The lemon pie I like this pie because my mother always make it for my birthday . Preparation time : 30 minutes . Cooking time : 25 minutes . Ingredients( serves 6) : for the pastry shortbread : -250g flour -125g butter -70g sugar -2 yellow egg -5cl of water -1 pinch of salt for the lemon cream/ -4 lemons of average size -150g sugar -3 eggs -1 tablespoon cornstarch Preparation for the recipe : Pastry : Blanch the yellow and the sugar with a whisk and let the mixture rest with a little water. Mix the flour and butter cut into small cubes to have a sandy consistency so that the butter is absorbed ( we must do it soon so that the mixture does not soften too much !). Pour the liquid mixture in the middle of this « sand » dough. Form a ball with the dough homogenously.Take a mould of 25 cm in diameter. Add the mixture on the dough, garnish with the paper and beans, bake for 20-25 min ,at 180°c thermostat 6-7. (NB after lower the oven to 120°c/150°c for the meringue). Cream lemon : wash the lemons and take the zest from 2 lemons. Put the zests in a saucepan . Press the lemon and put the juice and zest in a saucepan. Pour the sugar and the cornflour . Beat the eggs in the recipe. Put the juice of the lemon ,sugar, cornflour and zest. Pour in the bottom of pastry.
