What do you think of Hangzhou?

Hangzhou is a very inclusive city—it is also very mild and slow-paced as well. The four seasons here are all beautiful, and Hangzhou has places with a good natural environment which are calming and relaxing. This city is also very convenient. However, I would recommend you go out when your mobile phone has a full battery, as you can do most things through your phone—like ordering food and paying for things.

What do you do when you’re not busy?

I like to go to Manjuelong ( 满觉陇 ) Village for a walk, and sometimes I go to the Tianzhu Temple ( 天竺寺 ) to burn incense and eat Buddhist food. The Qiantang River ( 钱 塘江 ) is especially beautiful at night. I like the feeling of the breeze on my face and standing on the bridge feeling the vibrations from the trains that pass underneath.

What do you love about the city?

I absolutely love my time in Hangzhou. I haven't had the opportunity to see a lot of the city—as I’ve been here for a little over a month now—but I have already found some places, including the Leifeng Pagoda ( 雷锋塔 ) and West Lake. I enjoy the vibe at 35mm Café (21 Tongpu Lu), as it has a great feng shui and I can really get my edits done in its relaxing vibe.

Are there any places that help you relax in the city?

I really like the Longjing Tea Plantation; I went there with some other creatives recently and instantly fell in love with it. The air there is refreshing, which is completely relaxing. It gave me a great perspective on the city and the rooftops there were breathtaking and had beautiful architecture.

What do you love to do in the city?

I love hanging out with my friends and discovering new places—and doing a few events with my band. I love Hangzhou and travelling around the city. I think it’s the perfect combination of nature and cityscapes. I love the view from my apartment, which overlooks a tea field that I absolutely adore.

Are there any places you like to go to when you wish to relax?

I’d have to say Lingyin Temple ( 灵隐寺 ) and the surrounding areas too. There are beautiful gardens around the temple, and there are never really a lot of people, so you don’t have to worry about crowds when it comes to this temple.

Socia10 have been in Hangzhou for some time now, so I was expecting big things as I bit into their Beef Burger with Iberian Ham (98 RMB). Despite not being asked how I would like it cooked (Socia10 knows best!), the patty was very juicy and moist. The burger comes ‘unassembled’ with a side of hot, cheesy sauce for you to pour over it and Iberian ham on top of the patty. The Iberian ham offers a slight saltiness and textural contrast with the meat that works well and adds a little extra for the hungrier diner. Plenty of fresh lettuce and tomatoes, as well as mayonnaise beneath the patty, make every bite a nutritious mouthful— and on finishing, you may find yourself quite full. Each burger comes with a handful of chip-style fries perfect for dipping in your favourite sauce. On Fridays, you get a free drink with any burger purchase.

Being big fans of Slim’s, my wife and I were delighted to hear that they’ve reopened a store in Binjiang’s Paradise Walk. We were thrilled to get the chance to head there and try out a burger. We decided to go with the Manhattan Monster (98 RMB). It was quite tasty, especially with chilli, bacon, and deep-fried onions on top. We ordered ours medium—and it was juicy! In addition to the toppings, the sesame seed bun was a nice little addition to the burger. They cook the burger on a grill so that you get the marks and get a delicious flavour from the flame and the fat drippings! Definitely one of Hangzhou’s top places to get a burger! Slim’s offers a buy-one-get-onefree deal on their burgers every Monday.

TOFO (NOT Tofu!) Burger was an exceptionally pleasant surprise. I ordered a classic cheeseburger but asked for a recommendation as an add-on. My perfectly cooked 120-gram patty arrived with crisp lettuce, fresh tomatoes, a healthy amount of cheese and the added pickled jalapenos (which added a slightly salty, slightly spicy treat) all piled onto a light, fluffy, fresh bun. Besides the plethora of toppings from which to choose and create your perfect sandwich, there was a flavour I couldn’t place. According to the manager, Sawyer, “Every burger comes with their own house-made sauce. We don’t use a common sauce because we want people to have a different experience.” Burgers range in price from 36 to 58 RMB and are made with beef, pork, or shrimp.

