to chocolate-themed itineraries, the Troubetzkoys, owners and creators of two exceptional resorts, Anse Chastanet and Jade Mountain, have boldly gone where no hotelier has gone before. Their unique combination of talents – he a visionary architect, she a marketing guru – and their non-conformist approach has resulted in a duo of resorts that are ground-breaking in design and that connect guests to their destination in fresh, inspiring ways. When Nick Troubetzkoy first acquired Anse Chastanet in the 1970s, it was a simple resort with a few cottages dotted around the 600-acre beachfront estate. But it was the views that captured his imagination. Looking across the sea to St. Lucia’s iconic, soaring Pitons, the architect in him knew he had to put that magnificent vista at the core of the guest experience. RL

DYNAMIC DUO Against a backdrop of St. Lucia’s exotic natural beauty, hoteliers Nick and Karolin Troubetzkoy are shaking up the traditional hotel experience with their unique brand of revolutionary yet responsible tourism. Words by Natasha Were
And so he knocked out walls in the existing rooms, letting the views flood in. And then he designed additional cottages along the beach and up the hillside, in the same open, view-embracing style. Even right at the beginning, however revolutionary his ideas, Nick’s respect for the people and natural environment shaped both his designs and his business model. “From the outset, Nick wanted to build in harmony with nature, and he also wanted to keep as much of the economic benefit as possible in the region,” recalls Karolin. “Back then in the ‘70s people didn’t even know the term ‘sustainability’ but Nick – not knowing it would later become an entire philosophy – was already practicing it.” This desire to harness the views and connect guests more deeply with the landscape would find its full expression decades later in Jade Mountain. An architectural masterpiece that was as challenging to
pull off as it is awe-inspiring to behold, Jade Mountain appears to float halfway up a mountain side, partly concealed by lush, hanging gardens. Breaking with the traditional hotel concept completely, Nick replaced rooms with spacious sanctuaries, connected not by corridors but by bridges. Within these lavish spaces he blurred the lines that separate living and sleeping areas, and the boundaries between indoors and out: the sea facing side of each sanctuary is completely open, with a private infinity pool suspended over the jungle. These hillside hideaways are so comprehensively captivating that guests regularly fail to emerge from them for days at a time. Although originally planned as an extension to Anse Chastanet, by the time Jade Mountain opened in 2006, Karolin says, they had been forced to rethink its positioning. “Every budget had been blown to the heavens and it was so RL

extravagant, we couldn’t do it justice as part of Anse Chastanet,” she says. “Jade Mountain deserved recognition of its own.” Having raised the bar for luxury with the accommodation, they knew they had to offer equally impressive gastronomic and resort experiences. And so the 60-acre nursery that had initially supplied the trees and shrubs for Jade Mountain’s landscaping was reinvented as an organic farm, and Allen Susser was hired as a consulting chef. Long before farm-to-table dining had become a mainstream concept, the two resorts’ kitchens had their own regular supply of fresh herbs, nuts, fruits and vegetables. Guests, in addition to being able to fill their days with watersports, island tours and spa treatments, could also delve deeper into the culinary experience, joining cooking classes and visiting the farm.

Within a few years this multi-sensory experiential concept was expanded, adding chocolate into the mix. As there were already hundreds of cocoa trees on the estate, Chef Susser suggested these be coaxed back into productivity. Historically in St. Lucia, Karolin explains, cocoa farmers had simply harvested their beans and sold them for export, playing no further part in the chocolate industry. At Emerald Estate, however, the Troubetzkoys chose to experiment with making chocolate themselves, and by 2010 were producing their own small-batch, single-estate chocolate. Then three years ago, the Chocolate Lab opened, offering guests a dedicated space in which to learn about the whole process – from bean to bar – and try their hand at chocolate making. The timing was fortuitous, coinciding with a growing international

appreciation for high quality artisanal chocolate but, in the same way that the Troubetzkoys chose to share their newfound knowledge of organic farming with other local growers, they are not keeping the secret to St. Lucian chocolate to themselves. The Troubetzkoys have elected not to sell Emerald Estate chocolate at other outlets outside the resorts. “By making chocolate ourselves, we have shown that there can be a source of employment and revenue beyond the beans,” Karolin explains. “But now I want to inspire other locals to become artisanal chocolate makers. I prefer to let them corner the local market.” This is just one of the ways in which, over the past 30 or so years, the Troubetzkoys have chosen to do things differently. RL: Why is tropical life so hard on hair? SP: Island life is good for the soul, but sun, salt water and chlorine all conspire to ruin our hair. Salt and chlorine remove moisture from strands, while UV rays breakdown keratin. An essential protein, keratin gives strands structural strength that when damaged causes the hair shaft to weaken and fray. That’s when you get frizzy, dull looking hair. The good news is you can fix damaged, porous hair. At Vintage we have specifically designed treatments to improve sun-parched, over-processed hair. Our Keratin Treatment restores tresses to their original health by sealing in moisture and eliminating frizz. Those with straight hair get straighter hair. Those with wavy or curly hair get frizz-free locks. The Olaplex Treatment is another conditioning treatment that targets the sulphur bonds so you can regain a silky mane.
Brass Off First neutralise brassiness with a toner, then wash with anti-brass shampoos to keep locks from turning orange, and don’t suds up daily. Too frequent washing can strip hair of its natural oils resulting in dull, lacklustre locks. Hats On Wear a hat or scarf when in direct sunlight to prevent hair from becoming brittle and colour from fading. Air Out Allow hair to air dry as long and as much as possible. Heat styling tools weaken the shaft and reduce shine and elasticity. Better yet, apply a heat-protector product before using these devices. Lather Up Apply deep conditioning hair masques to counteract the drying effects of the sun. Then get outside and let the sun’s warmth help it soak in. Heat allows the hair’s cuticle to open so the conditioner can better penetrate the hair shaft. Get Wet Soak hair with fresh water before jumping in the pool or ocean. Wetting hair reduces the depth chlorine and salt can penetrate the shaft. Cut Loose Get regular trims (every four to six weeks) so split ends don’t travel up the shaft and further damage hair.

