Adrian Gagea The Maynard

Adrian works largely at The Maynard but also at The George in Hathersage. Family has been a big inspiration to him. “My grandmother, great-grandmother and of course, my mother. All of these lovely ladies cooked for our families with such pleasure and joy, using simple and flavoursome ingredients with traditional techniques - resulting in consistently delicious food,” he said. Both venues utilise local produce which you’ll find throughout their menus but there’s one thing in particular that is Adrian’s favourite: “I love doing Sunday roasts. All of the fresh roast vegetables, duck fat and herbs roast potatoes, cauliflower cheese bubbling in cheese sauce, crispy Yorkshire pudding… and the most tender sirloin from our local butchers. I’d recommend it to anyone and everyone.”

David Palfi

The George, Hathersage David came to England around 2006 from Hungary and after having a few different jobs found his passion in the kitchen he loved the atmosphere and vibe. He’s based at the newly-opened George in Hathersage and, backed by an ‘amazing team’, loves working with fresh fish as well as putting his twist on classic British dishes. “We have recently spent over £400k on a full refurbishment at the George, with a new menu too,” he said. “I really like salmon or mackerel, either smoked or not, and using fresh local vegetables to go with the seasons. “I really enjoy modern British cuisine. I like preparing traditional dishes with a modern slant, bringing twists, flair and new techniques to the dishes.”

Andrew Wornes Bank House

Creativity is a big part of a chef ’s repertoire and is something that Bank House’s Andrew Wornes thrives on. “I’ve always liked to experiment, and what better place to do that than the kitchen,” he said. “As a family we spent a lot of time in the kitchen growing up, helping make the Sunday dinners and learning to make the most of leftovers. It’s all helped to push me towards a career in food.” Bank House serves mainly Mediterranean fare, from sharing platters and small plates to an à la carte menu.There’s a social dining bar area as well as a more formal first floor restaurant and private dining room. They are just launching their new spring menu in a move to make the Hathersage restaurant more seasonal. “It’s a way to really bring all aspects of the business together in to one coherent offering,” explained Andrew. “As a business we’re growing rapidly and just purchased our second site which will be announced soon. I was appointed as a company director last year and I suppose in five years’ time I’ll be overseeing a few kitchens. I like to think I’ll also still be cooking at Bank House as it’s what I enjoy. “

Chris Parker West 10

Chris has been head chef at West 10 on Fulwood Road for three years after previously working at the Kenwood Hall Hotel. West 10, a wine bar and restaurant, serves a fresh, seasonal a la carte menu with Chris’s favourite dish being lamb cannon, pea pureé, boulangiere potatoes, tenderstem broccoli and lamb jus - perfect for spring. It was food technology classes at school that made Chris realise he had a passion for cooking and he feels he is in the ideal place to achieve his ambitions. “I’ve got the freedom to create new menus and our customers really enjoy the food I cook,” he said. Asked if he had any advice for aspiring chefs he said: “Get the training done and find a kitchen where you enjoy working and can build your experience.” It’s clearly paid off for Chris as he was voted Westside’s Young Chef of the Year in 2019.

Lee Shortt Nonnas

Lee loves cooking Italian food and brings worldwide experience to his position of head chef at Nonnas, a position he has held for a year. Previously holding the same position at the Schoolrooms Cafe Bistro in Sheffield, Lee has also worked at Dore Moor Inn, Thirsty Flame in Brinsworth, Q Sports Bar and Grill in Brisbane, Australia, Flahertys Irish Bar in San Antonio, Ibiza and, closer to home,Vittles Cafe Bistro, Mama Amalfi Italian Restaurant, and Mamas and Leonies. Lee previously served in the army and after finishing his service decided to go back to college and train to become a chef. “I enjoyed baking and cooking with my mum when I was a kid so decided to take it up as a career,” he said. His morning is spent on food preparation and baking whilst the rest of the day is spent cooking customers’ meal. “I enjoy being a chef because you’re always on your feet and never bored,” he added. “I also like getting compliments from customers about my food. I also like a challenge, which cheffing is most of the time.”

Warm and welcoming SAM PEGG TAKES A VISIT TO THE HYDE PARK INN IN DRONFIELD had high expectations from The Hyde Park Inn. They were winners of the Best FamilyFriendly at the Westside Restaurant of the Year Awards in 2017 and are a favourite spot for the locals in Dronfield. It was instantly clear to see that it was a hearty pub with a welcoming atmosphere and I got that impression as soon as I entered in through the doors. It is nestled next to the most beautiful countryside with walks that can go on for miles and with a garden of its own, it houses stunning views for an afternoon pint. Dogs are welcomed, making it the perfect destination for any dog walker. The staff were friendly and attentive, ensuring you had the best experience possible. With a vast selection of alcoholic beverages, including real ales, and an impressive array of dishes, there’s definitely something for everybody. Excited to tuck in, I ordered the Bacon and Cheese Potato Skins (£4.95) and my dining companion opted for the Breaded Mozzarella Sticks (£4.95). Each starter came with a generous portion of fresh salad. As a whole it was perfectly sized to prepare you for the meal to come. Both dishes were full of flavour and the selection of other starters looked just as tasty.