BURGER LAB 汉堡实验室 This place is named “Burger Lab” for a very good reason. As you walk in, you will see the chef preparing burgers with a variety of different tools, including blow torches and tongs. that are found in most restaurants; the one here is fresh and warm, the chef calls it “cloud steamed bread”. Their steak burger is very light, and loaded with crispy bacon, fresh vegetables and their signature sauce, named “the lab sauce”, which ties everything together. WADE’S BAR & GRILL 味德 For me, Wade’s cheeseburger is the ‘gold standard’ to which all others in Hangzhou are to be compared. Nearly twice the size of most other restaurants, the thick, juicy 200 grams of all-beef is cooked to perfection with a nice pink centre and covered with half a plump ripe avocado, sharp cheese, fresh lettuce, tomato, and onions—enough food to last me for two meals! Always consistent in quality and taste, Wade’s burgers have enough variety to satisfy any burger lover. Bacon, fried eggs, truffles, and grilled mushrooms or onions are just a few of the additional toppings that can be added. But why mess with perfection? THE HABIT BURGER GRILL THE COLLEGE 咖叻吉 You’d better come hungry if you’re planning to eat a burger at College! I asked for the house speciality, the Supreme Beef Burger (85 RMB), and was served 120 grams of ground beef, smothered, and covered. Although I worried that the toppings would cover up the taste of the meat; I found that the nicely fried egg, melted cheese, crisp bacon, grilled onions, and fresh lettuce and tomato complemented the beef and combined to provide me with one of the most satisfying and delicious burgers I’ve had. Five years ago, my Indian schoolmate and I stayed a week near an Indian neighbourhood in London for our final school projects. We had a chance to taste Indian food with one of the families there and both enjoyed the experience. Five years later, here in Hangzhou, I have found Saffron Indian Restaurant, where I feel the comfort, informality and flavour of home-style Indian food.

he menu at Saffron encompasses dishes that are a great representation of India and its beauty of colours, which you will fall in love at first sight. Dishes include Paneer Tikka (50 RMB), Tandoori Chicken Tikka (55 RMB), Chicken Malai Tikka (55 RMB), Chicken Banjara Kebab (60 RMB), Tandoori Mushroom (45 RMB), and of course a glass of Kingfisher beer to wash it all down. The food is freshly made and delicious to boot. Perhaps the only thing more fascinating than waiting for our main course was hearing the stories behind the cuisine. Aman Bagga, the owner of Saffron, told me

about the spices and flavours throughout India, something his chef brings to each and every dish. In one dish, you can experience a combination of dozens of herbs and spices that create a unique taste. Moving on to our meatier course, the Butter Chicken (55 RMB) was another hit. With a fair amount of spice, the chicken is moist, tender, and goes well together with Tawa Roti (10 RMB), Garlic Naan (20 RMB) or Cheese Naan (30 RMB). Laccha Parantha (20 RMB) and Mutton Rogan Josh (65 RMB) are not to be missed.

TateIsland is a minimalistic café near West Lake. There is a private pond next to the café where customers can enjoy their sweet treats at a picnic table. The first floor of Tatelsland is an open-style kitchen as well as the restaurant, and the second floor is a clothing display and sales spot. The seats in the café are limited, so making a reservation before visiting is recommended (100 RMB deposit required).

Crazy Flowers Café is undoubtedly one of the most popular cafés in Hangzhou right now. All the so-called ‘internet stars’ visit here for a picture in front of the signature rainbow sunflower. Since it’s so popular, usually there is a waiting line, but after 17:00 the shop is relatively quiet. The taste of the coffee and other desserts is not so great, but it is still worth a visit for the photogenic decorations.

This vintage European-themed café is also well known for its aesthetic decorations. It is originally a shop for custommade cakes. The drinks and desserts in the café are of high quality and have a good taste. However, the café is very small, with only four tables. It is recommended you avoid the weekend for your visit as it will be too crowded.

The benefits of the ‘staycation’ might outweigh the often-minimal benefits of the traditional National Day Holiday. For instance, this year, having a ‘staycation’ was far less costly than a normal vacation. I didn’t spend money on hotels, on travel expenses and costly restaurants, not to mention the often-outrageous entry fees to some popular tourist destinations. I just kicked back and enjoyed being with my friends and family, spending time with each other. I had those cosy, carefree and private seven days just to myself. THE SLANG of CHINESE MILLENNIALS By Camilla Fatticcioni

hinese is a very ancient language, but still, a language that follows a constantly changing society. Because of this, Chinese millennials are continually introducing new words to the Chinese language to describe present-day situations and occurrences in China. On the internet, it is very common to find new words or phrases. Some of these words gain popularity and now are also common in daily speech, and for those who are learning Chinese, it may sometimes be difficult to understand these more colloquial expressions. Here is a rundown of some of the most popular new words among the Chinese netizens.

