RED INK MAGAZINE CELEBR At Seaside Park, Bridgeport CT.
R
ed Ink Magazine had the pleasure of celebrating the two year anniversary of its relaunch as a digital magazine; as a special guest at the Annual Juneteenth Celebration at Seaside Park in Bridgeport, Connecticut. Saturday June 19th, 2021 was a historic date, with Juneteenth being officially recognized as a National Holiday for the first time in U.S. History. The weather was gorgeous and the event was a relief to all who attended and allowed people some much needed socialization time after a crazy 18 months of Covid related restrictions. It was our great pleasure to get to meet and spend time with some of the many Models, Fashion Designers, Artists, and Entertainers that have graced our pages. And it was equally exciting to meet and thank some of the Cameramen, Photographers, and Promoters that have helped provide the content and images that make our magazine so amazing. It was also nice to step out from behind the editing desk and get to introduce ourselves as the Owner and Editor of Red Ink Magazine, Naz and Mike. The fashion show at the event was filled with beauties that have graced our centerfold spread over the years, and it was a delight to see a few of the amazing artists that have been featured in the magazine perform live on stage for the Juneteenth crowd. We would like to thank E-Chris (who has been a Red Ink staple for over a decade, back to the print days) for doing a fantastic rendition of his new song, including an incredible acappella beginning, sans music. We would also like to thank Code-C-Life for his great performance on stage as well. We were excited to be able to invite some of our Red Ink Alum to perform. And a special shout out goes to A-Town who was a special guest of the event and is a an incredible young man that has made a name for himself as an internet influencer and an Anti-Bullying advocate for the special needs community, A-Town as far as we are concerned you are a hero to the community. Keep doing what you are doing. Like every ethnic festival, the food and music were incredible. The crowd although modest, was able to enjoy nearly a hundred vendors, selling, everything from delicious desserts and entrées to clothing and mary jane paraphernalia. We had the pleasure of sampling some of the best meatballs we have ever had, and enjoying a beautiful cupcake that was made with our logo on it, by LaLynnza owner of Laly HappyCakes. The venue itself, Seaside Park, is quite a beautiful place in and of itself; the Connecticut locals are lucky to have such a vibrant and beautiful place to enjoy whenever they like. Once again Red Ink Magazine, Naz and Mike want to thank everyone for their participation and making the 2nd Anniversary of the digital magazine so special. It was great to meet everyone and share a few stories and laughs over drinks at our tent. A special thanks goes out to CocoChynna, Wayne Winston and the Juneteenth Committee of CT. for helping to put together such a special event and helping to organize the meet and greet with all of the entertainers. by Michael Devine u 4

Ingredients: 3 lb beef oxtails 1 1/2 teaspoons Caribbean (or jerk) seasoning, divided 2 tablespoons canola oil 1 medium onion, thinly sliced 1 (32-oz) box chicken stock 2 (15.5-oz) cans chickpeas (garbanzos), drained and rinsed 1 (14.5-oz) can diced tomatoes with green pepper, celery, & onion, undrained 1 (14.5-oz) can diced potatoes, drained 1/2 teaspoon pepper 1 bay leaf Prep - Slice onion.

Instructions: 1. Preheat large stockpot on medium-high 2–3 minutes. Season oxtails with 1 teaspoon seasoning. Place oil in pan, then add oxtails; cook and turn 3–4 minutes until well browned. Meanwhile, slice onion. 2. Stir in remaining ingredients (including remaining 1/2 teaspoon jerk seasoning); bring to a boil. 3. Reduce heat to low and cover; cook 2–2 1/2 hours or until oxtails are tender. Skim fat from stew and remove bay leaf; serve.