For our main course there was a wide selection with a variety of wraps, burgers, salads, jacket potatoes, dishes from the grill, other mains and vegetarian dishes. After taking a portion of time to make a decision amongst the delicious choices, the Homemade Steak and Ale Pie of the Day (£9.25) and Chicken and Chorizo Skewers (£8.25) took our fancy. The quality of the food was exceptional and the flavours married together perfectly. The pie had a great depth of flavour with succulent steak and buttery pastry. It was served with chips, peas (mushy or garden) and gravy – with a hint of Henderson’s Relish to accompany if you desire. My dining companion was amazed at the level of cooking with the chicken and chorizo skewers and I have to say, after tasting it myself, I agree! The time spent eating was time spent chatting and we found ourselves lost in conversation with the atmosphere within the pub being of a calming nature. Onto the desserts, and to my surprise, unlike many other similar pubs there was the perfect selection to feast our eyes upon. Whenever Chocolate Fudge Cake with ice cream (£4.50) appears on the menu, it immediately appeals to me. My

dining companion opted for Vanilla Ice Cream (£3.45) which arrived with three scoops, chocolate sauce and a Cadbury’s flake. Both desserts did not disappoint and acted as the perfect end to a lovely, delicious meal. The Hyde Park Inn host speciality evenings such as: Tapas Tuesday (2 for 1 on all the Tapas Menu from 4pm every Tuesday), Fish Friday (from 4pm every Friday, Fish and Chips available to take away Monday to Saturday), delicious Sunday Carvery (£8.95, served from 12noon-6pm) and an all you can eat international buffet (£12.95 for adults and £6.95 for children). The atmosphere is just as you’d desire in that setting and the quality of food and service is exceptional, make sure you don’t miss out on all The Hyde Park Inn has to offer. It definitely delivered. Best of both COMBINING A LIVELY BAR AND A COSY BISTRO, WEST 10 OFFERS THE SOMETHING FOR EVERYONE, WRITES CHIARA BRUNO. et in the chic suburb of Ranmoor, West 10 provides the optimal setting for an excellent evening out, combining an elegant restaurant and bistro upstairs, with a lively wine bar downstairs. My companion and I opted to sit upstairs in the restaurant for our meal, yet both spaces are available to dine in. We started our night with a refreshing glass of chardonnay (£6.50) and a little something to whet our appetite before ordering our meals: a serving of olives, crusty bread (still hot from the oven) and a generous helping of balsamic vinegar and oil dip. We deviated slightly from the menu’s enticing “While you Wait” option, which included all of the above along with a portion of camembert for £10, giving us time to peruse the menu and choose our starters and mains. Now, I’m always one for trying something a little bit different, so when I spotted the pan-seared wood pigeon starter (£8), I knew I just had to have it. The slow cooked pigeon was beautifully tender and was served with a burnt onion purée, complementing the naturally deep and rich flavour of the meat. The blackberries added an extra

layer of texture, mixing sweet with sour; an innovative combination. My companion opted for the more traditional ham hock terrine (£7.50), complete with slices of crunchy sourdough, homemade piccalilli, which packed a real punch, and two quail scotch eggs. With beautifully oozy yolks and crispy outer shells, I have to say that these were the best scotch eggs I’ve ever had. After my game starter, I fancied fish for my main and was torn between the classic beer battered fish and chips (£12), and what I eventually chose (after long deliberation!), the pan-roasted hake (£16). The fresh hake was cooked to perfection and served on a bed of crushed, herby potatoes, chorizo, heaps of green beans and a beautiful salsa verde, creating a delicate fusion of flavours. My companion also opted for a fish main by ordering an enormous bowl of mussels (£12). They were cooked in a creamy chorizo, leek and cider sauce, creating a unique taste sensation. The huge pot of crispy fries were an excellent accompaniment. Finally, after we felt we could eat no