AS SOCIETY CHANGES, SO DOES LANGUAGE With all the dramatic economic changes in the last 20 years, many new types of people have appeared inside Chinese society, and so also have new words that can be used to describe them. tǔ háo (土豪) means “local tyrant” but has

come to take on a new meaning. This word describes the new generation of get-quickrich Chinese, who have a lot of money but usually lack in taste and culture to spend it properly. A word that is more pejorative than tǔ háo is fù èr dài (富二代). This word is prescribed to the rich, second-generation Chinese children and usually connotes young people who lavishly spend their parents’ money on luxurious cars, partying,

and fashion—and who have little concern for issues that affect average people. Another two newcomers to Chinese society are nǚ hàn zi (女汉子) and fēi zhǔ liú (非主流). nǚ hàn zi is quite similar to the English word “tomboy,” and it is used to describe a woman capable of doing

the same things as a man, a powerful woman with a very strong character. fēi zhǔ liú usually describes a person who is anti-mainstream, underground and alternative. But, in addition, to the gothic or punk style, this word also often describes those who follow the new fashions coming from Japan and Korea.

SOME COMMON EXPRESSIONS IN THE “MARTIAN LANGUAGE” This kind of slang is sometimes called “Martian language” (huǒ xīng wén, 火星 文), and it refers to the digital lifestyle of Chinese millennials. Many of these new phrases and words are also used in daily speech, and it can be useful to know some of them to chat with and stay ‘cool’ in the eyes of your Chinese friends.

most popular is hold bú zhù (不住) initially used in a Taiwanese TV show, after which it became popular on the internet. The phrase can be used in many different situations. For example, if you were in a classroom, and something hilarious or embarrassing happened, and one classmate couldn’t stop him/herself from laughing he/she could say: “wǒ hold bú zhù lā!” meaning “I can’t hold (my laughter).” But another classmate encouraging him/her to keep calm and cool could say: “Hold zhù!” (“Hold on!”)

gěi lì (给力) literally means to “give power,”

and it is generally used today to describe something cool or impressive. Some of these new phrases are created by combining Chinese and English: one of the

diǎo sī (屌丝) is used more in a

humorous rather than a negative way to describe someone poor, ugly, good for nothing, and without social standing.

Sometimes it is used in a broader sarcastic manner to describe ordinary people who have no power or influence. bù zuò bù sǐ (不作不死) derives from the expression “bù zuò sǐ jiù bù huì sǐ” (不作死就不会死) and is used to suggest that one will not find trouble if one is not looking for it, and it is often used for discouraging someone from doing something they should not do. dǎ jiàng yóu (打酱油) literally means “to get soy sauce,” but this phrase is often used with the meaning of “This is none of my business, I’m just passing by, and I’m just here to get some soy sauce.”

NUMBERS ASSOCIATED WITH CHINESE WORDS In my four years living in China, I still can’t understand some text messages I receive from my Chinese friends, especially when I ask a simple question like: “How are you?” And they reply to me, “555.” The use of numbers in Chinese slang is common; for example, 555—pronounced “wū wū wū” (呜呜 呜)—expresses sobbing, a sign of sadness. Most words are represented by numbers which have a similar pronunciation to the actual word—the number 0 (líng) which is used for “nǐ” (you), is one of the few exceptions. 520 (wǔ èr ling), means “I love you” (wǒ ài nǐ) and 7456 (qī sì wǔ liù) stands for “qì sǐ wǒ la” (气死我啦), which means “It makes me extremely angry!” There are so many Chinese slang words and phrases, and they are constantly changing according to the fashion and the fantasy of Chinese netizens. I could keep writing many more, but for now, I’ll just say “886” (“bài bài le,” 拜拜了), another way of saying “bye-bye.” redstarhangzhou.com

THE SONG DYNASTY TOWN By Jerry Shen

Time travel. You’ve always dreamed of doing it and now you can! Several kilometres away from the West Lake Scenic Area in Hangzhou lies the Song Dynasty Town or sòng chéng ( 宋 城 ). It is the largest theme park in Hangzhou and attracts over 10 million visitors per year. The allure of Songcheng is its immersive atmosphere which takes visitors on a historic adventure back to the Song Dynasty (960–1279 AD).

he Song Dynasty is characterised as a golden age in China’s history with Hangzhou as one of its capitals. At the time, China was arguably the richest and most advanced country in the world—it was during the Song Dynasty that printing, gunpowder and the magnetic compass were invented. The first widespread use of paper money as a form of currency was also during this time. At Songcheng, you can trade-in your cash for some old Song-era currency that can be used in the shops of the theme park. The buildings of Songcheng resemble the architectural styles of a Song-era village, with upturned roofs and a timber frame. The ironsmith shops, grocery stores, tea shops and restaurants all have vendors who are dressed in Song-era clothing to help create the time-travel experience. Traditional Song-era clothing is also provided for guests who choose to immerse themselves in this cultural journey. Walking