tarted in 2002 by two business colleagues who became friends, Heidi Klein swimwear was the UK’s first one-stop holiday shop. Since then Heidi Gosman and Penny Klein’s company has gone from strength to strength branching in to childrenswear, accessories and home décor.
RL: In 14 years you have gone from one shop to 150 stores in 39 countries. Tell us about the journey. HG: Penny and I worked together in marketing and business then became good friends. We were working together on a project for a client about airport spend and holiday mind set…. We noticed a gap in the market for beautiful swimwear sold all year round and launched Heidi Klein. RL: Career path? HG: My mother was an interior designer so I always had an interest in the creative industry. I studied Business and Marketing at University and then worked in media consulting, where we met. As Creative Director, I look after the branding, public relations and design whilst Penny oversees the commercial side. We complement each other perfectly. RL: What challenges, if any, does friendship bring to the business dynamic? RL
HG: Our friendship is one of the reasons we have been successful. We have great business chemistry and complemented each other’s strengths and weakness. RL: What is unique about the HK brand? Why has it been so successful? HG: We fit each style seven times to ensure it is absolutely perfect. Compared to other beachwear brands, we are unique in putting so much emphasis on achieving an impeccable cut. We know bodies do not fit into a handful of categories, so we are committed to offering flexibility and hidden support. Our shoppers know that Heidi Klein swimwear will deliver a sleek silhouette time after time. RL: Do you still design all the collections yourself? How do you approach each season and capsule collection? HG: I have a fabulous design team and we design all the collections in my studio at the London head office. We use research from old magazines, movies, attending runway shows and my constant travels as inspiration for each collection. Then we sit down and decide on names, styles and prints for each story. I love seeing the styles come to life and hearing the positive feedback from customers.

RL: Have you ever been in a creative rut and how did you get out of it? HG: I have an extremely talented team behind me and they continue to inspire me every day. They show brilliant insight into important areas of the business. Finding the right people has been key to our growth. I have such respect for all their incredible work. RL: Tell us about the My Body range and how it came about. HG: We launched My Body as an innovative range of perfectly fitting, instant toning swimwear. I adore early morning walks with my dog before anyone else is awake. Also, I make sure I spend quality time with my children which means no looking at my phone or computer. I always give them my full attention. RL: You were recently in Cayman shooting the upcoming collection. How does it reflect the island? HG: I fell in love with Cayman's stunning scenery, its breath-taking views and would love to visit again. It was the perfect setting for

our shoot and inspired our Cayman Islands story – vibrant red swim and cover ups with elegant gold detailing. I know our Heidi Klein shoppers will adore it. RL: What can we expect from the next collection? HG: Our Resort 2017 collection launches from October to February and offers a chic selection of prints, crochet, classic pieces, a twist on boho and a definite nod to the minimalist nautical look running across both swim and cover ups. Island Flava For many artists, it’s the beauty of their surroundings that moves them to put paint to canvas. For Jason Kennedy it’s the people and culture of Cayman that are his inspiration and his muse. Words by Natasha Were
A fresh talent on the Caymanian art scene, Jason Kennedy, a long-term resident of the Cayman Islands, has been creating a stir with his stylised portraits of Caymanian characters. Although he paints likenesses of individuals, his portraits are much more than mere faces: they are raw, honest snapshots of everyday life, depicted in bold brushstrokes and vibrant colours. His paintings offer glimpses of daily life as is lived, far from the island’s luxury resorts and modern office buildings. He finds inspiration in an afternoon game of dominos, a fish market vendor gutting a pile of snapper, or a man riding a much-used bicycle. Defining his personal style and finding his muse did not
happen overnight, however. Although Kennedy spent a year studying fine art at York University, Toronto, in 1999, he switched the focus to business when, he says, he realised he didn’t know what inspired him as an artist. It was not until he moved to Cayman in 2008 that he began to paint again. At first, he says, it was simply as a way to cover his walls with his own kind of art, rather than the "pastel colours and starfish clocks" typical of so many island condos. “I wasn’t taking it too seriously. I didn’t know what I was doing with my style and I wouldn’t show those paintings to anyone now,” he laughs.
It was his girlfriend and business partner, Monica Walton, who steered him away from his early cartoonish depictions, and helped him develop his current style, one that he describes as “a mix of photorealism and impressionism.” “It was really Monica’s idea to capture the more real side of Cayman – the human figures, the people who make the place unique,” he says. “Her cousin took us into some of the less developed areas, and we spent time with these guys playing dominoes and hanging out. That experience was the inspiration for the first painting in this style, which then spun into what I am doing now.” RL

Although he has exhibited and sold his work through local galleries and accepted various commissions – most notably the huge mural on the outside wall of the Cayman Cabana – Kennedy does not court commercial work or aspire to a full-time painting career. He is fortunate to derive as much enjoyment from his day job – he co-founded Vagabaond Media, which creates promotional videos about the Cayman Islands – as he does from painting and with time, he has learned, he prefers not to compromise his own creative instincts by taking on commissions. If he can simply paint what he wants to paint, and somebody else likes his work enough to spend their hard earned money on it, he says, that is all the validation he needs. Kennedy may choose to approach his art as little more than a hobby, but he is nonetheless making a valuable contribution to the artistic legacy of the islands, and chronicling a simple, in many ways enviable, way of life that future generations may find only in paintings and photographs.