more, the desserts arrived: a deliciously sweet frangipane and pistachio tart with strawberries (£7) and a panna cotta topped with a fruity citrus gel and berries (£7). Made with Greek yoghurt as opposed to cream, the panna cotta was fresh and light, giving it a welcome twist to the traditional Italian sweet. After our evening of wonderful food, we meandered back downstairs to the bar area, which was still very much full of life. And it was clear to see why; West 10 has an extensive wine and bottled beer list, as well as their contemporary menu offering a range of both modern and classic meals using locally sourced fresh ingredients. ith spring drawing nearer, we welcome back the outdoor activities, walks and visits that keep us active and adventurous. After a long pandemic and this winter trapping us inside our warm, cosy homes, it may feel like a long time since we appreciated the world around us. Derbyshire has so much to offer, from the stunning Peak District scenery to endless fun-fuelled family days out, but often underappreciated, is the local history and architecture. Nestled in the heart of the county, stands Hardwick Hall, tall and proud with stunning detail and exceptional design. Renowned as an Elizabethan treasure, Hardwick House remains an exceptional reminder of the era. Built in the 16th century for the formidable Bess of Hardwick, the Old Hall remains an architectural amaze surrounded by 2,000 acres of parkland. Married four times, each time to a wealthier and more influential man, Bess had eight children, and a life worthy of a Hollywood blockbuster. Standing as one of the most remarkable women of the Tudor era, she was married at 15, wedded at 16 and already re-married at 19. More than twice her age, second husband, Sir William Cavendish, was a senior auditor in King Henry VIII’s Court of Augmentations, titling her Lady Cavendish. However, during the reign of King Edward VI, Cavendish was the Treasurer to the young king, moving he and Bess to the highest levels of society. With their marriage ending in 1557, William later passed leaving Bess with six children, the recently acquired Chatsworth Estate and The Chatsworth House she built with her husband, still a local treasure today. Known more for her marriages than for her successes, Bess continued to wed for further wealth and did so very successfully. Only two years later she became Lady St Loe, married to Sir William St Loe, Captain of the Guard to Queen Elizabeth and Chief Butler of England. With his passing in 1564, Bess become one of the wealthiest women in England; her annual income was calculated to amount to £60,000 – equivalent to £27million in 2021. Waiting for the right man and time to marry again, Bess chose the Earl of Shrewsbury, later resulting in their shared custody of protection over Mary, Queen

of Scots, after she fled. Requested by her cousin, Queen Elizabeth, Mary remained on house arrest for 25 years across the couple’s properties: Tutbury Castles, Wingfield Manor, Chatsworth House, and Sheffield Manor. Throughout this period, Bess spent time as Mary’s companion, working with her on embroidery and textile projects, including the Oxburgh hangings. Indeed, all Mary’s work later became part of Bess’s historical collection at Hardwick Hall. However, Mary persisted to intervene in Shrewsbury and Bess’, marriage, causing doubts involved in their later divorcing.

“Hardwick Hall’s insightful exhibitions show how Bess transformed her birthplace from a medieval manor house into a luxurious Elizabethan mansion.” On his death in 1590, Bess became Dowager Countess of Shrewsbury, she lived mostly at Hardwick, where she built the new mansion Hardwick Hall and was indeed one of the greatest builders of her time. Bess enlisted the help of Robert Smythson for design, which in itself was pretty radical, but the building design was also a bold step exploring new ideas of the time. Large glazed windows adorn the Hall and inside the three floors take you on something of a magical mystery tour, with elaborate rooms designed to wow. Passing in 1609, Bess of Hardwick was aged 81 and still one of the richest and most powerful women in the kingdom. With her last marriage, to the Earl of Shrewsbury, declaring her one of the highest women at court, she - next to the Queen - was the most powerful woman in the country. and textiles for her properties, she requested preservation after her passing. Now the 400-year-old collection is known as the Hardwick Hall textiles; the finest collections of Elizabethan tapestries and embroideries in Europe, including the Gideon tapestries and Noble Women embroidered wall hangings. Almost every room in the Hall proudly displays tapestry and embroidery work on the walls, protected by her descendents and relatives years later. Hardwick Hall is also home to insightful exhibitions and audio guides depicting Bess’ life, work and achievements, including the interior décor/tapestries and her adventure into architecture. A second exhibition on the first floor explores the change of taste in architecture and building methods during the Elizabethan age. The house shows how she transformed her birthplace from a medieval manor house into a luxurious Elizabethan mansion.

Back for spring Independent makers and retailers will be back at Crystal Peaks on 2 April as Peaks Uniques makes a return. Peaks Uniques is the new attraction for the award-winning Sheffield shopping centre, an opportunity for small businesses and individual designers and makers to reach a new market. The first Peaks Uniques, last September, attracted more than 30 stalls featuring everything from bath products to houseplants, greetings cards, art works, jewellery and pet accessories - all created by independent artists and craftspeople. Growing confidence Chatsworth is launching its first children’s gardening club to allow young budding growers to nurture their very own growing patch throughout the seasons. The Little Pips Gardening Club for children aged 3-5 will be filled with hands-on sessions growing fruit, vegetables and flowers, as well as lots of creative activities to give nature a helping hand from making butterfly feeding stations and a wormery to planting bee-friendly plants. The fortnightly club launches 7 March with a sunflower planting session with other seasonal activities lined up for the months ahead to include making a pea propagator in April; going on a bumblebee safari in May and harvesting pumpkins planted earlier in the year in October. The sessions will take place in the outdoor learning centre, Chatsworth’s Stickyard, where the children will be growing their own produce in specially created raised beds for vegetables, fruit and flowers, and having a go at watering, weeding and making sure all the plants are happy. The shoulders are big, the hair is bigger…it’s back to the ‘80s as Woodseats Musical Theatre Company return to the stage with a new production of romantic favourite The Wedding Singer! Inspired by the hit Adam Sandler and Drew Barrymore movie, it’s a classic comedy romance about a wedding singer, a waitress and two weddings where things definitely don’t go as planned. Throw in a fake Tina Turner, Billy Idol, Imelda Marcos, Cyndi Lauper, Mr T and even a Ronald Reagan lookalike and the stage is set for a show that captures all the hedonistic fun of the 1980s.