through Songcheng was truly a unique educational experience that you wouldn’t get in any other theme park. Even more incredible are the shows and performances in Songcheng. There are many small acts including ones which illustrate a typical court hearing or a marriage proposal in the Song era. There are also shows involving Chinese shadow play, boxing and puppets. You may even find armoured soldiers roaming the streets looking for ‘fugitives!’ One of my favourite shows in Songcheng was ‘The Earthquake’. It is a 5D performance which takes the audience back to the 2008 earthquake in Sichuan (although I will admit I am not sure how this fits into the Song Dynasty experience). The storyline and captivating characters were

a real tear-jerker for me. I was especially impressed with the production of the show and the incorporation of visitors into the live performance! This is a must-watch if you visit Songcheng. Still, “The Romantic Show of Songcheng” remains the soul of the theme park. This one-hour performance is worldrenowned and the greatest attraction in Songcheng. It is an absolute mustwatch. It has four main parts: Chapter One: ‘Song Palace Dance’, brings you to the palace in Hangzhou where you and the ‘Emperor’ enjoy dances and

Chapter Two: ‘Armoured Cavalry’, takes you to the battlefield where great warriors try to defend the city of Hangzhou from outside invasion and attacks. Chapter Three: ‘West Lake Legend’, guides you through the many stories and myths of West Lake and what makes it such a famous place not only in Hangzhou but the world. Chapter Four: ‘Charming Hangzhou’, welcomes you to modern-day Hangzhou, where millions of tourists gather and enjoy dances and the famous Longjing Tea.

The acrobatics, gymnastics and production values of the shows are incredible. What’s not so incredible are the annoying audience members who take out their phones to record or take pictures while you’re trying to watch the show. Still, I will say that Songcheng was the most memorable place I have been to in Hangzhou. Tickets to Songcheng are around 300 RMB per person with an additional 10 RMB per ticket for the VIP tickets. Super VIP tickets are around 600 RMB per person. All tickets include free admission to all the shows, including ‘The Romantic Show of Songcheng’, but the VIP seats are definitely

better. The Super VIP tickets are the best, and the dancers in the show will bring you some freshly-brewed Longjing Tea, but all of this comes at a higher price point. I would highly recommend paying the extra 10 RMB and just getting the VIP seats, though. Overall, Songcheng is an amazing place that you won’t want to miss during your stay in Hangzhou. BREWING YOUR OWN BEER By REDSTAR’s Ganbei Girls

Hangzhou’s growing craft beer scene continues to bring people together at a variety of breweries, restaurants, and taprooms throughout the city. However, have you considered trying to brew beer at home? REDSTAR’s Ganbei Girls spoke with Chris, Brewgang’s brewmaster and part-owner, to share with you his thoughts on how to get started homebrewing your favourite beer styles.

What is homebrewing and why do you enjoy it? Is homebrew the same as craft beer? I think the original meaning of homebrewing is “to brew at home,” but now friends of mine consider brewing a small batch of beer ‘homebrewing’. You can brew from anywhere, and just have fun. It is easier to brew a smaller batch of beer compared to brewing for a brewery where we have to worry about cost control. If my friends and I have an idea of a beer we wish to brew, we just do it. I consider homebrew to be craft beer. However, not all craft beer is considered homebrew due to the larger batch size. How do you start homebrewing, and how much equipment is needed? What are the start-up costs?

Because homebrewing follows the same procedures as commercial brewing, you will need a smaller version of all the equipment. In addition to the ingredients, you will need a mill to crush the grain; a mash tun to turn the starches crushed grain into sugars for fermentation; a brew kettle to boil the wort (the liquid extracted from the mashing process); a kettle; a cooling coil to cool down the wort; a fermenter to ferment the cooled wort into beer; and a temperaturecontrolled fermenting system. I use the Grainfather brewing equipment, which is easy to use and allows me to mash and boil the wort in the same equipment. I paid around 10,000 RMB for my equipment. For those who don’t want to spend a lot of money on their equipment, they can find

cheaper appliances on Taobao. How long does it take on average to brew an ale and a lager from start to finish? An ale takes approximately one month to ferment, and a lager takes about 40 days to ferment. How do you decide which beer style you would like to make or flavours/aromas you wish to create? How do you think of something unique to brew? Sometimes I speak with the owner and bar manager of Brewgang to get some ideas. I also brew some beers based on my own experience, as well as getting new ideas from other brewers. What are some challenges you face when homebrewing? Measuring the temperature

accurately during the mashing process, controlling the temperature during fermentation, and not generating an oxidised offflavour in the beer are the most challenging aspects of homebrewing. All of these things can ruin the flavour, colour, and aroma of the beer. Do you have any favourite homebrew shops? There is an excellent homebrew shop in Shanghai that has a Taobao store, Chaoji Maiya Zi Niang Pijiu (超级 麦芽自酿啤酒). You can find everything you need there. Chinese, we consider a group of three people a gang, and we have a saying that a gang gathers people together to do something fun. We also enjoy doing beer collaborations and have worked with a coffee shop and a tea shop in the past. We will host a homebrew meetup every month to drink the beer we made last month and brew a new style of beer to serve at the following month’s meetup. The event is free to attend because we want to gather everyone who loves craft beer and homebrewing together. The most important thing is for everyone to enjoy the process of homebrewing and feel happy.

I recommend brewing a simple recipe, such as a pale ale, for the first time, as well as keeping the malt bill—which consists of all the grains and adjuncts (unmalted grains) used in a recipe—simple. BREWMASTER AT MIDTOWN BREWERY

Like a parched man looking for water in the desert, five years ago, craft beer lovers looking for a good brew in Hangzhou were left high and dry. Eric White, brewmaster at Midtown Brewery at Midtown Shangri-La, Hangzhou, was one of the first in town to begin the task of providing libations worthy of even the most stalwart beer lover.

“There is no better way to relax at the end of the day than with a special handcrafted beer in the lively ambience of Midtown Brewery. It is an upmarket gastropub offering speciality craft beers, innovative small plates and live music.” 26

ric White, who came to Midtown Brewery almost three years ago, is an awardwinning brewer whose dedication to producing outstanding beers is the result of a lifelong connection to the beverage. Having lived outside his native United States for more time than he’s lived in it, White turned at times to homebrewing and experimentation out of desperation, living in places where alcohol was not legally available for purchase. His actual brewing career began here in China. A lucky chain of events led him to a collaboration opportunity at Boxing Cat Brewery in Shanghai where he met brewmaster Michael Jordan who quickly saw the potential in White. Working as a mentee under Jordan, White worked hard and eventually received a formal brewing education at Siebel Institute of Technology, where he became versed in subjects such as fermentation science, raw materials analysis, and brewing engineering. After more than four years in Shanghai, the opportunity in Hangzhou arose, and White made the move. Taking his motto “Make it perfect, then make it better,” White considers “artistic self-expression” as the coolest part of his job, which he is able to infuse into his creations. Gathering inspiration from local resources, White always tries to create a ‘sessionability’—meaning, the ability to drink a beer for an entire ‘session’, and not get overly drunk or full-feeling—in his beers, while keeping

a balanced, bold flavour. A perfect example of this happens to be one of the beers of which he is most proud: the Hangzhou IPA, which is available now until the 31st December this year. This smooth, hoppy, yet easily drinkable ale uses Hangzhou’s famous Osmanthus fragrans (sweet osmanthus) to create a beer that has quickly become a favourite among the brewery’s patrons. As a brewmaster, White advises craft beer novices to “Start drinking a lot of beer! Also, get to know your local brewer, and find a good bottle shop. Just start trying stuff and don’t be afraid to revisit it.” This is especially true for beers like IPAs, which, as he mentions, can be “Pretty offensive to the palate at first try.” He also suggests to, “Ask for samples, get to know other beer drinkers and ask why they like certain beers. Also, it’s really important to understand ‘offflavours’—sometimes, it’s not you; it’s the beer.” When asked to provide five words to best describe his beers, White responded: “bold, exciting, balanced, ‘sessionable’ and…BOOM!” So, visit Midtown Brewery, introduce yourself to Eric White, and experience the ‘BOOM’ for yourself! As the sun rises at 6:00 am, Hangzhou’s famous West Lake is already bringing together a variety of people—runners, power walkers, dancers, photographers and tourists. However, one man stands out among them all as he trains for the marathon in Hangzhou rd on Sunday, 3 November 2019. “Running out here with the sunrise is beautiful. Sometimes, you just think about getting up and staying in bed (at 6:00 am), but the pain only occurs when you just wake up. Once you start running, you just enjoy it. It becomes more of a daily treat and something you don’t regard as pain anymore,” says Gentian Qejvanaj.

G

entian Qejvanaj, an Albanian expat who grew up in Italy, has been running since childhood. Qejvanaj arrived in China in 2014 to study for his PhD, which he completed in March 2019 and continues to maintain a full-time academic and running career. During the April 2018 half-marathon, he finished in 2nd place, and he often secures a spot in the top ten for every race he competes in. When he first moved to China, he initially began running to continue his hobby and enjoy the beautiful scenery of West Lake. After he participated in his first race in 2014, he decided to take competitions more seriously. “In Italy, when I would train for a marathon, I would run for fun and personal achievement. Now that I am in China, I often try to be successful and finish in the top ten. Living here has helped with the transition of being a full-time scholar and a runner,” he says. Maintaining a runner’s diet in China is much easier than Italy, and there is a

higher chance of eating a balanced diet with Chinese food versus the heavy carbohydrate-based Italian cuisine. Typically, Qejavanaj eats little meat and receives most of his protein through vegetables and fruit. He consumes his largest meal for breakfast after his morning run and eats smaller meals throughout the day. Qejavanaj actually finds it more challenging to maintain his weight. During marathon season, Qejavanaj keeps his diet sober and under control—avoiding alcohol and cigarettes. He often cooks Asian-style cuisine and eats tofu as his main course. Marathon races are a growing market here in China and Qejavanaj has noticed a significant increase in runners here

compared to other places globally. He also hopes more foreigners in Hangzhou would participate in the sport. “Expats are lucky!”, exclaims Qejavanaj, “for a Chinese National to participate in a marathon, they must take part in a lottery. Expats do not have to take part in a lottery.” According to Qejavanaj, running in China is much cheaper, and the feeling of achievement surpasses the three to four hours a person runs in a race. His advice for those wishing to compete in their first Hangzhou: “Find your motivation to run. Near the Broken Bridge (断桥), runners of all ages often meet every evening at the northern part of West Lake (西湖) near Beishan Jie(北山街). Some of the local runners showed me beautiful spots most tourists and expats don’t know about.”

Nadezhda shared her experience and gave inspiration to both those who want to work in the beauty industry, as well as those who find themselves linked to the industry. Her talk focused on the importance of marketing in the beauty industry as well as the benefits of working as a marketer. She gave some practical tools for those who want to develop product and brand identity. Hannah Hu is a makeup artist from Hangzhou, and she opened her own beauty salon two years ago after her return from Dubai. Hannah shared her experience of setting up her salon, the hardships she encountered, and how her persistence and hard work eventually paid off. Hannah also spoke about her current work at her studio and shared some makeup tips. CELEBRATING THANKSGIVING DAY IN CHINA By Sabrina Valles

oming from the United States, Thanksgiving Day has been a popular holiday embedded throughout my childhood and adulthood. Now that I have been living in China for over a year, I crave the nostalgia of a moist turkey topped with stuffing and mashed potatoes covered in gravy. Thanksgiving celebrations bring families and friends together in the United States and Canada to express gratitude, similar to the Mid-Autumn Festival in China. Regardless of where you are, or where you are from, Thanksgiving is a great opportunity to get together with those you hold dearest over a nice meal and be appreciative of all you have. One of my favourite things to do is gathering my closest friends for a multicultural Thanksgiving dinner. We purchased a turkey dinner from a restaurant in my former city, and everyone in attendance brought a variety of appetizers, side dishes, entrées, and desserts. The potluck-style event fostered creativity amongst my friends, and I was able to taste a diverse array of dishes and

learn about my friends’ cultures through cuisine. My taste buds travelled around the world without a passport. In the United States, many immigrant families have incorporated their own cultures into the holiday. For my family, in particular, it was not unusual for us to serve popular Mexican entrées and side dishes alongside the typical Thanksgiving trimmings. My family also incorporated various fun activities — kick-starting beloved traditions. We ended every family holiday with Mahjong, thanks to my Filipino uncle. Card games and board games can easily be incorporated into Thanksgiving celebrations as well as

food competitions, beer, wine, and spirits tastings. You can even have everyone share what he or she feels grateful for. WHY DON’T MILLENNIALS IN CHINA COOK? By Ane Ayerbe

N

owadays, we can see many ‘kuaidis’ (delivery guys) riding on the streets in China. Most of them carry dishes from different restaurants from all over the city. What this means is that people (mostly millennials) are no longer interested in cooking, and they prefer to order pre-cooked food. This is not just a coincidence; there are many reasons why this is happening:

HOUSES ARE GETTING SMALLER More and more people are living alone, in couples or small families of just three individuals, and the space for the kitchen isn’t a priority when choosing a place to live. Therefore, cooking isn’t always a preference.

GROCERY SHOPPING ISN’T A PRIORITY ANYMORE If we go back half a century, we can see the differences in how people distribute their spending: according to the National Statistics Institute, 50 years ago grocery shopping used to take almost 50% of a families budget, whereas now it barely exceeds 15%. Nowadays, the spending is divided into items related to housing, utilities, transport and leisure.

THE IMAGE OF THE HOUSEWIFE IS DISAPPEARING They are no ‘roles’ related to cooking anymore. The image of the housewife as the house cook appeared only about 150 years ago in the US and a bit later in Europe. In both cases, it was developed by the feminist movements of the time, who used the image of the housewife to push for the right to vote. The curious thing is that, nowadays, the same movement is encouraging women to consider choosing professional careers over the previously conventional role of the housewife.

MILLENNIALS ARE ‘FOODIES’; THEY JUST DON’T COOK Generally, we millennials don’t spend much time in the kitchen. This doesn’t mean that we are not interested in food—in fact, we love it! I would dare to say that most millennials are ‘foodies’ because we like trying new flavours, and we are fascinated by food start-ups. Also, social media has made us into ‘foodies’. However, we don't spend time cooking. We could, but it is not a priority for us.

WAIMAI (TAKEAWAY) Home delivery companies are increasingly more prepared and enjoy more annual turnover than ever before. The demand for dishes

through mobile platforms or delivery apps is growing exponentially. It’s true that saving time and comfort are valuable factors that have made home delivery a success, but let me ask you one question. Can this really replace the experience of a kitchen and a homemade meal? Therefore, I want to give you some tips for avoiding the temptation to order your food.

Your freezer is your friend. Every time you cook, try to double-up a recipe and stash leftovers in the freezer for handy pre-made meals for when you’re most tempted to order in. Or just take one day of the week that you are free, cook as much as you can and put it in the freezer. Be healthier, be better!

GET INSPIRATION FROM THE INTERNET There’s no limit to the recipes you can find online. As good millennials, I would say to follow the ‘foodies’ on Instagram for inspiration (you can also follow those who are not professionals or influencers). Look up simple, healthy, low-cost recipes. GET FIT WITH FITFAM! By Pepe

he popular fitness group FitFam is finally here in Hangzhou! FitFam, a communitybased workout program, was established by a group of friends in Shanghai in 2015. Globally, the FitFam ‘family’ has over 5,000 ‘FitFammers’ and a group of volunteers working together with a vision of building a free fitness community. At 7:00 am on Saturday, 31st August 2019, the first-ever FitFam workout was held in Hangzhou. We caught up with the Hangzhou FitFam group leader and some local ‘FitFammers’, and this is what they had to say.

I met through FitFam and I wanted to share this way of life with my new friends in Hangzhou.

What motivated you to start a FitFam group in Hangzhou? I believe that fitness and sport should be free and accessible. I lived in Shanghai for two years and was part of FitFam there. Earlier this year, I moved to Hangzhou to learn Chinese and start my own business, and that’s when I realised that the best friends I made in Shanghai were people

Did you encounter any complications with finding appropriate locations? Yes, it was surprisingly difficult to find an open space with grass! However, the current location in Qianjiang Century City ( 钱江 世纪城 ), was the final choice because it has a beautiful park and it’s conveniently near my apartment!

How did you hear about FitFam? I first heard about FitFam from my friend Kaz. She was starting up a FitFam group near where I live.

What does being a FitFam leader involve? Being a FitFam leader involves promoting, scheduling, planning and leading free workouts in public spaces.

When and where are the workouts held? At the moment we have workouts on Wednesday nights and Saturday mornings at Qianjiang Century City and also a monthly collaboration with WeWork in Xihu District. I would love to see another Xihu location start soon! We just need a couple of willing volunteers to lead the sessions. Does FitFam take a break in winter? No, it’s "business as usual." We encourage participants to wear breathable thermals and waterproof gear to stay warm and dry. It is actually quite refreshing to work out outside in the cold! We will also add a new indoor location in Binjiang soon—for those who aren’t so crazy about the cold. Under what circumstances would you cancel a scheduled workout? Extreme weather conditions (at the discretion of the leader) and when the Air Quality Index is over 150.

How do you balance a regular work schedule and still find time to facilitate these workouts and manage the group? With clear priorities, it’s much easier to manage my time, but my iPhone Calendar is a huge help! Plus, there is a big group of people in and outside of Hangzhou, helping every step of the way. If someone is thinking, ‘I would love to join this group, but I’m just not fit enough right now’. What would you say to them? No such thing as “not fit enough.” Our workouts are designed for all levels, and the human body is designed to grow stronger. If you do one push up the first time, you’ll be able to do two the next time you try. Finally, how can someone join FitFam or become a volunteer? To join the group, they can register directly on the WeChat Mini Program. To volunteer, they can add me on WeChat. A big call out for anyone who would like to lead some sessions! The more leaders we have, the more locations we can add.

What do you like about FitFam? I like that it is free. Also, the exercises are tough but bearable. In FitFam, there is no judgement, and all levels are welcomed. You never feel like you are in competition with anyone. It’s not about who is fastest or does the most reps; it’s about pushing yourself to do better. Which workout do you usually go to? I like the workout early on Saturday, and I have the rest of my day free. Plus, it feels good to accomplish something before breakfast.

What do you like about the FitFam workout? I like that we are motivated to do some intensive training with guidance from a coach, and I love the encouragement from fellow team members. Other than FitFam, do you do any other sporting activities during the week? Yes, I swim, run and do yoga (sometimes). I am also currently preparing for the Hangzhou Marathon.

What drove you to be a volunteer? I work with children in Physical Education, but leading fitness workouts with adults is something I have always wanted to try, and FitFam was the perfect place for me to do this! Describe one of the workouts you do. I add an element of fun in my workouts. With fitnessstyle games in my sessions, people work really hard but have fun doing it. For example, the rock-papersprint-squat is a paired warm-up where you start at the bottom of a set of stairs—play rock-paperscissors—and if you lose you sprint up and down the stairs. If you win, you squat until your partner gets back! Which FitFam session do you lead? I lead the Wednesday session at Qianjiang Century City Park. Interested in joining a FitFam workout session? love my phone. I can easily contact my mother back home, stay in touch with all my friends and stay up-todate with all the big things they're doing in their lives. I’ve had most of my high school friends get married and make other big life changes that I wouldn't have known about without access to these modern technologies. Do you spend time on your cell phone just scrolling away through your Instagram news feed or WeChat moments? You’re not alone—I, too, find myself sinking deeper and deeper down the rabbit hole of discovery as I try and update myself on everything my friends are up to. The fear of missing out (FOMO) is also a major contributor to our social media addictions. Some people believe we let ourselves get sucked into the digital limbo— the place in between life and the place we dream of. The transmission of information is a lot easier through digital platforms than with traditional media forms like books and magazines. We can easily remember a song we heard a few years ago, yet find it hard to fully recite a few sentences from a textbook. People are getting more and more anti-social, and it doesn’t help either with everything being made ‘easier’. For example, we no longer need to go out to a lot of places to get the things that we need; everything online helps make life more ‘convenient’.

USE APPS There are a few phone applications around that can help if you are in dire need of controlling your urges. The latest iPhone update came with a screen time app that helps you to monitor and, therefore, control the amount of time you use your phone, including information by a specific application. This can be set up on any updated iPhone by going to the setting and opening the “Screen Time” tab and then picking from an array of options depending on how much you want to restrict yourself from using your phone. For those using android, a few apps to investigate are Space, App Detox, Off the Grid, and (the funniest I’ve seen so far) AntiSocial. All these apps can be found in your app store for you to download and start limiting yourself one day at a time.

BREAK THE HABIT

BE EXTREME

You might be wondering, “What can I do about this?” We can start by managing our time a bit more and making reduced device usage a habit early on. For me, I like to listen to an audiobook each morning during my commute to and from work. And although this uses my cell phone, during this time, I am forced to focus on what I am listening to and, therefore, avoid any urges to check social media. A friend of mine said they read a few pages from a book when their mind is idling during the day instead of taking the ‘easy’ option

It could be a case of cutting yourself off from the digital world completely– another of my friends completely cuts themselves off every so often from all forms of social and digital media for a whole week, which gives them a chance to ‘reset’. I personally feel this measure is a little extreme, but different levels of problems require different levels of solutions. I hope these suggestions can help you limit the time you spend on your phone, but ultimately you need to figure out what works best for you.

I

never thought of myself as someone who would shell out for teeth whitening, so it was with some surprise that I found myself staring at the ceiling of a private dental clinic some weeks ago. I don’t put much effort into my appearance, mainly due to laziness, but also because getting too caught up in looking beautiful is time that I tell myself could be spent on more important things. However, I have always been conscious of the yellow tint to my teeth, gifted to me by my father and worsened by long-time friendships with coffee and tobacco. I was treated to a ‘model’ brushing, which felt great, as well as a check-up on my mouth bacteria (slightly more embarrassing, but all normal, I was assured) before sinking into a comfy chair to start the treatment. A plastic contraption held my mouth in a ghoulish grin as the whitening gel was painted on, the ridiculous look completed with red goggles to protect my eyes from the UV lamp shining into my mouth. I was left with classical music playing in the background for 15 minutes—trying not to fall asleep. My mouth felt hot and dry, but after three songs, the light clicked off, and my treatment was finished.
